Method

Heathalftheoilinalargepan;brownthechickeninbatches.Setaside.Addremainingoil; frytheonionandcarrotfor10min.Addthebaconandcookfor3min.

Stirinflourandcookfor1min.Graduallyaddstock,stirringwell.Addcreamandreturn chickentopan.Simmerfor5minuntilchickeniscooked.

Addpeasand mustard(ifusing)thencheckseasoning.Allowtocoolalittle.

Preheatovento200°C(180°Cfan)mark6.

Gentlytipinthechickenfillingintoa1litre(1¾pint)piedishorovenproofcasseroledish.

Rolloutpastrytomakealidwhichwillcoverthedishandfilling,thenlayoverthedishand trimofftheexcesspastryaroundthedishwithaknife.Peirceaholeinthemiddleofthepie toallowsteamtoescapewhilstintheoven.Brushthepastrywithbeateneggandcookfor 25-30minuntilgolden.

preheattheovento200degrees.

Placeyourchickenbreastsinanovenproofdish,andseason.

Washandchopyourpotatoesintochips,season,coatinalittleoilandplaceonabaking tray.

Putboththechickenandthechipsintheovenfor25mins.Makesuretocheckonthemafter 15mins,turningboththechickenandchipstoensureevencooking.

Whilstthechickenandchipsarecookingpreparethesalad.Peelthecucumberandsliceit intothinrounds.Slicethelettuceandtomatoesandarrangeontheplatewithgratedcheese andthecoleslaw.

After25minscheckthatthechickeniscookedthrough.Youcanmakealittlesliceinthe thickestpartofthechickentomakesure.Servethechickenandchipswiththesalad.

Method

Putthepotatoesintoalargesaucepan,coverwithwaterandadd1teaspoonofsalt.Boilfor 12–15minutesuntilthepotatoesaretender.Drainwell,thentipbackintothesaucepanovera lowheattosteam-dryforafewminutes.

Preheattheovento190C/170CFan/Gas5.Greaseadeepbakingdishwithbutter.

Mashthepotatoesusingamasherorricer,thenmixinthebutter,milkandmustard.Add two-thirdsofthecheese,thespringonionsandtheeggandbrieflymixtogether.Tasteand seasonwithsaltandpepper.

Spoonthepotatoesintothebakingdish.Youcanleavethetopcraggy,orsmoothwitha spatulathenrunaforkovertoscruffupthesurface.Sprinkletheremainingcheeseover thetop.

Bakefor35–40minutesuntilthetopiscrispandwellbrowned.Servewithacolourfulsalad, pickleandmustard,orsteamedgreenvegetables.

Boilandmashpotatoes.Setasidetocool(notcold).

Cutupcornedbeefandaddtopotatoes.Preheatovento180degrees. Addrestofingredients(except2additionalbeateneggs).Mixthoroughly. Rollintorissolesorshapeofcroquettes.

Dipintobeateneggandrollinmorebreadcrumbs. Bakeonalightlygreasedtrayfor25mins,oruntilgoldenandcrisp. Turntherisolesonthe trayafterabout12minsintheoven.

Thesemaybere-heatedinovenontrayifnotusedatonce.Sizeofthetinofcornedbeefcan alsobechangedtosuit.

Preheattheovento120C/250F/Gas½.

Forthedumplings

125g plainflour

1tbsprosemary,finelychopped 500ml/18flozlambstock(optional)

Seasonthelambanddustwiththeflour.Palceaheavy-bottomcasseroledishoveramedium heat,addtheoliveoilandbutterthenthelamb.Fryuntilgolden-brown.Removethelamband keeptooneside.

Reducetheheatandfrytheonions,carrotsandswedeuntilcaramelised,thenaddthelamband thelambstock.Bringthestewtoasimmerthenaddthebayleafandrosemary.Coverwithalid, transferthepantotheovenandbakeforonehour.

Forthedumplings,mixtheflour,suet,bakingpowderandapinchofsaltinabowl.Addthe rosemarythengraduallystirin3–5tablespoonsofcoldwater,orenoughtoformasticky dough.Flouryourhandsandthenrollthedoughinto12smallballs.Placeonaplateinthefridge tochill.

Whenthelambstewisready,placethedumplingsonthetopofthestewandputthelidbackon. Returnthestewtotheovenfor10minutesoruntilthedumplingsarefluffyandcookedthrough. (Alternatively,ifyouareshortofspaceinyourcasseroledish,place500ml/18flozlambstock intoaseparatepanandbringtoasimmer.Addthedumplingsandsimmerfor6–8minutes. Discardthestockwhenthedumplingsarecookedandsetthemasidetorestforaminute.)

Sievethestrongwhiteflourintoalargemixingbowl,addthesaltandpepper.

Addthewater,yeast,sugarandoliveoilintoajugandleavefor3minutestoallowtheyeastto activate.

Slowlypourthewetmixtureintothemixingbowlwhilestirringusingawoodenspoonuntil everythingisroughlymixed.Then,usingyourhands,furthermixandkneadthedoughuntilitis elasticandslightlytackybutnotoversticky.Placethedoughinthemixingbowlandcoverwith adampteatowelandleavefor1houruntilthedoughhasdoubledinsize.

Flouraworksurfaceandusingarollingpin,rollthedoughuntilitisroughlythesizeofthepizza trayyouareusing.Placetherolledoutdoughontothetrayandusingyourfingers,workthe doughuntilitfillsthetray.

Brushthesurfaceofthedoughwitholiveoilandthenaddenoughsaucemixtocoverthebase spreadingevenly.Sprinkleonthegratedcheesefollowedbyyourtoppingchoice.

Cookthepizzainpreheatedovenat200Cfor20minutesandthenserve.

Method

Dredgethedicedlambintheseasonedflour,andinalargepot,heattheoiluntilhot;addthe floured,dicedlambandcookfor3to4minutes,stirringallthetime,untilthelambhasagolden browncrust.

Turntheheatdown,add2litresofwater,beforeaddingthedicedpotatoes,carrots,swedeand parsnips.Seasontotastewithsaltandpepper,placealidonthepotandsimmerfor2hours,or untilthemeatistenderandthevegetablesarecooked.20minutesbeforetheendofthecooking time,addthechoppedleeks,replacethelidandcontinuetocook.

Checkandadjusttheseasoning,scatterthechoppedfreshparsleyoverthecawl,thenservein warmedsoupbowls,givingeachpersonsomemeat,vegetablesandthebroth.Deliciouswith crustybreadandCaerphillycheese.

returnthebaconandbeeftotheonionsalongwiththestock,carrots (andanyherbsyoumight havearound)placealidonthepanandcookonalowheatfor1hour.

Afteranhouraddthepotatoesand pearlbarleytothepotandcookforafurhterhour,oruntil thebeefistender.

Mac'n'Cheese

250g/9ozmacaronipasta(althoughmostpastaswillwork)

40g/1½ozbutter

40g/1½plainflour

600ml/1pint1½flozmilk

250g/9ozcheddar,grated

50g/2ozParmesan(orasimilarvegetarianalternative),finely grated

Mixedgreensaladtoserve

Method

Cookthemacaronipastainalargesaucepanofboilingsaltedwaterfor8–10minutes,oruntil justtender.Drainwellandsetaside.

Meltthebutteroveramediumheatinasaucepanslightlylargerthanthatusedforthe macaroni.Addtheflourandstirtoformaroux,cookingforafewminutes.

Graduallywhiskinthemilk,alittleatatime.Cookfor10–15minutestoathickenedandsmooth sauce.

Meanwhile,preheatthegrilltohot.

Removethesaucefromthehob,add175g/6ozofthecheeseandstiruntilitiswellcombinedand melted.

Addthemacaronitothesauceandmixwell.Transfertoadeepsuitably-sizedovenproofdish. SprinkleovertheremainingCheddarandtheParmesanandplacethedishunderthehotgrill. Cookuntilthecheeseisbrownedandbubbling.

2 tbsp/30g of beef dripping or white vegetable fat for vegetarians

Tomakethebatter,sifttheflourintoalargebowl.Addthesaltandpepper.

Makeawellinthecentreoftheflourandcrackintheeggs.Usingawoodenspoon,gradually beattheeggsintotheflourthenslowlybeatinthemilkuntilthebatteristheconsistencyof doublecream.

Strainandpushanyremaininglumpsthroughasieve.Stirinthethyme.Coverandleaveto standfor30minutes,orideally3-4hours.

Preheattheovento200C/400F/Gas6.

Heatalargenon-stickpanandcookthesausagesoveramediumheatuntilgolden-brownall over.(Ifyoudonothaveanon-stickpanaddalittleoil.)Turnofftheheatandbrushthesausages withthemustard.Setaside.

Placethedrippingorwhitevegetablefatintoanovenproofdishandheatintheovenforfive minutesoruntilthedrippingishotandhazy.

Addthesausagestothehotdishandpourinthebatter.Immediatelyreturnthedishtotheoven andcookfor35-40minutesuntilwell-risenandgolden-brown.

Method

Heattheoilinawidesaucepanorflameproofcasseroleoveramedium–highheat.Seasonthe chickenwithalittlesaltandlotsofpepperandaddtothepan.Fryfor4–6minutes,turning occasionally,untillightlybrownedandcookedthrough.Transfertoaplate.

Returnthepantotheheatandaddhalfthebutter,theonionandmushroomsandfryfor5 minutes,stirringregularly,untiltheonionissoftenedandthemushroomsarelightlybrowned. Addthegarlicandbayleafandcookfor1minute,stirring.

Addthericeandcookfor20–30seconds,stirringconstantly.

Addaladlefulofthehotstockandstirwell.Cook,stirringconstantly,untiltheliquidhasalmost disappeared.Continueaddingstockaladlefulatatime,stirringconstantlyandsimmeringuntil absorbed,forabout15minutes,oruntilthericeistenderandcreamy,withaslightbite.

Returnthechickentothepanalongwiththefinalladlefulortwoofstockandcook,stirring,for 3minutes,oruntilhotthroughout.Therisottoshouldlookquitesloppyatthispoint,butitwill continuetoabsorbthestock.(Addasplashmorejust-boiledwaterifyourrisottoislookingdry.) Removethepanfromtheheat,stirintheParmesanandremainingbutter.Coverwithalidand leavetostandfor5minutes.Beforeserving,stirwell,andscatterwiththeparsley,ifusing.

Putthesausagesinaroastingtinandplaceinthepreheatedoven.Cookfor10minutesthen turnthesausagesandcookforafurther5minutes,oruntiltheyhaveagoodcolouronthe outside.

Addtheslicedonionstothetin.Mixthedriedherbs,mustardandstocktogetherandpour overthesausagesandonions.Returnthetintotheovenforafurther20minutes,oruntilthe sausagesarecookedthroughandtheoniongravythickened.Seasontotastewithsaltand pepper.

Whenreturningthesausagesandgravytotheovenputthefrozenovenchipsinorthe chippedpotatoes,coatedinalittleoil.

Cookthepeasinasaucepanofboilingwaterfor2–3minutes,orsteamthemfor1–2minutes. Drainthoroughlyandsetaside.

Forthesausagesandoniongravy,mixthesoftenedbutterandplainflourtogethertoform apaste.Removethesausagesfromthebakingtray,setasideandcovertokeepwarm.Place thebakingtrayontothehob,addtheflourandbuttermixtureandwhiskuntilcombined.
