eoff Alexander is a true industry thought leader, innovator, and trailblazer. As President and CEO of Wow Bao, he is responsible for the fastest-growing U.S. restaurant chain since the pandemic. This Chicago-based, fast-casual, Asian concept known for signature buns, bowls, potstickers and more, has utilized Wow Bao Now - its Dark Kitchen Initiative, to launch a pioneering business model to increase restaurant
partners’ revenue while expanding the company's footprint throughout the U.S. The company started in 2003 with one store in Chicago and as a result of Alexander and his team’s efforts, has launched more than 650 restaurants and virtual locations across the U.S., as well as select grocery, airports, and universities, with ambitious plans to hit 1,000 by year end of 2022. The independently run chain has partnered with operators in various cities
to offer alternative sources of revenue by utilizing their space, equipment, and personnel to serve prepared Wow Bao staples, while third-party delivery providers including Caviar, DoorDash, GrubHub, Postmates and Uber Eats provide delivery of the casual fare to customers in new and expanding markets. Geoff was recently listed as one of 2022’s “Most Influential Restaurant CEOs in the Country,” and as one of the 12 Digital Disruptors of 2021.
So what exactly, is a bao?
It’s a soft, fluffy dough filled with savory or sweet flavors and steamed to perfection. Otherwise known as “hot Asian buns.”

Starbucks Leaves Russia, Helps Employees Find New Work Starbucks will leave Russia, where it has 130 licensed locations, the company said. The chain has had stores in the country for 15 years. The chain said it would pay nearly 2,000 Russian workers for six months and help them find new jobs. In early March, Starbucks and its licensed partner agreed to suspend operations, including the shipment of all its products into the country.

JULY 2022 CRAVEBURGER 190 N Swift Rd. ADDISON, Ill; 630-912-7127. Craveburger is one of the family of ghost kitchens created by Nextbite. You can order from here through GrubHub and they will deliver to your door. I had the Club Burger, which was an all-beef patty, bacon, cheddar cheese, avocado, lettuce, tomato and sriracha ranch sauce. I also had a side of onion rings which came with its own dipping sauce. It arrived hot and ready to eat. Their burgers and sides are top notch. FESTIVAL FOODS • 5600 S. 108th St. HALES CORNER, Wis; 414-367-3052. This is a family-owned company with numerous locations in Wisconsin. This grocery store is very well lit and fully stocked with all your grocery staples, along with the largest selection of frozen pizzas that I’ve ever seen, which includes many national and Wisconsin brands of frozen pizza. Who knew there were so many? To top things off, they have a root beer section in the beverage isle. Pizza anyone? NANDO’S PERI-PERI CHICKEN • 6 W. Jefferson Ave, NAPERVILLE, Ill; 630-388-0193. This restaurant specializes in grilled chicken with various levels of PERi-PERi sauce, which is a flavorful African-Portuguese hot sauce with varying degrees of heat. At this location, you just find an open table, scan their QR code, order and pay for your meal through the app. It then gets delivered to your table. There is no server interaction until your food is delivered. I had their signature half chicken with lemon & herb. They put the PERi-PERi sauces on a table close by, soyou can add however much heat you want to your chicken. I also ordered a side of their braised Brussel sprouts, and mango orange lemonade to drink. Everything was delicious. SMOOTHIE KING • 1018 Ogden Ave. DOWNERS GROVE, Ill; 630-395-9380. They have a big selection of smoothies using whole fruit and organic vegetables. There are so many choices and many enhancers you can add to your smoothie. I ordered a “treats blend” smoothie–the Lemon-Twist-Strawberry. It was so refreshing, tart and sweet. If you need a snack to go with your drink, they offer Quest products including veggie and protein chips. There are a few tables in the space where you could sit and enjoy your drink. SWEET HOME GELATO • 50 S Main St., Suite 138; NAPERVILLE, Ill; 630-210-8457. This is hand-crafted gelato where you can see each variety through their glass case, and request a tasting of any flavor. I tried a couple of options before settling on a medium sized cup of strawberries & cream. Their gelato is so smooth, you’ll swear you’ve been transported right to Italy with every delicious bite. They also serve coffee, espresso, cappuccino, hot chocolate, sorbet, shakes and pastries. TASTY HOUSE 1 • 1042 Fountain View Dr., CAROL STREAM, Ill; 630-580-9541. Tasty House 1 is a Vietnamese restaurant which is owned and operated by a local Vietnamese family. They specialize in hot pot dishes, pho, seafood and specialty drinks. I ordered the House Special Fried Rice, which was fried rice with chicken, pork and shrimp. It was served in a hot pot with a lid, so the rice dish was kept nice and warm with every single bite. I also wanted to try a specialty drink, so I ordered a traditional brown sugar milk tea. It complimented my meal just right. TBK GRILL COCINA MEXICANA • 7565 Lincoln Ave. SKOKIE, Ill; 847-679-1000. I’ve eaten here a few times. The staff there is super nice and attentive. They offer burritos, burrito bowls, tacos, nachos, tortas and so much more. I had the Taco Dinner with the steak tacos– Mexican style with onion and cilantro; the meat was so flavorful and it came with rice and beans. I also added an order of the guacamole and chips. They gave me plenty of salsa to go with the chips.

Inflation Drives Wheat Stocks Lower Weather, Events in Ukraine Among Factors
Food Industry News® — July 2022
High Food Prices Have Consumers Seeking Discounts
World wheat stocks for 2022-23 are expected to drop to a six-year low of 267 million metric tons, according to the USDA’s first global projections for the upcoming growing season. The agency cited Russia’s invasion of Ukraine and extreme weather hampering growing conditions in key regions as underlying factors. In the United States, the fourth largest global supplier of wheat, the USDA is expecting the smallest harvest since 1963 of hard red winter wheat, which makes up 40% of the domestic crop and is commonly milled into bread flour, as poor growing conditions delay planting. Wheat futures in Chicago, Kansas City and Minneapolis jumped by their exchange limits after the USDA’s global projections were first released.
Food-at-home prices jumped 10.8% over the past year, the largest 12-month increase in over 40 years, according to the U.S. Bureau of Labor Statistics’ Consumer Price Index data for April. Meat, poultry, fish and eggs saw the biggest 12-month increase of the major food groups, up 14.3%, its largest jump since May 1979. On a monthly basis, five of the six major grocery food groups saw gains, including dairy, which had its biggest increase since July 2007. The meat, poultry, fish and eggs group rose 1.4% as the price index for eggs soared 10.3% in April. The unrelenting increase in food prices is testing consumers, who are having to curb costs through tactics such as “trading down” to less expensive items, or switching to private label brands, analysts say.

Organics in Mainstream and Foodservice
Halal Products Available
Organic foods and beverages are going mainstream, and exist to some degree in virtually every food and beverage category. 82% of consumers say they use organic foods and beverages at least sometimes with millennials leading in usage. Organic has become a household staple for many – even among Baby Boomers, the age group slowest to adopt organic products, nearly one-fifth (18%) of whom say they use them
at least weekly. Organic usage has also grown in frequency, with almost half (47%) of Millennials using organic products at least weekly. Opportunities also exist in foodservice: While consumer demand for organic at a retailer and brand level continues to increase, there is also a growing desire for organic at everyday food service locations as well as at higher-end dining locations. – Adapted from FMI DailyLead

Trending Menus at Chain Restaurants On recent menus, Wingstop jumped on the chicken sandwich bandwagon and Portillo’s introduced its first meat-free hot dog. But other chains are buzzing with menu activity, too. Chocolate is the flavor of choice for drinks at Starbucks and Shake Shack, while Lazy Dog chooses orange and Bennigans, lime and peach. There’s steak at Subway, vegan cheese at Papa Murphy’s, a new summer menu for Modern Market, and wraps, cookies, French toast and more trending on menus. – Source: Restaurant Business
Freddy’s More National Openings Freddy's Frozen Custard & Steakburgers announced the brand's entrance to North and South Dakota, expanding Freddy's presence to 36 states across the country. The two new franchised restaurants are located in Fargo, North Dakota and Sioux Falls, South Dakota, with Fargo being one of the strongest performing locations in the brand's network over the last month and Sioux Falls setting new records for opening week sales. This announcement builds on the development success Freddy's has experienced since the beginning of the year, already opening 18 locations, and expecting to open 45 more before the end of 2022. – Source: Restaurant News Resource

Food Depository Resumes Nourish Project with Evolved Plan for Meal Kitchen The Greater Chicago Food Depository revealed its updated timeline to begin construction on an exciting new meal preparation kitchen this summer. Plans to break ground on the 36,700-square-foot facility expansion were paused in 2020 as the Food Depository’s focus shifted to pandemic response. The $53 million project includes the construction of a new commercial meal preparation kitchen and nutrition education center, an expansion of the Food Depository’s prepared meals programs and more parking for its volunteers, guests, and fleet of delivery trucks. The meal-prep kitchen will be built to the immediate west of the nonprofit’s existing warehouse and offices in Archer Heights on Chicago’s Southwest Side and is anticipated to be fully operational in late 2023.

The Second Wave of Virtual Restaurants By Tom Kaiser
Later adopters have clearly received wind of what’s happening in the virtual restaurant space, with a new wave of delivery-only providers hitting the scene and emerging from the shadows. Even in this period of market volatility, fund-raising dollars are flowing into virtual upstarts in North America and beyond. What’s notable about this second wave are the differences from the original concept, with some focusing on specific types of restaurants, some building custom virtual concepts for individual clients or others focusing on chefs rather than celebrities. On the delivery apps, there are already so many more options because of this proliferation, but we haven’t seen anything yet—and the third-party platforms will have some filtering decisions to make.
Food Industry News® — July 2022
On another note, a recent survey from Circuit Route Planner, a courier advice and confession blog, found eight in 10 drivers admitting to eating some of the food they’re delivering—so we can expect another round of breathless stories on drivers gone wild. More notable is what drivers go through, with 73 percent complaining about poor tips, among other constants like rude customers, incorrect addresses and customers not opening the door. As a frequent user of most delivery services, the deemphasizing of tips or paltry suggested tip amounts is something everyone should change if they want to retain their best drivers. That’s the real nugget to my eyes. – Source: Tom Kaiser, Editor, Food On Demand; tkaiser@foodondemandnews.com
The favorite dessert in Naples, Italy in the early 1900s was Spumoni. Creating this dessert was an art form, made with multiple flavors of gelato layered around a whipped cream and candied fruit center with other secret ingredients, each was more delicious than the next. Italians from all over would make the pilgrimage to Naples to enjoy this delicious new creation. One Spumoni rose above the rest, and it was the recipe created by Salvatore Lezza. In fact, this success led him to pursue the American dream, by bringing his Spumoni to the USA. In 1905 Salvatore came to Chicago’s west side and he began making Spumoni and lots of it. Selling out of their retail store, they quickly began to supply grocers and restaurants. Today, the same recipe is used for the Lezza’s signature dessert and remains unchanged. Salvatore handed the secret of genuine spumoni down to his son Victor and today Lezza Spumoni & Desserts, Inc. is under the careful care of Ed Lezza Sr. (3rd generation) and nephew Louis (4th generation) and with a younger generation coming up in the business. The company continues to walk in the footsteps of their Grandfather and Great Grandfather, keeping the flavors of Italy alive and flourishing. The secret of spumoni wasn’t the only masterpiece passed down through the generations. Hundreds of recipes have been preserved and perfected, keeping the Lezza tradition alive. Many products are sold through foodservice distributors. The firm even offers direct delivery across the local market, to give customers the products they want with the service they need. Taste the Lezza difference. See their ad on page 7 of this issue and call them for samples and ordering information.

SPOTLIGHT:
P’Abu Rashee, Internal Leadership Coach O’ Toole’s Pub Group
For higher foodservice sales, give your customers something they can’t make at home.
P’Abu Rasheed, simply called Rasheed by his peers, holds a unique role inhospitality management. At O’Toole’s Pub Group, he serves as Internal Leadership Coach, providing work-life balance training, career counseling, accountability and steps to success. For an industry that is slowly recovering from the lows of a pandemic and one that is notoriously challenging to both individuals and internal teams, it is rare to find a position such as Rasheed’s. His role is credited to the caring visionaries of Sara McKinnon and “Junior” Martinez, the married proprietors of O’Toole’s Pub Group. Rasheed joined Timothy O’Toole’s in 1995 when they had a single restaurant location in Chicago’s Streeterville neighborhood. He initially served in security and floor management, bringing with him years of experience in executive and celebrity protection and social service work. Rasheed is a Chicago native, born and raised on the South Side. From 1992-2000, he worked with Maryville Academy as a certified family educator. In late 2017, Rasheed implemented the Talent Action Performance (TAP)program at O’Toole’s Pub Group and received his IPEC Certification (Institute for Professional Excellence in Coaching). His “performance coach” role positively impacts the nearly 250 employees within the organization. Forward-thinking owners, Sara and Junior, have directly impacted the employees of the organization and themselves by having a performance coach like Rasheed on staff. They truly care about the mental health of their employees and the work atmosphere they provide. They’ve found it has helped the overall cohesiveness of now four restaurant locations. Vision can get lost in translation, so Rasheed helps to set goals, define the vision, determine necessary step sand hold individuals accountable.

Outfront Media Delivers Food Industry News Big Exposure During NRA Show As part of our commitment to do all we can to promote our advertisers and monthly trade magazine, Food Industry News ran a digital billboard campaign for one week prior to, and during the 2022 National Restaurant Association Show. The digital billboards were in 30 locations across the greater Chicagoland area including in the city of Chicago near major hotel zones, airports and highest trafficked highways. Although ours is a business-to-business publication, we felt the investment was worthwhile to boost our presence as well as the visibility and presence of our advertisers. Along with this commitment we also had a booth at this year’s NRA show, where we could see current advertisers, readers and friends, all while distributing copies of our publication to industry professionals. By working with Outfront Media, we were able to gain approximately six million views of our message in a single week. As one of North America’s most innovative media companies, Outfront leverages the power of creative excellence, unbeatable locations, and smart audience data to change the game for advertisers. Outfront Media is embedded into the fabric of every community and is trusted by the millions who engage with their media every day, driving a strong relationship between brands and audiences. Pictured below are some of the billboards from this year’s campaign.

Consumers Tip More When Dining In Dine-in sales rose 46% in Q1 compared to the year-ago period, while takeout and delivery sales declined 7%, a Toast Q1 trends report finds. This shift in sales comes as government authorities lift many remaining pandemic restrictions. Guests tip an average of about 20% when they dine on-premise, versus 15% for off-premise transactions, Toast’s report finds. Hershey to Add Distribution Centers Ahead of Halloween Hershey will add three distribution and fulfillment centers this year and work to install an additional 10 production lines as the candy manufacturer looks to boost capacity and meet growing demand, according to prepared remarks ahead of the company’s Q1 earnings report. The company has opened one fulfillment center in Annville, Pennsylvania, Hershey said in an email to Supply Chain Dive. Another distribution center in Brantford, Canada, has started full operations, with a goal of replacing a warehouse shared with another food company. A third center in Whitestown, Indiana, will support the company’s snack business. Hershey is looking to ramp up production and add inventory ahead of the busy Halloween season, President and CEO Michele Buck said in an earnings call last month. “We are doing everything we can relative to building capacity, investing in new lines, distribution centers, and hiring more people to build our supply as much as possible.” – Source: SupplyChainDive

Public opinion in this country is everything. – Abraham Lincoln
Taco Bell’s decision to bring back its Mexican Pizza after two years stemmed largely from a chorus of demand from fans who never forgot the popular menu item, and customers from Oregon to Florida are planning events around its return. Mexican Pizza lovers are getting creative on social media to celebrate, and real estate marketear Lauren Newton even used a listing’s proximity to Taco Bell as a perk in a Facebook ad for the property. – The Washington Post

Chicago’s Minimum Wage Increase and Fair Workweek Changes Go Into Effect July 1 Every July 1, Chicago’s minimum wage increases per the Minimum Wage Ordinance. The Chicago minimum wage is tiered for large businesses with 21 or more employees, and small businesses with 4-20 employees. The minimum wage for larger employees increases annually according to the Consumer Price Index or 2.5%, whichever is lower, since reaching $15 per hour in 2021. The minimum wage for small businesses continues to increase towards $15 per hour by 2023. The minimum wage as of July 1, 2022 will be: • $15.40 for employers with 21 or more employees (including all domestic workers, regardless of the number employed) • $14.50 for employers with 4-20 employees
• The minimum wage for tipped employees will be $9.24 for employers with 21 or more employees, and $8.70 for employers with 4-20 employees (employers must make up the difference between any tips received and the applicable minimum wage for non-tipped workers.) On July 1, 2022, scheduled enhancements to the Fair Workweek Ordinance will require employers in covered industries to post work schedules with at least 14 days’ notice, an increase from the previous 10 days’ notice. In another change, employees will need to earn less than $29.35 per hour or $56,381.85 per year to gain protection under the Fair Workweek Ordinance. Covered industries include building services, healthcare, hotel, manufacturing, restaurant, retail, or warehouse services.

TRAVEL With VALERIE MILLER Destination: Yellowstone National Park
Ways to Get Off the Beaten Path During Yellowstone National Park's 150th Anniversary Located in Montana, Idaho and Wyoming, Yellowstone National Park – the world's first national park, is celebrating its 150th anniversary this year. Encompassing 2.2 million acres, Montana has three of the five entrances to the park, including the only entrance that's accessible to year-round vehicle traffic through Gardiner. In 2021, Yellowstone National Park welcomed 4.86 million visitors and 2022 is shaping up to be another busy year as visitors celebrate one of the most special places in the world. Here are the best ways to experience it without the masses. Time It Right. No matter when you visit this summer, chances are that you'll find crowds of people if you go during the day. Time your trip so you're up early to catch the rising steam at Grand Prismatic Spring, watch Old Faithful erupt after the sun goes down and soak in the experience against a star-filled sky or get up with the sun to watch its rays spread over Yellowstone's diverse landscapes. Hike it Out. The truth is that most visitors to Yellowstone National Park stick to the roads. If you really want to get away from other people, you should hit the trails. With 900 miles of trails throughout the park, there are plenty to choose from. Keep in mind that you should always hike with a friend, be prepared, carry (and know how to use) bear spray and give wildlife a wide berth. Go With a Guide. While you can visit the park on your own, one of the best ways to have a deeper experience is to go with a guide or outfitter on a horseback ride or llama trek. There are also seasoned guides who offer activities like backpacking, biking, fishing, as well as road-based tours. While Yellowstone National Park will remain a bucket-list destination, there are plenty of things to see and do outside of the park's boundaries. Visitors are easily able to exit one of the park's three entrances in Montana on their way to other adventures, including: Driving the Beartooth Highway. A wonder in and of itself, the Beartooth Highway is a National Scenic Byway that weaves through both Montana and Wyoming and is accessible exiting Yellowstone’s northeast entrance. The 68-mile-road extends from Cooke City, Montana to Red Lodge, Montana, and gives its passengers jaw-dropping views and access to high alpine lakes and trails in the Beartooth Mountains. Visit Red Lodge. Surrounded by the Beartooth and Absaroka mountains, Red Lodge is one of Montana’s most charming small towns. With a historic and strollable downtown, Red Lodge is a place to put on your must-visit list. It's also a launching point for outdoor recreation and adventures, including hiking, horseback trail rides and river trips. Stroll Gardiner. Steps from the park's north entrance is the town of Gardiner. home to just under 900 residents. From August 23 – 28, there will be several tips on display at the tipi village project at the historic Roosevelt Arch. You can also fish, raft and float with several local outfitters in Gardiner, as well as soak in nearby hot springs in Paradise Valley.
You may be entitled to a government rebate. See page 45 for details.
Walk Through Montana History. Visitors who base their trip in West Yellowstone (or leave the park through its west entrance) are less than 90 minutes from Virginia City and Nevada City, two of the most well-preserved ghost towns in the country. During the summer season now – September), visitors can take history tours, check out local shops and saloons, stay the night in a historic property, pan for gold or travel by stagecoach.
