Plain Flour Bread Soda Salt Whole Wheat Flour Sugar Butter Milk Natural Yoghurt Egg Donegal Rapeseed Oil
Method: Use a bowl and wooden spoon. Do not use a mixer! Sieve the plain flour, bread soda & salt add the whole wheat flour & sugar and mix thoroughly. Rub in the butter. Beat the egg & yoghurt together & add buttermilk to make up 425ml. Add liquid to the dry flour mix and mix to form a deliberate wet mix. Grease two 1lb loaf tins and drop mix into tin half filling tin. Do not pat down mix as this tightens the resulting bread. Shape as required per tin/tray and bake in pre-heated oven 210°C FOR 40 MINUTES. Allow to cool before slicing and serving.
Who doesn’t want or enjoy fresh bread with soup throughout the Christmas season! So what makes this a healthy Brown Bread? First off as a result of trying to get my children to eat more Fibre I felt it would be a good idea to slowly introduce Fibre to their diet so I have a blend of Plain White Flour and Whole Meal Flour in this recipe. Once they are on to it slowly phase out the White Flour replacing it with all Whole Meal Flour. I have reduced the fat by replacing some of the Buttermilk with Natural Yoghurt which also softens the bread, and with only 25g of quality Donegal Rapeseed Oil and reduced sugar it makes this a rewarding feel good bread which is easy to make and nutritious!
Serves: Two 1lb loaves of bread
Brian’s Tip Wrap bread in clean dry tea towel not cling film. Bread will freeze very well. This recipe may be used to make individual wheaten scones.
Two mashed Bananas can be added to mix prior to dropping into tin. Try replacing 100 ml of Buttermilk with 100 ml of Guinness

This Soup is Vegetarian, Gluten & Dairy Free!
Enjoy this soup in the busy run in to Christmas or perfect for Christmas dinner Very rewarding fresh, nutritious soup! I recommend to blitz / blend to encourage children to eat this soup and give consistency of flavours and nutrients. Notice I have no Salt in the recipe as stock cubes already contain salt therefore “ don’t add Salt to Salt “. I am a believer of less is more when it comes to flavours’ hence the ingredients list is manageable and all flavors within should be identifiable with one not overpowering the other. I am using a sweet potato to give natural sweetness and a touch of zesty orange to enjoy over the Christmas season.
Serves: 10-12 Method: Roughly chop the leeks and wash. Peel and chop the carrots Peel potatoes and grate into pot. Crush the garlic Peel and chop the onions Dissolve stock cube in warm water Bring leeks, carrots, onions, garlic, potato, thyme, orange zest and stock to the boil then simmer for 25 minutes Then add freshly grounded pepper. Pour soup into blender and blitz for approx one minute return to pot and bring back to the boil and add chopped parsley for freshness at last minute. Once you have blended you will notice a vibrant rustic, childhood memory soup. Once cooled and refrigerate for further use and use within 72 hours.

Brian’s Tip • P ut all vegetable peeling in to compost bin • Peel potatoes and grate last, this will release more starch • Preserve crushed garlic in little oil cover and store in fridge for up to one month • A good twist of pepper mill per person is a good guide • Be careful when blitzing as liquid is extremely hot Freezing – This soup will freeze very well and always remember to freeze in portions as it will freeze quicker and defrost quicker. You must never refreeze once thawed.
