2 cups Water 1 cup Quinoa or bulgur wheat, uncooked 1 15 oz can Chickpeas, drained and rinsed 1 cup Chopped cucumber ½ cup Chopped mint ½ cup Chopped parsley ½ cup Chopped roasted pistachios ½ cup Crumbled feta cheese ⅓ cup Chopped red onion ¼ cup Extra virgin olive oil 2 Tbsp Fresh lemon juice Sea salt, to taste Ground black pepper, to taste

Directions Add the quinoa to a mesh sieve and rinse. Drain the quinoa and add to a medium size pot. Add the water and bring to a boil. Reduce to a simmer, cover and cook for 15 minutes. Remove the lid and use a fork to fluff. Let cool for 10-15 minutes.

Add the cooked quinoa, chickpeas, cucumber, mint, parsley, pistachios, feta, red onion, olive oil, lemon juice, sea salt and black pepper to a large mixing bowl and gently toss to combine.

For best flavor and texture, let chill in the refrigerator for an hour before serving.

8 oz Orecchiette pasta 1/4 cup Extra virgin olive oil 1/4 Shallot, chopped 1 Garlic clove, finely chopped 1/4 cup Tomato paste 1 Tbsp Vodka 1/2 cup Heavy cream 2 tsp Red chili flakes 1/2 tsp Black pepper Salt, to taste 1/4 cup Parmesan cheese 1/4 cup Reserved pasta water 1 Tbsp Butter 1 Tbsp Chopped fresh basil

Directions Boil the pasta according to the directions on the back of the package. Reserve 1/2 cup of pasta water before draining. Set aside.

While the pasta is cooking, heat a large skillet over medium heat. Add the olive oil and shallot and sauté until tender (approx. 2-3 minutes).

Add the garlic and sauté for 30 seconds, making sure it doesn’t burn.

Stir in the tomato paste and cook for 5 minutes, stirring frequently.

Stir in the vodka and cook for 2-3 minutes.

Add the heavy cream, red chili flakes, salt and pepper and stir until smooth.

Stir in the parmesan cheese and reserved pasta water. Stir for 1-2 minutes, until the cheese is melted and blended.

Add the butter and cooked pasta and gently stir to combine. Garnish with chopped basil and extra parmesan cheese. Serve immediately.

Ingredients » 16 oz Spaghetti » 1 Lemon, cut in half » 2-3 Tbsp Unsalted butter, cut into 2 pieces » 1/4 cup Grated parmesan cheese + more for garnish

Directions Add 1 tsp of salt to a large stock pot of water and bring to a boil. Boil the pasta according to the directions on the back of the package. Reserve 1 cup of pasta water before draining and set aside.

Using tongs, transfer the pasta to a second large pot (do not put through a strainer).

Add 2-3 Tbsp of butter and whisk until the butter is melted and combined.

Squeeze the lemon over the pasta and add both halves of the lemon to the pot. Whisk to combine.

Add the reserved pasta water, 1 Tbsp at a time, until you reach your desired consistency.

Add parmesan cheese and whisk to combine.

Taste and add salt and pepper, to taste. Garnish with extra parmesan cheese, if desired.

Directions Pre-heat a large saucepan, with a healthy amount of sunflower oil over medium high heat.

Slice the zucchini into thin rounds. Carefully add the slices to the oil and let cook until they turn golden.

Remove and drain the zucchini with a slotted spoon.

Transfer to a medium size bowl and place in the refrigerator, to soften, for a minimum of 2 hours.

When ready to make, bring a large pot of salted water to a boil. Cook the spaghetti to the al dente instructions found on the back of the box. Reserve 2 cups of the pasta water before draining the noodles.

Pre-heat a large frying pan over medium-high heat.

Add the fried zucchini along with 2 ladles of the reserved pasta water. Season with a pinch of salt and freshly ground black pepper, to taste.

Add the spaghetti to the saucepan and immediately remove from the heat. Top with the grated Parmigiano-Reggiano and toss to evenly coat.

Top with additional Parmigiano-Reggiano and basil leaves before serving.

Ingredients » 3 large Eggplants » Coarse salt » 1 cup Unbleached, all-purpose flour » Olive oil » 2/3 cup Tomato sauce » 1 large ball Fresh mozzarella (about 4 1/2 oz), torn into pieces » Small handful of Basil leaves, roughly torn » 3/4 cup Finely grated parmesan (about 2 oz)

Directions Slice the eggplants 1/3” thick and sprinkle with a pinch of coarse salt on each side. Place in a single layer, between paper towels. Place a baking sheet on top and weigh it down with something heavy. Let rest for 20 minutes to remove excess water.

Preheat the oven to 350°F. Dredge the eggplant slices in the flour.

Pre-heat 1/4 cup of oil in a large skillet over high heat.

When the oil is hot, turn the heat down to mediumhigh. Add the eggplant slices, in a single layer, and cook for 90 seconds per side, or until dark golden brown.

Transfer the cooked eggplant to paper towels to drain and repeat as needed.

Spray a 13” x 9” baking dish with cooking spray and add as many slices of eggplant as can fit in a single layer.

Notes * Original recipe from Goop

Top each slice of eggplant with tomato sauce, mozzarella, basil and a sprinkling of parmesan. Repeat with a second layer. Continue adding layers until you have no eggplant left.

Bake for 25-30 minutes or until the cheese is melted and bubbling.

Ingredients » 1/2 cup Butter, at room temperature, plus more for pan » 1 cup Sugar » 2 large Eggs » 1 1/2 cups Unbleached all-purpose flour » 1 tsp Baking soda » 1 tsp Kosher salt » 1 cup Mashed very ripe bananas » 1/2 cup Sour cream » 1 tsp Pure vanilla extract » 1/2 cup Chopped walnuts or pecans

Directions Preheat the oven to 350 °F. Butter a 9x5x3” bread loaf pan and set aside.

Add the butter and sugar to a stand mixer, fitted with a paddle attachment and cream until fluffy.

Add the eggs and beat to incorporate.

In a medium size mixing bowl, add the flour, baking soda and salt and whisk to combine. Add it to the butter mixture and mix until just combined.

Add the bananas, sour cream and vanilla and mix to combine.

Hand stir in the nuts (if adding) and pour the batter into the loaf pan.

Transfer the loaf pan to the oven and bake until a toothpick, inserted into the middle of the bread, comes out clean. Approx. cook time is 1 hour and 10 minutes.

Remove from the oven and let rest, in the pan, for 10 minutes. Turn onto a baking rack to cool.

Ingredients » 3 1/2 to 4 cups Bread flour, plus more for rolling » 1 tsp Sugar » 1 envelope Instant dry yeast » 2 tsp Kosher salt » 1 1/2 cups Water, 110°F » 2 Tbsp Olive oil, plus 2 teaspoons

Directions Add the flour, sugar, yeast and salt to the bowl of a stand mixer and mix on medium until combined.

While the mixer is still running, add the water and 2 tablespoons of olive oil. Beat until the dough forms into a ball. If the dough is too sticky, add 1 Tbsp of flour at a time, until the dough forms a solid ball. If too dry, add 1 Tbsp of water at a time, until a solid ball forms.

Transfer the dough to a lightly floured surface.

Knead the dough into a smooth, firm ball.

Grease a large mixing bowl with 2 teaspoons of olive oil and add the dough ball. Cover the bowl with plastic wrap and store in a warm area until the dough ball doubles in size, approx. 1 hour.

Turn the dough out onto a lightly floured surface and divide into 2 pieces of equal size. Cover with a plastic wrap or a kitchen towel and let rest for 10 minutes.

Ingredients » 1 (15 1/4 oz) can Whole kernel corn, drained » 1 (14 3/4 oz) can Cream-style corn » 1 cup Sour cream » 1 cup Shredded cheddar cheese » 1/2 cup Butter, melted » 1 (8 oz) Package corn muffin mix

Directions Pre-heat the oven to 350°F. Grease a casserole dish and set aside.

In a large bowl, add the whole corn, creamed corn, muffin mix, sour cream and butter, and mix to combine.

Pour into the casserole dish.

Bake for 40-45 minutes, or until golden brown.

Remove from the oven and top with a generous amount of cheese.

Bake for a final 5 minutes, or until the cheese is melted.

Ingredients » 1 lb Elbow macaroni » 8 Tbsp Unsalted butter, melted » ½ cup Shredded muenster cheese » ½ cup Shredded mild cheddar cheese » ½ cup Shredded sharp cheddar cheese » ½ cup Shredded Monterey jack cheese » 2 cups Half-and-half » 2 large Eggs, lightly beaten » 8 oz Velveeta, cut into small cubes » ¼ tsp Seasoned salt » ⅛ tsp Freshly ground black pepper

Directions Preheat the oven to 350 °F. Grease a 9×13 baking pan and set aside.

Add to a large bowl the Muenster, Cheddar cheeses, and Monterey Jack. Set aside.

Add 3 quarts of salted water to a large stock pot and bring to a boil. Add the pasta and cook using the al dente directions on the back of the box.

Drain the noodles and add to a large mixing bowl.

Pour the melted butter over the noodles and stir to evenly coat.

Add the half-and-half, eggs, Velveeta, seasoned salt, pepper and half of the shredded cheese to the noodles, and stir to combine.

Pour the noodles into the prepared baking pan.

Sprinkle the remaining cheese over the top.

Bake for 30 minutes, or until the edges are bubbling.

Serve immediately.

Ingredients » 11/2 cups All-purpose flour » 1 tsp Baking soda » 1/2 tsp Salt » 16 Tbsp Unsalted butter, room temperature » 1/2 cup Creamy peanut butter » 1/2 cup Packed light brown sugar » 1/2 cup Granulated sugar » 1 large Egg » 1 tsp Pure vanilla extract » 2 cups Semisweet chocolate chips

Directions Pre-heat the oven to 350°F. Place one rack in the upper third and one in the lower third of the oven.

Line two cookie sheets with parchment paper. Set aside.

Add the flour, baking soda and salt to a small bowl and whisk to combine. Set aside.

Add the butter, peanut butter, brown sugar and granulated sugar to a large mixing bowl. Beat at medium speed until smooth.

Stir in the egg and vanilla.

Gradually stir in the dry mixture, until just combined.

Fold in the chocolate chips.

Take 1 Tablespoon of cookie batter and drop onto the cookie sheets. Space cookies 2” apart.

Bake for 8-10, or until golden. Halfway through baking, switch the placement of the baking sheets to ensure even baking.

Remove and let cool for 5 minutes before transferring to a cooling rack.
