Cookin’Column It’s Mardi Gras time y’all And Bunny thought

Are your mouths watering yet? Here it is. Bunny’s favorite recipe for Mardi Gras Bread Pudding with Whiskey Sauce.

Ingredients

Use Fresh French Bread R educe Milk To 3 Cups) •

2 Tablespoons Pure V anilla Extract •

1 Cup R aisins •

1 Cup Shredded Coconut •

1 Cup Chopped Pecans •

1 Teaspoon Cinnamon •

Combine all ingredients. The mixture should be very moist but not soupy. Pour into the buttered dish and bake for 1 hour and 15 minutes until the top is golden brown. Serve warm with

Jan & Dean Hi Jan Dean. My wife and I have three grown children, all married with children of their own. I use the term have loosely as it seems that at least one of our grandchildren is in our house regularly. Please don’t get me wrong, I adore our seven grandchildren. My wife Lucy and I are both retired and socially active. One of the many oys of living in Galveston is that we get to take cruises regularly. e are fortunate enough to have good health and nances to do the things we en oy. e both love to travel and be out en oying life. My problem is this: Our adult children expect us to be available to babysit at the drop of a hat. They don’t believe they should have to give us any advance notice and feel like we should drop anything we are doing and be available to babysit immediately. If for some reason we can’t do that, they get very vocally upset with us. It bothers Lucy greatly when our children are upset with us. e worked hard all our lives so we could en oy retirement. To me, that doesn’t mean being on call 24/ for babysitting duty. I feel like our children are showing no respect towards us. hat can we do about this e have canceled many concerts we had good seats for, along with other activities, because Lucy does not like telling our children NO. The list of activities we had planned and canceled is growing daily. Fred Is Fed Up

ello, Fred. I feel your pain. It seems like each year J an and I receive more and more letters from parents stating the ways their adult children disrespect them and do not value their time and interests.

ard to believe, I know, but this time I tend to agree with D ean. Everything he says is spot on, although, from a woman’s perspective, I’m a bit softer on the subject. Grandchildren are precious and grandparents cherish their special times with them to make all those warm priceless memories. Like D ean, I feel those experiences need to be planned and not forced. What I propose is what I have seen other friends who are grandparents do. How about setting aside certain weeks or weekends during the year when you aren t otherwise scheduled for a trip event and sponsor a fun filled dedicated time with your grandkids t could even be called “Camp Mimi & PawPaw” or whatever your grandparent names are. Y ou could fill the time with what you and the kiddos like to do together...movies, arcades, the beach, crafts, baking cookies, etc... ( you can rest afterward! ) Then tell your kids that these are your special pre-arranged times to spend with your kids. The ball is in your court. Let them know, as D ean said, that the impromptu drop-offs of grandkids are no longer acceptable but that you look forward to your special pre-planned experiences with your precious grandkids.

The days of grandparents sitting on their front porches in rocking chairs with blankets covering them are long gone. Today’s seniors are very active travelers, adventurers, and social butter ies. On top of that, many parents today are grandparents in their 40’s, 50’s and 6 0’s. Hardly stay-at-home rocking chair material. I understand why Lucy dislikes your children being upset with her. N o one likes discord in the family. However, there are times when you have to put your foot down. N ow is that time! Tell your children that you will always be there for them in an emergency. Also tell them that with proper, respectful advance notice, you will be happy to babysit on occasion. Grandchildren can be a true joy. But you must tell them in very clear terms that you are finished with the on demand childcare so they can go out and enjoy themselves whenever the whim strikes while you are forced to cancel your plans. Tell your self-centered “ children” 18

Bob R ohan, or as he is known in Texas “ Bad Bob” , has been playing the fiddle and singing in various groups for over 30 years in Texas, and has opened for Merle Haggard, Willie Nelson, Charlie Daniels, Carlene Carter and John Conley to name a few. Bob has played in bands that have backed up country legends like Hank Thompson, Ray Price, Jack Greene, Pam Tillis, and Dale Watson. Along with songwriting, Bob is also a talented cartoonist and has a self syndicated comic strip titled “Buffalo Gals”. The comic feature is about two cowgirls “Bess Winchester” and “Connie Cheyenne”. The comic strip was inspired after playing with “The Hays County Gals and Pals” a cowgirl western group that toured through Texas, Oklahoma and as far west as Elko, Nevada. Bob has won The Wisconsin State Fiddle Championship and has been nominated several times from The Academy of Western Artists for Best Cowboy Cartoonist.

Once upon a time , not so long ago, most people knew exactly where their food came from and who grew it. For most people, the person who grew their food looked at them in the mirror every morning, or at least, knew the person growing their food by name. D uring that time, family farms were just that- a small piece of ground that the family-owned that grew a portion, if not all, of the food the family ate. O n these farms, there would have been a mixture of small livestock and gardens.

2501 Seawall Blvd. is one of the most historic addresses on Galveston Island. Today it is Galveston Island Historic Pleasure Pier boasting tons of rides, attractions, and great food! Growing up on the mainland and the island, I remember this address belonging to the Flagship Hotel. I still remember the first time I went to the Flagship Hotel. I was in the 4th grade. It seemed so grand! Bigger than anything I had seen. My parents took us there to celebrate their anniversary. But what was here first? My grandmother always said a roller coaster was the first to arrive. Here’s some history associated with 2501 Seawall Blvd.

Naked Iguana Brewery Bier , Pivo, Cervez a, no matter how you say it beer is the magic elixir that has sustained and nourished mankind for millenniums. Dating to the ancient Sumerians who lived in modern-day Iran and Iraq, beer was brewed more than eight thousand years ago. It was so important to these ancient people that they even had a Goddess of beer named Ninkasi. Lacking hygiene and knowledge of bacteria and other pathogens, beer provided a safer alternative to contaminated water. Throughout history, beer has played a strong role in the development and advancement of civiliz ation. Beer allowed for long ocean voyages to discover new worlds and foster trade across vast oceans. The coloniz ation of the Americas and the rise of the British Empire owe their success in part to this remarkable beverage. This history echoes to this very day in such popular brews as India Pale Ale. Developed to withstand longer voyages, it relied upon a high alcohol content and the addition of bitter hops to delay and control spoilage. These taste profiles and recipes are captured across the country as most craft brewers offer one or more IPA variants. Our modern food safety and purity laws trace directly to the German R einheitsgesbot; an early purity law controlling the ingredients of beer that is more than 500 years old and is considered the world’s oldest and still valid food safety law.

Beer had much to do with the founding of our country. It is reported that the Pilgrims sailing on the Mayflower were allotted a gallon of beer daily and landed at Plymouth R ock when those supplies ran low thwarting earlier plans to sail further south. How many evenings of beer-fueled discussions in hundreds of pubs led to discontent with English oppression and the beginning of opposition that would lead to our independence and the establishment of the U nited States? It is certain the roots of the revolution and the crafting of our constitution were hammered out in those smoky pubs over tankards of beer and perhaps a little rum. The early days of brewing in America were limited to small local breweries. It wasn’t until the rise of the railroads and refrigerated cars that allowed for mass production and distribution of beers nationwide. R egional centers like Milwaukee and St Louis came to dominate the industry with familiar names Budweiser, Miller, Schlitz , and others. Small regional beers continued to co-exist with these national brands until the great tragedy of Prohibition became the law. This law prohibited the manufacture and sale of all alcoholic beverages including beer and overnight destroyed an entire industry. From 19 20 until it was finally repealed in 19 33, the industry was shut down and all but a few of the large brewers were bankrupt and unable to resume production.

THEATER REVIEW: LIFE ON MY KNEES AT ETC AN ENTERTAININGLY SIDE-SPLITTING COMEDY Let’s begin our review of this production with a quote from director Kim Mytelka’s curtain speech given before the opening night performance that my husband and I attended - “Life On My Knees. It’s not about THAT… please take your mind out of the gutter!” What it is about [as per ETC’s website] is Dr. Helen Hand (Catrin Griffiths) who finds herself in the middle of rural Kansas teaching at Grace Bible College. She has entered an unfamiliar world of rigid moral rules - no smoking, no alcohol, no interracial dating, and no sex. The teacher in the adjacent office, Lloyd Dewey (Cameron Dunbar), is an obnoxious jerk who causes her to have concerns about his professor/student relationships. She decides to take the college into the twentieth century by working from the inside, one student at a time. The students [making their ETC debuts] are Pearl (Aili Maeve) and Richard aka “Dick” Cheney (Christian Tannous), the cheerleader and the quarterback on the football team. They have been taught morals without questioning or doubting. A comedy that looks at our need for faith and doubt and comes up with a surprising conclusion about both was written by prolific and much-lauded playwright William Missouri Downs who has penned everything from NBC sitcoms to Kabuki tragedies. This particular script was the winner of The Beverly Hills Theatre Guild’s Lilian Nesburn Award and a finalist in the Broad Horizon Theatre Company Contest in New York. To describe ETC’s production as unequivocally hilarious almost doesn’t do it justice. From Griffiths’s opening monologue - a pledge-of-allegiance type oath that she must take before being hired by the college - to the final fade out, the titters, chuckles and guffaws delivered by the opening night audience were non-stop. ETC veterans Griffiths and Dunbar gave their usual stellar performances, and, having worked with both of them before, I knew to expect nothing less. Not at all far behind were newcomers Maeve and Tannous whose spot-on characterizations were a joy to watch. I look forward to seeing more from them in the future. Director Kim Mytelka’s staging achieved the lively pace necessary for both the short sitcom-style scenes and the transition between them. Thomas D. Boone’s Multi-location unit set skillfully utilized the ETC space and was well-augmented by Ian Evans’ lighting design. As a possible follow-up - Kim informed me that playwright Downs Is scheduled to attend one of the remaining performances in January. If he does, I hope to interview her to ascertain his thoughts on ETC’s production.

i there, Wavers. The weather has been cold and rainy causing your Bum to stay indoors as much as possible. It may surprise many of you that your Bum is an avid reader and this weather is perfect to get some book time in. Your Bum had an idea the other day while I was out riding around in my ol’ scarab. It’s not like me to have many thoughts in a day, but here is what had me thinking... A good stand-alone novel is hard to beat. Your Bum enjoys a really good mystery, a who done it, that is fun to try and solve along with the main character in the book. What is even better than a stand-alone novel is a book series with strong recurring characters. You get to know the main protagonists and watch them grow year by year throughout the series of books. Here is a list of your Bum’s favorite book series in no particular order. 1 Harry Bosch series written by Michael Connelly Connelly is the best selling author of thirty-five novels. His books have sold over seventy-four million copies worldwide. Your Bum thoroughly enjoys the Detective Harry Bosch series. Bosch is a no-nonsense detective that is a master at

B e a c h solving murders and catching the bad guy. Harry has a couple of sayings that your Bum loves, “Everybody counts or nobody counts” and “get off your a* * and knock on doors. Always start with the first book in the series which is The Black Echo. The Black Echo won the prestigious Mystery Writers of America Edgar Award for Best First Novel in 19 9 2. The series is still being written and going strong today. Elvis Cole oe Pike series written by Robert Crais - Your bum has had the pleasure of meeting Mr. Crais on several occasions. There is no more talented and nicer guy to be found. Originally from Louisiana, Crais moved to Hollywood in 19 79 where he wrote scripts for such television hits as Hill Street Blues, Cagney & Lacey, and Miami V ice. His Monkey’s R aincoat, published in 19 87, is the first in the series of Cole Pike books. Elvis Cole is the self described “World’s Greatest Detective.” He has a Mickey Mouse phone and a Pinocchio wall clock in his office. He drives a bright yellow 66 Corvette and lives in a house near the top

of Laurel Canyon with the meanest cat you have ever heard of. Oh, and he is named after the King. He’s Elvis Cole. Elvis’s partner is Joe Pike. Pike is an ex-Marine and parttime mercenary and gun shop owner. Pike is the toughest guy on planet earth. He is much quieter than the running-off-at-the-mouth Elvis. He is also bigger, tougher, and more at home with the use of violence. Cole and Pike are best friends and extremely loyal to each other. This is a fantastic series. 3 Lucas Davenport Prey series written by ohn Sandford Sandford has published forty books and all have appeared on the New York Times best-seller list. Lucas Davenport is one of your Bum’s favorite characters. Davenport is not your typical crime investigator. He is very wealthy and dresses in expensive designer suits, drives a Porsche, and is very happy to play outside of the rules. A cool, bad dude. The series began in 1989 with Rules Of Prey. Here is a description of the murderer Davenport is chasing: The murderer was intelligent. He was a member of the bar. He derived rules based on professional examination of actual

cases: Never kill anyone you know. Never have a motive. Never follow a discernible pattern. Never carry a weapon after it has been used. Beware of leaving physical evidence. There were more. He built them into a challenge. Good stuff! 4 Myron Bolitar series written by Harlan Coben Your Bum has had the sincere pleasure of meeting. Mr. Coben. What a terrific writer and gentleman he is. The Myron Bolitar books are a terrific series beginning with Deal Breaker, published in 19 9 5. Bolitar is a formerly renowned basketball player that is now the owner of MB Sports R eps, an agency representing sports stars and celebrities. He also helps his clients in times of personal need, which often puts him in the role of “accidental detective.” His favorite drink is chocolate Yoo-Hoo. He is shown to have a self-deprecating humor and drives a Ford Taurus, sarcastically described as his “chick trawler.” His best friend from college, Windsor “Win” Lockwood III, is an ultra-rich vigilante with some serious psychotic tendencies. Win gets very heavily involved in Myron’s cases. Oh, how your Bum would love a friend like Win.

ouston songwriter, guitar, and piano player, John Bockelman doesn’t look or act his age ( although he does resemble famous

Hollywood film and TV actor Martin Mull) but listening to him reel off the long list of live music venues he’s played in from Galveston to The Woodlands since 19 71 and the countless bands he’s been involved with, his age starts to make sense. Born in Galveston at St. Mary’s Infirmary in 19 49 , it only took 8 years on the planet before Bockelman was exposed to rock & roll and immediately hooked. He studied piano from an early age but says his parents and music teachers had hopes for him to be more like Liberace than the rock & roll icon that first moved him. I was in the back seat of our babysitter’s boyfriend’s car one night in 195 outside the roller-skating rink on Stewart Beach in Galveston when I heard the opening piano riff to Blueberry Hill

I have been very successful and prosperous playing the Galveston/Houston circuit. I think it’s great. The venues have all been hospitable and helpful, and I enjoyed playing more than 2,000 gigs here. I have also met and made a whole group of friends for life, which I have enjoyed and appreciated. writing idols. I collected records for 30+ years and I have over 6 ,000 albums that cover all kinds of music. All were inspirations to me as a musician and as a songwriter. T: Who influences you these days and why B: Mainly I’m influenced by the Citykings: Bill Gibson, Scott Burman, and R andolph Arrington, who passed away in 2020. Bill is a poet who happens to be holding a guitar, and Scott telepathically plays his drums perfectly to our songs. R andolph was the anchor of the band, and he propelled us for 26 years. Also, my son Nick’s band, Chironex, has inspired me with current themes.

T: What is your songwriting process B: I’ve written half of my songs on piano and half on guitar. Sometimes I find a song out of thin air. Other times I establish a theme or subject and I create the music from there. I have a 37-minute recording I made of music that I dreamed of. I titled it “Concerto”. It came out good. I’m a member of ASCAP and I currently own 109 copyrights to songs I wrote.

T: What do you love most about being in and playing in Galveston B: Galveston is my hometown. I have lifelong memories from every gig I play here. My grandfather played at places where I ended up playing with Pee Wee. I could feel Mack smiling down at me when I played at Garten V erein, the Balinese R oom, the Galvez , Trumpets, and a few more places that are still going strong.

T: How do you determine what songs to cover and what is your method for learning that song B: When doing covers, I try to do two things: Do songs that nobody else is doing, and in playing them, nail them as close to the original as possible.

T: What is your musical goal for 0 4 B: The Citykings are preparing to record our second album. We have a backlog of original material that is ready to roll. We can’t wait! T: Where is the best place for people to find out where you’re play-

There’s another way ... there always is using “Carolina rigging” and for more simplification, a nose-hooked sardine--Tuna Fishing Simplified is what this piece is all about. A Carolina rig, with its slip weight above the swivel and leader, is the easy way to go as opposed to casting the options previously mentioned. It’s as simple as it gets and has worked for many years but is underused when targeting yellowfin and blackfin tuna. The slip weights generally used are in the one-half to two-ounce siz e range, depending upon the strength of the current and depth of the tuna. Since most of this type of fishing will be done while on overnight trips; listen to the captain for what depth the tuna is being marked. Adjusting the slip weight siz e gets your bait presentation into the strike z one.

An option for fishing this rig is to eliminate the slip weight if the tuna has

If it’s thinner, it’s that much harder for a tuna to see ... stealth again. Five to seven feet swivel-to-hook gets the job done. Hook siz es for circle or “J” hooks are roughly about the siz e of a quarter across or smaller, personal preference, the bend area. A non-slip mono loop knot at the hook works for all the reasons outlined in my piece in the last issue, especially with a circle hook, or use your knot of choice. All that hook needs now is a Spanish sardine of about 5 to 60

Grilled Beef Chuck Street Tacos Ingredients 3-4 lbs chuck roast strips (I buy these at HEB) 1 can fire roasted tomatoes 32oz box of beef stock 2 cups water 4-5 cloves fresh garlic whole peeled 1 yellow onion sliced 3-4 serrano peppers chopped with seeds 1/2 lime juiced 1/2 bunch cilantro course chop 3-4 tbsp TSS Southwestern Sizzler TSS Basic Beef (for meat) Ground mixed peppercorns to taste Ground sea salt to taste Cumin 1-2 tsp to taste 2 tbsp brown butter or ghee Duck fat spray Taquito size flour tortillas Avocado sliced for taco (optional) Fresh chop onion and cilantro (optional topping) 62

hese grilled then braised chuck tacos are some of my favorites and can also be made with wild game the only difference is to add one additional tbsp of brown butter for the leaner game. I used to make my own ghee and brown butter until I discovered Tin Star Foods and is hands down the best I’ve tried and saves time in the kitchen. At my retail store Wild Bill’s, we sell many brands of pellet grills but for this recipe I used a Camp Chef SG ( slide to grill) set on high with a cast iron pot filled with all ingredients except the avocado on one side and the meat closer to where the flames were more exposed for a good sear. Directions Spray chuck beef strips with Duck Fat or oil of choice then season with TSS Basic Beef and grill until brown on all sides. Cut strips into cubes

retaining all juices then add meat to a boiling cast iron pot. Cook until tender with grill on high and add water as needed or extra seasoning to taste. This recipe takes a few hours from prep to plate but is worth every minute after ya take that first bite! I like to dress them street taco style topped with fresh chopped onion and cilantro or topped with a seasoned slice of avocado and TSS tomatillo avocado salsa verde, YU M!!

uring a recent vacation, I had time to re ect on what makes for a “good cruise” or in my case a “great cruise”. So, I thought I would take this time to share some thoughts you might be able to use when you get that itch to go “cruising”. Galveston is becoming an attractive setting for Cruise Lines: Carnival and Royal Caribbean have made their home here. We now have Disney, Norwegian, and Princess. I hear that Viking may be planning a stint here (I’ll keep you posted). It appears cruising out of Galveston will include bigger ships soon. Royal Caribbean has a new state-of-the-art terminal with all the bells and whistles. Its newest ship, the Allure of the Seas, has a capacity of 5,484 passengers. Carnival’s Jubilee had a maiden voyage shortly after Christmas in 2023. As I watched it sail past Willie G’s, I was quite impressed with its size having a capacity of over 6,500 passengers. Here is a list of Cruise lines to look into: Carnival Disney Norwegian Princess Royal Caribbean Here are some common uestions: Do you need a passport for a cruise out of Galveston Although a passport is not required for .S. citizens taking “closed loop” cruises, we strongly recommend all guests travel with a passport (valid for at least six months beyond completion of travel). .S. citizens can present a state-certified birth certificate and government-issued photo ID to sail on most cruises departing from the .S. But a passport is the more efficient, secure option. Can you get off a cruise ship at port without a passport If you take closed-loop cruises (meaning your trip begins and ends at a .S. port), you can sail to a variety of dreamy destinations as a .S. citizen without a passport. What is the cheapest time to book a cruise Prospective cruisers can usually find “a lot of good deals at the beginning of the year” during wave season, according to Goldberg-Glazer. That period typically lasts from January until March. However, the optimal time to book may depend on when you plan to sail. As compared to other vacation packages, cruises can be relatively inexpensive if you plan departure dates during the “offseason” and exible timing, which means you can “pack and go” on short notice. Many of us islanders are in the position to do just that since we live here. By calling the cruise line the day before or the day of departure, you could get a discount because most cruise lines want bodies on board. You hold all the cards learn to negotiate, but be fair, you should not expect to get it for free. I’ve heard some islanders have negotiated up to 50 to 75 discounts. I think that is a great deal Again, it’s all about last-minute booking. As for when to travel consider the school year, summer break, Thanksgiving, Christmas, and Spring Break may not be the best time to go “cruising”. 70

athy and I have raised two great kids and we enjoyed taking them on a cruise, but we have entered the next phase in our lives, and we want it to be about us as too many kids are a distraction. We are getting to know each other again and remembering what attracted us to each other all those years ago (36 years for us). For me it’s the same smile, but maybe with a wrinkle or two. The same laugh when I did something silly. The same sparkle in her eyes that says she still loves me with all my quirks and bad habits. Adult cruises are few and far between, so you must plan and research. For those more intimate getaways I would suggest a “River Cruise”, like Viking, you see advertised on television. These river cruises are pricier, but they cater to people our age. The food is exceptional, the service impeccable, and the sights are spellbinding. If you like what you see on television, you are in for a treat when you see castles, churches, and towns hundreds and thousands of years old. Think of it this way, we live in a country that is 250 years old and you are traveling through towns seeing structures thousands of years old. Can you process that I have yet to meet anyone who was disappointed. Planning for this kind of cruise is different. athy and I planned over a year in advance and just before “the season”. Anytime you have to plan that far in advance, I recommend you get “travel insurance” because you never know what can happen that far out (remember Covid ). Another thing I noticed is many people will travel in groups of 4, 6, and 8. It is fun if you have a group of friends you enjoy and can travel with, especially if it’s understood you do not have to do everything together. Free time, alone time, and quiet time are important. Believe me, there is plenty to do together as a group, and plenty to do with your significant other. I rarely tell people to leave the island, but I would have to say my “River Cruise” was well worth the planning, well worth the money, and well worth the experience. As I get older, I may forget a lot about the trip, but I can promise you that while my health is good and my mind is sharp, I will cherish these memories. So, my island friends, or anyone else wondering about cruising later in life, I highly recommend it. I would also recommend taking one of those River Cruises, (like Viking or researching a few others) like you see on TV. Here is something you can take to the bank, “the views that you see on TV are even better in real life ” Now get out there and get cruising
