HAKATA HIIRAGI Taiyaki are the perfect winter treat and Hakata Hiiragi serves some of the best in town. The shop was opened in 2013 by Yoh Daichi, who learnt his craft in Tokyo. Cooked in corn oil, the taiyaki are vegan, and have a delightfully subtle taste. The batter is cooked for forty minutes (most shops do it in ten) until light and crisp, while the azuki (red bean) filling takes five hours to prepare and is restrained in its sweetness. The taiyaki are best enjoyed warm and, at only ¥140 each, are an absolute steal. Also available are mochitto taiyaki (¥170), which contain mochi powder as well as azuki.

SNACK SHOCHU BAR SUNKUJIRA Kazuki Yanagisono, Shochu Bar Sunkujira’s owner and founder, specialises in one thing: shochu, the famed Kyushuan spirit. The bar’s collection of shochu is astonishing, with a curated selection of 460 bottles occupying the shop’s back wall. 70% of these are sourced directly from distilleries in Kagoshima and potato, rice and wheat-based shochu are on offer. The bar, which is attended by the amicable Kazuki and his lovely wife, Michiyo, has a homely but modern feel, with five counter seats and a four person zashikistyle drinking area.
博多 Hiiragi
在中央區役所附近開張 3 年，鯛魚燒專門店 - 博多 Hiiragi。店內鯛 魚燒的特色是將一般 10 分鐘的烘烤延長到 30~40 分鐘，讓不使用卵、 乳製品的麵皮吃起來特別清爽，同時引出每天熬煮 4~5 小時而成的 紅豆餡中優雅的甜味 ( 採北海道羊蹄山的優質紅豆 )，並且用玉米油 製作，為全素食的美食。鯛魚燒一個售價 140 円，另有加入白玉粉 的限量「Q 彈鯛魚燒」 （170 円／含稅） 。歡迎先打電話確認出爐時間。
하카타 히이라기
붕 어빵을 닮은 타 이야키는 오랜 역사 를 자 랑 하 는 일본 서민들의 간식이다. 도미(타이) 형태의 틀에 밀가루 등으로 만든 반죽을 붓고 그사이에 팥소를 넣어 구워내는데 하카타 히이라기에서는 30~40분에 걸쳐 천천히 구워내기 때문에 겉이 바삭하다. 반죽에는 달걀, 유제품을 사용하지 않으며 팥소는 가게에서 직접 4~5시간 동안 조려낸 것으로 반죽의 독특한 식감과 잘 어우러져 단 것을 좋아하지 않는 사람도 맛있게 먹을 수 있다. 오래 기다릴 수 없는 경우에는 사전에 전화로 예약하는 것을 추천한다. 博多ひいらぎ Hakata Hiiragi 2-4-38 Daimyo, Chuo-ku 10:00~19:00 (closes when sold out) Closed: Sundays 092-725-3783
燒酎 Bar Sunkujira
Sunkujira 在鹿兒島方言有 " 角落 " 的意思。來自鹿兒島的店長柳 園和樹先生「想盡情提供美味的好東西」 ，店內約有 460 種的燒酎， 依據鹿兒島、宮崎與其他縣市產地分類為 7:2:1，芋燒酎、麥味燒酎、 青椒或南瓜及紫蘇燒酎等特殊風味也一應俱全。吧台區有 5 個座位， 可以與店主夫婦聊天，還有一間容納 4 人的和室，附近的 Bar 或 沖繩料理店也提供外賣，讓人能輕鬆喝上一杯。
소주 바 슨쿠지라

本月福岡
ACCHANTEI Acchantei specialises in Nagasaki champon, a dish that was conceived in the 19th century to feed Chinese students living in Nagasaki. The noodles are thick, occupying a sweet spot between ramen and udon, and come bathed in a soup topped with vegetables, seafood and pork. Acchantei is owned by Shuichi Nagae, who first opened the shop in Nagasaki in 1984, before moving it to its current spot in Nishijin in 1996. His mission is simple: to bring the true taste of Nagasaki champon to Fukuoka and, in that respect, he is a purist. The soup takes 10 hours to boil, starting with a chicken-stock that produces a rich-tasting, but low-fat, soup. With 200g (dry-weight) of noodles per bowl, and ten different toppings, the meal is nutrient-rich and enough to last you a day or more. Acchantei serves a variety of other dishes besides its champon, including gyoza, yakimeshi and Nagasaki oden flavored with a flying fish soup. The atmosphere is casual, and all can be enjoyed with a cool drink!

쇄국 시대에 해외와의 유일한 창구였던 나가사 키에서 탄생한 짬뽕. 쫄깃한 굵은 면발과 가게마다 다른 특색있는 스프에 채소, 해산물, 돼지고기 등의 재료가 듬뿍 들어가 영양도 맛도 좋은 인기 메뉴이다. 앗쨩테이는 후쿠오카에서 본고장 나가사키의 짬뽕을 맛볼 수 있는 곳으로 유명하다. 닭뼈 100%를 사용해 10시간 동안 정성껏 우려낸 깔끔하면서도 부드럽고 감칠맛이 느껴지는 스프가 맛의 포인트. 여기에 아삭아삭한 채소, 탱글탱글한 새우, 오징어, 돼지고기, 어묵 등 다양한 식감의 재료가 더해져 깊은 맛을 낸다. 일반 사이즈에도 면이 200g 들어가기 때문에 양이 부족하다고 느껴질 일도 없다. 면 곱빼기, 미소(된장)맛, 카레맛 등 다채로운 메뉴가 준비되어 있다는 점도 매력적이다.

Built in 1960, the iconic Tenjin Building features an exterior of brown Aritayaki tiles. In its basement is Sakau, a long-standing pur veyor of tempura that opened in Nakasu in 1930 and moved when the building opened. Today, long-time regulars and tempura fans flock to sample the deep-fried delights of owner Ryusuke Chano. With only counter seats, you can enjoy the crackle of frying tempura while you wait for your food. The secret behind the perfectly crisp, aromatic tempura is the kaya (Japanese nutmeg-yew) seed oil - long viewed as the pinnacle of cooking oils. A true rarity in Japan, kaya seed oil makes for an incredibly light fry. The dipping sauce, a combination of soy sauce and kelp and bonito broths, is accented with granulated sugar, adding just a touch of sweetness to the seasonal ingredients that Chano fries up. Chano’s dedication to the craft of tempura, which eschews additives and aims to maximize the inherent flavors of the ingredients, is the secret to Sakau’s success.

텐진의 중 심지 위치한 다 갈색 아 리타 야 키 타 일 의 외벽이 빛나 는 사 무 용 빌딩 . 큐 슈 고 도성장 의 상징적 존재였던 이 빌딩의 지하에서 텐푸라 사카우를 만나볼 수 있다. 193 0년에 나 카스에서 시작한 사 카우 는 1960년, 이 빌딩 오픈에 맞춰 지점을 냈다. 모든 좌석은 조리 공간을 둘러싼 카운터석으로 갓 天婦羅 酒宇 튀겨낸 튀김을 하나하나 바로 맛볼 수 있다. 於天神中心一棟茶色商業大樓底下，中洲的 얇은 튀김 옷을 두른 바삭하고 풍미 넘치는 天婦羅老店「酒宇」在 1960 年於此開了分店。 튀 김 은 환 상 적 인 식 감 을 자 랑 하 는 데 , 그 超過 50 年間，為了追求美味天婦羅的客人 비결은 바로 예로부터 고급 식용유로 여겨졌던 絡繹不絕。櫃檯席包圍著調理區的店內，隨 비자나무 열매를 짜내어 만든 기름이다. 덕분에 著油炸的聲音，剛炸好的天婦羅送上客人面 식후에 속이 더부룩해지는 일도 없다. 고온의 前。酥脆麵衣的美味天婦羅，其秘訣是使用 비자 나무 열매 기름으 로 튀겨내어 수 분 은 榧木種子榨出來的油。用如此珍貴稀少的油 날 아가고 감칠맛 이 응 축 된 제 철 해 산 물과 炸出來的天婦羅，自然是清爽而不油膩。該 채 소 는 다 시 마 와 가 다 랑 어 육 수 와 간 장, 店也有提供白飯、味噌湯等等美味的食物一 설탕으로 맛을 낸 쯔유에 찍어 먹는다. 튀김 同享用。不在食材上做過多添加，將食材本 외의 쌀밥, 미소시루, 차 등도 나무랄 데 없는 身美味引出來的料理方式 ‧ 天婦羅，加上 맛이다. 엄선된 식자재 본연의 맛을 최대한으로 其店長的精神，大概就是「酒宇」長期受到 살리는 조리법을 중시하는 일본요리 텐푸라와 客人愛戴的理由吧。如果到福岡的話請務必 오너의 장인정신이야말로 사카우가 오랜 세월 사랑받아온 이유일 것이다. 前來品嚐！

1/7 (Sat.) DAIZENJI TAMATAREGU NO ONIYO
This 1,600-year-old tsuina (ceremony to exorcise evil spirits) is one of Japan’s three main fire festivals. After being guarded for seven days, the “devil fire” is transferred to six enormous, 13m torches, which are then carried around the grounds by men in loincloths. It’s good luck if the ash falls on you! 大善寺玉垂宮的鬼夜
除夕晚上到正月 7 日進行的神事「鬼會」 ，最終日為了驅魔而進行火 祭。每支直徑寬 1 公尺、總長 13 公尺的六支巨大火柱，在漆黑的夜 晚火焰在空中飛舞的場景可說非常壯觀。鬼夜火祭是日本三大火祭 慶典之一，據傳掉到參觀者身上的餘燼可以防病袪災。

다이젠지 타마타레구 오니요(鬼夜)
12월 31일 밤부터 새해 7일 사이에 개최되는 오니에(鬼会)의 마지막 날에 열리는 귀신을 쫓아내기 위한 불 축제. 지름 1m, 총 길이 약 13m의 횃불 6개가 점화되며 장관을 이룬다. 횃불의 불똥을 맞으면 운이 트이고 무병장수한다는 속설도. 일본 3대 불 축제 중 하나.

以供奉商賣繁盛的神聞名 - 十日惠比須神社的新春慣例大祭。慶祝 新年吉祥的儀式「開運御座」 ，與試試今年運勢的抽籤 fukubiki。1/9 值得來看博多藝妓們穿著正式黑色和服參拜。現場約有 300 個攤位， 販賣招財貓、不倒翁等與商業有關的幸運物。
十日恵比須 正月大祭
토오카에비스 신년 축제
상업 번창의 신으로 유명한 신사의 대축제. 한 해의 운이 트이기를 기원하는 의식, 운을 점치는 ‘후쿠비키’ 등이 펼쳐지며 행운의 아이템을 갖고자 하는 사람들로부터 인기가 높다. 9일에는 하카타의 예기들이 신사를 참배하는 카치마이리 등도 볼거리이다.

t first glance, kasuri looks simple. It’s a cotton fabric that comes in various shades of blue with recurring patterns in white. Next to the bright colors of a silk kimono, you’d be forgiven for thinking that this textile is, frankly, plain. You’d be mistaken. Behind kasuri’s modest appearance is a remarkable process that begins with raw cotton and indigo leaves, and ends with a handful of craftsmen and women applying skills honed over centuries. While some workshops have opted to modernise production through mechanisation, traditional kasuri production is still practiced at a number of workshops in Kurume, Fukuoka Pref. With over 30 manufacturers, Kurume is one of the largest remaining centers of kasuri in Japan.
INTRODUCING KURUME KASURI 久留米絣 쿠루메 카스리 소개
久留米絣是一種看似簡單，僅用濃淡表現的 藍色綿織物。雖然質樸卻需要很高的技術， 是久留米地區經過 200 年淬煉的技術。 翻過紡織品的背面就可以了解製作久留米絣 的難度。一般的紡織品，是在紡織完成後才 進行染色，但是絣則是相反的在還是線的階 段就設計了花紋之後才染色接著紡織。請想 像一下藍底上有白色圓點模樣的絣的樣子。 在準備材料的階段時僅準備一根縱向的棉 線，然後先在此線染上正確規則相間隔的藍 白部分。然後再由這根棉線和橫向的棉線結 合，在藍底上漸漸編出白色圓點的圖樣。擁 有這麼複雜技術的人，在久留米地區僅剩下 數十人左右。完成久留米絣約需分成 30 道 左右的工法，在這裡大略整合之後說明。 언뜻 단순해 보이는 남색 목면 직물 쿠루메 카 스리. 하지만 뒷면을 살 펴보면 쿠 루 메 카스리의 특징을 알 수 있습니다. 바로 무늬가 들 어간 천인데 도 앞뒷면이 구 별되어 있지 않 다 는 것입니다. 일반적으 로는 천을 만든 뒤 염색 및 인쇄 작업을 거치지만 카스리의 경우 실 단계에서 무늬나 문양이 들어갈 것을 생각해 염색하고 천을 짭니다. 감색 바탕에 흰색 물방울무늬의 카스리에서 날실 하나를 뽑아 보면, 감색과 흰색이 규칙적인 간격으로 염색된 것을 볼 수 있습니다. 이 날실에 맞춰 씨실을 정확히 짜 맞추어 냄으로써 감색 바탕 위의 흰색 물방울무늬를 만들어 갑니다. 매우 복 잡 하고 품 이 드는 이 기술 을 계 승 중 인 사람은 현재 몇십 명밖에 남지 않았습니다. 쿠루메 카스리의 제작 공정은 약 30가지로 나누 어져 있으나 여기에서는 간 략 하게 소개하겠습니다.

CREATING KURUME KASURI STEP 1 ▸ THE PATTERN Used for everyday wear, Kurume kasuri features bold, geometric patterns. The designs may be simple, but creating them is not: kasuri’s designs aren’t printed on after the fabric is made, but before. The patterns are first copied onto what looks like a long strip of graph paper, where each square represents a fraction of the finished fabric. The layout is used to calculate which parts of the thread should be dyed, and which parts left white. STEP 2 ▸ TYING Kurume kasuri is made from white cotton which, before dyeing, is knotted into bundles. The parts that are to remain white are covered, while parts that are to be dyed are left exposed. This process is completed by a specialist tyer, who passes the bundles on to the dyer. STEP 3 ▸ DYEING True kasuri gets its color from indigo – a dye made from the leaves of the indigo plant. The leaves are dried and fermented into a paste, and then brewed into a liquid and left to ferment a second time. Master dyers make several vats of dye with different concentrations of indigo, which they use for six to eight months at a time. 14 | Fukuoka Now | #217 | January 2016

步驟１ ：圖案 用來供應大眾日常穿著的久留米絣，其簡 單的花紋圖案是特點。根據傳統的圖案和 作者的個性為原則，在縱向和橫向綿線的 分配上 ( 哪些部份要染色，哪些部份要將 白色拿掉等等 ) 設計之後做成「繪圖紙」； 接著將線染色清洗數次，一邊考慮線的收 縮問題，一邊將重新繪製圖案再做成「下 繪」。
步驟２ ：整線 做為重要無形文化財的久留米絣必要條件有 ：⑴使用粗芋做成的麻繩。⑵使用純正天然 藍來染色。⑶需使用手工紡織機完成。 「整線」 是絣完成最後模様之前的原點，是會影響成 品的重要步驟。以棉製成的線的自然色就是 久留米絣圖樣中白色的部份。在染色前會用 粗芋麻繩將想變成圖樣部分（想留下來的白 色部分）固定包覆住避免染色。
1단계: 무늬 서 민 들 의 일 상 복 이 었던 쿠 루 메 카 스 리 의 특징은 단순한 무늬입니다. 전통적인 무늬와 제 작자 의 개 성이 드 러나 는 도안 을 토대 로 날실과 씨실의 어느 곳을 염색할지를 계산한 에가미(絵紙)를 만든 후, 염색과 헹굼 등의 과정을 거치게 될 실이 수축할 것까지 계산하여 도안을 수정한 시타에(下絵)를 작성합니다.
2단계: 묶기 중요무형문화재로서의 쿠루메 카스리 인정 조건 다음과 같습니다. ⑴아라소우(粗芋)로 실을 묶을 것 ⑵순정 천연 쪽으로 염색할 것 ⑶수작업용 직기로 짜낼 것. 실을 묶는 작업은 카스리 무늬의 원점으로 완성될 직물에 영향을 미치는 중요한 공 정입니다. 천의 자 연스러운 책이 쿠 루메 카스리의 무늬가 될 흰색 부분입니다. 염색 전, 무늬가 될 부분을 아라소우로 단단히 묶어 색이 물들지 않게 합니다.
kurume kasuri 3단계: 염색 예로부터 염료 로 사 용 된 쪽 잎을 건조 후 발효시킨 일본 토쿠시마산 스쿠모를 사용합니다. 이것을 염색 장인이 땅속에 묻은 독에 넣어 2~3주 동안 양조시킵니다. 시간이 갈수 록 서서히 색이 바 래가기 때문 에 이용 가 능한 기간은 6 ~8 개월 정도입니다. 염색 작업은 고된 육체노동으로, 실 뭉치를 액체에 담가 짠 뒤 실 한줄 한줄이 공기와 접촉할 수 있도록 바 닥 에 강 하게 내려칩니다. 원하 는 색이 나 올 때까지 약 4 0회 정도 이 작 업을 반복합 니다. 이때 드는 노동 력과 비용 을 절감 하기 위해 화학 염료 와 기계를 도입한 제조 자도 있습니다. 덕분 에 선명한 색상의 카스리도 등장하게 되었습니다.
Dyeing is an intense process that involves dipping a bundle of thread into the dye, wringing it out and then beating it against the floor to expose the thread to oxygen to fasten the color. The process is repeated as many as 40 times to achieve the darkest blue-black. The thread is then dried, creating one of Kurume’s most memorable sights: bundles of blue and white thread hanging in the sun, slung over bamboo poles or stretched across the fields to their full length – nearly a kilometer.

STEP 4 ▸ WEAVING The work of the weavers is mind-blowingly intricate: the bundles are separated into hundreds of individual threads, and then aligned and wrapped around wooden shuttles that the weaver uses to weave the weft (across) threads with the warp (down) threads. Years are spent learning each craft but, however skilful, no weaver can match each thread perfectly. Tiny variations create a distinctive feature: slightly blurred edges to the patterns. 步驟４ ：編織 若是傳統上染色是男性的工作，那麼編織等 細膩的工作就必屬於女性了。按照繪圖紙上 的圖案，排列出所需要的繩線數，然後將線 分開後捲起 ；久留米絣的編織手法是使用傳 統的紡織機，編出寬約 36 公分，長約 12 米 的織物出來。因為是手工的關係，不管技術 再怎麼好，也不可能拼湊出百分之百完美的 圖案。在染色和紡織過程中出現的小瑕疵， 最後就成了絣的特徵並且成為久留米絣最大 的魅力所在。

Head to the temizuya (stone basin) and pick up a ladle (hishaku) with your right hand and fill it with water. Pour a little over your left hand, then swap hands and wash your right. Pour water into your left palm and bring it to your mouth to rinse. Finally, wash your left hand and tip the remaining water down the ladle's handle to clean it. Return the ladle face down and head to the shrine.

On New Year’s Eve, there are three events at Miyajidake: an oharaishiki, chinkasai (fire prevention festival) and joyasai. When the clocks turn midnight, the gantansai (New Year's festival) begins with the beating of a drum and prayers for peace, health, safety and thriving and prosperous business for all.
On Jan. 1, peruse the stalls at Sangensai festival. Don’t miss Tama Seseri on Jan. 3: loincloth-clad men scrambling for an 8 kg ball - if the Land Team wins, expect a good harvest, and if the Beach Team wins, a bountiful catch. Buy a hatomikuji (raffle ticket) for a chance to win prizes, from chopsticks to tickets to Korea!

在日本的習俗中，每年的 12 月 31 日共會舉辦有大祓式 ( 淨化儀式 )、 鎮火祭、除夜祭三場活動。當午夜 12 點時隨著大鼓告知新年曙光即 將到來，預備開始進行新的年度裡最初的祭典。除了祈求國家昌隆 與皇室安泰，也祈願人民一年間的家庭安全，生意興隆，身體健康。 12월 31일에는 총 3개의 이벤트가 개최된다. 오전 0시가 되면 새해가 밝았음을 알리는 북소리와 함께 국운과 왕실의 평안 기원을 기원하고 한 해 동안 가정이 편안하고 장사가 번창하며 무병장수하기를 기원하는 새해 첫 축제가 펼쳐진다. • 12/31 (Sat.): all day • 7-1 Miyaji-motomachi, Fukutsu • 5 min. by taxi/25 min. walk from JR Fukuma Sta.

在元旦舉行的三元祭裡，擠滿了商店和前來參拜的群眾。1 月 3 日 舉辦的玉取祭是提供報名的競爭者們，共同激烈的爭奪木球來作為 占卜新年是否順遂的風俗。 「鳩籤」 （¥300） ，則是提供有從筷子到韓 國旅行等多種獎品，這是人人有獎，不會讓您空手而回的。 새해 첫날에는 여러 가게와 참배객으로 붐비는 산겐사이가 개최된다. 1월 3일에 열리는 타마세세리는 샅바 를 입은 장정들이 목제 공을 두고 격렬한 쟁탈전을 벌이며 새 해 를 점치는 행사. 경품 추 첨용 하토미쿠지(30 0엔)는 꽝 없음. 젓가락부터 한 국 여행까지 다양 한 경품이 기다리고 있다. • 1/1 (Sun.): Sangensai Festival: all day; 1/3 (Tue.): Tama Seseri: 13:00~14:30 • 1-22-1 Hakozaki, Higashi-ku • 3 min. from Hakozaki-Miyamae Sub. Clap twice, your right hand slightly lower so the fingers reach the top joints of your left hand. Eyes shut and head bowed, express a silent prayer of thanks to the gods.
投入奉獻錢、敲鐘，深深鞠兩次躬。 拍兩次手，右手比左手低一點，右手指尖在左手第一關節的 位置。此時低頭閉眼， 無聲地感謝上蒼賜與去年一整年的好運。 참배금을 던져 넣은 뒤 종을 울린 후 머리 숙여 두 번 절한다. 오른손가락 끝이 왼손가락 첫 번째 관절 아래에 오도록 하여 손뼉을 두 번 친다. 이때 눈을 감은 채로 머리를 숙인다. 신께 지난 한해의 행복에 대한 감사를 드린다.
