Remedy Kombucha Pickled Vegetables

Makes 1 (500-gram) jar

2 medium red onions (or 3 cups of any thinly sliced vegetable such as cucumbers, radishes, carrots, etc.)

1 cup apple cider vinegar

½ tsp salt

½ tsp black peppercorns

¼ tsp mustard seeds

1 cup Remedy Kombucha, flavor of your choice

All you do:

1. Thinly slice red onions or vegetables of choice.

2. Add the apple cider vinegar and salt to a saucepan over medium heat and bring to a simmer.

3. Stir until salt has dissolved. Remove from the heat and add in vegetables, black peppercorns and mustard seeds. Toss all together and allow to cool.

4. Once cooled, add in the Remedy Kombucha and stir through; transfer to jar, packing the onions or other vegetables into the jar tightly. Allow to rest for one hour, then transfer to the fridge to store for up to 4 days.

5. Enjoy your pickled vegetables on their own at the start of a meal to maximize the blood sugar-friendly properties of fiber and vinegar OR enjoy the pickled vegetables on top of dishes such as sandwiches, salads, barbecue meat, tacos, etc.

The Economic Development committee is making some structural changes to our committee. For the remainder of the year, we will be focusing on the following areas: 1.) Creating a landing page that contains economic development information and 2.) Creating in-person event(s) to promote economic development activity within our footprint. The committee will create task forces to help bring these items to fruition.
