It’s dark when my boyfriend Elio and I pull up at the Carbis Bay Hotel, a stone’s throw from St Ives on Cornwall’s Atlantic coast. The soothing sound of waves licking at the sandy shore is the only evidence of the private Blue Flag beach that is part of the Carbis Bay Estate. I’m excited about waking up here in the morning, when we’ll be able to see where we are. I’m even more excited when we are guided into the three-bedroom beach lodge that will be our home for the next few days. The recently launched row of luxury lodges sits between the main hotel and the beach. Entered on the upper level, the front door is flanked by a private almost-rooftop terrace with a large hot tub tucked into a secluded corner. Inside, three bedrooms branch off the entry hallway; the master has a balcony and a large marble en suite with a walk-in rain shower and a freestanding bath. MAIN AND ABOVE

A spectacular floating concrete staircase spirals down to the ground floor, the majority of which is an open kitchen, dining and lounge area of generous proportions – proportions that make my compact city apartment feel like a hobbit house. The gunmetal-grey kitchen, equipped with all the mod cons and incorporating a full-size fridge, dominates one end of the room. A lemon drizzle cake sits on the island bench, along with a bottle of champagne in an ice bucket and a loaf of freshly baked bread. There’s butter in the fridge along with milk, tea and coffee on the counter, and a basket of local treats, ranging from Cornish fudge to Mr Filbert’s nuts and Kernow hot chocolate spoons. Past the bookshelf cut into the wall containing board games, there’s a large wooden dining table, a bowl of fruit on top, with bench seating that would fit at least eight. Two sofas laden with cushions enclose the lounge area, which is dominated by a wall unit with a built-in fireplace. “That,” says Elio in a voice tinged with awe, “…is a Bang and Olufsen television.” I’m more impressed by the wall of windows facing the darkness of the night. The beach is in our backyard. It would be rude not to avail of the hot tub. Soaking in the steamy water, the cool night air swirling around our faces, we pledge to bathe here every day of our stay. It’s a promise we are both determined to keep. When morning comes, the draw of the view drags me from the comfortable cocoon of the bed. The meal that follows in the hotel’s Sands restaurant – one of several dining options available – is equally delightful. An amuse-bouche of Parma ham and cornichons kick-starts a series of mouthwatering dishes, from a roulade of crab, with courgette and apple, bitter apple puree and crab custard to seared loin of venison with roasted fig, spiced raspberry jam and chive and Parmesan risotto. The Creedy Carver duck breast and leg is intriguingly paired with saffron potatoes, braised carrots, kimchi cabbage and marmalade and duck tea, while the tender Jacob’s Ladder is shored up with horseradish mash, Crown Prince squash, Cornish kale and wine sauce.

curtains, I am greeted by an expanse of golden sand, leading to an aquamarine ocean. The whole of the bay is visible, curving at each end as if enfolding us in an embrace. There’s a light mist hovering and it feels magical. Only the thought of breakfast takes me away from the panorama. Fortified by a delicious repast of fresh fruit, followed by Cornish hog’s pudding and hash topped with a poached egg, we follow the winding South West Coast Path, crossing the railway tracks that hug the coast. It isn’t long until the picturesque town of St Ives comes into view, across a broad expanse of sand – the tide is well out and fishing boats rest on an angle by the harbour breakwater, the lighthouse standing sentinel. The clouds are lifting, revealing patches of deep blue sky, and gulls wheel on the sea breezes as we wander arm in arm past the whitewashed, slate-hung cottages and Victorian villas that climb away from the fishing harbour. This quaint town has provided inspiration for artists for centuries. Turner was reportedly the first artist to visit in 1811 and by the early 20th century, artists and craftspeople began taking up residence. Late afternoon, we wander back to Carbis Bay and spend time on the beach before making good on our pledge – a pre-dinner float in the hot tub is the ideal way to farewell the fading sun. Post-soak, as we complete our final preparations before dinner, the doorbell rings, signalling an unexpected delivery of pre-dinner cocktails and canapés.

For dessert, we opt for “A Ferris Wheel of Fun to Share”. All eyes turn our way when a silver Ferris Wheel frame is brought to our table, loaded with funfair flavours like miniature brownies, toffee apples and sugar doughnuts. It certainly lives up to its name.

All too soon, it’s time for us to continue our exploration of the Cornish coast. There’s much to discover in this part of the country, from the granite cliffs that rise out of the Atlantic Ocean at Land’s End to the tidal island of St Michael’s Mount and the open-air Minack Theatre at Porthcurno. There’s no doubt Cornwall is home to some spectacular scenery, but the impeccable service, fine food and breathtaking views across the beautiful bay at the Carbis Bay Hotel are beyond compare.

PGA Catalunya Resort, in a superb setting north of Barcelona, was the first European Tour destination to achieve GEO Certified status in 2013, and it has continued building on its commitment to nature, resources and community. The resort has retained this status by focussing on reducing consumption and exploring opportunities for diversifying energy sources. Water is recycled throughout the estate and solar and geothermal energy sources have been implemented wherever possible. The introduction of Bermuda grass has reduced both water consumption and chemical use. Praised for its attention to detail and commitment to conserving the native flora and fauna of the pine forest on the 300-hectare estate, PGA Catalunya ensures residents and visitors gain maximum benefit from its outstanding setting. In southern Spain, Finca Cortesin Hotel, Golf & Spa is at the forefront of European golf’s drive to become more eco-sustainable. The course is the first in Spain to feature

a new environmentally friendly variety of dwarf Bermuda grass on all its greens, which has led to a 30% reduction in water usage. While there was minimum disruption for the players, the preparation behind the scenes was extensive. The grass was seeded by hand and, for 12 months, the new turf was nurtured under a supervised growing system before the process of re-laying the greens was undertaken. As well as needing less irrigation, the greens require fewer pesticides and less maintenance time. The uniform putting surface has received praise from club members and guests alike. The property was further rewarded, winning the 2018 IAGTO Sustainability Award for Resource Efficiency. Ignacio Soto, the Head Greenkeeper who supervised the process, noted the use of fewer pesticides. The greens need less fertilisation because they use nutrients from regenerated irrigation water in a more efficient way. Bermuda grass actively grows for nine months of the

year, which improves the year-round playability of the course. “The greens are already in better condition than they have been in previous years and we expect them to get even better in 2019,” Soto says. Le Golf National, the iconic European Tour Properties venue close to Paris and Versailles, demonstrates how an approach that fosters nature and conserves resources enhances the running of a profitable, well-respected golf facility. The course has retained its GEO certification having demonstrated continuous improvement over the past three years. This has been achieved by upgrading resources, including installing a new storage reservoir and drainage that allows for recycling of rainwater. This, together with a new irrigation system and removing 16 hectares from the irrigated areas, has had a massive effect on water consumption. Additionally, 340 tonnes of material is recycled every year and sand from the ‘Paris beach’ is reused after summer for fairway top dressing. The reduction of maintained turf areas with habitat buffers and increased low-maintenance ecological rough areas is important to support natural habitats. There have been 350 flora and fauna species identified, including 70 birds; 13 of the identified species are rare and included on the red-list of threatened species. Much of the work done in the area of conservation and biodiversity has been in partnership with the Natural History Museum and the French Golf Federation across the range of habitats, which

includes forest, wetland, open water, meadows and mineral landscape. The delicate balance needed to incorporate biodiversity is often achieved through working in partnership with private and public organisations. Le Golf National works in partnership with a private company and the museum to incorporate beehives to ensure pollination without risking a negative impact on the wild bee population. Le Golf National also recognises the importance of being a good corporate citizen and establishing positive community relationships. To this end, one of their projects has been collaborating with local government to restore the Porte de Merantais, an historic gate to the Palace of Versailles. Having attained silver level GEO certification, the highest currently held in France, the property is not resting on its laurels. New initiatives include concentrating on measuring ecological resilience after hosting big events, such as the Ryder Cup. Le Golf National has unique opportunities to engage in this, particularly with the Olympics in 2024. Peter Joseph has an impressive pedigree. Chennai-born, he is known for being the Head Chef of Tamarind, the first Indian restaurant in the world to earn a Michelin star. Now, he’s creating a new narrative in Chelsea with his first solo venture. Kahani is the Urdu word for story and the flavours at this basement establishment are crafted as skillfully as a literary masterpiece. “I have vivid memories of the excitement of the bustling markets in India – a sensory overload of tantalising scents and bright colours and an abundance of stalls selling street food,” says the Chef. “I wanted to encapsulate the excitement I felt as a child in the dishes I devise and serve at Kahani, so diners experience that same sense of wonder and delight, hence the nod to tradition that is present throughout.” This sentiment shines in every aspect of the restaurant, from the décor to the dishes, and even the cocktails. My boyfriend Elio and I begin our culinary quest at the bar, where I sip on PJ’s Kahani, a blend of vodka, crème de mure, lemon juice, jasmine tea, blackberry and egg white and Elio imbibes a Tandoori Ananas – home-

made spiced rum, pineapple juice, lime juice, tandoori pineapple, cinnamon powder and honey. He describes it as “pineapple for grown-ups”. From the bar, we move to our rather special table, which looks into the semi-open kitchen. I count at least seven chefs calmly swirling around the gleaming counters, adding a sprinkle of this and a dab of that, preparing to delight the diners seated in the comfortably elegant, 90-cover dining area, which features white walls, wooden floors, funky light fittings and blue-hued armchair seats. “I believe the devil is in the detail, which is why at Kahani I have considered every element, from the look and feel of the restaurant to every ingredient we use. That is why we only use the best seasonal British produce, prepared according to authentic Indian cooking methods”, says Chef Joseph. If the soft-shell crunchy crab with Mangalorean spices and tomato chutney is anything to go by, the Indo-British flavour partnership is a perfect match. The exquisite combination of spices meets the sweet crab without overwhelming the delicate flavour. The samosa platter is

equally pleasing, the triangles comprising Punjabi aloo, Kolhapuri chicken, and Chettinad venison paired with a traffic-light trio of tamarind, tomato, and chat masala sauces. “Authentic Indian cuisine is cooked with heart and soul as well as great spices,” says Chef Joseph, “…and I’ve brought this idea into Kahani, using recipes from my childhood as the inspiration for modern dishes you can’t help but share.” One bite of the incredibly tender freerange chicken-tikka with saffron, mace, baby ginger and coriander steam and I’m tempted not to share, but Elio sees my rapture and quickly samples the offering. The two enormous smoked Malabar prawns with fresh turmeric, coconut and curry leaves that arrive next are easily divided, along with the succulent Somerset lamb chops with Kashmiri chillies and Nagercoil cloves. We are filled with admiration for the chef’s understanding of flavour. “The magic of spices is in knowing how to combine them and use them in a way that doesn’t overpower the

ingredients but enhances them, resulting in a beautiful euphony of flavours,” says Chef Joseph. “I love working with spices that would be found in every kitchen in India – cumin, coriander, garam masala and turmeric, to name just a few. British saffron too; many people don’t know that the UK grows its own saffron; we source it from Essex.” Every dish at Kahani is atypical, even those that make an appearance on the standard Indian takeaway menu: the Kahani butter chicken is rich, yet light, the tomato makhani all but oil-free, the earthy brown daal complementing the sweeter yellow daal. “When people think of British-Indian food they think of heavy, oily meals that leave you feeling lethargic. Dishes should be fragrant yet healthy,” says Chef Joseph. Even the game-meat dishes exhibit levity, the venison keema with truffle naan full of deep flavours, yet not settling heavy in the belly. Elio is quick to declare this his favourite, although the tenderness of the cubes of lamb in the biryani give the venison a run for its money. We have eaten like kings, but the chef presents us with a dessert plate of cardamom cheesecake with a raspberry coulis centre, halwa (a carrot-based pudding), and milk ice-cream, with a scattering of pistachios and fresh berries that looks too good to resist. The elements are surprisingly light and eminently satisfying. Just like a good book, Kahani inspires. “Great food tells its own tale,” concludes Chef Joseph.
