Frank’s Travels - Confessions of a holiday Rep part 3, Cyprus In October 1995 I found myself on a flight bound for Paphos airport which is situated on the South West coast of the island of Cyprus. Cyprus has quite a temperate climate for most of the year although it can overheat a trifle during July/ August. Luckily for me my job would last from October until the following May so I was going to enjoy the best of the winter sunshine. When I first arrived at Paphos airport I was amazed to find how small it was. The arrivals area wasn't a lot bigger than a basketball court and everything was really relaxed. I can promise you it has grown out of sight in the last 20 years. Paphos had been quite a pleasant holiday backwater location until the Turkish army invaded the northern half of the island in the 1970's but when I arrived there the whole area had become a construction site with hotels springing up like mushrooms. The island is absolutely steeped in history and this includes ownership by the Romans, and the Greeks. The current population in the south of the island refer to themselves as Greek/Cypriot and in the north of the island as Turkish/Cypriot. The historic ruins in this area are a must see for any visitors to the island. As the Holiday Host I had to commence my tour of duty as I had in my previous locations by taking in all the tours/day trips that would be available to the guests. I had some wonderful trips including the divided capital city of Nicosia, and the Troodos mountains. The area of the Troodos looks more like Southern Bavaria with the thickly forested hillsides and the quaint Bavarian style chalets complete with window boxes. Of the trips I did I think the sea cruise was best of all.

This involved an overnight cruise from the Cypriot port of Limassol to the Egyptian port of Suez for the first leg of the journey. From Suez we went by coach to Cairo to visit that city's magnificent museum and see the tomb of Tutankhamun. From there we went to visit the Pyramids at Giza and to have a look at the Sphinx's inscrutable smile, and from there back to the ship for the overnight cruise to Tel Aviv. On arrival at Tel Aviv I was really impressed by the thoroughness of the Israeli security who carried out their security checks on board the ship before we were permitted to step foot on shore.........Very reassuring. A coach took us through to Jerusalem and then an Israeli lady tour guide took us all on a tour of the old city of Jerusalem. Having heard of this place since my Sunday School days I could hardly believe what I was seeing. There right in front of me was the Wailing Wall, The golden dome of the Al-Aqsa Mosque, and the Church of the Nativity (I hope I got that right as it was quite some time ago?) Our guide truly was a fount of knowledge and she was also able, on that particular tour, to take us to Bethlehem. I can honestly say that seeing the old city of Jerusalem was by far the most fascinating tour of any I had taken in my 3 years in this job. After another overnight cruise we arrived back in Limassol. I then returned to my hotel and got myself ready to greet my first arrivals, full of confidence about my force fed knowledge of my job for the next 6 months. Bring 'em on!! Frank 2011/12:78

Julia Meanwell - Holiday Solo There has been a significant increase in the number of people holidaying alone; 54 years being the average age of lone travellers. The 2014 Consumer Holiday Trends Report found that 13 percent of UK holiday makers now travel alone with this figure rising to 21 percent for people aged over 65. If you are considering a holiday on your own for the first time you will discover that there are many companies that specialise in offering trips for lone travellers. There are also websites where you can find like-minded travelling companions if travelling alone feels too much of a challenge and you would rather share the experience and the cost. It can be more expensive to travel alone and it seems really unfair but most single travellers will be penalized for not sharing the cost of a room and will have to pay a single room supplement. It can at times be difficult to arrange a holiday with your partner/companion if you have conflicting needs and interests. Some people want to be really pro-active and visit as many places as possible whilst others just want to chill and take things easy; give me the latter any day! If this is the case for you then perhaps you may want to consider vacationing separately so that you can each have the type of holiday experience that suits. For those of you that would love to cruise on your own you may be encouraged to hear that some of the cruise ships now provide social events exclusively for lone travellers. In 2014, 12 per cent of those sailing with

5 Benefits of Being Computer Literate By Neil Duncan 1. Browsing the Web – being able to ‘browse the web’ can expand your knowledge source; by using a click of a mouse and a little guidance you will be able to source an array of things such as: holidays, music and recipes; you can search restaurant reviews for a restaurant you’d like to go to, in fact you can pretty much type in anything in the search bar and it will help you find an answer. 2. Stay in contact with friends and family – social media i.e. Facebook, Twitter and Pinterest are all ways in which you can communicate with people across the world; these sites enable us to see how the grandkids are growing up and see how your friend is settling into a new location. The sites also enable the user to share pictures and documents with the ones we cherish. These sites also help people from being lonely as they’re a way of keeping people connected. 3. Education – being computer literate allows the user to perform tasks that others may not, therefore the employee is in a better position to progress and be successful in the workplace. 4. Improving Quality of Life: i. Shopping – for people who cannot drive or struggle with bags, internet shopping is a great way to take the hassle out of trailing round the shops. ii. Stimulation – the Web is a great way of accessing games, news, entertainments sites and forums without having to leave the comfort of your armchair. 5. Storage – Computers can store large volumes of information such as: letters, books, music and pictures without taking too much space. Neil Duncan is the local computer tutor for Silver Training in the Hastings/Eastbourne areas. He can visit your home for 1:1 lessons, can help with many devices and can cover topics such as; shopping, email, skype and more. Charges start at £35 per hour which include training materials and VAT. Please call 01323 700 170 or 01424 400 190 to enquire.

WHAT ARE YOU LEAVING YOUR CHILDREN? Your assets may be at risk from one or more outside factors. Don't take that risk, take advice now.

PROTECT YOUR ASSETS NOW ! For peace of mind contact David on: 07718 155740 for a free, no obligation consultation in your own home. www.clshastings.co.uk

Are you worried about having to sell your home to pay for care costs? Over 50,000 homes were sold in the last year for that reason but it can be easily avoided.

Are your affairs in order? Are your assets protected?

If you have to go into care you may be "means tested" by your Local Authority to assess your ability to pay for that care. Under current rules, if you have assets that total more than £23,250 (in England), which could include the value of your home, you will be required to fund your care in full – a care home will cost £500-£800 a week or more. The Department of Health has confirmed the cap on care fees contained in the Care Act 2014, planned for introduction in April 2016 and set at £72,000, will now be delayed until at least 2020. Many are now wondering whether this cap will ever be introduced. Homeowners remain at risk of seeing a lifetime’s hard work swallowed up in care fees, and are advised to take action now. Contact Collective Legal Solutions and discover what steps you can take to protect the inheritance you plan to leave your loved ones.

It's not too late to put it right. Talk to David NOW about your options.

"Halloween" by Gladys Lopato

Olive just let them knock. She did not like Halloween. As an octogenarian, it was difficult to get up and answer each call. Olive was glad Mortimer did not need the door opened for him. On his first visit he implied he didn’t want to be called Great Uncle Mort as he still felt and looked a youthful six footer. His eyes grew big at the lovely homemade cake but never ate any. This disappointed Olive, her masterpieces now only made occasionally, should be relished . -----------“Try another house,” said the ginger headed, slightly rotund eleven year old, Jimmy, “Gran’s not home.” He liked gran and her chocolate cake. Mum blamed gran for his weight gain. In contrast Colin, his skinny friend was all legs and arms, the one able to reach the biscuits on the top shelf without a chair. Scrawny Colin felt deflated, he had already tried next door but he supposed they had seen him. Who wouldn’t stay indoors when an apparition in black cape and pointed hat with grotesque mask came by. “I’ve had enough, let’s go home.” suggested Colin. “What was that ?” squealed Jimmy as they saw a grey figure pass under the aureole cast by the street lamp. At least there were others trick or treating. ”Hey, Colin, let’s join that scary person.” Despite running they could not catch up.

Then the grey figure disappeared through a wall. Had they really seen that ? Speechless, they sought refuge in a doorway. Suddenly they were conscious of a very tall, smiling figure. He reminded them of World War 1 soldiers in their history book. “Now my lads, I’ll take you to your gran.” They were sure they heard him speak but his lips did not move. -----------Olive struggled up to prepare mugs of hot chocolate to go with her latest cake. Earlier Mortimer had popped in saying he would bring Jimmy and Colin round later. He told her he was busy as a guide taking the chaps to see their names on the war memorial for the centenary of Vimy Ridge. The old lady had left the door slightly open as Mortimer had requested, allowing a shaft of welcoming light in the dark soggy October night. She waited for her visitors.

Our free Will offer for you

Having a Will brings you peace of mind. And if you’re aged 55 or over, you can now get your Will written for free until 31st October 2015, thanks to Marie Curie’s partnership with solicitors in Eastbourne and Seaford area.

Free Wills for people 55 and Over in Eastbourne and surrounding areas Marie Curie has joined forces with Solicitors in Eastbourne, Seaford, Lewes and Alfriston, including Cornfield Law, Mayo Wynne Baxter and Stephen Rimmer and also with Irwin Mitchell who will facilitate online and postal enquiries, to provide a free Will - writing service to people aged 55 and over. The scheme is open from 1st August until the 31st October 2015. Wills and Probate Solicitors at each of our partnership firms want to hear from anyone aged 55+ who is considering having their Will written or amended. The Marie Curie Free Wills Scheme offers people the opportunity to make or amend their Will, with the option to include a gift to support the charity’s work in the future. The Marie Curie Nursing Service provides free home nursing care to people with a terminal illness, 365 days a year. Will writing specialists at each of our partnership Solicitors, will be on hand to offer advice and support under the scheme, which offers a limited amount of free Wills on a first-come, first-served basis. There is no obligation to leave a gift to the charity, however, the hope is that many will use the scheme to settle their affairs and support Marie Curie’s work. Toni Denyer, Legacy Advisor for Marie Curie, said: “A Will written by a solicitor is the best way to ensure that your family, friends and favourite charities will benefit exactly as you would wish. Statistics produced by the Law Society of England and Wales show that roughly two-thirds of people over 50 do not have an up-to-date Will.” “We hope that this campaign will encourage people to have a Will written and consider leaving a gift to Marie Curie at the same time. The more money we raise for Marie Curie, the more free care the charity can offer, and gifts left in Wills can help to ensure these services continue into the future” said Jonathan Porter, Solicitor with Mayo Wynne Baxter.

LIVING THE ALEXANDER WAY OF LIFE

Being in Balance We read a lot in magazines and newspapers about living a balanced life, striving for a good work/life balance. Sometimes when we are retired we are busier than when we were working. All this is great. However, In Alexander Technique terms I look at a balanced life in a slightly different way. I’m talking about physically being in balance to make everyday movement easier and freer. To achieve this, your weight needs to be equally spread on each foot, shoulders and hips in line, with the head nicely balanced on top of the spine. This should all happen in a natural way without any tension anywhere. Your body will immediately feel freer and lighter. Next time you see a toddler have a look at how he/she achieves perfect postural balance. Unfortunately over the years we pick up poor postural habits that come back to haunt us in later life and can be the cause of discomfort and pain. Being in balance in this way really helps when we have conditions which give us a fear of falling. Since being diagnosed last year with Osteoporosis in my lower spine l find I am more fearful when, say, I am out in slippery conditions. My Alexander

training is really helpful then. Try this to help you find your balance: • Stand with weight equally in both feet, you should feel, on the ground, points below your big toe, your little toe and in the middle of your heels • Stand against a wall with your feet about two inches away from the skirting board. Your bottom and your shoulder blades should touch the wall. Your head should not touch the wall, but should feel as light as a balloon on top of your spine. Imagine a piece of string going from the crown of your head to the ceiling I shall be running ‘Being in Balance’ workshops in Bexhill in the autumn. Wellbeing starts with ease of access, and diagnosis of troublesome conditions

The Benenden Hospital Trust is a company limited by guarantee. Registered in England, number 3454120. Registered charity number 1065995. Registered office, The Benenden Hospital Trust, Goddard’s Green Road, Benenden, Cranbrook, Kent TN17 4AX

Getting access to non-emergency treatment can be difficult under the NHS because, as good as it is, it doesn’t always have the funds or resources to cater for all ills. So getting older can be a pain, in more ways than one, because your body is more prone to wear and tear, with for example conditions, such as varicose veins, cataracts and dodgy hips and knees. It is therefore critical that there are independent facilities available, to help take the strain off the NHS. But it’s not only those who are privately insured, or have the funds to self-pay, who can take advantage of private facilities. Benenden members can gain access to Benenden Hospital, one of the South East’s foremost independent hospitals, as can NHS patients from contracted areas, under the e-referral system. A ‘Centre of Excellence’ staffed by only the best specialists Benenden Hospital is a Centre of Excellence for the key areas of orthopaedics, particularly hip and knee replacement; varicose veins, as the UK’s largest single site provider of Endovenous Laser Treatment (EVLT); and for cataract surgery. Each of these areas is staffed by some of the UK’s leading consultant surgeons, assisted by specially trained medical and non-medical support teams. Indeed, Mr Hugh Apthorp pioneered a ‘Rapid Recovery Programme’ for hip replacements which allows patients, when clinically appropriate, to be discharged after just one nights stay at the hospital; Mr Eddie Chaloner and Mr Aaron Sweeney are leading venous surgeons using EVLT as a minimally invasive preferred option; whilst Mr Anders Granberg and Mr Keith Fogg, lead a team that only contains specialist cataract consultants. All of these services, and support teams, are ably assisted by the hospital’s Diagnostic Services facility. Already able to cater for a wide range of scans and tests, the facility is currently

undergoing an extensive £2m upgrade programme. This will extend and improve both the diagnostic capabilities, as well as the already comfortable surroundings. Access to these facilities is simple and easy, through a GP referral. You’re in safe hands at Benenden Hospital The hospital has an enviable record when it comes to infection control, having never recorded a case of MRSA and with a record of 0.86% cases of hospital acquired infections, compared to a national average of 6%. So patients can be confident of being treated in a safe, secure and well-equipped environment. Benenden Hospital nestles in a beautiful location in the heart of rural Kent and has ample free car parking for visitors. Getting there is simple and quick for Kent residents, as well as for those in nearby Sussex – for instance, it is only around 1 hours drive from Eastbourne. By the time you read this it will be all over. I shall be enjoying the delights of the occasional cheese sandwich or roast potato and sleeping through the night. Yes, after months of planning, weeks of shopping, and acres of lists, the wedding will be over. I will have stopped boring my friends with details of the plans and be boring them with the photos. (I’m writing just 72 hours before the big day. It’s 5am and I gave up trying to sleep so decided to write for you instead!). Whenever big occasions come along, most of us decide to make more effort to look our best. My husband and I both want to look great on the day but we have taken very different routes to get there. Whilst he has focused on the outside appearance, I’ve been more concerned with what’s going on under the clothes. We discovered a fabulous tailoring service to have a suit made to measure for him. They use a machine to scan the body and take hundreds of measurements. The suit is then cut exactly to those dimensions so there are only few alterations to be made. Although he wasn’t at all keen on the idea at first, the minute he put on the suit he was sold. He is not a natural suitwearer – he’s much more at home in a pair of shorts – but I’m certain he’ll wear this one more often because he feels so good in it. And, as so often happens, once he started, he couldn’t stop. A designer tie cost him more than his last suit did, but he was happy to pay it because he could see and feel the difference. For me finding the right outfit was critical but actually just a small part. For me, looking fabulous is about glowing with health and vitality. It means being confident enough to forget about yourself and focus on others. I believe people remember this long after they forget what you wear - and they will love you for it. So, as well as searching for the perfect dress, (which I bought in a lovely little boutique in Italy), I decided to deal with an issue which was affecting my confidence. My growing waistline. I don’t think I’m alone in this, am I?

STYLE INSIDE AND OUT

As we women get older, it becomes more difficult to keep weight and body shape under control and I was developing a definite “muffin-top”. Many women accept this as an inevitable consequence of getting older and are relaxed about it which is great for them, but it wasn’t right for me. The upcoming wedding gave me the perfect reason to sort it out. I cut my calories, joined the gym and, quite quickly the weight started to come off but after a few months, it stopped. It’s not unusual and it’s why so many people give up, but I had a clear goal and a deadline so my motivation was high. I refused to consider high street diet aids – full of sugars, milk waste and soy protein. Yuk! I wanted to lose weight but not at that cost. I discovered the right solution for me was a high quality nutrition programme and hit my target weight with two weeks to spare. I am loving my slimmer body. I’ve changed my eating habits and feel more healthy and happy about myself. I know I shall be a better host on the big day because I won’t feel selfconscious and can focus on the most important thing – making the day wonderful for the happy couple and their guests. As the big day approaches I now have other things to think about. The final dress fittings brought tears to my eyes. I know every bride is beautiful but are they really this beautiful? The hen do proved that she still can’t party as hard as me. My son doesn’t quite understand that suits need cleaning and shirts look better when they’ve at least seen an iron. Arranging transport for a hundred people to and from the gorgeous wilderness that my daughter decided would be the perfect venue is a logistics nightmare. And sorting out a table plan that keeps everybody happy is totally impossible. We’re loving every minute of it! In just a few days it will be over. My little baby girl will be married and starting a new stage of her life. And I’ll be back at the gym. Michèle x Pop over to my website www.micheleduke.co.uk or my facebook page www.facebook.com/MicheleDukeFashionBeauty to see some photos of the wedding and my lovely new fashion collection. If you would like any more information about these topics, please email me on michele@micheleduke.co.uk.

For three years now the Multi-Skills Workshop (MSW) has been offering courses, tuition and workshop facilities to the general public in woodwork and metalwork based activities. The workshop was the idea of retiring school teacher David Boniface, who after thirty years of teaching children workshop based courses wanted to offer adults the opportunity to learn and be creative in a well-equipped environment. Now, with over 250 students having taken advantage of the courses, tuition and facilities on offer, ‘Students’ from all walks of life and a very wide variety of ages have undertaken projects ranging from jewellery to large pieces of furniture, and varying in complexity from elements of machinery to beautiful but very simple turned wooden bowls. It is evident that the workshop experience offered by David at the MSW is greatly appreciated by all those that sign up. A comment from Andrew Humm who has been attending the MSW for two years; “Being a complete novice, the Wednesday night Woodworking Beginner’s Class suited me perfectly. I signed up for a course that familiarised us with basic tools and techniques. In a relaxed and friendly atmosphere you can work at your own pace, with as much or as little help and advice as suits you, with continued encouragement and enthusiasm from David, the Course Director.”

SUMMER BUDGET- What has changed for readers of Golden Times In previous articles we have discussed Inheritance Tax and Care Fees Planning. From April 2017, the Government will initially bring in an additional £100,000 per person Nil Rate Band allowance over and above the existing £325,000 allowance. It will only apply to a deceased’s interest in property left to children and grandchildren, unless it is sold after the budget when protections will be put in place to ensure that those who downsize or live in rented accommodation in later life are not disadvantaged. The main residence allowance will then increase by £25,000 each financial year up to April 2020. However, the basic £325,000 will remain fixed until 2021. Not everyone will benefit from the property related increased allowance from April 2017. The 2nd main issue has been the postponement in the capping of the cost of nursing care from April 2016 to 2020 at the earliest. We believe that concerns relating to inheritance tax and funding the cost of care still remain and if you require further advice please feel free to contact me. Gardening tips for mid-late summer from Phoenix Gardening. Traditionally now is the time a lot of people think of

starting to put the garden to bed. In the vegetable garden lift onions to store and lift and store main crop potatoes. You can place cloches over lettuces and other low growing vegetables that will continue to grow giving them some protection. In the flower garden plant spring flowering bulbs, if you’re in a mild area or can provide some protection, sow hardy annuals to over winter. Clear summer beds and prepare for spring bedding plants. Lift and store Dahlias after the first frost. As we move into Mid-Autumn we can plant cabbages for spring harvesting, protect late cauliflowers from frost by bending surrounding leaves over the heads. If you’re thinking of planting bare root fruit trees and bushes now is the time to do it. We can give the lawn autumn care lawn treatments, plant new herbaceous plants and divide over large ones. Sow some sweet

peas in pots. If you have a pond prepare it for winter removing tender aquatic plants if threatened by frost. Insulate the greenhouse with bubble wrap and check heaters are working and ventilate when the weather is mild enough.

TOP TEN GARDENING TIPS FROM PHOENIX GARDENING:

1

Easier said than done, but don’t rush a garden, live with it for a bit, map the passage of the sun throughout the year, work out what you need or want your garden for, make a checklist before you set about changing it all.

Greenhouses – they may well be on your wish list but they take time and effort, they need to be ventilated, maintained and come with their own set of pests. Do you have the time or the inclination or will it become another shed?

6

2

Gardening takes time, weeding especially can take several hours so if you have little time look at low maintenance plants like herbaceous perennials and those that require little or no pruning.

Share\recycle - if a plant has got too big or you have too much of it try giving a clump to someone else, you never know they may have something you want. There are plenty of online sites you can place them on.

7

3

Right plant right place – this can never be stressed too much if a plant likes full sun don’t plant it in the shade, it’s worth taking a bit of time researching the plants you like the look of and seeing what their growing conditions are.

Gardening isn’t an exact science, experiment be bold. Try propagating cuttings collect seeds. You may fail, you may succeed first time, that one success outweighs any amount of failure. You can justly feel smug as you walk past a six foot shrub you grew from a three inch cutting.

4

Look at companion planting where one plant can help support another. i.e marigolds in a veg patch not only aid pollination but their smell also deters some pests.

Try growing a few vegetables or herbs you don’t need oodles of space, you can grow carrots in buckets, pots or potatoes in bags, runner beans up a wigwam.

5

Gardens don’t have to be closed up in October\November and re awakened in March. There are plenty of plants and shrubs that can add colour over winter.

This could easily be number one just enjoy it, its good therapy. Try attracting wildlife, plants for bees or butterflies, put up a nesting box.

Abbeyfield South Downs, a local charity offering housing to older people throughout East Sussex, are embarking on an ambitious project. Their current site at Mill Road in Heathfield, plus an adjacent site, Gray Court, purchased recently are to undergo major redevelopment. It is hoped that a new facility will be developed offering state of the art modern Independent Living with Care. The proposal is for 51 apartments with an onsite Care team available to support those living there. Chief Executive, Nolan Taylor said, "This is a fantastic opportunity for more older people in Wealden to benefit from the long-established Abbeyfield ethos. Our charity offers the highest standards of housing and care, whilst maintaining our normal, reasonable pricing, making a luxurious lifestyle in later life accessible to all." Abbeyfield began in 1956 when Richard Carr-Gomm became concerned about the number of elderly and lonely people living in Bermondsey, London. Today the Abbeyfield Movement has grown to include about 500 member societies throughout the UK, and many more in other countries. The member societies provide between them accommodation for over 8,000 residents, supported by as many as 10,000 volunteers. The Abbeyfield way of life provides a balance of privacy and caring support which can be ideal for many older people who no longer feel happy living alone. Moroccan style meatballs with an aromatic, spicy sauce- Recipe by Faz Razeen Bring a bit of North African sunshine to your dining table with tasty spiced meatballs with an aromatic sauce. In Arabic, meatballs are called Kofta or Köfte and are extremely popular and by far the favourite versions are spiced from North African cuisine. Many of Algerian, Tunisian and Moroccan restaurants offer them as a starter or in a fragrant main-course tagine with couscous. Ingredients (Serves 4) For the Meatballs: 500g lean minced lamb 2 - 3 dessertspoons of olive oil 2 red onions (1 onion for mince lamb and other for the sauce) 1 beaten egg Tagine spice paste use ½ jar (from Tesco 185g) ½ teaspoonful of ground cumin 2 cloves of chopped garlic 2 teaspoonful of salt Bunch of fresh coriander chopped (separate two halves I part for mince and other part for sauce) For the sauce: 2 - 3 dessertspoons of olive oil I chopped onion Chopped coriander Handful of pitted black olives Thumb sized piece ginger, peeled and grated 2 cloves of garlic chopped 1 dessertspoon of chili flakes or alternatively chili powder ½ orange thinly sliced 1 teaspoonful of salt 2 dessertspoons of ‘’Moroccan herb & spice blend’’ (from Tesco by Schwartz 40g) 1 tin of chopped plum tomatoes 400g

Method: Mix mince lamb with finely chopped onion, half jar of the tagine paste, chopped coriander, chopped garlic, 1 teaspoonful of salt and ½ spoonful of ground cumin, tagine spice paste and mix well with all the ingredients with a beaten egg to combine thoroughly. Mix and form into reasonable sized meatballs, once meatballs are properly completed leave in the fridge for around four hours. Heat 2 dessert spoons of olive oil in a large frying pan and add the meatballs in batches, frying until browned all over. Cook in two batches 10-12 minutes for each batch of meatballs. Once meatballs are cooked and firm, remove and leave on a plate until the spicy sauce is ready. To prepare spicy sauce, heat the olive oil in a large, lidded saucepan or heatproof dish, then add the chopped onion, chopped coriander, grated ginger, chopped garlic, 1 teaspoonful of salt, chilli flakes and two spoonfuls of Moroccan herb & spice blend. Cook for 5 minutes on medium heat until the onions are softened and starting to colour then add the pre-prepared meatballs and pitted black olives and thinly sliced orange, finally add chopped plum tin tomatoes with the juice into the pan and mix well to create an aromatic sauce, cook for further 25 minutes on medium heat with lid covered turning the meatballs a couple of times. This dish is excellent when served with couscous, most of us buy couscous in packets at many of the major supermarkets which is actually instant couscous. It has already been steamed and dried for us. It only needs to be mixed with boiling water and allowed to sit undisturbed for a few minutes before being ready to eat. In this recipe I have cooked half a cup of garden peas and mixed with couscous to add colour and taste.
