Heathalftheoilinalargepan;brownthechickeninbatches.Setaside.Addremainingoil; frytheonionandcarrotfor10min.Addthebaconandcookfor3min.
Stirinflourandcookfor1min.Graduallyaddstock,stirringwell.Addcreamandreturn chickentopan.Simmerfor5minuntilchickeniscooked.
Addpeasand mustard(ifusing)thencheckseasoning.Allowtocoolalittle.
Preheatovento200°C(180°Cfan)mark6.
Gentlytipinthechickenfillingintoa1litre(1¾pint)piedishorovenproofcasseroledish.
Rolloutpastrytomakealidwhichwillcoverthedishandfilling,thenlayoverthedishand trimofftheexcesspastryaroundthedishwithaknife.Peirceaholeinthemiddleofthepie toallowsteamtoescapewhilstintheoven.Brushthepastrywithbeateneggandcookfor 25-30minuntilgolden.

Placeyourchickenbreastsinanovenproofdish,andseason.
Washandchopyourpotatoesintochips,season,coatinalittleoilandplaceonabaking tray.
Putboththechickenandthechipsintheovenfor25mins.Makesuretocheckonthemafter 15mins,turningboththechickenandchipstoensureevencooking.
Whilstthechickenandchipsarecookingpreparethesalad.Peelthecucumberandsliceit intothinrounds.Slicethelettuceandtomatoesandarrangeontheplatewithgratedcheese andthecoleslaw.
After25minscheckthatthechickeniscookedthrough.Youcanmakealittlesliceinthe thickestpartofthechickentomakesure.Servethechickenandchipswiththesalad.

Preheattheovento190C/170CFan/Gas5.Greaseadeepbakingdishwithbutter.
Mashthepotatoesusingamasherorricer,thenmixinthebutter,milkandmustard.Add two-thirdsofthecheese,thespringonionsandtheeggandbrieflymixtogether.Tasteand seasonwithsaltandpepper.
Spoonthepotatoesintothebakingdish.Youcanleavethetopcraggy,orsmoothwitha spatulathenrunaforkovertoscruffupthesurface.Sprinkletheremainingcheeseover thetop.

Forthedumplings

Seasonthelambanddustwiththeflour.Palceaheavy-bottomcasseroledishoveramedium heat,addtheoliveoilandbutterthenthelamb.Fryuntilgolden-brown.Removethelamband keeptooneside.
Reducetheheatandfrytheonions,carrotsandswedeuntilcaramelised,thenaddthelamband thelambstock.Bringthestewtoasimmerthenaddthebayleafandrosemary.Coverwithalid, transferthepantotheovenandbakeforonehour.
Forthedumplings,mixtheflour,suet,bakingpowderandapinchofsaltinabowl.Addthe rosemarythengraduallystirin3–5tablespoonsofcoldwater,orenoughtoformasticky dough.Flouryourhandsandthenrollthedoughinto12smallballs.Placeonaplateinthefridge tochill.
Whenthelambstewisready,placethedumplingsonthetopofthestewandputthelidbackon. Returnthestewtotheovenfor10minutesoruntilthedumplingsarefluffyandcookedthrough. Slowlypourthewetmixtureintothemixingbowlwhilestirringusingawoodenspoonuntil everythingisroughlymixed.Then,usingyourhands,furthermixandkneadthedoughuntilitis elasticandslightlytackybutnotoversticky.Placethedoughinthemixingbowlandcoverwith adampteatowelandleavefor1houruntilthedoughhasdoubledinsize.
Flouraworksurfaceandusingarollingpin,rollthedoughuntilitisroughlythesizeofthepizza trayyouareusing.Placetherolledoutdoughontothetrayandusingyourfingers,workthe doughuntilitfillsthetray.
Brushthesurfaceofthedoughwitholiveoilandthenaddenoughsaucemixtocoverthebase spreadingevenly.Sprinkleonthegratedcheesefollowedbyyourtoppingchoice.

Method
Cookthemacaronipastainalargesaucepanofboilingsaltedwaterfor8–10minutes,oruntil justtender.Drainwellandsetaside.
Meltthebutteroveramediumheatinasaucepanslightlylargerthanthatusedforthe macaroni.Addtheflourandstirtoformaroux,cookingforafewminutes.
Graduallywhiskinthemilk,alittleatatime.Cookfor10–15minutestoathickenedandsmooth sauce.
Meanwhile,preheatthegrilltohot.
Removethesaucefromthehob,add175g/6ozofthecheeseandstiruntilitiswellcombinedand melted.

Strainandpushanyremaininglumpsthroughasieve.Stirinthethyme.Coverandleaveto standfor30minutes,orideally3-4hours.

Returnthepantotheheatandaddhalfthebutter,theonionandmushroomsandfryfor5 minutes,stirringregularly,untiltheonionissoftenedandthemushroomsarelightlybrowned. Addthegarlicandbayleafandcookfor1minute,stirring.
Addthericeandcookfor20–30seconds,stirringconstantly.
Addaladlefulofthehotstockandstirwell.Cook,stirringconstantly,untiltheliquidhasalmost disappeared.Continueaddingstockaladlefulatatime,stirringconstantlyandsimmeringuntil absorbed,forabout15minutes,oruntilthericeistenderandcreamy,withaslightbite.

Putthesausagesinaroastingtinandplaceinthepreheatedoven.Cookfor10minutesthen turnthesausagesandcookforafurther5minutes,oruntiltheyhaveagoodcolouronthe outside.
Addtheslicedonionstothetin.Mixthedriedherbs,mustardandstocktogetherandpour overthesausagesandonions.Returnthetintotheovenforafurther20minutes,oruntilthe sausagesarecookedthroughandtheoniongravythickened.Seasontotastewithsaltand pepper.
