En Lourinhã, una villa costera situada unos kilómetros al norte de Lisboa, acaba de concluir un gran proyecto: ser la Villa de los Dinosaurios. En esta zona se encontraron cinco especies de dinosaurios únicas en el mundo y el Ayuntamiento ha creado un parque temático con 60 reproducciones de estos animales a tamaño natural.

Lourinhã, a coastal town a few kilometres north of Lisbon, has just completed a big project: becoming the Villa of the Dinosaurs. Five species of dinosaurs that are unique in the world were found in this area, and the city hall has created a theme park with 60 life-sized reproductions of these animals.

In Lourinhã, einem Küstendorf wenige Kilometer nördlich von Lissabon, wurde gerade ein großes Projekt abgeschlossen: das Dinosaurierdorf. When travelling to Rome, one expects Roman temples and ruins in the style of Augustus. But an Egyptian-style pyramid is rather strange, and the one at Cestia is the most famous in the Italian capital. In fact, it’s the sepulchre of the magistrate Gaius Cestius, and was built in the year 12 BC. To visit it you must book ahead.

The urban landscape of London has been chosen as the model for the first photo session to be captured in gigapixels. In the tenth annual contest for Best Potato on Gran Canaria, the winner was the Mozart variety, chosen from among 31 types of potatoes cultivated on the island. This variety was also considered the best for the ‘wrinkled’ style of preparation and the third best for frying.

Sac Actún, cueva blanca en el idioma maya, fue descubierta en enero de 2018. Tras casi un año de expedición, se ha confirmado como la zona arqueológica subacuática más impresionante del mundo. Las labores de investigación seguirán ya que se quiere confirmar la teoría de que en los ríos subterráneos de la península de Yucatán existen 1.400 kilómetros de agua dulce. Parte de estos cenotes se puede visitar.

Sac Actún, or ‘white cave’ in the Maya language, was discovered in January 2018. After almost a year of exploration, it has been confirmed as the most impressive underwater archaeological area in the world. Research will continue in an effort to confirm the theory that in the underground rivers of the Yucatán Peninsula there are 1,400 kilometres of fresh water. Some of these cenotes can be visited.

Gastronomy is increasingly popular among travellers, and the Costa del Sol didn’t want to be left behind. Its tourism office has brought out the Gastroturismo guide, which provides information about typical dishes, wines, the origin of the traditional sardine spits, a list of culinary celebrations, and much more information related to the area’s cuisine.

Sac Actún wurde im Januar 2018 entdeckt. Nach fast einem Jahr der Erforschung wurde die in der Sprache der Maya als “Weiße Höhle” bezeichnete Stätte als das beeindruckendste archäologische Unterwassergebiet der Welt anerkannt. Die Forschungsarbeiten werden fortgesetzt, um die Theorie zu bestätigen, dass es in den unterirdischen Flüssen der Halbinsel Yucatan auf 1.400 Kilometer verteilt Süßwasser gibt. Einige dieser Cenoten können besichtigt werden.

Regionale Küche wird bei Reisenden immer beliebter und an der Costa del Sol möchte man dem in Nichts nachstehen. Das regionale Fremdenverkehrsamt hat den Gastronomieführer Gastroturismo herausgebracht, in dem Informationen über lokale Gerichte, Weine, die Herkunft der Espetos, der typischen Sardinenspieße, ein Verzeichnis der kulinarischen Feste und viele weitere Informationen über die Küche dieser Region enthalten sind.

KONTRASTE IN DER FARBE DER HOFFNUNG Der Literaturnobelpreisträger José Saramago fand hier auf der Insel Lanzarote – dieser aus Feuer und Lava geformten Rara Avis – eine Zuflucht der Inspiration. Ein Paradies, das in der Tat allen Respekt, alle Bewunderung und allen Schutz jener Landschaften verdient, die stets visuelle Geschenke und sogar Naturwunder offerieren, wie etwa der köstliche Wein, der aus ihrer schwarzen Erde stammt. Es ist ein erstaunlicher Ort, der Ruhe ausstrahlt und sowohl Besucher als auch Einheimische gleichermaßen verzaubert. Die Mitarbeiter des Fremdenverkehrsamtes betonen, dass „es hier etwas anderes, jenseits von Sonne und Strand, gibt“. It is close by El Golfo, a small town of fishermen in the municipality of Yaiza, in the southern part of the island and near Playa Blanca. But let’s examine this body of water a little more closely. What exactly causes its green colour? Answer: a blend on the surface of salt water and sulphur and a unique alga. Formed almost three centuries ago in

La bella actriz Raquel Welch se bañó en sus aguas en la película Hace un millón de años (1966). En este espacio saltó la chispa que encendería Los abrazos rotos (2009) de Pedro Almodóvar. Cuenta la leyenda que el director tomó una foto de esta playa tiempo atrás y, al revisarla, reparó en un detalle: en una esquina aparecía una pareja abrazándose. Aquello desató toda la historia y hay una escena con Penélope Cruz y Lluís Homar en el mirador que corona el Lago Verde. Buen homenaje. Arropada por un volcán en horas bajas, nos topamos con esta suerte de piscina natural de aspecto inconfundible. Y este secreto a voces se ubica junto a El Golfo, recoleto pueblo de pescadores en el municipio de Yaiza, al sur de la isla, muy próximo a Playa Blanca. Fijémonos detenidamente en el objeto de nuestro deseo viajero. ¿La causa de su tonalidad? El afloramiento en la superficie de agua marina con azufre y un alga peculiar. Formado hace casi tres siglos en una imponente cala de grava, el Charco de los Clicos ocupa unos 300 metros de longitud por 30 de ancho. Como se enmarca en el Parque Natural de los Volcanes, que flanquea el Parque Nacional de Timanfaya, ¿qué tal aprovechar el desplazamiento hasta allí para descubrir varias joyas geológicas? En PasaporteBlog apuntan que este entorno “quedó rodeado por la lava en las erupciones de 17301736”. “El Golfo es el nombre del pueblo y también el de un cráter partido por la mitad por el mar, con una playa de arena negra y una laguna de intenso color verde alimentada subterráneamente por agua del mar”, relatan. En la web golanzarote.org añaden otro dato: “En los alrededores del lago se pueden encontrar muchísimas piedras semipreciosas, conocidas como olivinas, que los artesanos utilizan para crear singulares joyas que luego venden por la zona”.

Und ebenfalls hier an diesem Ort hatte Pedro Almodóvar die zündende Idee zum Film Zerrissene Umarmungen (2009). Doch schauen wir uns das Objekt unserer Reisebegierde etwas genauer an. Was ist die Ursache für seine Farbgebung? Es ist eine Mischung aus Meerwasser, Schwefel und einer besonderen Algenart. Der Charco de los Clicos entstand vor etwa drei Jahrhunderten in einer imposanten Kiesbucht und ist 300 Meter lang sowie 30 Meter breit. Da er sich im Naturpark Los Volcanes befindet, der an den Nationalpark Timanfaya anschließt, kann man diese Lage nutzen, um gleich ein paar weitere geologische Schätze in der Nähe zu entdecken. Auf dem PasaporteBlog heißt es, dass dieser Ort „während der Eruptionen in den Jahren 17301736 von Lava umgeben war.“„El Golfo ist sowohl der Name des Dorfes als auch der Name eines Kraters, der mittig vom Meer geteilt ist, mit einem schwarzen Sandstrand und einer Lagune mit intensiver grüner Farbe, die unterirdisch durch Meerwasser gespeist wird“, lautete es. Auf der Website golanzarote. org wird noch eine weitere Tatsache hinzugefügt: „Rund um den See gibt es viele Halbedelsteine, sogenannte Olivinas, aus denen die Handwerker einzigartige Schmuckstücke herstellen, die sie dann in der Gegend verkaufen". Es genügt, im Internet zu surfen, um die Beliebtheit des Lago Verde bei den Besuchern zu bestätigen: „Am Meer gelegen. Wunderschön. Man kann nah mit dem Auto heranfahren und dann noch ein wenig laufen. Es lohnt sich.“ schreibt ein Besucher. „Fantastischer Ausflug. Wunderbare Aussicht. Sehr gute Sehenswürdigkeit, eine sehr schöne Umgebung und leichte Erreichbarkeit.“ betont ein anderer. „Ein großartiger natürlicher Kontrast: Der grüne Farbton des Seewassers mischt sich mit dem Rot des Berges, dem Schwarz des Strandes und dem dunklen Blau des Meeres.“ meint ein Dritter. Und so weiter und so fort. Man sollte es keinesfalls versäumen, El Golfo und diesem natürlichen Amphitheater aus lebendigem Wasser im Mittelpunkt der Kulisse, einen Besuch abzustatten. Die Show muss weiter gehen.

If one had to sum up all the beauty of Lanzarote in three colours, they would doubtless be the white of its houses, the green of the vegetation, and the black of the volcanic earth. And these are exactly the three tones that predominate inside and outside the H10 Rubicón Palace, a resort located right on the sea at Playa Blanca, in the southern part of the island. It’s recently become a five-star hotel after a thorough renovation of its installations and a wider offer of services. The job was carried out by the Lázaro Rosa-Violán Interior Design studio, which oversaw the change to the principal block of the resort, the rooms, and the Despacio Thalasso Centre, which contains a renovated gymnasium with a large window and views of the sea, along with an exterior solarium. In the lobby, guests are welcomed by an impressive arc of dolphins that becomes one of is principal elements. A large old nautical chart of the Canaries presides over the reception area, and other charts of the zone are on the walls of the lobby and its bar. To recreate the atmosphere of a traditional market, the Janubio buffet restaurant has different points that simulate market stalls and offer culinary specialities based on fresh produce. But this isn’t the only gastronomical proposal at the H10 Rubicón Palace. In addition to the Janubio, the hotel has five other restaurants and three bar. In this way it’s possible to enjoy American cooking at the Steak House, Italian cuisine at Dolce Vita or the Oriental delicacies of the Sakura. Outside there are five spectacular swimming pools for adults (one of them climatised to enjoy in the winter) and three for children (two of which are also climatised). In one of these latter pools, the kiddies can enjoy the Daisy Adventure, a water circuit with a pirate ship that contains a large slide. This isn’t the only entertainment area for children. The resort has a Daisy Club animation programme for all ages: the BabyClub with a childcare service, learning activities and an exclusive playground for babies; the MiniClub, with a playhouse and handicrafts; and the JuniorClub, which offers sporting activities and games in the pool. éxico tiene muchos iconos y uno de los más conocidos es Frida Kahlo, la mujer del entrecejo unido, de la técnica naif y de los cuadros surrealistas; la mujer a la que algunos han convertido en un símbolo feminista. Aunque esté vinculada principalmente con la capital, Frida es patrimonio de todos los mexicanos y un atractivo turístico de primer orden. En su casa en Coyoacán, en la Ciudad de México, los fines de semana es común que las colas den la vuelta a la vivienda de color azul que muestra una buena retrospectiva de su obra y de su vida. Pero no contaba con ningún espacio en Quintana Roo, en la Riviera maya. Al menos hasta que hace más o menos un año, en la Quinta Avenida con la Octava en Playa del Carmen, abrió el primer museo que la Frida Kahlo Corporation tiene en México. Situado junto al restaurante Frida Kahlo, inaugurado pocos meses antes, ambos están licenciados por esta corporación, la única autorizada para dar permisos para productos con la imagen de la pintora. La idea de este espacio es jugar con todos los sentidos para crear experiencias nuevas y originales alrededor de la vida y obra de la artista para disfrute de los casi cinco millones de turistas que recibe Playa del Carmen cada año. FRIDA KHALO LIVES ON THE RIVIERA MAYA Mexico has many icons and one of the best known is Frida Kahlo, she of the eyebrows that grew together; a Naïf painter of surrealist canvases; the woman some people have made a feminist symbol. Although she is most often associated with the capital, Frida is in fact the heritage of all Mexicans, and a tourist attraction of the first order. In her home at Coyoacán, Mexico City, it’s common to see long lines of people waiting to enter the blue building that contains a good representation of her life and work. But there was no such corresponding space in the State of Quintana Roo, on the Riviera Maya. At least until about a year ago when, on the corner of Quinta Avenida with Octava, at Playa del Carmen, the Frida Kahlo Corporation opened its first museum in Mexico. It is located next to the Frida Kahlo restaurant, which opened a few months earlier, and both are licensed by this corporation,

A raíz de este renacer, el espacio busca que el visitante salga del recinto con una nueva visión de la Kahlo productora de arte y de la Frida persona real. Este lugar tiene 800 metros cuadrados dedicados a ella. Cuenta con experiencias sensoriales inmersivas, pantallas interactivas, proyecciones, mapas... Tecnología multimedia para, según describen en su web, “explorar los acontecimientos clave en la vida de la artista y emprender con ellos una serie de aproximaciones conceptuales, con el objetivo de que el visitante consiga interiorizar algunos atisbos de la abrumadora existencia de una mujer cuya huella persiste intensamente en el imaginario social”. Sirva, como muestra, un botón. En el restaurante se puede vivir la Experiencia Frida Kahlo, que consiste en una sala multisensorial, con seis platos de cocina de autor, y seis actos temáticos sobre Frida Kahlo. También, dentro del museo, se pueden ver representaciones sobre la vida de la artista y su mundo, obras musicales que recorren su trayectoria a través de los distintos escenarios del museo. Una vida demasiado vibrante para explicarla solo a través de lienzos.

The idea of this latest space is to play with all the senses and thus create new and original experiences around the life and work of Frida, for the enjoyment of the nearly 5 million tourists who visit Playa del Carmen each year. According to the organizers, the whole story the museum seeks to present is based on the bright and dark sides of the artist’s existence. As in her life, the museum begins with the accident that left her confined to a bed, where she would discover her inner world and where she really began to become an artist. Starting with this rebirth, visitors receive a new perspective about Kahlo as an artist and a person. There are 800 square metres dedicated to her, including immersive sensory experiences, projections, maps… Multimedia technology, according to the website, “to explore the key events in the artist’s life and undertake a series of conceptual approaches with them, so that the public can relate and understand the overwhelming existence of a women whose footprints have marked society.” Just a sample: in the restaurant, visitors can live the Frida Kahlo Experience, which consists of a multisensory room with six haute cuisine dishes and six themed acts about Frida Kahlo. Inside the museum it is possible to see representations about the artist and her world, musical works that tell her life through different parts of the museum. A life that was too vibrant to explain just through paintings.

Infolge dieser Wiedergeburt soll der Ort den Besucher mit einer neuen Vision der Kunst schaffenden Kahlo und der wahren Person Fridas entlassen. Der Ort widmet sich der Künstlerin auf 800 Quadratmetern. Geboten werden immersive Sinneserfahrungen, interaktive Bildschirme, Projektionen, Karten... Multimediatechnik, „um“, so auf der Webseite, „die wichtigsten Ereignisse im Leben der Künstlerin zu entdecken und dadurch eine Reihe von konzeptuellen Ansätzen zu unternehmen, um dem Besucher Einblicke in die überwältigende Existenz einer Frau zu ermöglichen, deren Fußabdruck sich stark ins soziale Gedächtnis geprägt hat.“ Im Restaurant beispielsweise ist es möglich, die Experiencia Frida Kahlo zu erleben, die aus einem immersiven, multisensorischen Raum mit sechs Gerichten der Haute Cuisine und sechs Themen-Acts über Frida Kahlo besteht. Auch im Museum sind Darstellungen aus dem Dasein der Künstlerin und ihrer Welt zu sehen und musikalische Werke zu erleben, die ihr Leben erzählen, während sich der Besucher durch die verschiedenen Räume begibt. xiste una Marbella que pocos conocen. Esta Marbella, única y diferente, fue la que enamoró al escritor francés Jean Cocteau, que eligió esta ciudad para pasar sus veranos; o al famoso pintor Salvador Dalí, que también visitó en numerosas ocasiones la zona. Como homenaje a este último, la avenida del Mar se ha convertido en un museo al aire libre con diez esculturas atribuidas a Dalí, tal y como rezan las placas allí expuestas, pero de las que no se ha certificado su autenticidad. En cualquier caso, resulta un paseo agradable por una de las calles de Marbella más bonitas, pavimentada con un lujoso mármol amarillo. Como tesoros históricos, Marbella presume de dos: la basílica paleocristiana de Vega del Mar y la Villa Romana de Río Verde. La primera está considerada como uno los monumentos visigodos más importantes de España y se calcula que podría alcanzar más de 1.500 años de antigüedad. El conjunto está formado por un edificio, del que ya solo queda su estructura, en el que destaca una imponente pila bautismal y una necrópolis en la que se han contabilizado unas 200 tumbas. Por otro lado, la Villa Romana de Río Verde es uno de los pocos asentamientos romanos conservados en el litoral andaluz y destaca por su superficie: 698 metros cuadrados. Sin embargo, lo que más llama la atención es la calidad y originalidad de los mosaicos encontrados, que datan del siglo I. Esta es la Marbella de los marbellís: histórica, cultural, pescadora, romana, árabe, con olor a naranjos y del color de las flores. Una bonita ciudad con una cara diferente que merece (y mucho) la pena conocer.

there are three notable buildings on this square: the Town Hall, which was built in the time of the Catholic Monarchs; the Casa del Corregidor, with a stone facade that combines Gothic and Renaissance elements; and the Hermitage of Santiago, the oldest religious building in the town. A ten-minute walk away is the Puerto de Pescadores de Marbella: a small neighbourhood that faces the sea and reaps its treasures, breathes its breezes and offers the Bajadilla beach. The homes are always open here, the clothes dry in the sun and the flowers burst into colour on the white house fronts. There are small restaurants that prepare the city’s freshest and tastiest seafood –prawns, sea bass, young hake, red mullet, sardines– and some of which have even earned a Michelin star. The French writer Jean Cocteau fell in love with this unique, different Marbella and spent summers here, and painter Salvador Dalí also visited the area many times. In homage to the latter, the Avenida del Mar has become an open-air museum with ten sculptures attributed to Dalí, although their authenticity has not been certified. In any case, this is a pleasant stroll along one of the city’s prettiest streets, which has been paved with a

Playa de Amadores is famous among snorkelling fans for the sea bream and sole that, in spite of their camouflage, can be spotted by visitors. But this isn’t the only beach in the southern part of Gran Canaria for enjoying what’s under the sea surface. A short distance from the Playa de Amadores is Playa de Tauro. With its yellow sand and hardly any rocks, this beach offers something special for observing the sea through some goggles and a breathing tube: in just a few strokes you’re into two to three metres of water that teem with life. Another of the best places on Gran Canaria for taking up snorkelling is Playa del Zoco Negro, located in Arinaga, in the eastern part of the island. While it may not be very large, it is easily accessed, and a reef facing the coast slows down the force of the sea, making this beach perfect for beginners who want to swim among the colourful fish. Whether north or south, Gran Canaria’s sea bottom won’t disappoint. Because the island’s more than 200 kilometres of coastline are a treasure full of life awaiting anyone wanting to enjoy it.

At age 33, and with more than 15 years of experience, this native of Valladolid enjoys his trade by dint of innovation and creativity, but without losing sight of its roots. Not for nothing his training was a balanced combination of modern, vanguard, international cuisine –five years in London and Switzerland– with the wisdom of traditional recipes, which he learned at the start of his career in Spain’s Paradores. “You can’t neglect the roots,” he insists. La Brasserie is one of the most elegant restaurants in Marbella. This restaurant in the H10 Andalucía Plaza has some modern, welcoming interior decoration, along with a menu that’s both traditional in essence and modern in spirit. A blend that reflects Aguado’s philosophy: innovation,

Uno de los entrantes de la carta es esta mousse de foie de pato con bomba de tomate, crujiente de queso y cecina, una receta que tras 15 años de carrera se ha convertido casi en un símbolo para Aguado. Con ella ganó en León, en 1998, su primer premio gastronómico. “Era el primer concurso al que me presentaba”, explica el chef. “Le tengo un cariño especial. Obviamente, el plato ha ido evolucionando porque uno mejora y también porque intento adaptarlo al lugar en el que estoy. Ahora lleva crujientes ‘regañá’, un pan tradicional de Andalucía, y toques de miel de caña, un ingrediente también característico de aquí”. Adaptación y modernidad salvaguardando el sabor a hogar. Sus señas de identidad. Porque, como dice Aguado, “puedes crecer, diseñar platos y variar tu estilo, pero primero tienes que conocer la base”.

Today Aguado reimagines those memories through a modern and sophisticated filter. Thus the offer at La Brasserie surprises and pleases the most demanding palates. One of the entrées on the menu is this mousse of duck foie gras with tomato, crispy cheese and cured meat, a recipe which after his 15 years as a chef has become almost a symbol for Aguado. It was this recipe that won him his first culinary prize, in León in 1998. “It was the first contest I ever took part in,” the chef explains. “That’s why I have a special affection for this dish. Obviously it has evolved since then because you yourself get better and also because I try and adapt it to the place where I’m working. Now it contains some ‘regañá’, a piece of crispy bread of a traditional Andalusian kind, and touches of molasses, an ingredient that’s also characteristic of this area.” Adaptation and modernity while preserving the flavour of the home. His signs of identity. Because as Aguado puts it, “you can grow, design dishes and vary your style, but first you have to know the foundation.”

So überrascht und erfreut das gastronomische Angebot des Restaurants La Brasserie selbst die anspruchsvollsten Gaumen. Eine der Vorspeisen auf der Speisekarte ist dieses Entenlebermousse mit Tomaten, knusprigem Käse und Cecina, ein Rezept, das nach 15 Jahren seiner Berufskarriere fast zum Symbol für Aguado geworden ist. Mit diesem Rezept gewann er 1998 in León seinen ersten Gastronomiepreis. „Das war der erste Wettbewerb, an dem ich je teilgenommen habe”, erklärt der Küchenchef, „deshalb habe ich eine Vorliebe für dieses Gericht. Seitdem habe ich es weiterentwickelt: einerseits, weil man sich selbst verbessert und andererseits, weil ich versuche, es an den Ort anzupassen, an dem ich mich befinde. Jetzt gibt es dazu knusprige ‚Regañá’, ein traditionelles andalusisches Brot, mit einem Hauch von Zuckerrohrsirup, eine Zutat, die auch für die Region hier typisch ist.“ Anpassen, Neugestalten und dabei trotzdem den Geschmack der Heimat bewahren das ist sein Markenzeichen. Denn, wie Aguado es ausdrückt: „Man kann wachsen, Gerichte entwerfen und seinen Stil variieren, aber zuallererst muss man die Grundlagen kennen.“

300 gr de mousse de pato 1 tomate de rama 10 gr de cecina 15 gr de queso de cabra 20 gr de pistacho 3 gr de vinagre de Módena Albahaca Amaranto o acedera Miel de caña al gusto 3 regañás de pan

ENTENLEBERMOUSSE MIT TOMATEN, KNUSPRIGEM KÄSE UND CECINA ZUTATEN FÜR 4 PERSONEN 300 g Entenlebermousse 1 Strauchtomate 10 g Cecina (spanischer luftgetrockneter und geräucherter Rinderschinken) 15 g Ziegenkäse 20 g Pistazien 3 g Balsamessig Basilikum Amarant oder Sauerampfer Rohrzuckersirup nach Belieben 3 Regañás vom andalusischen Brot

ELABORACIÓN Primero, escaldamos, pelamos y horneamos el tomate a 80ºC durante dos horas. Reservamos y lo dejamos listo para el emplatado. Para elaborar el chutney de pistacho, trituramos los frutos secos y los ponemos en la sartén con azúcar. Los doramos un poco, añadimos vinagre de Módena, dejamos cocer unos segundos y reservamos. Empezamos el emplatado poniendo tres puntos de miel de caña en la base y el chutney de pistacho. Después, cortamos tres trozos de mousse de foie de pato, caramelizamos con la ayuda de un soplete y añadimos al plato. Es el momento de colocar el tomate. Primero, lo templamos con un golpe de horno y seguidamente lo colocamos sobre el chutney. Para rematar, empanamos las bolitas de queso de cabra, las añadimos junto con la cecina y decoramos con las regañás, la albahaca y las hojas de amaranto o acedera.

PREPARATION First we blanch, peel and bake the tomato at 80ºC for two hours. Set aside until it will be put on the plate. To make the pistachio chutney, we grind the pistachios and place them in the frying pan with sugar. We brown them a little, add the Modena vinegar, let it all cook for a few seconds and set aside. Begin to prepare the plate by placing three points of molasses and the pistachio chutney. Then we cut three slices of the duck foie gras mousse, caramelize with the help of blowtorch and add to the plate. Now’s the time to add the tomato. First we heat it with a brief stay in the oven and then place it atop the chutney. To finish off, we cover the goat cheese balls in breadcrumbs, add them along with the cecina, and decorate with the regañás, the basil and the leaves of amaranth or sorrel.

Hasta hace poco servían solo para abastecerse, pero la competencia con las grandes superficies comerciales les obligó a reinventarse. Según datos del Ayuntamiento de Madrid, en los últimos 12 años se han realizado intervenciones en las infraestructuras del 90% de los mercados de la ciudad. Sin embargo, el mayor cambio no ha sido físico, sino de mentalidad: los mercados de hoy en día se han diversificado. Ya arrastres un carrito o una maleta, ya quieras hacer la compra, tomar un vino o conocer edificios singulares, deberías dejarte caer por los mercados municipales de Madrid. Todo empezó con el mercado de San Miguel, en pleno casco histórico de la ciudad. Recibe el nombre por la antigua iglesia de San Miguel que José Bonaparte mandó derruir a principios de siglo XIX. Los comerciantes aprovecharon la cicatriz urbana en tan buena zona e improvisaron un mercado sobre las ruinas de la iglesia. En 1916, para mejorar las condiciones de salubridad, se construyó un mercado de metal y cristal que con los años se convirtió en un icono arquitectónico de la ciudad. Muy bonito pero muy vacío. GET TO KNOW THE CITY BY VISITING ITS MARKETS Madrid has 46 municipal markets that perfectly reflect the neighbourhoods where they are located. Until recently they sold basic food, but competition with the supermarkets has obliged them to reinvent themselves. According to the Madrid Town Hall, over the past 12 years some 90% of the city’s markets have undergone changes in their infrastructures. Nevertheless, the greatest change has not been physical but one of mentality: today’s markets have diversified. Whether you’re pulling a shopping cart or a suitcase, whether you want to drink a glass of wine or inspect some unique buildings, you should drop by Madrid’s municipal markets. Everything began with the Mercado de San Miguel, in the heart of the city’s historic centre and very close to the Plaza Mayor. It received that name because of the nearby church of San Miguel that emperor José Bonaparte ordered to be demolished at the start of the 19th century. Merchants seized the opportunity to fill this attractive gap with an improvised market atop the ruins. In 1916, to improve sanitary

El resto de mercados tomaron ejemplo, de lo bueno y de lo malo, y adaptaron el modelo a sus propias particularidades. El de San Antón, en el corazón de Chueca, fue el siguiente en la lista. Este mercado histórico, fundado en 1945, reabrió, después de años de obras y remodelaciones, en 2006. En este lugar la división de actividades es mucho más clara: la planta baja tiene puestos gourmet; la primera, un surtido de bares donde tapear de forma informal (y una sala de exposiciones con muestras que bien merece la pena admirar); y en su última planta tiene una terraza-restaurante. Si bien es cierto que tiene un innegable encanto, los vecinos de la zona vienen aquí a hacer sus compras especiales. Pero para la compra diaria prefieren acercarse al vecino mercado de Barceló, que tiene más de 100 puestos entre bares, restaurantes y tiendas de alimentación. Además, cuenta con biblioteca, centro deportivo y una amplia terraza desde la que disfrutar de unas pintorescas vistas a los tejados de Malasaña. Puede que el resto de mercados tengan menos fama, pero no por ello dejan de ser interesantes. El mercado Tirso de Molina, por ejemplo, es fiel reflejo de la historia reciente de España. A pesar de su nombre, se encuentra en Puerta del Ángel, el barrio que los madrileños llaman, con cariño y cachondeo, el Bruclin castizo. El edificio fue construido por Luis Bellido, autor también del Matadero de Madrid, y es uno de los pocos ejemplos de la arquitectura civil de la Segunda República. Incluso tiene un escudo republicano en su entrada que la dictadura se olvidó de quitar. La que no pasó de largo por su estructura fue la guerra. En 1936 un obús estalló en su interior y hoy todavía se pueden ver restos de metralla entre las vigas. Es un mercado de los viejos, de los de carritos arrastrados y quién da la vez. conditions, an iron and glass structure was erected, and over time it became one of the city’s architectural icons. Very pretty but almost empty. With the arrival of the 21st century, the market was languishing. But its reconversion in 2005 into a culinary market selling gourmet products was a huge success. The place went from ostracism to great popularity in just a few months, although at first the project was polemical among the more traditional residents of the neighbourhood: they didn’t understand the new concept of the market. But today it is one of the most-visited places in the historic old city, a point for visitors and locals to enjoy its tapas, beers and wines. The other markets took notice, of both the good and the bad aspects of San Miguel, and adapted the model to their own characteristics. The San Antón market, in the heart of the Chueca neighbourhood, was next on the list. This historic market, established in 1945, reopened in 2006 after two years of work and remodelling. Here the division of activities is much more defined: the ground floor has gourmet stands; the first floor offers a range of informal tapa bars (with a multi-purpose hall for cultural exhibitions that’s worth visiting); and a top level with a terracerestaurant. While it has an undeniable charm, residents of the area come mostly for special purchases. For daily buying they prefer the nearby Mercado de Barceló, which has more than 100 locations between bars, restaurants and food shops. In addition, it has a library, a sports centre and a large terrace from which to enjoy some picturesque views over the rooftops of the Malasaña neighbourhood. The other markets may be less famous but they’re no less interesting. The Mercado Tirso de Molina, for example, faithfully reflects Spain’s recent history. In spite of its name, it is located at Puerta del Ángel, the neighbourhood that Madrid natives call, with affection and a certain sarcasm, the local “Brooklyn.” The building was designed by Luis Bellido, also author of the Matadero de Madrid, and is one of the few examples of the civil architecture of the Second Republic (1931-1936). It even has the Republican coat of arms over its entrance, something the dictatorship neglected to remove. Decidedly less respectful of this

Die anderen Märkte nahmen sich ein Beispiel an den sowohl positiven als auch ungünstigen Aspekten des Mercado de San Miguel und passten das Modell an ihre eigenen Bedürfnisse an. Der Markt von San Antón, im Herzen des Stadtteils Chueca, war der nächste auf der Liste. Für ihren alltäglichen Einkauf gehen sie doch lieber zum benachbarten Barceló-Markt, der über 100 Stände zwischen Bars, Restaurants und Lebensmittelgeschäften verfügt. Außerdem gibt es dort eine Bibliothek, ein Sportzentrum und eine große Terrasse, von der aus man einen malerischen Blick über die Dächer des Stadtviertels Malasaña genießen kann. Die anderen Märkte sind eher weniger bekannt, doch nicht minder interessant und sehenswert. Der Markt von Tirso de Molina beispielsweise spiegelt die jüngste Geschichte Spaniens wider. Ungeachtet seines Namens befindet er sich in Puerta del Ángel, dem Viertel, das die Madrider liebevoll und mit einem Hauch Sarkasmus als Brooklyn bezeichnen. En ambos es normal encontrarse concursos de baile, conciertos para los más pequeños y otras actividades similares, por lo que es interesante comprobar en sus redes sociales el programa con antelación. El Mercado de Vallehermoso es también muy recomendable. Propuestas gastronómicas atrevidas, una destilería, una quesería e incluso una caracolería hacen las delicias de los visitantes. También hay puestos más tradicionales, muchos de ellos bajos su etiqueta de Galería de Productores, que garantiza productos locales recolectados con técnicas artesanales y ecológicas. Con tanta oferta, tanta propuesta fresca y planes a granel solo nos queda preguntar, ¿quién da la vez?

It’s largely a market for older people who push shopping carts and ask, “Who’s last in line?” But on weekends it’s not uncommon to see a DJ between the fruit and fish stands who encourages people to interrupt their shopping and stop by the bar or enjoy a paella in the rice restaurant on the corner. If you have kids, there’s even a nursery. The Lavapiés neighbourhood can boast of having two of the city’s most popular markets. The Mercado de San Antón and the Mercado de San Fernando are similar in character and have managed to perfectly combine the ambience of a traditional market with the more sybaritic, current approach. In both of them it’s common to find dance contests, concerts for the kids, and similar such activities, so it’s a good idea to check out their offers on social media. The Mercado de Vallehermoso is also highly recommended. Daring culinary offerings, a distillery, and shops selling cheese and even snails are there to delight visitors. There are also more traditional offerings, many of them sold under the Galería de Productores label, which guarantees that they are local produce that has been harvested with artisanal and ecological methods. With so much on offer, so many fresh proposals, we have only to ask who’s last in line.

Es ist ein Markt der älteren Generation, die ihren Einkaufskarren hinter sich herzieht, und höflich nachfragt, wer der Letzte in der Schlange ist. Dennoch ist es nicht ungewöhnlich, dass am Wochenende ein DJ zwischen dem Obst- und Gemüsestand und dem Fischhändler die Leute dazu animiert, ihren Einkauf für einen kleinen Zwischenstopp an der Wermutbar zu unterbrechen oder eine frisch zubereitete Paella im Reisimbiss an der Ecke zu genießen. Für Kinder gibt es einen betreuten Spielbereich. Der Stadtteil Lavapiés verfügt über zwei der angesagtesten Märkte der Stadt. Der Mercado de San Antón und der Mercado de San Fernando haben einen sehr ähnlichen Charakter und schaffen es auf perfekte Art und Weise, die traditionelle Marktatmosphäre mit den Konsum- und Genussbedürfnissen unserer modernen Zeit zu verbinden. Hier finden üblicherweise Tanzwettbewerbe, Konzerte für die Jüngsten und andere ähnliche Aktivitäten statt. Deshalb ist es keine schlechte Idee, sich im Vorfeld über das aktuelle Programmangebot in den sozialen Netzwerken zu informieren. Der Mercado de Vallehermoso ist ebenfalls sehr empfehlenswert. Gewagte kulinarische Angebote, eine Brennerei, eine Käserei und sogar ein Geschäft mit Schneckenspezialitäten begeistern die Besucher. Darunter finden sich weiterhin traditionelle Stände, von denen viele Händler ihre Produkte unter dem Label Galería de Productores (Herstellergalerie) verkaufen, wodurch garantiert wird, dass es sich um lokale Produkte handelt, die mit handwerklichen Techniken und ökologischen Methoden produziert wurden. Bei einem so frischen und vielfältigen Angebot brauchen wir nun bloß noch fragen, wer der Letzte in der Reihe ist.

Salvo, quizá, por sus hojas, llenas de pinchos y de ese verde característico. También es cierto que no se suelen ver muchas de estas plantas con 500 años, por lo que su nacimiento se sitúa en la época en la que llegó Colón con sus carabelas. La historia del Patriarca, en plena reserva de Varahicacos, transcurre paralela a la de Varadero. Se cree que es el árbol más antiguo de Cuba y se encuentra en las instalaciones del Ocean Varadero El Patriarca, a pocos metros de la playa. Varadero está en la península de Hicacos, en la provincia de Matanzas. Con 30 kilómetros de extensión, 22 de ellos son de pura playa. Al final de la masa de tierra está la reserva de Varahicacos y, en el centro, el Patriarca. Cuando la península fue descubierta por Sebastián Ocampo en 1508 durante un viaje de expedición, El Patriarca apenas era una pequeña planta. At seven metres in height, with large branches and a wide, strong trunk, El Patriarca resembles many things, but certainly not a cactus. Except, perhaps, for its leaves, which are full of thorns, and that characteristic green colour. It’s also true that there are few such plants that are 500 years old, thus putting its birth around the time Columbus arrived with his caravels. The history of El Patriarca, which is located in the middle of the Varahicacos nature reserve, runs parallel to that of Varadero. It is thought to be the oldest tree in Cuba and is set in the grounds of the Ocean Varadero El Patriarca Hotel, just a few metres from the beach. Varadero is in the Hicacos peninsula, in the province of Matanzas, 30 kilometres long, 22 of which are pure beach. At the end of the land is the Varahicacos reserve, and in its centre, El Patriarca. When the peninsula was discovered by Sebastián Ocampo in 1508 during an expedition, El Patriarca was just a small plant. Then came the colonisation of the island, something which progressed even further when Alonso de Santa Cruz, a Spanish cosmographer and historian, drew a map of the peninsula in 1540. That small plant was a witness to how the Sapinards turned the place into a dry dock (varadero), a place to store, clean and repair their boats. Varadero also became a refuge for pirates (and runaway slaves) who hid in the natural caves that are found throughout the area while preparing their attacks. These grottos are now

Aquella pequeña planta fue testigo de cómo los españoles conviertieron el lugar en un varadero, un espacio donde poner las embarcaciones para resguardarlas, limpiar sus fondos o arreglarlas. Varadero también se convirtió en refugio de piratas y esclavos huidos. Se escondían en las cuevas naturales que hay por toda la zona y esperaban para hacer sus asaltos. Estas grutas son ahora uno de los grandes atractivos turísticos de la península. Cuevas como la de Ambrosio, cuyas paredes conservan uno de los conjuntos de pictogramas y dibujos más abundante e importantes de todo el Caribe. A lo largo de 300 metros divididos en cinco espacios, se reparten medio centenar de dibujos en rojo y negro realizados por los primeros pobladores de la isla hace más de dos milenios. La otra gran gruta es la de los Musulmanes, descubierta en 1980, donde hay más pruebas de la prehistoria cubana. No fue hasta el siglo XIX –el Patriarca cumplía ya 400 añitos– cuando Varadero empezó a llamar la atención de algunos vecinos de Cárdenas, atraídos por la fina arena y las aguas turquesa de sus playas. Quisieron ubicar allí sus residencias de verano, pero la naturaleza no se lo puso fácil. Finalmente, aquellos primeros turistas vieron cumplido su sueño de poder instalarse allí. Nacía así un destino de vacaciones que podría describirse como paradisiaco. El Patriarca se convertía en testigo de la transformación de Varadero en uno de los lugares más hermosos de Cuba. Su enorme figura sigue presidiendo hoy el área protegida de Varahicacos, dando sombra a siglos de historia. Con sus siete metros de altura, sus grandes ramas y su tronco ancho y fuerte, guarda la sabiduría de los ancianos, asistiendo al continuo ir y venir de los hombres. Él sigue ahí, siendo testigo de la historia, como uno de los seres vivos más viejos de Cuba.

one of the principal tourist attractions on the peninsula. Caves like Ambrosio, whose walls preserve one of the most abundant and important sets of pictograms and drawings in all the Caribbean. Some 300 metres long and divided into five spaces, there are about 50 drawings in red and black by the first residents of the island, dating back more than two millennia. The other large cave is called Los Musulmanes, discovered in 1980, where there are more remains of Cuban’s prehistory. It wasn’t until the 19th century –when El Patriarca was a mere 400 years old– that Varadero began to attract the attention of some people in neighbouring Cárdenas for its fine, sandy beaches and turquoise waters. They wanted to build some homes, but nature presented some problems. Finally those first tourists realised their dream of being able to live there. And thus was born a holiday destination that can only be considered heavenly. El Patriarca became a witness to the transformation of Varadero into one of the most beautiful places in Cuba. Today it still rises above the protected area of Varahicacos, still giving shade to centuries of history. At seven metres in height, its large branches and a wide, strong trunk shelter the wise old people who observe the continual coming and going of visitors. It endures, a witness to history, one of the oldest living beings in Cuba.
