hat if we could convince the country’s most exciting craft breweries to all brew and release a brand new ‘festival beer’ on the same day at the one event? The idea struck a chord, and the beer fans of Australia (and more recently, New Zealand) responded in droves.

Guy Greenstone and Steve Jeffares And from that fateful day back in 2011 at The Local Taphouse, GABS was born.

In the last six years, GABS has welcomed more than 700 new Festival Beers and Ciders into the world. Many of these have gone on to become a staple in that brewery’s range, some have captured global media attention, and more than a few have pushed the boundaries of what we know about beer and cider. GABS has become a place for the Australasian brewing industry to flex their muscles and strut their stuff. And we think that’s just awesome.

At GABS Beer, Cider & Food Fest presented by Dan Murphy’s, we’re all about sharing our love of craft beer and cider with as many people as possible through an exceptional festival experience.

The ‘experience’ part is really important to us. Wherever you are on your beer or cider journey, we want to give you the tools to take one more step at GABS, whether that’s by guiding your first tastings with easy-to-follow notes, or by giving you an insight into the brewing process at The Local Taphouse Craft College. Most of all, it’s about providing an incredibly fun festival experience for you to enjoy great beers and ciders with your mates.

This event doesn’t happen on its own. GABS HOW-TO 1. GET SOME GABS CURRENCY

GABS is a 100% cashless event. With no cash to handle, this helps us process transactions quickly, meaning more time for you to enjoy the festival. If you didn’t buy Currency with your ticket, top up at a Currency Stand or with a roving Currency Seller.

For reference, all GABS Tasters are sold at $2.20 each (or $11 for a paddle of five Tasters). And if you have any Currency leftover, never fear as refunds are available online.

2. SAMPLE UNIQUE FESTIVAL BEERS & CIDERS 170 brewers and cider makers have brewed a beer

or cider especially for this festival, and you’re the first people to try them! Check out the full listings from page 34, grab a paddle (on the tables or at the Kegtainer Bars) or your Coopers Festival Glass and start sampling!

3. BROWSE THE DAN MURPHY’S MARKETPLACE There are more than 60 Exhibitor Stands at GABS Melbourne and 50 in Sydney. These are most of the best craft breweries and cideries from Australia and New Zealand. Check them out, try their range, talk to the brewery staff and take part in their games and ‘mini events’.

LEARN SOMETHING NEW Join us at The Local Taphouse Craft College for robust and entertaining discussions with leading brewers, hosted by Professor Pilsner (aka Pete Mitcham of Australian Brews News), or head over to the Ariston Food & Drink Experience to explore gastronomic pairings of beer, cider and food.

5. MARVEL AT IT ALL! There’s so much to see and do at GABS… take a ride on the Yenda Wheel of Beer, enjoy the Little Creatures LIVE performances from container top to table, get some tasty street food from the city’s best vendors and soak it all in!

FESTIVAL HIGHLIGHTS FESTIVAL BEERS & CIDERS Every year at GABS, the best breweries and cider makers from Australia, New Zealand and an invited few from around the world come together to release a new beer or cider all at the same event. These ‘Festival Beers & Ciders’, served from our distinctive shipping container bars, are a true showcase of craft beer creativity and diversity. This year, we’ve introduced a third ‘Kegtainer’ bar, allowing us to serve a massive 170 Festival Beers & Ciders! Full details can be found on page 34, or via the Official GABS App. Please note allocations are limited, and while some session allocations may run out, the beer or cider will be back for the next session.

ARISTON FOOD & DRINK EXPERIENCE Hosted by Beer Diva Kirrily Waldhorn, the Ariston Food & Drink Experience is a series of free, fun-filled seminars. Find out why great chefs love craft beer and cider so much, experience the art of beer/ cider gastronomy at its best and expect the unexpected. Be prepared to roll up your sleeves and immerse yourself in these hands-on, interactive sessions. DAN MURPHY’S MARKETPLACE The Dan Murphy’s Marketplace is where breweries, cideries and related businesses showcase their range. You can buy tasters or Coopers Festival Glass fills directly from the stands, and have the opportunity to meet the team behind them. Many of the stands also schedule mini-events like tastings and games where you can win fantastic prizes. THE LOCAL TAPHOUSE CRAFT COLLEGE Learn from the best in the business! Hosted by the incredibly engaging Professor Pilsner (Pete Mitcham of Australian Brews News), The Local Taphouse Craft College offers the opportunity to learn more about beer and cider through a series of free seminars and discussions. They include our highly popular Q & Ales panels, masterclasses and feature sessions and are accompanied by free beer and cider samples and a whole lot of fun. Sampling is the name of the game at GABS! While individual 85ml tasters can be purchased (for $2.20 each), tasting paddles of 5 x 85ml tasters ($11) are the best way to sample a range of beers and ciders, particularly at the Kegtainer Bars where the specially brewed Festival Beers & Ciders are sold. You’ll find empty tasting paddles on the tables and beside each Kegtainer Bar. Please mark the drink numbers (as shown on the Kegtainer Bar menus and GABS Official Guide) in numerical order on the paddle with the chalk provided before you reach the bar for service.

You’re welcome to keep and take home your Coopers Festival Glass, but please place your tasting paddles in the paddle bins as you exit your session.

MERCHANDISE Opening one hour into each session, our merch stand will feature a range of GABS t-shirts and merchandise from participating breweries and cideries. Payment for merchandise is either by GABS Currency, cash, credit card or EFTPOS.

OTHER DRINKS Free water will be available at stations throughout the festival hall. Remember to keep hydrated to make sure you can go the

distance. And if you’re not into beer or cider, that’s fine. We won’t hold it against you. Wine is available from Kegtainer Bar C. Soft drinks, water and other non-alcoholic drinks will be available to purchase at some of the food stalls.

ACCEPTABLE BEHAVIOUR If anyone thinks GABS is a swillathon, they will only be disappointed. GABS is all about responsible beer and cider appreciation and education in a fun and festive atmosphere, and

anti-social behaviour will not be accepted.

SMOKING Smoking is not permitted anywhere within the festival hall. Smokers are asked to smoke outside the main entrance and to one side.

Please respect them as many have given up their time to help you.

LET THE GOOD TIMES ROLL ‘Natural conditioning’ or ‘bottle fermenting’ is a traditional brewing technique in which beers undergo a secondary fermentation after the beer has been bottled or kegged.

While there are only a few breweries that still take the time to do this, natural conditioning extends the beer’s shelf life, helps to enhance its flavour and eliminates the need for preservatives or additives.

ADDING THE YEAST

BOTTLE/KEG FERMENTING

Yeast eats away at the remaining sugars in the beer creating alcohol and CO2. As the CO2 is trapped it naturally carbonates the beer and displaces the remaining oxygen.

This maintains the beer’s integrity and removes the need for additives and preservatives.

Once bottled or kegged, extra yeast is added to begin the natural conditioning process.

ROLLING

Coopers encourages people to roll their bottle or agitate the kegs before serving the beer. This helps move the sediment through the beer, enhancing its flavour and giving it that signature, cloudy appearance.

CONDITIONING CELLAR

The ales are held in cellar conditions for two weeks at ambient temperature while the bottle fermentation takes place.

THE SEDIMENT

Once fermentation process is complete, the yeast falls to the bottom of the bottle or keg leaving fine sediment. When that happens we know the beer is ready to be enjoyed. This is why Coopers’ ales and stouts have a ‘best after’ rather than a ‘best before’ date.

BREWING 101 Brewers are able to create unique flavour profiles from these four key ingredients, however much like cooking, they can add in pretty much anything in they like. Think seaweed, belly button fluff, oysters, bacon, doughnuts, chilli and peanut butter.

The challenge of course is to achieve a well-balanced beer as well as a striking flavour profile. So just what does balance doughnuts?

1. MALTING Richard Hollingsworth, Cricketers Arms

T

he beer brewing process is relatively simple, although making good beer is a whole other story. At its core beer is simply a fermented liquid with a layering of sugared malt and hops.

Essentially, beer = water + hops + malt + yeast.

The first step of the brewing process, malting refers to the process of preparing the barley as it is unusable in its normal state. Brewers carefully malt the barley to release the starch, which will later act as a thickening agent in the beer. A labour intensive process of cracking, drying out and heating is employed to process the grains.

2. MILLING/MASHING The grain is crushed and mixed with

Well wonder no more, as Richard Hollingsworth, the head brewer for Cricketers Arms, tells us how! hot water to make a porridge where starches are converted to sweet fermentable sugars that the yeast can ‘eat’ later in fermentation. The liquid is filtered to end up as bright, sweet liquid called wort.

3. BOILING A rolling boil is carried out to sterilise the wort. Hops are added to the kettle/ copper for bitterness and flavour, and sent to the whirlpool where aroma hops may be added. This is when we late hop some of our beers with the signature Cricketers Arms Amarillo hop. The wort is spun to remove solid material such as hop debris and other bits called trub. The liquid is then chilled on the way to the fermenting vessels. Finally, we dry hop with the wondrous Galaxy hop, giving a specially crafted soft bitterness and citrus tropical flavour. These additions can be done in the primary fermenter, in the secondary or by adding hops directly to a keg.

4. FERMENTING Now we have a liquid that has a malt character balanced with bitterness. But a crucial element is missing, alcohol. Yeast, the agent of fermentation and producer of alcohol, is pitched and allowed to ferment. Yeast and trub are removed from ales and then sent to bright beer tanks with fresh yeast and liquid sugar. Lagers are stored at -1°C for numerous days and then forced carbonated with CO2 awaiting packaging. Removing this stage creates extra esters and flavours.

5. PACKAGING Beers are then bottled, canned or kegged, checked for quality and released for sale.

AUSTRALIA’S BIGGEST CRAFT BEER CELEBRATION

With more than 1,600 beers to choose from, and more votes received than ever before, the GABS Hottest 100 Aussie Craft Beers has truly become Australia’s biggest ‘people’s choice’ craft beer poll.

On 26 January 2017, thousands of fans all over the country toasted quality craft beer as part of their Australia Day celebrations. From brew pubs in Darwin to the beaches of Sydney, people shared their #Hottest100Beers countdowns on social media and watched as the results rolled in.

THE BIG WINNERS Taking the title of GABS Hottest Aussie Craft Beer of 2016 was Stone & Wood Brewing Co’s ‘Pacific Ale’, making it back-to-back honours for the Byron

Bay brewery, and their third win overall. And moving from third into second place this year was Pirate Life Brewing’s 8.8% ABV ‘Double IPA’, the Adelaide brewery knocking Western Australia’s Feral Brewing into third with their perennial favourite ‘Hop Hog’ American Pale Ale.

A ‘BALTER’ FROM THE BLUE But the big story was Gold Coast’s Balter Brewing.

Part-owned by world champion surfers Mick Fanning and Joel Parkinson, Josh Kerr and Bede Durbidge, the brewery’s ‘XPA’ American Pale Ale made an impressive fourth place debut on the list. Over in Canberra, BentSpoke Brewery were celebrating a top 10 placing in the poll. From 88th in the 2015 list, their ‘Crankshaft’ IPA, which, like five of the other top 10 beers is packaged in cans, rocketed up the rankings to eighth position.

Another Hottest 100 debutante was the ‘Peanut Brittle Gose’ from Queensland’s Bacchus Brewing Co, which first made its mark at GABS 2016 as the most popular Festival Beer (brewed especially for the festival). It’s just one of six GABS Festival Beers that made the list.

NEW & INDEPENDENT A massive 21 new beers made the 2016 list, including ‘Little Dove’ from WA’s Gage Roads, ‘Sonic Prayer’ and ‘Modus Pale’ from Modus Operandi on Sydney’s Northern Beaches, two versions of the highly regarded ‘Ramjet’ wood-aged beer from Melbourne’s Boatrocker Brewing Co, and an outstanding 55th placing for ‘KAIJU KRUSH!’ from the popular Victorian brewery, after only releasing the beer in December 2016.

BEER & BREWER PEOPLE’S CHOICE AWARDS At GABS 2016, Queensland’s Bacchus Brewing Co took out the first ‘GABS Double’, winning the People’s Choice Best Festival Beer in both Australia and New Zealand, with their outstanding ‘Peanut Brittle Gose’.

This was the second time Bacchus had won the popular vote at GABS, following their win in 2013 with their ‘White Choc Raspberry Pilsner’. We spoke with owner/brewer Ross Kenrick on what the win meant for them.

TELL US ABOUT BACCHUS BREWING. Bacchus opened in 2005 as Australia’s first (we believe) all-grain brew-on-premise, making cheap beer for the public. I then bought the brewery in 2010, and switched the focus to brewing unique and high quality beers for the craft venues that were just starting to open under the new small bar license in Brisbane.

The brewhouse is a unique steam jacketed multivessel (5x70L & 1x140L) system. We generally double brew which enables us to turn out up to 12 different brews in a day, with us typically creating over 150 brand new beers a year. We love to explore new and interesting flavours, but equally love perfecting our take on traditional styles from all over the world.

WHAT WAS THE IDEA BEHIND PEANUT BRITTLE GOSE? To create a beer with mass appeal, and a bit of wow factor, to stand out against the 130 plus amazing entries at GABS. Gose is a salty, slightly lactic style

of beer that was gaining rapidly in popularity, so we decided to try and replicate the classic combo of salted caramel and peanuts to produce a beer of intense flavour and aroma with a lovely savoury/ sweet balance.

WHAT GOES INTO IT? The base recipe remains fairly true to the Gose style, being predominantly wheat, spiced with coriander and sea salt, and lightly soured. But then we add the Bacchus twist, using specialty malts and ingredients including peanuts to create the creamy rich peanut brittle flavours.

WHAT DID THE WIN MEAN FOR YOU? We have been runner-up and winner in previous years, but were totally blown away to be the first brewery to win it a second time. There were so many amazing beers – the standard at GABS rises every year. The real icing on the cake though was

getting the trifecta of wins in Melbourne, Sydney and Auckland. It doesn’t get any better than the public voting you as number one.

HAVE YOU CONTINUED TO MAKE THE BEER? Yes, it remains a firm favourite with a lot of our customers and we love seeing the reactions of new customers when they try the beer for the first time. It’s not for everyone, but those that like it generally love it.

HOW IMPORTANT IS GABS? GABS is a fantastic opportunity to showcase your creative flair and brewing talents to such a large audience, and winning certainly helps promote your brand. But more importantly it’s just a wonderful opportunity for brewers and the public to get together for a fun filled and informative celebration of craft beer.

WHAT ARE YOU BREWING FOR US THIS YEAR? Unfortunately we are not entering this year. A high turnover of staff, as well as personal commitments (including moving house), have just meant that we’ve not had the time or creative energy to do a beer entry justice this year. Hopefully back next year with all guns firing...

Bernie Glass, the 2016 Australian Amateur Brewing Champion, used 3.5kg of dates to accentuate classic Dubbel flavours of toffee, caramel and raisin. Expect spicy and floral aromas and low bitterness. Perfect for a cheese plate.

A Belgian style IPA co-fermented with red wine yeast. Said to have similar properties as Belgian yeast, they've also used American Ale yeast and a lot of late NZ hops. Disclaimer: May cause red eyes.

Bootleg gave us notes on this. There was mention of Forester's Beer Hall, a Rocketship and Thirsty Crow brewery. Apparently it's an IPA and they want you to drink it. So we guess you should?

HEF is an award winning wheat beer. Burleigh describe this as HEF's edgier, rebellious brother.

Prancing Pony, Totness (SA), use direct flame to heat their beer rather than modern steam jackets, which they believe caramelises the beer and gives a fuller malt flavour. They use large amounts of late hops for more hop aroma and flavour. They also don't filter their beers and use traditional bottle and keg conditioning to allow the beer to age more gracefully. In 2016, their India Red Ale won Champion Beer at the London International Beer Challenge.

William Smith & Sons is Australia's first certified STAND organic cidery, built at the farm in the Huon Valley (TAS), where William Smith started orcharding in 1888. The orchard is run by Andrew, the 4th generation of the Smith family to farm in the Huon. All of their ciders use only fruit grown on their farm where it's all crushed, fermented, aged and bottled. William Smith & Sons is Australia's first certified organic cidery, built at the farm in the Huon Valley (TAS), where William Smith started orcharding in 1888. The orchard is run by Andrew, the 4th generation of the Smith family to farm in the Huon. All of their ciders use only fruit grown on their farm where it's all crushed, fermented, aged and bottled. In 2015 Willie Smith's were awarded Best Cider and Best in Show at the 2015 Cider Australia Awards.
