lthough we are fortunate enough to live in a mostly tropical climate here on the Island, we do have a few
blustery and cold winter days during this time of the year. Bunny feels that those bone-chilling days call for something warm and comforting to eat as we enjoy our cozy homes. I’m sharing one of my favorite soups - a yummy Cheddar Cheese-Beer Soup that actually has origins from the Beaumont Country Club (although the chef originally used brandy and Cheese Whiz - it was developed in the ‘60s, after all). Bunny has even served this soup for parties in cute little bowls, espresso cups, or shot glasses, so friends could simply pick it up and warm their tummies in small sips, rather than using a spoon. I hope you enjoy it as much as Bunny and her family do!
Directions In a large stockpot over medium heat, melt the butter and add all the chopped veggies. Cook until the onions are soft and translucent, about 3 minutes. Whisk in the flour and cook for another minute more. Stir in the chicken stock and milk and simmer until the soup has thickened, approximately 10 minutes. Whisk in the beer and mustard, Tabasco, and salt. Stir in both types of cheese and stir over low heat until the cheese is melted. Serve warm. *Make sure to not allow it to scald after milk and cheeses are added. This soup can be made up to 2 days in advance and refrigerated. For serving, make sure to warm it gradually over low heat so that it will not scorch. You can thin it with more milk or chicken stock if it is too thick.

1 cup finely chopped celery (3 lg. stalks)

1 cup diced carrots (approx. 2-3 medium)

1 cup medium yellow onion, finely chopped

1 cup thinly sliced green onions, white & green parts

1/2 cup all-purpose flour

3 cups chicken stock
•
3 cups whole milk
•
6 oz. dark beer (Bunny prefers Shiner Bock)

1 Tbsp. dry mustard
•
1 tsp. Tabasco sauce or Cholula
•
1 tsp. kosher salt
•
2 cups (8 oz.) shredded sharp Cheddar cheese

2 cups (8 oz.) shredded Monterrey Jack cheese

( Matricaria chamomilla) hamomile is one of those little herbs that looks so dainty with its yellow center surrounded by white petals, just a happy little
herb with a wonderful apple- like scent. H owever, chamomile is a tough little herb that likes the cool temperatures of spring and early summer. W hen the plant germinates from seed, which it does easily, you will see stems and leaves that look a lot like fern prawns. These leafy green parts are soon topped with the daisy- like blooms that will continue for all of its life span. To harvest, simply cut off the blooms once they have opened. The

Cooper ’ s Landing There really is an East side / West side divide in Galveston. The busy 61st Street corridor that most visitors use to access our beaches is the de facto dividing line. I confess, I am an Eastender as are most of my friends. This is not unusual. Galveston developed around our seaport and for many years the West end of the island was mostly vacant or cattle pastures. Many of us are actually surprised when we visit newer areas like Evia and we see how much has changed while we were hanging out on the Strand all these years. There is development pretty much all the way to the San Luis Pass with beachfront homes and imposing subdivisions. I f you thought Jamaica Beach was an outpost, you need to see what has been happening way out past that pleasant community.

A 16 oz top-q uality bone in ribeye would be my nex t choice. I t’ s my preferred cut and is always flavorful and tender. A braised lamb shank is a Chef Hugo specialty. Missing from many menus, lamb is a delicious meat not fully appreciated by many. Chef Hugo’ s slow roasting brings out the best. Served with angel hair pasta and fresh veggies, it is a real treat. Lots of salads, soups, desserts, and shareables, I ’ ll leave you to discover their vast menu on your own. f it weren’ t for his wife, Andrea, and his new daughter, Josephine, providing League City vocalist, guitarist and multi-instrumentalist Anthony “ The Hungarian Hitman” Puská s a set of priorities he admittedly loves and is deeply committed to, the 34-year-old musician would probably be playing music every night of the week – in 7 different bands. Born in Nassau Bay, Tex as in 1989 (with proud Hungarian heritage) the recent SLM Music Awards (Support Local Music Awards hosted by Scout Bar in Clear Lake) “ Best V ocalist” runner-up has been in and out of, or sitting in with, countless bands in the Galveston / Clear Lake region and playing a multitude of instruments since he began with choir in the 4th grade. By high school, Puská s earned his way into the Symphonic Chorale and Chamber singers at Clear Creek High School in League City and later majored in vocal performance at both Louisiana State U niversity and College Of The Mainland in Tex as City. Though Puská s is a highly efficient, versatile, and locally acclaimed guitar player and drummer, his distinct baritone voice may be his most defining characteristic setting him apart most from other performers. “ My voice coach, Dennis Jesse (at LSU ), was an absolutely amaz ing singer and had a great way of verbaliz ing the more conceptual aspects of singing. Many of the lessons I learned with him I employ in every performance. There was one class in particular that I think was the most valuable of all - Performance Craft. I t was taught by Patricia O’ Neill and it was all about getting rid of stage fright and being truly open and free while performing, ” Puská s said. After two years at LSU Puská s returned to the Houston/ Galveston area and continued his music education at College of The Mainland (2010-2013), including voice lessons from Dr. James Heffel and guitar classes with John Keifer. InDaSkies
With so many talents, Puská s hasn’ t always been the lead singer in the groups he’ s been a part of, and currently divides his time, vocal and lead guitar duties, between three projects, all of which perform in and around Galveston I sland, Clear Lake and Houston; The Bayou Gypsies, a 4-piece blues/ rock/ soul/ funk band doing mostly covers, I nDaSkies, a 6-piece original group playing what Puskus describes as “ cool, reggae fusion” and Anthony & the Hitmen, a mostly covers act Puská s said is “ a hired gun power trio I throw together whenever someone needs a band, but can’ t afford either of the other two.” 56

I n the 4th or 5th-grade choir I had a solo singing a verse of the Billy Gillman song, “ One V oice” . I remember auditioning as kind of a joke, but afterward, my choir teacher, Mike Tuneberg, told me it was the most beautiful thing he’ d heard. He may have been simply encouraging a kid at the time, but I still remember almost 30 years later.
There was always music on in the house or car. Around 4th grade, my neighbor Michael and I would practice and choreograph little concerts to The Backstreet Boys and perform for our parents.
I n the early days it was a lot of pop and country, whatever my mom would listen to in the car. Around 5th grade, I discovered Metallica while watching a music awards show. When I asked my Dad if he had heard of them, he showed me his collection of all their albums, along with his and my stepmom’ s vast library of CDs. My first concert was Metallica, Linkin Park, Limp Biz kit, Deftones and Mudvayne. Some of my favorites from that time were Metallica, Linkin Park, Static-X , P.O.D., System of a Down, Children of Bodom, etc. My mom is the one that got me into Black Sabbath and Rob Z ombie. I ’ ve seen her and my aunt singing “ War Pigs” together more times than I can count!

There’s so much I love about Galveston. It’s like, when you drive over the causeway, you’re entering another country. It has its own vibe and pace of living. It’s always an adventure and no two weekends on the island are the same.
AP: For vocals lately I ’ ve really been loving Eric Burton (Black Pumas), Josh Teskey (Teskey Brothers) and Marcus King. Anything with lots of soul behind it. I think that’ s where I tend to shine vocally. As far as guitar, I ’ ve always kind of had a short list of 5 people: Stevie Ray V aughan, Jimi Hendrix , Carlos Santana, Mark Knopfler, and Kirk Hammett. But lately, guys like Adrian Q uesada (Black Pumas), Marcus King, Cory Wong and Mark Lettieri (Fearless Flyers/ V ulfpeck), Max imillian Newman (Main Sq ueez e), and Henry Garz a (Los Lonely Boys). I tend to pick songs that I really want to play, because they’ re fun. And when you have fun, the audience notices and will reciprocate that energy. I ’ ve been blessed with parents who had very eclectic music collections, so my pool to choose music from is pretty wide. They’ ve actually recommended several of the songs I still play today. When I ’ m learning a song, I typically avoid trying to play it verbatim. I usually just learn the chords and the structure, and then I will hardly listen to the song again. Sometimes it’ s fairly close, but other times you don’ t realiz e what song I ’ m playing until the chorus. I just try to make it my own and have fun with it.
I hesitate to call myself a songwriter, or really participate in singer-songwriter nights. I do have a couple original songs that I will perform occasionally in my solo acoustic shows, but that’ s about it. For the songs I have written, my process is very much the same as it was in school. Pressure, and cramming in one night!
AP: The Social Media aspect. I f you want to remain relevant and engaged with your fans, you have to constantly deal with all the different accounts and marketing, be on top of all the administration; booking, scheduling rehearsals, finding subs, dealing with band drama, traveling, eq uipment management, etc. I can see why people pay managers, PR companies and roadies! None of it has been made easier with a new child though I ’ m q uite fortunate to be in a position to still be able to work full time, take care of the baby, get to rehearsals and performances, and still deal with everything mentioned above. My wife, Andrea, is the only reason I ’ m able to do what I do. She supports me so much and makes sure I ’ m not living in sq ualor while I concentrate on everything else. I am a very lucky man.

Hands down it’ s performing. One thing I heard a long time ago and have repeated many times, usually while loading eq uipment, is “ This is the stuff I ’ m getting paid for, I play for free! ” There are very few ex periences in life that rival the feeling of holding an audience’ s attention in the palm of your hand while you take them on a journey. Or, those spontaneous blips that happen when a band is really in sync with each other.
There’ s so much I love about Galveston. When you drive over the causeway, it’ s like you’ re entering another country. I t has its own vibe and pace of living. I t’ s always an adventure and no two weekends on the island are the same. I ’ ve played big shows at Lone Star Rally at Saengerfest Park and Beach Central, Pleasure Pier, and East Beach. Little gigs at bars like Silver Spot Saloon, Contenders, Bubba’ s, Sharky’ s, and Drunken Monkeyz . One of the cool things about Galveston is that it’ s a tourist destination, especially with the cruise ships docking. Y ou have a steady stream of fresh ears coming by while you’ re playing so your music can potentially have a pretty huge reach. I ’ ve had so many people come up after they watched a set and tell me, “ We heard you from 3 or 4 blocks away and we had to come watch! ” That’ s the kind of stuff I live for. I f I can make someone change their destination and follow my voice through the streets, I feel like I ’ m doing something right.
AP: To continue developing original music. We are working on new material with I nDaSkies at the moment so there should be some new stuff coming out soon! My main goal is to keep a balance between music and family. My daughter is the most important thing in my life right now, so while my priorities have shifted, my passion is still very much alive. There definitely has been, and will be, some compromise and perhaps a small amount of cutting back on gigs. But that will just give me more energy to put into the remaining dates!

The original treble hooks were replaced with similar-siz ed, 3X strong 7794-B Mustad attached to the Diamond Jig body with a siz e 8 Rosco split ring. I n 1995, I suggested heavy-duty split rings. A year or so later, coincidently, the Bead Company started making a Diamond Jig with this hook/ split ring combination. I t was, and still is, called Diamond Jig-For-Rigs by Bead. I guess the solution was also obvious to others.

VENISON, SPICY MUSHROOM GRAVY, AND MASHED GOLD TATERS Ingredients (2) 1/2” thick bone in venison round steaks 6 oz fresh baby Bella mushroom 14.5 oz can fire roasted tomato 8 oz can tomato sauce 32 oz box of beef broth 50/50 butter and oil to brown meat or lard Pinch of flour 2 bay leaves 4 tbsp TSS Rustic Rub wild game blend

appy New Y ear Wavers - Y our Waves Bum hopes everyone enjoyed a wonderful Holiday Season. Y our Bum was very blessed. My family was in town and I also spent some q uality time with very close, long-time friends.
An evening of conversation revealed how there doesn’ t seem to be many television programs worth watching these days. That’s why we all have Netflix, I guess. We almost, to a person, lamented the fact that we liked the old-time television shows much better. As we had a few beverages, your Bum popped this q uestion to everyone: What are your all-time favorite television characters? They could be from any year or any era. Here is a list of the ones that were mentioned the most:
- No actor has ever captured a character like Knotts did with Barney Fife. To this day, some overz ealous small-town deputies are referred to as Barney Fife. The show can still be seen in reruns.
- J.R. Ewing, the villain you loved to hate. President and CEO of Ewing Oil, his dirty business deals were the show’ s trademark. Y ou had to love how J.R. got the best of everyone each time. The J.R. character was the only one to have appeared in every episode.
- Comedian Redd Fox was terrific in this popular series. His arguments with Aunt Ester are television classics. Y ou had to love his fake heart attacks when he was stressed. Puts his hand across his chest and says, “ This is the big one, Eliz abeth I ’ m coming to join ya, honey.”
- (Voted in by our Waves Readers.) Red is a conservative Navy veteran. Despite his mean exterior, he also has a soft side. Red’s hobbies included working with power tools and drinking beer. Smith has said that he modeled his performance after his relationship with his stepdad, who died shortly before the pilot was filmed.
- Lucille Ball was one of the most talented performers to appear on television. I Love Lucy was the first show ever to feature an ensemble cast. Lucy, Ricky, Ethel, and Fred were all terrific. I Love Lucy was the first show to be shot in front of a live audience. It was also the first show to end it’s run at the top of the Nielson ratings.
- Motorcycle riding Fonz ie, with his leather jacket, typified the essence of cool. Snaps his fingers and here come the pretty girls. Although not originally written that way, he became the star of the show. Only two characters, Winkler & Howard Cunningham, appeared in all 255 episodes.
- A unanimous pick. Al Bundy is hilarious with his one-liners and comebacks. I t was the longest-lasting live-action sitcom on Fox and the first to be broadcast in the network’ s primetime slot.
- A favorite of your Bum’ s. Cranston, the cast, the writing and storyline are fantastic. Walter White is a meek, depressed high school chemistry teacher diagnosed with cancer who desperately wants to find a way to provide financially for his family after he passes away. Walter transforms into a treacherous, meth manufacturing drug kingpin worth millions of dollars with some deep, dark secrets.
- A character your Bum can sure relate to. Beer drinking Norm delivered one of your Bums all-time favorite lines: I t’ s a dog-eat-dog world, and I ’ m wearing Milkbone underwear. Sometimes you just want to go Where Everybody Knows Y our Name.
A top-rated show with a fantastic cast. Alan Alda starred as “ Hawkeye” Piece from Crabapple Cove, Maine. He was given the nickname “ Hawkeye” by his father, taken from the name of a character in the novel The Last Of The Mohicans. A surgeon who q uestioned why the Korean War existed. One of the greatest characters ever in a show that is among the highest-rated in television history.
- Created by the great Norman Lear. Fantastic acting and terrific scripts. Also featured the unforgettable theme song, Those Were The Days.

t seems like a daily occurrence. I n almost any parking lot we may be in, we witness someone who has parked in a handicapped or disabled parking place that is obviously not handicapped. I n fact, some people that are parked there almost run towards the store to beat us to the door. We really noticed this during the 2023 holiday shopping season. Tex as House Bill 3095 has simplified enforcement and has increased the fines for illegally parking in handicapped parking spaces from $ 250 minimum to $ 500 max imum, to a minimum of $ 500 and a max imum of
