Bush food banter with Spencer Shaw From Forest Heart Nursery

Celebrating native ingredients Davidson plum

Davidson plums, also called ‘ooray’, are one of my favourite bushfoods.

They grow on a Dr Seuss-like tree of dark purple fruit sprouting in grape-like clusters from its narrow, straight trunk. There are four varieties of Davidson plum which grows from the far tropical north of Australia to northern New South Wales. The two commercially cultivated varieties are Davidsonia pruriens and Davidsonia jerseyana.

These beautiful rainforest trees are very ornamental with outstanding leaves – growing up to 1m in length, pinnately divided with prominently toothed leaflets. Small pink flowers in Spring occur in long sprays on the trunk of the tree and are followed by bunches of purple plums.

Harvesting Davidson plums requires no effort – the fruit simply fall when ripe. The dark fruit are high in acid and contain 100 times more vitamin C than found in oranges and also contain lutein, a compound that plays an important role in eye health, along with magnesium, zinc, calcium, potassium and manganese.

The plums are 3 - 6cm across and contain one or two flat seeds. To prepare for cooking, cut in half and remove seeds. The skin is edible and the deep red flesh is delicious when cooked into jams, syrups, chutneys and sauces. Dried plums are also stunning.

Here’s an easy recipe to enjoy your Davidson plums.

Davidson plum jam Ingredients 700g Davidson plums 700g sugar 1 lemon, juiced ½ vanilla pod, cut in half lengthways Instructions Start off by washing your plums and then cutting them in half and removing the two seeds in the middle. Place them into a non reactive pot.

Weigh the plums and add equal parts sugar. 500g of plums equals 500g sugar, etc.

Add the lemon juice and vanilla pod and heat the mixture over a moderate heat. Stir occasionally until the sugar dissolves. Bring to a light rolling boil and allow to simmer for an hour or until the mixture has slightly thickened.

Test the mixture by putting a small amount on a saucer and place in the freezer for a minute to see if it sets. Once the mixture is ready, pour out into to jars. Put the lids on immediately and allow to cool before storing.

Davidson plum and chilli jam – To turn into a savoury jam, add two star anise, ½ ts ground ginger and 5 small chillies.

Grass Trigger Plant

Stylidium graminifolium This delightful little plant can be seen flowering in moist sandy or rocky areas of the Glass House Mountains area, but is also common in other states and as far as the north of this state.

A hardy species, Trigger plant will happily grow in full sun or shade, and due to the small size is suitable for most home gardens.

The leaves form a grass-like rosette at the base of the plant which may not be obvious in the natural habitat until spring, when the slender spikes of pink orchidlike flowers appear.

The name ‘Trigger Plant’ derives from the interesting process of pollination. Insects visiting the flowers stimulate a ‘trigger’ on the plants which springs up hitting the insects and releasing pollen onto them! What a clever way of ensuring species survival!

Growing to a maximum height of 80cm even when in flower, Trigger plants are suitable for growing in containers. The GMAN nursery has good supplies of this attractive plant.
