The newly opened Ginmi offers courses of 11 items made from carefully selected ingredients from around Japan. The umami-packed broth, the base for every dish, is made from three kinds of bonito flakes, including the highest-grade Kagoshima Makurazaki bonito, and the kelp is no less than Hokkaido Rishiri. The course starts with a cup of broth served in 400-year old Karatsu Ware and continues with sashimi, simmered dishes, fish and meat. Most fresh ingredients are sourced locally daily. The main event is the unique blend of rice cooked in an earthenware pot. To top it off, alcoholic and non-alcoholic drinks are included in the price!
옛 민가를 재단장해 오픈한 일본 요리 전문점 긴미. 일본 각지에서 엄선한 재료로 만든 코스 요리를 제공한 다. 가 장 먼저 모든 요리의 기본이 되는 육수를 400년 전의 카라츠 도기에 담아내 온다. 이어서 지역 어부 또는 시장을 통해 들여오는 큐슈산 제철 재료를 중심으로 한 회, 국, 생선 요리, 고기 요리가 제공되며 메인으로는 쌀 전문가가 엄선해 만든 오리지널 블렌드 쌀을 질냄비에 지어낸 쌀밥을 새우튀김 등과 함께 맛볼 수 있다. 이 모든 코스에 주류와 음료 비용이 포함되어 있으니 더 바랄 것이 없다.

After honing his chops at the popular Chinese restaurant Pikaichi for 15 years, Shoji Hara struck out on his own 10 years ago to open Pikamatsu. He kept many of the trademark Pikaichi menu items, but also offers an original sara udon made with a shiodare salt sauce, an homage to his father who used to run a ramen shop. The price hasn’t changed in 10 years, and it remains a popular item. The medium-thick noodles, which are ordered from long-standing noodle-maker Manabe Seimen, are shallowly fried and soaked in chicken soup, making for a deliciously chewy texture. This combined with the just-crunchy-enough stir-fried veggies and the umami-packed seafood makes for a flavorful treat. Hara says he adds fresh ginger for accent, and this happens to also feature prominently in another famous dish—the champon. Despite being very similar, the champon packs a bigger punch, while the sara udon is milder. Which will you choose?

다자이후 텐만구 쿄쿠스이노엔
정원의 작은 강변에 자리를 잡고 앉아 떠내려오는 잔이 자신의 앞을 지나가기 전에 시가를 읊고 잔에 든 술을 비우는 전통 의식. 잔을 맑은 물에 떠내려 보냄으로써 불결함을 정화한다는 의미를 지닌다. 관람석이 있으나 자리 잡기가 쉽지는 않으니 서두르는 것이 좋다.

YANAGAWA HINA 川女兒節 柳 FESTIVAL 나 가 와 히나 마 츠 리 Every year on Mar. 3, Hina (Doll) Festivals are held to pray for the health of young girls. The day is known as Momo no Sekku, a date that traditionally marked the coming of spring. The custom is said to have begun in the Heian period (794-1185) when people would try to drive away evil spirits by transferring them to dolls. Although the custom varies throughout Japan, families with young girls still display dolls today. Dolls were set up in early February on risshun (“onset of spring”) in the old calendar, and people celebrate by eating three mochi rice cakes in different colors: green, pink and white. In Yanagawa, the first Hina Festival for a baby girl is marked with sagemon—colorful hanging decorations that each family has passed down over generations.

In Yanagawa, a girl’s first Hina Festival is an important occasion. Sagemon are hung next to the doll stand, and a big celebration is held to pray for the child’s health. The tradition began at the end of the Edo period (1603–1868), when people who had baby girls began making decorations from cloth scraps and hanging them on either side of the doll stand. In Yanagawa, each sagemon has 49 (7x7) decorations (seven is a lucky number), which are often in the shape of auspicious creatures, such as rabbits and cranes. OHINA-SAMA WATER PARADE
During the Ohina-sama Water Parade, young girls dressed in kimono ride down canals in boats decorated with hina dolls. About 200 brightly dressed girls and their mothers glide along downtown Yanagawa’s canals, which are also decked out with sagemon, in nearly a dozen riverboats. Kamakiri Coffee, a purveyor of fine coffee and artisanal bread, recently opened in Yakuin. Owner Douglas Weber, a former Apple engineer, also makes high-end coffee grinders and other accessories. His design sense, evident in the stylish and functional machines, yield powerful yet refined cups of coffee. A machine measures with precision the beans for each cup which are then stored in single containers to prevent oxidation. The Kamakiri standard is an adaptation of Cortado, an espresso with just a splash of warm milk. Try their freshly baked sourdough bread made with Itoshima flour too. Yummy!

Japanese “power spot” (spiritual place) fans are buzzing about an enormous boulder in Itoshima! The stone, Shinseki, is located inside a bamboo forest about five minutes on foot behind Kamiari Shrine which is located near Ikisan Station. The massive freestanding Shinseki (God Stone) measures approximately 16 meters in circumference and four meters high. Amazingly, it’s gone mostly unnoticed in modern times. Then in 2016, with the cooperation of the landowner and the residents' association, the shrine cleared an access path
through the bamboo grove and hung a shimenawa rope to mark it as a sacred object. According to legend, when Empress Jingu visited the area around the 2nd century, a purple-colored cloud formed in the sky. Itoshima is known to have flourished from ancient times and the area around the Kamiari Shrine has two important remains of tombs from the 4th and 5th centuries. The possibility that religious rituals and other events took place at this stone is considered very high. If you go: There is no parking. Walking or cycling is recommended. The trail is easy to follow but marked in Japanese only. Check our website for more details on access, and learn the correct protocol for making a wish there. Access: 17 min. on foot from Ikisan Sta. (JR Chikuhi Line) to Kamiari Shrine, then 5 more min. to the rock.

KURUME KASURI A Textile to Treasure
K
urume Kasuri is a traditional textile from the Chikugo region that has been handed down over the generations. It is currently produced in Kurume City, Hirokawa Town (in Yame District) and Chikugo City. Patterns are envisioned and the cotton is dyed before it is woven, so the slight variations resulting from this process yield
the trademark rough-around-the-edges patterns. This is just one element that adds to the appeal of Kurume Kasuri. The technique for making Kurume Kasuri was
invented over 200 years ago by a 12-yearold girl named Den Inoue, the inquisitive daughter of a rice merchant and a skilled weaver in her own right. www.fukuoka-now.com | 19

Interestingly, the weavers who make the Kurume Kasuri garments for the Hakata Gion Yamakasa festival and the techniques they use are well-kept secrets. Most of these garments are classified as tateyoko kasuri, which refers to interweaving the warp (down) threads with the weft (across) threads, a type of Kurume Kasuri that requires some of the most advanced weaving skill. The weaveries of each team’s garments are not made public, and the garments are not available for sale.

The Indonesian technique of dyeing yarn before it is woven, or ikat, is well known around the world, but the technique used in Kurume did not derive from the Asian continent; rather, it is a unique form of textile that evolved on its own from a time when self-sufficiency was the norm. Before the birth of Kurume Kasuri, the Chikugo region grew indigo in the rich soils along the Chikugo River, much of which is shipped to Osaka. It also grew cotton, but at that time, each household only produced the textiles it needed to 20 | Fukuoka Now | #243 | March 2019
get by, or as a side business during the farming offseason. Back then, the dark blue garments that people wore every day only came in plain or striped patterns, so it is probably only natural that the snowfalllike pattern of white dots scattered on blue that Den Inoue developed by trial and error soon became popular. After the Kurume Kasuri process was improved upon, techniques to create large and small patterns and picture patterns were developed, and the industry flourished with the encouragement of the government.

Types of Kurume Kasuri
TEORI As an important intangible cultural asset
Only textiles that meet the following three conditions can be sold as certified important intangible cultural assets: (1) Must use hand-wrapped dyed thread; (2) Must be dyed with natural indigo; and (3) Must be woven on a traditional handloom. Due to these strict requirements, the quantity that can be produced is highly limited, making these textiles very valuable.
TEORI As a traditional handicraft
To guarantee the quality of Kurume Kasuri, which the national government designates as a traditional handicraft, the Kurume Kasuri Cooperative has established its own testing standards, including the following, and only textiles that meet these standards can be sold as traditional handicrafts. (1) Must be a pre-dyed plain weave fabric; (2) Dyed thread must be used for both the warp and the weft, or at least the weft; (3) The weft thread must be fed using either an end-feed shuttle or a footoperated shuttle... and so on.
KIKAIORI Machine weaving
Although a machine is used to weave the textiles, the weft thread is fed using the same kind of shuttle used in
the teori style to ensure a high-quality finished product. Even when weaving by machine, the expertise of a skilled artisan is required because it is extremely difficult to match up the warp and weft
