Welcome to the very first edition of The Spill! Cheers to a bright start to 2026

We’re proud to introduce a fresh way to stay connected with everything happening across the Full Moon Hotel.

As the hustle and buzz of Christmas and New Year begins to settle, we’re taking a moment to reflect with gratitude. We are immensely proud of our incredible team at the Moon, who each bring warmth, care, and dedication in their own special way - helping create memorable moments for every guest who walked through our doors.

While we’ve had the pleasure of running the pub for over ten years, the Full Moon Hotel (originally Osbourne House) has been making memories for almost 160. We see ourselves as custodians of something much bigger than us, and year after year we’re reminded that with a clear vision, a sense of purpose, shared values,

and the right people around you, anything is possible. Our little pub on the hill is a testament to that, and we’re proud to say it continues to grow from strength to strength.

We’re excited to share what’s ahead in 2026, and this new publication will take you along for the journey.

Each month, we’ll bring you Head Chef Richard’s seasonal creations, highlight our talented live musicians, share upcoming events, showcase red-hot bottleshop specials, and tell the stories of our people and the community that surrounds us.

Bourbon & Lime Pork Tomahawk

Our February Dish of the Month is the 500g Almond-Fed Pork Tomahawk, bourbon and lime seasoned, served on crispy potatoes with caramelised apple and pumpkin sauce and a fresh summer rocket and pecorino salad. This dish is rich, tangy, and vibrant - designed to impress with every bite.

The ORIA Almond-Fed Pork Tomahawk raised in the South Burnett, on a specially milled almond from Kingaroy for a subtle, nutty richness. Cut from the rib end of the loin, this premium pork offers the same dramatic wow factor as a beef tomahawk, making it a feast for both the eyes and the palate.

Pair it with a glass of Monopolio Pinot Grigio - a crisp, vibrant drop with notes of pear, green apple and subtle citrus. Its fresh acidity cuts through the richness of the pork while enhancing the bourbon and lime seasoning, creating a clean, balanced finish that keeps every bite feeling light and moreish.
