The Gin Commission: an intimate, gin-focused cocktail bar from Lettuce Entertain You recently opened in the lower level of Quality Crab & Oyster Bah at 1962 N. Halsted in Chicago. The Gin Commission will be open Fridays and Saturdays and offer a curated list of more than 50 gins from around the world. Leading the beverage program is industry veteran Kevin Bratt (of Joe’s Seafood, Prime Steak & Stone Crab) who created a menu that features both classic and unique interpretations of the spirit, as well as an extensive Gin Tonic program. BAKERS SQUARE 5220 N. Harlem Ave. CHICAGO, Ill; 773-792-8481. This location is open for dine in and carry out. They serve breakfast, sandwiches and so much more. I was searching for a coconut cream pie and I was so happy that this location had one. The pie filling is so light and creamy and it was topped with whipped cream and coconut. I also picked up a slice of the triple berry pie too. They have a nice selection of pies. My other favorites include the lemon and apple pie. BACKYARD GRILL • 6355 N. Pulaski Rd. CHICAGO, Ill; 773-478-8802. This is a good-sized restaurant with a big menu; hot dogs, burgers, sandwiches, salads and they offer catering. Greek specialties include homemade spinach pie, delicious Greek salad, homemade gyros and homemade soup. Their chicken skewers were my choice served with Greek potatoes, rice, vegetables and a pita. I ordered some ribs too, and those came with mashed potatoes, garlic bread & coleslaw. They give you plenty of food! HAROLD’S CHICKEN • 5N105 IL 53 ITASCA, Ill; 847-773-6112. This is a small place with a delivery counter in which you order and pick up your to-go orders. This is yet another location carrying on the Harold’s Chicken tradition that started in 1950 in the south suburbs of Chicago. They serve a variety of fried chicken, fish, gizzards, wings, fries, slaw, mushrooms and more. From their menu, I chose the half chicken mix, which was a 4 piece combo of (white and dark meat) chicken with a side of fries, slaw and hot sauce on the side. The chicken was hot, juicy, and it had just the right amount of crunch. You’ll want to pour that sauce on your chicken, because it makes it all the more tasty! JOHN’S DONUTS • 1570 Bloomingdale Rd. GLENDALE HEIGHTS, Ill; 630-653-1161. This is a small donut shop that serves donuts all day. You can order donuts to-go, or for delivery. I went inside and ordered from the nice gentleman that was eager to help me. I ordered a half dozen donuts, which consisted of a chocolate long john, double chocolate glazed, French cruller, Boston creme, raspberry filled and a coffee roll. They also make specialty donuts upon request such as S’mores and M&Ms donuts. HERM’S PALACE • 3406 Dempster St. SKOKIE, Ill; 847-673-9757. This is a neighborhood staple offering all your fast food favorites; hot dogs, burgers, chicken, Italian beef & sausage. Plus, they have pasta, chicken, steak and a big selection of sandwiches that include salami, pastrami, Reuben and turkey. I ordered a corned beef sandwich on rye with mustard, pickle and a side of cole slaw. I also had a Super Taco on pita that had ground beef, lettuce, tomato, and cheese; and an order of fries. The man at the counter taking the orders was amazing; he would take your order and not even write it down because he remembered it. TOMMY’S RED HOTS • 1574 Bloomingdale Rd. GLENDALE HEIGHTS, lll; 630-668-9733. This is one of six locations that offers a diverse menu for dine-in, carry out, and catering. They’re famous for their 8” sandwiches, salads, and hot dogs. They also have dinners including pasta, gyros, baby back ribs, fish, and shrimp. Sides include chili, mac and cheese bites, battered mushrooms and more. I ordered the Smokehouse burger which came with BBQ sauce, American cheese and onion rings on the burger. I got my meal as a combo with fries and a drink. The burger was cooked spot-on and the fries were nice and crispy. WINDY CITY MARKET • 3340 N. Pulaski Rd. CHICAGO, Ill; 773-685-3605. For a small store they have mastered filling every inch of space. The produce department was amazing. They had plenty of packages of cut up fruits and a cooler full of packaged ingredients cut up for guacamole and salsa. In the back of the store at the meat department there was such a good vibe going on: happy customers talking with the employees. You can find all your grocery staples here along with some unique products. I had an excellent shopping experience here!

Popeyes 50th Anniversary Puts Cajun Rice Back on the Menu Popeyes is putting Cajun Rice back on the menu after cutting the popular side dish last year as part of a streamlining effort, and the chain will also roll out its Strawberry Cheesecake Fried Pie nationwide. The menu updates are part of several moves meant to commemorate the chain’s 50th anniversary, including the creation of a video featuring five couples who have made it to their own 50th anniversaries. — Source: Restaurant Business

Coca-Cola Tackles Sustainability Goals Coca-Cola has engaged its approximately 225 bottlers across the world with its sustainability goals, which include using less packaging, increasing recycling rates and lowering carbon emissions via science-based targets, according to Cloeann Durham, vice president of quality, safety and environment for Coca-Cola North America. Meeting sustainability targets can seem daunting, so Durham advises, “Don’t pay so much attention to the numbers, but how you participate.” — Packaging World online

Alcohol provides the greatest profit margin for restaurants, but with all the new trends, it can get costly in a hurry. Stir these tips into your beverage program to help control alcohol costs. These days, profit margins for many restaurants and bars can be thinner than a rosemary sprig garnish, so any way to cut pour costs can help. This guide offers some suggestions for cutting down on pour costs while still offering a great cocktail program to guests. Proper Pour Policy Consistency is key when it comes to tracking alcohol sales, meaning that the guidelines for alcohol pours are followed for every pour made in the restaurant. By setting a target pour size, you can anticipate and control the costs for standard drink prices, as well as happy hour specials and other drink specials. Pre-Made Cocktails Efforts to reduce inconsistent pours and overpouring are as simple as pre-measuring ingredients ahead of time. Having bartenders or servers take time before their shift starts to make enough base liquors with other ingredients will ensure a consistent pour and leave less margin for errors, such as spilling. Inventory Management Processes that track inventory from the moment it arrives until it’s prepared for your customers is essential for controlling costs, and that applies even more so to alcohol, and specifically, liquor. Ensure that you know weekly what is coming in and what has been used, and then address any discrepancies immediately. When it makes sense and is possible, order liquor and other alcoholic beverages in bulk. This eliminates excessive fees for partial cases or extra delivery fees. Understanding the PAR level of your alcohol products will enable you to project the cost-benefit of bulk purchasing for an extended period rather than a smaller charge over a short-term period. Pricing Bevs Over the last couple of years, it’s been clear that fluctuations can be devastating in restaurants. Alcohol sales are no exception. If your prices have not fluctuated with the changes in the overall economy, it’s time to take a hard look at the numbers to see if your alcohol prices are in balance. If you are looking at increasing prices, it may be helpful to reduce the time period for happy hour, or only have drink specials on certain nights instead of every day at 5:00. This will also eliminate over-consumption and other issues that arise with extended drink specials. Make ‘Em A Mocktail Once considered taboo, there’s a new generation that actually prefers non-alcoholic drinks. So why not capitalize on that opportunity? Let the creative juices flow for your servers and bartenders to create delicious drinks that mimic classic cocktails. This results in an upsell for you and an improved experience for your restaurant guests. Menu Placement List beer and simple cocktail drink specials with happy hour and appetizer foods. This allows happy hour customers to enjoy a range of their favorites without a classic entrée. Best of all, it allows understanding of what items you need in bulk to earn the highest return rate. List a detailed wine and sophisticated liquor drink menu with premium entrées and dinner specials. This encourages a higher price point for alcohol sales, with either a bottle of wine, a moderatelypriced glass of wine, or a custom-made cocktail featuring only premium liquors and ingredients. ICE Warehouses Shipping Coffee to the US

Report: Specialty Food Sales Soar to $175B

For the first time in two decades, arabica coffee is being shipped to the US from ICE futures exchange warehouses by commodity traders, with more shipments expected over the coming months, sources say. Coffee stocks at the ICE exchange are already at near 20-year lows and further declines are expected to add to already high world coffee prices.

The U.S. specialty food market hit a whopping $175 billion in sales in 2021, climbing 7.4% from a year ago, according to the Specialty Food Association. That growth compared with a 5.8% increase the year before, when foodservice’s steep decline offset outsized gains in brickand-mortar retail and e-commerce, the association said in its 2022 State of the Specialty Food Industry Report.

Spirit Producer R. Jelenik Experiences Surge in Popularity R. Jelinek continues a more than 400-year tradition of Wallachian fruit brandies production. Thanks to its climate, the Vizovice region of Czech Republic is one of the best in the world for growing plums – that is why the production and subsequent processing of these fruits has always been an important part of local farmers’ lives. The master distillers of R. Jelinek produce their flagship product Slivovitz, a triple distilled plum brandy, aged for five years. The firm produces several products including the traditional clear, gold aged in oak casks and the single-variety unblended, all of which are kosher. These superb brandies are produced from the best assortment of late-harvested plums. The triple distillation and patient aging process gives a gentle taste to this brandy. The R. Memorable Customers: When working in New York I had the pleasure of serving many celebrities’, including Danny Devito, Jay-Z, and Louis Black. But the most memorable customer was definitely Chet. Chet came to the Chowder Pot every day for over 38 years. He sat in the same spot at the bar, used the same coaster and ordered the same thing. He would put a smile on everyone’s face when he came in. The corner where he sat has a plaque that says “Chet’s Corner” in honor of him. Worst Part of Job: The long hours, can be at the restaurant some days for 12-14 hours, to then leave and do it all over the next morning. Most Humorous Kitchen Mishap: Not a mishap but something humorous, I convinced over 70-plus employees that I work with that the new breader’s name was Walter, When his name was actually Chris. For weeks everyone called him Walter and he wouldn’t answer until one day someone asked why he never answers. They were shocked when he said my name isn’t Walter. Favorite Food to Prepare: I enjoy the entire aspect of food service so I enjoy making new dishes. What part of the job gives the most pleasure: Working with people who care and take pride in the experience we give guests. If you couldn’t be a chef, what would you be? ...A carpenter, because I enjoy working with my hands. Best advice you ever got was...The hardest part is showing up. Where do you like to vacation? Little Caesars to Double Its Franchises Little Caesars signed several multi-unit U.S. franchising deals in 2021 and is expected to double its rate of new store commitments this year. Three deals were signed with multi-unit operators in Q1 2022, and these operators plan to open at least 24 new Little Caesars. The pizza chain is growing its footprint by pursuing partnerships with larger operators, military veterans and first responders, Craig

Sherwood, Little Caesars vice president of franchise development, said in a statement. This growth follows a record sales year for the chain in 2021, Forbes reports. Pool Your Purchases for Greater Profits The restaurant industry continues to work through labor shortages, supply chain issues and price increases. Now is the perfect time to research a group purchasing organization. To become a restaurant owner takes talent, drive, and the ability to take pleasure in 60-120 hour work weeks. And it is one industry where experience trumps education. You should know how to cook, how to seat customers, tend bar, serve food, clear tables, wash dishes—everything. On top of that you need to know how to order and manage distributors and manufacturers. Consider joining a group purchasing organization (GPO). A GPO is an organization that pools the buying power of its individual members to help get the best possible prices and quality of product and services. Whether you are a single unit restaurant or a multi-chain, it is important for operators to find a GPO that fits their needs. Foodservice distributors and food and beverage manufacturers find independent restaurants more profitable than the national accounts due to their purchasing volume. However, more independent restaurants are joining GPO’s to join and leverage their purchasing power to become more profitable. As costs increase at the operator level, due to commodity swings, labor costs, rent and other input costs that continue to rise, operators are increasingly looking for options that can save them money. What to look for when choosing a partner: • When choosing a cooperative review, the distributor and manufacturing partners. Make sure it is a good fit with your operation. • Make sure you have local representation. Aside from quality and savings, the sense of community that comes from working locally is invaluable. • Make sure the organization relies on the collective thinking and advice of active local restaurant members. • Review the program to make sure you receive off-invoice and rebates. National Pizza & Pasta Show Returns to Chicago, Aug. 23-25 Pizza continues to be America’s favorite food and the pizza industry continues to grow in size and sophistication. Chef BBQ Returns to Green City Market

Bar Bingo TV is an exciting interactive bingo game developed to increase business for bars. Like a popular trivia game service, their game uses a TV at the location to display bingo numbers. With Bar Bingo TV, patrons do not need a game controller, they simply download their app from their phone’s play store. As numbers are drawn, they will hear the number through a location’s TVs or sound system. The voice conducting the sessions may sound familiar since they use professional voice talent to provide celebrity impressions. You may be wondering who is calling bingo tonight. It could be “Joe Pesci” or maybe “Homer Simpson.” Players also have the option to listen to a real live host right through their phone. Your bar will be one of no more than ten bars participating in a game session. They limit participation to increase the odds of a player at your place winning a game. No two bars in a session will be in the same geographical area, as to avoid direct competition. Each game awards a prize. They design gift certificates to be used when a win occurs at your place. These prizes are called “Nightly Prizes”. You can choose the denomination; $10, $15 or $25. The larger the prize, the bigger the draw. These certificates state that they are not valid on bingo night, are not valid for alcohol, and have a 30-day expiration. When a player calls bingo, they will receive their prize certificate in their email. You will also receive an email confirmation of all wins. To redeem, it is either printed or displayed on their phone. Players can also win much bigger prizes. These “Flash Prizes” are won if a player completes their bingo pattern within a predetermined number of calls. For example, these prizes may be a Target gift card or prizes from sponsors in your area such as tours, baseball tickets, dinner and a movie packages, and much more. They also maintain a progressive cash jackpot for the last game of the night. The price to host Bar Bingo TV at your location is $60 per 2-hour session. They will direct players to your game by posting on their website and by using their social media. They will also provide you with posters to display at your location.
