It is hard to resist the urge to hunker down for the colder months but there is plenty to tempt you, in this issue, to be out and about. Autumn is awards season and we have featured national recognition for county based businesses as well as a report on the winners of Select Lincolnshire’s 2018 competition. LINCOLN GIN

With the new craft gin market booming, Lincoln Gin has distinguished itself this year. Whilst it has only been several months since their first bottle was produced, the idea for Lincoln Gin goes back over three years. Always wanting to do something new, Matt had many ambitions before he finally settled on bringing a new gin to fruition. “I was dropping my sister at Gatwick airport and saw this stand for the Gatwick Distillery. I was fascinated by the process and went to speak with the distiller,” said Matt. “His advice to me was to get as much information as possible, meet with other distillers, learn the market, and find your unique flavour. At the time there were there no other distillers in Lincolnshire so I travelled around the country

attending tours and talks to learn the skill.” Over the next two years Matt spent time finding the flavours he wanted to include. Using the best from the Lincolnshire countryside, he wanted to include local flavours including angelica and elderflower from Lincoln’s West Common and liquorice from Liquorice Park as well as lime, lemon, grapefruit, juniper and coriander. He also includes beetroot as a nod to the city’s heritage. His first step was to create recipes to find his perfect blend and asked friends and family to try out his recipes. With 20 recipes created Matt was able to reduce this to seven before reducing again to just two very different flavours, a more herby flavour against the citrusy flavour we all know as Lincoln Gin.

He also needed to create a brand that represented Lincoln. With help from the Guildhall and Lincolnshire Archives Matt found a gin distillery that had been in Lincoln in 1860 in the former Rustons building, The Lincoln Beetroot Distillery. Using this as the basis for his brand, Lincoln Gin was created. His next step was to create a logo and packaging and again he used his local knowledge. With permission from the Mayor of Lincoln and Lincoln Cathedral Matt created a brand with the Coat of Arms featuring the Lincoln Fleur de Lys. He then took ideas from the Magna Carta 800th anniversary celebration to give each bottle a wax seal. In January Matt rented his first unit and bought his first 30 litre still to begin making larger quantities of gin, before quickly

buying another to keep up with demand. He sold his first bottle in January and has just begun selling bottles through the Lincolnshire Coop. What’s next for Lincoln Gin? “What I would like to do next is create an area for tastings and talks to be held here. I have already purchased a second still and so we’re looking to expand the current distilling area so we can keep up with demand. The last few months have been really busy for us, meeting with businesses who would like to stock our gin as well as working with venues who want to sell our product. We’re excited to see what the future holds.” You will be able to find Matt with his gin, in both 70cl and his new 20cl bottles at the Lincolnshire Food & Gift Fair on 1st and 2nd December at the Lincolnshire Showground.

Stokes celebrates first year at The Lawn Lincoln’s most well-loved coffee brand is celebrating its first year at The Lawn and to mark the occasion Stokes Tea & Coffee held an informal event at the historic complex. The event was held on Friday 28th September at The Lawn Café, in the picturesque uphill area of Lincoln, and was attended by more than 50 people including tenants and Stokes staff. Stokes Tea & Coffee transformed the historic site with an extensive £2million refurbishment which took two years to complete. This renovation turned The Lawn into one of Lincoln’s top destinations with a café, barista training centre, theatre, restaurant, offices and shops as well as serving as the brand’s headquarters for coffee roasting and distributing. Nick Peel, managing director at Stokes, said:

“We have loved our first year at The Lawn – it was a big move to relocate from Mint Lane where the business had been based for more than 40 years, however it has definitely been worth it. “Seeing The Lawn come back to life after a tumultuous history has been really lovely and the site now has a lively, vibrant feel thanks to all the retail, food and drink outlets and offices we’ve supported this year. “The move has also been great for the business as we now have the space to expand our operation. Chicken breasts stuffed with spinach and Lymn Bank Farm Lincolnshire Sunset Blue cheese Makes: 4

INGREDIENTS: 4 chicken breasts pounded to 1cm thickness 65g Sunset Blue cheese 185g bag of baby spinach, washed

12 rashers of pancetta 125ml crème fraîche Seasoning METHOD: Preheat the oven to 190C/gas mark 5. Place the spinach in a microwaveable bowl and microwave for 3 minutes.

Add the crème fraîche, Sunset Blue cheese and seasoning. Spoon the mixture into the chicken breasts and the carefully wrap the pancetta around them. Bake in an ovenproof dish for approximately 30-35 minutes. Lovely with garlic parmentier potatoes and steamed vegetables.

Leg escalopes are an under-used and relatively inexpensive cut

Uncle Henry’s rosemary, lemon and garlic roast pork leg Makes: 6

INGREDIENTS: 1.5kg Uncle Henry’s pork leg roasting joint (£8.95 per kg) Salt and freshly ground black pepper, to taste 2tbsp olive oil 2tbsp minced fresh rosemary 1 lemon, zested 2 cloves garlic, crushed 100ml chicken stock METHOD: Preheat the oven to 180C/ gas mark 4. Place the pork joint, fat side up, in a roasting tin. Season well with salt and

pepper. Mix the olive oil, rosemary, lemon zest and garlic in a bowl and rub over the pork so it is well coated. Roast in the oven uncovered for about 1 hour or until internal temperature measured with a meat thermometer reaches 70C. Remove from the oven, and let the pork rest about 10 minutes before slicing to serve. To make a delicious pan gravy spoon off the fat in the roasting tin and discard. Add chicken stock to the remaining juices and bring to the boil, scraping up browned bits on bottom of tin. Pour pan juices over sliced pork.

Redhill Farm Moroccan pomegranate pork escalopes

INGREDIENTS: 4 Redhill Farm free range pork leg escalopes 200g quinoa (or mixed quinoa and bulgur wheat) 2tbsp Ownsworth Lincolnshire Rapeseed Oil 2tbsp Moroccan spice mix Ras-el-hanout or harissa paste 1tsp Lincolnshire honey Zest and juice of 1 large unwaxed lemon Seeds of 1 whole pomegranate Salt and freshly ground Black pepper Mixed salad leaves or Seasonal vegetables to personal preference METHOD: Place escalopes (one at a time) between two sheets of clingfilm on a flat surface and flatten out to 1/2 cm thick using a rolling pin, meat mallet or base of small saucepan.

In a shallow dish mix the oil, 1 tsp of the honey, 1 tbsp of the lemon juice and chosen Moroccan spice mix, season with salt and pepper and coat the pork in the mixture – leave in the dish to marinade. Cook the quinoa in pan of 600ml cold water and a little salt, bring to the boil, then simmer on a low heat for 10-12 min. Remove from the heat to a serving bowl to cool for 20 min. Then add the lemon zest and rest of the lemon juice, rest of the honey, season to taste and add in the seeds of 1 pomegranate and sliced up chosen crunchy salad or season vegatables. Cook the pork escalopes by heating a non-stick frying pan until hot. Once hot, add the pork to the pan (in batches two at a time) and cook for 3-4 min on each side till cooked through. Leave to rest for a few minutes, then slice up and serve with the quinoa and salad and extra lemon wedges. www.redhillfarm.com

Pan seared duck breast, Lincolnshire honey and beetroot purée, sweet potato dauphinoise, plums wrapped in pancetta Makes: 4 INGREDIENTS: 4 duck breasts 6-8 Maris Piper potatoes 1 sweet potato ½ pint of double cream Finely chopped garlic Sea salt and pepper 4 small plums, halved and de-sliced 4 pancetta slices 1 jar of Lincolnshire honey 4 medium-sized beetroot METHOD: To make the dauphinoise

pre-heat the oven to 180C. Add the garlic to the double cream, season and mix well. Peel the Maris Pipers and the sweet potato (slice the potatoes as thinly as you can). In an ovenproof dish, pour a little of the cream mix into the bottom. Then do a layer of sliced Maris Pipers and then a layer of sliced sweet potato, then add a bit more of the cream mix and repeat until you have used all the potatoes or nearly filled your dish. Then cook for about 45 min

or until the potatoes are soft. When cooked, leave to cool then refrigerate. Once chilled cut into desired shape and reheat through the oven. For the plums, place on a baking tray, squeeze a little honey over and season well, roast in the oven until soft, leave to cool. Cut the pancetta slices in half and wrap them around the plums. When needed place on a baking tray and cook for about 8-10 min.

For the beetroot purée, boil the beetroot in seasoned water until cooked. Peel and place in a liquidiser with a splash of Lincolnshire honey, check for seasoning. For the duck, score the fat, rub well with sea salt and place in a hot pan skin side down and sear until golden. Finish in the oven to your liking, allow to rest before serving.

beach. The new building is also home to a National Coast Watch station manned by volunteers. The North Sea Observatory is located at Chapel Point, on the edge of the Coastal Country Park; an area rich in nature reserves, historic villages and footpaths across living countryside. The England Coastal Path will also be fully linked along the Lincolnshire coastline this autumn; the newest phase of the 2,800-mile route is due for completion in 2020. As well as the Seascape Café and public toilets, the Observatory houses an art space which will host exhibitions, meetings and shows by local artists and groups. The Café provides breakfasts and light meals as well as a choice of refreshing drinks and snacks. There are information boards on the area’s rich natural history and a wall mounted model container ship gives clues to the cargoes of the sea going vessels which can be seen from the shore.

Hikers, birdwatchers and dog walkers have long appreciated the tranquil countryside of the coastal fringe and the majestic qualities of the Lincolnshire skies and seasonal weather. The new project funded by Lincolnshire County Council, the Coastal Communities Fund, the Arts Council England and RDPE LEADER Coastal Action Zone has seen an iconic, multi-function building open in Chapel St Leonards to mark the southern gateway to the Lincolnshire Coastal Country Park. The first marine observatory of its kind to be purpose-built in the UK, The North Sea Observatory offers 180-degree views through strikingly large windows of the dunes, sea and animals that call them home. The striking architecture makes an exciting new addition to the beachfront panorama and houses excellent year-round facilities for families and those enjoying a nice quiet winter walk along the

National recognition for Lincolnshire Tea The Lincoln Tea and Coffee Company would like to share some very exciting news… After an unprecedented number of entries and four months of rigorous shortlisting, testing and tasting – the results of The Great British Food Awards 2018 are in! HOW AWARDS ARE JUDGED... ROUND ONE This year had a record number of entries – all of which demonstrated the UK’s thriving food and drink scene. In the first round, every single product entered was taste-tested, awarding scores

primarily based around taste but also taking provenance into account. James and Lizzie met while working on blue chip brands at London agencies. “Craft distilleries were also amongst our clients, “said James, “and we began to think that vodka has so far been the neglected market when working with the flavour possibilities of botanicals.” They put out a brief to several independent distillers and the resulting best sample was produced by a Lincolnshire independent distillery. “I am originally from Lincolnshire, my family have a print business in Washingborough and Lizzie is from Cambridgeshire so it seemed a logical move to relocate our business, Library Design Studio, back to the county, where we could also focus on our new brand.” Using a unique selection of botanicals, James and Lizzie have ditched juniper

in favour of clean citrus and fresh bay, with the darker flavours of culinary herbs and spices for their distilled rather than flavoured grain spirit. The name Ex Libris is of course derived from their business but also extends a slow, old club, learned nature to their product. Languidly laid as a line drawing amongst the books on the logo and product label is a drawing of their own pet rescue cat, Jynx. The recipe for Ex Libris gives a rounded, fragrant but savoury taste mindful of black teas and herbal bitters. There is a natural sweetness as well as the tang of citrus and spice. Lizzie’s favourite way to drink their vodka is over a cube of ice, where the sequence of flavours can be savoured. They have also devised their own

recipe for a classic martini and a signature Ex Libris and tonic which work wonderfully with lemon rind (for a more uplifting drink) or thyme/rosemary for a more savoury option. “The ethics around Ex Libris are very important to us,” added Lizzie. “We wanted slow values to be behind the brand – we are more cat than dog – and we have used recycled paper for our box and shredded packing. Our bottle is square, with a good chunky base, topped with a traditional cork and wax seal.” Their first production of 200 bottles is now on sale online and will be available in local stockists soon. Lizzie and James have plans for a launch in London, working with mixologists to produce more cocktail

Award-winning Doddington Farm Shop set for expansion Lincolnshire’s award-winning Doddington Farm Shop is to be extended to meet a growing demand for locally sourced food and craft drinks. The Farm Shop, set within the historic Doddington Hall estate, is being developed with the creation of a new wine shop, larger deli area and extended butchery. The larger store will also see the addition of an area dedicated to the sale of a new range of products including professional cookware.

Since opening in 2007, Doddington Hall’s Farm Shop has steadily grown and it has become known for providing quality seasonal food with few or no food miles. This includes produce from the Hall’s own Kitchen Garden and beef from Lincoln Red cattle reared on the estate. Uncle Henry’s serves ‘extraordinarily tasty’ food at Great Taste Awards Great Taste, the world’s most coveted food awards, celebrating the very best in food and drink, has announced the Great Taste stars of 2018. Out of over 12,600 products to be judged, Uncle Henry’s near Grayingham, Lincolnshire was awarded a 3-star Great Taste Award for its home reared Pork Leg Joint, which means the product

was described by judges as extraordinarily tasty, and a 1-star Great Taste Award for its Lincolnshire sausages, which judges described as food that delivers fantastic flavour! Graham Ward, butchery wholesale manager, explained: “We are delighted to have been recognised for both our Lincolnshire sausage and home reared pork. This award is testament to the

A super summer for Claythorpe’s pizza pop-up It’s been the perfect summer for Select member Claythorpe Watermill’s pop-up pizzeria, which ran through July and August. The mill, already known for its popular café and animal collection, opened every Saturday evening for al fresco dining, with authentic, homemade pizzas in its beautiful riverside setting. Handmade dough and freshly made pizza sauce were all prepared on the day and stone baked in Claythorpe’s very own wood-fired oven. More dining events are planned for the coming months. Owners Rebecca and Mike Agate bought the oven this year with the help of a Micro Business Grant from ELDC, which also part-funded the purchase of a new outdoor cinema. Movie nights including The Greatest Showman, Grease and Les Misérables attracted hundreds of new visitors to this unique venue and more, regular film nights will be announced soon (with plenty of fresh pizzas available to the audience).

Sunshine helps draw in the crowds for Galley Hill Farm Strawberry Fayre Hundreds of people enjoyed festivities at Galley Hill Farm in Alford back in July when it held its 5th Annual Strawberry Fayre. The public were welcomed to the farm to pick strawberries, enjoy tea and cake, as well as a bouncy castle for the children and homemade jam stands. The Strawberry Fayre gained its name as it is held during the ripest

season for strawberries. The farm has been offering the ‘Pick Your Own’ experience for soft fruits and apples for 38 years. The annual event has raised funds for Marie Curie Lincolnshire for the past three years. This year was no exception and raised £3,141 with the help of a crew of 14 made up of families and friends. Second generation farmer owners Ian Scaman and his wife Sandra

explained: “The event is always very well supported – we enjoy raising money for such a good cause. One that is very close to our hearts, due to a personal experience of the nursing service. It’s nice to know that the money gives back to the local Lincolnshire nurses.” Ian joked: “We have raised over £7,000 in the past three years, that kind of money means we can’t really stop now!” The money raised from this year’s event has paid for a further 157 hours of night-time nursing within the county for terminal illness patients within their homes. Kate and Michael Arthur, treasurers of the Lincoln Fundraising Group for Marie Curie added: “We are extremely grateful to Sandra, Ian and the team for their continued support. Butternut, hazelnut, spinach and pomegranate salad

INGREDIENTS: ½ large butternut squash peeled, seeded, and diced 30ml olive oil Sea salt and black pepper to taste 6 cups spinach and mixed greens Seeds from half a pomegranate

3tbsp walnuts 1tbsp olive oil 1/2tbsp Dijon mustard 1/2tbsp balsamic vinegar 2tsp maple syrup 1/4tsp garlic powder Freshly ground black pepper METHOD: Preheat the oven to 180C, and line a large baking sheet with parchment paper. Spread the prepared

butternut squash onto the baking sheet and drizzle the olive oil on top. Season with salt and pepper and toss to coat. Spread the squash into an even layer, being careful not to overcrowd them. Roast for 30 minutes until they start to soften and caramelise on the bottom. Add the hazelnuts 3 min before you take out the butternut.

Stir in the beetroot for 2 min. Add the sugar, vinegar and thyme. Season. Cook, stirring, for 2 min or until mixture thickens. Cover with foil and bake for 20 min or until beetroot is just tender. Set aside for 5 min to cool. Increase oven to 220C. Trim pastry into a 24cm disc. Arrange beetroot evenly over base of pan. Top with pastry. Fold in excess. Bake for 20 min or until puffed and golden. Cool in the pan for 10 min. Turn onto a plate. Top with goat's cheese and basil.

Bacon and egg with potato fritter powder in a bowl, and whisk until smooth. Bring a small pan of salted water to a simmer. Squeeze out as much liquid as you can from INGREDIENTS: the potato and onion mix, add 500g potatoes, peeled to the bowl and combine with ½ onion, peeled your hands. Venison carpaccio, red cabbage remoulade, soft boiled quail egg, candied pumpkin seeds INGREDIENTS: 250g venison loin 4tbsp sea salt 1tbsp ground star anise 1tbsp crushed juniper berries 1tbsp cracked black pepper Olive oil ½ red cabbage 2tbsp crème fraîche 1tsp wholegrain mustard 1tsp English mustard Chopped fresh herbs Sea salt and pepper 4 quail eggs 50g pumpkin seeds 125ml water 125ml caster sugar METHOD: To make the carpaccio, heat a little olive oil in a frying pan and sear all sides, remove from the heat. Mix together the salt, star anise, juniper berries and cracked black pepper into a bowl and roll the venison in the mix making sure it’s well coated. Now place in the fridge for about 2-3 hours. Then brush away the salt mix and pat dry, roll the venison loin in clingfilm and freeze for about

30 min – 1 hour, so that it's nice and firm to slice. To make the remoulade, remove the centre of the red cabbage and thinly slice the rest. Mix the crème fraîche and mustards together and then bind with the cabbage, check for seasoning. To make the candied pumpkin seeds, bring the sugar and water to the boil, allow to boil for a few minutes then add the pumpkin seeds and stir with a wooden spoon continuously until the liquid appears to have gone. Remove from the heat and carry on stirring until the mix crystalises and becomes powdered sugar. Boil the quail eggs for 2 minutes and 16 seconds, refresh in cold water and peel. To assemble thinly slice the venison and present on a plate with the red cabbage remoulade, place the boiled quail egg on top and sprinkle with candied pumpkin seeds.

SOUTH ORMSBY ESTATE

South Ormsby Estate joins Select Lincolnshire An historic country estate in the Lincolnshire Wolds has become the newest member of Select Lincolnshire. The 3,000-acre South Ormsby Estate is home to several rural enterprises. The estate and its historic hall are currently undergoing extensive restoration work as part of plans for the sustainable rural development of the area. Earlier this year, detailed plans were revealed for the estate’s future which will enable the estate to support rural businesses, promote entrepreneurship and sustain the local community. Renovations, business support and sympathetic development will form the foundations of the estate’s long-term ambitions which aim to make the area a more attractive place to live, work and enjoy. The estate is already home to 17 businesses, including wood workers, timber

merchants, car mechanics and one of the world’s largest herds of original population Lincoln Red cattle. It’s hoped that the estate’s investments will enable more businesses to establish themselves in the area, helping the local economy and creating jobs in one of the most deprived areas of the country. An expert team of specialists are behind the proposals which will see a number of historic buildings across the site restored and repurposed for business and community use. One of those is the former rectory in South Ormsby which is to reopen as a bed and breakfast this autumn. The new B&B will create several new jobs and help visitors enjoy the Area of Outstanding Natural Beauty. In addition, the estate team is currently restoring

Graduation day for Lincolnshire hospitality trainees Two young hospitality stars are celebrating graduating from a collaborative management trainee course in partnership with hotel management company RBH, and University College Birmingham. Natasha Richmond (20) and Rebecca Moylett (26), who both work at the four-star Forest Pines Hotel & Golf Resort, were among the group of 15 who donned their caps and gowns for a celebratory ceremony at Birmingham Symphony Hall. They were officially presented with foundation

degrees in professional hospitality operations management, following two years of working within the hotel industry whilst studying for the formal qualification. Natasha, from Scunthorpe, started the course whilst working as a food and beverage assistant at the hotel, and has since moved into the role of reservations coordinator during her studies. Rebecca, who also hails from Scunthorpe, has worked as a spa therapist throughout her studies, building her skills and learning from her fellow team members.

The winners of the 2018 Select Lincolnshire Awards were announced at a glittering awards ceremony held at Lincoln Minster School on Tuesday 9th October. Some of the county’s most loved businesses including Stokes Tea and Coffee, Uncle Henry’s, Grange Park Farm

and Lincolnshire Co-op came together to celebrate the food, farming and hospitality sector in Lincolnshire. The awards are organised and hosted by Select Lincolnshire – the county’s local food champions, who celebrate and recognise the businesses behind Lincolnshire’s finest, when it

comes to local food, farming and hospitality. The room was packed with over 150 attendees including bakers, chefs, business owners, butchers, farmers and producers from far and wide across the county. BBC Radio Lincolnshire Presenter Melvyn Prior compered the evening and congratulated winners

onstage for what turned out to be a fantastic evening, accompanied by delicious local food, brilliant company and a room full of winners. Guests were treated to a sumptuous sixcourse Lincolnshire meal, all expertly created by head chef Rob Smith and the catering team at

All ingredients were kindly supplied by local members of Select Lincolnshire including Uncle Henry’s, Lincoln Russet, Dennetts Ice Cream, Lincolnshire Brewing Company, A Little Luxury, Scaman’s Eggs, Lymn Bank Farm and The Lincoln Tea and Coffee Company. Guests started with a warming home cured Corned Beef Hash, served with national loaf and poached egg yolk. To wash down the starters, a coffee stout welcome drink was served, the result of a special collaboration between the Lincolnshire Brewing Company and The Lincoln Tea and Coffee Company. A blackberry sorbet was then served before a main course of Uncle Henry’s Pig Club Platter featuring belly pork, crispy black pudding bon bon and slow braised cheek.

Dessert was a scrumptious Ginger Parkin with stewed pears, blackberries and Dennetts evaporated milk ice cream, which was served alongside a glass of A Little Luxury pear and ginger gin liqueur. If that wasn’t enough, a generous helping of gin infused plum bread was then served with Lymn Bank Farm cheese and sweet grapes. Tea and coffee was kindly supplied by The Lincoln Tea and Coffee Company. Following the sensational meal, it was then on to the exciting part of the awards ceremony, the announcement of the winners. New cloud-based Catering Cloud app helps chefs save time and money Time management is critical for chefs managing restaurant and catering kitchens alike. From tracking food inventory and storage to monitoring food safety policies, chefs spend at least an hour a day pushing paper instead of preparing food. That’s where Catering Cloud comes in. The webbased productivity app has been designed by chefs for chefs, filling a technology void in the catering industry. Sam Owen is the owner and chef at Salted Orange Food Co., an award-winning catering company in Lincolnshire, Leicestershire, and Nottinghamshire. The idea for the new app came as Owen, who has been a chef for 15 years, wanted to automate the time he and his chefs spend tracking and monitoring food. He said: “We lose so much food prep time when

we have to stop and deal with the paper side of the kitchen, like tracking food inventory and monitoring storage. By putting the information at our fingertips in the cloud, we are saving time and money, and we have really reduced our stress levels.”

I am very lucky to be able to travel around the county visiting the many restaurants and pubs Lincolnshire has to offer. I get to sample a wealth of local produce, which forms the basis of outstanding menus, and I knew a trip to Winteringham Fields would offer all this and so much more. Colin McGurran and his wife Bex have owned the restaurant with rooms since 2005. Whilst taking over a restaurant with such a high reputation might be daunting to most, Colin spent a year shadowing previous owners Germain and Annie Schwab and their head chef Robert Thompson to learn all about the business. Since then, Colin has taken the restaurant from strength to strength earning many accolades and awards on the way, and after many years of hard work they have now been awarded a

coveted Michelin Star in the 2019 Michelin Guide. “We are very lucky with where the restaurant is. We own about eight acres of land, where we grow our own fruit and vegetables, and rear our own sheep, pigs and chickens. My philosophy is to get my staff involved in the farm as much as possible. The more they are able to be handson, the more creative and passionate they are when it comes to creating the menus,” said Colin. “We also work closely with village farmers and smallholders, who we buy vegetables and meat from. We are extremely lucky to have such a great relationship with our neighbours. “Our menu changes daily and it all depends on what is good on that day. If we go out to the farm and the cauliflowers are the best that day, then that is what we

include on the menu. The fish comes in throughout the day as it is caught. We’re very proud of our one-mile menu, meaning if we can’t grow or rear it ourselves then we aim to use produce from as close to the restaurant as possible.” My guest and I visited on an unusually warm October day, and we were met in the car park by the maître d’ who showed us to one of the reception rooms. Service throughout our visit was seamless yet relaxed. After being offered drinks our waitress came with canapés for us to sample which certainly heightened our anticipation for the rest of the meal. The restaurant is cosy, yet offers privacy for all guests. It is tastefully decorated with added touches, including a useful stool for handbags. We had opted for the Tasting Menu,

allowing us to get a real sense of the creativity Colin and his team have. Our first course was sea trout, served with a ponzu gel and trout roe. I tend to choose fish over meat, but I am not normally a fan of cured fish – however, this dish was stunning. The trout roe burst in the mouth giving a salty flavour which worked perfectly with the cured meat and the ponzu gel added a sharp, citrus taste to the dish – and the trout was perfectly textured. Our next course was a slow poached egg, celeriac purée, chicken broth and Morteau sausage topped with pork crackling. The egg is poached for 1 hour and 20 minutes at 63 degrees, which left a perfectly soft centre. Sat on a bed of celeriac purée with the chicken broth and the crunch of the sausage and crackling, the flavours were rich and

warm. I think if I had seen this dish on a menu I might have chosen something else, as an egg served in a broth with a crispy coating isn’t something that would automatically be top of my list, but I think out of all the dishes this was possibly my favourite. When the egg splits bringing the yolk into the mix, another level of flavour is reached, a heavenly combination that I had never tasted before. I would happily eat this every day. Next we moved on to the fish course, which was mackerel served with a kohlrabi cannelloni and nori dressing. The mackerel had only been caught an hour before being served and the freshness was evident throughout. The fish flaked perfectly and had a beautifully crisp skin. Kohlrabi is a vegetable I had heard of (part of the cabbage family) but had never tasted. Served as a cannelloni sheet it was filled with a mackerel pâté. The next dish was the meat course, using homereared produce. We were served a lamb rump, roast belly, baby gem, goat’s curd and mint. By this point I was running out of adjectives to explain to the staff how wonderful it all tasted. My highlight of the menu was the rump of lamb, perfectly pink, melt in the mouth and with just a touch of the goat’s curd and mint – again flavours I would have never experienced, the dish was just exquisite. Then came our pre-dessert, a new concept for my guest. The presentation hid the true delight of this dish which was the coconut sorbet. Served with a lime sauce, white

chocolate and topped in a crisp meringue this was the perfect palate cleanser. Our dessert course was next, and the final on the six-course tasting menu; a chocolate delice served with a brown bread ice cream. The chocolate mousse was creamy and firm at the same time. Served on a peanut butter biscuit base with a chocolate glaze, it was divine. The brown bread ice cream was flavoursome and textured, and a lovely complement to the delice. Although we were pleasantly full, we did decide to try a selection from the cheese board, to round off what was a perfect meal. I hadn’t had the pleasure of visiting Winteringham Fields before and I can see the Michelin star is well deserved! cook it, to let it come up to room temperature. Wash and roughly chop the vegetables. Break the garlic bulb into cloves, leaving them unpeeled. Pile all the veg, garlic and herbs into the middle of a large roasting tray and drizzle with oil. Drizzle the beef with oil and season well with salt and pepper and rub all over the meat. Place the beef on top of the vegetables. Place the tray in the oven, then

turn the heat down immediately to 200C/400F/gas mark 6 and cook for 1 hour for medium beef. If you prefer it medium-rare, take it out 5 to 10 min earlier. For well done, leave it in for another 10 to 15 min. Baste the beef halfway through. When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board to rest for 15 min or so. Cover it with a layer of tin foil and a tea towel and leave aside while you make your accompanying dishes.

Roast pumpkin chowder Makes: 8-10 INGREDIENTS: 3 medium harlequin pumpkins – peeled, de-seeded and cut into large chunks 6 small potatoes – peeled and chopped 2 medium onion – finely chopped 4 celery sticks – finely chopped 4 small carrots – peeled and finely chopped 3 teaspoons fennel seeds 3 teaspoons dried chilli flakes A selection of fresh herbs Olive oil and seasoning 2.5 litre good veg stock METHOD: Is there anything better than making a large pot of soup that can feed the family for a few suppers? This soup, which uses up any glut of pumpkins left over from Halloween, is a

gloriously thick and rich soup but also has a little kick of heat from chillies. Lay the pieces of pumpkin in a roasting tin with a little olive oil and the fennel seeds and chilli flakes and roast on 170C for about 30 min until the pumpkin is tender beginning to turn golden. Meanwhile, in a large pan, melt some butter and olive oil and sauté the onions, carrots, potatoes and celery until they are soft, adding some fresh herbs and seasoning about halfway through – this should take about 10 min on a gentle heat, then tip in the roasted pumpkin, cover with stock and let it simmer for about 15 to 20 min. Turn off the heat and let the soup cool for about 10 min before you blitz with a hand blender. Serve with croutons, a spoon of crème fraîche and fresh coriander to decorate.

The perfect gravy INGREDIENTS: Meat juices 2tbsp liquid meat fat 30g plain flour 1 pint stock 2tsp gravy browning (optional)

Raspberry crème brûlée INGREDIENTS: 200g raspberries and some extra for decorating 500ml double cream 1 vanilla pod 100g caster sugar 6 Fairburn’s British Blue egg yolks Extra caster sugar for the caramel topping Mint leaves for decoration Preheat the oven to 150C/gas mark 2 METHOD: Put 6 ovenproof ramekins in a baking tin and divide the raspberries between them. Pour the cream into a small, heavy-based pan and slit the vanilla pod in half lengthways. Scrape out the seeds and put the pod and the seeds into the pan with the cream. Bring to the boil over a medium-low heat. Meanwhile, put the yolks and caster sugar into a medium-sized heatproof bowl and beat them together till pale and fluffy.

When the cream begins to boil, remove the vanilla pod and then pour the cream onto the yolk and sugar mix, stirring constantly to mix. Divide the mixture between the 6 ramekins and pour cold water into the tin until it comes two-thirds of the way up the ramekins. Bake for about 35 to 40 min until the custard is set – it should only wobble slightly in the middle when shaken. Cool and then chill until cold. When you are ready to serve, scatter the tops of the cold crème brûlées with 1tsp of caster sugar, and use a blowtorch or hot grill to caramelise the tops – if using a grill, you will need to put them back in the fridge for half an hour before serving to cool down again. Top each ramekin with a fresh raspberry and a mint leaf.

Yummy Yorkshire puddings INGREDIENTS: 140g plain flour 4 eggs 200ml milk Sunflower oil, for cooking METHOD: Heat the oven to 230C/fan 210C/gas mark 8. Drizzle a little sunflower oil evenly and place tray in the oven to heat through. Tip the plain flour into a bowl and beat in the eggs

until smooth. Gradually add 200ml milk and carry on beating until the mix is completely lump-free. Season with salt and pepper. Pour the batter into a jug, evenly pour the batter into the tray holes. Place the tins back in the oven and leave undisturbed for 20-25 min until the puddings have puffed up and browned.
