Space Stretch is an eight-episode, five-minute TV yoga show where preschool children become astronauts in a green screen adventure aboard a space ship. Pilot Crash Tanga and his crew do yoga stretches and balances on board the Condor as they travel to, explore, and solve unusual disturbances occurring in the solar system. A new-age fitness program for kids, Space Stretch has a curriculum based upon physical activity and discovery of place in the universe. Instead of practicing yoga on a beach at dawn, children do yoga on the deck of a spaceship over Neptune, Mars and elsewhere in the universe. Cheshire Smile Animation has developed and will co-produce the series with Thetawaves Media Arts using an entirely Saskatchewanbased cast and crew, with 25 adult and child performers. The program was presented to the media in Saskatoon on April 23 and will be broadcast across the province and nationally in late summer/early fall 2013 through CityTV.

Full of Pent-up Energy? Get into Gear

Soccer and cycling are finally on. Get outdoors. Go! And take your mother out for a nice brunch on Mother’s Day (i.e., Sunday, May 12). She deserves it. May is a good month to get things moving, even if all that means is going to people watch on Broadway. The Broadway district takes centre stage this month in Saskatoon with various events: French cinema with the 8th Festival Cinergie (May 2–5) in the Broadway Theatre (@bwaytheatre); the 23rd annual Bikes on Broadway stage race (May 18–20); even a chance to rock out as part of the Red Bull Hometown Tour (@rbtourbus; redbulltourbus.ca) featuring The Sheepdogs on May 20 from 3–6pm (Broadway Avenue at 10th Street). Up at Credit Union Centre, junior hockey’s final

four—including the hometown Blades—will vie for the 2013 MasterCard Memorial Cup (May 16–26). It’s the biggest junior club tournament in the world and it promises to be a hockey experience for fans new and old. After a long, gruelling season, who’s got enough gas in the tank to win it all? Spring isn’t just about playoff hockey, though. In Ukrainian spring is vesna, and the city’s Vesna Festival (@VesnaFestival) celebrates its 40th year May 11 at TCU Place. Experience Ukrainian culture in song, dance and varenyky zi smetanoyu (perogies with sour cream). Put on an colourful vyshyvanka and join in! Alternatively, register to run in the Saskatchewan Marathon (May 26), or find a partner and feel inspired to cut a rug at the sizzling 2013 Saskatoon International Salsa & Bachata Congress (May 30–June 2) at the Saskatoon Inn Hotel. And for fashion mavens, the Saskatoon Fashion & Design Festival (@sask_fashion; saskfashion.com) is set to take city chic to the next level during events citywide (also May 30–June 2). Now to the point of this month: it’s time for golf. In fact, we’re a month overdue. That said, get ready to rock your club selection. Our handy little guide to city and regional golf courses (pp 14–17) is good for novices and pros alike. But if you want to rock your style and look like a pro, whether on Broadway or out on the golf links, bro, we got you on this one. We put local DJs Charly Hustle (@djcharlyhustle) and The Gaff (@MikeTheGaff) on the cover of our golf issue this month in signature golf apparel. Why? To show you the new meaning of cool in the clubhouse. They look so good they must practically own the place. Fashions and seasons are changing. Green is the new black. Il Salici Ristorante at The Willows (382 Cartwright Street) made a compelling claim to having Saskatoon’s best dining view when a vibrant mix of people gathered there on April 11 for the latest Freeflow Thursdays by Mane Productions. Evening highlights included a free sample for each guest of

LB Distiller’s Gambit Gin—uniquely featuring local Saskatoon berries among its eight infusing botanicals—a gift giveaway by GMG Jewellers, and classic Italian dining, with a modern twist. In-house pianist and locally respected jazzman Martin Janovsky set the evening mood with a mix of movie theme scores, jazz standards and stylish

interpretations of mainstream pop. Fore! A Golf Preview Get the most out of local courses this summer Text by Paul Miazga

Mark Twain once wrote that “Golf is a good walk wasted.” Obviously, he wasn’t from around here. Surrounded by open spaces and intimately tied to the land, Saskatchewanians love their golf. There’s a certain Zen quality to having so much space to yourself, especially when it comes to golfing. There are more than 150 courses across the province, or more holes of golf per capita than anywhere else in North America. Here you can play in the northern boreal forest, near the southern badlands, out on

the rolling prairies, and adjacent to beautiful lakes and rivers. Will you receive total consciousness playing golf in Saskatchewan? Quite possibly yes. In any event, you don’t need the focus of a Buddhist monk to enjoy chasing that little white ball around on the prairies, though it is easy to find your sweet spot. Try out some new courses this year, tee up your ball and be at one with nature. You may even hear the sound of one hand golf-clapping as you approach the 18th green.

Course designer: Bill Newis (GPEC Consulting); partial re-design in 2004 by Wayne Carleton (Cook Carleton Int’l.) Head professional: Brennen Gee Signature hole: Islands #8 – the Island Green. “This hole is surrounded by water and will test the nerves of even the most experienced golfers. Cool fact: It is the province’s newest golf course (2011). It is a tough tee shot with hazards on both sides of the fairway. The green is narrow and surrounded by bunkers and a water hazard.”

The top-rated course in Saskatchewan (SCOREGolf) and #15 in Canada (Golf Digest), “the Dunes” will host the PGA Tour Canada Dakota Dunes Open July 1–7. Cool fact: the golf course is located on the Whitecap Indian Reservation (south on Hwy 219). Course designers: Graham Cooke and Wayne Carleton (Cook Carlton International) Head professional: Mike Jacobs Signature hole: #15. “This downhill par 3 plays from one of the highest points on the course, down into a natural coulee. Take one club less to reach this hole, but beware of the false front, the natural bunker hidden to the left, and a ridge that separates the green into front and back portions.” McLaren Taylor, GM

Cool fact: The course has the highest slope rating in the province (125 to 136). Get Your Game on Quick: Here’s how Is disc golf similar to regular golf? Absolutely; it’s the same basic concept. You have a tee pad and a target that you are trying to reach in as few shots as possible. Instead of putting a ball in a hole, you try to get a disc in a basket. The Saskatoon course is located at Diefenbaker 6 5 Park, a challenging 18-hole course. When people ask me if I think it’s better game than stick golf, well, I don’t want to step on any toes here, but there are many reasons why I think it is better: It’s accessible. The equipment to play the game costs just $30, and anyone can play. Most courses are free, so there is no charge to go out and do it. Diversity in courses. You can create a DG course almost anywhere: big open green spaces, or even in tightly treed areas, flat spots or steep slopes. And you don’t need to irrigate and manipulate the landscape. Just add the baskets and play! Exciting shots. Discs have far more diverse flight patterns than a ball could ever attain. Discs can be thrown with big arcing bends, can change direction, and can be thrown forehand, backhand, overhand... there are so many options. Every golfer out there should give it a try and see for themselves. The Saskatoon Ultimate Disc Sport Society (SUDS) disc golf league begins play May 12 (season runs into September). WG: As I approached my 50th birthday I began studying personal health and was horrified to discover the potential toxins in cosmetics. My wife Debra and our family committed ourselves to doing something about it and set out to develop the highest-performing hair and skin care products that would respect personal health and the Earth. It’s beauty with a conscience. JCS: How do you feel about being a leader for the “Green Movement” in the hair industry? WG: At Surface we feel a tremendous responsibility. To us it’s not a “movement”; we call it “awareness and responsibility”. We believe it is everyone’s responsibility to make ethical choices in committing to sustainably harvested resources. People want to do the right thing (but) they just need to be made aware of the options. We also feel responsible to create the highest-performing products, and make hairdressers and their salon guests aware of the necessity to respect their personal health and the Earth while (still) looking great. It’s the cutting edge of organic sciences. JCS: The line has been getting a lot of attention in Hollywood. How did that start?

In the past, “health” and “environment” were words rarely used when describing hair care products. But in recent years there has been a shift within the hair industry and the “Green Movement” is now well underway. Many product lines and salons are committing themselves to going green, not just in the way they operate but also with the products they offer. A leader in this movement is Saskatoon’s own Wayne Grund, the man behind Surface, a hair care product line devoted to respecting the environment and personal health. With Surface (launched in 2008), Wayne is embracing all ways and manners in which he can “green” his business: from ensuring product ingredients are gluten- and paraben-free, vegan

friendly, etc., to minimal packaging and maintaining close relationships with his raw materials suppliers. A portion of all product sales even goes to sponsor needy children through World Vision. The products are available in salons across North America, the company is headquartered in Saskatoon, and 80 percent of all their testing is done here (the products are manufactured in Omaha, Nebraska). By relying on suppliers in the US, Surface has also reduced its carbon foot print. When he isn’t developing new products for the line, Wayne spends his time travelling across the continent to educate people about green hair care and to inspire stylists. He spoke with flow in Saskatoon.

WG: A salon in Atlanta, Georgia, used Surface and they had a second location in Beverly Hills. Surface did not even have distribution in California at the time, so the Atlanta salon was sending Surface products to Beverly Hills. Soon the “wow factor” led to us being invited to the pre-Oscar preparations (styling celebrities for the red carpet)! By word of mouth alone Surface is now on more than 25 movie and television film sets, from the Sons of Anarchy to Hot In Cleveland. JCS: What’s in some new Surface products that set it apart from what’s on the market now? WG: Both the Surface Body Lotion and Body wash maximize one of our core certified organic ingredients: the Babassu oil, which “melts” before being absorbed into the hair and skin at body temperature. This allows antioxidants to penetrate with tremendous hydrating and healing properties. Using Babassu oil allows us to utilise the antioxidants in the acai berry, the blueberry to brighten and smooth the skin and willow bark to enhance cell rejuvenation. The Body Wash also works with poppy seeds to gently polish away dry dead skin cells and encourage healthier skin. As with all Surface products, they are free of glutens, parabens, phthalates and sulfates, and are vegan. JCS: What should consumers look out for when choosing safe hair and beauty products? WG: Please read the ingredients! I suggest avoiding wheat protein (gluten), parabens (preservatives), PVP/ VA (plastics), DEA, sulfates and phthalates. You will not see phthalates listed as these are potentially carcinogenic plasticizers that stabilize fragrances. Please note if a product contains fragrance it is not necessarily bad, but if the fragrance contains phthalates this should raise concerns. Ask the manufacturer if their fragrances contain phthalates. JCS: You and the Surface team seem to be on the verge of creating something big. What advice do you have for others wanting to make positive changes? WG: We could change the world tomorrow if all the millions of people around the world acted the way they believe. Doing the right thing is not a sometimes thing, it is an all-the-time thing.

• 1 1/2 cups fresh mint leaves, lighly packed • 3/4 cup fresh basil leaves, lighly packed • 1/2 cup walnuts, toasted • 2 tbps freshly grated Parmesan • 2 tbps fresh lemon juice • 2 garlic cloves • 3/4 tsp salt, plus more for seasoning • 1/2 tsp freshly groud black pepper, plus more for seasoning • 1/3 cup plus 2 tbps extra-virgin olive oil (or Camelina oil) • 3 (300g/1 1/2-pounds each) racks of lamb, trimmed and frenched

Like many new faces in Saskatoon, Executive Chef Robert Martin of Il Salici Ristorante was most recently living in Calgary where he spent five years at the Hyatt Regency Calgary and before that a stint at the exclusive Rimrock Resort Hotel in Banff. After 32 years in the food industry Robert is returning home, or homewards. Originally from Winnipeg, this red seal chef enjoys having the time to grow his own produce and get back in touch with his suppliers. He’s already sourcing much of his greens, potatoes and other vegetables locally (Grandora Gardens, Living Soil Farms, Floating Gardens), and he may even plant some tomatoes and greens in among the tee boxes at the Willows. Here’s Robert’s fresh take on minted lamb. It’s Italian, with a twist.

Directions • Blend the mint, basil, nuts, cheese, lemon juice, garlic, ¾ tsp of salt and ½ tsp of pepper in a food processor until the herbs are finely chopped. With the machine running, gradually blend in 1/3 cup of oil until the mixture is smooth and creamy. • Preheat the oven to 400F degrees (205C). • Generously sprinkle the lamb racks with salt and pepper. Heat the remaining 2 tbsp of oil in a grill pan or heavy skillet over high heat. Place 1 lamb rack in the skillet and cook just until brown, about 3 minutes per side. • Transfer the lamb rack meat side up on a large, heavy baking sheet. Repeat with the remaining 2 lamb racks. Spread the pesto over each rack before placing in the oven for 15 min. (for rare), taking them out after 12 minutes to check the internal temperature (it should be 130F; 55C). • Once the racks have cooked for the desired length of time, remove from oven and arrange together over a side of saffron risotto and topped with pea greens. Serves 2.

Top Five Fizzers 1. Gin Fizz The ultimate fizzer! Shake

2oz/100ml of Gambit Gin (@ luckybastardSK), a firm squeeze of lemon and 1 tsp/5g of sugar, pour over ice and top with soda. Best drunk wearing bow tie and smoking jacket.

2. Classic Champagne Cocktail Soak a

lump of sugar in bitters (angostura or LB Distiller’s Lacey’s Bettah Bitters), deposit in a decent glass of champagne (try Mumm’s or Tattinger from SLGA). Class in a glass!

3. Jamaican Fizz Pour 2oz/100ml dark

rum (must be Caribbean) into a shaker glass half full of ice, add a pinch of fine sugar and top with pineapple juice. Shake well, pour into a Collins glass filled with ice, top with soda and Bob’s your uncle!

4. Negroni Sbagliato This cocktail is

an all-around beauty. Start by mixing 1.5oz/75ml of sweet vermouth (Martini Rosso, SLGA) with 1.5oz/75ml of Campari (SLGA) and strain over ice. Once chilled, add two good splashes of sparkling wine (Asti Spumante, SLGA). La dolce vita!

5. Vodka Rosemary Lemonade Bring

1 cup/250ml each of lemon juice and sugar, plus a handsome sprig of rosemary to the boil, stirring until the sugar has dissolved. Reduce heat, simmer 2 min. and remove the rosemary. Once cooled, pour into a Collins glass half full of ice, add 1oz/50ml of LB Distillers Chai Vodka and top with soda. Not for the kids!

HONOURING THE BRAVE AS THEY LIVED, NOT DIED By the time the pinnacle of European club soccer—the Champions League—has closed out its season this month (May 25 at London’s Wembley Stadium; 1:45pm local time), the outdoor soccer season in this city will have only just begun. Cristiano Ronaldo, Lionel Messi and other talented footballers will have done battle for another season, there will be winners and losers, but in the end it’s just a game. Like any team sport, soccer teaches players that to win you must sacrifice; the whole benefits from the selflessness of one person. And as all championship teams have their heroes, so all battles have their heroics. In sudden-death situations, leaders emerge. Cairns was one such fellow on the pitch and on the battlefield. Saskatoon’s most-decorated war hero, Sgt. Hugh Cairns V.C., D.C.M. was a champion footballer, or soccer player as we now call them. Originally from Ashington, Northumberland, England, Cairns came to Saskatoon with his family in 1911 when he was already 14. He went to school in Caswell and played soccer not far from the family house that still stands at 832 Avenue G North. In 1913, Cairns helped lead the Christ Church Intermediate Boys Football club to the championship of the Sunday School League. Two years later, with two brothers already serving on the front lines after war broke out in Europe, Cairns tasted victory in the Saskatoon League Championship with the St. Thomas church team. But like many men of his generation, he felt duty bound to trade in his boots for a rifle and join in the fight. Many members of the Saskatoon Football Association fought and served in World War I; Cairns himself enlisted on his 18th birthday and arrived in France in June 1916. He earned the military’s second-highest honour—the Distinguished Conduct Medal—at Vimy Ridge in June 17; at Valenciennes, France, on Nov. 1, 1918, Cairns’ heroic service “for most conspicuous bravery in the presence of the enemy” won him the last Victoria Cross awarded for actions during World War I. He was buried on the field of honour 10 days shy of the end of the war in what one might consider the springtime of his life. In 1921, the Saskatoon Football Association erected a unique structure in Kiwanis Park that continues to stand to this day, the much-anticipated renovations to the park notwithstanding. By choosing to remember Cairns not as he had died but as he had lived, his friends, teammates and surviving family created what is reputed to be the only war memorial dedicated to soccer players in the world. The Hugh Cairns memorial includes a marble statue of Cairns, who stands with a ball underfoot atop a granite pillar listing the names of 75 soldier-soccer players from Saskatoon who likewise fell in battle.
