French Toast

Ingredients for 1 serving:

» 2 regular slices of bread and an end piece

» 1 egg

» 1/3 cup milk

» Splash of vanilla extract

» Cinnamon to taste

» Butter for pan

» Fresh fruit to serve (bananas, strawberries, blueberries)

» Syrup to serve

» Powdered sugar to serve

Instructions:

Step 1:

Mix milk, eggs, vanilla, cinnamon, and salt together in a shallow bowl. Incorporate air with a fork.

Step 2:

Soak both sides of a slice of bread

Step 3:

Butter pan over medium heat. Cook until golden brown on each side

Step 4:

Serve with a dusting of powdered sugar, fruits (strawberries, blueberries, bananas), and syrup

Banana Bread

Ingredients for 1 8½x4½” loaf:

» Nonstick vegetable oil spray

» 1½ cups (188 g) all-purpose flour

» 1¼ tsp. baking soda

» ¾ tsp. Diamond Crystal or ½ tsp. Morton kosher salt

» 1 cup (200 g; packed) dark brown sugar

» ⅓ cup mascarpone, plain whole-milk Greek yogurt, or sour cream

» 4 Tbsp. unsalted butter, room temperature

» 2 large eggs

» 4 large very ripe bananas, peeled, mashed (about 1½ cups)

» ½ cup chopped bittersweet or semisweet chocolate (optional)

» ½ cup chopped raw walnuts (optional)

Step 1

Preheat oven to 350°. Lightly coat an 8½x4½” loaf pan with nonstick vegetable oil spray and line with parchment paper, leaving generous overhang on long sides. Whisk all-purpose flour, baking soda, and salt in a medium bowl to combine.

Step 2

Using an electric mixer on medium-high speed, beat brown sugar, mascarpone, Greek yogurt, or sour cream, and butter, room temperature, in a large bowl until light and fluffy, about 4 minutes. Add eggs, one at a time, beating to blend after each addition and scraping down sides and bottom of bowl with a rubber spatula as needed.

Step 3

Reduce speed to low, add dry ingredients, and mix until just combined. Add bananas, peeled, mashed, and mix until just combined. Fold in chocolate and/or walnuts with spatula. Scrape batter into prepared loaf pan; smooth top.

Step 4

Bake bread until a tester inserted into the center comes out clean, 60–65 minutes. Transfer pan to a wire rack and let bread cool in pan 1 hour. Turn out bread onto rack and let cool completely before slicing.

Overnight Oats

Ingredients for 1 serving:

» ½ cup rolled oats

» ½ cup milk of choice

» ¼ cup non-fat Greek yogurt

» 1 tablespoon chia seeds

» 1 tablespoon sweetener honey or maple syrup

» ¼ teaspoon vanilla extract

Place all ingredients into a large glass container and mix until combined. Cover the glass container with a lid or plastic wrap. Place in the refrigerator for at least 2 hours or overnight. Toppings can be added the night before or immediately before serving. Uncover and enjoy from the glass container the next day. Thin with a little more milk or water, if desired.

Sugar Cookies

Preheat oven to 350°.

Dough: Cream together the butter and sugar until light and fluffy. Add in eggs, vanilla extract and almond extract. Beat until mixed. Add in flour and baking powder. Mix until combined.

Scoop out 1/4 cup of dough and roll into a ball. Repeat.

Flatten the cookie dough. The cookies will spread. (6 cookies per pan)

Bake at 350° for 9-11 minutes or until the centers of the cookies have puffed up and are no longer glossy. Cool on cookie sheet.

Frosting: Cream the butter until smooth. Slowly add in the powdered sugar, almond extract and milk until smooth and creamy.

Spread on the still slightly warm cookies. Chill in the fridge until ready to serve.

Served chilled.

Ingredients for 12 cookies:

» 1 cup salted butter

» 1 cup granulated sugar

» 2 eggs

» 1 tsp vanilla extract

» 1/2 tsp almond extract

» 3 cups all purpose flour

» 2 tsp baking powder

Ingredients for icing:

» 1/2 cup softened butter

» 3 cups powdered sugar

» 1 tsp almond extract

» 1-3 tbsp milk
