The New ‘Cheers’ Bar in Wellington Is Fun, Fun, Fun With Great Food! BY JOE NASUTI

Make plans to enjoy what many of your neighbors have already discovered — the White Elephant Bar & Grill. Located in the original Wellington Mall, this is the new happening place to be any night of the week, inside at the “Cheers” bar or outside at the cheerful patio bar. Whether it’s Taco Tuesday, Wings & Wine Wednesday, Ladies & Karaoke Thursday, Live Music Friday and Saturday, or Caribbean Calypso Sunday... there is always something to do at the White Elephant. Don Patel, one of the partner owners, is not a stranger to the restaurant industry. We are truly fortunate that he has brought his talent for making everyone happy to our backyard. We came for the food, and we were not disappointed. In fact, we were impressed! The menu is a collage of American and international fare. What caught my eye was the Curry Shrimp Risotto ($16.50), which combines three of my favorites perfectly. This Indianspiced shrimp with a curry cream sauce over risotto is not to be missed. Other specials include Fish & Chips, the Rib Eye and the popular Pan-Seared Salmon. One of the house signature dishes, the salmon, was perhaps the best I’ve ever tasted!

White Elephant features great music and dancing on Sundays from 9 p.m. to 1 a.m. featuring special offers: buy one, get one free, 20 percent off the check and ladies drink free on Sunday from 10 p.m. to 12 a.m. DJ Johnny Vega is on the patio, piped inside to add to the flavor of the food, such as Jerk Chicken Wings ($10.50). These jumbo beauties are fried to perfection and tossed in homemade jerk sauce. The Beef Brisket ($9.95) was our table favorite for the evening. Pizza lovers will also love the White Elephant’s pizza choices, such as Brisket, Reuben and Margarita Pizza ($14). Don’t forget to leave room for dessert. The homemade bread pudding and unique elephant ear are incredibly delicious, and the perfect way to end your dining experience! So, if you are looking for some fun and good food tonight or any night, head to the White Elephant Bar & Grill and tell them that the Phantom Diners recommended a visit. The White Elephant Bar & Grill is also a great place for you to host a special occasion, party or business function. Each winter, the majestic sport of dressage is on display here in Wellington, home of the Adequan Global Dressage Festival. We celebrate the hard work and determination of dressage riders and their mounts in Faces of Dressage 2016, highlighting just a few of the amazing riders you can see in action this winter. By Julie Unger When the Adequan Global Dressage Festival began four years ago, the Palm Beach International Equestrian Center was known for show jumping. Since then, the dressage festival has grown in size and stature, now rivaling its complementary show jumping circuit.

Visions Salon held a unique hair fashion show event, “50 Years of Hair Fashion: From Sassoon to Arrojo,” in late January to benefit the American Cancer Society. The fashion show boasted models displaying styles from the 1960s through some of today’s latest trends. It’s common to see one of the Palm Beach Equine Clinic veterinarians at the Vinceremos Therapeutic Riding Center facility. The services donated by the Wellington clinic would cost the nonprofit more than $50,000 per year for the veterinary care. By Y.A. Teitelbaum With a background in exercise physiology and biomechanics, Dr. Beverly Gordon had worked for years as a chiropractor when she had a startling realization — the kinesiology tape that works on humans could probably be adapted for use on horses. Did someone say Olympics? Yes, with qualifying for Rio on their minds, equestrians from all corners of the globe have been competing here in Wellington this year. Many dressage athletes on the road to the 2016 Olympics in Rio de Janeiro, Brazil, are competing at the Adequan Global Dressage Festival right here in Wellington. The dressage festival began four years ago in an Olympic year, and several of the riders who competed in Wellington that year went on to ride at the 2012 Olympics in London. This year, as the festival has grown, even more dressage riders are making Wellington their winter home as they prepare for the sport’s biggest stage. Our annual Faces of Dressage section this month highlights just a few of the many talented dressage competitors in Wellington this season. Learn about all there is to do at Adequan Global Dressage Festival in our festival overview story, and be sure to make plans to attend Friday Night Stars at least once this season. Keeping with the dressage theme, we caught up with topranked international and national dressage rider Allison Brock, who is looking forward to a successful 2016 with her seven-year equine partner Rosevelt. Diane Creech, among Canada’s top dressage athletes, is also featured this month. She makes the trek each year from Ontario to Wellington, escaping the winter cold to compete here, along with her equine partners from Minnesota-based Leatherdale Farms. Six years ago, Canada’s David Marcus and Australia’s Nicholas Fyffe joined a group of dressage athletes gathered in Wellington, and their meeting proved fortuitous on both a professional and personal level. Read in this issue about how these two talented men have joined their personal and professional lives to create Marcus Fyffe Dressage, now based in Wellington. Other features this month include a look at the support Palm Beach Equine Clinic donates each year to the Vinceremos Therapeutic Riding Center, as well as a profile of Dr. Beverly Gordon, creator of the revolutionary Equi-Tape product. A case of

Candida (yeast syndrome)

White tongue … that’s classic yeast!

“I know it doesn’t really describe what’s happening to me, but I just feel ‘off’.” I listened intently as Susan continued to tell me her story. “I don’t know if it’s a difficult-to-treat condition I have, but it sure has been difficult to get diagnosed. You’re the 5th doctor I’ve seen in the last four months.” “Even though I’m board-certified in family medicine, my practice has morphed into one that handles cases that other physicians have difficulty with. Tell me more about what’s been going on.” “Well, I’m not sure where to start because there wasn’t any one thing that I can blame for how I’m feeling.” Susan continued, “I just noticed that I’m tired all the time. I can’t stay up late. When I come home, I’m spent. I know exercise is supposed to help, but I just can’t keep up with my spinning class anymore.” “Fatigue has lots of causes, sometimes more than one at a time. After hearing your history I’ll use some of this 80+ minute consultation to do a complete physical exam so I don’t miss anything.” “But there’s more. I’m bloated whenever I eat. My tongue has been coated so white, my kids sometimes ask if I brought home any vanilla ice cream. Do you know what causes that?” “Open up; let me see.” Sure enough, Susan’s tongue was heavily coated white. “That’s classic candida! You’ve got yeast.” “You mean like a yeast infection? I get those from time to time, but I don’t feel anything now.” “Yes, a classic candida infection is what you’re thinking about, but I’m speaking of CANDIDA ENTERITIS, a systemic yeast infection in your gut. It can cause lots of symptoms including the fatigue and bloating you mentioned, but also chronic sinusitis, heartburn, diarrhea, anal itching, and ‘brain fog’, where your concentration and memory are impaired.” “That sounds just like me. I can’t tell you how many times I walk into the kitchen not knowing why, and then I say to myself, ‘Oh yeah, to get my keys! Why didn’t my other doctors diagnose this?” “Unfortunately, many doctors just write off these symptoms as stuff that happens with normal aging. The problem is that medical schools don’t do much teaching about the various problems that occur with yeast.” I motioned her to the exam table, “Let’s finish our physical exam.” “See these white spots on your arms and legs?” Susan nodded. “It’s called IDIOPATHIC GUTTATE HYPOMELANOSIS and it’s caused by yeast that prevents your body from making melanin, or skin pigment.” “But my dermatologist said it’s caused by too much sun!” “Unfortunately, dermatologists and other doctors double or triple book 15 minute appointment slots and don’t have time

to give a proper explanation. Because I’m out-of-network I’m not forced by insurance companies to run patients through as fast as possible. I take the time to diagnose things better and find solutions that treat the cause of your condition, not just cover up symptoms.” “So, do I just take a Diflucan pill, the way my GYN has prescribed before?” “There’s a lot of drug-resistant bacteria and yeast out there so I need to do a culture and sensitivity test to figure out how to best treat you, and then we’ll have to be aggressive in our treatment. It’s not just one pill, it’s a good 3 months to kill all the spores inside your gut.” Susan’s testing did show yeast, and perhaps due to all the Diflucan she’s had in the past, it was resistant to that drug. Luckily, it was killed by another safe medication, and after 3 months of treatment (along with probiotics and a yeast-free diet), Susan returned full of energy. “Dr. Woliner, I convinced my spinning class to do an outdoor ride for charity. Can I sign you up as a sponsor?” Dr. Kenneth Woliner is a board-certified family physician in private practice in Boca Raton. He can be reached at 9325 Glades Road, #104, Boca Raton, FL, 33434; 561-314-0950; knw6@cornell.edu; www.holisticfamilymed.com

Years Of Hard Work Have Led Top Dressage Rider Allison Brock To The Pinnacle Of Her Career By Julie Unger

Top-ranked international and national dressage rider Allison Brock and her seven-year equine partner Rosevelt are looking forward to a successful 2016, perhaps even capped by a victorious appearance at the Olympics. Now 36 years old, it all started for Brock as a horse-crazy girl from a non-equestrian family. Her grandmother bought her a package of riding lessons for her seventh birthday. “They figured after four lessons I’d decide it was too hard, and I got too dirty, and all these things. The problem was, I did not think that,” Brock recalled. “I recognized as a small child what I was most passionate about. A lot of people don’t ever, ever get to experience what that means. I’ve been very fortunate to be able to turn my passion into my life.” At 17, Brock left her native Hawaii to pursue her dressage dreams, working with top professionals, including Colter SloAllison Brock and Rosevelt after a victorious ride at the Adequan Global Dressage Festival, shown with Janne Rumbough of Mtica Farm, judge Anne Gribbons and Allyn Mann of Adequan. cum, Jim Eldridge, Linda Landers, Lauren Sammis and Sue Blinks. When Brock was 22, she left the United States for the first time to discover the equestrian community in Europe, joining Blinks in 2002 for the U.S. team at the FEI World Equestrian Games. “It was incredibly educational,” Brock said. “Here I was, going with the U.S. team and living with Klaus Balkenhol, one of the most famous German trainers still alive. He’s an incredible human being, and an incredible horseman. Here I was, living at his farm. It just was amazing being around the people I was around.” Exploring the equestrian culture in Germany, she explained, was like being a kid in a candy store. From there, she traveled to the World Equestrian Games in Spain, where the U.S. won the silver medal. Brock continued her dressage adventure with other professional equestrians, such as Debbie McDonald, Guenter Seidel and Christine Traurig. She met Fritz and Claudine Kundrun while working with Blinks. “I was very fortunate with the people I worked for and the steps with how my career leapfrogged from here to there,” Brock said. “I was very fortunate to make some good choices, and it led me to the path of Sue Blinks and the Kundruns.” The Kundruns sponsored Blinks, and own Rosevelt, a Hanoverian stallion that Brock competes with and hopes to take to the 2016 Olympic Games in Rio de Janiero. “There are so many things that have to line up with the horse and rider, and it’s about the combination,” Brock said. “When you buy them as a young horse, you don’t know what they are going to turn out to be, or if they’re going to stay healthy. They’re athletes, too, and they’re subject to things like us — injuries, illness, accidents.” Brock and Rosevelt won team gold at the April 2015 U.S. Nations Cup; 2014 Dressage at Devon Champion Grand Prix and 2014 Dressage at Devon Champion Grand Prix Special; 2014 USDF Hanoverian FEI Level Horse of the Year; 2014 Hanoverian Champion, Grand Prix, Open Division; 2015 CDI Alchleiten, Austria, second, Grand Prix Special; and multiple Grand Prix, Grand Prix Special and Grand Prix Freestyle wins on the Global Dressage Festival circuit. Last year, Brock and Rosevelt were on the U.S. team travel-

ing reserve for the 2015 Pan Am games. “It earned me my rider patch, which I’m really proud of,” she said. This horse and rider pair are at the elite level of their sport. “It takes years to train a horse up to the Grand Prix level, if they make it. A lot of horses aren’t physically talented enough, and they also have to be quite intelligent to do it — and they have to want to do it,” Brock said. “It’s like you’re training a gymnast or a ballerina. There are going to be certain people who have a high aptitude for it, and it’s the same with the horses.” Dressage is complicated, she explained. When done correctly, it looks effortless, almost like the rider is doing very little and the horse is doing all of the work. However, looks are deceiving when it comes to this unique sport. “At the end of the day, the horse is so in tune with its rider that it is beautifully harmonious, and powerful and graceful,” Brock said. “That’s what we’re striving for.”

Getting that type of perfection does not come easily. “I’ve put my nose to the grindstone and have really worked hard to develop myself into a better rider, a better teacher, a better horseman,” she said. “And I’m very lucky. I wouldn’t be where I am without the support of Fritz and Claudine Kundrun. They have enabled me to actively chase my dreams.” The opportunities offered Brock have made her a better rider, helping her to prepare for what is coming up. “This is my first roller coaster ride, having a horse of this quality being this highly ranked,” she said. “This is the first time that I’ve had a horse, that I’ve developed, that has been good enough. I’m also now good enough. It takes a long time. It took me years to get to this position.” Brock was in the right place at the right time when she first started. Of the 16 or so children training together in Hawaii, six or seven of them became professional riders.

From Hawaii onward, she flourished, and she doesn’t take that for granted. “I am incredibly, incredibly grateful to Fritz and Claudine Kundrun, and I am really pleased to say that I have great relationships with all of the past trainers and professionals that I worked with as I was coming up,” she said. “I am grateful to Sue Blinks, Jim Eldridge, Jan Brink, Kyra Kyrklund, Richard White, and Michael Barisone, who is coaching me now. I really am proud of the relationships I have with those people.” Learning to communicate with a horse, or another being, she explained, is critical to the success that she has with Rosevelt. “He’s a really, really sweet horse. He’s a breeding stallion; he’s beautiful… He likes people, but he likes other horses. He likes dogs,” Brock said, laughing. “He would be that good-looking jock in school who was also good in the academic part and got along with everyone, but didn’t know he was goodlooking.” When Brock isn’t at a competition,

she divides her time between barns in Virginia and Wellington, calling Florida her home and offering lessons, training and clinics. For those interested in dressage, she stressed the importance of finding the right professional. “Watch them ride their horses and train others, and see which professional speaks to them the most,” she said. “The philosophy, teaching style, and how the training works. If you want to learn, the best case is to integrate yourself into the professional’s program.” Currently, Brock and Rosevelt are practicing and training to get ready for the Olympics. She wants to make sure that they remain among the top pairs to secure their spot in the final selection process. “I want to be in that grouping, and come up a couple more places to make sure our lot is secure,” Brock said. “Then, we will see what happens in Europe and how the chips fall.” To learn more about Allison Brock, visit www.allisonbrockdressage.com.

Faces of

DRESSAGE

Each winter, the majestic sport of dressage is on display here in Wellington, home of the Adequan Global Dressage Festival. Often compared to horse ballet or dancing with horses, the Olympic sport of dressage showcases the grace, beauty and elegance of a horse and rider pair working together as one. But what comes across as effortless in the show ring is really the end result of years of hard work. Dressage is one of those rare sports where riders often get better with age, and the best in the world are here in Wellington to compete, with many of the top riders keeping a keen eye on the upcoming 2016 Olympic Games in Rio de Janiero, Brazil. Here, we celebrate all of their hard work and determination in Faces of Dressage 2016, highlighting just a few of the amazing riders you can see in action this winter.

ANGELA ‘ANNIE’ PEAVY

ANGELA ‘ANNIE’ PEAVY Para-dressage rider Annie Peavy has taken what began as a form of physical therapy, riding horses, to a lifelong passion. Peavy is partially paralyzed on her left side as a result of a stroke that she suffered prior to birth. A preschool friend had horses and introduced Peavy to the equestrian world, where she took lessons and asked for a horse. She began taking dressage lessons and vacations geared toward dressage, learning about the sport of para-dressage in the process. In 2013, Peavy found the perfect trainer in Heather Blitz and has seen quite a bit of success in recent years. In 2015, Peavy was the 2015 USEF High Performance Reserve National Champion and won multiple competitions with mounts Ozzy Cooper and Lancelot Warrior. Recently, in early January, she won first place at the FEI Para Team Test, Grade III at the CPEDI 3* at the Adequan Global Dressage Festival in Wellington. wellington wellington the the magazine magazine || march march 2016 2016

In less than a decade, she has gone from a relatively unknown rider to one of the best dressage riders in the world with her mount Verdades, known as Diddy. It took hard work, dedication and trust for Diddy to become a star partner for Graves. In 2014, she was named to the U.S. Equestrian Team for the World Equestrian Games, where she placed fifth and eighth individually, while the team placed fourth. Graves took to the Grand Prix stage at the Adequan Global Dressage Festival CDI 3* in 2014 with Verdades. It was aboard Udon that Peters won a bronze medal when he represented the United States at the 1996 Olympic Games. Peters has represented his adopted country at numerous international competitions since then, including the World Equestrian Games in 2006 and 2010, where he secured bronze medals. In 2009, he won the FEI Rolex World Cup Finals aboard Ravel, who was later named Horse of the Year. Peters won both team and individual gold medals at the Pan American Games in 2011 before winning the World Dressage Masters title the following year. Experience The Majesty Of Dressage At The Adequan Global Dressage Festival When the Adequan Global Dressage Festival began four years ago, the Palm Beach International Equestrian Center was known for show jumping. Since 2012, the dressage festival has grown in size and stature, now rivaling its complimentary show jumping circuit, the Winter Equestrian Festival. Both are managed by Equestrian Sport Productions. The AGDF has seven internationally rated CDI weeks, among them a CDI 5*, the highest ranking an event can have for international equestrian sports, and a CDIO 3*, which hosts an FEI Nations Cup, where teams of riders represent their countries in competition. This year’s AGDF opened on Jan. 14 and continues until April 2 at the Stadium at PBIEC. Event organizers are thankful that the local community and equestrians alike have embraced dressage in Wellington. “We continue to be very excited, and this venue has lived up to our expectations, but also exceeded them in terms of what we believed could occur here,” Equestrian Sport Productions CEO Mark Bellissimo said. “The sponsorship is great, the prize money is great and we’re attracting riders from all over the world. We really appreciate the owners, sponsors, riders and everyone who has made this possible. It really is a breath of fresh air for dressage in this country.” At the AGDF, some of the top horse/rider combinations in the world compete, including Olympians and championship medalists. The first two weeks of the circuit were FEI World Cup qualifiers, where riders gain valuable scores to try to book their ticket to the Reem Acra FEI World Cup Finals in March in Gothenburg, Sweden. The CDI 5*, presented by Diamante Farms, is one week that attracts the best of the best to compete at the highest level. In March, the AGDF will host three more of its biggest weeks: the Palm Beach Dressage Derby CDIW, presented by Everglades Dressage, on March 3-6; the CDI 4*, presented by Havensafe Farm, on March 17-20; and the CDIO3*, featuring the Stillpoint Farm FEI Nations Cup, on March 30 through April 2. Showcasing a horse’s incredible ability to do technical and powerful movements with the slightest aids, dressage is artistic as well as athletic. At the Grand

64

march 2016 | wellington the magazine

Prix level, the horse and rider must perform difficult movements, including the pirouette, passage, piaffe and flying lead changes. All of these movements and the overall feel of the test are scored by five judges, and those points are tallied for an average score. Each year, the buzz around dressage has grown, and many spectators enjoy watching the Friday Night Stars events, which feature the FEI Grand Prix Freestyle. Special musical acts bookend amazing dressage performances. In the Freestyle class, riders make up their own choreography to the music of their choice. They must still incorporate all of the movements of the Grand Prix test, and are judged on the movements plus the artistic component of how well they flow with the music. Many people can be seen tapping their feet to the music of Adele, Coldplay, the Rolling Stones and other popular music, or swaying to impressive orchestral compilations. Some riders choose to use music that represents their country of origin. At the second CDI event of the 2016 season, the numbers in the top level of the sport of dressage showed just how popular the AGDF has become. An incredible 50 pairs showed up to compete in the FEI Grand Prix. Riders from 15 nations competed for top honors, including Argentina, Australia, Brazil, Canada, Denmark, the Dominican Republic, Georgia, Germany, Great Britain, the Philippines, Portugal, Puerto Rico, Spain, Sweden and the United States. “We are quite excited about this season because we see a true international competition here with 15 flags already, and we’re expecting that number to grow throughout the season,” AGDF Director of Sport Thomas Baur said. “It’s the first time that we have seen a rider from Asia, as well as the first rider from Africa, who will come to join us.”

GREAT OFFERING in PALM BEACH POLO

What is “the Vargas Girl”? Who is “the Vargas Girl”? ...it could very well be you! In the 1940’s Peruvian artist Alberto Vargas set out to capture the idyllic beauty in a series of pinups, which came to be known as Vargas Girls. Last century in the 1940’s and thru the 1960’s the idyllic woman was depicted as glamorous, elegant, feminine. Then in the 1970’s thru the 90’s women became more independent, free from constraints, confident and some would venture forth to say they were “untamed”. Now as we traverse through a

new millennium wouldn’t it be idyllic to combine the two... the independence and autonomy that women have worked so hard to obtain and merge it with the glamour, grace, and beauty that makes being a woman so incredibly empowering. That is the Vargas Girl. A woman on a journey to look her best at any age which will naturally lend itself to feeling amazing about who and what that woman is. We are here to help you with that journey.

AGDF Judge Natalie Lamping has been impressed by the wonderful turnout for Friday Night Stars. “It’s wonderful for the sport,” she said. “To see the bleachers, the pavilion here, the [tent on the] end full, people were wall to wall. That’s wonderful, and it’s just going to get bigger.” Allyn Mann of title sponsor Adequan is proud to support the growing dressage circuit. “To envision this, we’re all blessed beyond our wildest dreams. These riders here are at the top of the sport,” Mann said. “When you have an operation and a facility like this, with people dedicated to making it one of the most enjoyable experiences in the dressage world, it’s a dream come true. We’re very humbled that we can participate.” While Friday nights garner crowds, people can enjoy dressage all day from Thursday through Sunday during CDI events in multiple arenas and enjoy watching young riders,

young horses and combinations at every level compete in the sport of dressage. Food vendors are available, and there is shopping on Vendor Row. The AGDF offers a perfect way to introduce friends and family to the sport of dressage. The Adequan Global Dressage Festival began in an Olympic year, and some of the riders who competed in Wellington that year went on to ride at the 2012 Olympics in London. This year, even more dressage riders are making Wellington their winter home as they prepare for their sport’s biggest stage, which will be the focus of a global audience in August at the 2016 Olympics in Rio de Janeiro, Brazil. AGDF’s CDIO 3*, presented by Stillpoint Farm, is held during the final week of the circuit from March 29 through April 2. It is part of the FEI Nations Cup Series, and will also serve as preparation for the 2016 Olympics. “Since the first horse was unloaded at the Adequan Global Dressage Festival in 2012, our number-one goal has been to raise the bar for dressage competition in the U.S.,” Equestrian Sport Productions CEO Mark Bellissimo said. “There is no better way to showcase that dedication than to host North America’s only non-championship CDIO event. With the Olympics right around the corner, we are sure to see horses and riders alike at peak performance.” The CDIO3* hosted by AGDF is part of the FEI Nations Cup Dressage series, which includes competition in six different countries throughout the year. The FEI Nations Cup in Wellington will be the second leg of the series. In 2015, there were riders from 11 countries competing in the CDIO week, making it a true international event. Team USA won, and riders Sabine SchutKery, Kimberly Herslow, Laura Graves and Steffen Peters went on to lead the United States to team gold at the 2015 Pan American Games in Toronto. That victory in Toronto automatically qualified the United States for the Olympics.

Graves, who was the team and individual gold medalist at the 2015 AGDF CDIO3*, expressed the importance of the event after winning last year. “I don’t ever go into a competition with any expectations, and to go in and be called double gold-medal winning kind of gives you goose bumps,” she said. “I’ve never really been in the position to be on a podium except here at [the AGDF] Nations Cup, and it’s a really nice event to have sponsored by Stillpoint Farm and Adequan and really bring home gold medals. It’s an amazing thing.” While CDIO events and team opportunities may be more prevalent in Europe, the festival in Wellington presents a unique and welcomed opportunity to both inexperienced and seasoned riders from the Americas to compete at the highest level at home. With preparation for international championships being the goal of many riders at this year’s AGDF, tests such as the CDIO during an Olympic year are more important than ever. For many riders, it is the only chance they have at a team competition and environment that they will get in the year leading up to the Olympic Games. For spectators, the CDIO is always fun to watch, cheering along the riders from different nations. Spain always has a strong contingent of supporters waving the flag and cheering, while Team USA and Team Canada are stalwarts on the podium during the week. Be sure to join the many fans of dressage by attending the final week of this year’s AGDF to see this exciting competition, along with the stars who will go on to represent their countries in Rio. Spend Your Friday Nights With The Dressage Stars The popular Friday Night Stars evenings have returned at the 2016 Adequan Global Dressage Festival. The nights feature FEI Grand Prix Freestyle competition during the CDI competitions. There are two remaining Friday Night Stars events during the 2016 AGDF: the FEI Grand Prix Freestyle at AGDF 10 CDI 4*, presented by Havensafe Farm, on Friday, March 18, and the FEI Grand Prix Freestyle, part of the Stillpoint Farm FEI Nations Cup CDIO 3* at AGDF 12, on Friday, April 1. While not on a Friday night, but still part of the exciting freestyle competition series, the AGDF 8 Palm Beach Dressage Derby CDI-W, presented by Everglades Dressage, will be held Saturday, March 5. This is a special exception due to the FEI Nations Cup for jumping held on Friday, March 4 at the Winter Equestrian Festival. Friday nights have become a special event for the dressage community, and the Wellington community seems to have embraced them as well. Dressage features a harmonious display of horsemanship, and the freestyle is an excellent introduction to the sport. Some of the biggest names in dressage compete at Friday Night Stars, like U.S. Olympic bronze medalist Steffen Peters, Olympian Jan Ebeling, up-and-coming U.S. star Laura Graves, six-time Swedish Olympian Tinne VilhelmsonSilfven, Danish World Cup competitors Mikala

The class is held every Friday Night Stars at 5:30 p.m. Music is an important part of Friday Night Stars, and it’s not just happening during the competition rides. Performances are featured before, during and after the competition from such accomplished musicians as the Frost School of Music from the University of Miami, the allfemale a capella group Sunsations and the Yale University a capella group the Spizzwinks. General admission and parking are always free at Friday Night Stars, so families can enjoy an affordable night out. Food vendors are on hand for snacks and dinner, including the alwayspopular kettle corn stand. Vendors are open, so guests can buy AGDF-themed souvenirs and other interesting products. The Polo School At Grand Champions Developing Next Generation Of Players Story and Photos by Julie Unger

The drawbridge has been lowered and the castle doors opened. The “sport of kings” is now accessible to anyone wanting and willing to learn. The Grand Champions Polo Club in Wellington and the Aspen Valley Polo Club in Colorado are great places to learn the sport, refine skills, become a pro-level athlete and instill a love for this high-action, fast-paced sport, where horse and rider fly down emerald fields — or pristine white fields, in the case of snow polo — as one, with the goal of getting the ball through the goalposts. Wellington resident Melissa Ganzi, who owns and operates the two clubs with husband and fellow polo player Marc Ganzi, is passionate about shar-

ing the sport and making it accessible to the masses. “We noticed a need for individuals interested in the sport to find a point of entry. If polo is made accessible, the sport can attract more players. We saw a need, and we acted upon it,” she said. The Ganzis created a polo school to develop new programs, and already had two venues and plenty of players excited to take part. People fly in from all over the country to visit and take lessons. “Developing young American polo players is important to me,” Melissa said. “And we have the facility, infrastructure

and horses to give young players an opportunity to develop their skills.” The Ganzis’ polo school is relatively new, dating back to 2013. Daughter Riley Ganzi, 16, with a minus-1-goal handicap, has been riding and training with the polo school since its inception. “I participate as a youth athlete in the polo school, as well as assist with giving lessons to newcomers,” she said. “I am always passionate to spread the word.” Classes are offered on demand, but mainly after school and on weekends. Children and adults alike take classes. “We start teaching kids as soon as parents are comfortable with their kids being put on a horse,” Melissa said. The program starts out on a lead line

— where the child is on the horse and someone else is holding a long rope to help direct the horse — and are taught foot mallet classes. Playing polo on foot is a favorite method for practice that children of all ages enjoy. Playing stick and ball is when players practice handling the polo ball with their mallet, gaining control and bouncing the ball. This improves their coordination, helping them to be better when off the ground and on a horse. Classes are taught by world-class professionals, such as Juan Bollini, with assistance from up-and-coming players, such as Juan Bollini Jr., Christian Weisz and members of the Ganzi family. “I am so grateful to be part of the polo school, for it has given me the op-

portunity to not only work with the best coaches and players to improve my own polo, but also to lend a helping hand in teaching lessons,” Riley said. Son Grant Ganzi, 17, with a 1-goal handicap, enjoys helping less-experienced students work on their skills. “It’s a way for me to give back to the community of polo. I’ve learned a lot through the years through training organizations,” he said, noting that it has helped him to become a better player. “I’m always learning every day.” Grant has transitioned from being primarily a student to working and providing advice and assistance in his own right. “I help the younger kids with stick-and-balling and lessons and pointers,” he said.

“We noticed a need for individuals interested in the sport to find a point of entry. If polo is made accessible, the sport can attract more players. We saw a need, and we acted upon it,” Melissa Ganzi said.

Juan Bollini Jr., 19, with a 3-goal handicap, also enjoys teaching. “I’ve been a student as well as an instructor, so I feel like I’m part of the team. I’ve helped out with the polo school,” he said. “It’s a great feeling helping other kids do what you do and teaching them as best as you can.” During group classes, students are

grouped based on ability rather than age, with some classes teaching multigenerational groups. “We group players based on one’s riding level for safety,” Melissa said. “It is important to master skills at a slow, safe pace prior to moving on too quickly. Our program does a lot of foot mallet games at a faster pace than our riding

games. We want our students to become competent riders prior to attempting to play polo.” Riding classes are separated from foot mallet classes, she continued, so that once those skills are mastered, they can be combined. “Then we have a polo player,” Melissa said. Polo is one of the few sports in which professional and amateur players play together on the field, and men and women play together as well. It is also a sport that is frequently passed down from generation to generation, with entire families playing. Learning in a formal setting, such as that at Grand Champions, has its benefits. “Similar to other sports, it is often better to have others teach your children,” Melissa explained. “Once your preliminary skills are developed, it is easier to enjoy the sport with your various family members.”

Having multiple instructors, helpers and assistants is advantageous to the students and teachers alike. “Everyone has something to teach you, no matter what level they are,” Bollini said. “You have to get out there and learn from as many people as you can. No one person is going to teach you the whole game.” Weisz, who turns 16 this month and has a 0-goal handicap, enjoys meeting new people through polo and the school. “It really helped me, and showed me what I was doing wrong on a horse,” he said. “They really corrected me in that way and helped me correct and fix my flaws.” Learning through the polo school, Weisz explained, is better than practicing and learning alone. The Ganzis have been able to bring their children into polo, sharing their passion and passing along their sport. “I find it amazing to be able to en-

joy polo with my entire family,” Melissa said. This has made the sport more accessible to the outside world. “My best advice to those who are even the slightest bit interested in the game of polo is to try it out for them-

selves — they will be surprised to see how easy it can be to start, and I guarantee they will find themselves hooked,” Riley said. To learn more about the Polo School at Grand Champions Polo Club, call (561) 644-5050 or visit www.gcpolo.com.

FROM SASSOON 50 YEARS OF HAIR FASHION PRESENTED BY VISIONSsalon

VISIONSsalon held a unique hair fashion show event, “50 Years of Hair Fashion: From Sassoon to Arrojo,” in late January to benefit the American Cancer Society. More than $2,600 was raised as hair models showed off their decade-inspired looks. Singer Michaela Paige of The Voice kicked off the evening with a show-stopping number that got everyone on their feet. Salon owner Tom Monticello served as master of ceremonies and shared how the unique hair show concept came together while traveling back from a Nick Arrojo hair show in New York City along with his wife, Linda. Monticello dedicated the evening to his brother, Michael, who recently passed after a long battle with cancer. That was one of the key reasons why the American Cancer Society was chosen as the recipient of all event proceeds. The New York City runway-styled fashion show boasted styles from the 1960s through some of today’s latest trends. “The styles that we see today are in part due to Vidal Sassoon liberating women from hours of roller setting and sky-high lacquered finishes done for ages before, creating a free-flowing asymmetrical bob that was seen everywhere in the 60s,” Monticello explained. “Vidal Sassoon was truly a pioneer.” The hair models took to the runway with a backdrop of period-specific tunes put together by the team at W4CY Radio. One by one, each stopped to give the audience a glance at the amazing work achieved by the designers and makeup artists. Nothing was left undone, as each model represented her decade, along with the perfect attire to complement that hair style.

WHS Students Raising Money For Sick Kids At Dance Marathon March 11 Story and Photos by Julie Unger

Dance Marathon, a dance-a-thon to benefit the UF Health Shands Children’s Hospital in Gainesville, has expanded into countless high schools since it began more than two decades ago, including Wellington High School. On Friday, March 11, from 4 to 11 p.m., hundreds of WHS students will dance the night away for a good cause during the school’s fourth annual Dance Marathon. “Donations go to help sick children at Shands Children’s Hospital in Gainesville,” explained Samuel Weingart, WHS Student Government Association second vice president. In his student government role, Weingart is spearheading the event, but he stressed that it is truly a group effort. Lifelong friend Jake Anders has been instrumental in assisting Weingart. Both teens have a rare genetic disease — ocular albinism — and have worked toward starting multiple organizations to help other visually impaired children. “But the thing that we hold closest to our hearts is Dance Marathon,” Weingart said. “We believe that it is our duty, as we have overcome our condition, to help others who may not be

able to overcome their disability or illness without the help of others.” This year, WHS Dance Marathon students have set the goal to raise $25,000, which would be almost double what the school raised in 2015. “No high school in the Dance Marathon program at the University of Florida has ever raised more than $25,000,” he said. “This would be a record-breaking year for us, as we look to raise almost as much as the second and third year total of our WHS Dance Marathons combined.” In January, 9-year-old Zander Wyant and his family visited the school for a series of special assemblies to inform students about the event. Zander was the star of the day. He has undergone multiple surgeries, starting when he was just a day old. With the help of Shands Children’s Hospital and Dance Marathon, he is doing well and having a great time being one of the “Miracle Children.”

“Getting involved in Dance Marathon is probably the best choice you’ll ever make in high school,” Weingart told students at the assemblies. “The money that we raise from this event goes to help fund research for kids, goes to help for patient care and education of medicine. But overall, it goes to help kids battling illnesses such as cancer, kids who need heart transplants, and kids who need brain surgery.”

Zander’s parents, Kristen and Christopher, told the students about their experience with Shands. Shortly after Zander was born in Tallahassee, he started turning blue. They were quickly moved to a different hospital, where Zander was given an echocardiogram. He was diagnosed with a congenital heart defect and was brought to Shands in Gainesville. “I got discharged the day after he

was born so I could be there for him,” Kristen said. Before he was a week old, Zander had open-heart surgery. A few days later, his chest cavity was closed. One month into his life, he had stomach surgery, and at four and a half months old, he had surgery for craniosynostosis. Six years later, he had tubes put in his ears because of ear infections and received a man-made soft spot. In 2014, he was diagnosed with neuropathy and restless leg syndrome. “Every day, we thank him for being here. Every day is a blessing. Zander has the most to complain about,” Christopher said, “but he smiles, and he doesn’t complain unless it actually hurts.” The students participating in Dance Marathon, he explained, give them hope for the future. More than 450 schools raise money for the Miracle Network Dance Marathon, which, since being founded in 1991, has raised more than $106 million to help Children’s Miracle Network hos-

pitals, such as Shands. More than 170 children’s hospitals benefit from the Dance Marathon program. The hospitals treat millions of patients, many needing heart or lung transplants, or treatments for cancer, cystic fibrosis, sickle cell anemia, pediatric AIDS and more. “From Zander’s heart, my wife Krissy’s heart, and my heart, we thank you guys for just getting involved,” Christopher said. “Come by and support your friends.” After the assembly, Zander and his family visited the Wellington High School Fire Academy, where Zander dressed up in firefighting gear. Christopher and Kristen told Zander’s story to the students, who quickly joined in to make the day special for Zander. After all, his father explained, Zander considers first responders to be his heroes. He wants to grow up to be a first responder, so getting in gear and to see a fire truck up close was something spe-

Palm Beach Equine Clinic Vets Donate Time And Expertise To Vinceremos Story by Y.A. Teitelbaum • Photos by Abner Pedraza

It’s very common to see one of the Palm Beach Equine Clinic veterinarians at the 15-acre Vinceremos Therapeutic Riding Center facility in Loxahatchee Groves. Many of the 30 vets have been there, checking the health of the horses that provide equine-assisted therapies for clients with varying physical, cognitive and emotional disabilities. The visits and services are donated by Palm Beach Equine Clinic and would cost the nonprofit more than $50,000 per year for the veterinary care. “Any care our horses need, they take care of it, whether it’s routine like vaccinations, or something serious, such as surgery,” said Ruth Menor, who founded Vinceremos in 1982 and is the chief program director. “The really special aspect of our relationship is our access. They are right there to help us with anything we need. It never seems to be too big of a request.” The amount of donated services doesn’t concern Dr. Scott Swerdlin, president of the Wellington-based equine clinic. “As it increases, it makes our doctors feel even better knowing that Vinceremos is growing,” said Swerdlin, who first began donating services to Vinceremos in 2011. “We’ve been fortunate to be the veterinarians for such a great cause.” Palm Beach Equine Clinic started out with three veterinarians in 1981 and has grown into one of the country’s largest equine hospitals, with more

than 28 veterinarians using state-ofthe-art equipment and innovative techniques. They are a leader in sport horse medicine, whether it’s for an Olympic dressage horse, a Grand Prix jumper, a high-goal polo pony or a trail horse and companion friend. The practice is the longstanding official veterinarians of the Winter Equestrian Festival and have served in the same capacity for the Adequan Global Dressage Festival since its inception. Palm Beach Equine Clinic provides 24-hour emergency coverage, complete surgical services and intensive care 365 days a year. There is an on-site pharmacy, a full laboratory and advanced diagnostic imaging equipment, including a MiE Nuclear Scintigraphy gamma ray camera and a Hallmarq standing MRI. Community service is important to Swerdlin. “I try to instill in all the veterinarians how fortunate we are to be in an area where we have the quality of horses,” Swerdlin said. “It’s also very important to give back to the community.” Swerdlin noted that there are many worthy organizations, and it is difficult to decide which ones to support. One of the factors he prefers is an organization that has an immediate impact on people’s lives. “That’s Vinceremos — you see im-

mediate results and see the joy in these kids’ eyes; it’s amazing,” said Swerdlin, who serves on the nonprofit’s board of directors. That was evident when Swerdlin accepted an invitation to play polo with the children in the Vinceremos program. He arrived in traditional polo

attire — white pants, knee pads and boots. The kids were playing in regular clothes. “We were playing the boys against the girls; I was playing with the girls,” said Swerdlin, smiling at the memory. “We’re playing with this big old rubber ball, and I was trying to pass it down-

field. I accidently hit one of these young boys in the face. I felt terrible! He had the biggest smile and all he did was come at me and try to take the ball away. When they’re on that horse, their whole personality changes. It’s remarkable!” Swerdlin said he learned the value and importance of giving back from his mother. “Just being in this community, seeing the growth and opportunities we have, you feel compelled to give back,” Swerdlin explained. “Everybody who has the opportunity to work with horses has that same feeling. I felt personally so compelled to be able to do something besides what we do, fixing horses, improving horses’ performance, that I wanted to see some kind of accountability for each and every veterinarian that is here. The fun thing is that they all volunteered.” In addition to their significant contributions to Vinceremos, Palm Beach

Equine Clinic also supports Just World International, which helps children who live in poverty, donating food and clothing while focusing on long-term solutions that include education. The clinic also supports the Great Charity Challenge and serves as an advisor to the county’s animal control department when it concerns horses and their welfare. Dr. Janet Greenfield is the lead vet for Vinceremos and chairs the Horse Care Committee. She volunteers to educate young minds about veterinarians on career days at local elementary schools and 4-H clubs. Palm Beach Equine Clinic has worked closely with Palm Beach County Fire-Rescue to teach protocols on the safe and proper technique of rescuing loose horses. “We like to give back. Vinceremos is a wonderful organization,” Greenfield said. “I’ve learned a whole lot from that program. There are many different cases. As Scott always says, it’s not about

the horses is 110 percent.” And that’s exactly how Swerdlin believes it should be. “We’re obligated to give back, not for ourselves, but for the horse, too,” he said. Equi-Tape Creator Dr. Beverly Gordon Puts Chiropractic Principles To Work In The Horse World Story by Deborah Welky • Photos by Abner Pedraza

With a background in exercise physiology and biomechanics, Dr. Beverly Gordon had worked for years as a chiropractor when she had a startling realization — the kinesiology tape that works so well on humans could probably be adapted for use on horses. Gordon spends seven months of the year in Wellington, the winter equestrian capital of the world, so she vowed to give it a try. After an intense period of research and development by her company, the Horse in Motion, Equi-Tape was ready for market in early 2005. Since then, it has been increasingly embraced by horse owners and trainers. “The tape has so much application for performance horses here,” Gordon said. “It really helps horses train harder and stay sounder. It has a lot of applications on injured backyard horses as well.” That is something Gordon has expertise in. Her chiropractic practice includes consulting for a number of veterinary facilities regarding chiropractics and equine movement. Equi-Tape is an elastic cotton, two-way stretch tape with advanced adhesive properties for ease of application, removal and placement longevity. The way Equi-Tape affects the body is completely different from what non-elastic athletic tape does, and is based on its ability to interact with the skin and associated neurosensory and mechanoreceptors. Equi-Tape does not compress the tissue as do other types of taping methods. Its design characteristics and application techniques decompress tissue, allowing for increased circulation. The lifting principle behind the decompression also af-

fects how pain receptors respond to the messages associated with swelling and inflammation. Depending on how the tape is applied, it can decrease pain and swelling; increase circulation; support joints, ligaments and tendons; speed the recovery of injured tissue; and/or reduce spasm and tension in tight muscles. The caveat is making sure that the tape is applied correctly. As with any health aid, a certain degree of knowledge is required to achieve optimum results. To that end, Gordon created Equi-Tape Educational Services, offered through RSB Animal Health, a company headed up by CEO James Ruder that also markets and distributes Equi-Tape. Equi-Tape and its accompanying Continuing Education Unit-accredited educational courses are now available throughout the world. Used in conjunction with other modalities, it can give competition horses an edge. “We’ve been using kinesiology tape for 30 years in humans,” Gordon said. “You can’t watch a tennis match, basketball game or golf tournament without seeing someone with the tape on. It became particularly popular after being seen

Equi-Tape is the first and only elastic kinesiology tape designed specifically for horses.

in use by Olympians in the 2012 Summer Games.” Equi-Tape is the first and only elastic kinesiology tape designed specifically for horses. “That’s what makes it so special,” she said. “I tape horses from every discipline at every level — polo, jumpers — it increases circulation, which increases healing and decreases recovery time. Massage, magnets and lasers are all used to bring blood to an area. If you do those modalities and then put the tape on, it makes the effects last much longer. Plus, you can leave the tape on for up to four days.” Gordon said that while Equi-Tape is easy and safe, a certified Equi-Tape professional will come out to properly assess each horse, then show the trainer, owner and rider how to use it, so they know exactly where to place the tape to get the results they are trying to achieve. Equi-Tape can aid the equine athlete in both training and conditioning, as well as in rehabilitation and clinical recovery. “When they warm up, it improves the warmup,” Gordon said. “When training, it supports the joints. It helps them train with less stress. And, after they show, the horses sometimes are sore, particularly jumpers. Performance horses need to stay sound to perform better. Equi-Tape brings blood and oxygen to the muscles and takes away

toxins so they stay sore for less time and recover quicker.” Ruder, the product’s distributor, agreed. “I have spent my entire life immersed in the equestrian industry as a trainer, master farrier and businessman,” he said. “I have partnered with many equestrian companies since the early 1980s, successfully leading their sales and marketing efforts on a global scale. Late in 2012, I was introduced to the work that Dr. Beverly Gordon was doing in the area of equine kinesiology and, in particular, the effect of kinesiology tape on the equine athlete.” To Ruder, Equi-Tape stood out as a quality product. “I was fascinated with the effect that this simple modality had on the wellness of the equine athlete, not only in training preparation, but in therapy and recovery from injury,” Ruder said. “This fascination has evolved into a partnership with Dr. Gordon. Bev is an industry visionary. The good work that she has done will forever change the nature and approach to equine wellness.” Gordon urged equine professionals who have not used Equi-Tape to give it a try. “To me, it makes no sense for people not to be using the tape,” she said. “It’s safe, inexpensive, easy to use and works great.” To learn more about Equi-Tape, visit www.equi-tape.com.

Marcus Fyffe Dressage Brings Diversity And Depth To Wellington Story and Photos by Mary Adelaide Brakenridge

Wellington becomes a hot spot for dressage every winter season as equestrians from around the world flock to the area to train and show. Six years ago, Canada’s David Marcus and Australia’s Nicholas Fyffe joined the group of dressage athletes gathered here, and their meeting proved fortuitous on both a professional and personal level. The longtime partners married in November 2015 and have now merged their businesses to create Marcus Fyffe Dressage in Wellington, allowing them to better support clients while also furthering their own competitive objectives. Both Marcus and Fyffe have impressive résumés and bright futures. Fyffe grew up in Australia as part of a family of racehorse trainers who taught him the importance of high standards in horsemanship. After competing as an elite gymnast, he returned to the equestrian world, eventing at an international level and then devoting himself to dressage. Talented in working with young horses and seasoned at the Grand Prix level, Fyffe’s approach is grounded in years of study in Germany. Among his success stories is Fiero HGF, a PRE stallion that Fyffe has developed from an unstarted 3-year-old all the way through to being ready for his first Grand Prix start this year. A dual citizen of the United States and Canada, Marcus inherited his interest in riding from his mother. He grew up in Nebraska — as he points out, not a dressage mecca — and his passion for the sport led him to train in Canada during the summers as a teenager. The promise he showed during an impressive Young Rider career was validated in

94

march 2016 | wellington the magazine

his transition to the international Grand Prix ranks. Marcus went on to represent Canada at the 2012 London Olympics and 2014 Alltech FEI World Equestrian Games with Chrevi’s Capital, a Danish Warmblood gelding owned by Deborah Kinzinger Miculinic. Combining their businesses has given Fyffe and Marcus a way to offer greater stability and fresh insights to their clients. Already experienced in managing their own highly regarded training operations, they bring their unique backgrounds and shared core values to the joint endeavor. Both professionals take a positive, horse-centered approach that helps clients of all levels make steady progress toward their personal and competitive goals. “After we met, we started to collaborate and found that we were able to help each other’s clients,” Fyffe said. “We both have very similar goals with our own riding and in the way we want to develop our riders and our business, yet our backgrounds are both quite diverse. If there is any issue with a particular rider or horse, one of us has probably dealt with this issue prior and feels confident to work through it.” Marcus agreed. “I think two minds are better than one. We have very similar, complementary styles, yet we prioritize different areas in our daily train-

ing,” he said. “Together, not much gets past us. We have time to be there for our clients and compete ourselves. With the two of us, we are really able to balance both the shows and the operation of the farm. I think that is very hard to achieve under one person.” Among their many students competing with success on the Florida circuit this season is Leah Wilson Wilkins of Canada. Wilkins, a Grand Prix competitor and a professional herself, appreciates the chance to get feedback from two different perspectives. “Their styles are similar, yet different enough that maybe one of them just says something differently or makes a slightly different observation and it clicks,” she said. “They do this in a manner that is encouraging and insightful. They bounce ideas off of each other and aren’t afraid to step in when they have a suggestion, yet remain highly respectful of the fact that we are all professionals working in our own systems.” Both Marcus and Fyffe work hard to provide the highest level of care possible for horses, and their new permanent base has allowed them the stability to take their operation to the next level. “The quality of care is something that I was raised on,” Fyffe said. “The horses always come first. We are able to do that in this community that is set up for horse people.” Marcus said that the challenge of moving back and forth between Canada and the U.S. every year had complicated their staffing. Not only were there visas and work permits to consider, but staff had to be willing to live on the road without a permanent home base.

“Now everyone in our team can feel at home and get situated with friends and a sense of community,” he explained. “I think this has allowed us to find another level of security. We have a larger pool of staff to choose from in Wellington. That has helped us to really develop the team around us.” According to Fyffe, the abundant equestrian amenities in Wellington help set their business up for success. “It has the ultimate system in place to produce horses to the highest level,” he said. “The facilities, the feed stores, the vets, the footing, and of course the quality of riders and trainers around makes you better.” The two athletes feel that the Wellington community has helped them find a balance in their lives. “We are really committed to working very hard with the horses,” Fyffe noted. “However, the livability of this town means that we are able to have a social life, be around like-minded people and friends, and have quality down

time as well. Finding that balance is important, and in Wellington, we have succeeded.” Wellington is truly unique in the horse world, Marcus added. “Normally in the horse industry, you’re on a farm and very removed from

city life,” he said. “We are young professionals who enjoy being able to go out to restaurants and see our friends and colleagues. This town really has given us the best of both worlds. If you are going to be a player in the sport, you have to be in Wellington.”

Avatar EBS Helps Healthcare Companies Keep Data Organized Story by Deborah Welky • Photos by Abner Pedraza

If you were CEO of a multi-billion-dollar health organization growing by leaps and bounds, what would you do to keep that organization’s mountain of accumulated data organized and accessible without tying up your limited staff? You would do what many companies in that situation have done — call Sanjay Pudupakkam of Wellington-based Avatar EBS. Pudupakkam’s story is fascinating. With an undergraduate degree in biology and a master’s degree in information systems, he had been accepted into medical school but, two weeks before his start date, decided that he didn’t want to be a physician. He still had a passion for improving healthcare; he just didn’t know in what capacity. Fast forward 20 years to 2002, and Pudupakkam was working as the vice president of information management practices for a subsidiary of United Health Group. He formed his own company on the side, Avatar Enterprise Business Solutions, because he had seen a huge need for the particular skill set he had to offer. The sole purpose of Avatar EBS is to help huge medical and nonmedical corporations collect and analyze decades’ worth of information that they have gathered from various sources. Many times, the data is stored in various computer formats. Often, a lot of it is still on paper — typed, copied or even handwritten. Avatar gets it sorted it out, then shows the corporation’s own employees how to keep it that way. By 2009, the demand for Avatar’s expertise had grown to the point where Pudupakkam quit his day job in order to keep up. Now, he has 40 employees located all over the country and a partner with an offshore capability. His smallest client is a $2 billion organization. “My business all comes from word-of-mouth,” Pudupakkam said. “We get strong referrals from our customers.” Those businesses are mostly in the healthcare industry. “Our concentration is primarily in healthcare — hospitals and insurance companies,” said Pudupakkam’s wife, Diane Harrypersaud, who serves as operations manager and accounts manager. “Anything that involves data, we set up consistent ways of collecting, analyzing and measuring it.”

“With the Mayo Clinic, we’ve done a considerable amount of work in their personalized medicine area. Personalized medicine is being able to use a patient’s genomics data, like DNA, to more quickly find a diagnosis and a treatment that will help their outcome. Right now we’re focusing on cancer patients for a number of clients.” SANJAY PUDUPAKKAM OF AVATAR EBS

march 2016 | wellington the magazine

The goal is to show healthcare companies how to use their data more effectively, explained Pudupakkam, who counts Blue Cross & Blue Shield, the University of Mississippi Medical Center and the Mayo Clinic as clients. “With the Mayo Clinic, we’ve done a considerable amount of work in their personalized medicine area,” he said. “Personalized medicine is being able to use a patient’s genomics data, like DNA, to more quickly find a diagnosis and a treatment that will help their outcome. Right now we’re focusing on cancer patients for a number of clients.” Avatar is also there for clients who are trying to improve their systems to meet the requirements of the Affordable Care Act, which includes a valuebased care component. “In a value-based care environment, the hospitals and doctors are expected to take on risk for a patient’s well-being,” Pudupakkam explained. “They are basically given a patient population to care for, and they’re given a bucket

of dollars to care for them. But they need to be more pro-active in caring for them.” This often requires preventative care services, as well as care that can be administered outside of a hospital setting. “They also need to treat the patients who need care in a pro-active manner to improve or maintain the status of their health,” Pudupakkam continued. “It’s a very different way of doing things. The hospitals and doctors can have considerable loss in dollars. In order to exist and thrive in this environment, they need to identify which are the sickest patients and make sure they’re getting the treatment they need and the coaching they need to minimize unnecessary costs. We really help them analyze that data and get to those answers pretty quickly.” So even though Avatar appears to minister to the business side of hospitals, Pudupakkam finds that it aids the human side as well. It has also led to more digitizing of medical records.

“Although we have focused on healthcare specifically, many of the skills we bring are portable to other industries... Companies are competing on analytics, and what we have are difficult skill sets to find.” SANJAY PUDUPAKKAM OF AVATAR EBS “Medicare is pushing hospitals and eligible doctors to implement an electronic health record rather than keeping it on paper,” Pudupakkam said. “Most all Medicare-paid providers are now on electronic medical records. So we are moving toward data warehousing, information management and analytics.” If that sounds expensive, especially for organizations trying to streamline and cut costs, Pudupakkam has that covered. When he first meets with a corporation, he brings consulting contractors, business analysts and answers. “Our business analysts tell them why they need to do this, and then we help them build a case so they can fund it,” he said. “The corporations want control, so we mentor their team as we build a solution together. We are their implementation and consulting partner; they are focused on product development.” That takes the corporation from seeing red to being very much in the black. “In the end, we have helped the client design and build a product, but 102

they have all the rights to that product,” Pudupakkam said. In other words, the client is free to take the commercial-based product that they’ve built and sell it to other like-minded corporations. When they meet with a potential purchaser, Avatar comes along to the client presentation to help with readiness assessments — to see if their client is a good fit to support a value-based environment. “When they sell it, we help them implement that, too, because there is a lot of data, a lot of moving parts,” he said. While the focus now is on healthcare, Pudupakkam sees uses for his work in many other industries. “Although we have focused on healthcare specifically, many of the skills we bring are portable to other industries,” he said. “We focus on big data. We worked with Office Depot to help build out their information delivery system. Companies are competing on analytics, and what we have are difficult skill sets to find.” To learn more about Avatar EBS, visit www.avatarebs.com.

Partnership Is The Priority For Diane Creech And Leatherdale Farms By Mary Adelaide Brakenridge

Diane Creech riding Devon L.

Diane Creech, who is among Canada’s top dressage athletes, makes the trek each year from Caistor Centre, Ontario, to escape the winter cold and compete in Wellington. Her support from Minnesota-based Leatherdale Farms has given her the chance to ride and train a string of talented horses throughout the various stages of their careers, with some ready to shoot for international teams and some learning the ropes of competition. This season, however, is an emotional time for the Leatherdale Farms team. Co-owner Douglas Leatherdale passed away on his 79th birthday in December. Doug and his wife, Louise, have had an immense influence on the Hanoverian sport horse world. Together, they developed Leatherdale Farms into a prominent breeding operation, producing exceptional U.S.-bred sport horses, sup-

Now, Louise Leatherdale is continuing to guide the operation and build on her late husband’s legacy. “We were true partners,” she said. “Everything we did, we did together, and he would want me to go on.” wellington the magazine | march 2016

Creech’s long relationship with Leatherdale Farms is based on a shared set of core values that put the horses’ wellbeing at the forefront of every decision.

“We always select people based on their integrity and ability with the horses,” Leatherdale said. “It is of the utmost importance that we have that partnership.”

Creech agreed, noting that teamwork is essential between owners and riders, as well as between riders and horses. Through the ups and downs of pursuing high-performance dressage, the Leatherdales have believed in her. “It is important to have that trust,” she said. “I have always had great support from Doug and Louise.” As Creech points toward major championships, she emphasizes the horses’ improvement along the right path in their training, developing them patiently to reach their potential. During the 2016 season, she is competing seven horses in Wellington, including several that she has trained to Grand Prix, the highest level of dressage. 2012 Olympic team reserve Devon L, which Creech started under saddle as a 3-year-old and brought up through the ranks under the guidance of her coach, Danish Olympian Lars Petersen, (Left) Louise Leatherdale, owner of Leatherdale Farms, with Chrevis Christo. is now 16 and the most experienced of the group. 2015 Pan American Games team reserve Robbie W is moving up the ranks to join him. Chrevis Christo has had several successful outings at Grand Prix and continues to build on his experience. Hallmark, by the late and much-admired Leatherdale stallion His Highness, is competing at the medium tour level, getting practice and seasoning to prepare for the move to Grand Prix. Diana C, by Leatherdale Farms’ own Damsey FRH, is also showing great potential at medium tour, with beautiful collected work that will serve her well as she progresses. Creech’s stable also includes two young horses. They recently came to her after being started and brought along by Mike Suchanek at Leatherdale Farms’ Minnesota base. Fleur de Lis L is a 7-year-old Hanoverian mare with the intelligence and athleticism of her sire, First Dance, and Dublin L is a striking 5-year-old Hanoverian gelding by Dam-

sey and out of the same mare as Devon L. Both have already had national success with Suchanek. Fleur claimed the Second Level Open Championship at the 2015 U.S. Dressage Finals, while Dublin had strong finishes there and at the 2015 Markel/USEF Young Horse Dressage Championships. Creech looks forward to creating strong relationships with the young horses. To help build that bond, she spends time with them outside of the saddle, taking them for hand walks and getting to know them. “They are behaving extremely well with the new partnerships we have built so far,” Creech explained. “Mike, Minnesota performance horse manager Jessi Lash, and Mike’s trainer, Alison Sader Larson, are doing an amazing job with the young Leatherdale horses. You can tell that they come from a good environment because they are so trusting.” Also in Wellington is Rob Roy, which the Leatherdales offered to Creech’s

daughter, Vanessa Creech-Terauds, as a Junior and now Young Rider mount. Creech-Terauds, 16, fits in trips to Wellington around a demanding school schedule and has developed a close bond with Rob Roy. While in Wellington, Creech takes advantage of the opportunities to give her horses seasoning in the show ring. She knows the demands of international competition, having earned top results around the world, including a Pan American Games team silver medal. Her aim is to prepare her horses to be trusting, confident performers. “For the horses, it is always a learning experience,” she said. “They grow up; they mature. Every year I learn something as a rider, too. You learn by watching other people.” Leatherdale agreed. “Coming to Florida for the winter allows the horses to meet their full potential,” she said. “You want to give them every opportunity you can, and this is the place to do it.”

Western Academy Charter School Principal Linda Terranova Proud Of Students’ Success Story by Chris Felker • Photos by Abner Pedraza

Linda Terranova’s success in running one of Palm Beach County’s oldest charter schools is remarkable, especially considering the fact that she actually schooled herself in how to make it all happen. Terranova got her own education in Florida’s public schools (for which charters have been designed as an alternative) and Florida’s university system. She started the process to establish Western Academy Charter School in 2001. It opened in 2003 as the first charter school in the western communities, mandated by its founding papers to serve students in Wellington, Royal Palm Beach, the Acreage/Loxahatchee area and western Lake Worth. The school serves students in kindergarten through eighth grade. For prospective students and their parents, the academy’s web site lists its considerable advantages — 17 of them. Among its top achievements is the fact that Western Academy has been an Arated school according to Florida Department of Education standards as measured by standardized tests for going on 10 consecutive years, it has been cited as an FDOE High Performing Charter School since 2011 and it has earned the state’s 5-Star School rating for connections with the community every year since 2010. As Terranova pointed out, Western Academy stands alone locally with that last designation. “We were the first, and are the only, school in Palm Beach County that is 5-Star rated. And it really is outstanding, not to be bragging, to maintain an A for that long,” she said. “In our state scores last year on the FSA (Florida Standards Assessment), the new test, we beat the district and the state at every single grade level for every single test.” Those successes for the not-for-profit school make Terranova very proud, especially since she not only founded 108

Western Academy, but also has served as its principal since the school’s second year of existence. She had to go back to school for that, having never been even a teacher, much less a CEO of any sort. Terranova is quick to credit the team behind the scenes who helped her get Western Academy up and running, but her passion has been key to the school’s success. That much is apparent in how she describes her beginning in the charter-school movement and what she has done at Western Academy. After receiving her bachelor’s degree in mass communications/advertising with a minor in business management from the University of South Florida in Tampa in the 1980s, she worked in advertising for nine years, meanwhile getting married and starting a family. Her older son, Vinny, 19, who graduated from Palm Beach Central High School last year, has a disability. He and his brother, Joey, now a senior at Wellington High School, both graduated from Western Academy. Terranova cites Vinny as the reason for her second career. “He has Asperger’s syndrome, which is on the autism spectrum. He was in some of the pre-K programs at Wellington Elementary School… but I quickly realized once he went into kindergarten and mainstream classes that they were not going to be able to support his needs,” Terranova recalled. “The only option was putting him in an autistic unit, which was very restricted at the time. I wasn’t happy with that for my child because he is very smart; he could learn. He didn’t have behavioral issues

— he just needed more time and more patience.” That’s when Terranova got involved in the charter school movement. “I met some women who were involved in charter schools,” she said. “They told me about it; I educated myself; and that’s when I looked into it with the school district. I started writing the application in 2001.” Western Academy began as a small operation. “We started with one class of each grade, kindergarten through eighth,” Terranova explained. “We had 157 students initially in a 10,000-squarefoot building, and quickly realized that there was a much greater need in this community for a school like ours. At one point, our waiting list was up to 700 people. We’ve done four expansions over the years, and now we have 460 kids and 41,000 square feet.” Growing pains were difficult at first. “The first couple of years were very stressful, setting up procedures and undergoing constant changes,” Terranova said, especially after the school’s principal left after the first year. “We started a search for a new principal our second year, and the board asked me to step in as an interim leader.” After interviewing principal prospects, the board ended up asking Terranova to stay on. “The board asked me to go back and get the necessary certification and take over and run the school,” she said. “So that’s what I did. I enrolled in Lynn University and went to get my master’s degree in educational leadership. That took me a little over a year; it was a huge learning curve for me.” Terranova immersed herself in all the academic studies, professional de-

velopment and educational skill classes she could, becoming versed on the latest teaching techniques. Two innovative programs that she instituted have contributed greatly to students’ outstanding scores. One is the Project CHILD (Changing How Instruction for Learning is Delivered) mode of instruction used in kindergarten through fifth-grade classes, in which the kids stay with the same teachers and the same group of kids for three years. “This is great because the teachers are becoming specialists in those benchmarks for their subjects,” Terranova said. “It’s three 90-minute rotations, instead of hour classes, so they can really have a lot of time to jump into learning.” The school has been a K-5 Project CHILD National Demonstration Site since 2011. In middle-school classes, interdisciplinary teaching teams are used for all core content. Another special program is the middle school STEAM (Science, Technology, Engineering, Art and Math) Academy, which was began last year for high-level students and will finish rolling out for all eighth-grade classes next year. Terranova finds her second career in education to be extremely rewarding. “I know we’re making a difference. I know we’re providing a high-quality education to these students who walk in our door every day,” she said. “We’re making it happen. We’re not taking in these Level 5 students; we’re creating these Level 5 students at our school. My teachers are doing that every day under my leadership.” Western Academy Charter School is located at 650 Royal Palm Beach Blvd., Suite 400, in Royal Palm Beach. Dr. Jonathan Chung Specializes

In A Gentle Approach To Chiropractic Story by Ron Bukley • Photo by Abner Pedraza

Dr. Jonathan Chung of Keystone Chiropractic was drawn to his specialty in college when his friend’s father treated him for sports injuries. “I had plans on going into sports medicine, and one of my best friends at the time was going into chiropractic because his father was a chiropractor,” Chung said. “I had been an athlete all my life.” A Florida native, Chung grew up in Davie playing baseball. He graduated from Nova High School. “When I was in college, I started learning more about chiropractic,” he recalled. “Chiropractic is all about the body’s natural ability to heal itself. It’s more about eliminating obstructions to the body’s ability to heal, using natural methods to promote healing within the body. I started getting adjusted by my friend’s father, and some of these aches and pains from playing sports started to go away.” People come to Chung for a variety of ailments, but he is known for difficult-to-treat illnesses such as vertigo, chronic migraines and jaw pain. “We also take care of a lot of people after a concussion,” he said. “Quite a few people come in to me for that, especially Wellington equestrians who fall off a horse. We also take care of people with low back pain, neck pain and shoulder pain from sports.” A central theme in his treatment is atlas displacement, the way the head is seated on top of the neck. “If there’s an abnormal sitting of the head on the neck, it can create a lot of these other symptoms,” Chung said. “By correcting that bad position, we can restore function to the nervous system, improve circulation to the head and neck, and improve the joints’ ability to

move, which has beneficial effects on the brain and nervous system overall.” Chung employs a gentle, noninvasive procedure developed by the National Upper Cervical Chiropractic Association (NUCCA) to treat patients. “There’s no twisting or popping or cracking associated with it,” he said. “It’s a technique focused on the neck, and it’s how we form a structural correction of the upper neck.” This provides the necessary correction without harsher movements often associated with chiropractic. “What most people feel is a series of gentle pressures against the top of the neck,” Chung said. “Hours later or days later they’ll actually start to feel the effects of the adjustment.” Chung is one of only 300 doctors in the country who utilize the NUCCA procedure. He received his degree from the Life University in Atlanta. A core philosophy of chiropractic is that a healthy human body is always trying to be as healthy as possible, he said, explaining that a lot of people think of a fever as a sickness. “The fever, when we look at the core of it, is actually a mechanism in the human body to help get rid of viruses, to stop infections or slow them down. That is actually part of the healing process. Even though it doesn’t feel good, it is a part of what helps us get better and fight off illness. In chiropractic, we recognize this ability as part of the healing process. We’re here to try and promote the body’s own natural healing ability.” Chung’s office offers classes to teach people how to strengthen their spine

using exercise and corrective movements. They treat all ages, including infants and seniors. “We have a state-of-the-art X-ray that allows us to measure the head and neck position down to fractions of a millimeter,” he said. “Everything we do is objective and based in science, so not only will someone feel the difference from the type of work that we do, but they’ll be able to see the difference from when we first take an X-ray.” Chung truly enjoys what he does for patients. “It’s not just making someone feel better,” he said. “It’s knowing that we’re leaving the person in a physically better state than they were when they came in.” Keystone Chiropractic is located at 420 State Road 7, Suite 170, near the Toys ‘R’ Us store. Realtor Jermaine Bell Of Century 21 WC Realty Specializes In Home Transformations Story by Matthew Auerbach • Photo by Abner Pedraza

Ask a hundred real estate professionals the one thing they love more than anything else about the business they’re in, and you’ll most probably get a hundred different answers. For Jermaine Bell of Century 21 WC Realty in Wellington, it’s the chance to turn an ugly duckling into a swan. “I really enjoy home transformations,” he said. “I love working on homes that most people are scared to step foot into and making them absolute gems.” Bell grew up in Kingston, Jamaica. He left the island at age 16 and finished up his high school years at Plantation High School. After attending Florida Atlantic University for two years, he began his new life in real estate. He has been a licensed, full-time Realtor since 2004. Bell lives in Wellington with his wife and daughter. Bell’s area of expertise is residential real estate, which he has concentrated on for more than a decade. His interest goes beyond putting the right buyer in the right home. “I love helping my clients generate income, whether that be through flipping a property or rental income,” he said. Bell knows that his experience as a Realtor comes into play with every potential deal. He doesn’t underestimate the effect of the human factor in these dealings, either. “I think I not only offer expertise in my craft, but a personal relationship with my clients where they all feel that I genuinely have their best interests at heart,” Bell said. “They also know that I would never make suggestions or ask of them things I wouldn’t do myself. I think based upon that, a respect factor is developed that goes a long way in building a fruitful relationship. One of my strengths is being able to adapt to an ever-changing market.” Riding the ups and downs of a sometimes volatile real estate market is part of the job. There’s something to be said for stability as well, which is Bell’s up-to-the-minute assessment of real estate in the Wellington community. “The current state of real estate in our area is extremely solid,” Bell said. “Values are on the steady rise, which is great for current homeowners. The demand for the area is still strong and shows no signs of slowing down, in my opinion.” Bell very much enjoys living and working in Wellington,

the place that he and his family call home. “Wellington is an area that offers such a wide variety of things to so many different people,” he said. “The different economic and social demographics make it a very unique environment. From the different parks and recreation, multicultural events to the various equestrian activities or landing a plane in your back yard, it has a little of everything.” Century 21 WC Realty is located in the original Wellington Mall at 12794 W. Forest Hill Blvd., Suite 29, in Wellington. To reach Jermaine Bell, call (561) 201-9219. wellington the magazine | march 2015

Wellington Interior Design Center

D

David Bias comes to the Wellington Design Center with more than 30 years of decorating and design experience. With a background that ranges from major department store visual merchandising to residential design, David has a unique and varied perspective to help you fulfill your design dreams.

David has spent the last 13 years working with a prominent Palm Beach design firm. Starting with the nuts and bolts of space planning and logistics, and moving to having regular design clients, he was also heavily involved in the firm’s participation in charitable events. David has installed multiple Red Cross Designer Show Houses, the Veranda Show House at the Greystone Mansion in Beverly Hills, the Adamsleigh Estate for the Junior League of Greensboro, N.C. (where his personal artwork was also shown), and even personally produced pet clothing and table linens for the Broward County Humane Society PAWS To Help fundraiser at DCOTA in Dania. Having a keen eye for line, balance and color, David was also the stylist for all of the firm’s photography for publication. “At the end of the day, design should be fun,” he explains. “The client needs to enjoy the process. My job is to take the frustration away and replace it with a sense of joy and accomplishment. The Wellington Design Center is the perfect environment in which I can make this happen for my clients.”

I Shutter At The Thought… Pick a product or style and half of the clients will think it is outdated and tired. The other half will think it is trendy, contemporary and stylish. This is what I have been experiencing lately with plantationstyle shutters. Some see them as old fashioned or “beach only,” while others think they are clean, crisp and modern. Hunter Douglas offers three types of shutters in many different configurations. For windows in damp areas, like inside of a tub or shower enclosure, I recommend polysatin shutters. These are all synthetic, making them impervious to moisture and mildew. However, this product is limited to white and off-white tones only. My biggest seller is the NewStyle hybrid shutter. This is a composite of wood and polyresin. Because it is a hybrid product, it naturally resists the splitting, cracking and warping that may occur when exposed to severe long term UV and heat build-up. It is available in multiple shades of white and off-white, as well as four wood tones. If you love the look of 100 percent wood, and the tones that are available in real wood, the Heritance custom wood shutter collection is for you. This comes in 21 wood tones and multiple white and off-white colors. These can be finished with overglazes, smooth or distressed. All shutters give you choices for trim and moldings. If you have existing moldings on your windows, they can be mounted without a frame. Moulding surrounds can be either sleek and modern or traditional to coordinate with your existing crown and baseboards. Shutters can be single or multiple panel, bi-fold, by-pass or specialty. By-pass is usually used on sliding glass

doors, and they operate the way the door does. One shutters slides in front of the other. French doors can have the shutter mounted directly on the door and would have a finished “cut out” for the operation of the door handle. Specialty windows can be treated, whether an arch, oval or octagon. Specialty windows will always require exact templating to ensure that the shutters install correctly to make sure they are operable and move the way they are supposed to. All of our shutters are measured and installed by a certified Hunter Douglas installation professional. On top of the product warranty, installation by Hunter Douglas installation services is guaranteed for one year. We can give you an estimate if you would like to stop in with general measurements. Orders are not processed until a final measurement is taken by a professional. Feel free to get quotes from other vendors, but be sure to ask a few questions, such as, “What is the lead time?” and “Where are they made?” Hunter Douglas shutters are made right here in the United States with an average turnaround time of three to five weeks. Remember, this is custom manufactured to order. Do I need to further discuss Chinese products and what they may contain? I didn’t think so. If an item is imported and has a seven-week lead, replacement parts or repairs will usually carry the same lead, since they have to clear customs. Made in the USA can get you parts in a few days. If you want a tutorial in shutters, stop in and see us. W

• Photos courtesy Jacqueline and Paul Morris

Located on a cul-de-sac and backing up to a golf course, this Lakefield West home offers space, privacy and more. Native Florida plants, palm trees and pavers welcome you. A Spanish tile roof and two-car garage provide protection from the elements. And, inside, white reigns supreme. The home has four bedrooms, three baths and a separate laundry room in more than 2,100 square feet. The outdoor space includes a covered patio and an in-ground spa.

Back Yard: Situated on a pie-wedge lot, the backyard expands in size the farther out you go. Panoramic views of the Wanderers Club golf course are uninterrupted by walls, neighbors or traffic. A line of trees is all that stands between the homeowner and the dramatic palette of the ever-changing sky, making the patio a popular feature of the home.

Signature Dish

The Tres-Filet At Suri West Story and Photos by Julie Unger

The owners of Suri Tapas Bar in downtown Lake Worth have opened a western outpost right here in Wellington. Suri West opened last November at the intersection of South Shore and Greenview Shores boulevards. Owners Matthew Barger and John and Maureen Pata are thrilled with the new location, which features the same atmosphere, food, owners and even music as the popular original location. Tantalizing taste buds is Suri West’s signature dish: Tres-Filet. It features three petit prime filet mignons, each prepared differently. One features compound truffle butter, the next is Oscar style and the third is prepared with seared foie gras. Set on a light bed of vegetables and baby arugula, the three petit filets are flavorful masterpieces. The dish allows guests to have a specialty sampling that provides an array of flavors, helping to find a favorite. Often, the dish is shared. “It’s one of our most popular dishes be-

cause it’s the three filet minions,” Maureen Pata said. Chef Mario Foglyano is particular about all of the dishes, including the Tres-Filet. The compound truffle butter featured in the first filet is made in-house of black winter truffles with a white truffle essence. The filet Oscar includes jumbo lump crab meat and fresh asparagus, finished with hollandaise sauce. Finally foie gras, the fatty liver of a duck, is seared and placed atop the third filet. The combination of all three on one plate makes the meal special, Foglyano explained. “You can go to your standard steakhouse and get a steak, but you can’t get it three different ways,” he said. “We appreciate the fact that you can get it three different ways; each person can get a bite.”

Signature Dish

The filets are prime Harris Ranch beef tenderloin, and the meal is a Suri standard. “It’s a favorite,” Foglyano said, noting that the restaurant is well-known for the popular dish. Though the Suri locations are in South Florida, during the winter season, the menu features traditional fall and winter foods, such as acorn squash, walnuts, cranberries and more. The menu is organized by salads and starters, then house-made flatbreads, meals for one, meals for two and vegetable sides. An extensive drink list with cocktails and martinis, reserve wines and delicious desserts round out

a meal with picturesque views. “The menu changes seasonally,” Barger said. “We try to work with local ingredients when we can. We try to work with the seasons.” The Winter 2016 menu features the Suri Seasonal Salad with baby spinach, fried goat cheese, cranberries, candied pecans and maple balsamic vinaigrette. The Crab and Corn Chowda, a northern-style thick lump crab chowder, includes pancetta, fire-roasted corn and rustic vegetables. The Poached Pear and Caramelized Onion Flatbread shows off the flavors of Bosc pear poached in cabernet caramelized sweet Vidalia onion ricotta with brie cheese.

The Pulpo Espana meal features grilled Spanish octopus with fingerling potatoes, heirloom cherry tomatoes and arugula, tossed in a white wine garlic butter. Vegetarian options are also available, including the Vegetarian Spinach Lasagna, with burrata mozzarella, ricotta, grilled seasonable vegetables, spicy marinara sauce and spinach lasagna. New Zealand lamb chops, wild salmon, Peruvian potato-crusted Chilean sea bass, lobster and Murray Farms organic airline chicken breast are integrated into many of Suri’s offerings. Brussels sprouts, acorn squash, truffle parm fries, Szechuan beans and more
