P R E T T Y M U C H A N YO N E who knows me knows that, well…I love food. I love preparing it and watching it be prepared. I love learning about it—food history, unique ingredients, preparation techniques, and tools. I love poring through magazines and cookbooks with photographs full of mouth-watering dishes. Food represents so many things: comfort, culture, family, friends, science, art.

In this particular Food & Drink issue, we lean pretty heavily into the “food as art” idea. Just leaf through this book and you’ll find bright, poppy pages full of tempting al fresco scenes and eye-catching dishes (that frankly, we wouldn’t blame you for cutting out and framing). Here in Bethlehem and throughout the Lehigh Valley, we’re surrounded by an ever-growing landscape of beautiful and varied cuisine, and we invite you to use this book as your personal dining guide.

In this issue we also visit one of the many food pantries in our area through which we can all help provide more food options for those who may lack access. Our summer “Giving Back” editorial tells the story of the Northeast Community Center (formerly Northeast Ministries), whose dedicated staff manages a thriving “choice food pantry”. This special model allows patrons to actively learn about

making healthy food choices for themselves and their families in a neatly organized setting, much like a small grocery store. And of course, you’ll read about our 2019 Social Mission Parter, Café the Lodge, where you can do good simply by eating well.

It’s an incredibly rewarding part of this job to lift up our local businesses and organizations, to share their good (and delicious!) work on these pages, and to educate our readers about how to support those businesses and make a difference in this community. Authentic: Lee Chizmar & Erin Shea WHEN LEE CHIZMAR returned to the Lehigh Valley after serving as chef of Great Bay, an upscale seafood restaurant in Boston owned by impresarios Michael Schlow and Christopher Myers, he was coming home to his Pennsylvania roots. But he and Erin Shea—front of house manager at Great Bay, Massachusetts native, and partner (in business and in life) with Lee—were both taking a leap: leaving their home in New England for the chance to create a new one.

The Lehigh Valley was a place where, Erin says, “things seemed more possible.” In 2007, the couple opened Bolete, a farm-to-table restaurant in a 200-year-old farmhouse, with a menu—influenced by Lee’s training in San Francisco—celebrating the freshest

and finest local ingredients. Recognition and accolades have been outstanding: Lee was nominated by the prestigious James Beard Foundation for best chef, MidAtlantic region, in 2015. Just this year, the Beard Foundation named Bolete itself a semifinalist for Outstanding Restaurant—an honor held by only 20 restaurants in the country. “It’s amazing,” says Erin, especially since it’s “a recognition of the whole restaurant,” and all the work and time and love their community brings to the table.

Creative by nature, Erin and Lee wanted to expand their restaurant group with new cuisine types. That growth began with Mister Lee’s ramen bar in the Easton Public Market in 2016. Now, they’re opening their second

concept there: Silvershell Counter, a New England-style clam shack and seafood market inspired by Erin’s south shore Massachusetts upbringing (think: quahogs!). And soon, they’ll be opening a second Mister Lee’s location on Bethlehem’s booming South Side.

Fueled by possibility, creativity, and the strength of community—from the servers to the chefs to the dishwashers, and “the friendships we’ve made with people coming in for food”—Bolete has always been about family. (The couple brought both their newborn daughters home from the hospital to the apartment above Bolete, where they once lived.) “And that’s my favorite part,” says Erin. “The lives we’ve all built together.”

GIVING BACK Making a difference in the lives of others.

Giving Back: Northeast Community Center THE NEWLY-NAMED Northeast Community Center has a meaningful mission: To assist the residents of the MarvinePembroke community of Northeast Bethlehem with basic needs and to empower them in attaining their highest potential, creating a unified community which supports and builds self-reliant and responsible individuals.

The name is new, but the work is not.

Founded in 1980 by the Bethlehem Council of Churches as Northeast Ministry, its name reflected its original religious connections.

But in 1985, the organization transitioned to an independent social service agency— and while it maintains strong partnerships and still receives critical support from churches, there is no religious affiliation.

“There’s a reason we chose to change our name to Northeast Community Center,” says marketing and development

coordinator Grace Young. “We’re an access point to everyone in the community, and they know they can come here and get the resources that they need.”

One of the most vital programs of Northeast Community Center is its choice food pantry, where clients are able to select and “shop” for their own food in a neatly organized setting, much like a small grocery store.

Managed by a team of hard-working staff and volunteers, the pantry serves the MarvinePembroke neighborhood, which is home to more than 2,000 residents, as well as the surrounding low-income communities.

“We’re just a staff of five,” says executive director Paula Johnson, “but we have a great team of dedicated volunteers, and we could not do this work without them.”

A unique aspect of the Center’s food pantry is its holistic approach—because it’s open

every Tuesday and Thursday from 9:30 a.m. to noon (plus one evening a month for people who work during the day), staff get to know the residents on a personal level, allowing them to connect residents to the Center’s numerous senior and youth programs, including a robust summer camp.

The name change will also help counter the misconception that the residents of MarvinePembroke would rather live somewhere else.

Paula points to a 2016 survey that showed over half of the residents said they would continue living there if given the option.

“Everybody we talk to says that it feels like home,” she says, “and I think it has a lot to do with having a Community Center at its heart.”

A L E X A N D R A M I L S PAW, “has always been understanding chronic pain and trauma, and how they affect our relationships with ourselves—let alone our relationships with others.” That passion informs everything she does as a licensed clinical counselor and sex therapist; a speaker, educator, and trainer; and as a builder of bridges: between the medical and the psychological communities, and between patients and their lives.

Dr. Milspaw is the founder and owner of 4Directions Counseling, LLC, a group practice she opened in 2017 after establishing her solo practice in 2014. Her unique approach integrates neuroscience with behavioral talk therapy, and is grounded in the 4-D Wheel, a therapeutic method developed by Dr. Gina Ogden that encompasses the whole person—spirit, heart, body, and mind. She began her career as an inhouse clinical counselor for Dr. Robert Echenberg, a Bethlehem obstetrician and gynecologist nationally renowned for his work treating pelvic pain. Dr. Milspaw now provides professional consulting and training as well as counseling services, specializing in sexuality, trauma, and pelvic and genital pain disorders, and how mindfulness can help heal changes that stressors make to the brain.

Her recent speaking engagements include the Pudendal Neuralgia Association’s online conference, now available as a webinar, and the Pelvic Health Summit, a free virtual conference on the importance of pelvic

Everyone HAS A STORY BETHLEHEM NATIVE Kim Plyler’s story began in 1972 when she was a spirited eight-year-old, fighting with the Bethlehem Globe-Times to get the first paper route ever assigned to a girl. That’s when she met the Globe-Times editor, John Strohmeyer, who had just won a Pulitzer Prize for editorial writing that year.

“He said to me, ‘You got a fire in there, and you gotta write down what it is you want to do with your life.’ So I did. which began as a podcast and now has turned into a screenplay, tells the story of four young women in the Navy who forge a lifelong bond after enduring and overcoming an unspeakable event in the U.S. Military as female recruits in U.S. Navy Boot Camp and A-School in 1987.

“My own story first came out as a podcast, then a book, and now it’s a whole new process,” Kim says. “It’s the thing that gave birth to Master Your Story. “

Master Your Story With Sahl Communications TODAY, KIM RUNS SAHL COMMUNICATIONS, a public relations firm she created in 2009 that does brand reputation protection and crisis communication for businesses and individuals. This year she launched a new initiative—a natural outgrowth of her work—called “Master Your Story”. The program is designed to help clients discover and share their own meaningful narratives.

“I truly believe that everybody has a story inside of them,” Kim says, “and if we can bring those stories out, it will improve humanity.”

One recent example is the story of Andrea Czarnecki-Galgon, survivor of a double-lung transplant and author of Things I Learned While Waiting for the Hearse. “Andrea came in and realized that she was at a turning point in her career and asked us to rebrand her platform.” Kim explains. “The drug they used during her transplant

The process, which can take anywhere from 18 to 24 months, begins with a 90-minute exploratory strategy conversation and ends with a roadmap that includes the right media to fit the story, which could be a book, a podcast, a documentary—or even a trip to Capitol Hill to talk to a senator. “It is vital that we share our stories to aid in the improvement of humanity,” Kim says, “and it is my calling to make sure people know how to make that happen.”

Roasted’s parklet will provide additional outdoor seating in a custom-made repurposed wooden structure—complete with benches, tables, and greenery—in the metered spots in front of the restaurant. In preparation for summer 2019, 23 Sands Team Members came out to beautify the Greenway during the annual Southside Clean-Up event held on Saturday, April

13th. And as the school year ends, Sands Cares provides financial assistance to ensure each Donegan Elementary School student receives a nutritious breakfast during the Summer Program. Other programs focus on helping students retain and improve their reading and math skills, and invite special guest speakers to work on science projects.

Sands Cares Team Members volunteer throughout the summer at various

events including Cops-N-Kids, Musikfest, and Victory House Dinners. And there’s something going on at Sands Cares all year long (volunteer hours exceed 3,000 yearly!) including clothing drives during the change of seasons, book collections that benefit local reading programs, annual food drives filling the shelves of area food pantries, a school supply drive that helps Donegan Elementary students kick off the new school year, and more.

We only get better with age

The world is watching us.

That’s because Historic Moravian Bethlehem is poised to become a World Heritage Site. That’s big.

Very audacious. Being named a World Heritage Site puts us in the same league as national treasures like Independence Hall, the Statue of Liberty, and the Grand Canyon, and globally iconic sites such as the Great Wall of China, Acropolis, and Pyramids of Egypt.

Historic Moravian Bethlehem is a masterpiece of human creative genius with culture, architecture, and design that are exceptional and have universal value to humankind. That is what the team that evaluates potential World Heritage Sites looks for, and we’ve had it for centuries here in Bethlehem.

Building a town.

(Literally) The 1741 Gemeinhaus on Church Street— the community house—was a home, church, infirmary, school, and workshops.

It’s not only the oldest building in Bethlehem, but the largest surviving 1700s log structure in continuous use in the United States. A home for single women, a home for single men, and more followed.

The story, briefly Almost 275 years ago—in 1741, to be exact—a community of Moravians, a Protestant group from today’s Czech Republic, settled on the rich land near Bethlehem’s Monocacy Creek.

But they had more in mind than farming: they were missionaries and amazing town planners.

They settled in. Then they began to build, making Bethlehem a phenomenon of extraordinary buildings, music, and values that were centuries ahead of their time. (More on that in a second). The Moravians built America’s earliest industrial park with a pottery, tannery, soap mill, wash houses, grist mill, oil mill, blacksmith shop, and brass foundry. Within six years, 35 crafts, trades, and industries filled that stretch of ground, and there were butchers, clockmakers, bakers, saddlers, and masons. And by 1762, the Waterworks—the first pumped municipal water system in America—was pumping fresh water for the entire town.

Then construction moved onto Main Street with an enormous church, a tidy apothecary (think drugstore), and an inn for travelers.

Ten buildings became part of a National Historic Landmark District in 2012 and were officially recognized by the government for their outstanding historical significance.

Two of these are singled out as National Historic Landmarks: the Gemeinhaus and the Waterworks.

Timeless community, ageless values: The true cornerstone While the town kept growing, it never outgrew its core Moravian values that were part of that 1741 journey. Moravians didn’t just construct buildings: they forged a value system that echoes down Main and Church Streets today.

Moravians believed that people of all races, genders, and ethnicities should receive the same education and health care.

Europeans, AfricanAmericans, and American Indians lived, worked, worshipped, and went to school together, and then were buried side by side. Think for a moment about the world in the mid-1700s and you’ll realize how radical some of these ideas were.

And more than 275 years later, our society is still grappling with many of the same issues that the Moravians embraced from their first days here.

What sites are part of Historic Moravian Bethlehem?

Along Market Street: • God’s Acre

Easy Historical Fact The cemetery got the best name: God’s Acre. One of the first things the Moravians did was choose some land and plot out a cemetery. They buried people by group (they called these groups “choirs”)—determined by age, sex, and marital status, not by family.

Europeans, African-Americans, and American Indians are buried together side by side. All the headstones are the same size and lay flat on the ground to show that everyone is equal in death.

We are proving ourselves worthy.

Historic Moravian Bethlehem—our special 14.7-acre community—is about to be an even bigger deal.

We took the first step when Bethlehem was nominated to the U.S. Tentative List—a list of exclusive sites from 1771 Dye House Ruin

which the U.S. selection committee will submit one to the World Heritage Commission per year. (“Tentative” sounds a lot less impressive than it is!)

We already have a Moravian link.

The Moravian town in Christiansfeld, Denmark scored a spot as a World Heritage Site a few years ago. Their universal values, architectural beauty, and town plan show that Moravian history has great value to the world.

Stateside, we have an opportunity to create a heritage triangle. We’re just 70 miles from two other World Heritage Sites: the Statue of Liberty and Independence Hall.

We are researching what we need to do to get our town ready. We’re busy making the improvements we need to give visitors the world-class experience that’s been over 275 years in the making.

Don’t just see it.

Experience it.

Sure, you’ll get a sense of history walking down Church Street or strolling through God’s Acre or nibbling on a Moravian cookie in the Visitor Center. But don’t stop there!

Take a guided tour or indulge in a special event like Design After Dark

(every Friday after work) or take in fun family activities (like making cameras or listening to stories).

Or wander through the Colonial Industrial Quarter to see old buildings or hike out to Burnside Plantation, a real farm, just a 15-minute walk from downtown. And you’ll definitely want to come back for the Christmas holidays to take part in traditions that date back centuries.

How many towns can say that?

And with a World Heritage Site designation on the horizon, we’ll be opening even more doors to our past.

BORN ON THE coffee table of Australian twin sisters Christine and Margaret Wertheim, the Crochet Coral Reef has become one of the largest community art projects in the world.

The Reef is an ever-evolving archipelago of crocheted woolen installations, begun in 2005 as a response to the impact of climate change on the Great Barrier Reef. The Wertheims are the founders of the Institute For Figuring, a Los Angeles-based initiative dedicated to

the realization of abstract mathematical and scientific concepts through material play. The project has engaged a worldwide community of makers, spawning satellite reefs in Chicago, New York, London, Melbourne, Abu Dhabi, Capetown, and other locations.

Visitors to the exhibition will have the opportunity to experiment with hands-on hyperbolic construction, and to contribute to the Lehigh University Satellite Reef!
