The restaurant’s à la carte menu and two tasting menus feature traditional dishes presented simply and elegantly, such as hake ‘kokotxas’ in pil-pil sauce, ‘sukalki’ stew, or the walnut-flavoured dessert ‘intxaursaltsa’. The menu, which is based on a wide variety of local produce, changes regularly depending on the availability and quality of the seasonal ingredients. Atxa’s new restaurant has everything the new city needs. It’s a cosmopolitan space where locals come to enjoy the food they know and where visitors come and discover dishes they’re unlikely to forget.
