Ningún humano conduce este tren del Metro londinense. Entre las estaciones de St. Pancras y Blackfriars cambia de control manual a automático. Al encargarse la máquina de la aceleración y el frenado, los trenes funcionan con una frecuencia de dos o tres minutos durante las horas punta del día. Es la primera vez que se utiliza la operación automática de trenes en la red principal.

No human being drives this Undergound train.

Between the stations of St. Pancras and Blackfriars, it changes from manual control to automated. With machinery taking charge of accelerating and braking, the trains operate every two or three minutes at peak times. It’s the first time automated operation to be used in the main network.

Twelve livestock ranches in Fuerteventura are now functioning with photovoltaic power thanks to a series of grants to change the supply of electricity from traditional means to renewable energy. And this is just the beginning. Over the coming years the Canary Islands will invest 228 million euros in these kinds of energy so as to reduce dependence on sources that contaminate.

Auf Fuerteventura arbeiten bereits zwölf Landwirtschaftsbetriebe mit Photovoltaikanlagen dank einer Reihe von Subventionen zur Umstellung ihrer traditionellen Stromversorgung auf erneuerbare Energien. La Rambla de la que hablamos fue la primera de muchas ramblas. Es la obra de arte original, esa que conserva la autenticidad, el diseño irrepetible por muchas réplicas hermosas que se hagan. Representa un icono de Barcelona, un espacio donde late la ciudad más genuina en sintonía con el turismo. Donde el costumbrismo se funde con la vanguardia, lo añejo con lo nuevo, lo creativo con lo hortera.

“En este medio kilómetro, este paseo desde Canaletas hasta, más o menos, el Gran Teatre del Liceu, se concentra la esencia de una ciudad que es un oxímoron. A veces mística y reaccionaria, como Antoni Gaudí; a veces racional e incomprendida, como Ildefons Cerdá; a veces golfa y alegre como aquel Ocaña que recorría la Rambla...”, afirmaba el periodista Enric González en El Mundo. Porque, concluía, es imposible poner coto al espacio más abierto de Barcelona. La visita imprescindible. La arteria de casi un kilómetro y medio que todos reconocen por sus flores, su música, los espectáculos callejeros, los mimos, el suelo con pavimento sinuoso y las terrazas.

WELCOME TO THE MOST ICONIC STREET La Rambla we’re talking about was only the first of many ramblas. It’s the original work of art, the one that preserves the authenticity and unrepeatable design, no matter how many beautiful replicas may be made.

It is an icon of Barcelona, a place where the most genuine version of the city sounds in tune with tourism.

Where old local customs blend with the vanguard, the old with the new, the creative with the vulgar.

“In this first half-kilometre, the stroll from Canaletas to, approximately, the Gran Teatre del Liceu, is concentrated the essence of a city that’s an oxymoron. Sometimes mystic and reactionary, like Antoni Gaudí; sometimes rational and misunderstood, like Ildefons Cerdá; at times raucous and happy like that Ocaña who walked along the Rambla,” writes journalist Enric González in El Mundo. Because, he concluded, it’s impossible to put limits to the most open space in Barcelona. It’s essential to make a visit here: the artery of nearly a kilometre and a half that everyone knows for its flowers, its music, the street performances, the mimes, the pavement with its sinuous patterns and the sidewalk cafés.

This most celebrated street is a colossal urban epicentre of feelings and curiosities. And it also links two neighbourhoods: the Gothic Quarter and the Raval. Its name comes from the Arabic, and designates an arroyo whose water flows into the sea. Until the 14th century it was separated from the rest of the city, but from the 15th to 19th centuries it was gradually transformed and built upon. That old canal has become a kind of open-air museum that attracts thousands of tourists every day.

WILLKOMMEN IN DER KULTIGSTEN STRASSE Die Rambla, von der die Rede ist, war die erste von vielen Alleen, den sogenannten ramblas.

Dieses ursprüngliche Kunstwerk bewahrt die Authentizität und das unverwechselbare Design, das keine noch so schöne Replik wiedergeben kann. Sie repräsentiert eine Ikone Barcelonas, einen Ort, an dem die ursprüngliche Stadt im Einklang mit dem Tourismus steht. Wo Tradition mit Avantgarde verschmilzt, das Alte mit dem Neuen und das Kreative mit dem Konventionellen. „Auf diesem halben Kilometer langen Spaziergang von Canaletas fast bis zum Liceu-Theater konzentriert sich die Essenz einer Stadt, die wie ein Oxymoron ist. Canaletas, que arranca de la plaza de Cataluña y alberga una zona muy concurrida. En su fuente, ese símbolo para los amantes del fútbol que celebran los éxitos del Barça, una placa reza que quien beba su agua volverá a Barcelona. Cosas de las leyendas. A continuación, la Rambla de los Estudios, cuyo nombre procede de cuando estuvo aquí el Estudio General o Universidad, aunque hay quien rememora también un antiguo mercado de pájaros.

Seguimos bajando y llegamos a la Rambla de las Flores, denominación que no requiere muchas explicaciones. Un tramo que se encuentra a la altura de la Boquería, emblemático bazar multicolor donde puedes comprar comida de todo tipo. ¿Y después?

Bienvenidos a la Rambla de los Capuchinos, la del centro, la del Gran Teatro del Liceo, el Palacio Güell o la incursión en la plaza Real. Y, como meta de este paseo ineludible avenida abajo en la Ciudad Condal, la Rambla de Santa Mónica nos abre un gran balcón al puerto. El Mirador de Colón corona una zona abarrotada de restaurantes y locales y se eleva con solemnidad entre la muchedumbre. Y, al fondo, brilla el Mediterráneo imponente.

Pero que cada uno defina sus Ramblas, territorio de permanente melancolía e imparable descubrimiento. Desde la web lamevabarcelona.com, su directora, Neus Prats, señala que “mucha gente pasa cada día sin prestar atención a los muchos detalles que nos hablan de su historia, de su pasado, de lo que ha hecho de su poco más de un kilómetro un sitio con alma”.

Porque aquí, reflexiona, “cada persona que pasea encuentra la Rambla que busca: la de la nostalgia con el Café de la Ópera, que es de los pocos lugares de restauración que conservan esta nostalgia en su interior; la de la rica burguesía que dejó su huella con sus palacios y las figuras del dios Mercurio; la de las fiestas o la del arte mirando las fachadas, pero también a los pies, con la máscara de Joan Brossa y

and the entrance to the nearby Plaza Real. Finally there’s the Rambla de Santa Mónica, which ends in the port. The solemn Columbus pillar crowns an area full of restaurants and shops. There in the background is the shining, powerful Mediterranean.

But let each visitor describe his own Ramblas, an always melancholy territory of unending discovery. Neus Prats, director of the lamevabarcelona.com website, says that “many people spend some time every day here and yet never pay any attention to the many details that speak to us of its history, its past, of what has made its little more than a kilometre a place with soul.” Because here, she reflects, “each person who walks by finds the Rambla he’s looking for: that of the Café de la Ópera, one of the few restaurants that still preserves that nostalgia; that of the wealthy bourgeoisie which left its record with its small palaces and figures of the god Mercury; that of the celebrations or art,

n el corazón de La Palma se encuentra la Caldera de Taburiente, una formación geológica producto del origen volcánico de la isla. Recibe ese nombre, el de caldera, porque recuerda a un recipiente: un gran valle rodeado de altas montañas que rondan los 2.500 metros de altura que lo abrazan desde antes, incluso, de que los humanos existieran como especie. Un paisaje de gran belleza que recibe el reconocimiento de Parque Nacional.

Para crear esta obra de arte, la naturaleza ha necesitado tiempo, dos millones de años de hecho, y las mejores herramientas: deslizamientos de tierra originados por la actividad volcánica y el desgaste o la erosión que provoca la fuerza del agua. El resultado ha sido un enorme circo de nueve kilómetros de diámetro rodeado de poderosas cumbres que se levantan a 2.500 metros de altura acariciando el cielo. Estas se vierten al interior del valle con caídas de hasta 1.000 metros. Los expertos aseguran que la Caldera de Taburiente es uno de los mayores cráteres de erosión del mundo.

El agua es una de las principales bellezas de este Parque Nacional: abundantes fuentes brotan de rincones escondidos formando cascadas, riachuelos y una espectacular red de arroyos y torrentes de gran fuerza. Esta ha sido, con su paciente labor de desgaste, la que ha dado forma a la Caldera durante todos estos largos años. Así, ha creado numerosos barrancos como el de las Angustias, que desemboca en el mar tras ocho kilómetros de recorrido. La fuerza erosiva del agua es tal que se podría decir que ha conseguido roer la isla de La Palma hasta sus huesos, ya que en algunas partes del cauce del barranco pueden verse las lavas que forman parte del complejo basal (la base de la isla).

Pero lo que más llama la atención al pisar la Caldera de Taburiente son los enormes picos que la rodean, algunos de ellos son los más altos de la isla, como el techo en el Roque

THE GEOLOGICAL TREASURE OF DER GEOLA PALMA LOGISCHE SCHATZ VON LA PALMA In the heart of the Canary Island of La Palma is the Caldera de Taburiente, a geological formation produced because of the volcanic origin of the island. It receives that name –caldera, or “cauldron”– because it resembles a container: a valley surrounded by mountains some 2,500 metres high that have embraced it even before human beings existed as a species.

A landscape of great beauty that has been declared a National Park.

To create this work of art, nature needed time –some 2 million years– and the best tools: slides of earth caused by volcanic activity and the wearing away or erosion caused by the force of water. The result has been an enormous circle some nine kilometres in diameter surrounded by powerful peaks that scrape the sky at 2,500 metres. These peaks drop as much as 1,000 metres. The experts say that the Caldera de Taburiente is one of the largest eroded craters in the world.

Water is one of the main beauties in this National Park: abundant fountains spring out of hidden corners to form waterfalls, streams and a spectacular network of ravines and torrents of great force. It is this patient wearing away that has formed the Caldera during all these long years. In this way it has created numerous ravines such as the one called Las Angustias, which flows into the sea eight kilometres away. So great is the erosive force of the water that it might be said that it has gnawed the island of La Palma right to the bone, since at some points along its course through the ravine can

Das Wasser ist eine der Hauptschönheiten dieses Nationalparks: Zahlreiche Quellen entspringen aus verborgenen Orten und bilden Wasserfälle, Bäche und ein spektakuläres Netz von Wasserläufen sowie gewaltigen Sturzbächen. Diese haben geduldig im Laufe der Zeit enorme Abnutzungssarbeit geleistet und die Caldera in all den langen Jahren geprägt. So entstanden zahlreiche Schluchten, wie die Las Angustias, die sich über acht Kilometer zieht, bevor sie ins Meer mündet. En este medio tan especial también se han desarrollado una gran variedad de especies vegetales y animales, que incluyen un gran número de endemismos canarios.

n 2007, el departamento de cultura de la Organización de las Naciones Unidas, también conocido como la UNESCO, recuperó el concepto de ‘Las siete maravillas del mundo’. Si de las del pasado solo la Gran Pirámide de Guiza queda en pie, de las modernas solo hay una que esté en América del Norte: Chichén Itzá, que significa “la ciudad al borde del pozo de los Itzáes”, situada en la península mexicana de Yucatán.

Es probable que cuando alguien piense en la Riviera Maya lo primero que le venga a la cabeza sean las playas, el buceo, las tortugas, Playa del Carmen o Puerto Morelos. Pero la cultura y la arqueología son otros dos vectores que atraviesan este rincón al este de México. Si se miran los datos, de toda la inmensidad de pirámides y yacimientos que jalonan el país, Chichén Itzá es el segundo en visitantes tras Teotihuacán, situado cerca de la ciudad de México.

Pero cuando se visitan estas ruinas debe tenerse claro que no muestran todo lo que saben. Así, el viajero puede maravillarse ante la visión de la pirámide/castillo de Kukulkán, el edificio principal del complejo de Chichén Itzá. Ver su enormidad y grandiosidad, apreciar la arquitectura. Incluso si se ha preparado antes la visita, el visitante puede saber que su simetría representa el calendario maya: sus 18 cuerpos corresponden a los 18 meses de 20 días en los que dividían el año, como lo hacen sus 365 escalones.

THE SECRET OF THE PYRAMID In 2007, the cultural arm of the United Nations, known as UNESCO, brought back the concept of ‘The Seven Wonders of the World.” If among those seven past wonders there’s only one standing, the Pyramid of Giza, among the modern wonders there’s only one in North America: Chichén Itzá. Its name means “the city on the mouth of the well of the Itzáes” and it’s located on the Yucatan Peninsula in Mexico.

It’s possible that when someone thinks about the Riviera Maya the first thing that comes to mind are the beaches, scuba diving, sea turtles, Playa del Carmen or Puerto Morelos. But culture and archaeology are two other key factors in this corner of Mexico. Of the many pyramids and ancient remains throughout the country, Chichén Itzá is the second most-visited after Teotihuacán, which is near Mexico City.

But when visiting these ruins we should be aware that they don’t reveal everything they know. A traveller can marvel at the sight of the Kukulkán pyramid/castle, the principal building at Chichén Itzá: see its enormity and grandeur, appreciate its architecture.

Como cuentan los arqueólogos Ismael Arturo Montero García, Jesús Galindo Trejo y David Wood Cano en su texto Un monumento al tiempo, publicado en la revista Arqueología Mexicana, se conjetura, estudiando los restos, que fue a finales del primer milenio después del nacimiento de Cristo cuando la ciudad de Chichén Itzá alcanzó su máximo apogeo.

El núcleo, la estructura con mayor volumen físico y simbólico, es el castillo de Kukulkán, construido en la intersección de cuatro cenotes. Según la RAE, un cenote es un “depósito de agua manantial que se halla en el estado mexicano de Yucatán y otras partes de América, generalmente a alguna profundidad”. Su entrada está al norte, donde aún se pueden reconocer dos columnas con forma de serpiente emplumada. En el interior, donde los arqueólogos encontraron restos de ricas ofrendas, hay un altar rojo con forma de jaguar, uno de los animales sagrados de esta civilización.

Sagrado no por ser considerado un dios, sino como símbolo de deidades que adquirían sus características.

El nombre del castillo, Kukulkán, puede traducirse en maya yucateco como “Serpiente de Plumas”, una de los dioses principales del panteón maya, con grandes similitudes con el Quetzalcóatl azteca. Representa a un conquistador mítico que llega del oeste y un dios civilizador que regala el calendario a la humanidad.

Nevertheless, there are other secrets, as explained by archaeologists Ismael Arturo Montero García, Jesús Galindo Trejo and David Wood Cano in their article Un monumento al tiempo, published in the magazine Arqueología Mexicana. Studying the remains, they venture that it was at the end of the first millennium AD that the city of Chichén Itzá achieved its greatest glory.

The nucleus –the structure with the greatest physical and symbolic volume– is Kukulkán castle, built at the intersection of four cenotes, or natural wells. According to the dictionary of the Spanish Royal Academy, a cenote is a “deposit of spring water found in Mexican state of Yucatán and other parts of America, generally at a certain depth.” The entrance to Kulkukán is to the north, where it is still possible to recognise two columns with the shape of a plumed serpent. In the interior, where archaeologists found the remains of rich offerings, there is a red altar in the shape of a jaguar, one of the sacred animals in this civilisation. Sacred not because it was considered a god but as a symbol of deities that acquired its characteristics.

The name of the castle, Kukulkán, was the equivalent in the Yucatan Mayan language of “Plumed Serpent,” one of the principal gods in the Mayan pantheon, with great similarities to the Quetzalcóatl of the Aztecs. It represents a mythic conqueror who comes from the west and a civilising god that gives humanity the gift of the calendar.

Laut der Königlich Spanischen Akademie (RAE) ist ein Cenote ein „Quellwasserreservoir, das im mexikanischen Bundesstaat Yucatán und anderen Teilen Amerikas meist in einer bestimmten Tiefe gefunden wird.“ Der Eingang liegt im Norden und dort sind noch zwei Säulen in Form einer gefiederten Schlange zu erkennen. Im Inneren, wo die Archäologen Überreste reicher Opfergaben fanden, befindet sich ein roter Altar in Form eines Jaguars, eines der heiligen Tiere dieser Zivilisation. Der heilige Jaguar galt nicht als Gott, sondern als Symbol jener Gottheiten, die seine Eigenschaften erworben haben.

Der Name des Tempels Kukulkan, kann in der Sprache der Maya auf Yucatán als „gefiederte Schlange“ übersetzt werden, und stellt einen der Hauptgötter des Mayapantheons dar, der große Ähnlichkeiten mit dem aztekischen Quetzalcoatl aufweist. Er stellt einen mythischen Eroberer aus dem Westen und einen zivilisierenden Gott dar, welcher der Menschheit den Kalender schenkt.

Während der Tagundnachtgleichen im März und September bildet der Schatten, der von der Haupttreppe herabsteigt, eine Schlange. Bei genauem Hinsehen sind es sieben Dreiecke aus Licht, die den Körper bilden. Diese Zahl wurde nicht zufällig gewählt. „Die sieben Dreiecke deuten auf die Anzahl der im mesoamerikanischen

El uso de la pirámide como calendario tallado en la piedra “era indispensable para sincronizar los ciclos agrícolas con las temporadas de lluvia y sequía” y “estos marcadores de horizonte funcionaban como instrumentos para la sincronización del tiempo”.

Este es solo uno de los secretos que oculta un único monumento de los que hay en Chichén Itzá. Está el Observatorio, la escultura del Chac Mool en el Templo de los Guerreros, el altar del Tzompantli, las canchas de juego de pelota, el cenote sagrado... Cada uno de ellos con sus propios misterios. ¿Lo mejor para desvelarlos? Que un arqueólogo acompañe al visitante desde la costa y le explique todos los secretos.

September, the shadow that comes down from the main staircase forms a serpent. When examined closely, we see seven triangles of light that form a body. The number has not been chosen by chance. “The seven triangles suggest the number of directions recognised in the Mesoamerican world view: the four cardinal ones, the centre, the sky and the underworld,” these archaeologists write.

“Stationed at different angles of the castle, the observers of that time read the apparent movement of the sun through a kind of positional astronomy that was completed with the ingenious play of light and shadows. Using the pyramid as an observatory, they marked the ‘eternal return’ of the sun, which evoked for society events that went beyond human existence in the construction of a period of extended duration.”

The use of the pyramid as a calendar cut in stone “was essential for synchronising agricultural cycles with the seasons of rain and drought” and “these markers on the horizon functioned as instruments for the synchronisation of time.”

That is only one of the secrets hidden in a single monument of the many that exist in Chichén Itzá: the Observatory, the sculpture of Chac Mool in the Temple of the Warriors, the altar of Tzompantli, the field for ball games, the sacred cenote... Each one of them with its own mysteries. The best way to reveal them? An archaeologist should accompany the visitor from the coast and explain all these secrets.

Dann gibt es noch das Observatorium, die Steinplastiken von Chak Mo’ol im Tempel der Krieger, den TzompantliAltar, die Ballspielplätze, das heilige Cenote... ué tal si empezamos esta historia con un secreto, una curiosidad de esas que hacen todavía más mágico este lugar?

“Justo después de la Segunda Guerra Mundial, Cinecittà se convirtió en el hogar de aquellos que perdieron sus viviendas debido a los ataques con bombas. Muchos de ellos encontraron trabajo en los estudios, haciendo de extras.

Federico Fellini fue uno de los directores más importantes que eligió actores de fondo, extras”, nos revelan desde la oficina de prensa de la denominada fábrica de sueños.

“Y, como tantas personas, Fellini también eligió Cinecittà como su segundo hogar. En el Teatro Nº5, su favorito, tenía una especie de casita construida al costado del propio teatro, en el espacio dedicado a oficinas y vestuarios. Solía quedarse allí todos los días para reuniones, lluvias de ideas o simplemente para encontrarse con amigos.

Le encantaba decir ‘Vivo en Vía Tuscolana, 1055’, que es la dirección real de los estudios”, apuntan. A tan solo unos diez kilómetros del centro de Roma, este inmenso y legendario plató ofrece un viaje nostálgico y memorable por la historia del cine.

Vayamos con datos que convierten Cinecittà en la gran industria europea del séptimo arte. ¿Sabíais que aquí se gestaron verdaderas obras maestras de la filmografía italiana y mundial desde finales de los años 30? ¿Y que sus instalaciones ocupan más de 400.000 m²? ¿Y que fue aquí donde rodó Martin Scorsese la ambiciosa Gangs of New York, recreando el barrio neoyorquino de Five Points en unos cuatro kilómetros cuadrados? Esta fábrica de sueños irradia creatividad y regala anécdotas a cada paso.

IN THE DREAM FACTORY What if we begin this story with a secret, one of those curiosities that make this place even more magical?

“Right after the Second World War, Cinecittà turned into a home for those people who had lost their homes because of the bombing attacks.

Many of them found work in the studios as extras in films. Federico Fellini was one of the most important directors, one who chose actors for the background, the extras,” we are told in the press office of what has been called the dream factory. “And like so many other people, Fellini also chose Cinecittà as his second home.

At Theatre Nº5, his favourite, he had a kind of little house built alongside the theatre, in the space meant for the office and wardrobe departments.

He used to go there every day for meetings, brainstorming sessions, or just to be with his friends. He loved to say ‘I live at Vía Tuscolana 1055,’ which is the address of the studios,” they add. Located some ten kilometres from the centre of Rome, this immense, legendary film studio provides a nostalgic, memorable trip through cinema history.

Nur etwa zehn Kilometer vom Zentrum Roms entfernt, bietet diese riesige und legendäre Anlage eine nostalgische und unvergessliche Reise durch die Geschichte des Kinos.

Schauen wir uns die Daten an, die Cinecittà zur großartigen europäischen Industrie der Filmkunst machen. Wussten Sie, dass hier seit Ende der 1930er Jahre wahre Meisterwerke des italienischen und internationalen Kinos entstanden?

Así, desde 2011, esta iniciativa cultural pretende mostrar el ingente patrimonio histórico y arquitectónico de estos míticos estudios y compartir rutas, escenarios, misterios, chascarrillos e información de películas cuyas claquetas sonaron aquí, cerca de la Ciudad Eterna. Y para la eternidad quedaron algunos fotogramas de este enclave al que acuden miles de turistas a lo largo del año. “Personas de diferentes países como Estados Unidos, Rusia, América Latina, Francia y España”, indican desde la oficina de prensa de Cinecittà.

Seguro que haber albergado el rodaje de más de 3.000 películas, con 90 nominaciones al Óscar y medio centenar de filmes ganadores es un reclamo casi imbatible.

Aquel propósito originario de “transformar los sueños en realidad” cuenta con evidencias: ¿os suenan títulos como Ben-Hur, Cleopatra, La Dolce Vita, Vacaciones en Roma, Quo Vadis? ¿El paciente inglés, Misión imposible 3 o Roma, la serie de HBO? En abril de 2017, el paraíso del celuloide fundado en 1937 celebró su 80º cumpleaños y la fiesta fue un homenaje a tantos oficios que conforman el cine. Porque Cinecittà ha disfrutado del talento de productores y directores de culto, intérpretes de imperecedero legado, pero también del esfuerzo de los decoradores, diseñadores de vestuario, maquilladores, técnicos y todo el equipo que mueve las luces, las cámaras y la acción. Sin duda, esta suerte de Hollywood del viejo continente supone un atractivo símbolo de excelencia italiana. No en vano, y volvemos al maestro, Federico Fellini contó que la primera vez que escuchó el nombre de Cinecittà sintió que se convertiría en una parte fundamental de su vida. “El lugar en el que me

hatched real masterpieces of Italian and world film starting in the end of the 1930s? And that it occupies more than 400,000 square metres?

And that it was here that Martin Scorsese shot his ambitious Gangs of New York, recreating the Five Points neighbourhood of New York in some four square kilometres? The dream factory radiates creativity and throws up anecdotes at every step.

And yes, it’s possible to visit. And let nobody forget the name of its permanent exhibition: Cinecittà Shows Off. Or the website to get tickets: cinecittasimostra. it. Since 2011 an effort has been made to show the vast historical and architectural resources of these mythic studios and to share routes, settings, mysteries, gossip and information about films whose clapperboards clicked here, close to the Eternal City. Equally eternal are some of the photos of this enclave, which is visited by thousands of tourists throughout the year. “People from different places like the United States, Russia, Latin America, France and Spain,” we are told at Cinecittà’s press office. The attraction is unique: more than 3,000 movies have been shot here, films that earned 90 Oscar nominations and won some 50. That original aim to “transform dreams into reality” can be seen in such titles as Ben-Hur, Cleopatra, La Dolce Vita, Roman Holiday, Quo Vadis, The English Patient, Mission Impossible 3 and the HBO series Rome.

In April of 2017 this celluloid paradise marked its eightieth birthday, and the party was a celebration of all those trades that go to make up cinema. Because Cinecittà has enjoyed the talent of cult producers and directors, actors and actresses who have left a timeless legacy, and a long line of set decorators, costume designers, makeup artists, technicians and all the other crew members who provide the classic “lights, camera, action.” This Old World version of Hollywood is also a symbol of Italian excellence, as seen in Cinecittà Shows Off. While we won’t ruin the visit by providing too much detail, the exhibit reproduces the different phases of creating a film: the laborious and minute gearing of any recording process that underlies the star turns and every moment of what we see on the screen. Fellini said that the first time he heard the name Cinecittà he felt that it would become an essential part of his life. “The place I would have liked to live. A city of actresses, divas, a surprising new dimension, an impressive dream!”, he said.

And this dream factory, whose greatest years were after the Second World War and in the 1970s, continues to create stories “to honour its tradition as the second most important production centre after Hollywood,” as the Italian Tourism Board puts it. “It continues to receive different influences, combining creative trends from fashion, music and art and exhibiting them in fashion shows, photographic sessions, music videos and artistic installations,” they add. Since July of 2017, the Luce-Cinecittà Institute (cinecitta.com), a public company whose main stockholder is the Ministry of Culture, manages the post-production studios and laboratories. Its large audio-visual collection has been listed by the UNESCO Memory of the World Register. And all over the world the name Cinecittà means the same: cinema. At this factory of dreams they remind us that in a country like Italy –the cradle of art, culture, cuisine and magnificent landscapes– “Cinecittà is yet another legendary legacy and a great patrimony of beauty and imagination.” Now we have only to go on travelling and write our own script, with a stop at Vía Tuscolana 1055. ¡Cut!

Und wie für die Ewigkeit gemacht, sind auch einige Aufnahmen dieser Enklave, in die jedes Jahr Tausende Touristen kommen. „Menschen aus verschiedenen Ländern wie den USA, Russland, Lateinamerika, Frankreich und Spanien", erzählt man uns seitens der Pressestelle von Cinecittà. Unschlagbar ist, dass die Anlage Drehaufnahmen von mehr als 3.000 Filmen, 90 Oscar-Nominierungen und 50 Gewinnerfilmen für sich beansprucht. Das ursprüngliche Ziel, „Träume in die Realität umzusetzen“ wird an Filmtiteln, wie Ben Hur, Cleopatra, Das süße Leben, Ein Herz und eine Krone, Quo Vadis? Der englische Patient, Mission Impossible 3 oder an der HBO-Serie Rom deutlich.

Im April 2017 feierte das 1937 gegründete Zelluloidparadies seinen 80. Geburtstag. Das Festival war gleichzeitig eine Hommage an die vielen Berufe des Kinos, weil Cinecittà sich des Talents von Kultproduzenten und Regisseuren, Schauspielern, die ein zeitloses Erbe hinterließen, aber auch der Bemühungen der Dekorateure, Kostümbildner, Maskenbildner, Techniker und des ganzen Teams, das sich um Licht, Kamera und Action kümmert, erfreuen konnte. Zweifellos ist das Glück dieses Hollywood des alten Kontinents ein attraktives Symbol für italienische Exzellenz. Diese findet sich in der Ausstellung Cinecittà Shows Off, in der die verschiedenen Phasen des Filmemachens wiedergegeben werden - wir werden nicht weiter ins Detail gehen, um die Vorfreude auf den Besuch nicht zu verderben. Es ist der mühsame Prozess jeder Aufnahme, die akribische Ausstattung, die der Helligkeit der Sterne zugrunde liegt und die jeden einzelnen Moment einfängt, den wir auf dem Bildschirm sehen. Nicht umsonst, wir kehren an dieser Stelle zum Meister zurück, sagte Federico Fellini, dass er, als er zum ersten Mal den Namen Cinecittà hörte, wusste, dass diese zu einem grundlegenden Bestandteil seines Lebens werden würde. „Es ist der Ort, an dem ich gerne gelebt hätte. Eine Stadt der Schauspielerinnen, der Diven,

eine überraschend neue Dimension, ein beeindruckender Traum!“ sagte er.

Und diese Traumfabrik, die nach dem Zweiten Weltkrieg und in den 70er Jahren ihren Glanz erlebte, schafft auch heute noch Geschichten, „die ihre Tradition als zweitwichtigstes Produktionszentrum nach Hollywood würdigen“, wird auf der offiziellen Webseite des italienischen Fremdenverkehrs betont. „Sie wird weiterhin von verschiedenen Einflüssen geprägt, die kreative Trends aus Mode, Musik und Kunst miteinander verbinden und ihr in Modenschauen, Fotoshootings, Musikvideos und Kunstinstallationen Raum geben", wird ergänzt. Seit Juli 2017 leitet das Istituto Luce Cinecittà (cinecitta.com), ein staatliches Unternehmen, dessen Hauptaktionär das Kulturministerium ist, die Studios und Labore für die Nachbearbeitung. Seine umfangreiche audiovisuelle Sammlung wurde von der UNESCO in die Liste des Weltdokumentenerbes eingetragen.

Und überall auf der Welt bedeutet das Wort Cinecittà dasselbe: Kino. In der Traumfabrik werden wir daran erinnert, dass in einem Land, wie Italien – die Wiege der Kunst, Kultur, Gastronomie und der wunderbaren Landschaften – „Cinecittà ein weiteres legendäres Erbe und großes Vermächtnis von Schönheit und Fantasie ist.“ Jetzt brauchen wir nur noch weiterreisen und unser eigenes Drehbuch mit einem Aufenthalt in der Via Tuscolana 1055 schreiben. ás allá de la India y Bangladesh, se dice que la mejor comida india se encuentra en el distrito de Brick Lane, en Londres.

Pero, ojo: en las Canarias no le van a la zaga. Solo hay que seguir el aroma de curry y cúrcuma hasta el H10 Conquistador, en Playa de las Américas, y específicamente hasta su Restaurante Senses, donde cada 15 días las cenas son un homenaje a la cultura y gastronomía oriental.

Al frente de su cocina está el chef jerezano Francisco Delgado, un tipo fascinado con todo lo que tenga que ver con ingredientes, fogones, cucharones y creatividad.

La pasión por la cocina le llegó cuando terminó el colegio. Aquel joven quería perder de vista a los profesores casi tanto como los profesores querían perderle de vista de él, pero ignoraba qué dirección tomar. Hasta que probó con la cocina. “En el momento en que encuentras una motivación, cambias el chip por completo”, reconoce. Tras dos años de

Oriental recipes with a touch of Jerez Outside of India and Bangladesh, it’s said that the best Indian food is to be found in the Brick Lane district of London. But be careful: they’re not far behind in the Canary Islands. You only have to follow the aroma of curry and curcuma to the H10 Conquistador, on Playa de las Américas, and more specifically to its Senses Restaurant, where every two weeks the dinners pay homage to oriental culture and cuisine.

The head chef is Francisco Delgado, a native of Jerez in mainland Spain who has fallen under the spell of everything having to do with ingredients, ovens, ladles and creativity.

His passion for cooking began when he finished school. This young man wanted to be done with teachers almost as much as they wanted to be done with him, but he didn’t know what direction to take. Until he tried cooking. “The moment you find

trabajo intensivo en La Cónsula, la Escuela de Hostelería de Málaga, Francisco se gradúa número uno de su promoción y empieza una singladura que le lleva a Burdeos y de ahí a Tenerife, donde llegó “para cambiar de aires, para ver cosas”, y se quedó hasta hoy: 20 años en la isla, seis como jefe de cocina del H10 Conquistador, y las mismas ganas de exprimir la creatividad.

Fue, precisamente, esa apuesta por la creatividad la que le llevó a la gastronomía india. “Tenemos muchos huéspedes británicos, sabemos que es una cocina que gusta mucho, así que nos adaptamos a eso y fuimos dándole forma a la idea”. Con la ayuda de un chef indio de Birmingham, Francisco y su equipo –61 personas a su cargo y cuatro restaurantes diferentes– afrontaron el reto de traer a Tenerife un trocito de Oriente.

Estas gyozas rellenas de gambas, ajetes y una salsa de chile dulce es el plato entrante de una velada que bebe de una cocina tremendamente sensorial y, sobre todo, de la pasión por la gastronomía de un chef que nunca dice no a los retos creativos: “Nos reunimos, valoramos platos, opinamos, decidimos, hacemos pruebas. Así trabajamos”. Uno intuye que a este jerezano le costaría dos minutos adaptarse a Japón, a China o cualquier cocina de Brick Lane.

After two years of hard work at La Cónsula, the Málaga Hospitality School, Francisco graduated number one in his class and began a career that would take him to Bordeaux, and from there to Tenerife, “for a change of scene and to see things.” And that’s where he’s been ever since: 20 years on the island, six of them as head chef at the H10 Conquistador, where he’s still just as enthusiastic as ever about working with the greatest creativity.

It was precisely that interest in creativity that led him to Indian cuisine. “We have many British guests and we know it’s food that they like a lot, and so we’ve adapted to give shape to that idea.” With the help of an Indian chef from Birmingham, Francisco and his team –61 people under him at four different restaurants– took on the challenge of bringing a piece of the Orient.

These gyozas, or dumplings–stuffed with prawns, young garlic and a sauce of sweet chilli pepper– are the starter for an evening of tremendously sensory cooking and, above all, a reflection of the passion of a chef who never rejects creative challenges: “We get together, we evaluate dishes, we give opinions, we experiment. That’s the way we work.” One has the impression that this native of Jerez could adapt in the blink of an eye to Japan, China or any kitchen on Brick Lane.

Seine Leidenschaft für das Kochen entdeckte er nach dem Schulabschluss. Dieser junge Mann wollte mit Lehrern ebenso wenig zu tun haben, wie sie mit ihm, doch in welche Richtung es gehen sollte, wusste er noch nicht. Bis er es in der Küche versucht hat. „Sobald man eine Motivation findet, schaltet man komplett um“, sagt er. Nach zwei Jahren intensiver Arbeit in La Cónsula, der Schule für Hotellerie und Gastronomie in Málaga, absolvierte Francisco als Klassenbester und begab sich auf die Reise, die ihn nach Bordeaux und von dort nach Teneriffa führte, „um einen Tapetenwechsel zu erfahren und Neues kennenzulernen“.

Bis heute ist er da geblieben: 20 Jahre auf der Insel, sechs Jahre als Chefkoch im H10 Conquistador, und immer noch mit demselben Verlangen, seiner Kreativität Ausdruck zu verleihen.

Genau dieses schöpferische Engagement führte ihn zur indischen Küche. „Wir haben viele britische Gäste und wissen, dass diese Küche bei ihnen sehr beliebt ist, also haben wir uns darauf eingestellt und diese Idee entwickelt.“ Mit der Hilfe eines indischen Küchenchefs aus Birmingham stellten sich Francisco und sein Team – seine 61 Mitarbeiter in vier verschiedenen Restaurants - der Herausforderung, ein kleines Stückchen Orient nach Teneriffa zu bringen.

Diese Gyozas – oder auch Teigtaschen – gefüllt mit Garnelen, Sommerknoblauch und einer süßen Chilisauce, bilden die Vorspeise für einen Abend, der aus einer ungeheuer sinnlichen Küche und vor allem aus der Leidenschaft für die Gastronomie eines Küchenchefs besteht, der niemals kreative Herausforderungen ablehnt: „Wir treffen uns, kosten Gerichte, beurteilen, entscheiden und experimentieren. So arbeiten wir.“ Man hat den Eindruck, dass sich der gebürtige Jerezano im Handumdrehen an Japan, China oder jede Küche in der Brick Lane anpassen könnte.

ZUBEREITUNG

Para elaborar la masa, ponemos a calentar el agua hasta que hierva.

Disolvemos la sal y mezclamos en un bol con la harina hasta conseguir una bola. Amasamos durante diez minutos, dividimos la masa en unos 20 trozos, los enharinamos y estiramos con rodillo hasta conseguir 20 obleas.

Para el relleno, picamos finamente la cebolla, el ajo, el puerro y los ajetes. Lo pochamos con aceite de oliva y añadimos la pasta de jengibre y las gambas peladas y troceadas. Salteamos la mezcla y añadimos la salsa de soja.

Reservamos.

Rellenamos las gyozas mojando con agua los bordes para su posterior pegado. Una vez cerradas todas, se cuecen al vapor.

Por otra parte, calentamos agua con vinagre y azúcar. Se añade chile, jengibre y ajo, y dejamos cocer unos cinco minutos. Ligamos todo con la Maizena y dejamos enfriar. Con esta salsa pintaremos el plato y dispondremos las gyozas por encima. Rematamos con una decoración a base de germinados.

Für die Füllung Zwiebel, Knoblauch, Porree und Sommerknoblauch fein hacken. Mit Olivenöl abschmecken und die Ingwerpaste sowie die geschälten und gehackten Garnelen dazugeben. Die

Mischung anbraten und die Sojasauce hinzufügen. Beiseite stellen.

Die Gyozas füllen und die Ränder mit Wasser befeuchten, um sie besser verkleben zu können. Sobald alle versiegelt sind, werden sie gedämpft.

Nun etwas Wasser mit Essig und Zucker erhitzen. Chili, Ingwer und Knoblauch zugeben und ca. fünf Minuten köcheln lassen. Alles mit der Maisstärke vermischen und abkühlen lassen. Den Teller mit der Sauce verzieren und die Gyozas darauf legen. Anschließend mit Sprossen dekorieren.

PREPARATION To prepare the dough, first bring the water to a boil. Dissolve the salt and mix it in a bowl with the flour until achieving a ball. Knead it for ten minutes, then divide the dough into 20 pieces. Powder them with flour and then stretch them with a roller until getting 20 wafer-thin slices.

For the stuffing, chop up the onion, the garlic, the leek and the young garlic very small. Poach it with the olive oil and add the ginger pasta and the peeled and cut-up prawns. Sauté this mixture and add the soy sauce. Put aside.

Stuff the gyozas, moistening the edges with water so that they can then be stuck together. Once they are all sealed, they are steamed.

Heat the water with vinegar and sugar. Add the chilli pepper, ginger and garlic, cook for some five minutes in the cornstarch and let it cool. With this sauce we will decorate the dish and then place the gyozas on top.

Finish off with a decoration of sprouts.

stamos ante una suerte de ciudad dentro de otra. Porque Camden Town es otro Londres, un universo propio, un rara avis situado al norte de la urbe. Este símbolo del bullicio, la creatividad, la jarana y el eclecticismo cuenta con uno de los mercados más pintorescos del planeta y se erige en la capital del rock alternativo del Reino Unido.

Seguramente muchos recordarán a la talentosa y polémica cantante Amy Winehouse, una de sus vecinas más icónicas y a quien han levantado una estatua en su honor en el corazón de Camden. Sí, este barrio brinda y propone definitivamente otra manera de vivir.

Y conviene subrayar que aquí también brota una gran oferta cultural, artística y de ocio. Para muestra, varios botones: The Roundhouse Theatre, estupendo auditorio que otrora fue un almacén ferroviario; The British Library, la biblioteca nacional, donde están las copias de todos los libros que se publican en Reino Unido e Irlanda y donde se encuentran curiosidades como algunos manuscritos de Los Beatles; el Cementerio de Highgate, una visita diferente a un hermoso camposanto con algunos misterios no aptos para todos los públicos y tumbas tan trascendentales como la de Karl Marx; la St. Pancras Old Church, una bonita iglesia con solera reconstruida en la época victoriana; o el Zoo de Londres, el segundo más antiguo del mundo.

Ihr zu Ehren wurde eine Statue im Herzen von Camden errichtet. Ja, diese Nachbarschaft verfolgt und führt eine definitiv ganz andere Lebensweise.

Hervorzuheben ist, dass es hier ein breites Angebot an Kultur-, Kunstund Freizeitaktivitäten gibt. Ein paar Beispiele: Das Roundhouse Theatre, ein wunderbares Auditorium, das einst ein Eisenbahnlager war; die British Library, die Nationalbibliothek, die Kopien aller in Großbritannien und Irland erschienenen Bücher beinhaltet und wo sich Kuriositäten, wie einige der Manuskripte der Beatles, auffinden lassen; weiterhin der Highgate Friedhof, eine Besichtigung der etwas anderen Art auf einem schönen Friedhof, der einige Geheimnisse verbirgt, die jedoch nicht für alle Besucher geeignet sind, und bedeutende Grabstätten, wie die von Karl Marx, beherbergt; St. Pancras Old Church, eine schöne Kirche, die im viktorianischen Zeitalter wiederaufgebaut wurde, oder der Londoner Zoo, der zweitälteste Tierpark der Welt. La gente simplemente disfruta y vive el ambiente”, apunta antes de recalcar que “en Camdem no te sientes un extraño, no hay diferencias entre ser de allí o de fuera, turista o viajero, niño bueno o punki de vuelta de todo”. La magia de esta zona emblemática de Londres reside en que, dentro de su heterodoxia, nada chirría. De alguna manera, la extravagancia irradia una peculiar armonía y lo extraño se convierte prácticamente en norma. Aquí cualquier persona es bienvenida.

La convivencia se enriquece con perfiles muy diferentes, proliferan los contrastes y lo insólito es marca de la casa. La periodista española Loreto Hernández, guía turística desde hace una década con parte de su trayectoria en Londres y Escocia, sugiere una hoja de ruta infalible: “Vamos en metro a Camden Town Station a media mañana y comenzamos la incursión por Camden High Street, cámara en mano, para inmortalizar las fachadas más curiosas de la ciudad”. A continuación, parada obligada y siempre asombrosa: “Llegamos sin prisa ninguna a Camden Market, que abre cada día, y aprovechamos para comer algo en los food trucks o camiones de comida que hay siempre en las plazas del mercado. Si hace sol, ya de por sí será un regalo y merece la pena aprovecharlo en la orilla del río, en Regent’s Canal”. Highgate Cemetery, a different kind of a place with some mysteries not suitable for every audience but including such important tombs as that of Karl Marx; the St. Pancras Old Church, a lovely temple built in the Victorian period; and the London Zoo, the second oldest in the world. In other words, Camden is more than just its universal market. It’s an essential stopping point in London, almost an existential philosophy.

Of course the perfect plan would be to visit its market. Open since 1974, and with more than a thousand different shops, Camden Market is a heterogeneous community of eminently creative salespeople, with their unique street stalls selling food and its independent establishments next to the Regent’s Canal.

Its extravagance somehow gives off a peculiar harmony and what’s strange becomes almost the norm. Everyone is welcome here.

Harmony is enriched because there are so many different people and contrasts: the trademark of the place is the unusual. Hernández, who has been a tourist guide for a decade, partly in London and Scotland, proposes an infallible route: “In midmorning travel by the Underground to Camden Town Station and walk along Camden High Street, camera in hand, to photograph some of the city’s most curious building fronts.” Then an obligatory stop that never fails to surprise: “Camden Market opens every day, and we can eat something off one of the many food trucks that are always parked in the market’s squares.

If it’s sunny, that’s a real treat, and we’ll have to take advantage of it on the banks of the Regent’s Canal.” She then encourages travellers to soak up the spirit of Camden by walking along “the streets by the old stables that are now the market, with its shops for all tastes and urban tribes.” And to end off this varied exercise in shopping and snacking, she recommends visiting the famous Cyberdog clothing store, “maybe the most futuristic place here.”

And how about ending the day with a coffee or a piña colada at the sidewalk table of one of the Latino restaurants on Inverness Street? The options are infinite, as attested to by the fact that some 5 million people visit Camden Town every year.

ay casi un tipo de queso para cada persona. Desde los más delicados hasta los que rascan la garganta gracias al paso del tiempo. Con la importación desde otros extremos del globo, conocemos sabores que antes no tenían cabida en nuestro paladar.

El ejemplo que tratamos aquí, sin embargo, no viene de un remoto condado, aunque a veces aparezca en el barullo del súper como un caso más de exotismo culinario.

Hablamos del queso majorero, procedente de Fuerteventura, que goza de una tradición milenaria y un sabor característico e irrepetible.

Hasta a los entendidos les cuesta describirlo.

Vayamos primero a la teoría.

Este derivado lácteo se fraguó hace 2.000 años en esta isla canaria, según las crónicas de aquel entonces a las que alude Rosa González, técnica de la Denominación de Origen Protegida Queso Majorero.

“Se deja constancia en los relatos de bretones y normandos de la excelente calidad de los quesos y del elevado número de cabras existentes –entre 50.000 y 60.000– en la isla, superior a la de cualquier otra del Archipiélago”, destaca.

Debido a su abundancia y sus propiedades, el queso servía de alimento principal para los habitantes, conocidos como ‘majoreros’ por su calzado. “El gentilicio se debe a las ‘mahos’ o ‘majos’, un tipo de sandalias de piel de cabra sin curtir, con el pelo hacia fuera, atadas por unas tiras de cuero que protegían el tobillo y el empeine y que usaban los campesinos”, apunta Rosa González. “Tal apodo alcanzó al resto de habitantes de la Isla o a sus productos: lentejas, garbanzos, chícharos, gofio y, sobre todo, al queso”.

THE CHEESE WITH A CHARACTERISTIC, INDESCRIBABLE TOUCH There’s almost a different kind of cheese for each person. From the most delicate ones to those that, through their long curing process, almost seem to scrape the throat. And with imports from other points around the globe, we’re beginning to sample previously unknown flavours. But the present example doesn’t come from some remote county (although at times it can appear in a busy supermarket as one more culinary exoticism). We’re talking about Majorero cheese, from the island of Fuerteventura, and which has an ancient tradition and a unique, unrepeatable flavour. Even cheese experts have trouble describing it.

But first the theory. As explained by Rosa González, a technician with the Denominación de Origen Protegida Queso Majorero, this dairy product began some 2,000 years ago on Fuerteventura, according to chronicles of the time. “There are accounts

by Bretons and Normans about the excellence of the cheeses and the great number of goats –between 50,000 and 60,000– on the island, more than on any other island in the Canaries archipelago,” she notes.

Owing to its abundance and properties, this cheese was a principal source of food for the island’s inhabitants, called majoreros because of

Von den Zartesten bis hin zu denjenigen, die dank der langen Reifezeit schon an der Kehle kratzen. Durch den Import aus anderen Teilen der Welt lernen wir Geschmacksrichtungen kennen, die unser Gaumen vorher nicht kannte. Das Beispiel, um das es hier geht, stammt jedoch nicht aus einem weit entfernten Land, obwohl es manchmal im Trubel des Supermarkts als ein weiterer Fall von kulinarischer Exotik erscheint. Es handelt sich um den Queso Majorero, einen Käse aus Fuerteventura, der eine tausendjährige Tradition hat und über einen charakteristischen sowie unverwechselbaren Geschmack verfügt.

Selbst Kenner haben es schwer, diesen zu beschreiben.

Zunächst ein wenig Theorie. Dieses Milchprodukt wurde vor 2.000 Jahren auf dieser Kanarischen Insel hergestellt, so lautet es in den Chroniken der Zeit, auf die Rosa González, technische Mitarbeiterin bei der Denominación de Origen Protegida Queso Majorero (geschützte Ursprungsbezeichnung des Käses aus Fuerteventura), verweist. „In bretonischen und normannischen Berichten sind die ausgezeichnete Qualität der Käsesorten und die hohe Anzahl der Ziegen auf der Insel - zwischen 50.000 und 60.000 - verzeichnet, die höher ist, als jede andere auf dem Kanarischen Archipel“, betont sie.

Wegen seiner Reichhaltigkeit und seiner Eigenschaften diente der Käse als Hauptnahrungsmittel für die Bewohner, die wegen ihrer Schuhe als ‘Majoreros’ bekannt waren. „Der Grund dafür sind die ‚Mahos’ oder auch ‚Majos’, eine Art ungegerbte Ziegenledersandalen, deren Haare nach außen zeigen, mit Lederriemen, die Knöchel und Spann schützen und von den Bauern getragen werden“, sagt Rosa González. „So übertrug

Patricia Baquero, responsable del Museo del Queso Majorero, añade que estos vecinos habían heredado el conocimiento de la tradición bereber norteafricana, haciendo de la ganadería caprina la principal actividad económica.

“El queso era algo básico y se convirtió en la mejor forma de conservar los excedentes de producción de leche”, cuenta, subrayando que así se sobrellevaban los periodos de hambruna y que esa relación prehistórica de las cabras y el ser humano ha forjado la identidad de la isla.

El arraigo era tan fuerte como la lucha que han mantenido los defensores del queso majorero para que fuera reconocido con el sello de Denominación de Origen.

“Con los años ha ido ganando su merecido prestigio”, recupera González, “aunque inicialmente se extendía a un espacio geográfico de comercialización limitado”.

El esfuerzo por ampliar su alcance dio un salto cuando, en 1996, el Ministerio de Agricultura, Pesca, Ganadería y Alimentación le otorgó el título deseado, siendo el primer queso de las Islas Canarias en lograrlo y el primero elaborado a partir de leche de cabra en recibirlo en España. “Había muchas personas

the shoes they wore. “The name comes from the mahos or majos, a kind of sandals made from uncured goatskin, with the hair showing outward, that were tied with some leather cords. They protected the heel and the arch and were worn by the local fieldworkers,” says Rosa González. “So the nickname stuck, not only for all the residents of the island but for their products: lentils, chickpeas, peas, gofio and, above all, the cheese.”

Patricia Baquero, responsible for the Majorero Cheese Museum, adds that these people had inherited their knowledge about cheese from the Berber traditions of North Africa, enabling them to make goat-raising their main economic activity. “Cheese was something basic, and became the main way to use excess milk production,” she says, stressing that in this way it was possible to survive periods of famine, and that this prehistoric relationship between goats and humans has helped forge the identity of the island.

The spread of this industry was reflected in the struggle by the defenders of Majorero cheese to have it recognised with its own Designation of Origin seal. “Over the years this cheese has gained a well-merited prestige,” adds González, “although initially it was limited to a small sales area.”

Es war der beste Weg, um Überschüsse aus der Milchproduktion zu konservieren“, sagt sie und betont, dass auf diese Art und Weise Hungerperioden überwunden werden konnten und dass diese prähistorische Beziehung zwischen Ziegen und Menschen die Identität der Insel geprägt hat.

Die Verwurzelung war so stark wie der Kampf der Verteidiger des Käses um seine Anerkennung durch das Siegel der Herkunftsbezeichnung. „Im Laufe der Jahre hat er sein wohlverdientes Ansehen erlangt“, äußert González, „obwohl es sich zunächst nur auf ein begrenztes geografisches Gebiet der Kommerzialisierung erstreckte.“ Die Bemühungen, die Reichweite zu vergrößern, haben sich schließlich gelohnt, als das Spanische Ministerium für Landwirtschaft, Fischerei, Viehzucht und Ernährung dem Queso Majorero 1996 als erstem Käse der Kanarischen Inseln – und erstem Käse aus Ziegenmilch in Spanien – das

Ahora toca lo importante: el sabor. Desde el Museo del Queso Majorero, Patricia Baquero lo sintetiza en unos pocos adjetivos: “El del queso majorero es equilibrado e intenso con característico sabor a leche de cabra. En algunos quesos, ligeramente acídulo. Y deja un regusto de continuidad, persistente y pronunciado”. “Su masa al corte parece compacta y de textura cremosa”, concreta. Para González, la explicación deviene en algo más científico: “Es un queso graso, de pasta prensada y coagulación enzimática, elaborado con leche cruda o pasteurizada de cabra de la raza majorera, con adición eventual, cuando se destine a la maduración, de hasta un máximo de un 15% de leche de oveja canaria”.

Según el tiempo de maduración, indica González, sus “características organolépticas” varían: desde tierno (de 8 a 20 días) a semicurado (de 21 a 60 días) o curado (más de 60 días). “Además, los quesos semicurados y curados se pueden untar con aceite, pimentón o gofio”, anota, mientras continúa: “En los quesos tiernos se puede detectar una ligera acidez, que disminuye a medida que el queso va madurando.

El sabor salado está equilibrado y el amargor no es característico de nuestro queso, aunque en algunos curados pueda percibirse un ligero tono amargo. El sabor y aroma del queso se va intensificando a medida que el queso se afina”.

Por eso, aparte de las neveras de supermercados, el queso majorero es parte esencial de la carta de bares y restaurantes. “Y uno de los mejores acompañantes de ensaladas, pastas, pescado y postres”, afirma González. Desde el museo secundan esta reivindicación y aportan alguna que otra receta, como el carpaccio de atún con queso majorero o los calabacines rellenos.

“Y no es ahumado”, advierten, a pesar de que lo parezca por ese gusto extraño que deja en el paladar y que solo puede expresarse de una manera: probándolo.

“A number of people were interested in this protection for Majorero cheese, and when it finally came along it gave a big boost to the island’s livestock sector,” González recalls.

And now the most important: the taste. From the Majorero Cheese Museum, Patricia Baquero says it succinctly, with a few adjectives: “Majorero cheese has a balanced and intense flavour with the characteristic taste of goat’s milk. In some of these cheeses, it’s slightly acidic. And it leaves a persistent and pronounced aftertaste. It’s compact, with a creamy texture.” For González, the explanation is scientific: “It’s a fatty cheese that’s been pressed, and it has enzymatic coagulation. It’s made from the raw or pasteurized milk of the Majorera goat, to which has been added, when it is ready for maturing, a maximum of 15% of milk from the Canary Island sheep.”

According to the maturation time, says González, the cheese’s “organoleptic characteristics” vary: from soft (from 8 to 20 days) to semicured (from 21 to 60 days) or cured (more than 60 days). “In addition, the semi-cured and cured varieties can be spread with olive oil, paprika or gofio,” she adds. “In the soft cheeses it’s possible to detect a slight acidity, which diminishes as the cheese continues to mature. The salty taste is balanced and our cheeses are not bitter, although in some of the cured ones it’s possible to perceive a slightly bitter tone.

The flavour and aroma of the cheese intensifies as it matures.”

All this is why, apart from being found in supermarkets, Majorero cheese is an essential part of the menus in bars and restaurants. “And it’s one of the best things for accompanying salads, pastas, fish and dessert,” says González. This claim is supported from the museum, which also provides some recipes, such as tuna carpaccio with Majorero cheese, or the stuffed courgette. “And it’s not smoked,” they caution, in spite of what might first be thought because of that curious aftertaste. And it can only be appreciated one way: by trying it.

Patricia Baquero vom Museo del Queso Majorero fasst ihn kurz in einige Adjektive: „Der Majorero-Käse hat einen ausgewogenen und intensiven Geschmack mit einer charakteristischen Ziegenmilchnote. Einige Käsesorten sind leicht säuerlich. Und er hinterlässt einen anhaltenden und ausgeprägten Nachgeschmack. Seine Konsistenz ist kompakt und cremig“, sagt sie.

Für González liegt die Erklärung in etwas Wissenschaftlichem: „Es ist ein fetter Käse, der gepresst ist und eine enzymatische Gerinnung aufweist. Er wird aus roher oder pasteurisierter Ziegenmilch von Tieren der MajoreraRasse hergestellt. Wenn er zur Reifung bestimmt ist, können ihm bis zu 15 Prozent Milch von kanarischen Schafen hinzugefügt werden.“ Je nach Reifezeit, sagt González, variieren seine ‚organoleptischen Eigenschaften’: von ‚tierno’ - weich (8 bis 20 Tage) über ‚semicurado’ - halb gereift (21 bis 60 Tage) bis hin zu ‚curado’ - gereift (mehr als 60 Tage). „Außerdem kann man die halb gereiften und gereiften Käsesorten mit Öl, Paprika oder Gofio bestreichen“, bemerkt sie und fährt fort: „Bei Weichkäse ist ein leichter Säuregehalt zu erkennen, der mit zunehmender Reife abnimmt. Der salzige Geschmack ist ausgewogen und unser Käse ist nicht bitter, obwohl bei einigen gereiften Käsesorten eine leicht bittere Note zu spüren ist. asé la noche en el refugio de alta montaña del Teide cuando tenía 17 años. Desde entonces, y ya hace unos cuantos años, nunca más he visto tantas estrellas juntas.

Tenía la sensación de que estaban más cerca de lo acostumbrado”.

Hi!News H10 Hotels abrirá su primer hotel en Venecia Hace diez años, H10 Hotels abrió su primer hotel en Roma. A finales de 2018, será Venecia la ciudad que acoja su segundo establecimiento en el país alpino: el H10 Palazzo Canova. El establecimiento será un cuatro estrellas superior ubicado en el Gran Canal, a pocos metros del Ponte di Rialto. El proyecto conserva la arquitectura original del edificio y contará con un interiorismo de inspiración veneciana, además de una espectacular terraza en la planta superior.

H10 Hotels will open its first hotel in Venice Ten years ago, H10 Hotels opened its first hotel in Rome. At the end of 2018, Venice will be the city to have its second establishment in Italy: the H10 Palazzo Canova. This will be a four-star superior establishment located on the Grand Canal, just a few metres from the Ponte di Rialto. El hotel está emplazado en un palacio del siglo XVI, a pocos metros de la céntrica Plaza de los Restauradores, que ha sido cuidadosamente restaurado. Conserva su estructura original con grandes alturas, techos artesonados y sus patios y jardines, con un Drago centenario protegido. Contará con 83 habitaciones equipadas con todas las comodidades, un restaurante gastronómico, Cocktail & Wine Bar, dos salones de reuniones y un Despacio Spa at The One con zona de aguas, salas de tratamientos y gimnasio.

It will have 83 rooms with all the conveniences, a gastronomic restaurant, a Cocktail & Wine Bar, two meeting rooms, and a Despacio Spa at The One, with a water area, treatment rooms and a gym.

A finales de 2018 está prevista la apertura del segundo resort de H10 Hotels en la República Dominicana. Se trata del Ocean El Faro, un establecimiento de cinco estrellas situado en primera línea de mar de Uvero Alto, en Punta Cana, que tendrá 909 habitaciones, y un interiorismo inspirado en los antiguos edificios coloniales del país.

At the end of 2018, H10 Hotels is scheduled to open its second resort in the Dominican Republic: the Ocean El Faro, a five-star establishment on the Uvero Alto beach in Punta Cana, will have 909 rooms and some interior decoration inspired by the country’s old colonial buildings.

Für Ende 2018 ist die Eröffnung des zweiten Resorts von H10 Hotels in der Dominikanischen Republik vorgesehen. Es handelt sich um das Ocean El Faro, ein Fünf-Sterne-Haus direkt am Strand von Uvero Alto in Punta Cana mit 909 Zimmern und einer von den alten Kolonialbauten des Landes inspirierten Inneneinrichtung.

El resort contará con un Despacio Spa Centre, bolera, parque acuático, casino, teatro, centro náutico y cuatro salones de reuniones. Su amplia oferta gastronómica estará cubierta con un restaurante principal, nueve restaurantes temáticos, un Mike’s Coffee y una heladería.

El elemento más emblemático del hotel será un faro situado en la playa.

The resort will have a Despacio Spa Centre, a bowling alley, a water park, a casino, a theatre, a sailing centre and four meeting rooms. The wide culinary offer includes a main restaurant, nine themed restaurants, a Mike’s Coffee Shop and an ice cream store.

The hotel’s most emblematic element will be a lighthouse located on the beach.
