Hello once again, and welcome to your handy local guide and a Happy New Year to you. I hope you had a good Christmas, but because the magazine printers close for two weeks over Christmas and I’m writing this in early December, it’s hard to know how things will have been for us all given that the Omicron variant of Covid is causing much concern, though, thankfully, it doesn’t seem to causing a spike in the number of people needing to be admitted to hospital. There is room for hope though and some things have been a bit more “normal” this year. Before Christmas, I visited a number of Christmas events in the area and it was great to see all the people enjoying themselves again. These events take a lot of organising so a big WELL DONE to the people who volunteer their time to do this for the local people to enjoy. It’s also good to see that many local groups are once again , holding face to face meetings. The details of these can be found at the back of the magazine. Last month, I had an appeal for the local charity North Wales Superkids. I’d like to thank all of you that donated gifts, they were all distributed to children in need, so THANK YOU.

Top Eco Trends for 2022 The green drivers that will shape our actions in 2022, and beyond.

ONE - WASTE REDUCTION Steady yourself for the drive towards waste reduction continuing at pace in 2022. That means platforms, initiatives and collaborations are on the rise, with consumers putting pressure on brands to be more considerate over packaging. TWO - THE RISE OF THE ECO-RETAILER Established brands are starting to offer ecofriendly in-store designs and solutions, yet while the banning of plastic bags was a ‘one size fits all’ remedy that everyone had to move along with, entities outlining a solid and genuine eco edge will find they have a social and commercial platform on which to build. THREE - SUSTAINABLE PRODUCTS WILL BECOME THE NORM Generation Z have embraced the sustainability trend like none before them. They are acutely aware of climate change, loss of biodiversity, and a responsibility to fix issues, and the growing influence of this generation is likely to see the common popularity of sustainability to continue to increase. The main sectors are food (food production is currently responsible for 26% of greenhouse gases), fashion, and lifestyle products, for example moving to electric vehicles, digitisation and more.

FIVE - HOME WORKING IS HERE TO STAY While this may seem like a work trend rather than an eco trend, clearly our ability to work from home – and general employer acceptance that it’s an efficient method for business in the post-lockdown era – offers a great environmental boost, whereby we are not using cars or other modes of transport to the same level. SIX - LOOK OUT FOR CLIMATE POSITIVE If you thought Net Zero Emissions was a major challenge for us to rise to and overcome, prepare for the era of Climate Positive. As with all movements, the next logical move is to go one step beyond, and that means personal and brand actions are actually causing a positive environmental benefit – for instance, by removing additional carbon dioxide from the atmosphere. SEVEN - CLEAN AIR EMPHASIS The impact of polluted skylines suddenly becoming clear during lockdown has inspired some to start to take more notice of our skies and the air. Following a Social Media campaign Ruthin Rotary have been saved from extinction with a new Committee and numerous new members and volunteers. Their first outing was leading the way at the Ruthin Truck Event on 4th December where the Santa Sleigh carried Santa to his grotto. They then did 10 nights of visiting local villages between 13th and 22nd December. New Chair, Andrea Ellison, said “The public response has been overwhelming. I’m very much looking forward to working with the membership, including our new Secretary Byron Davies and Treasurer Maureen Young, in planning events for 2022. Neutrals, from the purest white to pale, mid and deep tones of grey, beige and brown, work well for both old and new houses, and for small or large spaces. Pale can be interesting: shades of not-quitewhite offer a range of options, from fresh, bright and airy to rich, warm and restful. Rooms painted in pure white can appear bigger and brighter and a white wall is a great background for paintings, books or a jug of flowers. If brilliant white is too cold, choose a white with a pink or yellow undertone. Pale neutrals vary in hue from cream to sand, through taupe to stone and bleached-timber tones, while darker neutrals vary from charcoal and ebony to chocolate – and there is a whole rainbow in between, including beautiful greys. Many people love a room that combines whites or a range of very pale tones, but with neutrals you can also employ counterpoints of darker tones against lighter colours, or even go dark and dramatic all over.

Choose colours by trying them out in situ, using tester pots. Paint at least two coats on pieces of card, place them on the room’s walls and observe them when you usually use the room, with lights both on and off.

Select layers of colour rather than just one, but avoid different hues all of the same tone – using a colour chart and going up or down (dark to light) within the same colour family helps. You could use darker tones for woodwork with lighter ones for walls, or vary wall tones with lighter ones above and darker ones below divisions such as cornices or dadoes. You can also use different neutrals to provide a gentle visual link from room to room. Continue the layering effect with flooring, wallcoverings, furnishings and accessories. In any neutral scheme, success comes from choosing textures as carefully as colours. Natural is key, so aim for simple upholstery, window treatments, bed linen and table linens, in fabrics with subtle and attractive variations in texture – crisp linen, soft cotton, warm wool, floaty muslin, fluffy sheepskin, and so on. While there is inherent pattern in many of these textures, you may wish to introduce some surface pattern, too. In rooms that are relatively plain, small pattern features will stand out as focal points. Checks and stripes, chevrons and zigzags, damasks and geometrics can all look good. Similarly, the occasional spot of colour, whether it’s a pale pink cushion, a turquoise vase or a mustardcoloured lampshade, may be the perfect finishing touch.

Over half a million people registered with the charity Veganuary in January 2021 to try the challenge to cut out all animal products. Many more people will be trying again in 2022 and even if you can’t quite stick to the full 31 days, introducing more vegan food into your diet is good for the planet and your health. As luck would have it, there are many of the best ingredients in season right now.

Cauliflower Such a versatile vegetable, cauliflower can be used in many unexpected ways. Slice a whole cauliflower into three to four vegetable ‘steaks’, then roast them in the oven in a little sauce or marinade to add flavour. You’ll have a healthy meal that is low in calories and carbs. Cauli-rice fits into every dieting regime. This is where you blitz the florets in a food processor until they resemble couscous grains. They can be cooked with a little water in the microwave, but even more delicious is to drizzle a little olive oil on a baking sheet and spread the grains out. Roast at 200C/180C fan/gas mark 6 for 12-15 mins.

Walnuts Mainly vegetablebased meals can sometimes lack the texture you might be used to with meat. Chop up some walnuts and mix them into almost anything to add a delicious crunch. Green Vegetables Cabbage, kale, Brussel sprouts (not just for Christmas!), chard and leeks are all in season and are full of vitamins, yet low in fat and carbohydrate. You need to be creative as a bowl of cabbage on its own will sabotage any well-meaning food plan, but the internet is full of good vegan-based recipes including these ingredients. Citrus fruits High in sugar so limit how much you have, but nobody ever overdoes their grapefruit intake – at least not without lots of sugar on top. The key here though is to eat the whole fruit, as the juice is too easily overconsumed. Legumes (pulses) Chickpeas, lentils, peas and peanuts are all part of the same family and are rich in fibre and protein. They aren’t really in season in January but they keep so well either dried or tinned that you don’t need to worry about the time of year to use them.

Mushrooms From little buttons to the big portobello ones, each type of mushroom adds to a dish in both flavour and texture. The stems of King Oyster mushrooms have an appearance and texture very similar to scallops when cooked.

Michael Bremner’s Pot Roast Celeriac Introduction

This is a dish I created for a special event, and is one that typically comes into season in the early months of the year.

Method

For the Celeriac 1. Peel the celeriac to leave around 200g. Make sure you keep its shape. Trim the top and the bottom. Then take a 5cm diameter cookie cutter, press into the top of the celeriac and scoop out the flesh inside the ring. 2. Next, melt the butter in a frying pan and add the celeriac with a pinch of salt, 2 cloves of chopped garlic, some rosemary and thyme. Cook for 20mins, continuously turning and basting until evenly golden on the outside. 3. Chop carrots, celery, leek and onion into rough strips and

place in a deep casserole dish in nest shape. Put the celeriac on top of the veg and pour over 500ml of the chicken stock. Put the rest of the stock in a pan to reduce to a thick glaze consistency. Put a lid on the pot and put in the oven at 170°C for 45-60mins. 4. After 20mins brush the celeriac with the reduced stock and put back in the oven. Repeat this every 10-15mins until ready. While it’s cooking, dice the pancetta and fry until cooked and put to the side. For the Yolk 1. Make a simple 5% brine by adding 10g salt to 200ml water and add the egg yolk for 15-

(serves 2-3) • 1 small whole celeriac • 2 carrots • 1 head of celery • 1 leek • 1 onion • 4 cloves of garlic • 1 egg yolk • 150g butter • 1 litre of chicken stock • 10g salt + 200ml water (for brine) For Pickling Liquor • 50ml white wine vinegar • 50g sugar • 50ml water For Garnish • 100g smoked pancetta • Rosemary & thyme • Truffle oil • Truffle • White wine vinegar 20mins. Make a pickling liquor by adding the vinegar, sugar and water to a pan and bring it to the boil, then immediately take off the heat. (You must leave this to cool before adding the yolk, so it may be better to do this before anything). 2. Remove the yolk from the brine with a perforated spoon and add to the pickling liquor until the celeriac is cooked. To Finish Remove the celeriac from the oven, brush again with stock and sprinkle with rock salt and picked thyme. Splash the hole in the top with white wine vinegar and a drizzle of truffle oil before carefully placing the egg in. Sprinkle the celeriac with pancetta, shave truffle over the top and serve at the table by slicing through to reveal the runny egg yolk.

days, weeks and months tending to that glorious bit of land. We shovel, trim, cut, prune and pick until our hands are blistered and our knees are sore, yet omit to actually take a step back, or pull up a chair, or just sit on the blessed grass and soak it all in.

It was pointed out to me a few years ago that a lot of my novels contain a sort of yearning for something. That led me to think, maybe I’ve got a deep in-built craving or hankering. Maybe we all have, and in life we’re all looking for something… something more. I think the lucky ones are those who find it and know when they have found it.

Satisfaction in your garden sometimes comes in not gardening; it’s in the ability to stop! So as we get ready for when winter morphs wonderfully into spring, perhaps try to do less, not more.

So where am I going with this? Well, I do sometimes feel a lot of those wants and desires can be arrested by going to a place that gives you quiet contemplation. It was John Lennon who said, “Life is what happens when you’re busy making other plans”. That’s the goal, and it’s not always simple to do, but the bottom line is, if we’re successful as a team in doing that, then for goodness’ sake sit in the garden and enjoy it! Don’t let it float through the seasons in a veil of anonymity, where its beauty is missed by the one person who should be appreciating it - you, the gardener!

For me, stimulation is a combination of being sociable and enjoying solitary time to myself. I enjoy the contrast of the two things - I’m never lonely, but I do enjoy solitude. And there is no better solitude than quiet moments in my garden. I’ve got one in Hampshire, and a small coastal plot on the Isle of Wight. They are my achievements, my own little bit of land… but they’re only relevant and special if I

remember to spend time in them, enjoying them, and sometimes, you know, doing nothing much at all!

Choosing a Nursery Looking for the perfect nursery for your child? Here’s a few things to keep in mind… Decide your priorities Everyone wants their child to be safe and happy. Beyond that, what are your main priorities? Are you looking for a small nursery where all the children play together or one where the children are split into groups depending on their age? Do you want your child to go to a nursery that follows the government’s EYFS framework, or one that follows a different approach, such as Montessori or Steiner Waldorf? Perhaps you want a nursery with plenty of outdoor space? It’s OK if you don’t have all the answers just yet, but it’s a good idea to have at least a rough idea of what you’re looking for. Consider location People tend to focus on nurseries near their home, but it may actually make more sense to choose one that’s nearer to your workplace. However, do consider what will happen if you move jobs or want to work from home more often. If you and your partner work in different locations, it may be easier having a nursery that’s closer to home, so that you can take turns dropping off and picking up. A nursery close to home may also mean your child moves up to primary school with a group of friends, which could make the transition easier. Ask around The best recommendations usually come from friends, as they’ll likely share many of your views on childcare. However, it’s also worth asking for opinions on your local Facebook group and other social media channels, and checking websites such as www. daynurseries.co.uk. Once you have a shortlist of nurseries, you’ll want to read each one’s OFSTED report at reports.ofsted.gov.uk.

Check the small print Scrutinise the different policies and websites of the nurseries you’re considering. You’ll want to compare: • Fees and any extra costs, such as meals and penalties for late pick-up • Opening and closing times • Staff-to-child ratios • Staff qualifications • Holiday policies • First aid training (It’s also worth downloading the checklist at www.childcare.co.uk/information/ nursery-is-your-child-ready.) Visit your shortlisted nurseries Even if you have your heart set on one particular nursery, it’s worth visiting at least three so that you can compare them. Write down any questions you have before you go. You’ll want to see whether the children look happy and engaged, how friendly and knowledgeable the staff are, what different activities the children are offered and how clean and safe the setting seems. You’ll also want to check where and when your child will take their nap, what type of food they’ll eat and whether there are quiet areas they can retreat to if they’re feeling overwhelmed. Ultimately, you want to be armed with all the information you need to make the right choice. However, there’s also a lot to be said for trusting your gut instinct. Release Reality What you need to know about equity release. Equity release – the process of releasing equity you have built up in your property so as to free up spare cash for holidays, medical bills or even home improvements, is a popular finance method in the UK; yet it does come with a list of considerations, good and bad. Equity release is available to most homeowners in the UK over the age of 55. It enables the homeowner to take out a lump sum, or pay themselves an income over a period of a few years, or a combination of the two. While both schemes enable you to release cash in your home, a Home Reversion Plan means physically selling a portion of it, while a Lifetime Mortgage is effectively a loan taken out against it. Equity release – the good Money You are able to release the cash you have invested in your property. This can be spent on treats or necessities at a time of life when many are in the mindset of enjoying themselves

having worked hard. Security You will always have the security of knowing you have somewhere to live, and this won’t change. All you are doing is releasing the equity invested in the bricks and mortar. Life-changing access to funds It’s possible to cash out up to 60% of a property’s value through both schemes. Equity release – the bad Interest With a lifetime mortgage, interest is charged on the amount borrowed, meaning the debt increases over time. Negative equity The accumulation of interest may mean, at some point, that you end up in negative equity, whereby the amount you owe in terms of repayment of the debt is more than the value of the property itself. Cut-price With a Home Reversion Plan, the amount you receive for the share of the property sold will be significantly less than market

price. It is this share that will be sold on by the purchaser – usually for a substantial profit – once you sever ties with your home. Price increases in a Home Reversion Plan, while you retain the share of some of your home, and the benefit of that becoming more valuable in a rising market, obviously that isn’t the case in the portion you have ‘cashed out’. Inheritance With both schemes, the monetising of the property means there is less, and sometimes nothing at all, to be passed on to loved ones when you die. You are effectively ‘cashing out’ the value of the property now. Benefits Withdrawing a lump sum from a property may lead to any means-tested state benefits being reduced, given that you have a cash sum in your hand.

The Heart of the Matter Signs to look out for that you may be having a heart attack. It’s true to say that where heart attacks are concerned, survival rates have never been higher in the UK. What’s more, the 1.4million Brits who have come back from cardiac arrest are the best evidence that good detection and accomplished care, combined, mean life can go back to being somewhere close to normal even after suffering a medical emergency that most would name as the most terrifying of their lives. What is a heart attack? Firstly, to properly define a heart attack, it is when your blood-pumping organ goes into cardiac arrest. Blood, which carries oxygen to the heart, is unable to make its way through the coronary artery. In most cases this is caused by the build-up of cholesterol and fatty matter in the arteries. While blood vessels in other parts of the heart may increase in size in order to make up for the shortfall, the blockage can form into a blood clot leaving that part of the heart starved of oxygen and unable to function. What are the symptoms? Symptoms will vary between men and women, and it is thought that women display a greater range of these and they are more easily detectable, though many are familiar across both sexes. These include: • Chest pain and discomfort. This begins in the centre of the chest and will feel like pain or indigestion.

The sensation can come and go, or it might be constant. • Spreading pain. Aching and physical distress may well spread to arms, neck, back and even the jaw. • Nausea. Additionally, a feeling of nausea, sickness, dizziness and confusion may come on. • Thirst. Many people experiencing the symptoms of a heart attack complain of a raging thirst. • Panic. The variety of symptoms outlined above will make the body go into panic mode, though the most important thing is to remain calm and seek urgent help. Treatment In the first instance, anyone fearing they are showing signs of having a heart attack should phone for an ambulance. The next step, if alone, is to ask a friend or relative to come over to sit with you until professional help arrives. Under no circumstances should you attempt to drive yourself to hospital. The aftermath Many people take the shock of cardiac arrest as a solemn indication that old habits and lifestyle choices need to be changed; and a good proportion actually end up healthier after cardiac arrest than they were before the incident.

After a very successful programme last year utilising the Zoom facility, Ruthin Local History Society (RLHS) looked forward to kickstart its Winter programme in October this year with a new hybrid programme of speakers. The Society currently has over 150 membership and meets monthly from October to April. It recently recorded 25,000 page hits on its website. The meetings are held at the Hen Lys, The Old Courthouse off St Peter’s Square. Covid restrictions limit the number of members to 30 people, but members can utilise the Zoom facility at home to engage with the hybrid meeting. Meetings begin at 7:30pm. The Society’s January meeting will hear Dr Sara Elin Roberts speak about “Mediaeval Welsh law in Northeast Wales” . The RLHS promotes interest in and knowledge of all aspects of Ruthin’s past, from prehistory to modern times. It aims to provide a broad range of topics to members and nonmembers during the Winter programme.
