IT’S SAFE TO SAY THAT this edition of High Spirits is landing at a very different and difficult time compared to last year’s. The coronavirus pandemic has affected everyone and everything, and the alcoholic drinks sector is no different – but it has not been a total shutdown. Yes, almost every bar and pub in the country closed for several months and the on-trade has taken a big hit. But everyone has carried on drinking at home and – I don’t mean this flippantly – many people are drinking more. The opportunity has been there for independent retailers and lots of them have embraced the consumer demand for alcohol and sales have increased through both online and bricksand-mortar channels. Additionally, many consumers have embraced their inner mixologist and started making their own cocktails in the absence of someone to do it for them. This has generated some good cross-selling potential and new merchandising ideas to plenty of deli and farm shop owners. And, the likelihood is that these new versions of home consumption could become more permanent habits, even after the threat and effects of COVID-19 begin to fade. Most producers, particularly of spirits, have risen to the challenge as well. While lots of distillers have put their production lines to a different use making hand sanitisers (for both charitable and commercial purposes), NPD hasn’t taken a back seat either. There’s a wealth of new gin variants, an increase in other spirits like rum (could it finally be having its much-predicted moment?) and quite a bit of growth in new mixers and lowand no-alcohol alternatives out there, too. However you plan on keeping your customers refreshed, there should be something in this publication that helps the cause. Hopefully, we’ll all be raising a glass to happier times soon.

Shaken then stirred While COVID-19 and its lockdown has proved challenging – especially as the on-trade disappeared for several months – small-batch distilleries have managed to keep supplying avid consumers via online and independent retail channels. CHRIS MERCER finds out how the spirits sector is surviving and identifies a few new trends on the way.

BRITAIN’S NEW GENERATION of smallbatch distillers and drinks makers have shown resourcefulness in the face of the coronavirus pandemic, offering hope for the sector and for independent retailers. Learning new skills in lockdown has been a necessity for producers and shop owners alike, from website design and online Zoom tastings to the altogether different task of making hand sanitiser. Yet, while many have shown a willingness to switch focus and find new ways of working, the immediate economic fallout of the COVID-19 public health emergency still proved severe. Who could have guessed at the turn of 2020 that food and drink sales in cafés, restaurants and bars would fall by 60% in March versus the same month of 2019? That’s exactly what the analysis by research consultancy the CGA group showed.

“Overnight the on-trade became nonexistent,” says James Oag-Cooper, MD of Foxhole Spirits, known for making premium gin by using surplus wine grapes. The company had planned a big on-trade spend this year. During lockdown, several retailers reported drinks sales normally only seen at Christmas, especially for wine, but there were also reports of consumers trading down to cheaper spirits brands. In other parts of the ‘craft’ drinks sector, the Society of Independent Brewers (SIBA) said in April that nearly two thirds of breweries had stopped production. Amid such ongoing uncertainty, what can we say about the condition of smallbatch spirits and drinks makers? And how should independent retailers think about the situation? According to some analysts, we should

not underestimate the resilience of the small-batch spirits market after several years of extraordinary growth. The number of UK distillery businesses rose by 20% last year, hitting 246, according to accountancy group UHY Hacker Young. There were just 110 back in 2015. “The trend for authentic, local, artisan food and drink looks to be here to stay, and that will continue to tempt entrepreneurs and investors into the craft spirits industry,” said UHY partner James Simmonds in midMarch this year. Dawn Davies, head buyer at supplier Speciality Drinks and retailer Whisky Exchange, tells Fine Food Digest that “there will be [financial] casualties this year” but that she is impressed that smaller-scale producers have been willing to invest at a time of crisis. Some larger companies have not been so active, she adds.

MARKET OVERVIEW Porthilly Spirit Distillery, based at Trefresa farm in Cornwall, is one of this year’s market debutants. It launched its Cornish Coastal gin, made from 100% British sugar beet and wild local botanicals, as well as a vodka and a golden and dark rum. After seeing its initial business plan “evaporate”, founder Will Herrmann says the group has been growing sales. “We’re not quite where we wanted to be, but it’s better than we feared.” Collaboration with local chefs and businesses has helped, Hermann adds, and the group has posted cocktail recipes online. “We didn’t want the website to be a hard sell.”

Foxhole’s Oag-Cooper says independent retailers have become even more important, alongside direct-to-consumer online sales. “We said, ‘Okay, how can we support the independent off-trade as much as possible?’” he says. One answer was: “We made it easier for people to order regularly, rather than place large orders”. Foxhole has also pressed ahead with a new category-bending “botanical rum”, named Mad City. It combines imported, Fairtrade white rum with 25 botanicals, including coffee, papaya, hibiscus tea and coriander root. “It’s been four years in the making,” Oag-Cooper tells FFD. One of several suggested servings is a Mad City ‘hard seltzer’, a term that may divide opinion but has been garnering interest after proving popular in the US. Chase Distillery recently launched a range of 5% ABV flavoured gin seltzers, which combine its gin with sparkling water

from the family farm. It says each 250ml can contains just 89 calories. Alongside the experimentation, broad trends haven’t vanished in the face of COVID-19. Gin sales rose by 24% to £2.6bn last year and even the Royal family has joined in, with a new Buckingham Palace brand. Several sources say sales momentum for gin is slowing, but online orders still outperformed other spirits during lockdown, according to the Wine & Spirit Trade Association. New rums and artisan whiskies are still considered growth areas, alongside liqueurs. Tequila has shown “nice increases”, too, according to Dawn Davies at Speciality Drinks. She also tips Calvados as one to watch. “Producers have started to get their act together and apple is such a friendly flavour,” she says. That’s a comment that might also intrigue English cider brandy makers. Can anything be the next gin, though? “I think other categories will grow but not as much as gin,” says James Chase, director at Chase Distillery. With more people staying home, many distillers, bartenders and retailers have sought to either sell home cocktail-making kits or offer advice on perfect mixing. “People still want a treat,” says Candice Fonseca, proprietor of Delifonseca foodhall and restaurant in Liverpool, who was considering including cocktails in the retailer’s “date night” packages. Fonseca believes home entertainment and dinner parties will be a big trend in the next six months. “We are putting on our thinking caps on how we can cater to that,” she adds. Fonseca says the team has also noticed a trend for “drinks you’d normally only come across on holiday”. Some customers have recreated that vacation vibe through niche tipples like limoncello, pastis and Frangelico, the Italian hazelnut liqueur. Unsurprisingly, technology has come to the fore this year. Zoom is now a verb, and online tastings have been a central theme. “Virtual tours have been sell-out [for us],” says James Chase. Tasting kits were sent to participants in advance, and his advice to

Cornwall’s Porthilly Spirit Distillery is one of the newest producers on the scene, launching this year with gin made from sugar beets, as well as vodka and two rums.

A CALL TO ARMS: DISTILLERS SUPPLY HAND SANITISER From giants like Diageo to boutique producers, distillers across the UK have turned their stills to making hand sanitiser during the COVID crisis, addressing shortages. Examples include Manchester Gin Distillery, which dedicated its 1,000-litre copper still to hand sanitiser in April, principally to help supply NHS staff. “Our distillery can produce large volumes of sanitiser and can do so at cost, keeping prices low,” says co-founder Seb Heeley. Chase Distillery in Herefordshire produced “HR1” sanitiser on its farm. “We delivered 50,000 units to frontline [health] workers,” director James Chase told FFD in July. Packs of 6x300ml bottles were also available for £30 on the distillery’s website. Port of Leith Distillery in Scotland produced free sanitiser for key workers and called on fans to buy its spirits to help fund the project. In Surrey, Silent Pool gin distillery offered free sanitiser with online spirits orders to visitors before lockdown. It was made “using alcohol and the naturally extracted oils from Silent Pool Gin in its usual distilling process”.

anyone doing something similar is to keep it to 30-45 minutes. He adds: “Make it super interactive and get a drink in their hand straight away because it’s meant to be fun.” There are plenty of opportunities for food and drink pairing, too. At Whisky Exchange, Davies has run online whiskey and chocolate matching, for instance. That online presence, whether on Zoom or Instagram, adds a personal touch. “It’s so important to have a face to the business,” she says. Looking ahead at the market, Davies adds: “My feeling is that people will buy less but better quality.” She also believes that consumers “will go a lot more local and will respect people who are working hard”. All the distillers FFD has spoken to say they believe provenance and sustainability will be enduring values for consumers and that awareness is growing in drinks. Collaboration has also proved even more important for everyone in the independent sector. “A lot of people have been helping each other,” says Porthilly’s Herrmann. Meanwhile, Chase says strong community links are vital for distillers, adding that independent farm shops and delis “have done a great job”, particularly in recent months.

Gin might still be the UK’s number one spirit, but premium rum, vodka, whisky and liqueur brands are making their voices heard, too, as our round-up over the next six pages reveals. Enthusiasts and retailers alike will be pleased to see that NPD across the category continues apace. By Lauren Phillips Set up by two friends following a backpacking trip around Southeast Asia, Tarsier Spirit produces two gins, a Tarsier Southeast Asian Dry Gin and an Oriental Pink Gin. The former is a citrus-forward spirit with Thai sweet basil, galangal and red & black Kampot pepper (RRP £35 70cl 45% ABV). Welsh Sisters Gin produces two London Dry gins inspired by women in Welsh culture. The Captain’s Wife (who sailed to Chile in the 19th Century) is distilled with Yerbe Mate tea, pomegranate and fig. Gooseberry is the latest flavour in The Orchard Gin Co’s selection of gin liqueurs made with old-English fruit. The new 31.2% gin is described as slightly sharper than traditional, syrupy liqueurs. Butlers Cross is a small distillery in the Chiltern Hills run by David and Catherine Massey. The pair launched the business in September last year and currently offer two gins – a premium London Dry and a Raspberry gin. Distilled in 2016, the ‘field to bottle’ single malt has been matured in bourbon casks and finished in STR (shaved, toasted and re-charred) red barriques from Rioja vineyards in Spain. Sibling Distillery is run, unsurprisingly, by four siblings (two brothers and two sisters). The distillery is one of the few in the UK to make its own base spirit. Its latest launch is a Negroni Gin, inspired by the Italian cocktail, and made with fresh citrus peels and Negroni-inspired herbs. The first is an apple crumble gin (40% ABV). It replicates the British dessert with ingredients of toasted oats, cinnamon, and nutmeg, and picked up a Gold at the 2020 World Gin Awards. MORE PEOPLE GETTING INTO THE MIX By Chris Mercer Since COVID-19 effectively shut down the UK’s bars, spirits lovers have been turning to mixing drinks at home to treat themselves. And the trend seems set to continue as lockdown eases. On-trade analyst group CGA says 60% of consumers it surveyed planned to continue making cocktails beyond lockdown, also noting higher demand for equipment, such as shakers and stirrers. Sekforde Drinks, which makes botanical mixers for specific spirits, said sales were up 50% on average across the range, with founder Talula White noting more interest in new combos and flavours. Some distillers, retailers and bartenders have

turned to DIY kits to help the nation hone its skills. Jen Baernreuther, sales director at Speciality Drinks, has led a “bring the bar home” partnership with bars and restaurants to create make-at-home cocktail packs, sold via sister business the Whisky Exchange for between £53 and £105. Top sellers included a Coconut Espresso Martini devised by restaurant Kanishka, and a Banana Rum Old Fashioned (pictured) by the Trailer Happiness bar. Baernreuther tells FFD that, while it’s hard to replace the skills or atmosphere of great venues, “if you give people the confidence to make themselves a drink then it’s the beginning of a journey”.

HOW WE SELL… SPIRITS Kate Forbes, co-owner, Trading Post Farm Shop Like many indie retailers, in-store tastings were a big feature at the Trading Post Farm Shop until social distancing put them on hold. Now, owner Kate Forbes relies on her staff to upsell her range of premium, local gins and rums to customers in store. “It’s really important my staff have sampled each new spirit that we stock and understand its backstory so they know the taste and can describe it to our customers,” she says. Forbes is very keen to know all her alcohol suppliers and build good relationships with them, too. Often local brands will visit the farm shop to pitch their

products to her. “We like to have a relationship with the maker themselves, even if we buy through a wholesaler, because that makes selling things to customers easier,” she says. “If you can say ‘I know the person who makes this’, it makes it far more personal to your customers.” How a gin or rum brand looks on the shelf and whether it has an interesting bottle design is also important for the farm shop for piquing shoppers’ interests. A case of Twin Fin’s new spiced golden rum sold out within hours after Forbes shared a picture of the bottle on the farm shop’s social media. “The bottle looked so beautiful people were desperate to buy it,” she says. tradingpostfarmshop.co.uk

HOW WE SELL… WINE Jeremy Clevett, owner, Wildmoor Deli Retailing wine is like selling cheese, the more passion and knowledge you have the more you’ll sell, says Jeremy Clevett of Wildmoor Deli. “That’s what separates a deli or farm shop from the larger grocers,” he says. The deli has a lot of wine competition in the small Devon town of Bovey Tracey. On the high street alone there is a Co-Op, Spar and a Tesco Express, but Wildmoor distinguishes itself through its wine selection and expertise. Clevett often has customers approach him in the deli to tell him what they’re having for dinner and ask what wine he would recommend with it.

“You can’t go into a Waitrose and talk to anyone that actually has any idea about the bottles on the shelf,” he says. But Clevett has had to build this trust over time with his customers, which is why he moved his wine selection closer to the tills and cheese counter so he could easily engage with browsing shoppers. The selection of wines is also hugely important and Clevett suggests building a good relationship with an independent wine wholesaler who can help tailor your range. “First decide what it is you want to offer, whether that is organic or specific origin countries, and then make a plan on how to achieve that.” wildmoor-deli.co.uk

Sheppy’s new Redstreak cider is a 4% ABV medium-sweet single variety named after the Somerset Redstreak apples it is made from. Malarkey is the new gluten-free beer from Powys-based Monty’s Brewery. The brewery originally launched the 3.8% hop-forward golden ale in casks just before the pandemic and subsequent lockdown, before relaunching it in 500ml bottles in June. London-based meadery, Gosnells introduced a new 0.5% ABV, gluten-free sparkling mead at the beginning of 2020 to join its canned mead range. HOW WE SELL… BEERS & CIDERS Grumpy Goat, co-owner Anne-Marie Beatty It’s easy to feel overwhelmed at the huge selection of styles and brands, when looking to improve your beer and cider offering in store. But according to Anne-Marie Beatty of specialist beer (and cheese) retailer The Grumpy Goat, building strong supplier relationships, researching the latest brews and following current trends via social media are three ways retailers can do this. “As a specialist, we need to know our product,” she says. “We go on courses, attend festivals and follow micro-breweries on social media.” This approach has allowed the shop to build a

loyal customer base while limiting any crossover between its stock and the supermarkets’. The shop arranges its 500-strong range in order of styles rather than brands or breweries, mainly because there are so many styles in the market now. An IPA alone can be a New England IPA, a West Coast IPA or a Session IPA, says Beatty. Ranging like this also helps cater for a wide customer base (from 18- to 90-year-olds) and levels of interest in beer. “We sometimes get new customers who tell us ‘Oh I just drink lager’,” says Beatty, “so we can start there and then introduce them to a pale ale and so on, and take them on a journey.” thegrumpygoat.co.uk

NO- AND LOW-ALCOHOL IS A CATEGORY WITH POTENTIAL By Chris Mercer Demand for no- and low-alcohol spirits, beer and wine has surged as part of what marketers are calling “moderation” trend. Concrete proof of this is Waitrose’s launch of a pre-mixed “Nogroni” in March and the retailer has recently reported sales of low and non-alcoholic drinks are up by 64% year-on-year. The Nogroni is produced by Seedlip, a pioneer of “distilled non-alcoholic spirits”, whose founder Ben Branson told FFD at the end of 2019 that the producers have barely “scratched the surface” of the category’s potential. “In the last year, we saw a volume growth of +270% and are today stocked in

more than 7,500 accounts globally.” Those involved see the sector as a way of offering premium drinks to a growing number of consumers who wish to cut down on alcohol, but don’t want to replace booze with the usual sweetened soft drinks. Sarah Yates, co-founder of Devon-based brand Sea Arch, says that it’s important to give nondrinkers “a quality experience” to stop them from feeling like second-class citizens at the bar or party. “You get a botanical hit but you don’t get the alcohol,” says Yates of the company’s non-alcoholic distilled spirit, which is made with botanicals including blood orange, sea kelp, juniper berries,

cucumber and cardamom. Each one is distilled separately before being blended later. While some observers question the use of the term “distilled” to describe these kinds of drinks, there is also plenty of debate around using the terms “alcohol-free” (which must legally be 0.05% ABV or lower) and “low alcohol” (1.2% ABV or below) and the vaguer “non-alcoholic” on labelling. Regardless, no- and low-alcohol has emerged as a category in its own right Seedlip’s Branson suggests retailers should have “a dedicated alcohol-free section so it’s a clear destination instore”. It might just be worth making some shelf space.

SWEET SUCCESS FOR LOW-SUGAR TONIC Twelve Below entered the mixer market in May last year and has already established itself in the category as the first producer of low-in-sugar tonic waters. Founder Ross Smethurst launched the brand after spotting a gap in the market for a tonic with lower sugar content. “I’d pick up a bottle of our competitors’ tonic and couldn’t believe the sugar content in it,” he says. “Even a low-calorie flavoured tonic has about 5% sugar.” This strong USP proved fruitful and the brand is now stocked by high-end supermarket Booths and hundreds of independent retailers across the UK.

Twelve Below tonics are sweetened with a small amount of agave so have less than 2.5% sugar per 100ml. ECO STRAW BRAND OFFERS NEW PASTA-BILITIES When Maxim Gelmann launched his pasta straw brand, Stroodles, as an alternative to plastic straws, he inadvertently created a new drinks snack. “I was playing it [eating the straws] as a joke but around 1 in 4 people eat them raw after using them in a drink,” he says. Gelmann had the idea of using pasta tubes as straws after seeing children in Italy playing with the store-cupboard ingredient. “Italians weren’t doing it from a sustainability mindset, it was just a bit of fun for children,” he
