MOTSUNABE NIDAIME RAKUTENCHI
Rakutenchi opened in Tenjin in 1977 and now boasts eight locations in Fukuoka. They specialize in motsunabe; a tripe hot pot served with a mountain of fresh chives and cabbage in a secret-recipe soup flavored with garlic and chili peppers. Add any combination of 11 seasonings from jars on the counter (aubergine pepper, black vinegar, wasabi, and more) and make yours a one of a kind! They offer lunch, a rarity among motsunabe shops, using less pungent garlic and serve specialty items like a hot pot using exclusively premium Saga Beef tripe. Finish with champon noodles as the locals do!

모츠나베 니다이메 라쿠텐치
1977년에 텐진에서 시작한 모츠나베 전문점 라 쿠 텐치는 현재 후 쿠오 카 에 8 개 점포를 두고 있다. 이곳 니다이메(‘2대째’를 의미)는 말 그대로 2대째인 미즈타니 씨와 부인 미호 씨가 새로운 컨셉으로 2019년 9월에 오픈한 곳이다. 곱창과 함께 듬뿍 쌓아 올린 부추, 양 배추 등의 채소 가 숨이 죽 을 때까지 푹 끓이면 맛있는 모츠나베가 완성된다. 카운터에 준비된 유즈코쇼, 흑초, 고추냉이 등 11가지 조미료를 입맛에 따라 곁들여 맛보자. 남은 육수에는 짬뽕면 사리를 넣어 마무리하는 것이 후쿠오카식.

Despite its location outside the perimeter of Hakata Station, people flock to Toritori Kenkyudan to enjoy its many signature chicken dishes. The restaurant opened in 2013 with Hakata Jidori, a local brand of free-range chicken, as the centerpiece of the menu. While the main event is the yakitori skewers, the chicken ramen, with soup made from whole chicken carcasses, is very popular. Choose from three varieties: soy sauce, salt, and paitan—a rich, milky white chicken broth for which they’ve discovered the exac t temperature to cook the chicken to reduce aroma and maximize umami. Bowls of ramen also come in half-sizes so you can try more than one flavor in one sitting. To enjoy the menu to the fullest, try some chicken dishes cooked over high-grade Tosa binchotan charcoal from Kochi and then wrap up your meal with a bowl of chicken ramen. 1/7 (Tue.) DAIZENJI ONIYO FIRE FESTIVAL
This 1,600-year-old tsuina (ceremony to exorcise evil spirits) is one of Japan’s three main fire festivals. After being guarded for seven days, the “devil fire” is transferred to six enormous, 13 m torches, which are then carried around the grounds by men in loincloths. It’s good luck if the ash falls on you! 大善寺玉垂宮的鬼夜
被指定為日本無形文化財產的鬼夜火祭有 1600 多年歷史,是三大火 祭慶典之一。直徑寬 1m、總長 13m 的六支巨大營火柱直上天際的 火燄,加上約 400 人圍在其周圍繞行的場景可說是非常壯觀。據說 掉到參觀者身上的大松明營火餘灰可以為信眾防病袪災。

ARITA The Birthplace of Japanese Porcelain
A
rita is the birthplace of porcelain in Japan and since the first porcelain was fired in the early 17th century, the town has flourished as the center of porcelain production in Japan. The porcelain made in and around Arita Town in Saga Prefecture is referred to collectively as Arita ware, but in the early days (1610s~1650s) it was called Imari ware because it was shipped from the port of Imari. Originally it was a thick-bodied porcelain primarily decorated with simple glazing. Around 1643, Sakaida Kakiemon
established a method for colorful glazing. Using various colors, he painted intricate designs directly on the milky white porcelain body. Soon, other potters shifted away from the simple, single-color scheme used until then, and the Kakiemon style became mainstream. The Dutch East India Company began exporting Arita ware to Europe in the 1650s, and there it became a status symbol for the wealthy. After Arita ware was presented at the Paris Exposition in 1867, its popularity grew, and it was featured in several expos held throughout Europe

after that, thereby cementing its reputation abroad. In 1870, German chemists were invited to Arita to teach the potters about Western chemical and industrial processes, after which production was ramped up. Even today, porcelain dishes and artworks are created in the area using a division of labor. The history and culture of Arita ware has received wide recognition as evidenced by the designation of the Izumiyama Quarry ruins as a National Historic Site and the Arita townscape as a Group of Traditional Buildings (a preservation district stipulated by the Agency for Cultural Affairs). These neighborhoods have been home to porcelain kilns since the Edo era. There are many historic sites here including old kiln ruins.
A unique shrine whose torii gate and guardian lion dogs are made from porcelain. This shrine is dedicated to Ojin Emperor, Nabeshima Naoshige, the origin of Saga domain and Yi Sampyeong, the father of Arita ware.
The reservoir is called the “celadon-colored lake� because its hue is akin to greenware pottery also known as celadon. The surrounding forest reflects on the surface of the lake to create the greenish-blue tint, and the color changes with the seasons as the foliage turns from green to yellow, red and orange.

KASURI OLD BECOMES NEW!

extiles are an integral part of Japanese history and culture. From ancient times, people have learned to spin yarn out of plants such as hemp, wisteria, kudzu (a Japanese herb), kouzo (Japanese mulberry paper), and later, silk and cotton. In each region, people developed skills and tools to weave them into beautiful textiles with unique colors, patterns, and texture. In Fukuoka, the local textile is called Kurume Kasuri. It is a cotton textile, known for its unique blurry ‘ikat’ patterns, which is still made in a complicated resist-dye technique of yarn. Learn about how it is made in our previous article: www.fukuoka-now.com/kasuri-intro Kurume Kasuri was commonly used to make everyday-wear kimono until Western clothing became mainstream. Since then, the production of Kurume Kasuri declined drastically in the last seventy years, leaving just twenty-three from three hundred weavers at its peak period. However, the remaining weavers survived for a reason. They are open to change, thrive on creating fresh colors and patterns, and are determined to pass down this two-century-old textile heritage to the next generation. Let’s look at some new projects taking place in the area.

INTERNATIONAL DESIGNER COLLABORATION PROJECTS
Patterns of Kurume Kasuri are made using a resist-dye technique known as ikat in English which were originally developed in India and later spread around the world. However, as printed ikat-like patterns became easier and cheaper to make, authentic ikat textiles, in which the yarn is tied and dyed before weaving, became a rare craft. It’s almost a miracle that such labor and skill intensive craft has survived in an industrialized society such as Japan. This rare tradition now is drawing attention from textile lovers overseas and the international creative community. As a result, there have been several collaborations with Kurume Kasuri weavers and international designers from countries such as Finland, France, Sweden, and the Netherlands, in the past several years. One of the recent projects was a textile craft exchange venture between Sweden and Japan, by Lisa Juntunen Roos and Shogo Hirata, called ‘Intertradition’ (www.intertradition.com). Lisa and Shogo took inspiration from the Swedish weaving and pattern tradition and filtered through a Kurume Kasuri, a Japanese traditional weaving technique, to create
an “intertraditional” fabric that doesn’t belong in either of the cultures. Working with Shimogawa Orimono (www.oriyasan.com), a small Kurume Kasuri weaver in Yame, they created a beautiful new kasuri textile in an exotic yet traditional pattern of orange and navy, as well as several art pieces which were inspired by the process of this collaboration. In 2018, they had several exhibitions both in Japan and Sweden, including at MUJI Grand Front Osaka and Fiberspace in Stockholm, to share their experience and artwork.
Such international collaborations are significant for a traditional craft like Kurume Kasuri. It brings new possibilities of expression in colors and patterns and triggers new ideas for the weavers. Mr. Shimogawa, who has collaborated with Lisa and Shogo, once said he feels like he can communicate with the world through the weft and the warp yarn, a universal language of textiles. NEW UPCYCLE PRODUCTS USING UNTIED YARN
A NEW BRAND FOR A VENERABLE TEXTILE A new brand to connect Kurume Kasuri with trend-and-fashion conscious consumers is set to debut in mid-March of 2020. The new brand, Cathri, was developed under the supervision of the director of BEAMS Planets and is part of a Fukuoka Prefectural government project to raise awareness of the local traditional textiles. The delicately designed pieces are all made of natural materials and can be worn comfortably in all seasons. The products will be available at Beams Planets in Yokohama and Osaka, Beams Fukuoka, and Jibasan Kurume.
Another ongoing project is the product development of socks made from scrap untied yarn created in the process of making ikat patterns of Kurume Kasuri. When making patterns, yarn is tied with cotton thread (or hemp in some cases), and after dyeing the yarn, the tied parts are taken off. Usually, the cotton threads that are untied, and taken off are thrown away because the randomly dyed parts are considered too inconsistent for weaving. A considerable amount of untied yarn is generated, and although some weavers sell this material to people who use it for knitting, there hasn’t been a coordinated project between the makers and wholesalers to reuse the scraps for use in a new product. This year, a new upcycling project was launched by the Kurume Kasuri Union, involving Kurume Kasuri weavers, wholesalers, initiated by Unagi no Nedoko, a manufacturer and store based in Yame. The collaborative will use this precious yarn to make socks. Through many discussions with members of the Union, and experiments with sock manufacturers in Nara, Japan, these untied yarns were confirmed to be usable for knitting machines, and a prototype was recently delivered. After some final refinements and package design, these socks will be ready to be sold in 2020.

THE REVIVAL OF OSHIRO KASURI This autumn, Mr. Ikeda from Ikeda Kasuri Kobo began a personal project to revive the traditional oshiro kasuri (Castle Kasuri), a classic largescale pattern of Kurume Kasuri traditionally used for futon (bed) covers. Back in the day, when newlywed brides entered the groom's family, the bride's family prepared kimono, furniture and other necessities for starting a new life. This was called yomeiri dougu (dowry), and futon covers made of oshiro kasuri were popular and prestigious. Considering that Kurume Kasuri is woven into kimono width, just 38 cm and with a repeating 24cm long pattern, these large scale patterns are extremely complicated and very time consuming to make. Since the tradition of using these futon covers for dowry has ceased to exist, oshiro kasuri became a cultural heritage item only found in museums and old estates. It is, however, a piece of art with some of the best techniques of Kurume Kasuri reflected and with a rich history. Mr. Ikeda doesn’t want this tradition, and associated processes to disappear and has decided to revive the tradition by completing an old oshiro kasuri found hidden in their warehouse for many years ago.
