Guinness Open Gate Brewery Makes Its Debut in Chicago

Photos: Kendall McCaugherty

Guinness Open Gate Brewery opens at 901 West Kinzie St. in Chicago, the former rail depot consists of a brewery, taproom, restaurant, and bakery housed in a 15,000-square-foot newly transformed space. Chicago marks Guinness’ very first bakery globally, and second brewery location in the U.S., with the Guinness Open Gate Brewery Baltimore having opened in 2018. This site will combine more than 260 years of brewing experience from Ireland, with cutting edge American brewing innovation, for a uniquely Chicago experience.

“This is an exciting step in the continuing evolution of the Guinness brand in America. It’s been a long journey, but we are so thrilled to be opening our doors this week and to contribute to Chicago’s world class food and beer scene,” said Rodney Williams, President of Diageo Beer Company. “As a Chicago native, I can confidently share that we aim to celebrate and showcase this great city and make a positive impact in the community, all while serving great beer.” See “Guinness” on page 30

Using Technology to Reduce Labor Costs Any owner or manager will tell you that wages are now out of control. Smart operators are exploring using robots to be their food runners to help improve service and save labor. According to Sergio Torres, of TEEPOS, a Chicagoland dealer for the LuckiBot line of hospitality robots “our client base of small and mid-side family restaurants are now strongly considering using our robots to run food to tables, to improve service and save labor. The LuckiBot robot is designed with a purpose - to free people from repetitive tasks while improving the guest experience. LuckiBot is easy to operate and program and boasts autonomous navigation capabilities, allowing it to avoid obstacles safely, travel steadily, and navigate accurately, even when delivering drinks or soup. It is multilingual making interactions a breeze. LuckiBot can manage up to 400 dishes a day in restaurants, offering a helping hand to your operations, with no time off for breaks, bathroom visits or conflict with staff. DINING WITH November 2023 BIGGBY COFFEE • 902 S. Randall Rd. ST. CHARLES, IL. This is a coffee chain with several locations in Michigan, but expanding with more in Illinois, coming soon. Their extensive menu of drinks include lattes, hot chocolate, blasts, cold brews, freezes and much more. On the food side, bagels, breakfast sandwiches, muffins and cookies are there to pair with your drink of choice. I had the Butter Bear creme freeze, which combined butterscotch, caramel and milk into a drinkable frosted treat. It was delicious! JEWEL • 2485 Howard St. EVANSTON, IL 847-328-9791. This is a beautiful grocery store offering all the regular staples plus they have a huge selection of Kosher products. On the outside of the building, it says “The Kosher Marketplace.” You can find a ton of Kosher products including a Kosher Fresh Meat and Deli section. The aisles are stocked with a variety of brands that you won’t find anywhere else. They have a selection of cakes & cookies from Stern’s Bakery along with a big selection of bread from the North Shore Kosher Bakery where I picked up one of their marble rye breads. My other snacks included some Kedem biscuits, Shneider’s chocolate bars and Herr’s and Lieber’s snacks.

KOLATEK’S BAKERY & DELI • 2445-47 Harlem Ave. CHICAGO, IL 773-637-3771. They have a nice selection of grocery items, deli and bakery goods. You can pick up lunchmeat and a variety of sausages along with prepared salads. The bakery got my attention; they had beautiful pastries and cookies along with fresh breads. I picked up some cookies and a couple of cakes; a Babka z Owacami - very berry pound cake and a Babka Czekoladow z Orzechami - chocolate-walnut pound cake. Both were fresh, moist and delicious. I would definitely get those again. I found a brand of chips that I’d never had before called Heilo, so I tried the sour cream ones. RICKY ROCKETS FUEL CENTER • 4400 N. Harlem Ave. NORRIDGE, IL 708-395-5654. You can gas up and pick up a variety of snacks here. They have beer, grocery items, drinks, prepared foods and stuff for your car. And they have gaming. I picked up some snacks and drinks and a milkshake. They have a machine where you pick a container of the flavor of the milkshake you want—I chose the Freal Vanilla Bliss. Then you peel off the lid and place it into the holder which prompts you to select how you want it made (I picked regular) and it blends it up for you. I’ve never seen this before. It was very good! SAVORY CRUST GOURMET EMPANADAS • 1358 E. St. Charles Rd. Unit A, CAROL STREAM, IL 630-480-2282. This location has a pick-up window only. You get everything to-go. Choose from their extensive menu of empanadas, rice bowls, sides and desserts. The rice bowls have gluten-free options and some of the sides are vegan. Choose from empanadas with chicken, beef, pork, or vegetarian with Mac n’ cheese, samosa, spinach & feta, etc. Each one comes with a sauce of your choice. I had the pork belly empanada paired with blackberry hoisin ginger sauce, and elotes on the side. For dessert I had the guava and cheese empanada. It was excellent. I know I’ll be picking up from here again! SCRAMBLED • 650 Lake Cook Rd. DEERFIELD, IL 847-607-9555. This was my first time dining at this restaurant and I loved it! They are open from 7:00 am until 2:30 pm serving breakfast and lunch. Another plus is they have plenty of parking. The dining room is cheerful and their staff does an outstanding job serving you. I ordered breakfast—a couple of eggs with sausage, which were nice, fat links. It came with seasoned breakfast potatoes that were very good. Plus, you have a choice of toast or pancakes. I was eyeing all the entrees being served around us and everything looked amazing. The portions are hefty.

Red Harissa from Tunisia Harissa, a deep red chile paste seasoned with coriander and caraway, is a Tunisian tradition, and last year UNESCO dubbed it “an integral part of domestic provisions and the daily culinary and food traditions of Tunisian society.” Brothers Mansour and Karim Arem, who founded the Tunisian food company Zwita, say harissa can be used to flavor just about any dish, from stews and sandwiches to chicken wings. – The New York Times

Jean Banchet Awards Returns as Partnership with Chicago Chefs Cook The Jean Banchet Awards for Culinary Excellence will return Jan. 28, 2024, in partnership with Chicago Chefs Cook, a non-profit unifying Chicago’s culinary community to provide humanitarian relief worldwide. Chicago Chefs Cook, led by chef Sarah Stegner, Eda Davidman, Jodi Fyfe and Darren Gest, has raised more than $1 million since its founding in 2022 for relief efforts in Ukraine, Puerto Rico, Italy, Maui, Ethiopia, and other areas devastated by conflict and natural disasters. In 2022, the founder of the Jean Banchet Awards, The Greater Illinois Chapter of the Cystic Fibrosis Foundation, turned over the reins of the program to its emcee Michael Muser, the co-owner of two-Michelin starred Ever restaurant and After lounge. As Muser began to build an independent nonprofit, he met the four leaders of Chicago Chefs Cook. A partnership proved to be a savvier and streamlined route to resuming the awards, which were not held in 2023. “The Jean Banchet Awards and Chicago Chefs Cook draw upon the creativity, excellence and generosity of the same community: Chicago’s most talented chefs and restaurateurs,” Muser said. “That’s why this partnership makes so much sense. We both bring chefs together, to help those in need and make Chicago’s culinary community stronger.” The Jean Banchet Awards, named for the chef who put Chicago fine dining on the map in the 1970s and ‘80s with his Wheeling restaurant Le Francais, will continue to recognize local innovators on the restaurant scene. The Greater Illinois Chapter of the Cystic Fibrosis Foundation created the awards for their annual Grand Chefs Gala in February 2002. In 2016, the Banchet Awards became a stand-alone awards show focused on supporting the local restaurant community. The event has grown into an incredible night celebrating the high caliber and diversity of talent in the region’s food and beverage industry. “Chef Sarah, Jodi, Darren and I provide a platform for chefs to unite and lend a hand to those who need it most,” Davidman said. “Our partnership with Michael and The Banchets allows us to further that mission while celebrating the immense talent of this worldclass culinary community.” Nominees for the awards will soon be announced. – For more information on the organization’s contact/ sponsorships, email: info@jeanbanchetawards.com.

Portillo’s Plans Growth with Smaller Restaurants Portillo’s restaurant of the future is coming, and it will have a smaller box, a more efficient kitchen and a design to support off-premise business—all while maintaining an $8 million-plus average unit volume. Oh, and contrary to plans at McDonald’s, Portillo’s guests will soon get their own self-serve beverages. These changes come as the Chicagobased chain expands its plan to grow across the U.S. Portillo’s CEO Michael Osanloo said Portillo’s now believes the 77-unit fast-casual chain can grow to 800 units with its full-scale model—up from previous estimates of 600 locations. In addition, the chain could also add another 120 alternative-format locations, such as drive-thru-only or airport units, he said. Portillo’s is a 60-year-old brand with a devoted following in and around Chicago. But since going public in 2021, the chain has been expanding in earnest across the Sunbelt, including Florida, Arizona and Texas, where the concept has been embraced. Portillo’s locations in Chicago enjoy an AUV of $10.8 million, but those in the Sunbelt are not far behind at $7.1 million. Up next is a move into three new markets: Atlanta, Denver and Las Vegas. – Source: Restaurant Business

Favorite Food: Steak. Awards/Honors: What we have all built together here at Enzo & Lucia is the biggest win. Memorable Customers: Doc Rivers, Gene Wilder, Brian McBride (soccer player), Ted Hendricks (Raiders NFL Hall of Famer). Worst Part of Job: Time away from family, i.e. family dinners, holidays, weekends. Most Humorous Kitchen Mishap: Wish I could pin point one thing. We take our mishaps seriously, however, I like to keep a lighthearted mood in the kitchen. We are always joking with each other. Favorite Food to Prepare: Don’t have a favorite. Just love the creativity this job affords me. What part of the job gives the most pleasure? Getting complimented on our food and when my kitchen staff is working well together. If you couldn’t be a chef, what would you be and why? A police officer. Since I was a kid I looked up to and admired the discipline they exuded and the way they selflessly serve and protect. A little bit of humor here, my mother wanted me to be a catholic priest. Best advice you ever got was: First chef I worked for (David Wolf) said to me “be consistent in what you do”. Where do you like to vacation? My brothers live in New York. I enjoy visiting with family. Family is very important to me. What do you enjoy most about FIN? The creative outlet it provides me. I love creating unique specials for our guests. Who was your greatest culinary influence? David Wolf, the first chef I worked for. He was very strict and sometimes severe. A lot of the others working in the restaurant couldn’t get along with him. He got into everyone’s face. I was a young kid. His expectations were very high. He was difficult to please. I quickly decided to look past his criticism and concentrate on the rare compliments. I learned discipline, creativity, and consistency.

Cary Miller Presents:

PEOPLE SELLING THE FOOD INDUSTRY This month I am proud to be pictured with Chef Michael Lachowicz, widely acclaimed as one of the deans of French cuisine in Chicagoland, operating two Winnetka restaurants Aboyer and George Trois, and Fonda Cantina in Evanston which offers authentic Mexican favorites with a high level of service and attention to detail. Experience one of Michael’s restaurants. You will taste the quality and dedication in every bite. Joe Leslie is the Industrial Sales Manager at Kikkoman based on Oak Brook Terrace, Illinois. Joe’s vast experience at Kikkoman has earned him the privilege of working with food manufacturers, distributors, retailers and foodservice operators. Like others on the Kikkoman team, Joe has a deep understanding of Japanese cuisine and trends. New from Kikkoman is their expanded line of Gluten-free products which include sauces and coatings. If you strive to offer your customers on-trend food products that meet their dietary needs with full flavor, look to Kikkoman. They lead the field with quality. Amanda Greenberg is the Chief Operating Officer at locally-based Delivery First, which helps restaurants and other businesses save money and control quality while improving customer satisfaction. Delivery First was created by restaurant owners who understand the challenges and needs of restaurants and other businesses. When one of the big thirdparty delivery companies picks up food at your operation, you lose control. Delivery First gives the owner control, with dedicated, uniformed, trained delivery specialists handling every order with care. If third-party delivery companies have hurt your reputation, it’s time to call Delivery First. You can find their ad on page 46. The Grande Cheese Chicago Market Sales Specialists are dedicated to helping Pizza and Italian Restaurants to deliver exceptional flavor and consistency. Their product is available through better foodservice distributors everywhere. Kim Diaz, Madeline Gauch, and Claire Donohue are with Volpi Foods, producers of Italian Artisan Cured Meats. This family owned company dates back to 1902 and is still filled with passion today. Their all-natural product line is made with meats that are sourced from local Midwest farms using generations-old family recipes. For over 40 years, the team at Zarlengo’s Italian Ice & Gelato has been offering delicious Italian Ice and Gelato. Pictured from left to right Alison Zarlengo, Mary Lou Zarlengo, Tom Zarlengo, and Tommy Zarlengo. Guests can expect 12-16 rotating experimental draughts, most of which will be brewed on site and exclusively available in the taproom, alongside signatures like Guinness Draught Stout, Guinness Extra Stout, and Guinness Foreign Extra Stout, which will always come straight from Dublin. Led by Brewer Megan Schwarz, the Chicago brewing team’s 10-barrel brewhouse is hard at work with an initial line-up including Corn Maize Cream Ale made from corn grown in Illinois’ Iroquois County, Kinzie Street Pale Ale, and a Mango Chile Ale. Guinness 0 NonAlcoholic Draught will also be available. All beer sales are limited to guests 21 years of age and over, but the restaurant is open to guests of all ages. “Open Gate Brewery is the center of innovation and creativity for Guinness, particularly when it comes to beer,” said Ryan Wagner, National Guinness Ambassador and Head of Marketing, Guinness OGB Chicago. “Opening in Chicago allows us to be a part of one of the most storied and celebrated beer communities in the United States – and we can’t wait to bring the unique flavors and heritage of Guinness brewing to an exciting tap list that will

appeal to every kind of beer drinker. Our brewers Megan and Nate are among the best in the industry, and we’re stoked to share their beers with Chicago and beyond.” The culinary program will be led by Dream Team Hospitality, a joint venture by local industry veterans, with chef Taylor Bischof at the helm. The food menu draws inspiration from the brand’s Irish roots and global footprint, alongside reimagined Chicago classics. The site will offer morning bakery and café service daily, with an allday restaurant menu available Wednesday through Sunday, as well as brunch on weekends. The design of the building marries new and old, transforming a long vacant building into a state-of-the-art facility, adorned with a patio with stairs reminiscent of Chicago’s Riverwalk steps, and a contemporary door with weathered steel finish. The space features a hand painted mural, complemented by a bubbly amber sculptural light fixture – a nod to the iconic foam atop a fresh pint of Guinness – which flows throughout the brewery. A nearly 10,000-pound harp sculpture with layered ambient lighting sits high above the main taproom bar.

Ongoing innovation and the increase in remote working are supporting a projected 5.84% compound annual growth rate for the espresso market with global sales expected to hit $4.55 billion by 2027, according to a Technavio report. Potential obstacles to growth include market fragmentation and rising commodity costs, the report added. – Source: Fox Business

ABCs of the World’s Religions

You’re not alone.

Espresso Market Projected to Grow to $4.5B

In ABCs of the World’s Religions, kids travel around the world and across the centuries exploring the beauty of the world’s major faith traditions. Learn along with kids as you explore sacred spaces, holydays, and rituals in several different religions, including Hinduism, Buddhism, Sikhism, Judaism, Christianity, and Islam. Left-hand pages offer rhyming couplets that explain the basic concepts. Right-hand pages offer additional information, including similarities and differences across religious traditions. Using a non-devotional, age-appropriate approach, ABCs of the World’s Religions is great for anyone interested in developing religious literacy and cultural competency in kids age 4-10. Perfect for parents and grandparents, as well as educators in public schools, private schools, or faith communities.

Restaurant Design Trends for 2024 Inspiration drawn from global destinations, tranquil spaces that encourage relaxation and beautiful bar setups that offer a backdrop for elaborate cocktails are among the trends that will shape restaurant design in the coming year, expverts say. “In 2024, we can expect restaurants to transport diners to entirely different worlds through well-translated, sophisticated design, creating a transformative and escapist experience without resorting to cliches,” said Griz Dwight, founding principal of GrizForm Design Architects, who noted that it is “crucial for designers to approach these designs with cultural sensitivity, steering clear of stereotypes.” – Source: Forbes

TUCKEY’S TIPS By Lauren N. Tuckey, Esq., Tuckey Law, LLC

The End of Tip Credit

Final passage of the Tipped Wage Ordinance is expected at the next Chicago City Council meeting. The ordinance, which would phase Lauren N. Tuckey, Esq. out the tipped wage for workers in Chicago, passed out of the Workforce Development Committee and if successful, would take effect on July 1, 2024. What does this mean in practice? Tipped work has been a part of our economy for more than 150 years and ending it would massively change the way Chicagoans would interact with businesses, receive wages, and pay for services. Under this plan, businesses would be required to increase tipped workers’ wages by 8% annually until they’re paid the same minimum wage as other employees in the city (currently $15.80).

Does this mean that businesses would have to raise their prices? Yes, more than likely. Businesses that have a high percentage of employees who are tipped workers (restaurants, bars, beauty salons) may have to raise prices to accommodate these new wage requirements. What is the impetus behind this move? It is part of the nationwide One Fair Wage campaign that is trying to end the system where some workers are paid a minimum wage while others are paid a subminimum wage and expected to make up most of their income from tips. If passed, Chicago would join California and D.C. which have implemented similar measures.

Who opposes the ordinance? The Illinois Restaurant Association (IRA) has long resisted any such measure, however, they agreed to back the proposal after meeting with Mayor Brandon Johnson and the alderpeople sponsoring the legislation. A compromise was reached once it was agreed that there would be a five-year “phase-in” so restaurant owners could ease into the arrangement. Tuckey Law, LLC covers all of your legal needs for opening and operating your food, beverage and hospitality business. You can see Lauren’s ad on page 14 of this issue.
