The Argentine cuisine can best be described as an international blend of all the flavors of Europe’s best, taken to the next level... Argentine style. For example, what they do with beef is incredibly delicious. While Italy is known for its pasta, France for savory sauces and Spain for paella, Argentina’s claim to fame is the asado, the Argentine barbecue, with such unique and delicious flavors! While Patagonia, the second part of the restaurant’s name, makes reference to the freshest fish and seafood found in that part of Argentina, the steak and sausage are prepared to perfection. The zest and pride of Argentine life, culture and dance transcends into the food. In other words, Argentina is the birthplace of the tango, and the spice in that dance has made its way into the cuisine. Being that it was our first experience, we relied upon the excellent staff to help guide us in the selection process. We started our experience with the delicious pickled eggplant ($3.90), followed by grilled

provolone with tomato and ham ($10.90), seasoned to perfection and very tasty. The Traditional Argentinian Grill for Two ($47.99) includes short ribs, flank steak, chicken breast, sweetbreads, blood sausage, Argentine sausage and chitterlinds. The unique taste comes from the charcoal, so this dish is without a doubt the best way to appreciate what Argentina is all about! Other menu selections include the international cuisine. Pasta from Italy; fajitas, enchiladas and chimichanga from Mexico; as well as American favorites, so there is something for everyone. Palm Beach Brides 2015 From This Day Forward... This month, we are proud to present our annual Palm Beach Brides special issue. Wellington Couple Makes A Splash On TLC’s FOUR WEDDINGS Reality Show Story by Deborah Welky • Photos by Anna Ansarov/ANA Creatives

Have you ever dreamed about starring in a television reality show? How about TLC’s Four Weddings? That dream came true for Samantha “Sam” Ricciardi, 26, a self-professed wedding show junkie. “I was a fan of that type of show before I was even engaged,” Ricciardi said. “Any wedding show that comes on TV, I watch — especially on TLC. So when I got engaged, I thought it would be awesome if I could get on the show.” Four Weddings is a contest between four couples to see whose wedding excels in the areas of dress, venue, food and overall experience. The judges are the brides themselves. They each attend four weddings, one of which is their own, and fill out a scorecard after each one. (Brides are not allowed to vote for

their own weddings.) When the votes are tallied, whichever event has the most points wins. So, how did Ricciardi’s wedding get chosen for the show? “I was on all of these e-mail lists because I had attended all these bridal expos, and those were the lists that the show was using, looking for brides,” she explained. “The first time they emailed, you had to be close to your wedding date, and ours wasn’t for a year and a half. The second time, our wedding was only five months out.” When Ricciardi read further, she discovered that producers were seeking couples whose weddings were going to take place in the Miami area. She started to get excited. It also looked as if the time frames were finally going to coincide. “I have to thank my husband, Mike, who gave me enough time to plan my own wedding,” Ricciardi said. “I wanted it to be totally mine. I think, because I teach dance, I have that creative side of me.” The newlyweds have known each other for years. “I’m from Wellington, and Mike is from Loxahatchee,” Ricciardi said. “We met through mutual friends years and years ago, when I was 21. A year and a half after we started dating, we decided to take a vacation to the west coast. We flew to Los Angeles, rented a car, drove to Las Vegas, and then to Mon-

tana to meet his parents. His mother was cleaning up and found a letter that she had written to his father once when he was really sick and in the hospital. It talked about how much he meant to her. ‘That’s how I feel about Sam,’ Mike said. So he called my father to ask permission and proposed that same day. We were supposedly going hiking, so I was wearing really crummy clothes, and as soon as we got to this big reservoir in Montana, I looked over and he was down on one knee!” Mike was still finishing college at the time and didn’t have a job lined up, but he had gotten enough of a tax refund to buy an engagement ring. Ironically, shortly after they were chosen to be on Four Weddings, Mike got a great job offer and moved to California. “I was the only girl who didn’t see her fiancé for months before the wedding,” said Ricciardi, whose parents had already put down a hefty deposit on a

Miami venue. “It made it all the more special when we won.” Wait a minute. She won? “At the finale, one fiancé steps out of a limo. If it was Mike, we had won,” Ricciardi explained. The wait can be agonizing. “In my heart, I felt like I had won, because I thought my wedding had gone the smoothest,” she said. “But, because it is a competition, I was starting to get scared. You never know with a competition show. I was so nervous before he got out. I was shaking, and then when I saw it was him, I was jumping up and down.” Perhaps the Ricciardis had won because of Sam’s careful attention to detail. “Our programs looked like newspaper articles, except the story they told was our story,” she said. “The table numbers had photos of us — Table 3 showed us at age 3, Table 4 showed us at 4, etc…”

Perhaps it was the color scheme. “I love sparkles, so everything was dark purple and sparkles,” she said. “I wore a lace trumpet style dress with tulle at the bottom and a sparkly belt.” Perhaps it was the food. “We had a pasta station, a fajita station and an ice cream sundae bar,” she said. Perhaps it was the group dance Ricciardi had choreographed for herself and her bridesmaids. Whatever it was, the brides had voted Sam and Mike Ricciardi’s wedding as the best. As a prize, they got the honeymoon trip of their dreams. “They gave us a trip to Costa Rica,” she said. “The show booked the hotel and some excursions, then gave us a check to use for airfare and spending money.” Although the four weddings took place from early December 2013 through mid-February of 2014 (with the Ricciardi wedding on Feb. 1), their epi-

sode didn’t air until the following September, and the prize wasn’t awarded until then. “We used it to go to Costa Rica for our first anniversary,” Ricciardi said. So did the camera crew follow them around on their trip? “No,” she answered, laughing heartily. “No, it was just us!” In addition to the vacation getaway, all contestants who participate in Four Weddings get another surprise — they can watch highlights from their wedding over and over again on their own DVD copy, online or on TV. “They’re rerunning it a lot,” Ricciardi said. “One night, Mike and I were flying through the channels, and there we were. ‘Cake Wars’ Appearance An Amazing Experience For Jennifer Johnson By Julie Unger

Jennifer Johnson of Johnson’s Custom Cakes & More in Wellington recently had a special moment of her own — as exciting as the ones she enjoys enhancing for brides and grooms through her business. Johnson was invited to participate in the Food Network’s new show Cake Wars — where four contestants are pitted against each other in two rounds. At the end, one baker walks away with a $10,000 prize. Johnson did not win first place — she came in second. It was a challenge, but one that she would do again in a heartbeat. “It was a once-in-a-lifetime experience,” she said. ing down from 75 minutes, to create a small cake for the first round. The theme of the show was The Simpsons. The judges: star pastry chefs Ron Ben-Israel and Waylynn Lucas, and Matt Selman, executive producer of The Simpsons. The objective of the first segment was to create a cake utilizing iconic Simpsons ingredients, such as beer, pink doughnuts, burgers, soda and chips, to create a sweet treat. Johnson and McGowan made a potato-chip doughnut cake with a cherry compote and a cola Swiss meringue. The cake was three-tiered, with a doughnut cake at the bottom; the middle cake made to look like a burger; the top cake resembled a beer can; and topped off with a fondant Homer Simpson leaning against the tower. In the second round, the “cake-off,” the contestants had to pick a classic Simpsons moment and create a cake to celebrate it. The bakers were given two assistants for the four-hour challenge. Johnson’s team chose a chocolatebased episode, and proceeded to create a double chocolate cake with a peanut butter Swiss meringue and a chocolate peanut butter crunch ganache. They made a life-size Homer to demonstrate how the characters in the show are larger than life. Selman called the threefoot cake “a beautiful representation of the Land of Chocolate.”

Even though Johnson’s creation did not win her first place, the experience was a competitive honor, she said. “When competing,” she said, “it felt so nerve-racking, but at the same time, when you’re in your element, when you’re in the kitchen, it feels like second nature. It feels like home.” The kitchen truly is Johnson’s home. She started baking with her grandmother, as a child. When she was attending nursing school, she began taking classes with Judy Duke of the Cake Boutique. Johnson eventually began working with Duke in 2003 before moving on to Breakers West. With Duke, Johnson traveled and learned from world-renowned cake artists. “I learned a lot from her; she’s like my cake mom,” Johnson said. In 2009, Johnson opened her own business sharing a kitchen with the International Polo Club’s catering company, Aaron’s Catering, before moving

in 2012 to a storefront in the Kobosko’s Crossing shopping plaza. Johnson’s Custom Cakes & More specializes in unique, one-of-a-kind, custom wedding cakes. “Wedding cakes are an honor to me,” she said. “It’s a huge honor, and I hold it dear to my heart. Some of the brides are on their fourth child and they’re back for their birthday cakes, for their shower cakes. They become like family.” A great deal of work goes into Johnson’s creations. Brides begin with an appointment, work on the design of their cake, taste nine or 10 flavors, and then a cake is created. Johnson suggests that brides do their homework and come with knowledge of the theme and colors desired for their weddings, along with some ideas, and then the cakes are customized to fit the needs and themes. Wedding cakes can take a week to plan and orchestrate, she explained,

since certain decorative elements such as gum paste and sugar details need to dry and be made ahead of time. “Each one is a piece of art,” Johnson said. White almond with a raspberry cheesecake filling is Johnson’s most popular wedding flavor, and one of the newest favorites is the red velvet cake. Currently, Johnson’s store is by appointment only. In the near future, before the end of the year, it will be reopening with cupcakes and cakes as a walk-in store. She is excited to share her craft with the public. Johnson’s motto, “Don’t dream your dream, live your dream,” is continuing to come true. Not only does she have her own business doing something she truly loves, but she has been able to have a once-in-a-lifetime experience while competing on Cake Wars. “To travel to do the Food Network’s Cake Wars was amazing,” Johnson said. “It was one of the hardest things probably I’ve ever done.”

The show had an incredibly professional environment, and Johnson was able to meet Ben-Israel, a worldrenowned master pastry chef who is famous for his sugar work. “One of my favorite things was being able to meet him,” Johnson said. Competing in front of chefs Johnson admires did not break her focus during the show. “We just tried to make it as clean as possible, and to stay focused,” she said. “It’s very easy to get off focus in that environment. One false move and you’re done.” Johnson’s experience working with other chefs helped her keep calm as she created her masterpieces. Having placed at many shows, including a sugar show, and having won the Chocolate Lovers Festival three years in a row, as well as Flavors of Wellington, gave her an added boost of confidence. Johnson’s accolades were what put her in the limelight. “It was an honor,” she said. “They came to us.”

Customized Theme Weddings Give Today’s Bride A Wide Array Of Options By Deborah Welky

In today’s world, the traditional wedding receptions of yore have given way to celebrations that better reflect the desires of modern brides and grooms. As in bygone days, brides tend to know exactly how they want their big day to turn out. However, the options available today open the door to an incredible array of choices, leaving plenty of room for the imagination. This often shows itself in the rising popularity of themed weddings. Here we showcase a few unique wedding themes, taking a peek inside three very special ceremonies.

Dara and J.R. O’Connor may have grown up in Wellington, but their hearts are out west. J.R. first met Dara when she was waitressing at the country bar Renegades. Three years later, on a cruise to Jamaica, he proposed and, united by a love of all things western, the couple quickly chose a western theme for their wedding. But where to hold it? What would be the perfect backdrop for a ranch-style wedding. The answer: Yesteryear Village at the South Florida Fairgrounds! The 10-acre Yesteryear Village may best be known for its collection of historically accurate buildings, such as the original Loxahatchee Schoolhouse, period furnishings and visits by schoolchildren, but it has also been chosen as the perfect venue for hundreds of special events, including weddings, picnics, family reunions, birthday parties and even corporate outings. The weathered barn siding was a great backdrop for the couple’s wedding photos, and it didn’t hurt that an old tractor and wagon were also onsite. Far from being a hayseed hoedown, the O’Connors’ western wedding tastefully combined style and comfort. Forget top hats and tails. Instead, the groomsmen wore softly faded 40

blue jeans, long-sleeved black shirts, black vests and turquoise ties. Ivory ties distinguished the groom and his ringbearer. The bride and her two flower girls also wore ivory, but the bridesmaids wore turquoise lace dresses paired with brown leather cowgirl boots and simple sunflower bouquets. Sunflowers and three boots adorned the top of the wedding cake, a tribute to what was soon to be a family of three (bride, groom and ringbearer). Sunflowers also graced each table, together with two mason jars, a Jack Daniels bottle and one party favor per guest — a camouflage koozie printed with the couples’ name, wedding date and the sensible sentiment, “To have and to hold and to keep your beer cold.” The food was barbecued, the music was old-school country, and even the guests honored the theme with plenty of simple dresses, creased jeans and cowboy boots scootin’ across the aged barn floor. As the sun sank slowly to the west, Dara had to smile. “I’ve always liked country music and line dancing,” she said. “That’s just who both of us are,” she said. On the other side of the globe, about as far from the old west as you can get, is the Indonesian island of Bali, a popular wedding location for decades. It was neither the Far East nor the Old West, but traditional retro that spoke to Julissa Batista when it came time to plan her wedding. Having met her future husband, Jonathan, at Wellington High School, Julissa wanted nothing more than to get married close to home at the Binks Forest Golf Club — a venue that could be transformed to reflect her love for everything vintage. “I love the old classic look — the lace, the suitcases, the pearls,” she said. Thanks to the hard work of her wedding planner, employers and many family members, Julissa got her wish. Clothed in a traditional-look gown custom-made for her by an Etsy artisan, Julissa began her walk down the aisle by entering through a distressed vintage door. Bridesmaids wore dresses the color of eggplant, while little girls carrying flower baskets floated in amid clouds of tulle. Groomsmen and the ringbearer wore black tuxedos with vests and gold ties.

At the reception, table linens were the classic color of champagne, centerpieces were ensconced in tarnished silver vases and plate chargers had an old-look crackle finish. There were pearls around the napkins, and purple lighting gave everything an old-movie glow. The couple chose to serve traditional chicken and fish with an added salad bar and a pasta bar. A candy station was set up on wooden crates. The cake, which featured pink and white roses and looked quite traditional on the outside, held a surprise inside with alternating layers of red velvet and rum. “The food was super good; really delicious,” Julissa added. On an antiqued side table nearby, old tweed suitcases offered up vintage handkerchiefs and a safe place in which to deposit envelopes, along with a collection of special party favors. “We each picked five songs that we liked, had CDs made,

and the CD cover looked like one of those old records,” Julissa said. “My husband loves the oldies from the 1970s, 1980s and 1990s so, at the reception, our DJ played about 30 minutes of that, then we went with Hispanic, because we’re both Hispanic, and then we went modern.” Later in the evening, the groomsmen donned wild glasses, afro wigs and revealed that they were all wearing funny socks. Meet Wellington’s Most Eligible Bachelor Story and Photos by Julie Unger

Ladies, look no further: Prince Charming lives right here in Wellington! His name is Ryan Beckett. Six-foot-one and 33 years old, he is a local Realtor, single and ready for the taking. Billed as “Wellington’s most eligible bachelor,” the casting crew from ABC’s hit television show The Bachelorette wanted him on their show. He was handpicked to compete against 24 other eligible bachelors for the affections of one woman. Lucky for us, she did not choose him, and so Beckett is still on the market! He didn’t know who the bachelorette would be when he said yes to the show, and was actually on a plane to Los Angeles when it was announced. “It was more of a leap of faith,” Beckett said. His brother broke the news to him — it was both of the women that rumors were swirling about who might be the next bachelorette: Kaitlyn Bristowe and Britt Nilsson. “Both girls, I thought I could approach,” Beckett said, glad he had decided to give the show a shot. Before he knew it, he was sequestered in a glamorous house with 24 other guys, all fighting for the affection of Bristowe, who made it past the first night where one woman was eliminated. The episodes featuring Beckett were broadcast this past spring and summer. “We had no contact with the outside world. No Internet. No phone. No books. No music. Nothing. So, you’re really into the process, because all you have to do is think about the girl, think about what’s going on, and think about the date and the interactions with the other guys,” Beckett explained. After the first night, five guys left. Only 20 remained. Beckett was just over the average age for the bachelors — he was 32 during filming. “Especially in the beginning, I avoided drama, so I did not get a lot of camera time,” he said. Some of the other guys were more jealous, dramatic or competitive, which just wasn’t his style. “My approach was that I was just going to do the best that I could, and do my best to let my guard down, keep an open mind and be myself. If I did all those things, I thought that I wouldn’t have any regrets coming off the show,” Beckett said.

It was an experience unlike any other. “It was a wild experience that you can’t really describe because there’s nothing really to compare it to,” he explained. The best analogy he could give his friends was that it was like a fraternity pledge class. “It was definitely weird, for sure, but it wasn’t as bad as maybe even I thought it was going to be,” Beckett said. “You knew what you were getting into. No one could complain about it because everyone knew the format. A lot of people talk trash about reality TV shows, but, you know, a show like this... it kind of reflects society. It’s honest. In real life, frankly, I think it’s hidden a little bit.” In daily life, he explained, it might take a while to find out if a woman is dating two different guys in a week. On the show, that’s the status quo; out in the open. Beckett left after week five, which didn’t give him a chance for an individual date, but he was able to experience two group dates. For one, the guys were pitted against each other in rap battles. Beckett won his battle, which he said was a cool experience. The other group date — teaching sex education to eighth-graders — was both nerve-wracking and embarrassing.

For his second outfit, Ryan Beckett is sporting a preppy look in a Gray Aspen Slim Fit Tuxedo featuring a narrow lapel with a small satin edging. It’s a hot “Shades of Grey” look. To complement Ryan’s light and fun personality, he is wearing a plaid bow tie in royal, coral and green with coral suspenders.

“Wondering what the questions would be was the worst part,” he said, adding that the guys were all concerned about permanently scaring the kids. However, they learned after the show aired that the students were actually child actors messing with them. The dates were all designed to be highstress situations, meant to quickly reveal someone’s character. “When Kaitlyn is dating these guys in the real world, what she wouldn’t see until six months in, she’s going to see in week one or two,” Beckett said. “The guys would joke that we were dating in dog years. Three weeks seems short, but because we were sequestered, dating was the only thing to focus on.” There was only so much they could do — run laps around the property, swim, grab a beer, cook and hang out with the guys. “It ends up being a lot of bro chats and a lot of good bro time. You get to know each other really well,” he said. “Especially because I didn’t end up engaged at the end, and with the girl, the best part for

me was the friendships that I developed with the guys and some of the production team. That was really the best part… I have lifetime friends from the experience.” Now that the show is over, the Boca Raton native and Florida State grad is back doing what he does best. He’s working on two startup real estate companies, is enjoying the Florida weather through his newest hobby, sailing, and is looking forward to his next adventure. A bucket list enthusiast, Beckett has participated in multiple triathlons and an Everest base camp experience summiting a sister peak, has ridden a bicycle with Olympic equestrian Danielle Goldstein cross-country for Danny and Ron’s Rescue, competed in show jumping, took polo lessons, and is now looking into hiking the Appalachian Trail from Georgia to Maine. Beckett knew that the odds of winning The Bachelorette were slim. After all, he was directly competing against 24 other guys, but he kept an open mind.

While Beckett isn’t actively searching for a mate, he is optimistic and open to a relationship. “It’s definitely something I want,” he said. “I think people end up in meaningful relationships when they kind of organically happen.” Through his experience with the show, Beckett has learned many things, including that he has a tendency to be more guarded than he should be. “I think I’ve learned that it’s OK to be vulnerable,” he said. “Not only is it OK, it’s necessary to be a little vulnerable to develop serious and real feelings in a relationship.” So, what does Beckett want in a re-

lationship? “Intellect,” he said. “I think that intelligence is the sexiest thing a girl can have. After that, physically, I love pretty eyes.” Though he is partial to light eyes, they aren’t a requirement.

“I think eyes are kind of a window to the soul, and eyes last forever,” Beckett said. “Whether you’re 20, or you’re 80, it’s the same eyes you’re looking into. I’ve always been really attracted to pretty eyes.”

Beauty On The Spot Salon Has A Unique Dual Mission Story and Photos by Julie Unger

Beauty on the Spot has two very distinct sides. On one hand, it is a full-service salon. On the other hand, it is a full-service salon that caters to the special care and needs of cancer patients. “We do two totally separate services, depending on whatever needs you have,” owner Teresa Yeager explained. Though Beauty on the Spot in its current incarnation began in December 2013, it has been in existence, as a side business for Yeager, since 1997. Originally, she was working at a salon and doing hair and makeup for weddings on the side. In 2013, she started working with Wellington Regional Medical Center, first with maternity patients and, later, with cancer patients. “I always wanted to do something to give back,” she said. “I was at a salon for 18 years, and I just always wanted to do something to help.”

Yeager has had a great deal of experience with hospitals. Her daughter, now 20, has gone through more than 20 operations. “I know what it’s like to be on the opposite end,” she said. “Sometimes, you just need your hair washed, or to feel human again. Whether you’re a caregiver, and just need to run down and get your hair washed or blown dry, or get a little color, it makes you feel like a person again.” Yeager has used her experiences to cater to those in the hospital, while also

helping non-patients with their salon needs. “That’s what we do, we take the hospital aspect out of it, and sometimes, when they’re waiting on tests and things like that, they can have a manicure,” she said. The staff, who have all gone through background checks, drug testing and sign HIPAA agreements, have been hand-picked by Yeager. wellington the magazine | october 2015

“The staff that I have chosen is very caring and loving. I wanted it to be something different,” she said. “I didn’t want it to be just a regular salon… These girls are a little bit more qualified, and some of them are certified nurse assistants.” Yeager and her staff often go to the hospital before or after the salon’s hours of operation, or whenever it is convenient for the patient to schedule services around their treatments and testing. With 10 employees, plus a receptionist, Yeager is able to make the services — hair, nails, facials, waxing, cosmetics and more — portable. They are able to help patients with haircuts in bed, lotion application at the hospital and other services needed to remind themselves that they are cared for. Yeager opened Beauty on the Spot’s brick-and-mortar location on Wellington Trace in June.

“I wanted to stay close to the hospital, because we still do bedside services at Wellington Regional,” Yeager explained. “The location was good, so it’s quick to get over there. The space is

good for what we needed for our clientele.” She set the room up with six hair stations, and each have mirrored sides, allowing clients extra privacy. There are two hair drying areas, three washing areas, a nail table, pedicure area, a facial and waxing room, a room that can accommodate singles or couples for massages, an ADA-compliant bathroom, and the back office. “Sometimes, a client might come in and need their head shaved, or they might need a wig fixed, to suit their own need,” Yeager said. “Or, they need to learn how to draw on eyebrows. We do things like that, as well as everyday clients who come in and just have color done. We do everything here.” Yeager and her team don’t work only with cancer patients. Anyone is welcome and encouraged to come in. The salon offers everything that would be expected: cuts, blow-dries, coloring,

Neighborhood Watch Group Brings Greenview Shores 1 Community Together Story and Photos by Julie Unger

One of the oldest communities in Wellington, Greenview Shores 1 is made up of 150 single-family homes. Built in the 1970s, the community has an active neighborhood watch group led by John Shwiner, a longtime Crime Stoppers of Palm Beach County volunteer. “Compared to a lot of other subdivisions in Wellington, it’s one that does not have a homeowners association,” he said. “It’s a neighborly, old-fashioned type neighborhood.” With pine trees easily reaching 100 feet and other mature vegetation, Greenview Shores 1 holds true to its original plans, leaving as many of the beautiful trees and shrubs in place as the community was developed. That vision is evident in the beautiful park toward the back of the community, connected to a large lake shared with a number of central Wellington neighborhoods. The park has a trail, a walking path, swings, picnic tables, benches, a playground and water access, making it the perfect spot to launch a canoe or a kayak. When Hurricane Wilma hit in 2005, much of the foliage was knocked down, but a healthy percentage has since grown back. The community has reached that sweet spot where main-

tenance is the only big project to deal with. Every few years, code compliance officers come through to review properties and give advice, Shwiner explained. When Shwiner first moved to Wellington in 1992, he lived in Sugar Pond Manor. He moved away for a year, and then returned to Greenview Shores 1. The community started a neighborhood watch group in February 2011, and he has been a part of it ever since, noticing many positive changes in the community. “There were 10 break-ins in a very short period of time,” Shwiner explained. “By forming this group, we felt a lot safer. Now we have a deputy, a crime prevention officer, who is helping us.” Residents are now more aware about programs and activities through quarterly meetings, and know about compliance issues and what they should be looking for. Through the Palm Beach County Sheriff’s Office, they have also learned about suspicious activity, how to recognize it and how to report it. They have also been able to shape their environment. Through learning the correct channels, the community has been able to go to the village and learn about grants for imwellington the magazine | october 2015

proving properties, have the entrance to the community paved and have a school bus path rerouted to be safer. Creating the neighborhood watch group for the community has linked the residents together, Shwiner said. Shwiner credited Resource Action Committee Chair Rich Schoenfeld for creating many programs, such as a run/walk, a bike ride, a talent program and a scavenger hunt/decorated house walk during the holidays. “Neighbors go out at night, and they look at the homes,” Shwiner explained.

“Rich gives us a sheet of things to look for, like the house with the gold star on it — a list of 30 items. The person who gets most, or all of them, wins a prize. When people are walking around, they submit their choice for the best-decorated home.” Such activities promote a feeling of family within the community, which is one of Shwiner’s favorite things about living in Greenview Shores 1. “I like the friendliness. I like the sidewalks. I like to see people out there jogging and walking,” he said. “I think that

we also support each other. We’ll help them if we see that they need something in the way of support. An elderly gentleman across the street was falling down, so I went and helped him put his garbage out. My wife made meals for him.” The residents have also helped those outside the community. Wellington’s Neighborhood Watch groups were presented with an opportunity that Greenview Shores 1 could not resist: the chance to help one of four Wellington children with cancer, through the Kids Cancer Foundation, with holiday wish lists. The kids asked for gift certificates for things like clothing or gas. “The parents have to drive these kids around; it wasn’t just for the child with cancer, it might be for the brother, sister, mother, whoever. Of course, we took care of that child first,” Shwiner said. Everything was given through gift cards and checks, so the kids could pick out their gifts themselves. “We were


wellington | neighborhood able to fulfill, each of the three years, everything that the children wanted,” Shwiner said. The community has also rallied to help 9-year-old McKenna Wickers, who attends Elbridge Gale Elementary School. Wickers made a presentation to the neighborhood watch group, asking permission to have a lemonade stand with face painting at Brampton Cove Park as a special fundraiser for the Leukemia & Lymphoma Society, in honor of her uncle, a leukemia patient. “With the support of Greenview Shores 1 either buying lemonade, or just making a donation, she raised almost $400 and wound up being the second-highest collector for the school,” Shwiner said. The community rallies together, even if it’s just to find a missing pet. “Neighborhood watch is about safety, primarily, but it isn’t all about safety,” he said. “It’s about community involvement, so that we can all help each other and watch out for each other.”

Autism is a neurological disorder that affects a person’s ability to communicate and socialize. One in 68 children has it, and the majority of those are boys. Symptoms begin to manifest themselves at around 18 months of age, said Wellington resident Denise Negron, who knows about autism firsthand. “My son Alejandro is 16 now, but when he was about 2, he was developing normally, and suddenly we lost him completely,” Negron recalled. “He stopped looking us in the eyes. He stopped talking. We’d call him, and he wouldn’t listen.” Alarmed, Negron took him to the doctor and was told he was “developmentally delayed” and perhaps “confused,” due to the bilingual nature of her home. She didn’t agree with that diagnosis, and discussed the matter further with the School District of Palm Beach County when registering him for pre-kindergarten at age 3. “They were the ones who told us he had autism,” Negron said. “Most families get ‘developmentally delayed’ as a first diagnosis, but the school district had us fill out a questionnaire and did a psychological evaluation. Afterward, they asked us to go to a pediatrician to confirm the diagnosis, because every case is different.” 70

Autism is generally inherent in a person’s DNA, and through further discovery, Negron realized that she had nine cases of it in her own extended family. Today, she works as a community development associate for the Palm Beach County chapter of the national organization Autism Speaks. Autism Speaks was founded in 2005 by parttime Palm Beachers Bob and Suzanne Wright, who have a grandchild with autism. The group works hard to raise money, and more than 71 cents of every dollar raised goes to finance research, advocacy and awareness-raising programs. “Early intervention is key for these children,” Negron said. “They need speech therapy, personal therapy, several therapies, and the longer they are in therapy, the better they perform in the future. Our mission is to change the future for all who struggle with autism spectrum disorders.” Autism Speaks aims to bring the autism com-

munity together as one strong voice to urge the government and private sector to listen to its concerns and take action to address what they consider to be no less than an urgent global health crisis. The group has committed more than $560 million to its mission, including the funding of more than 700 cutting-edge research projects, fellowships and initiatives. It has also created the world’s largest open-access genomic database on autism. In addition, Autism Speaks provides families with actionable resources to address the costs and challenges associated with autism. Autism Speaks “Tool Kits” and “100 Day Kits” for newly diagnosed families have been mailed or downloaded nearly 400,000 times. Autism Speaks also provides informative guides for school personnel, teaching them how to best help autistic students. “I wish I’d had that when my son was diagnosed,” Negron said. “We had to learn the hard way.” Every year, more cases of autism are discovered. It is the fastest-growing serious developmental disability in the United States. In fact, in the past six years, there has been a sharp upswing, although no one knows why. Has there been a shift in the human condition, or is it simply that more children are being correctly diagnosed? “We keep doing our best in research because of that,” Negron said. With its founders as part-time residents, the Palm Beach County chapter of Autism Speaks is at the forefront of the organization’s progress. A walk to benefit Autism Speaks will take place March 6 at the Meyer Amphitheatre, one of nearly 100 such walks across the United States and Canada. In 2013-14, more than 887,000 individuals attended “Walk Now for Autism Speaks” events, raising more than $56 million. In addition, the Royal Park Bridge to Palm Beach will be lit in blue by the Wrights at the end of that month — a reminder that April 2 is World Autism Awareness Day. “We encourage everyone to shine a blue light, even a porch light, and ‘Light It Up Blue’ during the whole month of April,” Ne-

Retinal Specialist Joins Florida Eye Microsurgical Institute In Wellington Story by Ron Bukley • Photo by Abner Pedraza

Dr. Joseph T. Nezgoda, one of the few retinal specialists in the area, recently joined the Florida Eye Microsurgical Institute in Wellington. “I focus on macular degeneration, diabetic eye disease and other retinal diseases, including retinal detachments and intraocular inflammation — essentially any disease of the retina,” Nezgoda said. Although he is a retinal surgeon, his primary focus is on the clinical treatment and prevention of eye disease. “When necessary, we perform surgery, and the surgery includes emergent surgery such as retinal detachments that could stave off potential blindness,” he said. “Severe diabetes requires surgery to relieve what is known as a tractional retinal detachment.” He also treats retinopathy, or abnormal blood vessel growth, sometimes found in premature babies. “That is the reason that Stevie Wonder is blind and countless others,” Nezgoda said. “Had they been born when the treatment was more common, they might have had a different fate.” Nezgoda said it’s important that the community knows that it is served by a full-time retina specialist. “As a fellowship-trained retina specialist, I am able to perform services for patients with [conditions] such as macular degeneration or diabetic eye disease,” he said, noting that he is available for emergencies and non-emergency retina issues. “My group wanted the community to be well-served in this capacity, and that’s why they hired me.” Nezgoda comes to Wellington after completing his fellowship in medical and surgical diseases at the University of California. He graduated with honors from Georgetown University and attended medical school at the Robert Wood Johnson Medical School. While there, he also earned a master’s degree. He has also been a researcher at the National Institutes of Health. “The retina

is sort of specialized,” he said. “You have to not only do a year of internship and three years of ophthalmology, but you have to do another two years of retina specialty following that.” Nezgoda was especially happy to come to Wellington because his family lives in the area. “My family, originally from the Northeast, moved down here some years back. Both my mother and my grandparents are in Palm Beach Gardens,” he said. “The group that I’m joining is truly excellent, well-trained and well-regarded, and in a group that’s really close to my family.” Nezgoda said that he finds great satisfaction in his specialty, being able to treat a wide range of age groups. “It’s really a beautiful specialty. I’m able to help the youngest babies to the eldest seniors,” he said. “I can treat pretty much all patients in the population, which very few specialties allow for.” Another aspect that he finds fascinating is what might be described as the “brain’s window to the world.” “The retina is neural tissue. It’s brain tissue, and the retina sort of captures the light, and a very elegant mechanism sends signals back to the brain,” he said. “If, for whatever reason, that isn’t functioning, vision is impaired. The retina is very delicate tissue and does not regenerate, so it’s like performing surgical care on the most delicate part of the eye.” Nezgoda can see many other diseases and health conditions through the retina. “I can look into someone’s eyes and

tell if they have high blood pressure, if they have diabetes or if they have any infectious diseases,” he said. “I can see if they have tuberculosis or lupus. I can see so many things. By saying the eye is the window to the soul, in that respect, it’s really the window to your health.” Nezgoda will host a continuing education event for physicians to discuss diseases that he treats at 6:30 p.m. on Wednesday, Oct. 21 at Jordan’s Steak Bistro in Wellington, hosted by Florida Eye Microsurgical Institute. “It’s for all the community doctors to come out and discuss diseases like diabetic eye disease and what to look for, when they should be concerned, as well as macular degeneration and what can be done,” he said. Daryl Boyd, an agent with Keller Williams Realty, has a lifelong history in the area. “I am a rare Palm Beach County native,” he said. “My father, my daughter and I were all born at Good Samaritan Hospital in West Palm Beach, so our roots in the county are deep.” Deep, too, is Boyd’s love for the sport of baseball. “I graduated from John I. Leonard High School and played baseball at Palm Beach Community College — it was known as Palm Beach Junior College when I was there — and the University of Florida,” he said. “I went on to play professional baseball in the Pittsburgh Pirates and Montreal Expos organizations. David has spent the last 13 years working with a prominent Palm Beach design firm. Bliss Without A Battle Once you have chosen the venue, ordered invitations and flowers, picked the attire then said your vows, it is finished. Right? No, not really. Have you given thought to the fact that you now have to blend your taste for the country French with your spouse’s ultra-contemporary, dorm room disaster, Mediterranean, ethnocentric chic, sports fanatic or sci-fi collection style of decorating? You both will benefit from some ground rules when you are blending households. Once you have come to a fair agreement, both of you need to stick to the rules. Consider some basic guidelines. Each of you needs to make a list of the things that are the most important or meaningful to you. If there is a family piece that you cannot part with but will not match, refinish it. A white lacquer paint job can completely change the feel of your mother’s old rocking chair. Reupholstering the chair that your father always sat in will give it a fresh and updated look. Together, you need to plan these things out, in advance. As you start your new life together, this is not the kind of thing you want to turn into a major conflict. Your time should be spent joyously putting your home together. You should

also be enjoying the process and the time spent together as you do it. A big mistake on moving day is just getting everything piled up in your new home and deciding to sort it as you go. Keep all “collections” in the appropriate spaces of the home. Your mother’s Fiestaware needs to be in the kitchen or breakfast room. Sports memorabilia does not belong in the living room. Everyone needs their own space, so these are the areas for the truly non-decorative items. Whether it is a master bedroom sitting area, a “man cave,” a den or a finished garage space, these are the places for the more personal items that we like to surround ourselves with. If one of you still needs space to study, figure it out. Do you need office space for work? If so, you can make a great mini office in a closet. Do either of you have a love for music or do you play an instrument? Instead of den, think music room. If you are a reader, where are you going to make library space? Wonderful Flavors And Delicious Dishes At Taste of India Restaurant

Taste of India, located on Okeechobee Blvd. in suburban West Palm Beach, puts its focus on the unique flavors of Indian cuisine. Not familiar with Indian cuisine? Manager Ganesh Ubale has four words for the uninitiated: don’t fear the curry. “People have this, I think, very wrong picture of curry being spicy,” Ganesh said. “But curry is never spicy; curry is the base, the mother sauce… It’s up to you how you make something with that base sauce.” From spicy, to more sedate, Taste of India’s wide-ranging menu is the creation of owner Sunil Kayalchirayil, who is originally from Kerala state on the southwestern coast of India and now lives in Wellington. Kerala is well-known for its important seafood and tourism contributions to India’s economy. Many of the staff also originally hail from there. One of them is chef Akhil Ajay, who loves working at Taste of India for its atmosphere, staff support and especially the education in Indian cooking that Sunil has imparted in the five years since the thriving eatery opened and Akhil joined the staff, which numbers about 20. Ganesh has been on board since getting drawn in as a guest at the Taste of India location in Melbourne. There’s another restaurant in Brandon. “He’s a chef himself,” Ganesh said of Sunil. “He is the creator of this menu. It’s all his concept, his idea. He has taken this forward from his three restaurants in New York State that he operates in partnership with his friends.” The all-day menu consists of many dishes in the following categories: vegetable and meat appetizers; South Indian and Taste of India specialties; sides; chicken, vegan, vegetarian, Indo Chi-

nese, lamb and goat, seafood or Tandoori specialties; Chaat Corner (street snacks); freshly baked bread; rice and biryanis; salads and soups; and Indian drinks. One thing that’s unique about Taste of India is the ability for customers to order not only for pickup, but for “express dine in” through its web site, www.tasteofindiapalmbeach.com. That doesn’t apply, of course, to the daily luncheon buffet, a bountiful offering that fills the tables along the whole length of one wall inside the restaurant. It is highly popular with diners. “It’s best to get here right at noon, especially on Sunday, for that,” Ganesh said. While talking over a traditional Ma-

dras coffee (a strong, rich, lathery brew with milk) and Masala tea, the appetizers started arriving at the table. We started with a Vegetable Samosa, triangular puff pastries stuffed with spiced potatoes and peas, as an hors d’oeuvre. It was just enough to awaken the palate before we sampled the Plain Dosa, a long, rolled, paper-thin crepe made of rice and lentil, served with coconut and tomato chutneys garnished with fresh basil. The mild coconut and spicy tomato chutney, thick in consistency and zesty, were a complementary pairing — mildly sweet against a spicy, savory flavor. This came with a bowl of Lentil Sambar, a mild yet rich, delicious comfort-food soup. wellington the magazine | october 2015

Another Dosa version, stuffed with mildly spiced potatoes just like in the samosa, is a South Indian special appetizer with mild heat. “In India, Masala Dosa are basically eaten as breakfast or a snack item, but over the years it has become a delicacy, quite an exclusive dish, where people, when it comes, they’re like ‘wow’ and they want to try it,” Ganesh said. We finished the first round with some delicious Bombay Calamari, a meaty fried masala squid appetizer, not too spicy, even though it had green chilies and curry leaves. The entrees amazed us with fantastic spice blends and tastes; each was delightful in its own way. “Indian cuisine is a marriage of spices,” Ganesh said. “It’s the marriage of all the different spices that come together.” And like colorful Indian weddings,

the presentations of each of these dishes was eye-popping and palate-pleasing. We tried the Chettinadu Rack of Lamb, another Kerala specialty, served medium rare with a fine basmati (Hindi for “fragrant”) rice. It had vegetables of every shape and color tossed in, served cakelike, with separate mixed, grilled vegetables. “Chetti” in Hindi means chef; “nadu” is specialty. This is one of owner Sunil’s creations. The superstar entrée of the evening was the Half Tandoori Chicken. This dish, brought out on a sizzling platter, was quite scrumptious. The chicken was marinated on the bone for days in a spiced yogurt/sour cream sauce and served with lentils, rice and grilled vegetables. We stopped to admire the wonderful plate presentation before digging in.

We also sampled Chicken Tikka Masala, one of the restaurant’s signature dishes, Ganesh said. It featured chicken breast broiled in a tandoor (clay oven) and cooked in a creamy tomato sauce, served with basmati rice. A bright orange-red, it was a nice contrast to the Chicken Korma, chunks of both white and dark meat cooked in a mild, creamy cashew-and-almond sauce, also with basmati rice. Whether you are a fan of Indian cuisine or a newcomer to these unique delicacies, be sure to visit Taste of India — and bring your appetite.
