HOW TO USE THIS GUIDE:

welcome to

OHIO ON TAP Ohio is now home to more than 400 breweries. Take a sip of beer and let that sink in. The overwhelming majority of those breweries sell their beer primarily in their own on-premise taprooms, serving as cultural hubs and gathering spaces for their communities. That business model relies on personal interaction and congregation, two things that have been challenging since the onset of COVID-19. Despite the pandemic’s effects, Ohio has averaged a net gain of 37 new breweries per year since 2020. There are also more than 70 known breweries-in-planning soon to be making beer in Ohio. Not only are there lots of choices, but the beer is pretty great too! Ohio’s reputation for producing world-class beer is growing: Our breweries set a new state record at the 2022 World Beer Cup competition, bringing home a total of 15 awards in “The Olympics of Beer Competitions.” (See all the winners on page 42.) In the course of making such estimable beer, independently owned craft breweries support more jobs and economic activity per barrel of product than their larger competitors. That profound and outsized impact on our communities must be protected, which is why the Ohio Craft Brewers Association works tirelessly to preserve a legal and regulatory environment that will encourage further craft beer growth. Ensuring fair access to market and healthy competition, free from restrictive, antiquated regulation, is ultimately good not only for breweries but for their local communities and craft beer drinkers at-large. The landscape of craft brewing in Ohio has changed quite a bit since we hit the 300-brewery milestone just three years ago. The pandemic brought some unforeseen challenges, but the qualities that got breweries through the lowest points of the past two years — determination, resilience, cooperation, unity — will be what fuels the growth that we hope to see ahead. @OhioCraftBeer

When Dan Lynch and Joe Brenner opened Little Miami Brewing Company in Milford back in 2017, they weren’t exactly hearing wedding bells — their concerns were with the more immediate matters of licenses, permits and equipment. But shortly after the brewery opened its doors, demand for larger and more elaborate events, including weddings, made them reconsider. By 2020, Little Miami had opened a dedicated event center, which features a terrace overlooking the scenic river that the brewery shares its name with. Happy couples have flocked to the industrial-chic hall ever since to celebrate their nuptials in a memorable, Instagram-worthy setting. As couples increasingly choose unexpected and non-traditional venues in which to tie the knot, Ohio breweries are stepping into the newlywed game, taking advantage of their unique settings and architecture to appeal to those looking for an outside-the-box celebration. Some are even taking it a step beyond event space and catering facilities by incorporating amenities specifically geared to marriage celebrations. While Little Miami built its event facility in response to demand, other breweries, like Edison Brewing Company in Gahanna, are including them right from the get-go. Its event space, The Peak at Edison, sits atop a four-story building next to the brewery and offers sweeping views of the Columbus skyline. “Events have always been part of the plan,” says Edison founder Wil Schulze. “Early in the design process with the architect, we designed two buildings on the site. The four-story building afforded us a rooftop venue.” OHIO ON TAP 5


Rustic breweries like Henmick bring an old-fashioned ambiance to weddings.

City views and a hip, urban feel are also part of the experience at both Seventh Son Brewing in Columbus and Combustion Brewery & Taproom in Pickerington. The former’s upstairs venue, The Rooftop, is a jewel box with enormous skylights bathing the space in natural light. At Combustion’s event center, factory-style windows overlook neighborhood trees, and there’s plenty of room for dancing between aquamarine and mocha glazed brick columns. Housed in a former tire factory, R. Shea Brewing in Akron offers a modern, industrial vibe. Weddings and events take place right on the brewhouse floor, surrounded by fermenters and graffitiinspired murals. “The Brew Floor offers an exciting and industrial atmosphere for anyone who wants to make a statement on their day,” R. Shea event manager Whitney Schaefer says.

“Views of brewery equipment, exposed brick walls and the natural lighting of the old BF Goodrich Factory give an eclectic feel that sets our venue apart.” For couples whose tastes lean more towards the peaceful and pastoral, Ohio’s farmhouse breweries offer an on-trend, rustic atmosphere. At Delaware’s Henmick Farm and Brewery, the vast, white barn makes a bucolic backdrop for outdoor weddings, and the fields offer plenty of space for post-dinner strolls. Rockmill Brewery, near Lancaster, specializes in both Belgian ales and a woodsy ambience. Weddings take place in front of a white, stream-side chapel on the former horse farm. The surrounding hemlock trees and rocky outcrops create a mystical scene for photos, while the farmhouse reception space has a variety of nooks and crannies for guests to explore.

Twin Oast Brewing in Port Clinton sits on 60 acres with restored farmland and orchards, crowned by a pair of English-style oast houses. The meadows, gardens and cascading waterfall attract an array of swooping swallows and butterflies, all of which lend a touch of enchantment to weddings on the Estate Lawn. Couples who still desire a sense of the sacred when it comes to taking their vows can look to breweries like Bell Tower Brewing in Kent and Cincinnati’s Urban Artifact — both housed in repurposed churches. With their sanctified architecture including vaulted ceilings and high, arched windows, both offer a going-to-the-chapel vibe. “The biggest draw and reason that couples come to check us out initially is because we are a brewery,” says Bell Tower co-founder Bridget Tipton, “but I think once they see the space,

the combination of being an old church and the beautiful aesthetic is overall very convincing.” In many ways, hosting weddings is a natural extension of a role craft breweries have long embraced — being a community gathering place where people meet, socialize and celebrate. “People meet and get engaged here quite frequently, so that’s really memorable,” Little Miami’s Lynch says. “We’ve had people that have met and had their first date at the brewery five years ago, and then end up using the event center to get married.”

Kevin and Maria Glass have never met a craft beer (or challenge) they didn’t like, and the bond they made while tackling the Ohio on Tap passport eventually led them down the aisle. The two have had their virtual passports stamped at a whopping 347 Ohio breweries (and counting!) since November 2019, when

they discovered the Ohio on Tap app while visiting Saucy Brew Works in Ohio City. Since then, they’ve criss-crossed the Buckeye State, gotten engaged (at Twin Oast Brewing Company in Port Clinton) and celebrated their marriage (at Cleveland’s Forest City Brewery), all while racking up stamps. But you don’t need to be madly in love to follow in the Glass’ footsteps — you just need to download the app and start collecting stamps. Although, according to Maria and Kevin, it certainly doesn’t hurt to have good company and a healthy sense of adventure.

Imagine, if you will, a groovy trip back to 1974. M*A*S*H was on the tube, bell bottoms and leisure suits were all the rage, Ali knocked out Foreman at The Rumble in the Jungle and the price of gas was Poland just a couple 393 Boardman Rd. of quarters per gallon. Beer companies with names like Schlitz, @casualpintyoungstown Rainier, Anheuser-Busch and @tcptoledo Stroh’s were strong and dominant nationwide, all working with numerous small, family-run wholesalers in each state.@youngstowncp To ensure that these larger beer companies were not taking advantage of their smaller partners, wholesalers lobbied to pass the Ohio Alcoholic Beverages Franchise Act. It forced breweries to be a fair supplier to the wholesaler while not having the ability to up and leave a deal, which could bankrupt a distributor. Fast forward to today and the beer business landscape has changed drastically. Although breweries are still teamed with area distributorships in the three-tier retail system, now more than 9,200 breweries exist in the U.S. — most small and independently owned — including 400 located in Ohio. In this flipped scenario, the wholesale side still benefits from legal protection even when dealing with very small suppliers. Despite the overall number of wholesalers decreasing to less than 3,000 because of consolidation, the power they sway has increased due to the Franchise Law of 1974. Back then, what protected wholesalers from going out of business now can trap a small craft brewery into a deal that it can’t escape. (NOT) GOING THE DISTANCE HIT THE GROUND Beer drinking is social, but running can be solitary. Luckily, several Ohio breweries are changing that. Jennifer Sampley, assistant manager of Crooked Can Brewing in Hilliard, started a running club after seeing traffic from the adjacent Heritage Trail. “Having the trail right behind us and being a runner myself, I thought it would be great to get like-minded people together who love both running and craft beer,” says Sampley. The club meets Wednesdays, as does the Hoof Hearted Brewery club in Columbus. Hoof Hearted also hosts a Beer Mile event that rewards runners with beer as they run. Northern Ohio runners can check out North Water Brewing’s club in Kent on Thursdays. Those who crave variety should bookmark the Ohio Brewery Running Series, which meets at various breweries throughout the summer.

Several breweries offer alternative exercises. Play DankHouse Brewing’s disc-golf course in Newark for the cost of a beer. Or join one of Fifty West’s sports leagues, which started with volleyball and continues to expand. “It turns out volleyballers were very into the idea of craft beer, and we were turned on to a business model that built in weekly traffic to our space,” explains Max Fram, VP of strategy and operations at Fifty West.


SLIPPERY SLOPES ON TWO WHEELS Ohio boasts more miles than any state when it comes to dedicated bike trails. Devoted cyclists can pedal from Cleveland to Cincinnati, but for a more modest ride, two regional trails combine great scenery with craft beer. The Little Miami Scenic Trail stretches from Springfield to Cincinnati, following the contours of the river. Start at Yellow Springs Brewery and head south to Devil Wind, Cartridge, Narrow Path, Little Miami, Fifty West, Big Ash and Streetside Brewery. For a shorter route, ride the Brewed on the Bikeway Trail in Athens to hit Little Fish Brewing, Devil’s Kettle Brewing and Jackie O’s all within an afternoon. Little Fish co-founder Jimmy Stockwell credits the bike trail for their location. “One of the factors that sealed our commitment to the current location of the brewery was learning that the bike path would be extending across the river close to us,” Stockwell says. Michelle Oestrike, Jackie O’s VP, echoes the draw of the path. “Brewed on the Bikeway brings folks in from all over the region to enjoy Southeast Ohio’s outdoor recreation while supporting Athens’ local breweries,” she says.

More into winter sports? Check out Nocterra Brewing’s annual ski club. “Our motto is Beer + Outside = Nocterra,” says Lori Duncan, the brewery’s operations manager. “We love to create experiences that bring these two things together. From day one, we wanted to put together a club and encourage our customers to get out on the hill and have fun.”

MATTER Taking care of your mental health is also critical, now more than ever. Many breweries host yoga events that improve mental and physical health, including Warped Wing, Land-Grant and Market Garden. MadTree Brewing and others offer mocktails for those who want to detox but enjoy the social aspect of breweries. There’s no better way to cool down than with a refreshing pint of cold beer — at least, that’s what these firefightersturned-brewers know to be true.

F

For Shawn Adams, firefighting and craft brewing are a perfect match. His full-time job with the Akron Fire Department requires him to work 24 hours straight, with 48 hours off. That leaves plenty of time to devote to a hobby or another job. In his case, it led to a passion for homebrewing and co-founding Akronym Brewing Co. in 2018 in downtown Akron. “As I get older, the firefighting obviously is a young person’s job. I feel like I can keep brewing longer than I can keep firefighting,” Adams says with a laugh. Adams isn’t alone in turning his hobby into a second profession. You can find current or retired firefighters at a surprising number of breweries around the state, including Bushrod Brew Works in Eaton, Moeller Brew Barn in Maria Stein, Phoenix Brewing in Mansfield, Schnitz Ale Brewery in Parma, CLAG Brewing in Sandusky, Noble Beast Brewing in Cleveland and McArthur’s Brew House in Cuyahoga Falls, to name a few. It’s easy to explain why firefighters are attracted to brewing. In addition to their schedules being open to a second or even third job, firefighters often enjoy the physical labor

and mathematical calculations required by the craft — whether that’s cleaning equipment or mapping out a beer recipe. “They are both physical jobs,” said Adams, who plans to open a second Akronym location in Medina this year. “That’s why I like brewing.” Bill Washington, a retired firefighter who co-founded the Bushrod nanobrewery in western Ohio near the Indiana border, agrees. He got his start in craft brewing as a mentoree at Half Batch Brewing while also living and working as a firefighter in Brentwood, Tennessee. “[Firefighters] are more, ‘Go out and get stuff done,’ than sitting at a desk,” Washington says. “We like to work hard.” Firefighters also enjoy the camaraderie and brotherhood forged at the fire station. “It’s another family,” explains Washington, who grew up in Eaton and still volunteers as a local fire investigator. “It’s sort of similar with the craft brewing side. You get your regulars and they become family.” Then there’s the ongoing training that’s required of firefighters. Likewise, brewers are always learning new recipes and techniques. “It’s always evolving on the fire side and the

brewing side,” says Corey Everman, the brewmaster at Moeller Brew Barn in Maria Stein. “There are always new things to learn. New beers to learn. New training techniques to learn.” Everman joined the Burkettsville Community Fire Department as a junior firefighter when he was just 16 years old and now serves as an assistant chief. He and others see another underlying similarity in the two professions. Firefighters want to help people. That’s their mission. Meanwhile, craft breweries are community-focused and often are devoted to supporting local causes. And then, of course, there’s the most obvious reason firefighters are drawn to brewing. “Firefighters like to drink beer,” Adams says. And nobody can argue with that.

Ohio breweries have a knack for breathing new life into neglected spaces, including old firehouses. Three Tigers Brewing Co., for one, recently expanded into the former Granville fire station downtown. Co-owner Scott Wilkins says it makes perfect sense that craft breweries want to locate in former fire stations. “The fire station was a central piece of the community, and I feel like we’re stepping into that role,” he says. “Being in that space gives us an opportunity to carry that torch on.” Other breweries carrying on the torch include Hamilton’s Municipal Brew Works, Gemüt Biergarten in Columbus and the brand-new Lebanon Brewing Co.

Q: What are the challenges of cooking with beer?

at Akron’s Lock 15 Brewing Company and

I love the flavor that beer provides to many recipes. One challenge, however, is preventing it from imparting too much bitterness, in braising especially. It’s all about choosing the right beer for the right cooking application. If you do want to use beer as a base for your braising liquid, I would suggest using a malty, sweeter beer, such as our Grandfather German lager.

Q: Do any beer styles in particular lend themselves to cooking? As a general rule, avoid bitterness, so stay away from IPAs. Cooking with them can lead to too much bitterness in the dish, but they make for a delicious pairing due to their complexity! I also tend to avoid more fruity beers and shandies.

Q: Does beer pair well with any other particular ingredients? When it comes to cooking, I treat beer basically the same as wine. Something more minerally and clean (like hefeweizen) is going to pair better with chicken, pork and seafood, cutting the fat in your more unctuous dishes. Something sweeter (like a milkshake IPA or maple oatmeal stout) is going to take the edge off a spicier dish. Red meat is going to pair better with a doppelbock or coffee stout.

Q: Any other cooking-with-beer tips you would like to share? Cooking is all about experimentation. There are basic rules you should follow to achieve balance, but beyond that I encourage everyone to just go for it and try whatever your knowledge level of beer and cooking will provide. Have fun with it and happy experimenting!

KIMCHI CORNDOG Chef Starr shares her recipe for kimchi corndogs, made with Lock 15’s Mobilization Wit. Bratwurst 1 quart Mobilization Wit 1 tablespoon whole coriander seeds 12 bratwurst Bring beer and coriander seeds to boil, then add bratwurst. Simmer until cooked through, about 15–20 minutes. Remove bratwurst from liquid and set them aside.

Kimchi Batter 2 cups spicy kimchi, strained 1 1/4 cup cornmeal 1 cup all-purpose flour 2 tablespoons sugar 2 teaspoons baking powder 1 egg 1/2 cup Mobilization Wit beer Oil for deep frying Pulse kimchi in a food processor, but leave it a bit chunky. In a stainless steel bowl, mix together cornmeal, flour, sugar and baking powder. Add eggs, beer and pulsed kimchi into the bowl with dry ingredients and whisk until evenly combined. Heat deep frying oil to 350° F. Insert wooden skewers into bratwurst lengthwise, dredge in flour, then dip in the batter until evenly coated. Fry for approximately 10 minutes, or until golden brown. Serve with a pint of your choosing!
