Respect for tradition, the local community and a creative take on food, beverage and private events are the foundation of The Shanty and the Shanty culture. The restaurant has been a gathering place for neighborhood locals to eat, drink and socialize for decades. Dimitri Kallianis and his family purchased The Shanty, 38985 Hwy. 41 in Wadsworth, Ill., in 2006. The Kallianis family—parents Dino and Elaine, and siblings Dimitri, George and Notah—also owns and operates the building next door, Captain Porky’s Seafood and Barbecue. As the community of Wadsworth has grown through the years, so too has The Shanty. By late 2010 The Shanty was reconstructed using local reclaimed barn wood restored from neighborhood farms. In 2018, The Shanty expanded again, tripling in size to add additional indoor spaces and a 24-seat outdoor deck overlooking the forest preserve. The menu boasts dishes from burgers to pasta to beef, chicken, pork, lamb and seafood. One of the restaurant’s specialities is their apple brandy braised pork shanks (right). Voted the Best of Chicago in 2019, The Shanty has been highlighted on TV shows such as Food Network’s “Diners, Drive-ins and Dives” in 2010 and 2018. The Kallianis family looks forward to your next visit in Wadsworth. a

Midwest Foodservice Expo Canceled The Midwest Foodservice Expo, scheduled for March 21-23, 2021, has been canceled. Since 1933 the Wisconsin Restaurant Association has been hosting the Midwest Foodservice Expo, an important resource of information, products, services and connections for thousands of people in the foodservice industry. Holding this event in the first quarter of the year has always been an exciting start to the upcoming tourism season. While there were exciting plans for 2021 to bring everyone together to once again do business face to face, the growing uncertainty due to COVID-19 has caused the association to go from optimism to realism. With Milwaukee still not allowing large gatherings, coupled with COVID spiking in the state, a difficult decision was made. The safety of everyone is a priority. And getting the industry through this crisis is the association’s main focus right now. There is no re-schedule date planned. WRA will be creating other opportunities in the near future that will help suppliers and restaurateurs do business together again. food_industry_news_ad.indd 1

DINING WITH

AMAZING BREADS & CAKES, 1460 Miner St., DES PLAINES, Ill.; 847-376-8612. Across the street from the Metra train station, this is a cute shop with fresh-baked breads, croissants, pastries, cookies, drinks and more. Everything looked appealing, so it was hard to decide what to order. I chose a combination of goodies that included three kinds of cookies; raspberry, peanut butter and shortbread. I also picked up a blueberry scone. BLACKWOOD BBQ, 1711 E. Golf Road, SCHAUMBURG, Ill.; 630-283-0882. Barbecue is the specialty of the house. They have brisket, pulled chicken, pulled pork, ribs, a Nashville hot chicken sandwich, tacos and a big selection of house-made sides. I tried the brisket sandwich. The bun was soft, the meat was tender and the sauce was good. For my sides, I had an order of smoked beans, coleslaw and honey cheddar corn bread. Everything was outstanding! They have locations in Chicago too.

FRATO’S CULINARY KITCHEN, 628 S. Roselle Road, SCHAUMBURG, Ill.; 847-895-2122. This place has so much to offer: beef, hot dogs, gyros, chicken and handmade burgers. Check out some of the clever names on their menu items. They are also known for their pizza. I ordered the “one-pound pizza slice” with sausage. They were right on the money about the size—it took up the entire to-go container. It was made to order and doughy with a nice crust and gooey cheese. Yum! LA ROSITA FRESH MARKET, 500 North Ave., GLENDALE HEIGHTS, IL 630-534-6890. This is a grocery store with two locations, specializing in dry and refrigerated products from Mexico and South America. In addition to grocery items, they have a wonderful bakery. Also, two hidden gems are located inside the market: the Taqueria and the La Rosita Michoacana (ice cream shop). At the Taqueria, I had an al pastor (seasoned pork) taco and asada (steak) burrito. Both were authentic and delicious. At the Michoacana I had a chocolate shake topped with whipped cream. Heavenly! QP GREEK FOOD WITH A KICK, 830 N. Roselle Road, HOFFMANN ESTATES, Ill.; 224-353-6999. I only tried two things here and I was very impressed. The first was their egg lemon soup, which was really good. The second was their broasted Greek chicken, which I ordered spicy. The flavor and crisp skin on that chicken was amazing. On the menu they also have Greek meatballs, Greek wings, pastitsio, gyros, ribs and kababs. There is a drive-thru, making it easy for pick-up. TACO MELLY, 16 S. Fairview Ave., PARK RIDGE, Ill.; 847720-4288. Mexican specialties include guacamole and chips, nachos, tacos, empanadas and burritos. You can choose to get a taco or a bowl, which comes with choice of brown or white rice. I tried the Hawaiian shrimp bowl. It had pineapple in it. Plus, I got an order of the guacamole and chips and a side of elote, which is Mexican corn. Their food is very light and tasty. TROPCIAL SMOOTHIE CAFÉ, 4874 N. Lincoln Ave., CHICAGO; 773-681-0394. When you walk in and hear the island music playing, it puts you in the mood for a refreshing smoothie. This cafe is known for its healthy, made-to-order smoothies and fruit-blended smoothies along with sandwiches, wraps, bowls and salads. I tried one of the peanut butter cup smoothies: peanut butter, chocolate and banana, which was creamy and delicious.

Ghost Kitchen Sets up Shop at Chicago’s Godfrey Hotel

Oxford Capital Group, the real estate investment and development firm, proudly announces a partnership with Butler Hospitality as the NYC-based ghost kitchen for hotels launches in Chicago, operating a new all-day dine-in restaurant on the ground-floor of The Godfrey Hotel Chicago (pictured) and expanding virtual room service to additional hotels. "We are thrilled to partner with Butler Hospitality to open their first ghost kitchen in Chicago at The Godfrey Hotel," says Sarang Peruri, COO, Oxford Capital Group LLC and partner, Oxford Hotels & Resorts. "The Godfrey's location is perfectly situated in the heart of the city, and with the increased demand for room service and delivery during the COVID-19 pandemic, we are excited for the opportunity to fill a need for our guests and the entire city to enjoy." Oxford will continue to manage I|O Godfrey, one of the largest and most successful rooftop venues in Chicago. For restaurant hubs, Butler turns the operational loss of each restaurant, traditionally tolerated by the industry and made up with higher room rates, into a reliable rent payment. For hotel partners without kitchens, Butler provides virtual room service at no cost while providing an equitable revenue share structure with ownership. Butler ensures the highest quality standards by controlling the entire process from menu design to ordering to preparation to delivery.

WINTER IS COMING!

Add Wikki Stix to Kids’ To-Go Meals

Kids matter, especially when it comes to restaurants, the food and the toy that comes with the food! Don’t forget how important that toy is just because the food is going into a take-out bag or delivery box. For kids who are stuck at home because of the COVID-19 pandemic, a fun surprise is more than welcome. Wikki Stix restaurant units are self-contained and come in a clean poly bag, which parents appreciate. They are small and easy to drop into the to-go box and perfect for ages 3 to 8. Each unit offers eight colorful Wikki Stix and a fun two-sided activity sheet. All you have to do is ask if there are any kids in the household . Wholly Made in the USA, Wikki Stix conform to all CPSIA safety requirements and are approved for use in schools. Indeed, teachers are using the mini-play “paks” this year as a teaching tool, providing one play pak for each child so he or she has his own to use, and nobody touches or shares. Wikki Stix are so versatile that, for at home fun, kids can make 3-D creations or flat designs to hang on the fridge. Wikki Stix units have been a standard in the restaurant industry for 30 years. Case packs are available in quantities of 250, 500 and 1,000 units and ship from the manufacturing plant in Phoenix, Ariz. See the Wikki Stix ad on page 3.

"We recognize the importance of using the finest beef available, and our patented process produces a whole-muscle, allnatural, smoked and uncured beef bacon like no other. Every pork bacon lover and non-pork eating person will love the crispy, and unforgettable flavor you can only get from America's Steak Bacon."

National Urban League Launches Black Restaurant Accelerator Plan Powered by $10M Grant from PepsiCo

“An optimist stays up until midnight to see the new year in. A pessimist stays up to make sure the old year leaves.” —William E. Vaughn

dec 2020 9-16.indd 12

The National Urban League and PepsiCo joined forces to create the Black Restaurant Accelerator, which will boost approximately 500 Blackowned businesses over the next five years. The PepsiCo Foundation is providing a $10 million grant to fund the program, which will provide current and aspiring Black restaurateurs with access to capital, training, mentorship and other support services that are necessary for business success. Black entrepreneurs have long faced systemic barriers to growth, including access to loans and capital, biased community perceptions and gentrification challenges. These hurdles have been compounded by the COVID-19 pandemic, as demonstrated by the 41% of Black-owned businesses that have shuttered since February 2020 compared to just 17% of white-owned businesses, according to a 2020 study by the University of California-Santa Cruz Through

National Urban League Entrepreneurship Centers in 12 cities across the U.S., the Black Restaurant Accelerator will not only help address these barriers, but also take a long-term view by pairing participants with entrepreneurship advisors and PepsiCo employee volunteers to build an actionable plan for growth. National Urban League will begin accepting applications for the program in the first quarter of 2021. Learn more about Urban League Entrepreneurship Centers and other workforce development programs by visiting NUL.org. Efforts to the tune of $400 million are being made over the next five years to advance racial equality within the company, industry and the communities it serves. Grocery to Install Hospital-Grade Air Filters Following recently issued Centers for Disease Control guidelines stating that the COVID-19 virus can be spread through the air, Lidl US announced it will install new air filtration systems rated MERV 13 or higher in all of its U.S. stores by the end of this year. Air filters rated MERV 13 or higher, which are typically found in hospitals, help filter out COVID-19, according to public health and industry leaders. Lidl US is among the first national grocery retailers to install hospital-grade air filtration systems across its entire store network.

Fortune Magazine Reveals 2020 List of Most Powerful Women in Business

Fortune has announced the 2020 edition of its Most Powerful Women in Business list, which includes 16 Fortune 500 CEOs, and the return of Jane Fraser, who in February will become the first woman to head a major U.S. bank. Top honors go to Accenture CEO Julie Sweet for the first time. Fortune has used the same four criteria to rank the Most Powerful Women list since its advent in 1998: the size and importance of each woman’s business in the global economy; the health and direction of the business; the arc of her career; and her social and cultural influence. Now, to account for this moment of crisis and uncertainty, as well as positive change, the list also considers how the executives wield their power, and whether they are using their influence to shape their companies and the wider world for the better. And the list is: 1. Julie Sweet, CEO, Accenture 2. Mary Barra, chairman and CEO, General Motors 3. Abigail Johnson, chairman and CEO, Fidelity Investments 4. Gail Boudreaux, president and CEO, Anthem 5. Carol TomÊ, CEO, UPS 6. Jane Fraser, CEO of global consumer banking; president, Citi 7. Ruth Porat, SVP and CFO, Google, Alphabet 8. Sheryl Sandberg, COO, Facebook 9. Corie Barry, CEO, Best Buy 10. Judith McKenna, president and CEO, Walmart International, Walmart

BOOKSHELF ‘Christmas Cupcake Murder’ Publisher: Kensington Hardcover: 368 pages Price: $22.95 ISBN-13 : 978-1496729125

As December turns Lake Eden into the North Pole, the heat is on in Hannah Swensen’s kitchen to honor two Christmas promises: baking irresistible holiday cupcakes and preventing murder. While Hannah speeds through a lengthy holiday checklist, drama in town grows like Santa’s waistline on Christmas Eve. Her sister Andrea wants to stave off the blues by helping out at The Cookie Jar, Michele’s love life is becoming complicated, Lisa needs Hannah’s advice, and Delores has a Christmas secret she’s not willing to share. But nothing dampens the holiday mood more than the chilling mystery surrounding the man found near death in an abandoned storefront two doors down from Hannah’s bakery. The befuddled John Doe can’t recall a thing about himself—except for his unusual knowledge of restoring antique furniture. With a smattering of clues and barely enough time to frost Christmas cookies, Hannah must solve a deadly puzzle that could leave her dashing through the snow for her life! New Legal Update for Reporting COVID-19 in Food Service Industry

A&W’s Drive-Ins Work Well in Uncertain Times A&W Restaurants’ tradition of operating in less-populated areas and popular summer vacation spots has paid off during the pandemic, as consumers working remotely fled big cities. Some A&W units are family-run and many are old-fashioned drive-in restaurants. -Source: Restaurant Business

The Occupational Safety and Health Administration (OSHA) has published two additional answers to its list of COVID-19 frequently asked questions to clarify when employers must report COVID-19 hospitalizations and fatalities. Reporting Hospitalizations: OSHA requires employers to report in-patient hospitalizations only if the hospitalization occurs within 24 hours of an exposure to COVID-19 in the workplace. Employers must report COVID-19 hospitalizations only if the hospitalizations are:  For in-patient treatment; and  The result of a work-related case of COVID-19. The report must be submitted within 24 hours of the time the employer determines there was an in-patient hospitalization caused by a COVID-19 case in the workplace. Hospitalization for diagnostic testing or observation only is not “inpatient” hospitalization. Reporting Fatalities: OSHA requires employers to report fatalities that occur within 30 days of an exposure to SARS-CoV-2 in the workplace. Fatality reports must be submitted within eight hours of the time the employer learns that the fatality took place and was due to a work- related exposure. Recording Requirements: Employers can review their COVID-19 recording requirements on OSHA’s website, www.osha.gov/. This legal update, provided by Task Insurance LLC, is not intended to be exhaustive nor should this be construed as legal advice. Readers should contact legal counsel for legal advice. —Tony Parato, Task Insurance See their ad on page 20.

RATS! Some Key Components of Rodent Prevention Explained Having a well-trained staff in inspections, recognition of rodent signs and the importance of keeping doors closed can pay dividends in pest prevention. Personnel Doors: One easy way to assess doors for gaps is to look at the base of the door from the interior and check if light is visible. If light is visible, the preferred rodent proofing seals to use are rubber encased steel fabric or high-density brush-style sweeps. When choosing the door sweeps best for the facilities, keep in mind the size of the door. Personnel doors in commercial facilities are normally 36 to 48 inches wide, with some door sweeps pre-cut to fit these lengths. Pre-cut door sweep kits make installation easier; however, they must cover the bottom corners of the doors, so it stays wellsealed and not vulnerable to pest entry. Overhead Doors & Dock Doors: Just like personnel doors, overhead doors can be a common rodent entry point. Their repeated opening and closing make them susceptible to rodents as well as forklift damage that they are often subject to, which can leave doors accessible to pests. Dock Plates: The side edges around dock plates (pictured at right) are prone to rodent entry as their seals undergo wear and tear during daily loading and unloading of trailers. The corners and hinged back seal are both difficult to seal and maintain because the brushes are particularly prone to food accumulation from spills. Some facilities turn to sweeps installed along the dock levelers; they are normally tack welded or screwed into the sides of the dock leveler deck and offer a better pest prevention method. Inspection of Incoming Goods: Although mice and rats can enter facilities on shipments, mice are the more common stowaway pest. House mice can derive sufficient moisture from the foods they consume but also have a need for water to drink. They also seek shelter oftentimes using cardboard and other packaging materials provided in shipments for nesting. These nests are typically constructed out of view and in the pallet stack interior. Due to this, mice can nest and feed in a pallet of food undetected by trap monitors for weeks. -Adapted from by Patricia Hottel, BCE For more information about keeping your business pest-free, see McCloud Services ad on page 28 of this issue.

CHEF PROFILE

Jose Estrada Big Wig Tacos 2490 N. Milwaukee Ave.; and 770 N. LaSalle, Chicago Current Position: Owner/Operator Birthplace: Chicago First Food-Service Job: Family-owned Mexican restaurant, Taco Burrito King. I began working at the age of 17 years old. Favorite Food: My favorite foods are burritos, Italian beef sandwiches, Chicago-style hot dog and anything with dry-aged USDA prime Angus. Awards/Honors: At this time, I haven’t won any awards in this business. I don’t plan to and I don’t think I ever will. In the fast-casual space, if you’re a good operator, you don’t focus on being a chef. Chefs are the ones that win awards by being creative, and I can’t really do that in my current position. At Big Wig, we give the customers what they want. Making our customers happy day in and day out is the biggest award I can win. Memorable Customers: Our most memorable customer would be former Chicago Bulls basketball player Wendell Carter Jr. who is now my business partner. As a regular and huge supporter of Big Wig Tacos, he got to know our business and decided that we should partner up. Worst Part of Job: My least favorite part of this job would be the long hours. It can be brutal since we’re open almost 24 hours a day, and we have someone working every minute of every day at our two locations. Everybody wants to be the boss until it comes down to doing boss things. We only close 3 days out of the year and I’m either working all the time or on-call 24/7. Most Humorous Kitchen Mishap: Once we had a new line cook add salt to the horchata instead of sugar. The first customer to drink the batch spit it out all over the front counter. Luckily, the customer laughed it off. Favorite Food to Prepare: I love preparing our burritos. It’s simple, but sometimes in life, it’s the simple things that matter. What part of the job gives the most pleasure: My favorite part of the job is making a product that makes people smile. When people come to Big Wig, it’s usually a treat. It may be a small one, but people usually come in smiling and leave smiling. If you couldn’t be a chef, what would you be and why: I think I would enjoy being an engineer. I like to create things that people can use. Best advice you ever got: “Nobody cares, work harder.” I can’t remember who gave me that advice, but it always stuck with me and it’s become my theory in life. Where do you like to vacation: Monaco. I’ve never been, but I’m pretty sure it will be my favorite. What do you enjoy most about FIN: I love that it keeps me in tune with new vendors and what they have to offer. Other than family, who was your greatest culinary influence?: My greatest influencer would have to be my business partner, J.J.

Teas Inspired by Disney’s ‘The Mandalorian’ Hit the Market When it comes to recent pop culture sensations, few captured the Internet’s attention as much as “The Mandalorian’s” Baby Yoda (aka The Child). Obligatory fan merchandise ensued. But it’s rarer to see food items related to The Child — until now. The Republic of Tea and Disney collaborated on a set of teas inspired by the hit series. Shoppers can choose from three flavors: A Cara Dune Warrior Herb Tea, a Child Green Tea based on you-know-who, and a third Mysterious Black Tea featuring Mando himself. Each tin comes with 36 tea bags, and there’s even a gift set that includes a combination of all three. In the Cara Dune herbal tea, rooibos blends with fruity notes from hibiscus, mango, passion fruit, and strawberry. The green Child tea is mixed with honey, ginseng and eleuthero to conjure up a Force-like zen, and Mando’s black tea is a potent blend of leaves from Africa, South India, Indonesia, Sri Lanka, and Darjeeling. Mandalorian-themed teas are available on Amazon and the Republic of Tea for $14 per tin. -Source: Food & Wine

The basic mission of the Marine Toys for Tots Program is to collect new unwrapped toys and distribute them to less fortunate children at Christmas. In order to better execute the program, in 1991, the Marine Toys for Tots Foundation was created at the behest of the Marine Corps. The name Christmas comes from the Mass of Christ. During a Mass service, Christians remember that Jesus died and then came back to life. The “Christ-Mass” service was the only one that was allowed to take place after sunset, so people worshipped at midnight. The U.S. Postal Service still has its busiest time, which starts two weeks before Christmas. Beginning the week of Dec. 7, customer traffic is expected to increase, with the week of Dec. 14-21 predicted to be the busiest mailing, shipping and delivery week. The new Packs of Plenty (P.O.P.) is the charity’s proprietary program and replaces the former Blessings in a Backpack program. “We recently made the decision to oversee and manage all elements of our food program. As the number of children in need continues to grow, this change helps us provide more food to children living in food insecure homes,” states charity co-founder, Darby Hills. The P.O.P. launch includes a logo and branding roll out across all the charity’s marketing efforts. Moretti’s will be providing the venue for the food packing and storage at its Moretti’s Unique Events private party facility in Hoffman Estates. The extensive banquet kitchen, food storage and staging space at Moretti’s Unique Events will enable BCC’s new P.O.P. program to operate efficiently and safely, to prepare meal packs for more than 800 participating students, about 3,500 bags per monthly packing session. Moretti’s owners Mark and Jessica Hoffmann are board members with Barrington Children’s Charities, and Jessica Hoffman is a weekly packer with the former “Blessings” packing program. The Hoffmanns offered the Morettis Unique Events space in Hoffman Estates to “use for the monthly P.O.P. packing events as well as for food deliveries, storage and packed food/bin storage prior to the bag delivery to District 220 children each month.” Located next to Moretti's Ristorante in Hoffman Estates, MUE offers banquet spaces for private parties and has enough space to accommodate the food and bin storage for P.O.P., and provides the ability to socially distance the volunteers for P.O.P.’s packing events. Offering a safe environment for P.O.P volunteers was an utmost concern. With the ongoing need to provide food for local food insecure children, the Moretti’s team is proud to step up create a safe space for P.O.P. and its vital mission.

AROUND CHICAGO With Valerie Miller UNTITLED SUPPER CLUB One hundred years ago, Prohibition became the law of the land. It ushered in the dawn of a new era — the Roaring ‘20s, which brought explosive innovation to art, music, literature, film, design, and fashion. The ideas and values of the era would have a profound impact on society for the next century. In Uptown speakeasies, high society, intellects, artists and underworld kingpins converged in hidden clubs. Chicago became a hotbed for hooch, sizzling jazz and the epicenter of the intensity of the period. A century later, Chicago’s venerable speakeasy, Untitled Supper Club, ushers in a new decade of the ‘20s. For those not in the know, Untitled is a restaurant, bar and live entertainment space tucked away in the heart of Chicago’s River North neighborhood. True to speakeasy form, one has to look hard to find Untitled, with only large unmarked doors signaling that you have arrived.

With its vintage Prohibition-era design, the largest selection of American whiskies in the world, seven Michelin Bib Gourmand awards, live music and titillating burlesque performances, Untitled has been a darling of Chicago nightlife for nearly a decade. “The Roaring ‘20s was a time when Americans thirsted for fun after a very difficult period of history, including a terrible pandemic,” said Joe Manna, COO of Atomic Hospitality Group. “As we enter a new ‘twenties’ decade, we decided to slip into the sumptuous decadence of the era. The makeover of Untitled emphasizes the glamour and opulence of the period, featuring jewel-toned fabrics, flamingo feathers, velvet, tassels, mirrors, marble and a Gatsby-worthy crystal chandelier.” Untitled features live entertainment, including music and captivating cabaret-style performances. The makeover emphasizes architectural elements that are reminiscent of supper clubs and cabarets from the twenties and thirties. Cozy red velvet booths in the Cabaret recall opera boxes from theater’s Golden Age. The Drawing Room and its champagne bar take subtle art deco Photos by Austin Peters cues with antiqued mirrored walls, a gilded ceiling and seven intimate private dining cabanas. The Library, with its unparalleled American whiskey collection, is dressed in emerald velvet from floor to ceiling and features a pink marble bar as the centerpiece in the room. Untitled is at 111 W. Kinzie St. in Chicago. Untitled has begun offering limited bookings for a prix-fixe menu on Thursday, Friday and Saturday nights. There will be three seating options per night. Tickets may be purchased online at untitledsupperclub.com.

Fresh Midwest Debuts Food, Meal Delivery Fresh Midwest, the new premier online fresh food and meal delivery providing locally grown produce and chef-driven meal solutions, announces its launch in the northern Chicagoland market from Kenosha, Wis., through the Lincoln Park neighborhood. The company plans to expand in early 2021. Twin brothers Patrick and Mike Fitzgerald, creators and co-owners of Fresh Midwest and natives of Chicago’s North Shore, grew up with a respect for the food business. They garnered longstanding relationships with industry fresh food leaders and innovators through their Chicago-based Midwest Foods, a second-generation, family-owned business of eight brothers and sisters. The brothers gained admiration for a different aspect of the business through Mike’s friendship with Thomas Parkinson, co-founder of Peapod. The integration of their mutual appreciation for fresh and the value of an online store inspired the Fitzgeralds to introduce the best of fresh foods to the marketplace. A state-of-the-art climate-controlled cool chain guarantees freshness every step of the way. Each order is hand-selected by professional in-house staff, which is then delivered in refrigerated trucks. Fresh Midwest also prioritizes consumer safety through limited handling of all products and contactless delivery, an essential standard during COVID-19.

CHEF PROFILE

Marc Sievers www.MarcSievers. com marc@marcsievers.com Current Position: Cookbook Author Birthplace: Lawrence, Mass. First Food-Service Job: I was 14 years old and worked in a little sandwich shop on a pier in a beach community in Massachusetts. Favorite Food: French fries and béarnaise sauce (with champagne, of course!) Most Humorous Kitchen Mishap: The day before Christmas Eve, I was making my crystallized ginger and pumpkin tart. I had the bowl of my mixer filled with my wet ingredients and accidentally turned the mixer to the highest speed and the filling went everywhere! On the ceiling, on the walls, all of me — it was a mess. Favorite Food to Prepare: I love making earthy food with really good ingredients that remind me of being in the kitchen with my nana. If you couldn’t be a chef, what would you be and why: I would be a florist! I have been drawn to flowers and the art of floral design for decades. Flowers are an important part of my everyday life; in the kitchen, on the table, and in the garden! Best advice you ever got: Do what you love and the money will follow. Where do you like to vacation: My favorite spot to vacation is Paris, France. My husband and I usually go a few times a year for a couple weeks at a time to really live and eat in our favorite city (other than Chicago). What do you enjoy most about FIN: I enjoy discovering new people and read about what creative things they are doing! Other than family, who was your greatest culinary influence? I grew up watching re-runs of Julia Child on PBS with my nana — those memories are ones I will cherish forever.

HR Updates: Harassment Training and Improved Cash Flow

Harassment Training: Don’t forget! Starting this year, all employers in Illinois must provide annual employee training on workplace sexual harassment prevention. Despite the COVID-19 pandemic, the state is requiring the training to be completed by Dec. 31, and on annual basis thereafter. Employers have the option to outsource or facilitate the training in-house provided the training meets or exceeds the minimum standards outlined in the Illinois Human Rights Act, which include: n an explanation of sexual harassment consistent with the IHRA; n examples of conduct that constitutes unlawful sexual harassment; n a summary of relevant federal and State statutory provisions concerning sexual harassment, including remedies available to victims of sexual harassment; and n a summary of responsibilities of employers in the prevention, investigation, and corrective measures of sexual harassment. Employers within the restaurant and bar industry are subject to additional requirements: n Provide supplemental harassment prevention training specific to the industry and an explanation of manager liability and responsibility (with English and Spanish language options). n Create and distribute a sexual harassment policy (in English and Spanish) to all employees, in writing, within the first calendar week of the employee's employment. Panera Is Using New Low-Carbon Footprint Labels Panera Bread will start labeling menu items with the lowest carbon footprints with the World Resources Institute's “Cool Food Meal” badge. The label will be applied to the 55% of the chain's menu items that generate less than 5.38 kilograms of carbon dioxide equivalent, CEO Niren Chaudhary said. Chaudhary said in an interview that the change is meant to raise awareness about the link between food and greenhouse gas emissions and give customers the ability to make an informed decision. “We would love to see the food industry embrace this,” he said. “Just by the choice you make on your entrée, you can have such a dramatic impact on the environment.”-Source:

Enhance Flavor of Your Meat Products For most meat processors, the main goal is to prepare and package a variety of meats. Unfortunately, this also means that their products may not be superb and can lack that mouth-watering and exceptional venue experience. From restaurant patrons to chefs, outstanding flavors can only inspire the final product. They win every cutting and earn higher prices. One of the most critical components of processed meat is the seasoning blends, in which case consulting experts are imperative. According to Justyna Kos, president of Famar Flavors, an Illinois-based company, “Spices from certain parts of the world have distinctive advantages. Our food specialists work closely with food manufacturers to improve their products in a world where consumer tastes and preferences are constantly evolving. We are passionate about helping our clients produce the most unique taste and best food products in their category.” Using the newest technology, Famar Flavors incorporates distinctive expertise in the development of seasonings, marinades, spice blends and rubs while maintaining strict adherence of safety standards such as the BRC. The enterprise renders its clients assistance to enhance their efficiency during the processing of items such as cooked meats, sauces, smoked meats, steaks, patties, gyros and meatballs. Apart from making proprietary blends, Famar Flavors also provides private labeling services and aggressive pricing, while providing quick turn around time to optimize flavor impact and freshness. You can learn more about the company on page 24 of this issue.
