Hi, I’m Amber Hunziker, the Group Activities Coordinator at Omnicare Alliance. It’s my job to put together the weekly schedule of fun and educational activities for our Let’s Link and Zone activity programs.

E

very week Omnicare has the pleasure of hosting a diverse range of fun and social activities that promote skill development and independence for adults and children with disabilities. For school aged children (718), we have our Zone program that provides fun after-school

and holiday care for children with a disability. Our Zone program offers a really diverse activity schedule that is solely focused on what our participants like to do. Popular activities will often include outdoor balls games, park-play, craft as well as baking and decorating cakes. These programs are designed

to increase the social skills and confidence levels of children. All of the activities on offer are designed to enhance the unique abilities and talents of each child. Our social support groups for adults focus on socialisation. We love to get out into our local community and provide an opportunity for our clients to meet new people and have new experiences. We definitely have our favourite haunts, such as bowling at Wave Bowl, lunch at the pub and hitting the dance floor at Panthers on a Friday night, just to name a few. Omnicare Alliance are a registered NDIS provider. This means that our support groups are governed by professional boundaries.

We have the policies and procedures in place to ensure that our support group clients are in a safe and protected environment. One of the biggest groups to emerge through the 2020 pandemic lockdown was the Port Macquarie EaTs page on Facebook. Gaining a huge amount of momentum and driving news to locals about places offering takeaway and delivery was instrumental in keeping many of these small business open. Creator of the group Ellen Crepaz has now amassed a following of 12,000 fans and has big plans for the group in 2021. We caught up with her to find out more.

llen, last time we caught up you had just launched Port Macquarie EaTs during the 2020 lockdown. For those who do not know can you tell us why you started the

group? Hi, my name is Ellen Crepaz, and I am the owner of Port Macquarie EaTs. I created the group at the start of COVID in March 2020. I have always been a foodie and have loved supporting local businesses. When COVID hit I knew a few friends in hospitality panicked as to how we will get through this. One night I was scrolling and saw a local business doing home delivery and said to my husband what a brilliant idea. Next thing I created a group and invited a few friends and shared my page. By the next few days, I had more businesses contact me and we had a few thousand members. The group is a way to connect 16 GREATER PORT MACQUARIE

Social media can make or break a business. If more of us valued food and the effort put into making food the world would be a happier place. Being positive is not hard, it is being nice. When you go into a business and give great feedback you find that it is a boost of confidence not just for the owner but for staff as well. We never give workers enough credit. Renowned artist Emma Walker creates her masterpieces through exploration while immersing herself deep within experiences. Explaining there's real magic in the process, Emma chats with us about her work and the desire to push limitations that allow her the freedom of creative expression.

i Emma. You’re a renowned artist who evocatively engages with the natural world through your sculptural paintings. Firstly, take us back to where it all began for you in the creative world? I have strong memories of being in A R T I S T I N kindergarten and deriving a soul satisfaction from using that glorious claggy paint with a carved potato stamp. I can picture my chubby little starfish hand pressing the stamp onto the paper and lifting it off to reveal I’ve never lost a print. Such a feeling of touch with wonder and delight. To be honest, I can find the whole business a bit tortuous. At openings, I’m usually the one out the back helping the waiting staff wash the glasses. I feel very grateful to be represented by people that support me and promote my work. They have been instrumental in the development of my career. What processes and mediums do you work with or prefer to work with? These vary depending on what it is that I am wanting to investigate. I no longer consider myself to be just a “painter”. I am interested in exploring whatever mediums and processes are needed to get the job done. Lately, that has been plywood, power tools and a lot of white gesso. It has also involved working with film. I have been falling in love with wood for the past few years. I seem to moving away from flat surfaces and moving towards three-dimensional forms. This is very much a work in progress and there is so much more that I want to explore and learn. But sometimes a simple stick of charcoal moving across the surface of some paper can provide immense satisfaction. My favourite thing is to experiment and make new discoveries through experimentation. How would you best describe your style of art? I have never felt comfortable trying to define what I do. Defining something seems to trap it and I have always wanted my work to be free and unimpeded by the limitations of style or of working in one particular way only. I can see strong links in all of my work but many may not see the visual constancy that some artists manage to produce. I have never wanted to become the manufacturer of a product and I feel I have never felt quite uncomfortable comfortable if my work starts to trying to define what I resemble itself too do. I confess that I do not devote a great deal of time trying to cultivate collectors and I’m not even sure that I know how, apart from having regular exhibitions, keeping up an Instagram presence, being friendly and living in hope… But, Instagram has been a great and valuable way of getting my work seen beyond where I show, even if it is only seen on the screen of an iPhone. Who are your biggest influences in the creative world? Different artists have informed me in different ways over the years. It is is an ever expanding and changing list that is informed by what my eyes are currently craving. But there are some artists that I continue to come back to and whose work continues to inspire. Louise Bourgeois, Eva Hesse, Kiki Smith,

Marina Abramovic and Joseph Beuys for their fearless and intuitive explorations of process, psychology and materials. Bill Viola, Hilma af Klint, Colin McCahon, Bill Henson, Anish Kapoor, Mark Rothko, Olafur Eliasson and Chiharu Shiota for their explorations of things

that are sublime and intangible, and providing immersive and transcendent experiences. Piero della Francesca, Henri Matisse, Richard Diebenkorn, Bill Traylor, Henri Cartier-Bresson and Rover Thomas for the exquisite balance and spaciousness of their compositions.

Cy Twombly, Joan Mitchell, Brice Marden, Terry Winters, Elizabeth Cummings, Gerhard Richter, Aida Tomescu and Tony Tuckson for the physicality of their paint and the energy of their mark making. Robert Rauschenberg, Sigmar Polke, Antoni Tapies, Lawrence Carroll and Fiona Hall for their fearless and endlessly surprising juxtapositions and use of materials. Agnes Martin, Roni Horn, Robert Ryman and Kat Shapiro Wood for their capacity to speak volumes through expressions of quiet restraint. There are so many more artists, writers, musicians and film makers whose work has inspired me but I think I’ve reached my word count. If you could go back and give yourself advice, what would it be? An abundance of vintage collectables displayed from floor to ceiling that put my lonely 1950’s skateboard to shame. This man was a walking talking encyclopedia of rich Australian history. The FJ also appeared in the movie, ‘The Year My Voice Broke’ which was made in Braidwood in the 80’s. In 2000, the FJ was on display at Bob Todd Holden for the 2000 Olympic Torch Relay (being gold and made in 1956, the year of the last Olympics held in Melbourne Australia). You’ve been a collector for many years, and enjoy taking part in a number of collector groups and events. When did the passion start? I’ve always enjoyed collecting even as a younger man. I found it fascinating that what most people take as junk, I see as priceless. The stories behind each item, why they were made and what it was used for still interest me all these years later. I just started collecting a few small bits and bobs and then that turned into a few more and a few more and here we are today. Everyone loves coming into the garage and taking a look at what I’ve found over the years and I get a kick out of sharing 28 GREATER PORT MACQUARIE

the stories behind them. I couldn’t box your collection into one category, as you enjoy finding memorabilia across a wide range of items. Tell us a little about your collection. As you can see there’s a lot squeezed into the space. We extended the garage a few years back to house the growing collection. Gloria says it's fine to buy what I like, as long as it fits in the shed. I ended up with a shipping container to store and display my collection of vintage Victa mowers so I could keep that deal. There’s a lot of Holden memorabilia in here and Australiana mementoes. The old vintage original Smurfs collected from BP service stations from 1979 to 1982 are always popular. These are very rare to come across nowadays. In fact, we

are including these in the annual Coffs Coast Collectors exhibition this month. We’re entering Australiana memorabilia for something a little different. I like to display these with my more modern collection of the Coles Minis. For example the baker will be displayed with the mini bread just to make a more exciting display. Everyone gets a kick out of it. I have a collection of old Australian beer cans displayed in clear Ferrero Rocher cases (thanks to my wife) so they keep in the best condition, antique biscuit tins, Coke bottles, old cookware, early circa Australian pegs, Matchbox and Hotwheels cars, vintage metal toys, red wagons and so many other items. The old tricycles and bikes ranging anywhere from the early 1900’s are pretty

great too. One tricycle in particular could even pre-date that and was a family heirloom. What advice would you give to any novice collector wanting to start out? Just start! When you go to markets and collector fairs, ask as many questions as you like; people are always happy to help and there’s always someone with the knowledge you seek or they know someone else who can point you in the right direction and connect you with the right people. Joining a club is a great way too. Find what you’re interested in and research as much as you can. n The Melbourne HQ, in just days, morphed the annual breast cancer fun run/walk into an Australia-wide virtual event via an online community. In the Virtual MDC, participants walked or ran in their own time or place, and sharing their achievement on social media. 2021’s event retains what makes the MDC – a local, family focussed community event, now with an online portal with wellbeing content, competitions, discounts and more. The Port Macquarie MDC team are back with MDC Local, encouraging people from our region to walk or run on Mother’s Day, Sunday 9 May. MDC CEO Zara Lawless says “The 2021 Mother’s Day Classic returns with community participation. Supporters can wear pink, connect with their MDC community, and take part on Mother’s Day in a COVID-safe manner. Numbers are limited, so you need to book.” The MDC raises vital funds for National Breast Cancer Foundation research. Local fundraising supports the Mid North Coast Cancer Institute.

Local Event Organiser, Kylie Bulmer said, “We can’t wait to get back to Westport Park. With the recent floods, it will put a smile on people’s faces. Thanks to our partners – The Westport Club, Phyx You, HEM Property and Sovereign Hills for helping us.” For MDC Local Ambassador Karen Lamond, this will be her first of many MDCs. Diagnosed with breast cancer in 2019 at 40, Karen’s diagnosis, surgeries and treatment was a whirlwind experience. While it hasn’t been an easy journey, Karen is now cancer-free. “I’m very grateful they found it but also I can’t believe it happened,” said Karen. “I heard about the MDC online. I’ll do it with my family (my boys and husband) and hope friends will participate with me. I’m passionate about this event, raising awareness of breast cancer, and the importance of getting breast checks, even if you don’t have symptoms.” MDC Local will be held at Westport Park and you must register online. ne in 7 Australian women (and one in 716 men) will be diagnosed with breast cancer in their lifetime, with 53 women diagnosed every single day in Australia. It’s the most commonly diagnosed cancer in Australia and sadly, 8 Australians die from it every single day. According to Cancer NSW, the incidence and mortality rates for breast cancer on the Mid North Coast are higher than the national average. So raising awareness of breast cancer

in the local area, and the importance of early detection is vitally important. i Nicole, As an ambassador for the MDC can you tell us about who you will be walking with on the day? My puppy ‘Rumbles’ will be making his Mother's Day Classic debut this year (you can bring along your furry friends hooray). My two kiddies and hubby. The actual morning is so uplifting and fun. It really is a sight, locals getting into the spirit and behind

the cause, I've seen ladies covered head to toe in pink balloons or dressed as pink fairies, inspirational tee’s dedicated to loved ones who fought Breast Cancer made especially for the day. So much love and to see a sea of Pink trailing through the town is amazing. It's so important to raise awareness and funds for this cause, how will you use your position to promote the cause? I'm grateful to have the chance to connect with our local community on a daily basis – the Mid North Coast is like family and like with family you want the best for them and to see each one healthy and happy – so it was a no brainer to once again proudly be an Ambassador for the Mothers Day Classic leg in Port Macquarie. It’s the least I can do to jump on board and help organisers Kylie and Carmen get the word out and to make the event info available to people who may not have heard of (the event) yet. It's not just about the funds, but raising awareness within our community and giving everyone a chance to come together. Reminding people to check their boobies! That last part is most important! Check ‘em ! Early detection is key.

Having seen first hand the outstanding support the NBCF offers to breast cancer patients is one that I will always support and champion for. My dear Nan fought breast cancer twice, my Mother only 4 years ago underwent surgery and treatment also for Breast Cancer and at the age of 27 I nervously waited for the results from the removal of a breast lump. Too many people know or have gone through the ‘fight’ with Breast Cancer. WHY THE MOTHERS DAY CLASSIC: "Fundraising is a great way to continue to get funds. To have more access to preventative measures/treatment for early detection and of course more research for a cure so my daughter (1yrs) doesn’t have to live through such things.”

T

ony please tell us about your background in the hospitality industry? I’ve been in the hospitality industry for about 20 years, everything ranging from making pizzas at Italian restaurants to fine dining at seafood restaurants. I have held different positions throughout this time starting as a kitchen hand and eventually progressing up to executive chef. Working with many great chefs and characters in the industry has been a great experience for me.

Where does your passion for working with food and creating amazing flavours and dishes come from? From a young age I always had lots of influence with food, coming from a big family there was lot of time spent in the kitchen. I was fortunate enough in having a mother and grandmothers that held a great tradition in cooking. My great grandfather studied under the famous chef Georges Escoffier and lot was passed down through the generations. What can customers expect when they

come to the new Bowl ’n Slice and the Wauchope Country Club? There are exciting times coming up at our new Bowl ‘n Slice at the Wauchope Country Club, with theme nights, specials that will change several times a day, seasonal menus that incorporate the fresh local produce that we have in the Hastings and greater NSW regions – for example our popular special (1kg) Tomahawk Steak is sourced from one of our local butchers Holy Cow. Working with Sous Chef Nathan Ferrett we hope to offer members and visitors a memorable experience at the Club that would make them dine with us again. Tell us a bit about the food competition are you entering through Clubs NSW? We have entered into Clubs NSW Perfect Plate competition with a Macadamia nut crusted pork cutlet, Sauteed minted broccolini, Cajun infused baked sweet potato medallions, Creamy seeded mustard bacon and champagne volute topped with lemon myrtle infused prawns. Guests can vote for this dish at the Club and we are excited to represent Wauchope in this state-wide competition.

MOYA / BARISTA Tell us about the coffee you serve at LV’s. Gabriel Coffee is a specialty coffee roaster located in Chatswood in Sydney. Sam and his team sustainably source the finest coffee beans from around the globe. At LV’s we serve two kinds of coffee beans, so our coffee lovers always have a choice. MONTE CARLO – A blend purposely built for milk-based coffee, featuring candied citrus and chocolate notes. This bean also holds its own as a black coffee. SINGLE ORIGIN – Each month brings us a new Single Origin Bean. From a different origin, flavour profile and process. These beans are carefully selected to be served as an espresso or long black. Each month our coffee enthusiasts get to try something new and exciting. Currently we are running a Colombian bean processed by Carbonic Maceration (a process borrowed from wine making) with tasting notes of Cherry Ripe, cinnamon and lime. What does it take to create the perfect cup of coffee? “The perfect cup of coffee” is hard to describe these days and only really exists to the individual consuming it. The way coffee has been brewed and served has changed greatly over the years. To begin with, coffee science has grown exponentially over the years with particular importance on some things such as, coffee origin, roasting profiles, water quality, brew ratios, milk alternatives and temperature. A barista must then have an understanding of the personal preference of the consumer. At LV’s the perfect cup of coffee is defined by more than just what goes into the cup. BEAU / OWNER LV’s is the new addition to your café group. What was it that attracted you to purchase LV’s? LV’s has long had a reputation in Port Macquarie as a café that provides amazing “paddock to plate” food in a great waterfront location. What have you learnt since owning the two separate cafés? Two cafés are certainly a never-ending juggle. To me it is particularly important to have the right staff on my team. Hospitality is an ever-evolving beast and to be successful you need a quality team to help push the barriers of what is possible in the cafés. LV’s food reputation has always been positive. How do you keep it fresh and interesting? We have just released our first new menu for 2021. A few old favourites along with some new highly creative and interesting dishes. Still using quality local produce from farmers and suppliers in our Hastings region. With a new menu out, what are some of your favourite dishes and why? Two of my favourites are: Hash Eggs Benny – A spin-off to your normal eggs benny, this dish is served on a house made potato rosti which is NOT deep

fried, allowing us to provide a healthier alternative that is super delicious. You also get your choice of bacon, Little Eden ham, or house-smoked salmon. Oriental Breakfast – The flavour profiles in this dish are something everyone should experience. Adding a little Asian influence to the dish with things like miso-glazed eggplant and gochujang aioli. Would be my pick for anyone looking to try something different. DAWN / HEAD CHEF What inspired you to pursue a career in the hospitality industry? Coming from a small town in Lithuania I grew up in my mother’s café watching her cook every day. My sisters are also chefs so cooking certainly runs in our family. It is a passion that connects us to home and each other when we are far apart. Where do your ideas come from when creating a new menu or special dish? I have worked primarily in larger kitchens and specialised in a wide range of cuisines from all over the world. At LV’s we are working hard to ensure we are using as much fresh, local and seasonal produce by supporting local farmers. We are bringing a fresh and healthy spin to your favourite breakfast classics with a creative flair that you will have to come try for yourself.

SO MUCH MORE than a Café and Club Bistro

C

an you introduce us to the amazing team behind the scenes? It sure is, we are nothing without our amazing team. The team at Drift consists of our new Head Chef Matthew Hatton and Sous Chef Mitchell Clarke. We are very happy to welcome these guys on board and are excited to see what the guys cook up for our upcoming new menu and daily specials board. Now to meet our front of house team who all do an awesome job welcoming you to Drift, taking you to your table, getting your orders or making your coffees. First up is our FOH manager James Kelleher (not pictured) and our lovely bunch of FOH supervisors Jess, Faith and Zanni. They are here to help and make sure your dining experience at the Drift is always a positive one. What do you pride yourself on when it comes to Drift? Our customer service, communication and producing high-quality meals and coffee using as many local businesses and suppliers as possible. There are some exciting changes coming up for the restaurant, can you let us in on what those are? Drift has been operating at its limits for some time now and Club’s Board of Directors and management had put in motion plans to extend Drift prior to the Covid-19 shutdown and reactivated those plans with the extension starting this month. The Drift extension includes a much larger kitchen, 80 additional seats, extended bar and café facilities and outside dining. We are very excited, aiming for a September, early October finish and launch. As most of our members and guests are aware the upstairs buffet Eastern Tiger Restaurant closed their doors at the end of February which was sad after such a long period at the Club. Therefore with the upstairs space now available we are going to move Drift upstairs whilst the

renovations are underway which is great as we will be able to operate as normal. Also look out for our new menu on its way soon. Why is it that Drift is so popular? It definitely starts with our friendly and helpful front of house team and consistently producing high quality meals. We pride ourselves on the café side of Drift, offering consistently delicious coffees, cakes and sandwiches. It’s a perfect space outside of dining hour for a catch up with friends and family. eing the head chef at Panthers would be a super exciting but full on role, what is a day in the kitchen like for you? At its best my role can be very rewarding, seeing customers satisfied as they leave, and getting great feedback on their experiences. The focus of each day is to lead my team in the goal of delivering first class meals to our customers, and importantly in a timely and professional manner. Also my focus is on maintaining excellent relationships with my suppliers, firstly to obtain their support to get product at a good price and as required, but as importantly to identify opportunities with regards to new products or specials that will enhance our deliverables to our customers. The role has proven to be challenging through COVID-19 and it is hoped that our road to “normalisation” continues and as such full opportunities return to be the norm. Kove is unlike any other club “bistro” – what was your vision when creating the menu? Since arriving at Panthers Port Macquarie, my focus on menu selection has been set on listening to customers’ “wants” and looking locally to source fresh produce, but more importantly focusing on items we can deliver within acceptable wait-times and at an affordable price. I see the Daily Specials as being an opportunity to challenge customers to try alternatives, some of which can and do lead to inclusion in future Menus. What is your background in the industry? This year is my twenty-third year in the industry, of which I have held roles in the Panthers Group for fifteen years. I have held Head Chef and senior roles in various organisations, and learnt from some very talented professionals along the way. 44 GREATER PORT MACQUARIE

My goals have always been based on 1. customer satisfaction focusing on product and experiences, 2. staff development and 3. being a good team player. I came to Panthers Port Macquarie in early 2020 to assist them in difficult times, and ended up being offered the Head Chef role. I took up the challenge and have now held the role for some fourteen months. I would not be honest to say it has not been difficult, mainly attributed to the COVID-19 constraints. But Panthers Port Macquarie’s General Manage Russell Stockham, and others have been a great assistance. What are some of your most favourite ingredients to cook with and why? My desire is to deliver what customers want, in a reasonable time and at an affordable cost. I love to work off-menu, and as such I like to

focus on “Daily Specials”, that way we can deliver alternative dishes to satisfy customers. At times my focus is on higher end products like seafood, or seafood and other protein combinations, but I also like to look at other more affordable specials. For those who haven’t experienced Kove, what would be 5 words to describe your food? Focus is local, fresh and affordable. If you not in the kitchen you are… Probably on the phone talking to suppliers or staff. While rewarding the role is very demanding, added to by the impacts of COVID-19 with staffing, restrictions and supplies. In my free time, I like to get out and see what Port Macquarie and other venues have to offer.

Leeks -1 Carrot - 2 sticks Celery - 2 sticks Potato - 1kg Fish Stock - 2 litres Parsley - 1/2 bunch Garlic - 2 cloves Blue Eye Cod -1kg Blue Swimmer Crab - 4 Crab Meat - 250g Squid - 300g U\10 Prawns - 8 Clams -1kg Cream - 200ml

METHOD 1. Finely slice leeks, chop celery and carrot into small fine dice. Saute the ingredients off in a heavy base metal pot, also adding the fresh garlic and sweat this off for about 2 minutes. 2. Add fish stock or vegetable stock if preferred. Peel and dice potato and add to stock along with Blue Swimmer Crab. 3. Bone and cut Blue Eyed Cod into 4 small pieces and seal off in a non-stick frying pan along with clams, finely sliced squid, U\10 prawns, then add this all to the pot. 4. Simmer in pot until potatoes have broken down and then become a thickened sauce. 5. Add to the pot seasoning and cream, chopped parsley and serve this in a deep bowl. Served with crusty bread.

i Lisa & Todd. Your beautiful farm out here at Rollands Plains is bursting with life and produce. Tell us how Chef2Farmer came

about. Chef2Farmer came about through our support of local farmers and producers in our recently sold café LV’s on Clarence. Our journey from chef to farmers really started when we purchased our first chicken caravan and flock of 500 chickens. own farm, along with introducing pasture raised pigs and 100% grass fed cattle. Soon our transition from ‘chef’ to farmer was an extension of our love for food, but now our passions are within how this food is raised and how we can get the most nutrient dense, quality and ethically-produced produce into our community. You have lived here with your family for four years all while progressively working at regenerating the land. Tell us about this process, your farming methods and your goal. Regenerative agriculture is all about improving soils, water cycles and using

animals’ natural behaviours as a tool to help us to do this. Our cattle are moved every day, ensuring no overgrazing and ensuring they consume a wide range of the grasses in that area. This ensures a balanced diet for them as they have to graze only what’s available. Our goal is high impact for very short periods (no more than 24 hours) with long periods of rest for the pasture. Our some 1200 chickens live in three separate chicken caravans throughout our property. They are an amazing tool in creating natural fertilisers (poop and wee) and then spreading it using throughout. They have 24/7 access to the freshest pastures and are moved twice a week to ensure this. We use the chooks to follow after our cattle spreading even more goodness! Our pigs live in natural forestry, foraging,

What are you currently growing, nurturing and selling? Our pasture-raised eggs are sold throughout cafes, butchers, Growers Market and local food markets in Port Macquarie and

Bellingen. Our 100% grass fed and finished beef and pasture-raised pork are sold direct to customers, cafes and soon to be at our local markets. We have just purchased our first batch of meat chickens to include pasture-raised chicken to the mix too! Port Macquarie’s local businesses seek you out specifically for healthy and ethical produce. Beantree Café have been using our eggs on their menu for quite a few years now and the chefs have done outstanding specials with our beef and pork. ure it is true what they say, that looks aren’t everything. But some of us, well, we can’t help being powered by the very visual side of our brains. Not possessing the super heightened sense of smell of our canine friends, nor the echolocation of a bat, it isn’t surprising that what we perceive with our eyes has such a powerful impact on our experience of the world around us. We humans can’t help but gravitate towards visual beauty – our eyes naturally crave to behold a pretty scene, a point of interest, something glittery and sparkly to attract our attention. Architects throughout the ages have striven to create harmonious structures that please the eye, that invite pleasant associations, that either blend beautifully into their environment, or command complete supremacy over it. No matter what the guiding philosophy is, the outcome is just the same, to please our eyes and therefore to hold our attention. Of all the five senses, Sight most often provides our first impression of a myriad of experiences. Visual impression is difficult to move past, certainly it’s just about impossible to unsee what has already been seen. If we find ourselves experiencing a negative visual scenario, it can get burned into our

brains and relived over and over again in our memories. This is why in the Restaurant game it’s so vitally important to nail that initial visual appeal – and then strive to keep it coming throughout an entire dining experience. A kind of awesome uniqueness about the experience of dining in a restaurant is that you not only get the powerful visual stimuli of firstly the ambience of your surroundings and then what the offerings on plates and glasses present to your eyes, but additionally there’s of course the simultaneous, abundant experiences of taste and smell. This potent combination has the power to provide a veritable feast for the senses and a not-to-be-forgotten moment of joy in life if it is successful. Of course, if it isn’t (and we’ve all been there), then it still unfortunately creates not so cherished memories that are also regrettably burned into your brain. But it just goes to show how prolific an influence our eyes have, when you factor in those dining experiences where the location is out of this world – I’m talking iconic landmarks to look at, uninterrupted water views and such – but perhaps the food wasn’t anything special, and well the service kind of sucked to be frank… It isn’t an uncommon experience to have visited such a place and for it to have – dare

I say this – almost not to have mattered what you ate or drank, or that half your order was forgotten – the location, the view, the seductive allure of the place, the queue to get in or the luck of just getting a table was enough. That somehow your eyes had enough to feast on – to see and to be seen there… And the fact is many such places know this to be true of their patrons, and really, they don’t have to try too hard to get bums on seats. In this way, the beauty is of mere surface level. You might dine there once, but will you bother next time? AKA all style and no substance. But fortunately there dare to be places that take it one step further – excelling in culinary and beverage delivery, passionately providing great service, as well as having a knockout view to die for… This calibre of dining experience can be next level. Totally life affirming stuff. However, the majority of us don’t frequent such wonders of the modern world every day, so in the meantime we can be completely happy with the beauty inherent in our everyday scenes, local restaurants and the joy in what is familiar and comfortable to us. And looking out the window in this place we call home, well it is really pretty darn visually appealing in itself!

This theatre production of Les Misérables was penned by Tim Kelly based on the classic book by Victor Hugo. The play spans over 15 years culminating with the 1832 June Rebellion in Paris. It follows the lives and interactions of several characters, particularly the struggles of ex-convict Jean Valjean and his experience of redemption. Examining the nature of law and grace, the play examines moral philosophy, anti monarchism, justice, religion, and the types and nature of romantic and familial love. This has been

adapted for a modern audience with elements of grunge rock and steampunk. This year, the St Columba Anglican School Year 11 drama class will be performing in featured roles and supported by the Junior and Senior Drama ensembles. This adaptation has no coarse language, but contains theatrical violence and grapples with some emotional themes. It is a fresh interpretation of a literary classic. DAIRY FARMER

Care for animals and land produces exceptional flavour. By Kate Dwyer

D

airy farmer Col Cowan loves the whole ecosystem of producing milk. He is the third generation of farmers to work the land on his 270 acres property at Johns River on the NSW Mid North Coast. “I was coming to the dairy when I was a five or six years old and putting the cups on the cows.” “I guess the reason I left school to become a farmer is that passion for the cows since I was young.” He doesn’t mind the very early morning starts, 5am seven days a week, because he enjoys the farming lifestyle and working with his cows. “From the passion for cows, I soon grew a passion for growing pasture. I found that it was a nice, efficient, and profitable way to dairy.” “So, I love the whole system. Growing grass, getting it up to a nice height, and then putting the cows on it, and seeing the return in the vat. And I enjoy running a small business.” Col runs a milking herd, 200 head of replacement cows and a Holstein stud. He supplies milk for the Farmers’ Own brand and says it’s the best product in the fridge at Woolworths supermarkets. The Farmers’ Own Story Farmers have a gift for ingenuity. When you work on a remote property, you need to be able to work around problems when they arise. In 2011, when faced with downward pressure

on the price of their product, a group of farmers, including Col, sought to sit down with supermarkets to get a better deal. Two years later, the Farmers’ Own brand was on the shelves exclusively at Woolworths. A milk brand created by farmers to benefit farmers and consumers. “We found that processors could pay whatever price they wanted, with no regard to the price paid to the farmers; they could drop the price as they liked.” “So Tim Bale, who’s a leader of our collective bargaining group, wrote letters to each of the Woolworths directors, documenting our plight. We got a sympathetic ear. They came up and met us on the farm, and we had lunch at the Hannam Vale shop, and it grew from there.” Farmers’ Own labels feature the faces of the dairy farmers in the group. Unfortunately, you won’t find a bottle with Col’s face. “They couldn’t fit my ears in the photo,” Col joked. When the milk leaves the farm, the Farmers’ Own processor ensures its unique flavour characteristics are not lost in the treatment process. Cows produce milk of varying protein and fat content. In processing, milk is standardised to a certain percentage of fat which also standardises the flavour. “Our milk meets strict hygiene standards, but it goes through minimal processing, so generally it has a higher cream content which gives it a

great flavour.” “Most processors will skim off the cream to a minimum standard, and that’s what goes on the shelf. But our milk has whatever fat and protein content the cows are producing.” “It’s the closest thing on the supermarket shelf to what a dairy farmer has on the farm.” The Welfare of Animals and Land Col is proud of the product he and his cows produce. He manages the whole system, from growing quality pastures to caring for each animal. This deep understanding and passion are evident in the milk vat each day. Animal welfare is also part of farming which Col takes to heart. Excess Friesians are sold to other farmers. Male calves (bobby calves) born on the property, are surplus to the needs of dairy farmers. “When we started Farmers’ Own we went to Woolworths with a voluntary plan about animal welfare.” “Dealing with bobby calves is a big issue. We rehome our calves. We rear them with milk until they can be sold and rehomed.” “Some people in the industry knock bobby calves on the head. This goes against everything in my instinct in regard to caring for aminals as I was raised to do.” “All the Farmers’ Own dairy farmers are qualified to put down a cow if needed humanely. We’ve done a euthanasia course.”


Each of the cows on Col’s dairy farm wears a smart device which analyses their physical activity and health. At any time of the day, Col can log in and check on his herd remotely. The devices will send an alert to the farmer if a cow’s physical activity or health readings change. This minimises the length of time a cow may be unwell, in pain, and needing veterinary treatment. Johns River is a great place to produce milk. The rich soil ranges from red on the hills to alluvial flats around creeks on Col’s property, which has been in the family for one hundred years. “My cows are grazing on green pastures; they’re not standing on concrete eating out of a trough.” “Once they’ve filled their bellies, they can go and lie down on green pasture. No dirt and dung is getting all over their udders, so they get less mastitis and a better quality product for us.” “Just look at this valley, how could it not produce beautiful milk?” “Looking after your pasture is important; not overgrazing and not grazing before it’s ready. We leave a nice residual for the next grazing. Sometimes that involves bringing your cows off the strip at about 11am and giving them some hay. It just protects your pasture a lot better, and it recovers a lot better for the next grazing.”

“We also make sure we raise pasture to conserve feed for silage.” Challenges Usually, there is high rainfall in the Camden Haven hinterland, ideal for dairy farming. “Most years, we get around 1500mm. 2019 was quite horrific, as it was everywhere.” “We ended up with about 520 mm for the year, about a third of the yearly average.” “We were fortunate enough, we had about 700 bales of silage conserved from the previous spring, and that carried us through the season pretty well.” “But once we got to about mid-October, the little bits of showers we were getting here and there stopped, the temperatures soared, we had horrendous winds.” “It was about the same time the bushfires started. The bushfires did cross the highway from the wetlands, and this property starts 500 metres from the highway at Johns River, so it was pretty close.” “We were more affected by the smoke. We’ve lost three or four cows with respiratory problems in recent months. Some cows lost their pregnancies, and some of them never went back in calf. So yeah, some pretty expensive stud cows in that group, so that was probably our biggest losses.” “One of the big issues was sourcing quality fodder, like hay. There’s a lot of rivalry in the hay industry, and a lot of us were desperate to feed our cows. And there were some pretty ordinary stories about paying big money for poor quality hay. So, yeah, so we muddled along to middle of October, and then we’re running at a fairly drastic loss through November, December, and then mid-January, until the rain did come. And everything’s turned around since then.” After the fires, having a farm was a blessing during the COVID-19 pandemic. “With this COVID period we’ve just gone through, we weren’t affected at all. Very minimal, anyway, let’s put it that way.” “We still had jobs; people still needed food. We’ve had fantastic weather since late January. We’ve been able to produce a fantastic product.” Providence, Col says, is important to many consumers and should drive their food-buying motivations. “The dairy industry is still very crucial. Let’s face it, Australia is struggling for industries, and the dairy industry is one that’s been established

for well over a hundred years. I’m not sure what the figures are off the top of my head, but I’m sure just the dairy industry would put a hundred million dollars into the economy. It creates jobs, a good atmosphere and lifestyle. People enjoy driving through the area and seeing the cows grazing on the paddock.” “When you buy food that’s produced here it’s a lot fresher. When we started selling milk to Woolworths, we made them aware that some of the milk on their shelves was coming from interstate. And they were quite horrified, because their key motto is, ‘We’re the fresh food people.’ So yeah, all milk that is procured from each state is produced and sold in that state.” Col is proud that consumers are voting with their wallets and hearts, contributing to the Farmers’ Own success story. “Since our product hit the shelves in 2013, we’ve been entering in fine food shows and royal shows like the Sydney show and Brisbane, and we’ve done quite well over the years.” “Our biggest win was last year in 2019 we won the Canstar Blue, which is a survey taken across all states by consumers.” “Our milk ranked number one. It got five stars in all four categories, which were overall satisfaction, taste, value for money and packaging design. The Port Macquarie-Hastings Bridge Club is pleased to announce an introductory bridge program for new players who would like to learn how to play and enjoy the game of bridge – the world’s most popular and inexpensive mind sport.

he objective is to graduate new players to acquire a sound basic understanding of the game, develop a confidence in their ability and enjoy participating and socialising with fellow bridge players in a Covid-aware and safe environment. An Open Day on Thursday 29th April at 11:30am will be held at our air-conditioned clubhouse at Hamilton Green at 176 Hastings River Drive, and is ideal for a general introduction into both the bridge club and the game itself.

The lessons program starts on Friday 30th April and will be run by a mainstay of the club’s activities since 1989, founding member and grand master, Yvonne Cains OAM. With her patient and thorough teaching methods new players are assured of rapidly building their Bridge skill and confidence level. Yvonne’s lessons program involves a weekly session each Friday morning from 9:30 – 11:30am for 7 weeks and covers all aspects of the game including hand evaluation, bidding, responding, defending, card play techniques, advanced conventions and game etiquette.

There is a lot of practice play built into each session so that learners can apply the techniques of each week’s lesson. The medical profession recognises that, as people tend to live longer, remaining mentally fit may be as important as maintaining levels of physical fitness. J, many of us know you from your Party Professionals business, I think we have all been to an event you’ve been working at, or hosting. Can you introduce us to the rest of your family? Steve (my husband) and I live on our farm in Sancrox with our two boys Ben (8) and Jack (7). I’ve grown up in Port Macquarie so have a tribe of family in the area that we are so lucky to have. Steve moved up from Tassie over 20 years ago, so we are excited that we can officially call him a local now :-) You recently started The Davis Farm, how did this business venture come about? When Covid hit our company, Party Professionals, completely shut down. Within 24 hours every booking we had was cancelled and we were left a bit dumbstruck and wondering what we were going to do. So we turned to our garden and started building the plans that we had been talking about for years. A community hobby farm! We always had a passion for being self sufficient and up until that point had never had the time to make it a reality. The last 12 months have been a roller coaster for us all, but particularly for your family. Walk us through what the last year has been like? Mental health has been something our 58 GREATER PORT MACQUARIE

family has struggled with for a long time but just before Covid was probably the hardest. Steve had been trying to get a diagnosis to help him with his mental health struggles and had been given a diagnosis of ADHD. He was prescribed a medication but we have since found out that was a misdiagnosis and the incorrect medication that had the opposite effect it was supposed to. A mixture of this medication, years of mental health struggles and then losing contact with family that we love very much became too much, and in February 2020 Steve tried to take his own life. Thankfully and by sheer luck, he wasn't successful. Ever since has been a journey of ups and downs. Covid was a blessing in disguise for us. It came just when we needed to disconnect from everything and just heal. That's what our farm did for us. It helped us heal. At what point did you decide this topic needed to be openly spoken about? Do you think there is enough awareness around Mental Health? Looking back at that time and all the people who contacted me, I was really astounded by the amount of people who had been through similar things to us. I couldn’t understand how all these people we knew for years had struggled and were still struggling, and we had no idea. It wasn’t until we had been through it that it was talked about. So this was something that we decided we weren’t

going to sweep under the carpet and not talk about. What is your mission with the Davis farm? We decided that what the farm had done for our family needed to be shared. The core of everything we do at the farm is about mental health. Inclusiveness, acceptance and just understanding. On the outside we might just look like a tourist attraction showcasing animals for the kids to see and good coffee, but there is so much more. We are teaming up with some exceptional groups and companies that do amazing things already for mental health in our community, to maximise what our farm can offer the community. This is why we made the decision to run as a Not for Profit. Everything goes back into creating and offering more to the community. Lastly, we love our town, and it’s evident that you and your family do as well. Can you tell us your favourite thing about Port Macquarie? Definitely the people. The best part about both of our jobs is we get to meet lots of people in our community and they really are the most amazingly generous bunch of people. Watching the way they have banded together through all our recent disasters and really helped each other so selflessly has been inspiring. And being on the receiving end of so much community love just makes us so proud and blessed to be a part of it.

Players Theatre is back better than ever and is set to offer our community a varied selection of shows throughout 2021. “We Will Rock You” premieres this May – how has production been going? Getting back into action for a full scale production has been a blast! The Production Team have been ‘full throttle’ in preparations. Direction Duo Hamish Keddie and Paul Bishop will be quoting the show for many years to come after months of planning and rehearsals. Our members and supporters have been really eager to get stuck into this rock musical and the show will blow audiences’ minds! Having the theatre buzzing again is brilliant! Cast and crew have loved bringing this musical to life and enjoying the thrill of live performance – a feeling second to none! This epic musical tells the story of a globalised future without musical instruments. A handful of rock rebels, the Bohemians, fight against the all-powerful Globalsoft company and its boss, the Killer Queen; they fight for freedom, individuality and the rebirth of the age of rock. The AAA Australian Tour kicked off in April and for the first time in 15 years, regional cities are set to catch a glimpse of Human Nature with Port Macquarie hosting the quartet. With a career spanning 30 years and many accolades under their belts, the band are back in Australia ready to bring a mixture of hit favourites and premiere new collaborations with Australian artists.

H

ey Guys. Firstly, what a career! Not only are you celebrating 30 years as a successful band, but also friendship. How has the friendship with each other changed since you were in the schoolyard? Over the years our friendship has definitely changed from being mates to being almost like extended family. We don’t hang out when we aren’t working together these days but that’s because as a band, we have spent SO much time in each others’ pockets. We have learned to really respect each others’ opinions and, for the most part, our personal lives manage to stay out of the work relationship. I think that helps when we are singing and creating together, we click into a HUMAN NATURE vibe that transcends friendship and we can do what we do best – make music and entertain our fans as a band. The hits have been coming for 30 years, what do you think contributes to your longevity? I think staying humble and not forgetting where we came from is always a great foundation. We always try and challenge ourselves creatively when a new opportunity comes along, and that keeps things fresh for us, and then in turn we think for the fans too. Remind us all of some of your biggest hits that we may hear on the night? We’ll be going for the early hits like TELLING EVERYBODY and WISHES to EVERY TIME U CRY, HE DON’T LOVE YOU and ETERNAL FLAME. Then

our epic Motown catalogue of REACH OUT and DANCING IN THE STREET right up to Jukebox with RUN AROUND SUE. We will also include our new songs – we’re excited to sing the latest duet we are releasing with our good friend Guy Sebastian. It’s called BROKEN HUMANS. Share with us one of your stories from the road or recording studio... We have a lot of fun stories that we have revisited even putting this show together; the Boyband days, opening in Vegas and all the while being able to keep making albums. One humbling moment might be our smallest ever crowd… we were playing a shopping centre in Adelaide and there was a total of 4 people in the audience… our manager, his wife and their 2 friends, that was it. We still gave it our best but we did wonder if things might be heading in the wrong direction... Luckily we stayed determined and the rest is history. Human Nature dominated the Las Vegas Strip for over a decade, what was this period like? Las Vegas has been so amazing to us personally and professionally. To have a show run for that long and be embraced by “The Entertainment Capital Of The World” as it’s known, is so cool. It has made us better performers, given us a second home and I also believe it has kept us together as a group – without Vegas, I don’t think we’d still be as active as HUMAN NATURE as we are blessed to be now. The group has supported artists like Celine

Dion and Michael Jackson. Did you get to meet them in person and, if so, what were they like? Touring as the opening act for both Michael Jackson and Celine Dion was just mind blowing. I think that opportunity would be up there with one of the greatest anyone has heard of!! We did meet both Michael and Celine. Michael was, as you can imagine, very private and our meeting was super short… he was very nice and complimented us. Celine was so warm and welcoming. We actually sang her Happy Birthday on her 30th birthday. It was backstage before a concert and we have even caught up since in Vegas a few years back. She represents the utmost humility which I like to think we can learn from as artists and performers. What can people expect to see when they come to your show? It’s going to be a very intimate concert – focusing on the songs, our voices and the different stories that have led us right to that stage on the night. After this year of such disconnection, we wanted to strip it right back and get up close and personal with the fans that have waited a long time for us to come to their home towns.

With a background in both education and psychology, Wanda Grein found her niche as a creative art therapist and has never looked back. With a new dedicated space opposite beautiful Lake Cathie, Anise Art Creative has found its home.

H

i Wanda. Congratulations – you've recently moved into your own dedicated art space here in Lake Cathie after many years sharing your home with students. Tell us about yourself and your connection to the area. I was born in Sydney, Australia, in 1958, to Dutch immigrant parents. My father was a runaway during World War 2, and my mother was born in a Japanese concentration camp in Malang, Indonesia. I mention this as it defines how I have evolved in my life using Art to be my voice, and so I helped children do the same thing through Art, through being Creative. I grew up very intuitive and arty! Always drawing, talking to angels and people who had passed on. I later discovered that both my grandmothers were the town mediums. I have a strong streak for justice and freedom. As a child I used to find all the children in the school playground that did not have friends and include them in games and fun. Little did I know then, I would grow up to be a teacher of the Arts and be a stand for kids who struggled to learn and have a voice in our education system. 74 GREATER PORT MACQUARIE

I have been teaching for nearly 45 years in all levels of Education, specialising in Creative Arts as a freelance Arts Consultant.

I have been teaching for nearly 45 years in all levels of Education, specialising in Creative Arts as a freelance Arts Consultant. Over the years I created programs in schools which combined Creative Arts with Social Skills, Assertiveness Training, Communication Skills as a Counselling/ Therapy Program for kids with learning disorders, on the spectrum, emotional problems, grief and loss, kids passing over, kids with PTSD, child refugees to name a few. Working with children also meant supporting families. I started my own hobby Art Studio business in 2009 with one student in Gerringong, NSW. I was still lecturing at the university and teaching. Twelve weeks later I had 25 students, and I knew this was the way to go. I left my teaching posts and dedicated myself to expanding my art business, teaching art to adults, implementing Art Meditation classes, Tarot classes, Women’s groups and so on… My son moved up to the Mid North Coast in 2017. After 18 months of travelling from Kiama to Lake Cathie to visit, I was inspired

to start an art business over again here and we moved up to Lake Cathie in 2019. After several stops and starts housing wise, I finally opened the Shop Front Art Studio in Lakeview Village. Your background is in education and psychology and this has helped you develop your unique business Anise Art Creative Wellness. How did this passion grow & transform into what you do now? I have a Degree in Education, specialising in Psychology, a Diploma in Counselling and a Masters in Applied Sciences. I have authored two books – one about stress in children transitioning to high school, and the other about the Healing of Art practice. Creative Wellness is at the CORE of who we are as human beings so in my business I include not only art lessons, I also conduct art classes in mindfulness, like creative journaling, intuitive readings and healings. I can just feel what is the cause of people’s ill health. It has always been my dream to create a Healing Arts Centre… one day. I work with a broad range of children and adults as well as people on NDIS funding. The

biggest hurdle I find for people with disabilities is making a start. Taking the action. My advice for anyone who is curious about Art classes is to come along and ‘have a crack’. My business logo is…. RELAX-PLAY-CREATE. Pampering your Creative Soul. Art therapy offers a safe place for personal expression all while guiding the student through mediums. What do you find are the benefits of this? The benefits of Art practice opens up conversation, communication, awareness of self, trust and understanding naturally. It allows connection to Soul, where everyone who participates recognises a shift in themselves where they are not worrying, and the mind and body are actually resting and at peace. I see this happen every week. Throughout the years I have witnessed the healing of others in simple and dramatic ways. That is what my book “All Roads Lead to Cairo, No Need to Judge” is all about. Your after-school art classes are very much sought after. What’s on offer for the children who come along? Children create because it is natural. I have noticed that learning how to use the various art materials and develop artistic skills gives them great satisfaction!

I am not worried about the children making ‘mistakes’ or that the work needs to be perfect. I encourage the children to complete a task as best they can. That way they learn to push through when they get stuck on a project. It develops tenacity. I like to show children that giving up too soon you will never know what the art can become. My aim in my art classes is to give children the space to WIND DOWN, get into a calm brainwave pattern of focus. The children still have fun, and I give them time to have a little play/run around with each other during break time. My model of teaching has demonstrated that children become good drawers, painters and artists in their own right with their own style without even trying. They become positive thinkers and open minded problem solvers. The children choose the projects they wish to complete with some input from me so they learn different techniques and styles. Each child is on their own project and the classes are multi aged. Children learn from each other and that is what I love about teaching that way. The art classes are busy, and I have two wonderful high school students assisting on

most days. They are learning to teach what they understand, while I supervise their own growth in the area of the arts. I also offer Art Therapy classes for kids on Monday afternoons. That is a small focused group incorporating strategies to meet the specific needs of the children. And for the adults you offer Paint n Tipple evenings and of course adult art classes. For those that may believe they don’have a creative bone in their body, what advice would you give? I do not know how many times I have heard ADULTS say to me: ”I have always wanted to paint and draw, but I am hopeless at it.” I teach adults from scratch on a Beginner program made up of 2 art sessions – I have a specific method with this program. I teach beginners to professional artists who have lost their mojo and want to be inspired. My Paint n Tipple classes have been a great success because I allow every participant to work with their own creativity giving them choices of colour and ideas even though everyone is focused on the one image… there are variations to be explored. At just 15 years of age, off-road racer Billy Hargy has jumped the ladder pre y quickly a er joining the sport only a few years ago. Days spent riding in the bush while growing up have certainly paid off and Billy now spends his time developing the talent and skills required to compete in championships all over Australia.

i Billy. Racing has been a big part of your life since the age of four. Firstly, for those that don’t know you, please introduce yourself. My name is Billy Hargy, from Wauchope, and I am 15 years old. I am one of four Australian riders selected to be on the “Junior Husqvarna Development Team” for offroad racing on a FC250 and a TC125. Racing has been a big part of my life since I was 4 years old. I started racing then in the non competitive group at the Hastings Valley Motorcycle Club, and my family realised straight away I had a natural talent for Motocross. I have won 3 consecutive National Titles (I hope for a fourth this year), a few state championships and other major open events throughout NSW and Queensland The 2020 race season came crashing down 78 GREATER PORT MACQUARIE

I have had bad luck at this event the last couple of years so it will be a dream to win or even get a solid position in this race this year. ort Macquarie GPs have recently had a facelift and a name change. What were the reasons behind this?

The new name better reflects the new ownership and focus. We are a unique medical practice, owned and run by GPs, with a vision of excellence and service. Our practice is part of the new Port Health Campus, alongside a diverse range of allied health providers.

You have a wonderful group of Doctors and staff at the Clinic. What is your role and can you introduce us to some of the staff within the clinic? Yes we are indeed blessed to have an exceptional group of doctors, nurses and staff at Port Macquarie GPs. My role is to facilitate each individual to develop their full potential. We encourage all our GPs to develop specialised skills if they want to. For instance Dr Jonathan Barnett is highly skilled at joint injections. Several

doctors, including myself have a special interest in diabetes and others in Women’s Health. Our practice manager Louise, looks after the staff – who have been very busy in these challenging times! Our lead nurse Christine is very popular with doctors and patients for her gentle, competent leadership. Our new doctors Lindsey and Dianne Sherriff add even more depth and experience to our team.

CAN I CRUSH UP MY MEDICINE TO TAKE IT?

rushing Up Medicines There are times when you may be tempted to break up, crush or chew a tablet or other medicine to make it easier to swallow. It is very important that you find out first if this is ok. This should not be done with certain medicines. Slow Release Medicines (eg Medicines with Xr, Sr after the name) Some medicines are designed to not be released into the blood stream all at once but rather for small amounts of the medicine to be released over the course of 12 or 24 hours. Slow release of medicines is very useful in medicines that need to be taken every day in order to get 24 hour use of the medicine.

It is very dangerous to alter this type of medicine by crushing or chewing it (some may be broken) as this means a very high amount of the medicine could be released into the blood stream all at once rather than small amounts over a longer time. This can result in death due to very high medicine levels. Under The Tongue (Sublingual) Tablets (eg Medicines that come in a wafer) Some medicines are designed to be placed under the tongue so that the medicine can be absorbed into the blood stream from the mouth. The advantage of this type of medicine is that they work pretty quickly as the medicine does not have to wait to get to the gastrointestinal tract in order to work. If a sublingual medicine

is swallowed (following crushing, breaking or chewing) it probably won’t work at all. Enteric Coated Medicines (eg Medicines with Ec after the name) Some medicines have an enteric coating which is designed to dissolve in the small intestine and not in the stomach. These coatings have two uses. They can protect the stomach from medicines that may irritate and they can protect the medicine itself if it can be damaged by the stomach acid. Check Before You Alter Your Medicine Always check with a Pharmacist if it is ok to crush, break or chew your medicine. If this is not possible it is likely there will be an alternative to the medicine you need that is available in a liquid or sublingual medicine. Some medicines that come in tablet form can be dispersed in water and the solution then swallowed. Some medicines that come in capsules can be opened up and the medicine inside can be put on/in food or in water. There are medications that are suitable for crushing. Some of the medicine is always lost when it is crushed and some of it remains on the device used for crushing. After a medicine is crushed it can be place directly in the mouth, placed in water to drink or mixed with yoghurt, jam or apple puree.

The first thing was to get our certification – a year long process but we were constantly researching and planning our next steps. We bought our treadmill in January 2020 but spent nearly a year trying to find a home for it, as with the pandemic commercial rentals became hard to secure. We finally found a suitable place in December 2020 and after developing our practical skills we opened in March 2021! Pawsitive Canine Health offers hydrotherapy to furbabies who are recovering from surgery or just in need of exercise. Tell us some of the benefits this exercise has on our four legged friends. There are four main benefits. The first is the warm water – heated to about 31 degrees, it relaxes the dogs and warms the muscles so that they work better during the exercise. The next is buoyancy – reducing pressure of gravity on the joints which is fantastic for dogs recovering from surgery or with arthritis. Next up is water resistance – it’s harder to walk in water and this provides an excellent way to do short, targeted workouts that would take much longer on land. We can also make the workout harder for dogs who are here for fitness. The last benefit is hydrostatic pressure, the squeezing pressure you feel underwater. This puts evenly distributed gentle pressure over

i Kurt. What a big month our town has had. Firstly, tell us a little bit about yourself and the family business. Hi all, I’m Kurt. I was born and bred in PMQ. I love the place and have grown up working alongside my mum and dad in the family business. Starting with All Models Service Centre then, after the sale of the auto side, retaining the marine side and becoming a Marine Technician/Auto Electrician. I’m an avid fisherman, diver and love boarding especially snowboarding. I love everything that has to do with water so the job is always exciting and never a boring day. I have the privilege of working with young and old customers. They are all avid boaters and fellow fishermen, so being able to work with these guys to help them with their passion is so rewarding. Especially when they return after a day at sea with a great catch and one for us too! I have had the unique opportunity to travel on board our vessel and was home schooled during that time after we sold our business. You have held some significant executive roles across your career, launching yourself straight from high school into the fast paced world of corporate accounting with one of the big six in Deloitte. How did your journey progress into different sectors from global pharma giants into regional and rural utility leadership roles? My career has been about making the most of every opportunity. Always starting with “how can this work and what is possible” – so perfect that I am now in Birdon with its ‘Make it Happen’ tagline. I have been blessed to work in a range of industries and in a range of roles, the common element has been looking for and enjoying a challenge and creating environments where we all get to our best work. Two sayings always come up when I am mentoring people – “the harder you work, the luckier you get” and

“if it was easy anyone could do it”, and really this is how I think my career journey has played out. As a self-proclaimed gypsy in your early career you moved from one challenging role to another, graduating from Harvard and excelling in a variety of industries and leadership roles. How important is learning and self-development to career trajectory and impact? Being curious and a great listener are just as important as formal education. While I have had some amazing development opportunities, without the desire to learn and be open to new ideas and different points of view the professional development would have been a waste of time. It is also as much about the people you meet and the shared experiences. I have worked with so many amazing and generous people and draw on a network established over many years that I value. How important has risk been to the success to your journey? Without risk there is no opportunity. Birdon is one of the most risk aware organisations I have worked with. I have had a saying for much of my career that was “start at yes and if you

get to no that’s ok”. This was developed in a mainly government-owned environment where sometimes we had to convince ourselves that we should do something and eliminate all the risk – pretty hard work – compared to seeing the opportunity. Birdon as a growing entity has had to back itself and seize many opportunities – but while some would say we have a strong risk appetite I think we have a strong desire to succeed. I first became involved with Birdon as part of a business planning session and was impressed with their future focus and ambition. The ability to set the priorities for your business and set clear targets means you can effectively manage risks. What is the hardest lesson you have learned in business? Problems you know about are the ones you can solve. For too long in my career I thought every time there was a problem to solve, something must have gone wrong. You should also never let “perfect” get in the way of good or you may never get anything done. If you could give advice to someone wanting to embark on a journey to Managing Director – what would it be? Language, Plain Language and Plain Language Law

n these “unprecedented times” we have been subjected to a barrage of “repurposed” words to describe ordinary concepts in more animated ways. Instead of coldly “contacting” someone we now warmly “reach out” to them. Personally, complete strangers saying that they want to “reach out” to me causes an involuntary retching response, whereas a friend that wants to “contact” me generates pleasure. You “reach out” when you have to stretch to get something, don’t you? Effective communication is particularly important in a word-based activity, such as law, where getting the words wrong can cost you a lot of money or land you in jail. Almost every job requires strong communication skills of one sort or another. Wikijobs UK identifies the “Top 10 Communication Skills” as: emotional intelligence, cohesion and clarity, friendliness, confidence, empathy, respect, listening, open-mindedness, tone of voice, asking good questions. In the past, legal documents have used long complicated sentence structures with several embedded clauses, often without much punctuation, with the result that the meaning of the sentence is lost to the average reader including many lawyers. If you add to that lexicology which incorporates aspects of a language no longer spoken, being Latin, and complex legal jargon with meanings that even lawyers and judges cannot agree on, so that the matter can be litigated all the way to the High Court, the outcome is a lot of dissatisfied

users of the legal system. This sort of language may be referred to as “legalese” as though it is a language all of its own like Japanese or Chinese – just add a capital letter. Legalese had two main characteristics: verbosity and undue technicality. Wills, leases and mortgage documents provided classic examples of legalese. It is not surprising that the various interpretations of this clause led to Supreme Court litigation when the landlord and tenant did not agree as to its meaning. Plain language law is effective communication in a legal context. It is increasingly used by judges, lawyers and legislators. At Priest Legal, we aim to practice plain language law. Sometimes, it is not the highly technical and verbose drafting of a sentence or document

that is the issue, but the complexity of the concept itself. This is true of all occupations. For example, a carpenter may be familiar with “adzing” something and a lawyer may have no idea what he is talking about. A careful explanation or demonstration by the carpenter resolves the issue. Complex legal terms require effective communication to ensure that you understand what they mean. If you don’t understand what your lawyer is saying or what they have written to you, you need to tell them. On other occasions, common usage of a word can be confused with its legal meaning. Take the word “divorce”, for example. If you are not a family law lawyer, you may believe that “divorce” means the division of matrimonial property on separation and that you have to wait for 12 months from the date of separation before you can proceed to divide the matrimonial property. Fortunately, the division of matrimonial property means exactly that and you can do it from the day you decide that the marriage is over. Divorce, on the other hand, is the legal dissolution of your marriage, which frees you to marry someone else. To get a divorce you have to wait for 12 months from the date of separation. Lauren Howard chats to us about how she got through those first hectic months and now looks forward to offering domestic travel and soon some international travel destinations.

i Lauren, tell us a little about itravel Port Macquarie and when you opened your business. We are a small locally owned and family run travel agency in the Garrison Building. Having worked in the travel industry for over 30 years it was a natural progression to open my own agency here in Port Macquarie doing what I love. It’s been a long hard 12 months for Travel Agents, but you have weathered the worst of it – let’s chat a little about how you have survived through the last 12 months with your small business. What strategies did you implement? When Covid-19 began back in February 2020 for us, our main priority was ensuring we were able to bring all our current travelling clients back home safely. Whilst everyone was in lockdown I was working harder than I ever had to manage constantly changing airline rules, government decisions and border closures. We were very conscious of what was happening and aware that this was going to continue for some time, so tough decisions had to be made. We cut expenses immediately and worked with our real estate agent, landlord 104 GREATER PORT MACQUARIE

and suppliers to ensure that we would be here on the other side. I am grateful for their understanding and working with us. It has been a team effort of enormous proportions as other travel agents and businesses around the country began to close their doors. No doubt there would have been times that you wanted to close up shop and move on, but you didn’t. What mindset did you embrace and what goals did you set to stay focused? Certainly, there have been times when I could have curled up in a ball, cried and closed the doors. Fortunately, I love what I do and our clients too much to ever give up. An energetic and positive mindset was what I decided would keep me focused. There were credits, refunds, cancellations, new bookings, then border closures and more cancellations all with systematic processes having to be managed, and my goal was to make this happen with as much ease and relevant information for all. To stay connected and keep the lines of communication open was essential. Priority was to work with positive, supportive and proactive suppliers and in April 2020 I was invited to become an exclusive agent for domestic holidays on the Mid North Coast. Now not having a marketing budget – new

You’ve just been on a fabulous family trip recently – can you tell us about what you did and where you went? Wow… I have been lucky to travel and see a lot of the world but for three days I was invited to experience more of our great country. I had so many Wow moments. ecent bushfires, COVID-19 and major floods have impacted nearly every business in our community yet despite this they have continued to operate, reinvented themselves, survived, revived and even thrived over the past 18 months. There are many local resilience and success stories to be celebrated that typify the response to everyday challenges faced by entrepreneurs. Their stories and achievements will be recognised and celebrated at the Business Awards Gala Event to be held on 21st July 2021 at Panthers Auditorium. Entries are now open via the Port Macquarie Chamber website: www.portchamber.com.au The national economic scorecard shows that our economy has bounced back very well recording at least 3% growth over the past two quarters. In the most recent figures unemployment has fallen to 5.6% which is at the pre-COVID levels. At the same time workforce participation rates have risen to 66.3% and job vacancies increased by 13.7% both indicating a strong economic recovery. A recent ANZ Business Survey also showed above average confidence levels in business

investment and trading conditions even after the end of the JobKeeper Scheme. This result is due to a combination of private sector resilience and good stewardship by both the Morrison Federal Government and NSW Government to simultaneously manage the health risks and the economic impacts of COVID-19. Australia has outperformed every other nation on both fronts and has emerged in an enviable position in terms of health outcomes and economic strength. The downside of this success appears to be a tight labour market and shortage of skilled trades and professionals in our area to service the high demand. One measure towards addressing this in the long term is the Federal Government announcement to spend $1.2bn supporting up to 100,000 trade apprenticeships. Under the scheme employers will be eligible for 50 percent of the wages for a new or recommencing apprentice or trainee for the period up to 30 September 2021, up to $7000 per quarter. Business should also welcome a recent announcement by the Federal Government to invest $120m in compliance deregulation targeting duplication in reporting and unnecessary red tape. It is estimated that

this measure could assist many businesses in commercial fishing, manufacturing, health and education sectors collectively save up to $430m per year. A similar program by the NSW Government would be welcomed in regional areas such as Port Macquarie where we continue to suffer from city centric overregulation. Recent centralisation of all council applications through a state government digital portal is the latest example adding to housing and construction industry overheads. This portal is adding another step to an already complex application and approval process separating industry “customers” from their local council officers. The correct decision has been made by the Morrison Government in vetoing the Victorian State Government Belt & Roads Agreement with China. This is a much needed step in the right direction towards protecting our national interests and sovereignty from future interference or influence by foreign powers. As many commentators have suggested, the next step should be to fully regain control of Darwin’s East Arm Wharf by rescinding a controversial 99 year lease on that very strategic piece of national infrastructure.

ON'T LET YOUR HARDEARNED LEGACY GO TO WASTE Premiums Wills that incorporate testamentary discretionary trusts are an excellent estate planning tool that protects your assets and reduces unnecessary tax. ASSET PROTECTION Under a standard ‘simple’ will, your assets will pass to your beneficiaries directly. This means that your assets are at risk of: Family Law claims – If your beneficiary is involved in a marriage or de facto relationship that breaks down, your beneficiary’s former spouse may make a claim against the beneficiary’s assets. The Family Court of Australia has broad powers to classify certain property as part of the matrimonial pool available for division. Placing your assets in a testamentary discretionary trust of which your beneficiary is not the trustee may help to quarantine your hard-earned assets from such claims. Financially immature beneficiaries – Testamentary trusts also protect minor children or financially immature beneficiaries from themselves (for example, those with a disability or substance abuse problems). Trusted people are put in place to manage the trust and the inheritance and to choose when it is appropriate for the beneficiary to take over control of their trust. The beneficiaries can benefit from the trust during their immaturity, but they’re unable to make financial decisions about their inheritance

until they’re ready. This an excellent strategy for ensuring your inheritance is preserved rather than wasted. Bankruptcy – Assets held in your beneficiary’s own name are also vulnerable to claims from the beneficiary’s creditors. For example, if the beneficiary is a director of a company and an investment decision goes wrong, or someone has an accident for which the beneficiary is held liable, then your legacy may be used to pay the debts. A testamentary trust is a great way to protect your assets. TAXATION ADVANTAGES The discretionary powers given to the trustee nominated in your Will make the testamentary trust a flexible tax planning vehicle. Taxable income generated by the trust (including income received from your home becoming a rental property or income generated from investing your superannuation and life insurance) can be allocated to the beneficiaries of your trust in a tax-effective manner. Your beneficiaries would pay income tax on their share of income according to their marginal tax rates. Unlike tax on income from a family trust which operates whilst you are alive, beneficiaries under 18 years of age are taxed at normal adult rates rather than at penalty tax rates. The potential for tax savings when trust income is allocated to minor children (or grandchildren), therefore, may be substantial. In fact, each minor child can receive approximately $22,000 tax-free every single year if they have no other income.

COMPLIANCE COSTS Because the trust does not come into effect until your death, a Will of this nature does not create any ongoing compliance costs during your lifetime. The cost of establishing the testamentary trust, and the subsequent compliance costs borne by the beneficiaries, are usually insignificant when compared with its benefits. TAKE HOME MESSAGE A testamentary discretionary trust must be set up in your Will before you die. You cannot reverse engineer the advantages. It’s HAPPY EVER MORE in 2444!

A

s the 5th most searched real estate suburb in NSW, our property market is moving faster than ever and 2021 is set to be a record-breaking year. HEM gives us a snapshot of the year so far: What are the big changes you are seeing? Our market has really kicked up a gear! The number of homes for sale is less than half it was a year ago, whilst buyer demand has more than tripled. This has altered the way we work significantly and we have had to adapt. We are now seeing 30 plus groups at open houses and huge enquiry on new listings. This is leading to multiple offers (often 10 plus!), so the way we handle buyers and negotiate is even more critical to the outcome. The new norm is to see sales being agreed over asking or reserve price in the first few days and every week we see new record prices being achieved, particularly in the $million plus homes. Statistics show that the volume of homes selling is up, days to sell are well down (at HEM our average is just 14) and prices are up more than 10% in 2021 alone. For example, a four-bedroom home today is now $120,000 higher than a year ago.

So, is this a bubble? We are often asked if this craziness will last or if are we heading for a crash? Truth is, nobody knows 100%.
