THE TEAM
Welcome
Welcome to our second issue. I really hope you enjoy what we are creating for you. A magazine that is fresh, bright, and colourful - filled with a unique mix of articles, socials and advice that is a reflection of the Gold Coast. Judging by the reaction and feedback I have received from so many people since we re-launched Gold Coast Panache Magazine back in August, you are loving it as much as I am. The party at JW Marriott Gold Coast Resort and Spa was spectacular and everything I hoped it would be when I set out to make this the premiere lifestyle magazine in Australia. A lot has happened since that initial launch. My husband Simon and I celebrated our 21st wedding anniversary in October. Ours was a very Gold Coast first meeting. At the time I was working for SEA FM and they had a big promotional party at Billy’s Beach House. He was then studying law at Bond University and we ended up chatting over a few drinks. Something clicked and after many dates, a lot of laughs and far too many parties we were married in the TSS chapel in 2000. He has been my rock solid partner throughout that time, very calm and considerate and always there with sage advice on all manner of things. We have been blessed with two wonderful children – Bailey and Zoe – who are the delight of our lives. Time certainly does get away because this year Bailey finished his schooling at TSS and is looking forward to studying law next year. Where does the time go?
To celebrate our anniversary we decided to do what many of us are doing at the moment by rediscovering the delights of our own state. Our choice was to get away to qualia on Hamilton Island. The thing about qualia is it could be anywhere in the world. For years many of us have been jumping on a long flight to go to Thailand, Maldives or Bali for that tropical holiday experience. The alternative in this case was a 90 minute flight which makes it almost right on our doorstep. So easy to get to and I can attest that it really is paradise. Everything about the resort is 6 star. The views, food, staff and service are amazing and right outside our villa was a plunge pool which added to the sense of being a world away. In these times with so many of our tourist destinations coming out of what has been an extremely tough 18 months, I urge you to look around and find somewhere unique to visit. It will benefit all of us if we holiday at home in the next few months. In this issue, based around all that is good and great about summer, we have again tried to keep things topical and fun. Our own Gold Coast gal Sophie Monk graciously gave us an interview talking about her life after Bardot, career and Love Island. We have pages of social life, top real estate with Queensland Sotheby’s International Realty, celebrity selfies and passionate locals. It is a magazine designed for you so please enjoy.

THE TRUTH ABOUT RUTH As the First Lady of the Gold Coast, Mayoress Ruth Tate represents our city in the best way possible - warm, dignified and gracious.
My life began in a one doctor, one nurse hospital in Northampton which is around 50 kms north of Geraldton. Even today the population is just over 800 people so it’s not exactly a bustling metropolis. My parents had a property which was another 50 kms from town. When I was four years old the family moved to New South Wales. The subjects I excelled in at school were science and mathematics. I decided to follow my passions and chose to go to the University of New South Wales to study science. It was during my first year that I realised I wanted to become a physiotherapist. After completing my degree I worked in hospitals in Sydney and London. Tom and I met at university in 1978. By nature I am a shy, reserved person and my first impression of Tom that he was really outgoing. Opposites attract I guess. We started dating and were married in 1980. Being with Tom has helped me to be more outgoing and one thing I love about him is that he has always encouraged me to achieve my potential.
We have four children and decided to move north to the Gold Coast in 1992. We had business interests here but Tom really wanted to make a difference to the city and was eventually elected as Mayor in 2012. As Mayoress I love meeting people from the Gold Coast from all walks of life – which is funny coming from a shy person. Being able to re-launch the Gold Coast Mayoress Charity Foundation has been particularly rewarding. To raise money and then donate those funds knowing you are making a real difference to people’s lives is a wonderful feeling. Via the foundation and the wonderful generosity of so many local people, I have been able to give away around $1.4 million to local charities and organisations who work so hard to help the disadvantaged on the Gold Coast.
I did have a well-publicised health scare in 2017 when I suffered a heart attack in Singapore airport. Fortunately I pulled through thanks to Tom’s CPR skills and the dedicated team who worked on me there and have been given the green light to continue my life. My great love is snow skiing even though I have had two knee reconstructions. I can’t wait to hit the snow again. The Gold Coast is home and I can’t imagine living anywhere else. The people and places we have here make it a unique and very special place to raise a family and enjoy life.

THERE’S SOMETHING ABOUT SOPHIE Our home grown beauty talks about Love Island, heartbreak and her diverse career. Beside her great looks, wicked laugh and rapid fire comments, Sophie Monk has one even more endearing quality. Total honesty. Ask her any question about any aspect of her life and she will gladly give you her take on what was going on at that point. She seems to have reached a calmness and acceptance about the varied twists and turns that have played out over her life and career, usually in full view of the public, and is unfazed by anyone else’s view. Now as ‘Love Island’ places a ridiculously good looking assortment of hot singles, sourced from Tinder, Sophie is front and centre as the presenter deluxe of all that occurs on and off camera. She is the perfect choice to host Channel 9’s ‘Love Island’. Partially because of her welldocumented love life and also because she clearly remembers the first and definitely not the last time she had her heart broken. “It was in pre-school. There was a boy in my class who I really liked and I told him that. He rejected me, probably wasn’t ready for that sort of commitment,” she giggled. “Anyway the next year he came back and said he wanted to be my boyfriend but by that stage I had moved on to someone else.” She understands your pain.

Her relationships, good and bad, since she burst on to the consciousness of Australia in the pop group ‘Bardot’, give her the perfect amount of empathy and insight into what the contestants are going through. “I understand that they are on national television and putting themselves emotionally out there so it is a situation where emotions can and do run high. On some of my stints on reality TV, I would often cry for hours. It is an unnatural situation and you are so wrapped up in the situation that it does get to you. I understand that everyone has to chart their own path.” Would she step in to give advice if she sees someone struggling? “Usually not. Firstly they wouldn’t listen anyway but I might hug and console them.” Sophie came to the Gold Coast as a two year old when her family emigrated from England. Her schooling reads like a hopscotch court as she jumped from place to place attending Helensvale Primary, St Hilda’s, Somerset College, A.B. Paterson
College and MacGregor State High School during her school years. “The various schools was because I always seemed to be getting into trouble. Nothing major but it was down to Attention Deficit Disorder (ADD) and I just couldn’t focus. MacGregor High suited me the best because it had a great performance/theatrical course which I loved. Somehow I ended up being School Captain,” she laughed. “My mother really wanted one of her children to get that badge. Someone else wrote my speech and my campaign was telling everyone that as I was singing all over the place I would be a great ambassador for the school.” Her voice is a natural gift. “I was singing in the back seat of the car when I was seven years old and Mum thought it was the radio. She encouraged me and by the time I was eight I was singing professionally. I’m actually quite shy but put me on stage as a child and I was right at home. There were so many classes I was doing from gymnastics
and singing to acting but it burned up energy and I kept learning.” Operatic training and performing at the Gold Coast Eisteddfod followed as she worked at following her dream of being a full-time professional singer. She landed a job at Movie World, famously performing as a Marilyn Monroe impersonator. “Show biz was always the plan and Movie World was perfect place. I loved working there and would go back again. Wonderful people to work with and such a great way to get experience. I played different characters, did street performances or sang in front of big crowds – it was simply the best training in learning how to work an audience.” In 1999 at the urging of her mother she answered an advertisement looking for girls who could sing and dance. It was the television show ‘Popstars’ and as we now know she was selected to appear on the show, was chosen and went on to become an integral part of the mega-group ‘Bardot’. (There was a certain irony that pout, blonde hair and figure were very similar to Brigitte Bardot.) The level of fame they achieved thanks to the TV show was astonishing. Their debut album, ‘Bardot’, and single, ‘Poison’, hit number 1 in Australia and New Zealand immediately upon release. Sadly the group broke up in 2002 and Sophie began her acting career taking a courageous leap of faith by heading to Los Angeles in 2005 landing a coveted part in ‘Date Movie’, a spoof based on the popular rom-com format. Roles on ‘Entourage’ and other TV shows and movies followed. She also was SUMMER • 2021/2022 17

cast in five different pilots during her L.A. stint and while none of them were picked up, they gave her invaluable experience. “My Aussie humour used to get in the way sometimes. I would be in a room filled with producers and executives and they would be praising me for this role or that. I particularly think it is a Queensland thing but in our self-deprecating way I would say, ‘Really? I didn’t think I was that good.’ I would say it as a joke but it is something no American actor would say in that situation. They thought I needed therapy and I could see them looking puzzled and doubting their decision to cast me.” She was lured back to Australia to appear on ‘Getaway’. It was the beginning of a long association with various TV shows which in turn gave her the profile to enter the highly competitive Sydney radio market. “So many people think that they could do a radio show but it is incredibly difficult. You have to be able to speak on cue, operate to a time format, try and remember not to cross the line with your comments or humour and interact with your co-presenters. A lot of preparation goes into making it seem ‘easy’ and the good ones really earn their money,” she said. Having been engaged multiple times, including with rock star Benji Madden, she agreed to be ‘The Bachelorette’ and was eventually paired off with Stu Landy. That relationship didn’t last but in a happy twist of fate she met her 18 GOLD COAST • PANACHE Magazine
fiancé Joshua Gross on a plane after filming for ‘Love Island’ had wrapped. “I was flying in 2018 and he was sitting beside me. We spoke non-stop on that flight. He was funny and nice and when we landed I said to him, ‘We should get married.’ He laughed at me but three years later, and we were separated for a year in that time, he proposed marriage in January this year.” The plan is, at this stage, to have a low key wedding somewhere near their Central Coast home but she is not fussed about making it a big production. “I love it there. It reminds me so much of the Gold Coast and I need to be in NSW for work so I can’t take the risk with a sudden border closure.” Like most Australians she has had to endure lockdowns but is happy to admit that she didn’t spend her time as productively as some. “Basically I bunkered down and ordered six pizzas a day,” she laughed. “I didn’t care too much because I was happy and got on with things.” She confesses she has just discovered that one of the traits of those with ADD, especially in her case, is they like to change and jump around by trying new things. Possibly that ‘have-a-go’ attitude is what has endeared her so much to Australian audiences. “I like doing different things and don’t get too stressed if things don’t work out.” That happy persona is her natural state and is reminiscent of Goldie Hawn – bubbly and bright but with a keen and intelligent eye taking in everything that is going on around her. Underestimate her as a ditzy blonde at
your peril. Having endured for so many years in the cut throat world of show business and entertainment, Sophie has many ideas about changing her focus in the coming years. While she loves being the smiling face of ‘Love Island’ she has dreams of becoming more involved behind the camera. “I would love to get into producing shows. I have a lot of ideas – a ‘Love Island Survivor’ series would be fun,” she laughed. “The difficulty here is that there are so few TV networks unlike America where there are so many choices. Even Los Angeles has a huge range of stations.” No matter what her next career move will be she will approach it with the same attitude and work ethic she applies to everything. Be upfront, be prepared and be happy. Her upcoming wedding and a new life, being comfortable in her own skin and with those around her will keep her as the same grounded person she has always been.
NOW & THEN
skool DAZE Belinda Dawes Where did you go to school? I went to school in Sydney – St Christopher’s Primary School, Panania and Mount St Joseph’s College for High School. Favourite subject? I always loved Science at school. Favourite teacher? My most memorable teacher’s nickname was Freaky Friday. She was my year 3 teacher. She was so strict we were all terrified of her. Her signature move was to throw chalk at people who were talking in her class. She had the most incredible accuracy with the chalk and if she was really annoyed the duster got thrown too. Best memory at school? Meeting my lifelong friend Kelly McAndrew. We had some fun times growing up together – we also worked at the same job after school too. Academic or sporting achievement? Graduating University with Bachelor of Technology Management (Biotechnology) was a proud achievement – lots of late night cramming and tears went into it. What did you want to be when you grew up? I never knew what I wanted to be when I grew up. I did a science/business degree as a result and somehow ended up in media and have loved every minute! Is your life now what you expected it to be? I always hoped to have a loving family unit like my parents had set as an example for us and have been blessed to have that with my husband Tim and daughter Ruby. We are very grateful to be living on the Gold Coast working with and getting to know such wonderful people.
Attending school and getting an education is an all-important part of shaping us for life’s journey. We asked some prominent women for their memories from their time in class during those formative years.
Kristy Mehrtens Where Did You Attend School? I went to school in Brisbane at Calamvale State Primary School and Browns Plains State High School. A lot of the southern areas were bush then and the closest schools were a 90 minute bus ride away. Favourite subject? My favourite subject was Biology. I have always been fascinated by how the body works. Favourite teacher? My favourite teacher was Mr Crem who taught chemistry. He was like a nutty professor and said and did some of the craziest and amusing things. Best memory at school? The best memory from school was the day they announced I had been selected as School Captain. It was such a privilege and honour to be voted in by my peers. Academic or sporting achievement? I was known more for my academic work but absolutely loved playing netball. It was such a surprise when I was selected to go to the Queensland State Netball Titles. What did you want to be when you grew up? I loved studying anatomy and wanted to be a doctor until I realised I got queasy around blood and needles so instead I became a physiotherapist. Is your life now what you expected it to be? I had no real expectations with how my life would be and am very grateful for the life I have with my family and friends plus the many opportunities I have enjoyed over the years. NOW & THEN
Amanda Abate Abate Where Did You Attend School? Knox Gardens Primary School outside Melbourne. Favourite subject? Art Favourite teacher? My grade five teacher Mrs Coates. Best memory at school? It’s quite silly, but in grade 4 my best friend was daydreaming while holding a Texta without the lid on, and without realising, she had drawn green squiggles all over her face! I don’t think I stopped laughing for days. Academic or sporting achievement? I used to do little athletics, and loved high jump and triple jump. I peaked at a very young age. Named the ‘Champion Girl’ at my local club when I was 8, which at the time felt like I had won the Olympics… but safe to say it wasn’t the start of a stellar sporting career. What did you want to be when you grew up? A journalist or a veterinarian. Is your life now what you expected it to be? I think as a child I very much lived in the present, which is nice. I didn’t put a great deal of thought into what my future life would look like. I know I always wanted to be a mother, and from a very young age, I dreamed of being a TV newsreader - though I’m not sure that I expected it to happen!
Bianca Phillis Your favourite subject? Legal Studies. Favourite teacher? I was fortunate to have many, however, Mrs Van Driel my year 5 teacher had a huge impact on the person I became. Best memory at school? I went to school in South Australia, in winter every week we would have to run a 3km cross country course. My house was on the cross country track and a few times a group of my friends and I would deviate and spend a nice 20 minutes laying on the couch before re-joining (mid pack so as to not raise suspicion) I think the teachers evenutally realised when the same group always finished with not much mud on them! Academic or sporting achievements? I was extremely fortunate to have been awarded a UMAP (University mobility in the Aisa Pacific) Scholarship and I spent one year at Daito Bunka University in Japan. What did you want to be when you grew up? A journalist! I did work experience in year 11 with Derryn Hinch at a radio station in Adelaide, he was a wonderful mentor and a true gentleman. When I returned from Japan, I enquired to Bond University to do a Journalism degree. I decided not to go down this path, a regret that still follows me today. Is life how you thought it would be or better? I never thought there would be more alcohol on my hands than in my mouth! Here's to 2022!

helping to change the injustices of the world.
Liz Kinchin What school did you attend for primary and senior? I grew up in Africa and went to school with my twin sister – were two little blondies! I attended St Mary’s until it closed down, it was the happiest time of my life. I even had a pet Zebra. For high school we were sent to boarding school St Michaels Anglican school for girls. Favourite subject? Art but a close second was drama and music. Yes I loved the choir too, I was a nerd. Least favourite subject? Latin – We chanted before each exam. Latin is a dead language, as dead as dead can be, it killed off all the Romans and now it is killing me. Favourite teacher? Sister Aloysius, a charismatic German nun who was an incredible musician, loved drama but she was also an avid humanitarian. She not only opened my eyes to the fabulous world of music, but also the injustices of the apartheid era and how people of colour were badly treated. Sister Aloysius taught me from the age of 7 to believe in people. She is a major catalyst for me being so interested in helping marginalised souls and
Best memory at school? I grew up in apartheid South Africa all children went to segregated schools depending on their race. This angered me even from a young age. My mother was Scottish and my father was German, so we were bundled off to SMS so we would have an unbiased upbringing. We boarded with diplomats children of all races. African, Chinese, we even had a class mate from Saudi Arabia. I learnt so much from my fabulous friends about different cultures, aspirations, and dreams. What did you want to be when you left school? I had my heart set on becoming a Hotel Manager. I love business, people and public relations. However my super strict caring, conservative German father forbid me to go to hotel school as he had spoken to a hotelier who said most women in the hotel industry become promiscuous. “Seriously!” Luckily years later I ended up working for the Hospitality Industries Training Board and helping many hoteliers so I lived out my dream through other hoteliers in a way. Is life how you thought it would be or better? Life is definitely not how I imagined it at all. I am so blessed to call Australia home. Especially the Gold Coast. I have met the most incredible people, magical, special people, and helped so many of them and their families through the years have a better healthier life. We have cried together, laughed together and cheered each other on. I am so privileged to have had the opportunity of living all over the world and finally calling Australia home. It is the BEST spot on the planet and we are even more privileged to call the Gold Coast home.
Nicola Buchanan What school did you attend for primary and senior? Holy Cross Primary School, St Dominic’s College in New Zealand and Merrimac State High School. Favourite subject? I loved art class and of course lunchtime. Favourite teacher? I don’t remember a particular but I do recall that I hated Sister Leonie with a passion. Best memory at school? I was lucky enough to be a Rotary Exchange Student for 3 months when I was in Grade 10. It was the best fun ever. Academic or sporting achievements? 400m running was something I was very good at and ended up winning at the Regional Championships. I also won an Accounting Prize in Grade 12 as well as my time as a Rotary Exchange Sudent. Did you love school and why? I loved most aspects of school – friends, art, anything that was creative. Maths was something I really hated though. What did you want to be when you left school? I wanted to work in advertising using my creative side. Is life how you thought it would be or better? Way better. SUMMER • 2021/2022 21
CELEBRITY
SNAP happy Bella Frizza
Sonia Stradiotto
You’re out and about. Suddenly you are in the presence of a superstar and you ask politely to get a selfie. These are the stories behind some of them.
Ali Simpson and Bella Frizza – “This was taken when 90.9 Sea FM held their annual ‘SO GC Party’ on the YOT Club. We cruised around the Broadwater and as Gold Coast gal Ali Simpson, sister of Cody Simpson and a popular singer, actress, dancer, and model in her own right was on board, I couldn’t resist and just had to get a pic with her. She was very sweet to everyone.” Vanilla Ice and Michelle Massey – “It all happened so quickly. One minute I’m in an audience of 4000 at a JT Foxx conference and the next I’m up on stage singing and dancing to ‘Ice Ice Baby’ with the one and only Vanilla Ice (Robert Van Winkle). It truly was a pinch myself moment, I mean, who has this happen to them? Shortly after this we were reminiscing at a VIP dinner and in walks JT Foxx with Vanilla Ice to join us. He was so lovely, down to earth, very business savvy and an incredible family man. Definitely someone my kids should look up to now.”
Toni Ferguson – “Here I am with Usain Bolt in the Mumm Marquee inside The Birdcage on Oaks Day 2017 at Flemington. I was quietly given the heads up that he was going to be coming into the marquee and next minute I turned around and there he was. We chatted for ages and I challenged him to a race to the bar. As a girlfriend said, ‘I bet you could still beat him to the bar.’ He was super lovely and as you can see, so very tall.” Sonia Stradiotto – This selfie was taken with the Premier of Queensland Annastacia Palaszczuk when I was lucky enough to prepare her for the 2019 Logies which were held at The Star Gold Coast. She is a hardworking woman, dedicated to the state, and with very little time for herself. I was so proud that I could help her because she deserves a night of glamour every now and again. The best part of the night was hearing someone say, “Wow! Is that the Premier?’ It was the best compliment. 22 GOLD COAST • PANACHE Magazine

Robin Williams and Peta-Jayne Habner - “This was taken backstage at The Star Gold Coast with Robin Williams when I worked there and before he went on to do a show. He was super lovely to deal with and brightened up the lives of so many people with his movies, story-telling and comedy. His death was such a great loss and it made me sad that his personal life wasn’t as bright as the happiness he created for us.”
Rachel Hancock
Susie Porter and Rachel Hancock - “I’m not normally a fan girl but I’m a massive fan of ‘Wentworth’. This pic with Susie Porter was taken at the Logies in 2019, at the after party in the Garden Bar. We were standing near the Foxtel stars and I went up and introduced myself, figured we were all part of the same News Corp family! She was so lovely and down to earth. I started talking story plots with her which was probably the last thing she felt like talking about but she very kindly indulged my love of ‘Wentworth’.”
Bridget Daley
Olivia Newton-John OAM and Karen Phillips – “For more than two decades, I have hosted the Early Risers, Gold Coast Women in Business club with some of the world’s biggest celebrities. This was an extraordinary moment with Olivia Newton-John OAM at a fundraising luncheon at Palazzo Versace. To the delight of the audience, as Olivia was welcomed to the stage with her hit song ‘You’re the one that I want’ playing, she started to sing along. She then beckoned to me to join in, with me taking on the John Travolta part. She was here to raise funds for the Olivia Newton-John Cancer Wellness Centre.” Dave Hughes and Bridget Daley – “Firstly I’m always uncomfortable getting photos with celebs but this one is special. It was taken when I revived my stand up career at Miami Marketta as a fund-raiser for the farmers going through that horrendous drought in 2018. I was nervous and excited – performing with comedy greats Akmal Saleh, Rob Brown and Dave plus it was the first time my husband Jamie had seen me on stage. This photo means so much because Dave was so lovely and calmed my nerves. We all had a great night with a packed crowd ready to have a good belly laugh for a great cause.”
Karen Phillips
Lou McGregor
Lou McGregor and Dr Chris Brown – “This was taken the first year that The Star hosted the Logies. My dear friend Donny Galella had the job of styling 17 celebrities so we pulled together a Gold Coast crew to assist. He put Dr Chris Brown into my capable hands! It was a hard gig. Seriously though Dr Chris was so lovely, easy to talk to (which was just as well because it was in his hotel room) and definitely did not need much assistance looking good.”

*********
Tell us some of your favourite fashion finds? Over the years I have always loved collecting statement jewellery and handbags from my travels around the world. Leather jackets and leather pants are a great wardrobe staple which never date plus tailored blazers. I’m also a big lover of hats, scarves and turbans. Do you have a look you are trying to create? I am best known amongst my friends and followers for creating my own individual style. Having fun with my fashion looks by adding lots of colour to my wardrobe is my thing plus wearing silks or sequins whenever I am going after a more glamorous look. I don’t like wearing what everyone else is wearing. Fashion philosophy? I have three… It is better to be overdressed rather than underdressed. Colours always brightens your day and mood. If you love something buy it ….in every colour! Favourite designers and why? I have too many, I like everything and shop everywhere. One of my favourite Australian labels, ‘Wheels & Dollbaby’, has just relaunched. Their pieces are so feminine and flattering with beautiful materials. Versace has always been one of my favourite fashion houses and I also love Balenciaga, Balmain, Gucci and Alex Perry. I always feel good wearing Zimmermann while Zara and ASOS are great for every day looks without breaking the bank balance. Any Instagram style favourites you follow or who inspire you? Most are fashion labels and designers. Christine Quinn, Leonie Hanne, Micah Gianneli, Michael Costello, Clementine McVeigh, Jess Flanagan, Drew Ginsburg of Dylanlex … it’s long list. As the mother of twin boys how do you manage to look so good?

Oh! Thank you. The team at Ultimate Skin & Body Clinic in Ashmore always help me look my best by looking after my skin with a variety of their medical grade treatments and their ISSADA skincare and mineral make-up range. To give an extra glow I love the Nikki Mitchell organic tanning range. An Infrared sauna and a lymphatic drainage, Brazilian massage at ‘Lymph 4 You’ also makes me feel refreshed while Australian Acupuncture Clinics keep me relaxed and pain free. Who was your early inspiration in fashion? Probably starting work in the fashion industry as soon as I finished high school and then moving into modelling. My addiction with fashion, and the size of my wardrobe, grew from there. Over the years I would buy every fashion magazine and would draw inspiration from looks I loved try to put my own twist on it. People who have their own fashion style always grab my attention.

WOMAN
Passion, drive and a love of creating for her clients have allowed Sonia Stradiotto to survive three decades in the fashion industry.
WHAT IS YOUR FIRST BIG FASHION MEMORY? My first big Fashion memory was at 18 whilst training with Myer Australia. I had the privilege of being the only female trainee to be part of the launch of Ermenegildo Zegna high-end Italian Menswear. Myer Pacific Fair held the exclusive licence to sell Zegna and the Australian launch was an incredible event. It left an indelible impression on me to inspire, educate and entertain my clients and deliver fashion in a way that is dedicated to exclusive customer service. TELL US ABOUT YOUR EARLY LIFE. I have been on the Gold Coast since I was four years old. My parents told me I was conceived here in the late 60s so 26 GOLD COAST • PANACHE Magazine
that makes me a real local. There are so many memories I retain from the boom times and growing up here – I could write a book. DID OUR LAID BACK, BEACH LIFESTYLE AFFECT YOUR DESIGN AND RETAIL PHILOSOPHY? The Gold Coast is my love. The beautiful beaches and the ocean is my healer and my inspirer. I was born in Melbourne and we moved here when I was four so I celebrate 50 years of living here this year. Although I do hunger for the big city travel adventures at times. New York, LA, Hong Kong and Rome are magical places to visit but I am a proud Australian and believe there’s no place like home plus the Gold Coast is the most beautiful city in Australia.
DID YOU HAVE ANY FASHION MENTORS? No I didn’t have any fashion mentors as such. I am self-taught and self-made, a dreamer at times but I see what might seem impossible but make it possible. This really showed at a young age and I recall some mean teachers at school who cut down my tree of enthusiasm, so I learned to only trust my family. The path has been hard and slow at times but it has kept me from taking too many risks or making too many mistakes. I have jumped the rocks in the rapids carefully but always planning for the unexpected and having a Plan B. There is self-doubt at times but then I remind myself how far I have come and how much happiness my career has bought to so many women. As I get older I realise that 32 years in the fashion
FASHION
Sonia STRADIOTTO business is really a master’s degree of its own in the University of Life. WAS IT ALWAYS GOING TO BE FASHION AS A CAREER? I studied music, dance and theatre, but fashion was my real love and I have used that training in the arts to help my brand evolve and grow over the years. ANY FAMOUS DESIGNERS THAT YOU HAVE REALLY ADMIRED AND WHO HAVE INSPIRED YOU ALONG YOUR JOURNEY? The fighting spirit and rags to riches story of Coco Chanel is something I really admire. She is my fashion and design icon and we share the same birthday - 19th August. IF NOT FASHION, WHAT WOULD BE YOUR OTHER CAREER CHOICE AND WHY? Fashion! Fashion! Fashion! If you want something, never settle for the backup. Just do it. ANY ADVICE FOR A YOUNG PERSON STARTING OUT AS A FASHION DESIGNER? You must start at A and complete your mission at Z. When you do this you are a Fashion Designer and Creator. So many young students want to be instantly famous or deliver production lines that fail. Mainly it is through lack
of experience and education or without learning the foundation of fashion which you can build on brick by brick until you have a Fashion House. DO YOU HAVE PLANS FOR THE FUTURE?
Yes, I confess that I am a creator, inspirer and dreamer. There is a book in the pipeline and a master class project. I have realised that after achieving 33 years in business in 2021 and launching my latest fashion goal, (under wraps at the moment), I need to share and teach and help others find their place and achieve their dreams and goals. Being a Fashion Mentor and writing is my new purpose. Helping young students so that they don’t have to struggle as hard as I did. Other than my amazing mum I had no mentor to call or sit with, nor internet to read information and literature. This modern world and its technology has everything for our next-gen angels at the click of a mouse. I want to take students on a raw journey of courage with mindblowing, original experiences that cannot come from the internet. SUMMER • 2021/2022 27

French summer The latest Summer trends
The eighties and nineties were a great time and when it comes to French manicures…they’re back! Whilst the French manicure has been a long time favourite, this comeback sees some upgrades to go with any Summer look this year.
Cindy Butler Nails, Mermaid Waters 0414 531 523
When the French first featured in the eighties, it was a shade of neutral with a shade of bright white. The biggest problem with this was the shade of neutral was not so neutral on all skin tones. So today there is every shade of white from soft to dramatic and neutrals to match every skin tone. The look this season is to match the neutral to your unique skin tone, to give an elongated illusion, and then drop the ‘smile line’. By dropping the line between the neutral and white, the look of the elongated nail bed exaggerates and gives the appearance of a slim and sexy silhouette.
To gain the full effect, the creamy neutral must match the client’s skin tone exactly. This is where your nail technician’s experience and advice is paramount. With the advancing technology and the elevation of gels, gel paint and gel polish combined with new tools and products has allowed for an easier application and push-wear to three plus weeks without yellowing or breaking down. This is important, a stark white tip must stay that way to appear fresh and vibrant.
Shape and length are just as important when interpreting this comeback trend for the client. Over time the French took a short square look steering away from sleek and femme. The smile line was too low, only heightening the look of a short finger or toe. Today the look has modernised by going back in time to a sleek and slender look.
This new trend, modernising an already popular look, now personalising with precise matching of skin tone, with a sexy shape can be customised with colours and patterns to really bring out mood and personality. Experiment and

JEWELLERY
Lords of the RINGS Turn your beloved jewellery pieces from dated and tired to timeless treasures
When someone decides to remodel a jewellery piece, there is usually a great deal of sentiment attached to the specimens to be made over. It may be a piece that belonged to a relative that may no longer be with us or something that has been given with a great deal of love. In this particular case, special clients come to us after being engaged for 10 years. Time, as it often does, slipped away and things got postponed. After buying a house and starting a family, they finally decided to tie the knot but felt the original ring needed some updating. On this occasion and after careful inspection, an upgrade was promised which would add to the original engagement ring. We sat down with the bride-to-be and listened to what she had in mind, taking careful note of what they already had in relation to diamonds and gold. Our ideas were then combined and using a CAD design we could show the couple exactly what the end result would look like.
Fine tuning is done at this stage, suggestions are offered, alterations to the design are made thus ensuring the client is completely satisfied with the final look of the ring. One specific request was that the client wanted the work performed by hand. This is craftsmanship of the highest order and involves processing the existing metal into a workable state, and then using fabrication techniques of rolling, shaping, filing, and joining the raw material to match the design required.

th 5 AVENUE Jewellers Doing this work by hand ensures a higher quality of finish and greater metal density, meaning the item will be more enduring. This process, depending on design, can take a great deal of time as well as the technical knowledge of how different metals are worked, shaped, and joined. These skills take many years to develop. It also takes a high level of listening skills to understand what is wanted, and the ability to create a design and then execute the plans to produce a stunning, modern result. They were thrilled beyond measure with what was produced by 5th Avenue Jewellers and we had another very satisfied customer who now has an item that met their individual needs and was unique to them.

EVIAN Evian has reached a key milestone in its sustainability journey by introducing a range of ‘bottles made from bottles’. 130,000 tonnes of single use plastic finds its way into the oceans every year, including shopping bags, straws and takeaway coffee cup lids. The result is a vodka with a depth, complexity and smoothness rarely found in modern spirits.

BLACK FOREST CAKE BOMBS Traditionally, a black forest cake is a combination of chocolate sponge, whipped cream and loads of cherries. This version celebrates the original in a way that gives you the same great taste without the need to bake a thing. Plus, you get all the incredible health benefits from using nutrient-dense ingredients.
INGREDIENTS 155g (1 cup) raw cashew nuts or macadamia nuts 180g (2 cups) fine desiccated coconut, plus extra if needed 125g blackberries 125g pitted fresh cherries 3 tbsp maple syrup, honey, coconut nectar or maple-flavoured monk fruit syrup 2 tbsp coconut oil, plus extra if needed 250g (1 cup) Chocolate To get started, line a tray with baking paper. Place the cashews or macadamias and desiccated coconut in a food processor or high-speed blender and pulse until well combined. Add the blackberries, cherries, sweetener and coconut oil and blitz again to make a thick, wet dough that can be rolled into balls easily. If it’s too wet, add a little more desiccated coconut; if it’s too dry, add more coconut oil. Use your hands to roll the dough into large walnut-sized balls, then place on the prepared tray. Transfer the balls to the freezer to firm up for 15 minutes. Meanwhile, prepare the chocolate and allow it to cool and thicken for 10–15 minutes, ready for coating your black forest balls. Once the balls are cold, firm and set, use your fingers or a fork to dunk them into the chocolate. Place back on the tray and return to the fridge or freezer for 10 minutes to set the chocolate. Drizzle any leftover chocolate over the black forest balls to create fun patterns and return to the fridge until ready to serve. (If the leftover chocolate is too thick or firm, simply melt it over low heat to make it runny enough to work with again.) Store in an airtight container in the fridge for up to 5 days or freeze for up to 1 month. Makes about 15. 62 GOLD COAST • PANACHE Magazine

Line a tray with baking paper. Heat a frying pan over medium heat and add half the pistachios, the walnuts and desiccated coconut. Toss, keeping the nuts moving to prevent burning, for 3–4 minutes, or until the coconut is lightly browned and everything is aromatic. Transfer the toasted mixture to a food processor and blitz to a fine crumb. Add the cashew butter, coconut oil, sweetener and rosewater and blitz again to make a thick, wet dough that can be rolled into balls easily. If it’s too dry, add a little more coconut oil or cashew butter; if it’s too wet, add a little more desiccated coconut. Once you’re happy with the consistency, use your hands to roll 2–3 tablespoons of dough per ball into evenly sized balls. Spread them out on the prepared tray and transfer to the fridge for 10–15 minutes to firm up. Meanwhile, prepare the chocolate and allow it to cool and thicken for 10–15 minutes, ready for coating your Turkish Delight Bites. This is a good time to lightly toast and roughly chop the remaining pistachios. Once the balls are cold, firm and set, use your fingers or a fork to dunk them into the melted chocolate. Then, working quickly before the chocolate sets, sprinkle over the roughly chopped toasted pistachios and rose petals (if using) and return to the tray. Return to the fridge or freezer for 10–15 minutes to set the chocolate. Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month. Makes about 15.

VANILLA SLICE Every small town across Australia claims to have the best vanilla slice. No disrespect to them because they are all delicious, but you can make your own without the fuss of making puff pastry – and now you, too, can put up a sign out the front of your house saying ‘home of the best vanilla slice’.
INGREDIENTS 3 tablespoons monk fruit icing sugar (optional) BASE 225g (1 ½ cups) raw macadamia nuts or cashew nuts, lightly toasted 135g (1 ½ cups) desiccated coconut, lightly toasted 125ml (½ cup) maple syrup, honey, coconut nectar, or monk fruit syrup for low carb 125ml (½ cup) melted butter or coconut oil 2 teaspoons vanilla bean paste or powder VANILLA CUSTARD 750ml (3 cups) canned coconut cream 2 tsp vanilla bean paste or powder 4 egg yolks 1 tbsp arrowroot or tapioca flour 125ml (½ cup) maple syrup, honey, coconut nectar, or monk fruit syrup for low carb 2 tbsp gelatine powder 3 tbsp boiling water Line a 20 cm square cake tin with baking paper. For the base, combine the macadamias or cashews, desiccated coconut, sweetener, butter or coconut oil and vanilla in a food processor and blitz until a sticky crumb forms that holds together when pressed with your fingers. Tip the base mixture into the prepared tin and use your fingers to smooth, flatten and press it into the edges. Transfer to the fridge or freezer to set for 20–30 minutes while you start on your custard. For the vanilla custard, place the coconut cream and vanilla in a saucepan over medium–low heat and, whisking constantly, bring just to a simmer for about 5–6 minutes. Remove from the heat. Combine the egg yolks, arrowroot or tapioca flour and sweetener in a bowl and whisk well. Whisk in the hot coconut cream until well incorporated. Place the gelatine powder and boiling water in a small heatproof bowl, stir to dissolve the gelatine, then slowly whisk into the coconut cream mixture. Place the pan over very low heat and cook, whisking frequently, for 25–30 minutes, or until the custard is lovely and thick, silky and creamy. Be mindful to watch the heat and keep the custard moving so it doesn’t burn or curdle. Set aside to cool for 20–30 minutes. Pour the cooled custard over the base, cover and place in the fridge to set for 6–8 hours or overnight. Once the vanilla slice slab is firm, cut into nine squares with a warm knife, dipped in hot water between slices. Sift over the monk fruit powder (if using) and serve. Store in an airtight container in the fridge for up to five days or freeze for up to a month. Makes 9

YELLOW DAL
With tomato, turmeric & fried Kashmiri chillies INGREDIENTS 200g yellow tur dal, soaked in cold water for 1 hour, then drained 2 medium tomatoes, chopped 1 medium onion, chopped 4 green chillies, slit lengthways 2 garlic cloves, peeled and left whole Small handful fresh curry leaves 1 tsp salt 1/2 tsp ground turmeric Tarka 2 tbsp sunflower oil 1 tsp black mustard seeds 2 shallots, finely chopped 4 dried Kashmiri chillies, each broken into 3 pieces About 15 fresh curry leaves Handful coriander leaves, roughly chopped, to garnish
Tarka dal A tarka is a last-minute fry of spices and chilli which you pour, still sizzling, on top of the dal in the dish. Put the dal into a large saucepan and add water to cover by about 4cm. Add all the remaining dal ingredients, bring to the boil, then lower the heat to medium and simmer for 45–60 minutes. The dal should be soft but still with a little bite. Use a potato masher to break up about half of the lentils, being sure to leave plenty of texture. For the tarka, heat the oil in a pan over a medium heat, add the mustard seeds and fry for 30 seconds until they pop. Stir in the shallots, Kashmiri chillies and curry leaves and fry for 2–3 minutes until the shallots are softened and golden. Spoon the tarka on top of the dal, sprinkle with fresh coriander leaves and serve. Serves 4 – 6

BARBECUED WHOLE SEA BASS WITH FENNEL MAYONNAISE INGREDIENTS 2 x 450–500g sea bass, cleaned and trimmed of fins 2 tbsp olive oil 1 bunch fennel herb 2 tsp Pernod Salt and black pepper
FENNEL MAYONNAISE 1 egg yolk (at room temperature) 1 tsp white wine vinegar 150ml olive oil (not extra virgin) 1/2 tsp Pernod 1/2 tbsp finely chopped fennel herb A few chives, finely chopped Preheat a barbecue or an indoor grill. Slash each fish 3 or 4 times down each side and rub them with olive oil. Season well, inside and out, with salt and pepper, then push some of the fennel herb into the gut cavity. For the mayonnaise, put the egg yolk, vinegar and a pinch of salt into a bowl or food processor and whisk together. Start adding the oil very slowly, literally a drop at a time at first. If you go too quickly, your mayonnaise will split. Then keep adding the oil in a very slow, fine stream until the mixture is really thick. Stir in the Pernod, the chopped fennel and chives. Check the seasoning, adding more salt if required, then set aside.
This is my favourite way of cooking whole fish on a barbecue, but it can be quite tricky and you might want to try cooking it under a grill the first time round. What really works in this is the mayonnaise that’s flavoured with fennel herb as well as a splash of pastis and some chopped chives. They give the sauce a bit of onion flavour which seems to work so well. 66 GOLD COAST • PANACHE Magazine
Barbecue the fish for 5–7 minutes. Sprinkle each with a teaspoon of Pernod, then carefully turn them over and cook for a further 5–7 minutes until they are cooked right through to the backbone. If you’re using an indoor grill you probably won’t need to turn them over, but they may take a few more minutes. Use the browned side as the presentation side. Carefully remove the fish from the barbecue or grill and serve with the mayonnaise, boiled new potatoes and a green salad.
TIP You can also make this with sea bream, red mullet, snapper or John Dory. Serves 2

CORNISH MUSSELS WITH CIDER INGREDIENTS 1.75kg mussels 20g butter 1 garlic clove, finely chopped 4 or 5 spring onions, chopped A few thyme sprigs and a couple of bay leaves 100ml dry cider 120ml double cream Good handful wild sorrel leaves, coarsely chopped, or 200g baby spinach leaves, washed Salt and black pepper Crusty bread, to serve Wash the mussels under plenty of cold, running water. Discard any open ones that won’t close when lightly squeezed or tapped. Pull out any tough, fibrous beards protruding from the tightly closed shells and knock off any barnacles with a large knife. Give the mussels another quick rinse to remove any little pieces of shell.
Melt the butter in a large pan with a lid. Add the garlic, spring onions, thyme and bay leaves, then cook until softened. Add the mussels and cider, then turn up the heat, cover the pan and leave the mussels to steam in their own juices for 3–4 minutes. Give the pan a good shake every now and then. Add the cream and the chopped sorrel or baby spinach and remove from the heat. Season with salt and black pepper. Spoon into large warmed bowls and serve with lots of crusty bread to soak up the tasty juices. TIP
Here’s another recipe from my Cornish TV series, something that I cooked on the turf above a beach just outside Mevagissey. I can’t name the place because it’s owned by a family. This is a version of moules marinière using Cornish ingredients – you can’t go wrong really.

I’m often asked if you should discard any mussels that don’t open after cooking. In fact, there’s nothing wrong with them, as they’re cooked and should be fine. Once in a while, though, you will find that those that don’t open are full of sand and mud, so probably best to throw them out. Serves 4

BURNT HONEY SEMIFREDDO INGREDIENTS ¾ cup (185ml) local honey 600ml organic thin (pouring) cream or coconut cream 8 organic pasture-raised egg yolks 2 organic pasture-raised eggs ½ tsp vanilla bean powder ¼ tsp grated or ground nutmeg Topping 2 cups (300g) pitted cherries or your favourite seasonal fruits, chopped* fresh berries and local edible flowers in season,* to serve grated or ground nutmeg, to serve
With seasonal fruits Line a 24 cm cake tin or 11 x 27 x 9 cm loaf (bar) tin with baking paper (it will mould to the tin better if you scrunch it up well first, then spread it out to line the tin. Use two strips of paper at right angles, to get good coverage and to have plenty to fold over the top). Combine half of the honey and 2½ tbsp of the cream in a small saucepan and cook on high until the mixture smells super caramelly (almost burnt) for about 4 minutes. Pour immediately into a roomtemperature bowl to cool. Half-fill a medium saucepan with water and bring to a gentle simmer over low heat. Place the egg yolks and remaining honey in a medium metal bowl that will sit securely on top of the saucepan without touching the water. Place the bowl over the simmering water and beat with hand-held electric beaters until the mixture is pale, creamy and frothy (taking care not to burn the electrical cord). Remove the bowl from the saucepan and set aside. Pour the remaining cream into a deep medium bowl and beat until thickened but not too stiff. Gently fold the cream and the cooled burnt honey mixture into the beaten egg mixture. Everything should now be in one bowl. Pour into the prepared tin, then cover and freeze for 3 hours or overnight. When ready to serve, remove the Semifreddo from the freezer,* take out of the tin by pulling on the paper, then remove the paper and place the Semifreddo on a plate or cake stand. DO NOT PANIC if the paper sticks. Just wait a couple of minutes for the Semifreddo to soften, and it will peel off super easily. Scatter the seasonal fruit and edible flowers over the top and sprinkle with nutmeg. ADAPTABLE CAKE INGREDIENTS 3 organic pasture-raised eggs ½ cup (175g) maple syrup, rice malt syrup or honey 2 tsps vanilla extract or 1 tsp vanilla bean powder 2½ tbsps coconut flour* 1⁄3 cup (50g) buckwheat flour* 1⁄3 cup (45g) tapioca flour* ½ cup (125ml) melted butter, ghee or coconut oil, cooled 1 heaped tsp baking powder 1 tsp lemon juice Preheat the oven to 170°C. Line a 20 cm round cake tin with unbleached baking paper (or do non-stick the old-fashioned way by coating the tin with melted butter or olive oil, then dusting it with flour and shaking off any excess). Combine the eggs and maple syrup in a large bowl. If using liquid vanilla extract, add now. Beat using a blender, food processor or hand-held electric mixer until you can see lots of air bubbles. Sift the flours into the egg mixture, then add the vanilla powder (if using), butter, baking powder, lemon juice and your chosen adventure from the list, if using. Stir gently until just combined. Set aside to stand for 1 minute. The mixture will thicken. Pour or spoon into the prepared tin and bake for 22–25 minutes, until a skewer inserted in the centre comes out clean. A double batch in a single larger tin will take longer, 35–40 minutes. Serves 6
TO JAZZ IT UP (OPTIONAL) 1–2 overripe bananas, finely chopped (but use only 1⁄3 cup/115g maple syrup) 80g frozen berries 80g super-finely chopped sweet red apple and 1 teaspoon ground cinnamon ¼ cup (40g) dried cranberries
*Notes: Why three different flours and not just one of them? I’ve found that for perfectly textured gluten-free cakes and pastry, you need a blend of a few different light and heavy flours and nut meals. Feel free, instead of the three flours listed, to add the same total volume of a gluten-free allpurpose flour if that’s easier for you. If one of the flours you use is coconut flour, add an extra third of the total volume used here.

½ cup (125ml) coconut cream or organic thin (pouring) cream
½ tsp ground cloves
nutmeg plus extra to serve 2 tsp ground cinnamon ½ tsp salt
½ cup (125ml) milk of your choice To make the filling, blend all the ingredients on high for 30 seconds. Cover the bowl and set aside at room temperature while you prepare the pastry. Preheat the oven to 190°C. Lightly grease a round 20–23 cm pie dish or tin. To make the pastry, pop all the ingredients except the maple syrup or honey in a food processor and pulse three or four times, for 3–4 seconds at a time, until the mixture resembles moist sand or breadcrumbs. On low, gradually add the maple syrup or honey over a few seconds, until the mixture forms a dough. If it’s a bit crumbly, add 1 tablespoon olive oil. Dust a clean work surface generously with flour. Transfer the dough to the work surface and shape it into a ball. Place ball of dough in the prepared pie dish and, using clean fingers, press into the bottom and sides to cover evenly, to about 5 mm thickness. Break off any that comes up over the edges and set aside for making decorative cookies, as in the photo. Using a fork, gently prick the pastry bottom all over, about 10 times. Place a sheet of baking paper over the pastry and cover with baking weights or uncooked legumes.

Fatigue Vs Resilience Coping with COVID 12 months on In the current climate of COVID-19, life as we have known and lived it has changed dramatically and changed without warning. This year alone, mental health concerns have been shown to be twice as prevalent as that of non-pandemic circumstances. In the need to practice social distancing and for many also needing to self-isolate, people have become separated from loved ones, daily routines have been disrupted and for many there has been a loss of business, jobs and income. This has resulted in fear, anxiety, boredom and frustration for many people.
The mind: to be able to have helpful thought processes that result in positive outcomes (feelings and behaviours). For example; if you are having the thought that you will practice daily meditation you will experience the feeling of relaxation and engage in the activity of meditation.
Colleagues at Currumbin Clinic have started to refer to the term ‘COVID fatigue’. We have mentally and physically grown tired and stressed as a result of COVID-19. People are finding it increasingly difficult to adapt to a new way of everyday life. In recent months, it has not just been recurring lockdowns that have affected mental well-being but also trying to navigate conflicting and ever changing information about vaccination. This has resulted in high anxiety for many.
Social: It is essential for humans to be connected to each other. A benefit of the 21st century is that we can utilise a myriad of technologies to stay connected with one another. Our fatigue has resulted in the lack of face-to-face contact with loved ones who live interstate and/or overseas.
To function well in our day-to-daylives we need to balance mind, body, spirit and social. 80 GOLD COAST

The body: Engage in the 3 E’s; eat well, exercise and energise. The spirit: What spirituality means to you as an individual. This may or may not include religious practice.
Resilience is typically defined as the capacity to recover from difficult life events. It is the ability to withstand adversity and bounce back and grow despite life’s downturns. We are resilient. If we were not we would not have survived as a species. To be resilient, we need to: • Engage in realistic planning.
In our current times this means that we also need to be flexible with our plans and be willing to change them quickly and efficiently. • Maintain our self-esteem by minimising feelings of helplessness when confronted with adversity. Remember, we can’t do it alone – we need help and connection. • Dig deep for those coping skills and/or seek psychological support to replenish our psychological coping skills tool kit. Communicate your needs and feelings. Try incorporating the use of journaling as well as talking to others. To overcome burn out and fatigue it is important to maintain a daily routine and set daily goals, no matter how small. Engage in meditation daily. Why? Meditation decreases adrenaline and cortisol production which are unhealthy stress hormones. It increases our feel good health hormones such as endorphins, dopamine and serotonin. Stay connected with your pets if you have any. Pet therapy has been shown to improve general wellbeing, boost energy levels and decrease depression.

Turia Pitt, author, endurance athlete, mother, and one of Australia’s most sought after motivational speakers, has a new goal. Ten years since she was trapped by an out-of-control grassfire during a 100km ultra-marathon in the Australian desert, leaving her with full-thickness burns to 64 percent of her body, Turia has defied almost every expectation placed upon her. Now, the mother of two is helping Aussie Mums learn that they too can run, with the launch of her ‘RUN With Turia’ online program. Turia ‘a mindset course packaged as a running course’. “When you’re out on a run, for whatever duration of time, I can promise you that you’ll really start to notice your inner voice, and it will most likely be telling you that you’re tired, not fit enough and should probably just go home and eat cake,” says Turia. “One of our key rules of enrolment in RUN with Turia is ‘don’t be a d**khead to yourself,’” she laughs. “We teach participants how to talk to and encourage themselves, and to do that in real time while running. Sure,
LIFESTYLE
you can read a self-help book or listen to me talk about self-love – but nothing teaches you about what you’re really capable of more than getting out of your comfort zone and having a crack at something new”.
3. Stronger, fitter, faster – make tangible gains -
“Watching yourself run from point A to B and doing it a little faster than you did a couple of weeks ago is nothing short of exhilarating. So is running a distance you’ve never run before and building on that week by week. If you happen to lose kilograms in the process, and that’s something you want, then great! But we focus on what you’ll gain – strength, speed, fitness and a better relationship with yourself to boot.”
4. You can do hard things - “Running is hard, I get it,”
says Turia. “But I really believe that’s part of the magic of it. It shows us what we’re truly made of when we’re willing to back ourselves and have a go. Each week in the program, we challenge you a little more, until you’re ready to run your goal distance. Having a tangible and concrete goal to work towards and an actual plan on how you’ll get there is a game-changer. That feeling of accomplishment you get when you realise that you did the hard thing is priceless, and I guarantee that it will spill over into other aspects of your life.”
5. Join the sisterhood
- “I wished I had a group of Mums to run with after I had Hakavai, and that’s why building the community aspect of the program was so important to me,” reveals Turia. “Being a Mum can be lonely at times, so I wanted our RUN participants to be able to work towards their goal distance with a group of likeminded women while supporting and encouraging each other. The ‘RUN with Turia’ Facebook group is honestly the most positive place on the internet,” she continues. “In fact, whenever I feel a bit flat, I just go into the group and read everyone’s posts, and I am so inspired. These are women from all parts of Australia, challenging themselves and keeping each other accountable under all different circumstances. It’s a
place where everyone shares their struggles, their wins, and their vulnerabilities freely. It’s the best!” The RUN with Turia program costs $249, For more information or to sign up, visit www.turiapitt.com/run SUMMER • 2021/2022 83

RENO RULES! SOME SIMPLE THINGS YOU CAN DO OVER SUMMER TO ADD VALUE TO YOUR HOUSE. What have we been up to? Well there is no rest in our household and juggling two children and their many sports and activities means we are definitely living in a mad house. We have currently bought back into the market, an investment property, and are now looking for another property to flip. However with the market at an all-time high it is becoming quite challenging to find something that suits our needs. A good idea, if you are in a similar situation, is to find something off-market or the try a good old door knock in an area you like to see if there is an owner who wants to sell. Vendors who are thinking of moving often like the idea of selling to an interested party without the hassle of an agent. Away from our renovations we have been fortunate enough to film ‘Better Homes and Gardens’ on the sunny Gold Coast but with Sydney opening up we soon will return down south to pursue other opportunities. While we keep ourselves very busy, Aaron and I always make sure we have our schedule organised for family time. For us it is always about the importance of work/ life balance.

Declutter your home. It doesn’t cost you anything, but if done correctly it can make you money. Removing superfluous things from around the house can create a lot of room and give you ideas for improvements which can increase the value of your property. Refresh your house with a coat of paint. Check your gutters. It’s not the most fun chore but with summer storms around the corner you want to protect your home. A blocked gutter can cause storm water to overflow into the house causing damage, mess and inconvenience. Spruce up the outdoors area. Here in Queensland we love indoor/

Clean or replace your airconditioning filters. This is another no-so-fun job but a very important summer home improvement. It will make the AC run more efficiently and the air circulating through the house will be fresher and cleaner. SUMMER • 2021/2022 85
HEALTH
VITAMIN INFUSION INTRAVENOUS VITAMINS IS AN INCREASINGLY POPULAR TREATMENT OPTION FOR HEALTH FOCUSED INDIVIDUALS AROUND THE GLOBE.
Taking control of our health has never been as important as it is in today’s fast paced world. So many of us are looking towards holistic ways to maintain our health and vitality. Although IV therapy is not new, having gained traction in the 1980s, it is gaining a lot of a attention on due to it being such an effective method of optimising well-being. “IV” is short for intravenous, which means it’s administered through the veins. The fluid that contains vitamins and minerals is delivered via an IV drip or injection into the vein, which allows the therapy to move quickly through your bloodstream. IV Nutritional Therapy is so effective due to its high absorption rates. Over 90 percent of the vitamins, minerals and electrolytes are absorbed, in comparison to only up to 10 percent with oral supplementation. 86 GOLD COAST • PANACHE Magazine
It is nearly impossible to reach optimal levels when taking these vitamins orally as compared to IV Vitamin Therapy. This is because when you take vitamins by mouth they have to be processed by the body and their absorption in the gastrointestinal tract is often impaired. This high absorption rate means that the availability of nutrients to every cell in our body is optimised, resulting in a far greater effect. Most of the vitamins and minerals given in IV therapy are water soluble, meaning anything excess that is not needed will not accumulate, making it a low-risk treatment option. IV nutrient therapy is a quick treatment that can leave you feeling full of energy; is great for hair; skin and nails and anti-ageing and for those needing any vitamin correction and also for iron infusions for those low in iron. Traditionally, people who aren’t able to eat enough food or who have an illness that interferes with nutrient absorption
would be good candidates for IV Vitamin Therapy. IV Vitamin Infusion is also great for patients post weight loss surgery. The IV Therapy Lounge offers a range of different therapy options, all of which are administered by the highly experienced Integrative Health Nurse, as well as available consults with the on-site Doctor. ELIPSE - LIFE CHANGING FOR THE FIRST TIME IN AUSTRALIA, PEOPLE SEEKING TO LOSE WEIGHT HAVE ACCESS TO THE LATEST ADVANCE IN MEDICALLY-ASSISTED WEIGHT LOSS THAT WORKS WHERE DIETS AND OTHER FORMS OF TREATMENT HAVE FAILED. Weightloss Solutions Australia is offering the Elipse Balloon method of hunger management. Swallowed in a capsule, the balloon once inflated, creates a feeling of fullness to help control hunger. “It’s very exciting,” says Felicity Cohen, Founder and Director of WLSA. “The Balloon provides patients with a tool to change their lifestyle and to improve their habits over a four-month period whilst the balloon is in place and followed by on-going lifestyle program for another 8 months to establish new habits for life and keep weight off. It has been approved by the TGA and more than 50,000 people have already
"
benefited around the world, mostly in Europe. We see it as being very popular because of its success rate and safety; the most significant feature being no anaesthetic and no endoscopy, so downtime is very minimal.” The Elipse is the world’s first swallowable, ‘procedureless’ gastric balloon that requires no surgery and no anaesthesia. The Elipse Balloon is safe, non-permanent, recommended by doctors, and can help you lose around 10 to 15 percent of your body weight in just 16 weeks alongside the WLSA fullysupported 12-month lifestyle program. Elipse Balloon is a soft, silicone balloon packaged into a swallowable capsule connected to a thin filling catheter (tube). The WLSA surgeon inflates the balloon with 550ml of fluid while the patient is in the chair, conscious and relaxed, supported by a Registered Nurse. “You then get up and return to work or home,” says Felicity. “It’s as simple as that. There’s no need for anaesthetic. It’s great for people who can’t access other forms of treatment because of medical conditions and are keen to lose weight; or for many patients awaiting a knee operation for example by weight loss is essential first.”
I love helping people change their lives – not just their image and self-confidence, but also their quality of life. That's the best reward.
Designed to help you reduce your food intake by taking up space in your stomach and slowing the rate at which your stomach empties, the Elipse Balloon helps to create an earlier and longer-lasting feeling of fullness. The Elipse Balloon works by inducing early satiety (a sense of fullness) in two ways: Delaying gastric emptying – since the emptying time of the stomach is prolonged, you feel fuller for longer and reducing stomach capacity – helping you to reduce your portion sizes. This pause is the ideal time for patients to replace poor habits with new, longterm habits such as healthy eating and exercise. Multiple clinical studies have demonstrated that patients lose on average 10 to 15 percent of their total body weight. After 16 weeks, the balloon will pass naturally, having given you a kick-start to your weight loss journey. When combined with intensive weight loss strategies, the Elipse Balloon leads to nearly 2.5 times more weight loss than when undertaking intensive weight-loss strategies alone over 16 weeks. “It’s important to highlight that there is no magic pill,” observes Felicity. “No device will succeed if patients do not work with multidisciplinary team towards long-term outcomes. Our bariatric allied health teamwork with patients to ensure they follow the program for optimal results.”

GOLD STARS We asked local stars to tell us about their talented careers and reveal where it all started and their career highlights.
Something of a coup for The Star Gold Coast with the announcement the sensational hit musical Jersey Boys will hit the stage in the showroom from 6th January 2022. Jersey Boys is the smash-hit musical biography of The Four Seasons - their rise to fame, the tough times, personal clashes and ultimately, the triumph of a group of friends whose music became the soundtrack of a generation. Set in the vibrant 1960’s, four young men from New Jersey - Frankie Valli, Bob Gaudio, Nick Massi and Tommy DeVito - find a magic sound which propels them from singing under streetlamps to selling out stadiums all over the world. With era defining songs like “Sherry”, “Big Girls Don’t Cry”, “Walk Like A Man”, “December ’63 (Oh What a Night)”, “Rag Doll”, “Working My Way Back To You”, “Dawn (Go Away)” and many more, the quartet finds itself at
www.jerseyboysmusical.com.au
The real theme of the show is loyalty; an allegiance to a code of honour forged in the streets of native Belleville, New Jersey and how these four most unlikely of stars made it through gambling debts, mafia threats and heartbreaking family disasters.
“This story of Frankie Valli and The Four Seasons has captivated nearly 26 million fans in productions worldwide, and we are looking to wow the audiences of south-east Queensland this summer. The show is filled with classic Four Seasons show stopping songs and a story that is all the more riveting because it’s true,” Clark said.
The show features the phenomenal music, memorable characters, and great storytelling tracing the evolution of four blue-collar kids who became one of the greatest successes in popmusic history.
The cast features the Gold Coast’s Bryn Jenke as Frankie Valli, Thomas Armstrong-Robley as the charismatic Tommy DeVito, Elliot Baker as the quiet bassist Nick Massi and Jack Saunders as hit song writer, Bob Gaudio.
Winner of Best Musical at both the Tony Awards® and Olivier Awards®, Jersey Boys takes you behind the music to discover the secret of a 40-year friendship as the foursome work their way from the streets of New Jersey to the heights of stardom. Executive Producer Robert Clark said he was excited to have such an internationally experienced cast and be playing at The Star Gold Coast.
Chief Operating Officer at The Star Gold Coast Jessica Mellor said she was excited to welcome the production to The Star Gold Coast in January. “We’re thrilled to see our Theatre play host to another world class production and we’re looking forward to welcoming guests to our property to experience all The Star has to offer, during an amazing time of year here on the Gold Coast,” Mellor said.

SEQUINS, SIZZLING SENSATIONS, AND LOCAL STARS. FINESSE BURLESQUE KEEPS FEATHERS A FLIGHT DESPITE HARD TIMES FOR THE ARTS INDUSTRY. No one could blame our crippled arts sector for feeling anything but negative since Covid-19 ruffled many an artistic feature over a year ago. However, a beacon of dazzling light has emerged from three local entertainers who, with unwavering determination and pure glamorous guts, decided to take a chance for the industry and in doing so have astonishingly created one of the best cabarets to hit our shores. Finesse Burlesque has been created to bring some fun and glamour back into our world. Just as heart-warming as the show itself is the reason behind the conception of the show. The cast of 13 have an impressive credit list including the likes of The Moulin Rouge, Tokyo Disneyland, Universal Studios Singapore, back up dance for Guy Sebastian & Jess Mauboy, Lido de Paris, Palazzo Variete in Germany, and numerous cruise ships. But even more impressive is that they all began their dancing training from a young age right here on the Gold Coast. All cast members were performing overseas when COVID-19 hit and had to return home. As the arts industry suffered, Amber and Madison Ivers were determined to create more jobs in Queensland and keep these amazing performers in work. Finesse Burlesque was conceived! “We feel honoured to be able to do this during some of the toughest times our industry has ever experienced,” said Amber. “With love, and the realisation of a lifetime dream, we have created this production and hope we can contribute to the re-launch of our industry, an industry we trained our entire lives to be a part of and cherish so much.”To assist in bringing their masterpiece to life they collaborated with Aleisha-Rose, best known by Australian audiences as one half of The Princess and the Geek on the most recent series of The Amazing Race. What most don’t know about Aleisha is that she has spent decades in this industry and is an experienced writer, dancer, and actor. She wrote the entire script of Finesse Burlesque. When Madison and Amber were young girls, AleishaRose was their dance teacher so they knew exactly who to turn to bring this show to life. A new addition in time for the Gold Coast performance is local talent Trent Owers. Trent is an established actor, singer and musical theatre performer who recently starred in Queensland’s production of Wicked as Fiyero. Savannah Haenel, currently starring at The Lido in Paris, established SHE Creative Industries to give a voice to artists during this pandemic. “Our ‘Australian sisters’, Amber and Madison Ivers, have created a show that encompasses the true representation of the showgirl in a cabaret style,” said Savannah. “This show is precisely what Australia needs more of right now. It is truly entertaining, full of passion and created out of pure love for the Arts industry. A must see!”

BUSINESS
Prosper and grow are the key words for long term success. At Element, our focus is helping small businesses grow and succeed. As Dwayne “The Rock” Johnson says, “Success isn’t overnight. It’s when every day you get a little better than the day before. It all adds up.” As numbers people (although we really are much more than that), we can assure you that it really does add up! We are strong believers in the compounding power of 1 percent. Making small improvements each day can lead to BIG results. To assist you on your journey, we have developed a process that helps you build a roadmap to business success. We call our process ‘The 5 Elements of Success’ and we have designed it to work in partnership with you. Want to know what the 5 elements are? We have summarised them below: 1. Where are you now? Seems simple enough, right? But in order to know where you want to go, it is really important to take stock of where your business is right now. Your business is your vehicle to personal success and you need your business to work for YOU. Not the other way around. By taking the time to really understand your business in its current state, this will help you shape and define current challenges and opportunities 92 GOLD COAST • PANACHE Magazine
2. Where do you want to be? Once you have worked out where you are now, your starting Point A, you need to work out where you want to be in the future – your destination Point B. You can’t have a direction if you don’t know your destination point. Preparing an annual business plan is a great way to work out your current Point A and how to get to Point B. The key components of a business plan include: • A clear purpose • A clearly articulated vision • What the owners want to achieve • High level budget • Relevant Key Performance Indicators (KPIs) • Opportunities and challenges • Cascading goals and a clear action plan. 3. What key areas need to be considered? Once you have a Point A and Point B, there will be key areas that need to be considered and addressed. You may not quite know what these areas are yet, but a business diagnostic will help. A business diagnostic takes a deep dive into key areas of your business to identify opportunities and challenges. 4. Creating your roadmap. Now for the fun part! Actually every step along the way will provide valuable insights if you truly trust this process. The results of your business diagnostic will give you a great understanding of what needs
to happen to move your business from Point A to Point B. Creating your roadmap is all about: • Prioritising key areas – impact versus time; • Creating specific action plans around those areas; • Implementing those action plans. 5. Measure, monitor & redefine You can’t monitor what you don’t measure. This final step is arguably the most important. This is the accountability step. By monitoring key KPI’s around your roadmap action plan, you will be track your journey from Point A to Point B. It also allows you the flexibility to work out if something isn’t working. That is when you can adjust and redefine your goals. The best part of this process is that it is iterative. Once you have reached your Point B, this becomes your Point A and you start again. This creates a positive upward spiral so that you can build your business for success.

LEGAL
GOING, GOING, GONE! With many new buyers in the property market, including many of our newly arrived southern friends, it is important to understand some of the main ways that properties are sold in Queensland. Private Treaty - Unfortunately no sweets are involved here. This refers to a private agreement between the buyer and the seller through a normal contract of sale. In Queensland most of the time the Sellers' agent will prepare a contract of sale and the buyer will execute the contract with its offered terms constituting an "offer to buy". The seller will either countersign the contract (at which time the contract is effective) or amend the terms and countersign, where the contract as amended goes back to the buyer for acceptance. Tender – No, not like the chicken. This is a process where the seller will ask buyers to submit their best offers for the property and set out other terms which the offer must meet to be an acceptable tender. Usually the seller then has the right to negotiate further with those putting forward the offers or simply accept the highest tender. Auction - This is a method where a seller sets a date where all potential buyers can attend and place bids on 94 GOLD COAST • PANACHE Magazine
the property based on a pre-prepared contract of sale. The buyers then pit themselves against each other with the highest bidder purchasing the property (provided the property has met the seller’s reserve price - their minimum). With an extremely strong property market, real estate agents are preferring more and more to proceed to an auction. Pitting willing buyers against each other to attain the best possible price for their seller is the aim. Before you attend, here are a couple of tips of what you can do when looking to purchase a property at auction.
1. Be prepared.
This sounds very simplistic but it is amazing how many people do next to nothing before making the biggest financial decision of their life. Before the auction make sure that you have obtained as much detail as possible before the day.
2. Check property prices in the neighbourhood.
Today it is possible to do an online search for historical data concerning recent sales in the area and the property itself. The information is freely available and the research is relatively easy to do so arm yourself with every scrap of information you can.
3. Know your price range.
Have a pre-planned amount in your head and stick to your limit. Only you know what you can afford so if the price passes that limit, as hard as it may be, let it go and start looking for
another property.
4. Auctions are emotional.
If you have found a property that suits your every need, your dream place in other words, potential buyers can form an emotional connection. They cannot visualise themselves living anywhere else and often find themselves getting carried away with the emotion and frenzy on the day then bidding far more than they can afford.
5. Get a copy of the auction contract beforehand. The contract should be taken to your accredited Property Law Specialist solicitor for a thorough review. The proper advice can be provided if there are clauses in the contract that may be detrimental to the purchaser. If necessary, consider obtaining searches prior to the auction day.
6. Understand that in most cases, if you are the winning bidder, you will sign an unconditional Contract to purchase the property which will be binding on you. That is a sobering thought if you have bid more than you had budgeted for or if you haven’t done a thorough search before the auction day. 7. Know the full cost.
There can be many hidden expenses and charges so make sure you are fully aware of what costs will be yours to pay once the property is sold to you. If you have extended yourself to the limit to purchase the property, those extra outlays may put a severe strain on your finances going forward.
LEGAL
Tips before you jump into the hot property market 8. Obtain a building inspection and a check for termites.
The cost for these are minimal in comparison with the purchase price. A small outlay could save you a fortune if there are severe structural defects or a large termite infestation hidden in the house.
9. Neighbours can be a problem.
A few simple checks can reveal if you could end up living next door to a 24 hour party house. Even check if any large construction is planned for the immediate vicinity. Noise and dust can start to grate over a long period of time and you don’t know if the property was placed on the market because the previous owners knew what was coming.
10. Flooding in some areas can be an almost yearly problem.
Flood maps and historical records will show where the water will rise to with heavy rainfall and flash flooding.
So regardless of which method is being used to purchase or sell your property please contact the OMB property law team headed by Simon Bennett, accredited Property Law Specialist to assist.

WHY YOUR MONEY IS MORE ABOUT SEX From a Female Perspective There’s a silent revolution happening around us! It’s the emancipation of women globally. We are positioned to make a massive impact on changing the world’s perceptions, in business, politics and money. So, let’s start the conversation on sex and money, ladies!
The shift to more female financial advisers. We are no longer in a world where providing financial planning on risk and return, the cheapest products, or portfolio performance and analysis is the sole domain of men. Now it has become an industry of deeper connection through REAL communication, human experience and a new age of female advisers that join you on your life’s journey. We choose to be a part of your wealth building team, preferring to help you manage your finances with a team of specialists. The emphasis is caring about your fiscal wellbeing while encouraging you to live your dreams, with financial confidence and commitment. The aim is for you to be accountable to your goals while providing the tools and education for you to make the right financial decisions in your life. Why this dramatic change to financial planning? With the introduction of fee for service, planning has now become about relationships and long term strategy building. The shift has become more nurturing and who better to deliver this than female advisers! Why do we need more female advisers? Well, women like to buy from women. We “get it”! 96 GOLD COAST • PANACHE Magazine
With our ageing population and women living longer we are faced with the scary facts that many women will outlast their money or income and have an inherent desire for their children’s and grandchildren’s needs to be met before their own. In an article featured in CNBC, Jennifer Barret said, “In the next five years, private wealth is expected to grow from $14 trillion to $22 trillion and women will control an estimated two-thirds of that money. But many advisors will never see a dime of it because they don't know how to attract, or retain, female clients”. Widows are known to fire their financial adviser often within a year of her husband’s death because she has not felt acknowledged throughout the relationship. Her partner was the main contact so the recently widowed woman seeks out an adviser that better understands her goals. Most women are running the household finances and becoming ever more financially and tech savvy. We need to cater to this rising need amongst growing intelligent females and the rising wave of the female entrepreneur. So what does a female adviser offer that differentiates them? Women think differently, their brains are in fact wired differently and they think more intuitively. Women think of security first. They tend to pass on values to their families rather than assets. They don’t want to chase returns, they look at the big picture, long term goals and more sustainable returns that provide for the future. Often favouring investment property over shares. Female advisers use storytelling and relatable language. The conversations with female advisers are more therapeutic. Some days it can be like a counselling session with masses of tissue boxes being emptied. Women need to be heard on what’s important to them.
Louise Agnew - AR 329310 Finlife Advice Financial Adviser louise@finlifewc.com.au
Women seem to work well with the “accountability coach” aspect of financial advice, and often use financial advisers to help them drive financial decisions in their homes. Female advisers communicate with simplicity and clarity. There is less industry jargon. Female advisers can cater and communicate better with the growing areas of divorced woman and certainly offer more empathy for the widowed woman, both of which are a large group of my current client base. No matter the difference, having a guiding, helping and trusting hand in your financial confidence is paramount. A human connection and someone that ultimately that understands your individual needs and “gets it!”

Bianca DYE BIANCA DYE IS ONE OF THE GOLD COAST’S WELL-KNOWN RADIO PERSONALITIES. SHE IS CURRENTLY CO-HOST OF 90.9 SEA FM’S BIANCA, DAN AND BEN. YOU CAN HEAR THEM FROM 5.30AM WEEKDAYS.
ARE YOU A BORN AND BRED GOLD COASTER? I grew up between the Gold Coast and Melbourne but I think it’s fair to say I’m pretty much a Gold Coaster! I love this city and this is home forever. WHAT SCHOOL DID YOU GO TO? I went to good old Nerang High School. WHERE DO YOU WORK? I’m a third of the Gold Coast’s 90.9 Sea FM breakfast show Bianca Dan and Ben. HOW LONG HAVE YOU BEEN AT SEA FM AND WHAT’S THE BEST THING YOU HAVE DONE AT THE STATION SO FAR? I’ve worked for SCA (Southern Cross Austereo) many times but this is the first time I’ve actually worked for 90.9 Sea FM! It’s been almost 18 months and we have been lucky enough to work with such an incredibly creative team. There has been so many awesome events that I’m proud to say I have been a part of, but I think the one that stands out was The Proposal which ended up going viral. An unsuspecting fiancé in the middle of a busy Gold Coast street, a horse and a dancing flash mob, fire throwers and thank god a “yes”! It was EPIC! WHAT DO YOU LIVE ABOUT BEING A BREAKFAST ANNOUNCER? It does take a while to get used to the hours but I have been doing breakfast radio for over 10 years now so, my body has (sort of) adapted. I love that people listen to us as they’re on their way to start their day. They tune in to hear what’s going on in the world and perhaps forget what’s going on in the world too! It’s a place to have a laugh, that’s the main thing! We want our listeners to escape reality for a few minutes and have a giggle because life is serious enough at the moment. On a serious note though, I’m very passionate about helping end the stigma around mental health and I know from all the private messages I get that we are doing that and I’m extremely proud of being on a show that does that. 98 GOLD COAST • PANACHE Magazine
TELL US ABOUT BEN AND DAN? They are both absolutely hilarious. We all genuinely make each other laugh each and every day. You could not get three people that are more different in every aspect of their lives and yet somehow because of the differences it all works when it comes together. We all represent different people living different lives on the Gold Coast and we absolutely love doing the show. WHERE HAS YOUR CAREER TAKEN YOU? That’s a big question. How do I choose? I have been doing radio for almost 29 years and there are so many stories (book coming!!). I have been lucky enough to fly to Tokyo to interview Madonna one on one. I’ve also interviewed the likes of Pink, Oasis, Nicole Kidman, Justin Timberlake, Robbie Williams, Black Eyed Peas, Quentin Tarantino, Keith Urban, Ricky Martin, Heath Ledger … the list goes on. It’s been a long career but I’d say a lot of the memorable moments were hosting red carpets at the ARIA Awards, and having a Number 1 radio show has also allowed me to have so many opportunities! FAVOURITE CELEBRITY YOU HAVE MET? It’s a tossup between Michael Bublé and Richard Branson. I was lucky enough to be flown all over the world with Richard as a part of huge Virgin PR campaign in the mid-2000s. But Bublé was so charming, lovely and very funny. I very cheekily offered for me to go back to his hotel and have a drink when our interview wrapped up. He politely declined that offer! BEST INTERVIEW? It’s too hard to choose my best interview, but I can tell you that I had a couple of shocking interviews. I interviewed Geri Halliwell from the Spice Girls and I forgot to press the record button on the recorder because I was so nervous. I ended up not getting one word on the tape and my boss didn’t speak to me for a week. THE PEOPLE MOST IMPORTANT TO YOU? When you get to my age you realise the importance of friends that
GOLD COAST BORN AND BRED
love you for who you are. They see you, get you, and don’t judge you. I have let a few friendships go over the years and you feel guilty but then you realise that you need to surround yourself with your tribe. You need to surround yourself with people that love and understand you even though you have many faults and sometimes can be broken. My family mean a lot to me, some of them are in Melbourne and unfortunately, I haven’t seen them in a while. My little brother Ben is in Melbourne, and I miss him a lot as well as my little sister who I haven’t seen in ages who lives in London. It’s been a rough time for everybody not getting to see family. My 76 -year-old retired mother Annie lives in Southport, we’re like sisters and very close. THE KEY TO HAPPINESS? If I knew the answer to that I wouldn’t get such crippling anxiety some days and I’d take over from Oprah. Getting older means that you realise you can’t be happy all the time. It’s finding joy in the crappy parts and it’s seeing the cracks of light when things get dark, remembering what’s important. Not caring so much about what other people think about me has really helped me find a lot more happiness and I just do not care most days. I’m unashamedly me and I’m a little unique. It’s taken me a long time to realise that it’s actually a wonderful thing - I don’t want be normal! I will say, not filling up my diary and being busy just for the sake of being busy and finding time for myself and falling in love with yoga has really helped! PEOPLE THAT KNOW YOU, KNOW YOU LOVE….. People that know me know that I love my own space. My little brother and sister were not born until I was 15 so I was an only child for a while. I’m used to being alone and I really enjoy my own company, finally! I have travelled the world on my own and love going to see a movie or going out for dinner on my own. THE BEST ADVICE YOU HAVE EVER RECEIVED? My beautiful grandmother Edith was a survivor of the Nazi death camp Auschwitz. Her love of life and her refusal to let her traumatic past get her down was always so inspiring to me. If something bad happened in my life, she would always say to me, “Don’t worry, tomorrow my little ‘boobeleh’, tomorrow is a new day. Don’t look back, look forward!” It’s so true. We can’t change the past but if we want to change the future we literally just have to make the decision to do so. I miss her a lot, she was an incredible woman.
THOUGHTS ON SOCIAL MEDIA? Social media is a double-edged sword for me since I became single, I don’t have anybody to get angry with me for being on my phone all the time. I’m pretty sure I have a bad addiction! I have to have digital detox days where I leave my phone at home and get in my 1989 Combi and escape for the day, either to the beach and read or meditate. I can be on it for hours usually comparing myself to people and things that I don’t have. I have seen social media do incredible things for the women’s rights movement, for the body image movement and for making mental health not a dirty word. I started an Instagram account @anxietyfree in 2014 which is a mental health awareness anti-stigma page. When I first started it, I did it anonymously because I was so ashamed to admit that I struggled with anxiety and the occasional depressive episode. But now I am proud to have that page with over 50K followers. One in three of us struggle with mental health and it’s a very real epidermic going on at the moment. In that sense social media has been incredibly important for helping a lot of platforms that wouldn’t normally get that kind of attention. We must be aware of most people putting up highlight reels, not showing what’s really going on in their life. I do my best to be raw and vulnerable and show people when I’m having a bad day because I think that’s really important especially when you have a profile. THE MEANING OF LIFE IS…. The meaning of life is that the older you get you realise how little you actually know. I remember in my 30s I thought I knew everything, I thought I was invincible
and I thought I was a rock star. As I get closer to 50, I realise that I know nothing. I want to be vulnerable and open, I don’t want to judge others for having a different opinion to me and also that love can look very different for everybody. For me, it’s more about making my life have meaning. I want to have a legacy of helping people with mental health and hopefully let people know that it’s okay to just be you and help people feel less alone in the struggles they face. That’s what I did by being open to talking about my IVF, my relationship struggles and my anxiety. If being such an open book can help others feel less alone then that is “meaning” for my life. WHAT DO YOU LOVE ABOUT LIVING AND WORKING ON THE GOLD COAST? I This truly is one of the great cities of the world. The Gold Coast has grown up so much since I was first here in the early 80s. There are incredible restaurants and cafes, and the social scene is off the charts! The beaches are just the best and culture wise we are catching up with the capital cities, I mean just look at HOTA – it is world class. I can hear the ocean from my apartment, and I walk along the esplanade most days listening to a podcast, the sea breeze is just so good for my soul. I’d like to settle somewhere in the Gold Coast hinterland with a dog and a beautiful family, I know that I’m going to manifest that! Namaste SUMMER • 2021/2022 99

Health and fitness is on the forefront for goats. Many Capricorns have felt the burden of Pluto in their sign, but the learning curb around money and finances has been great. The opportunity to expand business ventures and proposals will enable Capricorns to use their talents appropriately. The quest is to reassess your relationships with money and power in favour of relationships.
AQUARIUS (JAN 21- FEB 19) The impact of Saturn currently in your sign gives the water bearer a chance to think about your own personal values and to align yourselves to what is important. It is time to re-evaluate your friendships. The focus is on your personal life rather than career and to make the choices that enable you to create a balance. Find a strategy that enables you to cope with your commitments without becoming overwhelmed. Be mindful of your finances. Save some dollars for a rainy day.
PISCES
(FEB 20 – MAR 20)
The benefit of Jupiter is still impacting on you. Your natural tendency for spiritual growth, compassion and artistic pursuits will continue to be enhanced. This is an excellent cycle for monetary gains, with opportunities for career and professional improvements. The important factor is that Pisceans will feel more valued and appreciated in whatever environment they find themselves in.
ASTROLOGY
The ASTROLOGICAL PATHWAY IS UNFOLDING The period of 2020/2021 has seen a radical shift in our lives that has never been experienced before. From social breakdown, economic destruction, confrontation between seriously disaffected sections within our society that has led to disillusionment and despair. The extreme impact on family relationships which cannot be underestimated, and the global disruption of mankind is undeniable. However, there is an upside and a light at the end of the tunnel which will provide a way forward. Jupiter continues in the water sign of Pisces which will continue to stimulate our intuition, imagination, and compassion. However, it also creates a feeling of escapism and not looking at situations realistically. It symbolises the two fish swimming in opposing directions. Working with the higher manifestation of the Piscean energy it can create a desire to dig deeper for honest solutions and more authenticity. It’s understandable that we are currently in some state of flux, however it enables us as individuals to become more intuitive to improve our situation. Pluto is nearing its end in the sign of Capricorn, which indicates the impetus to resolve corruption, abandonment of
intrigue and exposure of duplicity within all levels of government. This will allow for more confidence and trust which will support our future. Uranus’ continuation in Taurus will prompt us to re-evaluate our attachments to our material and financial world and how we prioritise our spending. In 2022 there is a potential for transformative energy to play out, for opportunities to incorporate faith and a more spiritual perspective in our lives to develop. How we consciously think plays out universally and to incorporate the concept of ‘the power of the mind’. The answer is to become more spiritually aware, more compassionate to our fellow man, more empathetic and kinder. Above all patience is the keynote for liberation and a more positive future will be enhanced by a cooperative spirit of engagement. From a deeply personal perspective meditation, relaxation techniques, mindfulness and being of service to others are just some of the aspects we can immediately implement into our lives. Although there is a slow ending to 2021 as many planets will retrograde, it gives us the opportunity to re-evaluate how we have been navigating our lives and how we can create a better future for ourselves.

SUMMER • 2021/2022 101
A VIEW FROM THE GOLD COAST I’d like to start by firstly congratulating the talented team at the Gold Coast Panache Magazine on an outstanding inaugural edition. We are indeed proud to be their exclusive real estate partner and each edition contribute insightful market updates and a showcase of extraordinary properties. It has most certainly been a scintillating Spring season for real estate. Our lifestyle state [across all markets] is enjoying one of the best bull runs in property, one not seen for more than a decade. Queensland is enjoying the rise and rise of property values, many returning to pre-GFC levels, and beyond. We’re seeing high-net-worth clients continue to spend money on anything luxury, and luxury property is no exception. Our list to sell ratio hit 93.1 per cent for the June-July-August period. This is unprecedented and reflects the number of buyers in the market. Property price records have been toppling left right and centre. Not just street records, but suburb records. Our $4.3m sale of a Bellara St, Ashmore property hit a suburb record, as did our sale of a villa in Hughes Ave, Main Beach
at $2.9m. And not to overshadow these exceptional results, last week’s sale of a Noosa property that we were comarketing achieved $16.45m at auction, a new Queensland record. But the question on everyone’s lips is: will the strength in the market end, or at least cool? The short answer is yes, we’re seeing signs of it cooling, but the underlying factors at play for Queensland property remain strong – cheap money, amazing lifestyle, workplace changes, and incredible value for money. Looking into 2022, I believe Queensland will continue to be in a rising market for the first two quarters at least, with low inventory levels and a plethora of buyers ready to execute, keeping the heat on prices. A federal election in March [as mentioned by the politicians] will be the first of the real cooling factors, followed closely by international travel building up momentum and taking the focus away from all things domestic. I’ll close by wishing everyone a wonderful holiday season filled with laughs, joy and of course great health.

WHERE - SIRROMET WINES
- CEREMONY WAS HELD AT
THE ARBOUR AND THE PARTY CONTINUED TO THE BARREL HALL.

FIRST MEETING
Emily – “We met at the Gold Coast Mayoress Charity Ball in 2017 after being introduced to each other THREE times that night. We thought we were both there for a fundraiser, not a matchmaking night!”
THE PROPOSAL After multiple cancelled flights and bullet train transfers, Emily and Phillip finally made it to Kyoto in Japan for their holiday. They had to wait for the hotel room to be ready so Phil suggested they should bike 1.5 hours to The Golden Temple. Both were jetlagged, exhausted from all the travelling and not to mention in need of a shower after the bike ride but nevertheless Phil got down on one knee and proposed! He was able to time it in between all the roaming tourists.
THE BRIDE Emily’s gown was a custom design by George Wu Couture with Yves Saint Laurent shoes with flowers by Julie Vine Florals. Her hair was by Melissa from Hair I Come and make-up by Natalie Lucas from Natalie Lucas Makeup. The engagement and wedding rings came from Calleija. Emily’s godfather the Reverend John Barnes was the celebrant. Parents: Ruth & Tom Tate
THE GROOM Phillip wore a suit by MJ Bale with a Hermes tie and boots and belt by R.M. Williams. Parents: Gail & the late Tony Stephens Snr.
WEDDING
HENS AND BUCKS DAYS/NIGHTS? Emily’s friends organised a pastel-themed hens in a gorgeous penthouse in Burleigh Heads. The afternoon consisted of fantastic cocktails, cheese grazing, mini photoshoots within the group and finished off at The Tropic. Phillip's bucks started with some friendly competition at go-karting followed by beers with mates and ended with pork knuckle and schnitzel at The Bavarian.
THE HONEYMOON They went to the Hayman Island for their honeymoon and road tripped all the way there and back. They were extremely fortunate that Covid-19 restrictions eased the day before the wedding. The guest list numbers grew and the dance floor was able to open up. Sadly, a lot of interstate and overseas family and friends couldn't make it so they organised a livestream company to cover the ceremony with cinema-grade cameras and audio equipment. Emily and Phillip wanted everyone to be a part of their day, no matter where they were in the world.
WHAT WAS THE STANDOUT MOMENT OF THE DAY? A surprise Whisky Bar was set up for the night called 'Tom's Bar'. This was in honour of both of their fathers. Thomas Richard Tate for his birth name and Anthony Leon Stephens who was jokingly nicknamed by his children as ‘TOM’ which stands for ‘The Old Man’.
BEST ADVICE FOR OTHER COUPLES? Celebrate every win as a couple - no matter how big or small! Always have fun and forgive quickly. Life is too short. SUMMER • 2021/2022 111

We started our day behind the wheel of the Jaguar F-PACE. With an assertive new exterior, beautifully crafted all-new interior, and latest generation Pivi Pro infotainment, spending the day behind the wheel of the F-PACE is effortless. The new exterior design gives the award-winning F-PACE performance SUV a cleaner, more assured presence, featuring a new sculpted bonnet and enlarged grille featuring Jaguar’s heritage logo-inspired ‘diamond’ detailing.
STOP 1: COFFEE TO GO What better way to kick off the day than with a coffee at the beach. We got our caffeine fix by stopping at one of our favourite cafés on Tedder Avenue for a takeaway coffee and treat, before pulling up at Narrowneck to enjoy a glimpse of the Gold Coast skyline. Here is where we mapped out our adventure for the day, adding in our next destination to the F-PACE’s Pivi Pro infotainment system. The new F-PACE features an all-new 11.4 inch curved glass HD screen, with enhanced clarity, brightness and functionality. To help drivers access vital information quickly, the F-PACE also features a new 12.3-inch HD Interactive
Driver Display with enhanced graphics and a configurable layout which can show full-screen navigation mapping with turn-by-turn instructions, digital dials, media, contact list or infotainment details. Working in conjunction with the optional Headup Display technology, the F-PACE gives you all the information they need with least distraction making your journey more enjoyable.
Many car museums are one-make museums, but here there’s everything from Holdens to Lamborghinis. Built by Carl and Grant Amor as a tribute to their late father, the museum showcases the siblings’ impressive private collection of 75 cars and bikes.

STOP 3: CURTIS FALLS Dapsang Dr, Tamborine Mountain QLD 4272 1km Walking Track Just 20 minutes from the Gold Coast Motor Museum, we head up the mountain towards North Tamborine noting the plentiful signs pointing towards various bushwalks and National Parks. We chose a short stroll through Curtis Falls which is perfect for the whole family. Curtis Falls takes you through a lush eucalypt forest, with a canopy that will astonish you. The falls themselves, (depending on the season), boast an impressive waterfall that flows to the pool below.
STOP 4: ALBERT RIVER WINES 869 Mundoolun Connection Rd, Tamborine QLD 4270 After our time under the canopy, we took a pleasant drive through winding roads to stop for lunch at Albert River Wines. Twisting and turning under the trees the F-Pace was truly in its element, with all-wheel drive and Intelligent Driveline Dynamics providing a predictive driving experience. Arriving at Albert River Wines, we were greeted by a sweeping drive up through blooming Jacarandas to the restaurant. Albert River Wines is one of the State’s oldest properties and is a venue that captures the essence of 1800’s Queensland architecture. Home to three former Queensland Premiers, the restaurant is located in what was Auchenflower House’s billiard room. Both the vineyard and the winery are situated high on the hill of the estate, with panoramic views of the Albert River Valley and Tamborine Mountain. The venue is ideal for families with plenty of space for the young ones to run around or enjoy the farm tours on offer, while the adults can sit back and enjoy a quality meal paired with award winning wine.
STOP 5: GALLERY WALK AND FUDGE HEAVEN Long Rd, Tamborine Mountain QLD 4272
After lunch we hopped back in the car and headed to the main strip of Tamborine Mountain for a little postlunch shop at the famous “Gallery Walk”. We welcomed the comfort of the F-PACE’s air-conditioning, cabin air filtration and new design seats with wider cushioning, massage functions and enhanced coverage of the heated and cooling areas. The Gallery Walk is a must visit at Tamborine Mountain and boasts over 70 specialty shops in one block. The street is lined with artisan candy stores, homeware shops, fashion boutiques and local food stores, so there is a literally something for everyone. We took our time wandering along the street, covering both sides of Long Road and picking up plenty of unique treasures. While we wandered through the shops, we picked up an assortment of treats and cheese platter items for our last stop of the day. We selected an assortment of fudge’s from Fudge Heaven, which we couldn’t recommend more. All of the fudge at Fudge Heaven is made from fresh butter and cream to create that melt in your mouth flavour. LAST WORD

ARTHUR ***************************
WHERE WERE YOU BORN AND EDUCATED? I was born in what’s more commonly known as the “Shire’ in NSW. Raised and educated in a suburb called Gymea. I stayed in this area until I was 22, when I made the bold move to head to Brisbane with my then company. WHAT WAS YOU FIRST JOB? My first job was as a ‘runner’ in the logistics / transport industry. I remained in the logistics industry for 30 years, working my way through the corporate ranks and finally retiring from the industry as Senior Vice President for a major global company – overseeing 18 countries and 4000 employees. EARLY AMBITION? My early ambition (at 16 years old) was to become a professional soccer player. I spent time with two of the biggest clubs in Britain – Manchester United and Glasgow Celtic. In the end, whilst I had the desire, I simply didn’t cut the grade. I returned back to Sydney and became more focused on building a career outside of football. YOU’VE WORKED AROUND THE WORLD IN TOP MANAGEMENT POSITIONS – TELL US ABOUT SOME OF THOSE ROLES AND SOME OF THE LESSONS YOU HAVE LEARNED ALONG THE WAY? I was very fortunate to spend 23 years with one of the most incredible USA Public Corporations – Expeditors. When I moved from Brisbane to the USA my 128 GOLD COAST • PANACHE Magazine
career and opportunities really took off. I held various senior executive roles, including Vice President West Coast, which was an amazing position and gave my family the opportunity to experience both Los Angeles and San Francisco. The single biggest lesson I learnt along the way was how to manage and treat people – how to build a culture of “team” and leave your ego at the door. HAVE YOU HAD ANY SPECIFIC MENTORS WHO HAVE HELPED AND GUIDED YOU ALONG THE WAY? I was very fortunate to have been surrounded by the best mentors including Peter Rose and James Wang – the two founders of Expeditors. My friend and mentors Gene Alger and Karl Francisco – both of whom had a huge impact on my career. More recently in the Real Estate world I have loved listening to Michael Pallier from Sydney Sotheby’s and the New Zealand Sotheby’s founders, Mark Harris & Julian Brown. All of them have the ability to break down this business into simple steps of execution. EVERYONE HAS A DIFFERENT MANAGEMENT STYLE – DESCRIBE YOURS? I’d like to believe my style is “firm...but fair”. I also enter every relationship truly wanting the best for that individual.
WHY THE SWITCH TO REAL ESTATE? After 30 years in the logistics industry, travelling the world (which is not always as romantic as it appears), it was time to support my family with their passions, and goals. We moved to the Gold Coast to provide an opportunity for our sons at TSS. I was ready for a second career and the opportunity to bring Sotheby’s International Realty into the Queensland market was too good to pass up. Both my wife at the time and I had a personal passion for all things property – it just made sense. Five years later we have six offices and sell some of the most respected and valued properties across Queensland. We’ve managed to build a small-scale, but very impactful, dedicated teams – just the way we wanted it. WITH A BUSINESS BACKGROUND AWAY FROM GOLD COAST REAL ESTATE, WHAT IS THE POINT OF DIFFERENCE YOU BRING? I moved from one service industry to another so I understand the value and how to deliver the ultimate in client experience. I know I can achieve that with Queensland Sotheby’s. My team and I have an ethos of the relentless pursuit of excellence. DO YOU HAVE A SECRET SKILL OR UNUSUAL HOBBY? Sadly no party trick, but I am working on getting into Triathlon’s – which I’m enjoying at the present.
