The Market F, the spacious main dining area at the luxurious Grand Hyatt Fukuoka, serves dishes made with select ingredients from around Kyushu. With the weather warming up in Fukuoka, The Market F is now offering an early summer lunch special with dishes featuring a variety of fresh Kyushu-grown tomatoes. As an appetizer, you can The appetizer buffet start with an assortment of fresh tomatoes or try the ratatouille, made with Hakata eggplant, locally grown onions and zucchini, and of course, Fukuoka tomatoes. You can also try the platter of grilled Kagoshima okra and Kumamoto burdock root. Naturally, the meat and fish are also sourced from Kyushu. GOODTIME SMOKES
Goodtime Smokes is a riverside NY-style smokehouse located just six minutes on foot from Yakuin Station. In fine weather, the entire front entrance opens up like a garage door, something akin to a Brooklyn warehouse. Owner Fumiaki Morita uses a wood smoker to slowly smoke a variety of meats. First-timers should try the BBQ plate, which includes smoked spare ribs, smoked lean beef, homemade bacon, homemade coleslaw, mashed potatoes and stewed tomatoes with beans. You can also choose your sauce: homemade BBQ or a blend of horseradish, yogurt, tomatoes, and fruit. Great value for your money too!

SHINA SOBA YACCHANCHI
Owner Yasunori Mori was born in Fukushima, home to Kitakata ramen, one of the “big three” styles in Japan after Sapporo and Hakata. The culture of Kitakata, where people eat ramen any time of day, suits Fukuoka's own noodle ethos. The shop opens at 7 am, a rarity in Fukuoka, so its reputation quickly spread. The mainstays are the shina soba (an old name for ramen), the niku soba chock full of roast pork and the dashi soba, which only comes topped with green onions and wheat gluten. Choose from three flavors: salt, soy sauce and miso. Surprise! The clear, light soup is actually made from pork bones. “After boiling the bones to get a milky broth, I put minced chicken in the following day and boil it again until it becomes clear,” says Mori. The thick, handmade noodles curl slightly and have a slippery mouthfeel, setting them apart from Hakata ramen noodles. Born in Fukushima and raised in Fukuoka, Mori’s ramen is the best of both worlds.

하카타, 삿포로와 함께 일본 3대 라멘 중 하나로 불리는 후쿠시마의 키타카타 라멘. 본고장의 문화를 이어나가기 위해 후쿠오카에서는 보기 드문 조조 영업(개점 아침 7시)을 실시 중이다. 메뉴는 크게 시나 소바, 니쿠 소바, 시루 소바로 나뉘며 각기 시오, 쇼유, 미소 중에서 원하는 맛을 선택할 수 있다. 육수는 보기와는 다르게 돈코츠 베이스. 돼지 다리뼈를 끓여 뽑아낸 支那麵 小康的家 뽀얀 육수에 다음 날 닭고기 간 것을 넣어 다시 店主森康典先生出生於日本三大拉麵之一的喜多方拉麵之發源地，福島。早上吃拉麵是當地 끓이면 유화된 지방이 흡착되며 투명한 육수로 特有的飲食文化。雖然早上 7 點開業在福岡算是非常早， 但也因此讓此店的知名度快速提升。 변한 다고 . 반 죽 을 손으 로 치대 만든 면은 店裡提供基本的「支那麵」 、盛滿叉燒的「叉燒麵」 、還有青蔥加麩的「湯麵」 ，湯頭口味有 살짝 구불거리고 두툼하며 쫀득한 식감으로 鹽味、醬油味及味噌味可以選擇。這看似清澈透明、入口清淡的湯頭，竟然也是用豚骨熬煮！ 후 쿠오 카 의 라 면 과 는 노 선 을 달 리 한 다. 用豚骨熬成的白湯，第二天加入雞肉碎再繼續熬煮直到變成清澈透明的湯。這如同法式清湯 후 쿠시마 와 후 쿠오 카의 장점을 한 그릇 에 的製作方法就是店主的秘訣。配上口感順滑的特製手工粗捲麵，早上就來一碗，幸福無比！ 담아낸 이 라멘은 반드시 아침에 맛보길 바란다.

This 420-year-old event is a tug of war between teams of Yobuko citizens using a 200 m long rope. A land team win means a good harvest, while a beach team win means a good catch. Shiraito Falls, a designated prefectural scenic spot, is located in the beautiful foothills of Itoshima. The visiting season starts with a Shinto ritual followed by somen nagashi (noodle catching), mochimaki (rice-cake tossing) and fishing. 福岡縣指定名勝白絲瀑布是夏天避暑、秋天追楓的好地方。每年 6 月為了祈求夏季的平安，由神官進行平安祈禱後，進行舞台活動、 拋年糕、流水細麵、釣魚等活動。6 月下旬到 7 月上旬之間，約有 5 千株共 10 萬朵的繡球花盛開，為遊客帶來耳目一新的景觀。

여름에는 피서지로, 가을에는 단풍 명소로 사람들이 즐겨 찾는 현 지정 명승 시라이토 폭포. 매년 6월에는 여름 동안의 안전을 기원하는 폭포 개장식이 열리는데 안전기원 행사 외에도 다양한 프로그램이 준비되어 있다. 6월 말~7월 초에는 수국도 감상할 수 있다.

ITOSHIMA KAWAKUBO SAKETEN The only hint of what awaits inside is a large and precariously hung grape vine. This stark white building, without any signboards, is where Toyochika Kawakubo's father once ran a discount liquor shop. As the new boss, Kawakubo has done more than a full renovation—he’s opened a unique space that goes far beyond selling alcohol. While his father’s business was centered around the price, Kawakubo Saketen is all about selection, communication, and experience. As far as products go, there are four categories, sake, shochu, hard liquor, and wine. Inside an elegantly glass-walled cellar are 120 bottles of wine from Germany and Austria. Why only German and Austrian? Because Kawakubo loves and knows them and to differentiate his lineup from other shops. Similarly, his shochu selection focuses on brands from around the country and passes on readily available Kyushu brands. It’s the same for sake. Kawakubo visits breweries around Japan to find what he likes while building relationships with the brewers themselves. On any day, visitors can taste at least three varieties of sake (and shochu), served in ceramic cups made by his artisan friends. Kawakubo remarks, “It’s not just a place to shop, that can be done online. Here visitors can enjoy the display, hold

WILD MART Few places are more appropriately named! Built by hand by the owner Masato Yamakita and his friends ten years ago, the shop/cafe is located on a forested hillside overlooking farm fields. It’s a bit rustic and eclectic! Itoshima longtimers regularly drop by for a cup of his handmade siphon drip coffee and to chat with Yamakita. He’s one of the elders of Itoshima’s beach community, and he seems to know everyone. Yamakita’s originally designed clothes, silkscreen t-shirts, authentic denim, and parkas are quality long-life items that you can’t find elsewhere. Every nook and cranny is filled with vintage accessories and memorabilia; some are for sale, some just part of his collection. Coffee is just ¥500 and free for first-time visitors. Our first destination was Dazaifu Station, but rather than visit the often-crowded Tenmangu Shrine, we took the Mahoroba bus to Uchiyama to visit the illustrious power spot: Kamado Shrine at the base of Mount Homan. A truly unique juxtaposition to this ancient relic is the shrine office and amulet shop. Built in 2012, it feels serenely clean and modern and sells a number of good luck charms, including one for meeting your special someone!

We finished our tour back in Fukuoka’s renowned nightlife district, starting with a free sampling of mentaiko (spicy cod roe) at Fukuya, the originator of this local delicacy. We wandered through the streets and stumbled upon the Tamon-dori © Fukuoka City arcade, filled with tiny restaurants and bars, one livelier and more inviting than the next. When we finally reached the narrow snaking passageways of Ningyou Syouji - we found an eclectic mix of bars, perfect for a night of boozing. Whether you’re alone, with friends, or meeting locals, it doesn’t get deeper than this!
