Mediterranean Two Cheese Baked Pasta

Ingredients

• 250 grams Maidea GF Rigitoni

• 2 tbsp tomato paste

• 1/2 cup sun-dried tomatoes

• 1x 400gram tin diced tomatoes

• 1/2 cup red wine

• 3/4 cup chicken stock

• 1/4 cup olives, de-pitted and halved

• 1 cup frozen spinach, thawed &

Method squeezed

• 1/2 cup artichoke hearts, halved

• 1 tsp fresh or 1/2 tsp dried oregano

• 1 tsp fresh or 1/2 tsp dried thyme

• 1 tbsp roughly chopped basil

• 3/4 cup diced mozzarella

• 1/3 cup parmesan

• 1 tsp salt

• 1/2 tsp pepper

Method

1. Cook pasta according to the instructions on the packet but reducing the cooking time by 2-3 minutes. Drain and add to a large baking dish.

2. Add all remaining ingredients to the baking dish, reserving 1/4 cup mozzarella and 1/3 of the parmesan. Mix well and push to cover the baking dish evenly. Sprinkle with the remaining mozzarella and parmesan.

3. Bake in a pre-heated 180°c for 20-25 minutes covered and then a further 10 minutes uncovered or until the cheese has melted and golden.
