o most folks, their image of a turkey is a large white bird on a farm living beak to beak with thousands of his own kind.

Today’s meat-producing bird is a much different creature than his wild ancestor. Wild turkeys are beautiful bronze birds, lean and agile. Their survival skills are needed to outsmart their major predators, coyotes, bobcats, and cougars. They are one of the most recognizable species of birds in America and were a major food source for both indigenous people and the first European settlers. It has been estimated that there were ten million wild turkeys in the early 1700s and there are still about six million wild turkeys throughout America today. Texas comes in at number one with nearly half a million wild birds. That compares to forty-six million domestic turkeys that were eaten at Thanksgiving in the United States last year.

Wild turkeys are leaner, tougher, and built for survival. They have keen vision, three times better than 20/20 to spot danger. They can run short distances with a top speed of twenty miles an hour and can fly high into trees to escape predators. They can survive in bitter cold, handle 10

Many small towns in New England have “urbanized” wild turkey problems with the birds taking over neighborhoods, attacking pets, and intimidating residents. Unlike turkeys out in wild spaces these city fowl have lost their fear of people and are trying to be top dogs. Residents are told not to feed the turkeys and try to show no fear if a twenty-five-pound tom charges you. Good luck with that. As expected, funny videos are plentiful on YouTube of turkeys attacking screaming people.

Directions: Preheat oven to 375 degrees. Place potatoes in a Dutch oven or large saucepan and cover with water. Bring to a boil. Reduce heat and simmer until tender enough to pierce a meat fork all the way through the potato. Drain and cool slightly. Peel. (The peels will fall off easily when the potatoes are still warm.)

othing is more frustrating than when bugs come in and destroy all your hard work in the garden.

The reality is that bugs will always be present. Most bugs are neutral, they bring no benefit, but they also cause no harm. Of the remaining bugs, most are good bugs, helping the gardener by pollinating or eating bad bugs. Bad bugs, those that do damage and bring no benefit, are the smallest percentage. A great deal of a gardener’s time is spent trying to eradicate, control, or otherwise defeat the bad guys. I would like to propose a better way to spend your time and energy in the garden: increasing soil fertility. This suggestion may cause you to think I have spent too much time in the sun, but let me explain.

The chemicals we apply to simply kill all bugs actually weaken a plant’s immune system. Fertilizing with synthetic chemicals will pretty the blooms, but the plant itself will be weak. Add compost, organic fertilizers, and soil amendments and you will see a decrease in damage caused by

ello, Wavers! I hope that you’re enjoying some of the cooler weather that fall brings to the island. This month we are taking a look at the history of movie theatres on the island. O ne name kept showing up in my research, Martini. The Ma ti i Theat e - 21st hu ch St The Theatre was built in 19 3 7 for Attilio Martini. His grandson, G. A. Sonny Martini, was the one who brought the 9 9 0-seat Martini Theatre, designed in Art Deco style, to life. It was originally used for both vaudeville acts and motion pictures. little history first. ttilio Martini first tried his hand at grocery stores. The first one ailed, so he saved his money, and eventually opened a second store. This one was successful but groceries weren’t enough. Shortly after the turn o the century, he opened his first theatre. His mark on alveston Island had been set. His rise in island society had begun. The ixie 1 - 2120 Ma ket St This was his first. The history o theatres at this location goes back to when Martini opened the Dixie # 1 Theatre. Then in 19 13 , he opened the Dixie # 2 Theatre in the same building. After Dixie # 1 & # 2 came Dixie # 3 Theatre, later known as the C arver Theatre then L a Plaza Theatre. His fourth theatre was the K ey Theatre. What happened next changed his life. In 19 24 , he acq uired the O pera House. With some remodeling, he opened the first Martini Theater at this location. W

ho doesn’t like a hotdog? According to the National Hot Dog and Sausage Council ( NHDSC) , Americans purchase more than 9 Billion hotdogs per year in grocery stores. Add to that number those consumed in ballparks and restaurants and it is estimated that over 20 Billion are consumed each year j ust in the U SA. Hotdogs are uniformly popular across the U S with numerous regional preferences for buns and toppings. In New England, they use a breadstyle bun uniq ue to that area. New York City vendors serve them up on a steamed bun and in the Midwest and Chicago poppyseed buns rule. Toppings vary as well with mustard and sauerkraut prevailing in NYC and neon-colored relish, pickle, and tomato ( dragged through the garden) heaped high in Chicago. Some Midwestern states prefer ketchup which is repulsive to Texans who prefer chili and cheese with a j alapeno slice. Detroit claims to have invented the Coney dog much to the chagrin of Coney Island where hotdogs have been a staple along the boardwalk for decades. Whatever condiments and toppings you prefer, we can all agree hotdogs are a true American staple. With those volumes and the universal popularity of hotdogs, it seems strange that most restaurants do not offer them on their menu. Among the national fast food chains only Sonic features hotdogs prominently on their drive-in menu. Fortunately, we now have an outlet for premium hotdogs in a restaurant setting. Locally owned restaurant chain Galveston Restaurant Group has recently inked a deal with Nathan’s Famous Inc. to offer those world-famous hotdogs in the League City outpost of their ever-popular Little Daddy’s Gumbo Bar.

Nathan’s dates back to 1916 when Nathan Handwerker and his wife Ida invested their life savings and opened a 5-cent hotdog stand in Coney Island, New Jersey. U sing Ida’s Grandmother’s spice recipe, they created a high-q uality all-beef hotdog that was an instant success. More than a hundred years later, that recipe remains unchanged and we no longer need to travel far to enj oy them. While Caj un food and hotdogs may seem a strange combo, at Little Daddy’s they blend seamlessly and complement a menu that is overwhelmingly Louisiana-inspired thereby offering diversity and choices with something for everyone. The Nathan’s portion of the menu is succinct and even simple. Of course, hotdogs rule and the menu offers six standard configurations including the ever-popular chili cheese dog. Don’t like the combos or you want it dressed your way, don’t hesitate to ask - yes, you can get ketchup on your hotdog here. The hotdogs come on a toasted bun and are j uicy and delicious with the uniq ue Nathan’s spices that we have enj oyed over the years. Combine it with a side of French fries either plain or dressed with your choice of toppings. Move further down the menu and savor the chicken wings. These are huge and battered. Tossed in your choice of sauces. Add some chunky blue cheese or a lighter ranch and some celery sticks and you have a hearty lunch. I am not usually a fan of battered wings, but these are really good and the batter helps hold the sauce for a flavor explosion. You order the wings by the piece, anywhere from 6 to 60. Six were plenty for me as they are large and meaty. Ask for extra napkins as they are as messy as they are good. They also offer burgers. Tall, j uicy, and dressed to perfection - my favorite is the Manhattan. Piled high with onion, pickles, lettuce, tomatoes, and American cheese, it is dressed with mayonnaise and ketchup. It is a two-handed affair; messy and delicious!

They have delicious hand-breaded chicken sandwiches offered with various dressings as well as chicken tender strips and a chicken and waffle combo. I haven’t gotten that far into the menu but it all looks high q uality and delicious. Speaking of menus, the full Little Daddy’s Caj un menu is available including their prize-winning gumbo cooked New Orleans style in steam kettles along with their po’boys, shrimp and fish platters, and fresh from the gulf oysters. Word of warning, the small portion of gumbo is more than enough for most people! For something light and different, try their Vegas shrimp cocktail. It is a Mexican-inspired recipe with pico di gallo and a delicious cocktail sauce served in a tall glass with fresh corn chips. It is spicy, satisfying, and my personal favorite. Friendly service is the rule here. Special req uests are welcomed and the knowledgeable wait staff is eager to guide your choices. There is plenty of off-street parking. The ongoing construction of Interstate 45 is a bit of a challenge, but very manageable. Don’t forget about the other Little Daddy locations. U nfortunately without the Nathan’s menu, the original restaurant on Postoffice Street in Galveston transports you to the French Quarter and is always a treat. With dog-friendly outdoor seating, it is a pleasant place for great food and friendly conversation that picks up with their popular happy hour and some great food and drink specials. For a more casual experience, the Gumbo Diner on Galveston’s Seawall offers many of the same Caj un specialties including the deep rich gumbo, and also offers a full American-style breakfast. Their all-day breakfast specials are a hit with visitors and residents alike. Take home an order of their authentic beignets for a true New Orleans treat. Every year the diner offers a budget-friendly Thanksgiving dinner with all the trimmings that is served all day and is incredibly popular, especially for families with children and others like myself who j ust don’t want to cook a large dinner. Thanksgiving Happenings On The Island

ovember brings us Thanksgiving. This has always been my favorite holiday with family and friends gathering to enj oy a home-cooked turkey dinner. Time and circumstances change and many of us look for non-traditional ways to celebrate this holiday. Some of us prefer to have our traditional meal in a restaurant setting. Others prefer a family dinner at home but do not want to cook. Fortunately in Galveston, we have many options to choose from. Listed below in no particular order are some of the options being offered by local restaurants, hotels, and grocery stores. This is an incomplete listing and there may be some inaccuracies. It is current as of our print date but will be updated online as we receive more information. Grocery stores offer pre-cooked turkeys and hams with or without the traditional side dishes. This is usually the most cost-effective solution for families that do not wish to cook. eague C ity singer-songwriter Tucker Hart is relatively new to songwriting and performing but at 4 2 years old he has lived through more personal challeng-

es than many people will face in a lifetime, making his musical expression sound more like that of a seasoned troubadour than the 3 -year newbie he is. Born in the C lear L ake area, a series of serious medical issues beginning in his twenties left Hart, for a period of time, unable to walk, clothe, and feed himself. Already with 3 kids and a wife and feeling deeply depressed, he attempted suicide. His young daughter had witnessed him taking pills and, as Hart confesses, it was the turning point that pushed him to a path of healing and away from self-destruction. “I couldn’t let that be the last thing she saw,” Hart said.

I like to think of myself as a kind of song stenographer. All the songs I’ve written are poured into me in some unknown manner. I have to hustle to grab a guitar and recorder to document what I’m hearing in my head. All the lyrics and chords come at once. I don’t know what the song is about until it’s finished. While I’m extremely thankful for this gift, you won’t find me teaching a songwriting class anytime soon. T

Remove rom brine and wash. utter y breast out and tenderi e with meat mallet. rush outside with clarified butter and season. Flip over and repeat. Spread thin layer of boudin across turkey and at the top make a line of cheese and peppers or olives to taste. Roll up the breast and cut into smaller pieces to wrap completely in bacon. Season bacon exterior with the Juicy Pig BBQ rub and cook on an offset grill until an internal temperature of 160 then remove and glaze with salted vodka and grapefruit BBQ glaze. Rest 8 minutes before slicing.

Wash, dry and lightly butter yams. Wrap in foil and bake at 350° until fork tender. Once cool to the touch, peel, cut in pieces and place in a shallow pan. For the sauce, start by spreading the pecan halves on foil N

and applying a generous amount of cinnamon and the nutmeg. Broil until brown and remove from heat. In a saucepan, melt ½ stick of butter then add the remaining ingredients. Bring to a boil then remove from heat and stir in pecans and all cinnamon from the foil. Return to heat and as soon as it boils remove, keep stirring until the foam settles and pour over yams. Actors versus real life characters Happy November, Wavers. It was great seeing so many people having fun at the Waves Magazine 6 th Anniversary Party at Roll-N. You Wavers sure know how to party! As many of you know, your Bum is a real movie addict. I love my movies. I had a thought the other day while I was out cruising around in my ol’ scarab. It’s not like me to have many thoughts in a day, but here is what had me thinking… I recently watched atch dams again starring the great Robin Williams or about the fi th time. While watching the film, I wondered what the real atch dams looked like and what was his real full name. Your Bum did a little research and found out. O nce I did that, my mind got racing about other famous people portrayed in movies and what the real li e person looks like in comparison to the actor who portrayed them in the film. Here are some o my avorites

Smart F inancial C enter Report C ard n August 9 th of this year, a group of us ventured to Sugar L and to see the great Daryl Hall and Todd Rundgren perform at the Smart F inancial C enter. The concert was fantastic as we

knew it would be. It was great seeing two rock legends perform live. The Smart F inancial C enter is a very nice venue in which to attend a concert. However, the management of this facility is terrible at best. If we were giving out report cards, the following is how it would all grade out…

Rundgren was already on stage performing his 3 rd song. We found out that he started at 7: 3 0 p.m. You would think that management could at

However, on this night, management chose to rope and block off almost all the parking spaces close to the venue and had everyone parking in the outer remote parking lots. This was during our area heat wave and the temperature was 102 degrees. That obviously meant nothing to the

She was refused entrance and was told to return her purse to her vehicle. We had to walk all the way back to the outer parking lot during 102-degree temperatures and then turn around and walk back to enter.

T

he first thing I thought about when I read this from a friend was, is this a q uestion or a statement? Many Islanders wonder

why our lives have turned out a certain way. Some will say it was predestined, happen chance, goal-oriented, God’s plan, or luck ( or bad luck) .

Regardless of what you believe, look at the results over time. Some people go through life and constantly struggle with finances, health, family issues, and relationships. Sounds like a pretty miserable life if you ask me. But what happens when you look a little deeper and consider your life “over time”? I still look the same, feel the same, continue the same job, and have the same thoughts and beliefs, but what I’ve lost sight of is what I’ve accomplished “over time”… my “influence” on those around me.

My accomplishments are not measured in wealth, notoriety, or being a social media influencer. My accomplishments are measured by the number of people I’ve met, who respect me for who I am and consider me a friend. I know many people who have money and

L astly, many people feel lost as they reflect on their life accomplishments or lack of; divorce, death of spouse or child, kids growing up, illness, and getting old are part of the cross we bear in this life. My only advice to you is, to find strength in faith, family, and friends.

F aith is a personal journey, but we welcome family and island friends to take this journey with us. We are here for each other, BO Is and IBC s may wonder… ”why I do what I do… that’s for each of us to decide, is it a q uestion or a statement”.

of being the

most successful person around. You hope you never have to make that call, but the joy is knowing you have a card to play that most people never do, or never will. This island is full of people who have this card to play. I see “Islanders” who are unassuming, going about doing things for others without pretense, but with joy in their heart. It’s beautiful to see.
