Hello lovely reader and welcome once again to the latest edition of the Mold Connection.

I hope you’ve been enjoying the lovely weather. Hopefully it will continue for the school holidays, thought of course, we do need rain, and lots of it.

Inspired by a neighbour who has a lovely garden and who had given me quite a lot of plants, in the last few years, I have made a lot of changes to my garden so that I could start growing some fruit and veg.

I already had some apple trees and raspberry canes but earlier this year, I bought a small greenhouse and started off some cauliflowers, cabbages, peppers and leeks. I also planted some onions, carrots, blackberries, tayberries and tomatoes.

Well, all this sunshine has done wonders for all of it and I’ve already started picking the fruits of my labours, I even joined a community allotment scheme so that I can learn the right and wrong way of doing things and hopefully, avoid making too many mistakes

The discovery of this new hobby has really enriched my life so I would suggest that even if you only have space for a window box, start growing something that will bring you joy as it develops. That could be flowers, herbs etc, even strawberries don’t take up much space and they’ll taste delicious.

We had a big response to last months competition to win tickets to the International Eisteddfod in Llangollen.

Making Exercise Bearable

Keen to find an enjoyable route to fitness?

All it takes is a little creativity, a change in perspective, and patience.

Realism

One reason people find exercise unbearable is because they set themselves goals that are unattainable. When they start to fall short, the feeling is one of failure, whereas really it should be the opposite – after all, anything is better than nothing.

Setting realistic, achievable goals is therefore vitally important. Consider your current fitness level, the amount of time you can dedicate to exercise, and any physical limitations. Break down your goals into smaller milestones - this will help you stay motivated and focused on your progress.

Enjoyment

To make exercise more bearable, choose activities that you genuinely enjoy. This could be a sport, a dance class, or even that aforementioned brisk walk. Not all fitness has to be boring, or difficult.

Decide if you want to exercise with someone else, or alone; consider if getting fit means doing something holistic, or perhaps ultra-competitive; do you want to explore new horizons, or undertake everything from the comfort of your own home? Or maybe a combination of all these things?

Whatever it is, experiment with different types of exercise until you find what works best for you.

Working on a fitness plan with a mate doesn’t mean palming off half the exercises on them! However, it may be you can match up with someone of equal ability and goals, and use each other as a motivational force to carry on.

Positive reinforcement, with real focus on the benefits of what you are doing, will build the important association of exercise with pleasurable experiences, making it more enjoyable in the long-run, and more bearable in the short-run!

Decluttering &storage

We all accumulate stuff over time, everyday items, occasional bits, practical things, and sentimental objects, all of these things gather in our homes and take up space. Sometimes you have to take stock and think about whether you need it all.

Start with a plan, this will prevent the whole process from becoming overwhelming. If you identify which areas you want to tackle and break them down into smaller spaces, it will seem far less daunting. For example, you might want to declutter your bedroom, so break it down into smaller tasks to sort out, such as; under the bed, the wardrobe, a chest of drawers, and manage to do one at a time.

Set a time limit. You may find it easier to allot time on a regular basis, fifteen minutes a day or an hour a week, or you may want to tackle a room in a day. If you have broken down areas into smaller tasks, you can spread your decluttering project over weeks or even months, rather than trying to get everything done in a hurry. By completing one section at a time, you can move at your own pace.

Get organised before you start to clear the junk. Some objects may be worth selling, and some you may want to donate or give away, and a proportion of it may need to be thrown away or recycled. Have boxes or bin bags clearly labelled for each category; donation, recycle, sell, give to family, etc. If you have all of these boxes and bags ready, it will save time and stop any procrastination. Now take each object, one at a time, and consider how you’d like to dispose of it.

Take a few minutes each day to put things back in their place, and make it a habit to declutter on a regular basis, whether it’s every month or every season.

Sometimes our debts can add up to the point where they become problems – and that can be really bad for your mental and financial health. If you’re worried about debt, here’s how to handle it.

Prioritise the most expensive debt

First of all, don’t take on any more debt – including those tempting pay-later deals you see on online shops. It’s really important that you sort out the debts you already have.

Prioritise paying off the most expensive debt such as store cards and high interest-rate credit cards. If you don’t have savings, consider a balance transfer credit card: they can transfer bills from other cards and store cards so you’ll pay much less interest.

If you can, pay more than the minimum monthly card payment. The more you pay, the sooner the debt will be gone, and the less interest you’ll pay. Don’t use pay-later deals unless they’re interestfree – and make sure you don’t take on debt you can’t afford to repay.

Get the full picture of your finances

It’s important to know exactly what money is coming in and going out each week or month. When you know that, you can look for costs to cut: could your phone contract be cheaper? Do you have TV or streaming subscriptions for channels you don’t watch? Are you paying direct

debits for things you don’t really need?

Changing insurance providers can save on monthly costs, and while the differences aren’t as big as they used to be it’s worth checking to see if you can get a better deal on gas, electricity or both.

If you’re working, check your payslip to make sure you’re paying the right amount of tax: if you’re on an emergency tax code you might be paying more tax than you should.

Are there benefits you should be claiming?

Around £10 million per year goes unclaimed by people who are entitled to money they don’t know about. There’s a very good benefits calculator at moneyhelper.org.uk, and you can see if you are eligible for charity grants and other funds at turn2us.org.uk.

Don’t forget the little things either. Even simple things like turning the thermostat down a bit, switching to eco programmes on your appliances and doing larger, less-frequent clothes washes and air drying rather than tumble drying can help reduce your outgoings.

What to do if you’re struggling

Don’t pretend it isn’t happening. Missing payments can cause more problems, and more stress too. Help is available so if you need it, ask for it now. The sooner you do, the sooner things will get better.

It’s really important that you don’t just Google and pick the first debt management service you see listed: unfortunately there are organisations out there who might give you bad advice because they want to make money from you. Stick with reputable organisations such as charities: the National Debtline (nationaldebtline.org / 0808 808 4000) and the Debt Advice Foundation (debtadvicefoundation.org / 0800 622 6151) are free and very helpful.

Ingredients

(10 to 12 servings)

For the cake

• 35g dark chocolate, cut into small pieces

• 50g unsalted butter

Rachel Khoo’s Ice Box Cake

Introduction

When summer comes around, it feels somewhat incongruous to be putting the oven on; yet baking isn’t all about putting up the heat and expecting something to prove or rise. And who in this weather wants to build up a sweat in the kitchen?! Instead, why not whip up this delicious ice box cake with just a stove top and a freezer. This decadent dessert with a crunchy hazelnut praline rippled through it makes a crowdpleasing finale.

Method

1. Prepare a 20cm cake tin by lining with baking paper.

2. To make the praline, line a baking tray with baking paper. Toast the hazelnuts in a dry saucepan until they are golden. Remove from the pan and set aside.

3. Put the sugar and water in the pan and heat gently until the sugar dissolves. Increase the heat to high (avoid the temptation to stir it). When the caramel begins to turn a dark golden brown, remove from the heat and quickly stir in the hazelnuts. Pour immediately

on to the lined baking tray and spread out evenly. Leave to cool. Once the caramel is cool and hard, blitz to a fine powder in a food processor.

4. Make the biscuit base by melting the butter and chocolate together in a medium heatproof bowl over a pan of just-simmering water. Add the crushed biscuits and stir to combine. Press into the prepared cake tin to form a crust and place in the freezer.

5. Place the eggs, extra yolks, vanilla and sugar in a large heatproof bowl. Place the bowl over a saucepan of simmering water. You want the bowl to just

• 2 medium egg yolks

• 1 tsp vanilla essence

• 180g sugar

• 500ml double cream

Hazelnut praline

• 50g blanched hazelnuts

• 75g sugar

• 2 tbsp water

be resting over the saucepan – don’t let the bowl touch the water. Whisk the mixture continuously for six to eight minutes or until it becomes thick and pale. If you have a handheld electric whisk, opt for that. When the whisk leaves a ribbony trail in the mixture when you lift it up, it is ready. Remove from the heat and allow mixture to cool slightly.

6. Whip the cream in a medium bowl until sti peaks form. Gently fold through the cooled egg mixture until well combined.

7. Stir two-thirds of the praline into the ice-cream mixture and pour into the cake tin over the crumb base. Scatter the top with the remaining praline and leave to chill until frozen (at least four hours). Slice and serve.

EASY HARD

Life itself is said to have begun in water, so it’s not surprising that we are drawn to it. Water in a garden instantly changes the ambience of the space. It reflects light and creates its own microclimate whilst adding interest and attracting a range of plants and wildlife. Even the smallest of ponds can support frogs, newts, insects, damselflies, dragonflies, water snails and visitors such as birds, toads and even snakes. Ponds with different features will prove to be more attractive to wildlife than a formal pond with little vegetation and steep sides. Sloping ‘beaches’ will enable creatures to climb in and out easily, and to take a drink without fear of drowning. Ideally there will be muddy areas and shallow spaces together with deeper sections and a range of different plants for egg-laying, shelter, feeding and mobility assistance. There will be shade and sun, with crevices in which creatures can hide and some open areas for maximum benefit of light and warmth.

A few minutes looking into a pond and noticing life within helps to slow the pace of life and calm the soul. Tending to a pond is equally beneficial. It requires gentle care on a little-and-often basis, remembering always to leave extracted debris near the side so that creatures are able to crawl back into the water. Try to ensure that just one thing doesn’t dominate your water garden. This is especially important where there are overhanging trees, as leaves can soon fill up the pond and create a toxic, rotting environment where oxygen is in short supply.

What about fish?

A pond containing fish is different from a wildlife pond. Each has its own merits. Watching fish is undoubtedly a pleasant activity and caring for them is relatively easy. Fish can be viewed as being attractive, especially when coloured gold. However, they prey on smaller wildlife, which can reduce the diversity of life. At the same time, they increase the level of nutrients in the water, which isn’t the best for plants and other pond life.

A pond garden

Ponds provide a great gardening opportunity as they can be colonised with a range of plants. Some enjoy boggy conditions such as those found within the pond margins, whilst others like to have their feet completely under the water. The most successful pond will have around one-third to a half of the surface covered in leaf by the summer months. This will help to control troublesome invasive plants that have a habit of moving in. These include blanket weed, which is a type of algae that can quickly dominate everything else, and duck weed, which can cover the entire surface of the water very quickly. Pond plants can be divided into four main categories: marginals, which include marsh marigolds and water irises; deep water aquatics, including water lilies and flowering rush; floating plants such as water lettuce and water soldier; and oxygenators often known as ‘pond weed’. These include hornwort and spiked water milfoil.

With lots of people now leading more sedentary lives, circulation and vein health has never been more important. Our bodies are home to over 60,000 miles of blood vessels that, along with the heart, make up the circulatory system. Its network of roadways carries blood to every corner of your body. However, when your circulation or vein health is poor, blood flow can be slowed or blocked.

Most commonly, circulation problems manifest in the legs or feet. This is because standing and walking puts extra pressure on the veins in the lower body. In a healthy vein, blood is prevented from flowing backwards by a series of valves that open and close to let blood through. If the valves weaken or are damaged, blood can flow backwards and collect in the vein, causing varicose veins – enlarged, twisted veins that sometimes bulge out from the leg. Symptoms include aching or a feeling of heaviness in the legs, swollen feet and ankles, and muscle cramps amongst others. While varicose veins rarely lead to complications, they can sometimes cause blood clots, which can then lead to more serious conditions such as deep vein thrombosis.

Varicose veins are fairly common, particularly amongst older or pregnant women. However, you’re also at risk if you’re overweight or spend long periods of time sitting or standing, and they can also be passed on through genetics. Despite the risk factors, there’s lots you can do to combat circulation problems or prevent any existing vein issues from getting worse.

Stay active

If you have a desk-based job, it can be hard to avoid sitting or standing for long periods of

time. However, by going for a walk on your lunch break or taking short breaks throughout the day, you can keep your blood flowing.

Wear compression stockings

If you’re susceptible to vein issues, whether that’s through genetics, pregnancy or lifestyle, you should wear compression stockings. They work by applying pressure to the calves, contracting muscles around the veins to help blood move back up towards the heart. Even if you have no visible circulation problems, it’s still advised that you wear compression socks during long flights. This is because when you’re cramped in a small space without much leg room, circulation between your heart and lower legs slows down.

Elevate your legs

Elevating your legs above your heart for ten to fifteen minutes each day can help ease any aching or heaviness in the legs. By reducing the pull of gravity, the excess blood drains out of your lower legs and moves towards your heart.

Talk to your doctor about treatment

In most cases, varicose veins are not a serious condition so don’t usually require treatment. However, if your varicose veins are causing pain, discomfort, or are leading to other complications or health issues, your doctor can recommend a number of treatment options. These include:

• Endothermal ablation – where heat is used to seal affected veins

• Sclerotherapy – where special foam is used to close the veins

• Ligation and stripping – where the affected veins are surgically removed
