Common Species in Galveston
O
n more than one occasion, clients visiting my office proudly showed me pictures of snakes they killed. They had misidentified the snake, thinking they had killed a venomous one, only to learn it was harmless. Sadly, there should be no reason to kill any animal that is beneficial to our ecosystem and no threat to us. I try not to be critical and explain to them the differences between the venomous and non-venomous species that live on the island. This article will look at the most common snakes we may encounter on Galveston Island. I hope to keep some snakes from being unnecessarily killed. Texas rat snakes are one of the more aggressive nonvenomous snakes in Texas. When disturbed, they will bite rapidly and often rattle their tail, mimicking that of a rattlesnake. They are often up to six feet long with a dark brown mottled pattern. They are sometimes confused with the cottonmouth (or water moccasin) but are much more slender and have narrow heads. Their bites are harmless and, at the most, make the site bleed for a few minutes. They are great snakes to have on your

The speckled kingsnake is a beautiful resident of our island, mainly in the prairie habitats of the west end. They are brightly colored with a black and yellow speckled pattern. They range in size from two to three feet and are non-venomous constrictors. They are so obviously different from our venomous species that there should be no reason one is harmed. They feed primarily on small birds and mice but occasionally eat another snake. They have been known to eat baby rattlesnakes on occasion. We should do all we can to preserve this reptile in our coastal ecosystem.

Cottonmouth (Water Moccasin) - Venomous | Found around fresh-water areas Bright bands on juveniles, adults have darker, less distinct banding.
The diamondback, broad-banded, and Gulf marsh snake are both water snake species found in marshy areas of the island. All are harmless but can be confused with the cottonmouth. These snakes have similar color patterns as their venomous counterpart but have narrower heads and more slender bodies than the cottonmouth. They tend to flee when disturbed rather than standing their ground like the moccasin but sadly, are still often killed because of the similarity. There are four types of venomous snakes in the State of Texas: copperheads, cottonmouths, coral snakes, and rattlesnakes. Copperheads and coral snakes are extremely rare on Galveston Island, so our information will relate to the other two species.

skin patterns look like our native water snakes. The adults have a darker, less distinct banding and may hold their ground with their mouths open wide when approached. The lining of their mouth is a pale white color, the source of their name. This species of snake has a thick body and broad head compared to water snakes. Contrary to myth, they will not “chase after” a person but aggressively strike when disturbed. Only seven percent of reported human snakebites in Texas are from these snakes. The Western Diamondback rattlesnake is extremely common on Galveston Island. They are the most significant, most widespread, and most dangerous serpent in Texas. Our veterinary hospital treats multiple cases of pets bitten by this snake. Dogs are often bitten playing in the dunes on the beach or exploring the brush around the bays. Fortunately, most survive the bite with proper treatment. The snakes often travel into yards and garages and become dangerous threats to pets and people. Tourists are often shocked to learn that rattlesnakes are abundant on our island and don’t take precautions with their pets. They are easily identified and sometimes recognized by their intense rattle before the snake is seen. If a rattlesnake is encountered, slowly stepping back and walking away will prevent a person or pet from being bitten. Many local homeowners have killed rattlesnakes in their yards and are occasionally bitten trying to kill the snake with a shovel or hoe. Ideally, calling Galveston Animal Control and letting the professionals remove the snake is the safest option. It is essential to learn to identify our local snakes so the harmless species can be left to do their jobs and an Animal Control specialist can remove the venomous ones. Human activity continues to encroach on the wild spaces increasing the encounters with wildlife. We owe it to these animals to let them live undisturbed whenever possible.

The cottonmouth or water moccasin is most often found around bodies of freshwater. Because of this, their habitats are limited on the island, and fortunately not a common species of snake here. A few have been found in ponds in the interior of the island. They are quite common on the mainland, where freshwater ponds and creeks are plentiful. Boat Ramp Etiquette
I
t’s the wonderful time of year again when pleasure boating is going on in full force. Hardly anything is as enjoyable as being out on the water with family and friends.
One of the first things many of us must do when we go boating is to launch our boat at a public boat ramp. Unfortunately, many people don’t know proper boat launch etiquette, or they simply choose to ignore it. Launching a boat can turn into a true nightmare when people either don’t know what they are doing, or they are just plain self-centered, rude people. Here are some boat launching Do’s and Don’ts: • DO use the staging area before approaching the ramp. Do not go onto the ramp and then start this process. Have your ice chest, equipment, life jackets, and all other items properly loaded onto your boat before ever approaching the ramp. • DO respect the traffic lanes. Approach the ramp with caution and stay inside your lane. Respect the flow of other boaters making their way to the ramp. • DON’T load or prep your boat in the ramp lane. We can’t drive this point home enough. All final preparations should be completed before ever approaching the ramp. • DON’T hog the ramp. Be courteous to those around you by allowing adequate space for others to launch or retrieve their boats at the same time. • DON’T socialize while at the ramp. If the ramp is packed, this is not the time to catch up with friends or other boaters. People in line will not appreciate watching you standing around shooting the breeze while they are waiting for their turn to approach the ramp. Focus on getting on or off the water first!
• DON’T park your boat in the way of others trying to use the boat ramp. Many boat ramp areas feature courtesy docks to retrieve passengers before setting off. Avoid tying up your boat here, as it will prevent the person behind you from launching their boat into the water. These areas should be reserved for quick approaches to pick up and drop off passengers. The bottom line is to be courteous and use common sense.
Do we like it when rude people hog the boat ramp like they are the only people in the world? That they could care less about the rest of us?
NO! WE DON’T LIKE THAT! Be knowledgeable and courteous. Let’s all enjoy the water and have a great summer.

Calling All Fathers!

ello Waver’s! June has arrived and the first thing that comes to mind is Father’s Day. I did some investigating and here’s what I found. Sonora Louise Smart Dodd Father’s Day is always celebrated on the third Sunday in June. In May of 1909, a woman named Sonora Louise Smart Dodd of Spokane, Washington, heard a Mother’s Day sermon by Reverend Dr. Henry Rasmussen in her hometown church and thought a similar day should be set aside to honor fathers. Her own father, William Jackson Smart, a Civil War veteran, raised six children as a single parent.
Menard House still stands at 1604 33rd St., Galveston, TX. Bernardo de Gálvez, Galveston was named for Bernardo de Gálvez, a Spanish colonial governor and general. Gálvez sent Jose de Evia to chart the Gulf of Mexico from the Texas coast to New Orleans, and on July 23, 1786, de Evia charted an area near the mouth of a river and named it Galveston Bay. Later, the island and city took the same name. FUN FACT: Bernardo de Gálvez died the same year, never setting foot on his namesake island. George Mitchell
The first U.S. President to celebrate Father’s Day was Woodrow Wilson in June of 1916, who opened the church services by telephone to Spokane from the Oval Office. Wilson liked the idea so much of a day of observation for fathers that he pushed to make it a national holiday (he had just made Mother’s Day official in 1915), but members of Congress resisted, fearing that such a day would take away support from the Mother’s Day holiday, and commercialize the day for fathers, causing more harm than good. More than 50 years after Dodd’s initial efforts, Father’s Day was recognized as a holiday to be celebrated on the third Sunday of June by President Lyndon Johnson’s Executive Order in 1966. But it was still not officially recognized as a federal holiday until six years later, in 1972 when, during his re-election campaign, Richard Nixon signed an official proclamation setting Father’s Day permanently on the third Sunday in June nationwide. Let’s take a look at some of the important Fathers and Son’s from Galveston. Michel B. Menard Galveston, as we know it today, was founded by Michel Menard and Samuel May Williams. Their homes are still standing and are popular tourist spots. Menard formed the Galveston City Company with Samuel May Williams and other prominent Texas businessmen in 1838. Galveston-born oilman, George Mitchell led a modern revitalization effort. His team first focused on overhauling and promoting Galveston’s Historic Downtown District. FUN FACT: Mitchell’s team brought the 1877 Tall Ship ELISSA back to Galveston, and restored it to all its former glory. King Vidor (The Film Daily, a New York publication, featured King Vidor on one of its covers in 1919.) Vidor was born in Galveston in 1894—the year the public first paid money to see a motion picture in the U.S.—and he grew up right alongside this new form of art and entertainment. As a 15-yearold, Vidor worked as a ticket-taker at Galveston’s Globe Theater, situated in the back of a music store on Market Street. When the projectionist went on break, Vidor took over the cramped booth, hypnotized by the flickering of light. FUN FACT: He became obsessed with finding a camera to make his own movies when his friend George Roy Clough—who would later become Galveston’s mayor— built one from cigar boxes and old projector parts. King Vidor directed his first feature, The Turn in the Road, in 1919. The box office hit was a story of spiritual quest based on tenets of Christian Science.

Barry White Born in Galveston, few other artists in the music industry have enjoyed the huge cross-sectional popularity and following as Barry White. Since he suffered from excessive weight issues for most part of his life, health hazards were natural occurrence for the final years of his life. He suffered from high blood pressure and diabetes complete renal failure. FUN FACT: During his teenage years, he along with his younger brother took to criminal and gang activities. He was imprisoned for four months for stealing $30,000 worth of Cadillac tires. During this time he found music. Gail Borden Borden settled in Texas in 1829. He created a process in 1853 to make sweetened condensed milk. Earlier, Borden helped plan the city of Galveston in 1836. President Sam Houston appointed Borden as the Republic of Texas Collector of Customs at Galveston in June 1837. He was popular and performed his job well, raising half of the government income during this period. Borden County,
Texas, where he had never been, was named for him as was its county seat, Gail. FUN FACT: Borden, Texas, was also named for him. ANOTHER FUN FACT: A version of the company continues today, now called Eagle Brand . Paul Bremond Paul co-founded the Galveston and Red River Railroad, later known as the Houston and Texas Central Railroad, and he served as the company’s top executive until 1858. He was the president and principal of this railroad until his death in 1885. Bremond died in Galveston on May 8, 1885. FUN FACT: Bremond is the namesake of Bremond, Texas. Father’s Day is a great time to honor our Dad’s. As history reminds us, men have played a very important role in Galveston’s history. ob Rohan, or as he is known in Texas “Bad Bob”, has been playing the fiddle and singing in various groups for over 30 years in Texas, and has opened for Merle Haggard, Willie Nelson, Charlie Daniels, Carlene Carter and John Conley to name a few. Bob has played in bands that have backed up country legends like Hank Thompson, Ray Price, Jack Greene, Pam Tillis, and Dale Watson. Along with songwriting, Bob is also a talented cartoonist and has a self syndicated comic strip titled “Buffalo Gals”. The

his time of year has us islanders thinking about one particular pest- the mosquito. There are a lot of wonderful things about living on the coast, but the prolifickness of mosquitos is not one of them! Nothing we do will ever eliminate mosquitos for good, but there are several plants that we can use around our sitting areas and outdoor spaces that will help. Citronella Grass is a plant that grows in tropical regions. It will grow in our area. This clumping grass has a myriad of uses and repelling mosquitos is one of those. This isn’t a common plant so you will need to order it from an online source. As a companion plant in the garden, citronella grass can deter whiteflies and other pests that are confused by its strong lemony scent.
The key to any of these plants working for you is that you must crush the leaves to release the essential oils. The oils are what repels the mosquitos. So, when you sit down on your swing, pinch a few leaves, and shake the plant good. When you smell the wonderful scents, you will know that the oils have been released.

When growing citronella grass, place it in a location where it can receive bright but filtered sunlight. It can scorch or wilt in areas with too much intense sun. Citronella grass prefers moist, loamy soil. It has high watering needs, so if grown in a container, water it every day. Citronella grass can be divided in spring. This is also a good time to give it an annual dose of nitrogen-rich fertilizer. Now you may be thinking, “I bought citronella, but it wasn’t a grass.” What you bought was a citronella scented geranium. These are awesome plants for our area. They

ESTAURANT EVIEW Highlighting Galveston’s Best of the Best Dining Experiences. had to be challenging and as expected a disproportionate amount of domestic chores landed upon her including cooking. Ouida knew from a young age that she loved cooking but could not imagine it would someday lead to owning a popular restaurant in faraway Galveston, Texas.
W
e are thrilled to announce the reopening of Ouida Cook’s enormously popular soul food restaurant in its new location at 5316 Broadway.
After a several month hiatus while she searched for and remodeled a new location for her previous restaurant at 31st & Market, she is now up and running and turning out the signature dishes she is so well known for.
Summers growing up were spent on her grandparents’ farm in Mississippi where she assisted in harvesting and preserving the many vegetables grown there. Ouida learned much about cooking from her maternal grandmother who she states, “ never measured anything.” It was here that young Ouida honed her skills and developed a love for that deep southern cooking that we call “soul food” today.
This has not been an easy year for Ouida. Finding a new location, negotiating leases, outfitting the kitchen, getting all the inspections and permits in place, dealing with unexpected issues and painting, furnishing, and remodeling the dining space are all Herculean tasks for anyone to accomplish. Well Ms. Ouida is not “anyone”! Accustomed to adversity, she stubbornly plows forward never looking back. But to understand this remarkable lady, it is helpful to know a little of her history. Ouida was born into a large family in St. Louis, Missouri. The first girl in an extended family of fourteen boys. As you can imagine being the only girl with all of those brothers
Ouida took a roundabout journey to restaurant ownership continuing her formal education and receiving degrees in public policy and accounting. She worked several years for the Federal Reserve Bank before getting married and moving to League City in 2006 where she was employed by the Galveston County Tax Office. Several reorganizations resulted in her losing that employment and ultimately becoming homeless before friends encouraged her to capitalize on her cooking skills. Her father’s encouragement pushed her over the edge and the first Soul 2 Soul restaurant opened in a small location above a barber shop on Market Street. With the opening of her Broadway restaurant, she is now better poised to move forward and expand her business. Her first two restaurants were small and lacked parking thereby limiting her possibilities. Moving into the strip center that formerly housed the Patio

Soul 2 Soul - Soul Food Restaurant Grill has opened the door for future growth. With virtually unlimited off - street parking, a large kitchen, huge outdoor patio and two large dining rooms, the sky is the limit. If you visit today, you are met with a work in progress. The space is freshly painted, bright and clean but reminiscent of a blank canvas awaiting the artist’s touch. The inviting outdoor patio is awaiting the installation of a canvas cover and the new patio furniture she has in storage. An abbreviated menu board lists the daily specials and side dishes, and an order counter takes your order and payment. Your dishes are delivered to your table in Styrofoam containers. Nothing fancy here until you take your first bite. It quickly becomes apparent the kitchen is in full operation. The food is as good as ever. Her famous fried ribs, breaded chicken wings, homemade meatloaf, all day smothered oxtail, the best fried catfish and more. Her side dishes scream Sunday afternoon in Mississippi as you absorb the complex flavors of cabbage slow braised with pork or her heavenly fried okra. No corners are cut here! For now, the menu remains limited as are her serving hours, but great things are in the forecast starting with a full liquor license. I certainly will enjoy her delicious wings with a cold beer on her cheerful patio. But for now, I look past the sparse dining room, the empty patio and just enjoy the comradery and good vibes that come with the sublime food. Please visit soon and help me support this very fine person as she rebuilds her business and fills our bellies and souls with her earthy cooking. Plenty of off-street parking. alveston is a city with a tradition of small locally owned neighborhood restaurants. To a great extent, the large national restaurant chains do not have a huge presence here. There are a few of course that line up along the seawall to entice tourists, but our residents and long-term visitors know the real action is buried in the neighborhoods away from the beach scene. Here you will find locally sourced seafood, traditional cooking, and great value. Family-owned Mexican restaurants flourish here. Generally limited to breakfast and lunch, they offer fresh and delicious food for reasonable prices. Everyone has their favorite and there are countless discussions in social media regarding which is best. One of my favorites is the Bambu Mexican Grill. Located in the east end “Lost Bayou” neighborhood, this incredibly popular restaurant stays busy dishing out huge plates of very good TexMex traditional food. Always friendly and with a dedicated staff that has little turnover, you quickly become member of the “family” with smiles and greetings and your favorite drinks served without asking. Complimentary chips and salsa are served upon seating and are fresh and crispy and never greasy. Their red salsa is bright, well-seasoned and has a bit of a bite. Green salsa is available if you prefer. The dining room is bright with whimsical murals of bamboo plants and lots of windows. It is a little crowded and can get quite noisy, but the overall ambience is pleasant. A small patio offers outdoor dining weather permitting.

The breakfast plates include the ever-popular huevos rancheros which are very well executed and served with your choice of flour or corn tortillas - the homemade flour tortillas are huge! One of my favorites is their pork chop breakfast plate. Two enormous chops perfectly cooked and served with eggs, potatoes, and refried beans. It is delicious and very filling. More adventurous palates may enjoy their lengua ranchera plate or the machado & egg plate or a bowl of their flavorful menudo. Lunch at Bambu is also a treat. My favorite is their Mexican plate. It is a combo that includes a bubbling hot cheese enchilada, crispy taco, tostado, rice, charro beans, and more. Let’s talk a minute about those beans. They are just fantastic. Slow simmered with spices and chunks of sausage and garnished with fresh cilantro, they take center stage. They have a broad offering of lunch specialties, and their enchiladas are among the best. They offer large bowls of caldo, both chicken and beef. For those unfamiliar, these are Mexican soups with a deep, rich broth and large chunks of vegetables with side garnishes and rice to make a complete meal. Browse the menu and ask questions. There is something here for everyone and it is all delicious. They have announced that they will extend their hours and offer evening dining with an expanded menu starting May 27th. I will be among their first dinner customers! Fairly adequate street parking is provided, and their handicapped accessibility is good. he Broadway season that will be celebrated by the Tony Awards presentation on June 12 began — well, we don’t recall when. It was at least two years and three Covid waves ago. But that doesn’t mean there was nothing worth seeing and loving.
“A Strange Loop,” an extremely meta-musical about a black gay man writing a musical about a black gay man writing a musical, dominated the nominations for the 75th Tony Awards. The show, which won a Pulitzer Prize in 2020 for its Off-Broadway run, scored a leading 11 nominations. “A Strange Loop” was followed closely behind by “MJ,” a jukebox musical featuring the music of Michael Jackson, and “Paradise Square,” a look at the Five Points area of Manhattan and the tensions that erupted in the violent Draft Riots of 1863, which both nabbed 10 nominations. “MJ” has battled controversy for failing to engage with allegations that Jackson molested children. “The Lehman Trilogy,” a sprawling drama about one of the financial institutions that helped spark the 2008 recession, received eight nominations, the most of any play. Other major contenders include “Company,” a gender-swapping re-imagining of the Stephen Sondheim classic, which picked up nine nominations, and “Six,” a feminist retelling of the story of Henry VIII’s six wives, which received eight nominations. The nominations are welcome news for both “Paradise Square” and “A Strange 52 Waves Magazine | June 2022
Loop,” which were punching up against more star-driven Broadway shows and could receive a lift in ticket sales. Best musical will be a race between those shows, as well as “MJ,” “Girl From North Country” and “Mr. Saturday Night.” Best play is a battle between “Clyde’s,” “Hangmen” “The Lehman Trilogy,” “Skeleton Crew” and “The Minutes.” The best musical revival category includes “Company,” as well as “Caroline, or Change” and “The Music Man,” a star-studded revival of the Meredith Willson chestnut that has become one of the year’s hottest tickets. Best revival of a play is a contest between “American Buffalo,” “for colored girls who have considered suicide/ when the rainbow is enuf,” “How I Learned to Drive,” “Take Me Out” and “Trouble in Mind.”
This year’s crop of contenders includes several Hollywood stars, including Hugh Jackman, recognized for his turn as a con man in “The Music Man”; Billy Crystal, honored for his work as both the star and book writer of “Mr. Saturday Night”; and Ruth Negga, nominated for her villainous turn in “MacBeth.” There were also several notable omissions. Beanie Feldstein, who took on the role made famous by Barbra Streisand in “Funny Girl,” was overlooked and the revival only scored a single nomination for Jared Grimes’ supporting turn. “Plaza Suite,” a Neil Simon revival that stars real-life marrieds, Sarah Jessica Parker and Matthew Broderick, earned a nod for www.wavesgalveston.com
its costumes, and nothing else. And “The Minutes,” a pitch-black satire of small-town bureaucracy that had scored some of the year’s best reviews, received a nomination for best play but was shut out from other categories. In the wake of the Black Lives Matter movement, Broadway has faced pressure to elevate more stories of underrepresented communities. Many of the shows singled out on Monday, such as “Skeleton Crew,” “Paradise Square” and “for colored girls who have considered suicide/when the rainbow is enuf” deal with issues of race. Often these productions approached that topic with great daring or found fresh resonance in historical texts. “A Strange Loop,” for instance, playfully skewers Tyler Perry’s work while also talking candidly and humorously about sexual identity, while “Trouble in Mind,” was originally slated to debut on Broadway in 1957 until its author Alice Childress refused to make changes that would have watered down its look at racism and misogyny. Had the show debuted when it was intended to, Childress would have become the first Black female playwright on Broadway. The nominations were unveiled as Broadway is trying to claw its way back from the COVID-19 pandemic and the nearly two years of shutdowns that resulted from the public health disaster. The theater business returned in August 2021, but ticket sales have been sluggish at times and nearly every production has been forced to contend with outbreaks of the virus in its cast. Last year’s Tonys were handed out before most theatre had returned in earnest and, despite being awarded in 2021, the show honored the best of 2020, a pandemic shortened year. And yet, in a sign of the industry’s resilience, an impressive 34 new productions opened this season — 15 of which debuted
in April alone. Broadway has also signaled that it believes it is entering a new stage of the pandemic, dropping vaccine checks even as cases rise in New York City. Theaters will continue to enforce a mask mandate.

any people call themselves “music lovers” but few demonstrate that love quite like Old Quarter Acoustic Café owners, Joel and Angela Mora. The Moras acquired the legendary live music venue in 2017, located on 20th street in downtown Galveston, in an effort to preserve the magic of a venue they consider to be one-of-a-kind. Former owner Rex “Wrecks” Bell said he appreciated the Moras intentions during negotiations to stay true to the independent spirit of original music and the power of song that the Old Quarter Acoustic Café had come to represent over its half-century history. Opening in 1965 in Houston before moving to Galveston in 1998, the Old Quarter became famous after legendary American songwriter Townes Van Zandt released Live At The Old Quarter, Houston, Texas in 1977 (though recorded in 1973) featuring the hit song, Pancho and Lefty. Texas songwriters Guy Clarke, Jerry Jeff Walker and Van Zandt were regulars in the Old Quarter with Wrecks Bell eventually becoming Van Zandt’s bass player (he also served as legendary blues man Lightnin’ Hopkins bass player for many gigs). When it came time to sell the club, after Bell suffered a stroke in 2016, the fate of the collection of concert memorabilia that adorn the walls of the Old Quarter, with a special area dedicated to Van Zandt, were of great concern to Bell. “I had 3 viable buyers for the Old Quarter. But when Joel and Angela said they would keep all the memorabilia right where it is – that’s all it took for me to know they were the ones to take it over,” said Bell. Long before he ever fell in love with the Americana, singer-songwriter, folk genre of music the Old Quarter is known for; Joel Mora fell in love with the venue itself. Mora played a gig at the Old Quarter in 1998 with a punk band he had formed called The Hates and was immediately taken by the venue’s atmosphere and its support for original music.
At first a guitarist, then moving to the drums, Mora went on to play metal and punk in the 80’s and 90’s, forming or joining various bands and playing in clubs like Houston’s famed, Axiom. It was at one of his punk shows in the mid 90’s that Mora met his soon-to-be wife, Angela. Angela Mora was a big fan of live music, though not necessarily deeply rooted in the punk scene. “I was in a club in Houston where Joel was playing and I stuck out like a sore thumb. I was wearing white pants and a pink sweater and everyone else was wearing black,” Angela said. The two were married a few years later in 2000 and admit to still enjoying seeing live music together - even on their days off from the Old Quarter. After his first gig at the Old Quarter where he met Wrecks Bell, Joel Mora started listening to other styles of music and developed a deep appreciation for country songwriters like Lucinda Williams, Johnny Cash and Steve Earl. It wasn’t long before Mora formed the alternative country band Red Cap with high school friends J. Rivera and Charlie Rollo. Red Cap released the brilliant “Light Of Day” album on CD in 2011 but disbanded soon after. In 2014 Rivera and Mora formed the Texas Devils and released one self-titled, somewhat experimental, album on red vinyl.
“From the moment I stepped foot in the Old Quarter I thought it would be so cool to own a bar like this,” Mora said. “The Old Quarter means so much to so many people. People come from all over the world – patrons and musicians. I just don’t want that to stop. I just want to keep it going.” Growing up in the 1970’s in Santa Fe, Texas, about 20 miles north-west of Galveston, Mora was exposed to a wide variety of music that included Elvis, Kenny Rogers and Van Halen. “In junior high I discovered Iron Maiden and that was it. Six months prior to taking ownership of the Old Quarter Mora began working the door and bar and learning the ins and outs of running the place from Bell’s wife Janet. On January 7th, 2017 the Moras took full control of the Old Quarter and though they had promised the Bells they wouldn’t change a thing, made a few key upgrades to the place. “We upgraded the sound system, we sell tickets online and now take credit cards,” said Angela. Since recovering from his stroke, Bell has approved the upgrades and become something of an ambassador to the Old Quarter and frequently drops in to take his familiar place in the green room off to the right of the stage to chat with regulars or whoever might be playing that night. “Joel and Angela have done an amazing job,” Bell said. Though Mora doesn’t perform as much as he used to his passion for recording (or running sound from behind the bar) has never let up and he has since formed Old Quarter Records, and produced two live albums from shows at the Old Quarter. 2020’s Gabe Wooten, Live Sessions Vol. 1 and 2021’s Heather Little, Live Sessions Vol. 2 (on blue vinyl with cover layout by Angela Mora and engineered by local musician John Stoll). Both
are available on the Old Quarter website and at the venue. After six years running the Old Quarter Joel and Angela’s enthusiasm for what they do hasn’t wavered. “I laid down one night recently and I said to myself if I died right now that’s fine because this is amazing. I just love music and that’s what I want to put forth into the world. I stand behind that mixing board and I look out into the crowd and see their faces when they see someone they love up on stage. This is what’s life’s about. It’s a beautiful thing and we work very hard, both of us, to make this a great experience for the audience and the people playing here,” Joel Mora said. ed snapper fishing rigs are at times over complicated by many fishermen. The simple rigging methods covered here will help eliminate a lot of it. These rigs and fishing techniques will not only take red snapper, but also ling, dolphin, groupers, etc. These simple rigging techniques are fundamental confidence builders. Simplicity gets it done. This versatility comes by using different sizes and kinds of hooks, egg weights, Mono, Freelining, Carolina rigged, sow rig; call them any of these names; they all apply when these variables come into use. Shown at the top of the illustration is how to form the surgeon’s loop knot that is the heart of the two rigs below it. Knots just don’t get much simpler than this one. After you have taken the two turns through the doubled leader loop, hold the leader and its tag end with your left thumb and forefinger at the 1. After moistening the mono with saliva, pull the exposed loop end at the 2 with your right hand to tighten the knot. Once tightened, clip the tag end to where about 1/8” is left. To build the uppermost leader, place the mono loop through the hook eye from the bend side of the hook. Now, twist it and pass the loop over the bend of the hook, twist it again and pass the loop back over the hook bend, then twist it and pass it over the bend of the hook one last time. Before evenly snugging the wraps around the hook shank, they should look like the enlarged view in the illustration. The result, when pulled up tight, will be the locked loop rig. The second version’s variations to the one above it starts with the addition of an egg weight for depth control. This means use the least you can that will get you to the depth of your target species. Factors determining how much weight, if any, is needed are the weight of your hook and bait, the current, line diameter and type. The other variable is hook placement on the mono leader—to tie this one, first slide the egg weight onto your leader, then place the hook on the mono by running the single strand through the hook’s eye. At this point, your attention to that hook goes up radically. Tie the surgeon’s loop as already described, paying respect to that hook point. When completed, you will have a rig with greater range of motion at the hook, the open loop rig, which translates into a more natural moving/looking bait as it sinks into the depths or flows out with the current. Don’t worry about the egg sinker contacting the surgeon’s loop

knot, it’s ok. Placing one of those plastic or glass beads on the mono between the egg weight and the knot just doesn’t make sense to me. Somehow, soft lead doesn’t provide a fear-factor for me in this area. Don’t forget that very shiny, new egg weights can generate strikes, too. Old and dull, or camo gray or blue painted ones will cut down on this problem. Try these bait presentations when using these leaders. Nose hook your dead baitfish crossways through the eyes or through the head, in front of the eyes, through the bottom of the head and out the top. Hooking through the head top to bottom will roll the baitfish belly up most of the time. This gives another of those naturally distressed, injured, vulnerable looks. You can also pull the tail off a dead baitfish for an increased scent trail. Another commonly used hooking procedure is to run the hook and leader through the baitfish’s mouth and out one of its gill plates, then place the hook in the mid-body area of the baitfish. At that point, it’s ready to fish and has a better chance of a hookup on the first attempt by a short-striker. When fishing these rigs, you can play your line out from boat side or cast it out. When casting, I always recommend that you slow your bait down by thumbing the spool a bit more just before it enters the water. This helps to insure your bait presentation has an immediate, natural look, untangled/unfouled as it sinks into the depths. For a better feel for what’s going on at your hook, hold the line in your left hand while slowly stripping line off your reel. That way, at the pickup you can release the line in your left hand, giving a moment of slack which doesn’t transmit anything unusual going on. Point the rod tip at the line’s entry into the water, reel then into gear; when the line comes tight, set the hook. With a circle hook such as a Daiichi D84Z, when the line comes tight, load the rod and the hookset should be complete. A vigorous hook-setting rod sweep will likely pull the hook out of its mouth without it catching on anything. Otherwise, when using a “J” type hook, a Mustad 10829BLN for instance, that vigorous rod sweep when your line comes tight is the thing to do. Another small thing which can add to your strikes is the simple act of giving your rod tip an occasional twitch. What this does is to give your baitfish the look of being alive but injured and vulnerable. These twitches at times will generate a strike. Many times over the years I’ve seen snapper swim up to or by a bait with seeming indifference, then when the bait is twitched, they

ring something that moves slow and is relatively close. Put your bait close to suspended fish so that they won’t have far to go to get and eat your presentation. Once you find their “holding level”, by counting down your bait’s sink rate, duplicate that count, below the same surface area, on your next cast. You should be in the strike zone again. Another trick is to “fan cast” if necessary; that means that if you don’t get a strike casting straight out in front of you, cast 10 or 15 feet to either side. The fish or the boat could have moved just enough to make a difference. This adjustment may be the move that puts you back on them.

Nature has provided for this so that a fish may grow instead of losing weight chasing prey. This is the reason that, for instance, suspended red snapper will seldom chase a bait very far, prefer-
These leaders, their proper buildup and use will definitely “up” the potential of your bait being eaten. It’s not all that uncommon for that bait twitch maneuver to turn a looker into an eater. There are times when any species are aggressive feeders and seem to eat anything quickly. When that’s not the case, being at the right depth with the twitch added may get ‘em fired up and spittin’ mad or whatever, and the bite is on. These rigs with that added twitch may be the edge you’re looking for; I know they’ve worked for me in my forty-four years of offshore fishing. Simple is best!

Recipe Of The Month
Pork Chops Verde Ingredients
- thick bone in pork chops - 6
- white onion - 1 cup sliced
- cilantro – 3/4 cup chopped
- fresh garlic - 5-6
cloves sliced thin
- serrano pepper - 3 chopped
- brown butter - 1/4 cup - canola oil - 1/4 cup - TSS Tomatillo Avocado salsa - 3 cups
- chicken stock - 32 oz - TSS Tex-Mex seasoning - 2-3 tbsp
- TSS Jalapeno garlic salt - 1 tbsp
- cumin - 2 tsp (more to taste)
- Mexican oregano - 1 tsp
- ground mix pepper-
corns - 2 tsp (more to taste)
- ground sea salt - to taste

tart by heating a skillet to med high with the brown butter and oil. Add chops and lightly season with salt and pepper to brown evenly on both sides. Add garlic and brown then remove from heat. Next, I layer an electric pressure cooker with two big chops each layer and season with Tex-Mex and jalapeño garlic salt, add a third of the cut onion and serrano to each layer as well as some of the brown garlic and leftover oil from pan. After all the layers are set in the pressure cooker cover with chicken stock and any remaining oil from pan. Seal top and set to meat mode for 1.5 hours. o my i sland friends and coastal communities: it’s time to “be on guard”. The 2022 Hurr ican e Sea son is upon us. Ev ery June 1st we get reminded that our island paradise needs to be on guard for what Mother Natu re can bring our way. For the most part, it’s anxi ety and apprehension. The “not knowing” t ends to make us a little uneasy. For us islanders who have been around for 50+ y ears, we tend to tak e things in stride. We begin buying batter ies and extra cases of water. If we have a generator, we will get fresh ga s and make sure it starts, we may even fill up several 5 gall on gas cans….nah, too early for that. For newcomers and those who are stil l an emotional wreck du e to Hurricane Ike in 2008, we un derstand your apprehension. I think what we have learned is that tropical storms can be devastat ing. Islanders do take hurricane sea son seriously, but we don’t want to stop living, or livein total fear. I f you respect the weather and do your preparations, you will be fine. So, let’s talk about what we can do. First, have a site and media stati on y ou can get reliable informa tion. Second, h ave a plan and a place to get off the island and away fr om tidal surge. Third, let people know where yo u are and where you are going. Fourth, make sure you have all medical records and medica tions with you. Fifth, ha ve water and food for sev eral days. Sixth, have cash and credit cards available to use. Finally, clean out your refrigerator and freezer. Leave them propped open and unplugged. Trust me, you would rather give it to the food bank, chur ches, or even throw i t away than to come back to that awful smell of rotting food!!!

You will d ocument the storm for all of us who have sense to leave the island. Lol! No doubt you will video th e rain, rough surf, and wa ves. I thank you now, but just letting you know I’ll be leaving the island early. I’ve done my share of storms in the past, but at my age, it makes more sense to just lock up and leave! So, to all my Island fri ends, enjoy the summer of 2022, but “be on guard” for what looms off the coast. Say a prayer t hat our island paradise will be spared this hurricane seas on. It can’t hurt!
