Hey Y'all!

The May/June issue of Southern Woman Magazine is a special time of year As the weather warms up and nature comes to life, we are reminded of the beauty and vibrancy of the South. It's a time for planting new seeds, both in our gardens and in our lives, and for getting outdoors to enjoy the sunshine and fresh air

This season also brings a time for heartfelt gratitude and reflection. I want to take a moment to pay homage to my mother, who has been my guiding light and source of strength Her love, wisdom, and resilience have shaped me into the woman I am today, and I am forever grateful for all that she has given me

I also want to honor the memory of my late father, who may no longer be with us but whose presence is felt in every lesson he taught us and in every cherished memory we hold dear His values, kindness, and unwavering support continue to inspire us, and his legacy lives on in our hearts

As we celebrate Mother's Day and Father’s Day, I want to extend warm wishes to everyone To all the mothers who nurture, inspire, and love unconditionally, Happy Mother's Day And to all the fathers who provide support, guidance, and unwavering love, Happy Father's Day May these special days be filled with joy, appreciation, and cherished moments with loved ones.

Major Lindsay "MAD" Johnson has made history as the first female member of the A-10 Demo Team, based at Davis-Monthan Air Force Base in Tucson, AZ Since childhood, she has been a devoted fan of the A-10 and had aspirations of becoming a pilot. With over 8 years of flying experience and more than 6 years specifically with the A-10, joining the Demo Team has been a dream come true for her. Leading a team of 10, she takes immense pride in her role As the A-10 Team approaches its final year, they invite everyone to attend one of their shows to witness their exceptional skills in action. A special shoutout goes to Major Johnson's mother, Donna, a retired teacher from Ruth Hill Elementary in Newnan, who joined the team for a group photo

Originally from a small town in Central Illinois, I didn’t have a lot of goals or passions However I was blessed with a spirit of perseverance! I had my daughter, Tiarra, when I was 20. As a young single mom, we lived in public housing and were on public assistance However I refused to stay there for long When she was just six weeks old I was back in the workforce doing telephone marketing for car surveys I moved along quickly from job to job, even delivering newspapers before my full-time job to make ends meet, until I landed a position as an Administrative Assistant at one of the local corn refinery plants With a passion for learning and growing, I took an online course to get my paralegal certification on dial up internet Later I pursued my Bachelors Degree taking classes in the evening after my full-time job. One of my most treasured memories to look back on is seeing my Grandma waiting for me after walking off the stage She was so proud of me and that’s a moment in time that I hold dearly and remind myself of when I feel discouraged.

I had believed that my Bachelors Degree would allow me to move up the ladder at the Corporate Office. I had interviewed for a sales position within the Company and was told I smiled too much. I was discouraged but I continued to keep showing up with that same smile and positive attitude

I had always struggled with my weight. After losing 60 lbs working out at home, I decided to join the local YMCA One day after class I noticed a flyer to get a group fitness certification for the gym version of an at home program I was familiar with, TurboKick I signed up, not having any kind of experience in that area The workout is fast and choreographed to the music So if you are off, you miss the sound effects and everything else No problem right? I took the certification and a few days later they put me on the schedule. The music started, my heart was racing and after a few minutes I froze! I had to switch the class to some more basic kickboxing moves I told myself I would give it three classes and if it wasn’t better after that I would quit. Well by the third class we were hooting and hollering with glow sticks and strobe lights!

Now here is where things start to come together Not only had I lost 60 lbs using these types of at home programs, I discovered there was an income opportunity attached to it I was recently divorced, struggling to put food on the table, keep the utilities on, receiving foreclosure and repossession notices. I decided to take a chance I started my own online marketing company distributing health and wellness programs Originally I thought I would just make $100 a month. A secretary in a corn refinery plant, I had never sold anything and didn’t have the confidence to believe anyone would join me on this new mission Looking back I realize all of these small steps have led me to where I am today Mentoring women in the US, Canada and the UK to duplicate my success, according to their goals, dreams and desires.

Taking that leap of faith has not only given me confidence physically and emotionally, it has also led me to many opportunities Such as moving my daughter and I to Georgia, being featured on Fitness Infomercials, Reality TV and being crowned Mrs. Universe North America 2019.

Whatinspiredyoutopursueyourpassions?

I am a firm believer that if there is something on your heart to do it’s placed there for a purpose. A bit of a fearless, free spirit I have a tendency to just do it I love learning, growing and getting out of my comfort zone Being a single mom has been a strong driving force behind my pursuit I wanted to be able to give my daughter a life that she deserves I have been able to give her that and now as a new “Coco” aka grandma only cooler, I am able to help do that for my new grandson as well

Howdoyoubalanceyourworkand personallife?

Time is one of our greatest commodities This is something that requires a lot of discipline. I am still old school and work from a paper calendar Every Sunday I look at my calendar to review what I have coming up. I block out time for myself in the morning This gives me time to do the first things first in my morning routine of getting my heart, mind and body ready for the day. Reading, prayer, meditation and working out My typical work schedule is 11-4 My schedule is flexible and will have a few calls or meetings in the evening throughout the week I love to play so I have to keep myself dialed in. I try to limit myself to attending 1-2 events per week One key thing that I learned when first starting my business was to be where I was. Meaning if I were spending time with my daughter, that meant putting the phone away and giving her my full focus

Whatadvicewouldyougivetoaspiringwomen lookingtofollowinyourfootsteps?

Don’t wait for everything to be perfect to get started. Most people's biggest regret is that they didn’t get started sooner Decide what you want to do and go for it The tools, resources and everything else will fall into place once you set things in motion

Whatareyourfuturegoalsandaspirationsin yourcareer?

I am currently in the process of obtaining my Real Estate license for the State of Georgia It is something that has been on my heart for over twenty years but the time was never right I have also recently taken voice over acting lessons I love to show up, go where I’m being led and see what God does with it It would be a dream to host a travel or real estate television show.

Everyone has a different preferred form of connecting, so I do my best to accommodate my clients according to their preference I am on Facebook @drabtofablife , IG @lisakoehlerofficial, LinkedIn and TikTok. A simple “hello, how are you” can go a long way It sounds so simple, but it can make a world of difference in someone’s day and your relationship. I always extend a common courtesy to both my clients and business partners by simply checking in and asking how they are vs diving straight into business We never know what someone is going through. By following this simple rule, I have touched base at times when someone has experienced a tragedy or having a really hard day and I’m reminded of the importance of a simple “how have you been”?

I love this quote “Motivation gets you going, but discipline keeps you growing. That’s the Law of Consistency. It doesn’t matter how talented you are It doesn’t matter how many opportunities you receive If you want to grow, consistency is key ”

There are of course days where I wake up super motivated to work, but truth be told the majority of the time I have to dig deep and find the discipline to show up and keep going Some days I require a little pep talk and tough love within myself. I know that if I want to strive and achieve my goals, whether physically or in business, it’s up to me to show up and do the work

I like to break things down into small chunks of time or activities If I focus too much on everything that needs to be done it can be overwhelming and I accomplish nothing For example, I typically workout in the morning I like to just focus on that one thing Get that one thing done and then I can move on to the next. This is where having a to-do list and calendar come into play otherwise I’ll forget what’s next! Focus on the task at hand, cross it off your list and on to the next

Shortly after turning 40, I found myself hitting the snooze button and getting stagnant in life. I was skipping workouts and indulging in a few too many cheat meals I knew I needed to do something that would light a fire within and to work towards I had been considering doing a Pageant and I thought what better way to get myself moving than being on stage in a swimsuit! I competed in my very first Pageant and placed 3rd runner up. I had intended to compete one time, but after getting my feet wet I was inspired to do it again The 2nd time I placed 2nd runner up I competed a 3rd time and was crowned Mrs Universe North America 2019. From there I went on to compete in China for Mrs Universe While I did not take home that title I was crowned Mrs Successful Universe I love sharing this story of doing something different, something scary and not giving up.

One of the biggest challenges I have faced was going through Covid and a divorce simultaneously It has required a lot of healing, self love, practicing mindfulness, forgiveness and time.

Every morning I start my day with prayer, reading or listening to audio, journaling and meditation It all starts in our hearts and our minds I know if I don’t begin with getting my heart and mind right it will impact my entire day I start with prayer because God is my source of love and all things good. I am nothing without him. So I honor him with the start of my day The Bible App has a lot of great plans you can choose based on whatever you may be facing in your life. There is so much negativity around us, we have to choose what we fuel our minds with. I like to read 10 pages a day or listen to 15 minutes of a good book You Can Heal Your Life by Louise Hay was a game changer for me. Another practice is mindfulness. I’ve learned to slow down, examine my thoughts and feelings without any judgement Examining where the thoughts came from, asking myself are they true and then deciding what do I want to do with it Journaling is another great way to work through your thoughts and feelings We store up so much energy within our bodies, lets be mindful of working through and releasing the negative emotions and filling ourselves up with love and positivity

We were’t born to do life alone. Women need other women in their lives who are going to support and cheer each other on Your circle of influence is everything I have been truly blessed with a beautiful, diverse sisterhood I work so hard to protect my energy and spirit, I pay very close attention to who I am allowing to speak into my life Pay attention to how you feel after spending time with someone If they are making you feel sad, unworthy, less than etc you might need to reevaluate how you allow them to show up in your life It doesn’t necessarily mean you need to cut ties with them, but maybe limit your time together and be mindful to protect your own wellbeing when doing so

Howdoyouin wellnesspracticesintoyourroutine?

Self-care and wellness are such a major part of my life I have learned over the years to slow down, love and to make wellbeing a priority. One of my favorite ways to show myself some love is to enjoy a hot cup of tea, take a long hot bath and then hop in bed for a Power Nap I do this 2-3 times a week or as often as possible. I often joke that napping is one of my hobbies I love to get outside and be in nature Going for a nice walk can alleviate so much stress and boost my mood

I also enjoy low impact workouts. I had previously loved lifting heavy weights, complex moves and high impact cardio As I’ve aged, I’ve discovered my body doesn’t love it like it used to. A few years ago I tweaked my back and turned to low impact dance programs on my virtual streaming system I had planned on just doing it to ease my way back into more intense workouts. However, my body loved it and I ended up losing 20 lbs As far as nutrition, I follow an anti-inflammatory diet which includes a lot of fish and vegetables I try to avoid processed foods and added sugars I have also drank a superfood meal replacement shake everyday for the last 14 years If we want to function at a high caliber we need to make sure we are moving out bodies and fueling it accordingly. Howdoyougivebacktoyourcommunityor supportcausesthatareimportanttoyou?

There are many causes that are near and dear to my heart I have volunteered and presented for Dress for Success, a global not-for-profit organization that empowers women to achieve economic independence by providing a network of support, professional attire and the development tools to help women thrive in work and in life I am grateful to have had support from others in my time of need. This organization allows me to pay it forward to women who are working hard to change their current scenario

Recently I danced in Dancing Stars of Atlanta for the Alzheimer’s Association. I was able to raise $50,000 in less than 3 months to honor my Grandmother Mildred Koehler I watched my Grandma and my family suffer from the horrible disease Always up for a challenge I knew this would be a great way to again get out of my comfort zone plus raise awareness and funds to help find a cure for Alzheimers Alzheimer’s kills more that breast and prostate cancer combined There is a cure out there waiting to be discovered

My favorite way to serve is to host a “Day of Beauty” at local senior living and nursing homes It’s where I team up with my sister Queen from Global Continental Pageants, Sugarcoat Beauty and Gunn Glamour to treat the residents to a day of pampering. The ladies are treated to mini makeovers and then walk the red carpet wearing a sash, crown and flowers to take back with them Many of the women comment how they haven’t felt so beautiful in a very long time. It is so rewarding to see their eyes light up and smiles on their faces.

Last May, I met Kimberly Airhart. We attended a women's wellness event at the Bridge Community Center in Peachtree City. She had a table set up with swag items to give away in the color of teal She had educational cards about ovarian cancer symptoms to hand out to attendees. She shared her story with me of her diagnosis and treatment and the work that she does for Harts of Teal, a faith-based non-profit that she and another survivor started. I also learned she is the mother of five young children. She was in remission at the time we met Presently, the cancer is back, and she is undergoing treatment again Her faith is as strong as ever. Here is Kim's story, in her words, and how Harts of Teal began.

Feeling as if maybe the baby weight of my fifth child just didn't seem to go away is what I initially thought I was dealing with. After months of beginning to look like I was pregnant from bloating, constipation, and some pain in my abdomen, I began to worry that something else was going on The inside of my abdomen just felt tender, and I couldn't make sense of it. I have gotten ovarian cysts all of my adult life, so naturally, that is what I attributed the pain to. After a few weeks, I decided to see my gynecologist. My gynecologist administered an ultrasound and confirmed that I indeed had bilateral cysts on my ovaries My gynecologist sent me on my way, and a hysterectomy was the next step. After all, I had given birth to five children, so that can wreck your body.

After another month, my pain persisted, and I decided that what I was feeling (bloating, pain, constipation, muscle spasms in the center of my abdomen) was more than just my ovaries, so I went to see a general practitioner. He sent me home with acid reflux meds and told me to come back in two weeks if I didn't feel better He said, I would send you for a CT Scan to rule out the scary stuff, but I don't think that is good medicine right now. So three days later, feeling terrible, I called the office and asked for them to go ahead and schedule the CT Scan. Thinking at worst, this is just a gallbladder issue since my mom had that and what else could it be?

The results I could tell alarmed the tech conducting the CT Scan, but she wouldn't tell me anything She said, "You have some gynecological issues going on, but you don't want me to read this report, so just hang tight, and we will get you on the STAT list, you need to go to the doctor's office so he can go over this with you." I immediately called my husband, Chris, as I knew that this was not good news. While we waited to see the doctor, we just stared at this verse on the wall. "Do not let your hearts be troubled, trust In God"- John 14:1. I put my faith and everything in my being into that verse in those moments I never thought it would be an advanced stage of Ovarian Cancer This terrible feeling set in hearing those words, "You have Cancer," and I just felt heat radiate through my shoulders and down my entire body. The look on my husband's face was one I will NEVER forget. We both just cried and prayed. We went home to tell the children and my mom, who was visiting the unfortunate news. It was a very emotional and traumatic experience for all of us

Friends and family quickly surrounded us, and the next day, I was able to see a gynecologic oncologist. I am so thankful for good medical friends who came running to my side and wanted to help me get the best care So, within one week, I found myself in a biopsy and my first of 6 chemo treatments. In between the six chemo treatments, I would undergo what they call the Mother of All Surgeries (a complete abdominal debulking surgery and HIPEC administered directly into my abdomen HIPEC is an aggressive form of treatment that exposes the inside of your abdominal cavity to heated chemotherapy via catheters. The point is to hopefully kill any remaining microscopic cancer cells that may have been left behind in surgery. Your incision is temporarily closed, and you are shaken around to bathe your organs for 90 minutes. Then, your abdomen is reopened, and the organs are rinsed with saline. The entire surgery and HIPEC took eight hours The incision that was from the breast bone to the pubic bone was closed with 46 staples. The surgery was a rough 12-week recovery, but I was very blessed by friends and family for help during that time. Finishing my last chemo in August, I underwent my first posttreatment scan and was deemed NED. This stands for No Evidence of Disease. In Ovarian Cancer, the recurrence rate can be as high as 85%. So optimal debulking surgery, as well as chemo, is needed for a favorable outcome

One of the many projects to raise awareness helps educate our educators, it’s called Teal for Teachers. Each teacher is presented with a super cute insulated tote filled with a few little goodies. Kim always wanted to have a big family, and she recalls early on in her battle, thinking why would God give me a big family and take it away? Now, Kim looks at life through a different lens. About Ovarian Cancer

Ovarian Cancer is the #1 deadly cancer of the reproductive center. This disease is currently the 5th leading cause of cancer-related deaths in women Roughly 22,000 women in the United States will be diagnosed with ovarian Cancer this year. The risk of developing Ovarian Cancer each year is 1 in 78 Unfortunately, 80% of cases are diagnosed at late stages 3 and 4. There is currently no diagnostic test to detect Ovarian Cancer in its early stages. Our goal is to educate as many women as possible in our community about the signs and symptoms of ovarian Cancer and to be an advocate for your health.

Common Ovarian Cancer Symptoms:

Ovarian Cancer may cause several signs and symptoms

Women are more likely to have symptoms if the disease has spread, but even early-stage ovarian Cancer can cause them The most common symptoms include:

● Bloating

● Pelvic or abdominal (belly) pain

● Trouble eating or feeling full quickly

● Urinary symptoms such as urgency (constantly feeling like you have to go) or frequency (having to go often)

These symptoms are also commonly caused by benign (non-cancerous) diseases and cancers of other organs When they are caused by ovarian Cancer, they tend to be persistent and change from normal for example, they occur more often or are more severe These symptoms are more likely to be caused by other conditions, and most of them occur just about as often in women who don't have ovarian Cancer But if you have these symptoms more than 12 times a month, see your doctor so the problem can be found and treated if necessary.

Other symptoms of ovarian Cancer can include:

● Fatigue (extreme tiredness)

● Upset stomach

● Back pain

● Pain during sex

● Constipation

● Changes in a woman's period, such as heavier bleeding than normal or irregular bleeding

● Abdominal (belly) swelling with weight loss

Play Tennis, Make Friends, Live Life!

It all began in 2013 in Peachtree City with the question – “What else can we do?” Lyda Miller and four friends were meeting weekly to play tennis at the Peachtree City Tennis Center and then to share a Bible study together After meeting for a while, one of the friends, Sue McCabe, suggested they could do more to make a difference in the community and asked the question, “What else can we do?”

Sue had learned about the Special Populations Tennis Program (Special POPS) - an adaptive tennis program specifically designed to make available the sport of tennis to high-schoolage teens and adults with intellectual and/or physical disabilities The program first started in the 1990s by tennis enthusiasts in Roswell, Georgia

Together, Sue McCabe, Lyda Miller and their friends, with the help of volunteers they recruited, and Jim Hamm from the Roswell program, started a Special POPS program at the Peachtree City Tennis Center which has now grown to over 160 tennis players on the roster this year from all the Fayette County schools!

Schools transport students from high schools to the program, and are joined by students from Clearwater Academy and Joseph Sams School Home-schooled high schoolers and others from the community can attend as well. Athletes who have been a part of the program and have graduated from high school can continue to attend as adults

Special POPS is held at the Peachtree Tennis Center for six weeks, every Friday, in the spring and in the fall, based around the county school schedule The Tennis Center generously donates the use of ten outdoor courts, as well as three courts under cover, in the event of inclement weather

Special POPS volunteers are passionate about making tennis accessible to everyone, regardless of abilities The athletes are initially placed in levels, according to their current abilities, and can work their way up to more advanced levels Some of the students already know how to play tennis, but many have never played. Some may be nonverbal, but can run, while others are using walkers or are in wheel chairs According to Kimber Cardon (co-coordinator of the local program), “We meet the athletes where they are, and encourage a ‘can do’ spirit We praise them, cheer them on, and exchange ‘high fives’ with them, with the goal of making them smile every session!”

The Special POPS program is considered a training league to teach the athletes skills and give them time to practice those skills Another program offered at the academy is SPUDS (Special Population Unified Division), spearheaded by Dave Campbell and his team, that trains athletes to play and compete in doubles matches with a volunteer adult tennis player. The students who participate in SPUD have advanced to Level 3-5 in the Special POPS Program

One of the memorable perks of participating in Special POPS, as an athlete or as a volunteer, is the opportunity to go to the Special Olympics, held each May for tennis and other spring sports, at Emory University Any athlete can attend and play, either by participating in tennis skill clinics, or tennis matches It is the highlight of the year for many of the athletes!

How You Can Help

Special POPS has not only changed the lives of these special kids but the parents and other adults who volunteer with the program as well! Lyda Miller, one of the co- founders of the local Peachtree City program, agrees. “I was a P.E. teacher and being able to use my training and abilities in tennis and to give back is so meaningful. I never had worked with children with special needs before, but I love it, and it has been a blessing to me!”

Kelly Pickett, a parent of one of the participants, started out just enjoying watching her daughter, Abbey, participate in the program. According to Kelly, “In 2021, the Lord said to me, ‘it’s time for you to give back ’ I am a tennis player and I started volunteering on the Level 3 courts, and was then recruited to a leadership role My daughter with special needs is able to play a sport I played growing up because of POPS, and I am able to do it with her!” Kelly presently serves as the level coordinator, who assigns volunteers to work with the athletes at various levels

Co-coordinator of the program, Ray Gandhi, says of Special POPS, “It is a true blessing to give back and witness the smiles of the athletes and help build their confidence. This program creates a deep bond between the volunteers and the athletes from various schools.”

Kimber Cardon’s son, Luke, loves sports and joined Special POPS when he was student at McIntosh High School. He has participated in Special Olympics for several years A highlight for Luke and for Kimber was in 2014, when Luke and his adult unified partner, Lyda, won Gold! Luke went on to attend Kennesaw University in their special abilities program and helped manage the baseball and football teams!

After college, Luke has continued to participate in the Special POPS program. Kimber notes, “Luke looks forward to Special POPS more than anything else during the week It has helped increase his self-esteem He gets cheered All the kids are celebrated! Access to sports is difficult for these children I love these athletes I love their spirit and their heart They work hard to get here Even for some walking down stairs is hard. They are here with smiles. I am motivated and inspired by their hearts ”

Volunteering: Volunteers are always needed to assist during the six-week sessions in the spring and fall. Anyone who plays tennis and/or has experience working with children with special needs is appreciated, but you don’t have to play tennis or have experience with the special needs population to assist! There are many opportunities to interact with the children on the court without these qualifications. Volunteers are also needed to help with administrative duties

In-kind Donations: Donations of gently-used tennis rackets are another way you can help Every athlete who participates in the program gets access to free equipment to use during the Special POPS training, and all students graduating from high school get a racket to keep. Each graduate also receives a graduation cord to wear with their cap and gown on graduation day to acknowledge their achievements Organizations and businesses are encouraged to donate fun items for goodie bags that each participant receives on Celebration Day in April to applaud their accomplishments during the six week training

How to Make a Simmer Pot

Start by thinly slicing lemons. Then remove the chamomile buds from their stems by pinching the place where the bottom of the bud meets the stem

Fill dutch oven with 4 cups of water, and turn stove to medium heat

Place sliced lemons, sprigs of rosemary, and chamomile buds in the pot.

When the pot begins to simmer, turn the stove down to low heat.

Continue to simmer, uncovered for up to 2 hours Replenish water as needed to avoid the stovetop potpourri from drying out.

4 servings 35 minutes

INGREDIENTS

3 tbsp Salted Butter

1 Shallot diced

2 Garlic Cloves minced

1 tbsp Fresh Thyme Leaves

2 tsp Lemon Zest pinch Crushed Red Pepper Flakes

1 lb Short Cut Pasta

2 Whole Zucchini’s grated (about 2-2 1/2 cups grated)

1/2 cup Dry White Wine

4 cups Chicken Bone Broth

pinch Kosher Salt & Black Pepper

1 cup Whole Milk Ricotta

1/2 shredded Fontina Cheese

DIRECTIONS

In a large pot over medium heat, melt together the butter, shallot, garlic, thyme, lemon zest, and pinch of red pepper flakes. 1. Cook until butter begins to brown and garlic is fragrant. 2.

8 oz Rice noodles

3 tbsp Water, hot

Tex-Mex Chicken Salad Bowl

Teriyaki Salmon Quinoa Bowls

Grated zest and juice of 2 limes

1 tablespoon salt-free fajita

seasoning

Kosher salt

1 1/4 pounds skinless, boneless chicken breasts (about 2 large)

1 cup frozen corn, thawed

1 tablespoon vegetable oil

1 6-ounce package baby spinach

3 mini avocados (1 halved, 2 sliced) 1/2 cup buttermilk

Freshly ground pepper

2 cups assorted cherry tomatoes, halved or quartered if large

2 cups shredded red cabbage

1 1/2 cups tortilla strips

Prep and chop all of the vegetables Cook the rice noodles according to the package instructions and rinse them under cold water. While the noodles cook, make the peanut sauce Whisk together all of the ingredients until smooth and creamy Taste if for seasoning and add salt if needed Add a little olive oil to a large skillet and heat over medium-high heat Pat the shrimp dry with paper towels and season them with salt and pepper Add the shrimp to the skillet and spread them into a single layer Cook for about 1-2 minutes then flip them over and cook another minute or until they start to curl and are opaque. Remove the skillet from the heat To assemble the bowls, divide the rice noodles into bowls. Top them with equal amounts of the vegetables and shrimp. Drizzle on your desired amount of the peanut sauce Garnish with cilantro if desired and serve with a lime wedge

Preheat the oven to 375 ˚ . Combine the lime zest, fajita seasoning and 1/2 teaspoon salt in a small bowl; rub all over the chicken Heat a large nonstick ovenproof skillet over medium-high heat Add the corn and cook, stirring, until warmed through, 30 seconds; remove to a bowl Add the vegetable oil to the skillet Add the chicken and cook until browned, 3 to 4 minutes per side. Transfer the skillet to the oven and cook until the chicken is just cooked through, about 12 minutes Transfer to a cutting board to rest 5 minutes.

Meanwhile, combine 1 cup spinach, the halved avocado, buttermilk, lime juice, 1/4 teaspoon salt and a few grinds of pepper in a blender Puree until smooth Blend in 2 to 4 tablespoons water until thin enough to drizzle

Divide the remaining spinach among shallow bowls Arrange the corn, sliced avocado, tomatoes, cabbage and tortilla strips on top Slice the chicken against the grain and add to the bowls Drizzle with some of the dressing and serve the rest on the side.

1/3 cup plus 2 tablespoons soy sauce

1/3 cup plus 2 tablespoons mirin

(Japanese rice wine)

4 cloves garlic, grated

1 tablespoon minced peeled fresh ginger

2 tablespoons honey

1 1/2 pounds skinless salmon, cut into 1 1/2-inch pieces

2 scallions (white and light green parts only), sliced, plus more for topping

3 tablespoons vegetable oil

3 heads baby bok choy (about 1 pound), trimmed and chopped

6 ounces shiitake mushroom caps, thinly sliced

Grated zest of 1/2 lemon, plus wedges for serving

Cook the quinoa as the label directs. Meanwhile, whisk 1/3 cup each soy sauce and mirin with three-quarters of the garlic, the ginger and honey in a medium bowl Add the salmon and turn to coat Let marinate at room temperature, 15 minutes. Stir the scallions and the remaining 2 tablespoons soy sauce into the quinoa

Cover and set aside

Heat a large nonstick skillet over mediumhigh heat Add 2 tablespoons vegetable oil

Add the bok choy and cook until the leaves start wilting, 3 to 4 minutes Add the remaining garlic and the mushrooms and cook, stirring occasionally, until softened, about 5 minutes Add the remaining 2 tablespoons mirin and the lemon zest; toss to coat Transfer the vegetables to a bowl

Wipe out the skillet and increase the heat to high Add the remaining 1 tablespoon vegetable oil Add the salmon and about one-third of the marinade to the skillet (discard the remaining marinade). Cook until the salmon is golden brown and cooked through, 3 minutes per side Top each serving of quinoa with the vegetables, salmon and more scallions. Serve with lemon wedges.

Ingredients:

1 Bag of Frozen Peas - Cooked and Cooled

4 Slices of Bacon - Cooked and Chopped

1/4 Cup Extra Sharp Cheddar - Grated

2 TBSP Red Onion - Chopped

Dressing Ingredients:

1/4 Cup of Mayonnaise

1/4 Cup Ranch Dressing

2 TBS Apple Cider Vinegar

2 TBS Sugar

In a bowl whisk all dressing ingredients, set aside. In another bowl combine all salad ingredients. Drizzle dressing mixture over the salad, mix well, and enjoy!

Ingredients:

1 Cup of Cooked Shrimp - Shelled

1 Avocado - Chopped

2 Limes Zested & Juiced

3 TBS Red Wine Vinegar

2 TBS Honey

2 TBS Olive Oil

Salt & Pepper to taste

In a bowl, whisk lime zest, lime juice, vinegar, honey, olive oil, salt, and pepper. Set aside. In another bowl combine remaining ingredients

Drizzle dressing over salad mixture. Let marinate in the fridge for an hour, or enjoy immediately!

Champagne Margarita

(makes 2)

2 Limes Juiced

5oz Tequila

2oz Simple Syrup

Champagne Ice

Optional: Hot Honey & Salt Rim

In a shaker add all ingredients minus champagne. Shake, pour over ice. Top with champagne.

Jalapeño & Pimento Cheese

Baked Smash Tacos

1/2-1LB Ground Beef

1/4 Cup Pimento Cheese

Pickled JalapeñosSliced

1 TSP (ea.) Salt & Pepper

1 TSP Ground Cumin

4-6 Soft Tortillas

For the tacos, in a skillet over Med-High heat add in ground beef, salt, pepper, and cumin Cook until meat is browned and cooked through. On a soft tortilla layer pimento cheese, jalapeño, and ground beef. SMASH. Bake at 400° for 5-10 minutes until cheese is melted and tortillas are slightly golden brown. Top with smash sauce any preferred toppings

(Smash Sauce)

1 cup Mayonnaise

1/4 cup Ketchup

2 tsp Garlic Powder

2 tsp Onion Powder

1 tsp Paprika

1/8 cup Sweet Relish

1 tbsp Apple Cider Vinegar

Mix and let sit in the fridge until ready to use

(Immediately up to 4 days)

Burgers

Ingredients:

1/4 Burgers - seasoned to your liking

Fresh sliced Mozzarella

Fresh Sliced Tomato

Premade or Homemade Pesto

Brioche Buns - buttered on both sides

Optional: Balsamic Glaze

Grill your burgers, once they are half way done add 2 slices of mozzarella, finish cooking burgers to your desired liking. Once you have turned off your grill, add buttered brioche buns for 5 minutes with the grill lid closed

On your grilled buns add your burgers, topping the mozzarella with pesto and tomato. (Add in balsamic glaze if desired)

Mexican Style Chicken Salad

(Salad Ingredients)

2 Cups Cooked Chicken - Chopped

1/4 Cup Cooked Corn

1/8 Cup Red Onion - Chopped

1/8 Cup Cherry Tomatoes - Quartered

1/4 Cup Cilantro - Chopped

(Dressing Ingredients)

1/4 Cup Mayonnaise

2 TBS Taco Seasoning

Some of the challenges I've faced have mostly been with maintenance of the bar Parking a trailer/camper isn't easy!

The future of The Little Sober Bar is a little bit, hush hush. However, I can share that our goal is to service a radius outside of Cherokee County and into Fayette County We are also co-hosting an annual music festival on June 8th to celebrate the joy of having options Not A Typical Festival will be held in the heart of Downtown Woodstock, GA featuring a multi-genre live music or silent disco option. We aren't stopping there, we'll have activities for both introverts, activities for extroverts, vendors, food trucks, and our donation station supporting five different non-profits.

People are often amazed by our wide selections and walk up to the bar with the most common statement being "So, I'm curious..." Which is my favorite because our tagline "Stay Curious" encompasses our core values and it just fully circles that whole concept

Ingredients

• 1/2 cup fresh watermelon chunks

• 2 slices of lime

• 1 sprig of fresh mint

• 2 ounces white rum

• 1/2 ounce simple syrup

• 3 ounces soda water

In a glass of choice muddle the watermelon, mint, and lime. Add ice.

Then add rum, simple syrup, and top it off with soda water. Stir and enjoy.

Add a couple piece of watermelon in for addition color/garnish.

• 1 cup water

• 1 cup sugar

• 1/2 cups fresh dragon fruit peeled

• 1 cup freshly squeezed lemon juice

• 2-3 cups cold water

• Optional Garnishes: Extra dragon fruit, lemon, wedges and mint

Prepare a simple syrup by whisking 1 cup water and 1 cup sugar together over medium heat until sugar has dissolved Remove from heat and cool completely

Place the prepared dragon fruit in a blender and pulse until desired consistency is reached.

Add the cold water, lemon juice and simple syrup to the blender and pulse just until combined, being careful not to overmix. Pour over ice and enjoy!

PPeach each lemonade

7-8 medium peaches peeled, pitted and diced

1 ½ cup granulated sugar

5 cups water

1 ½ cups fresh lemon juice about 8-9 lemons Optional* fresh mint for garnish

Add sugar and water into a small saucepan over medium heat and bring just to a bowl then reduce to a simmer Stir until the sugar dissolves in the water to create a simple sugar syrup. Remove from the heat and cool to room temperature

Add the diced peaches to a blender or food processor and puree until smooth

Combine the cooled sugar syrup, peach puree, water and lemon juice in a large pitcher or container and stir well to combine

Adjust water and lemon juice to taste

Chill in the refrigerator until ready to serve or pour over ice and serve immediately, enjoy!

Raspberry Southern Sweet Tea

3 Black Tea Bags like Lipton

8 cups Water divided

1 cup Sugar

12 oz Raspberries

Bring 4 cups water to a boil.

Remove from heat.

Add tea bags and allow to steep for 15 minutes

Add 4 cups water to medium pan

Add sugar and raspberries and bring to a boil over high.

Reduce heat to medium and squish raspberries while continuing to cook for 10 minutes

Remove from heat and strain through cheesecloth or strainer, discarding berry pieces.

Combine both in a large pitcher and serve over ice ENJOY!

2 cups Extra Fine Granulated Sugar

4 cups hot water

5 cups cold water

1 cup fresh lemon juice

1-2 lemons, sliced Ice

4 cups fresh blueberries

In a large pitcher, stir sugar into hot water until dissolved.1

Add in cold water and lemon juice Stir 2

Chill until ready to serve.3

Slice one or two lemons, and add slices to pitcher right before serving 4

To serve, add blueberries to a bowl and microwave for 30 seconds Muddle blueberries, strain juice into another bowl 5 Fill glasses with ice.6

Add 2 tablespoons blueberry juice to each glass, pour lemonade over ice Stir and serve

In a large pitcher, combine the canned chopped pineapple (and juice), white wine, coconut rum, and maraschino cherries

Dixie LeeThe BloomsBeyond the Gate

At the Farm Beyond the Gate, in Fayetteville, GA , tucked away behind fences and quaint garden gates, lies a mystical world of daylilies, designed by daylily enthusiast, Dixie Lee From spring through fall, her landscape explodes in a kaleidoscope of color from thousands of blooming daylilies, in all shapes and sizes, which flower at different times throughout the growing season According to Dixie, daylilies are as varied as people Some stand tall, while others are small Some are fragrant Some have single blooms, while others have double blooms The color choices are endless – vibrant reds, golds, yellows, and oranges are mixed with the palest pastels Variegations of multiple colors are another prized feature of daylilies. Each morning with cup of coffee in one hand, garden clippers hooked on her belt and her dogs at her side, Dixie Lee tours her five gardens in anticipation, to see what new treasures will awake to greet the new day Since each daylily bloom lasts only one day, every day in the garden brings a fresh perspective and new surprises Dixie and husband, Glenn, often stroll around the garden together, so as not to miss the early morning show Glenn is a partner with her in the garden – the fence builder, raised-bed builder, and master craftsman of all their projects

Dixie Lee is proud of her “old Fayette County” roots. Her family has owned their 50-acre farm in Fayetteville for over 100 years and has left its stamp on local history Her parents both graduated from Fayette County High School, as did Dixieand both her children Her dad planted the pine trees and planked them to build the family home on the farm, where Dixie grew up The home was featured in a 1959 issue of Better Homes & Gardens

In her youth, Dixie always worked in the dirt! “I understood the importance of good dirt from my dad who was an agricultural engineer I just love plants ” Her mom, who started planting and propagating daylilies after she retired as a nurse, was the inspiration for Dixie’s love of daylilies

A graduate of the University of West Georgia in Elementary Education, Dixie started teaching when she was just 20-yearsold, and enjoyed a 30- year teaching career at elementary and middle schools in several Fayette County schools She still runs into former students who remember her fondly “Some are hard to recognize,” notes Dixie, “because some of my former students are now in their 60s!”

Dixie's Daylily Gardening Tips:

It really is all about the dirt! Amend your soil Give a daylily room to breathe Mix our native clay soil with a generous mixture of Milorganite and pine bark mulch

Plant your daylilies in full sun (6 or more hours a day) for prolific blooms Depending on the size of the daylily, plant each fan 18-24 inches apart

Start small. Get three daylilies - an early, mid and late bloomer.

When planting, dig a wide hole and mound some dirt at the bottom of the hole Plant your daylily fan on the mound of dirt, spreading out the roots over the mound Pack more soil around the plant Water well

• Research each type of daylily you plant, and place a name tag by each plant to recall the name and information about that specific plant You can do research through the American Daylily Society: daylilies org Oakes Daylilies has information on how to plant and maintain daylilies at: oakesdaylilies com

Dixie’s own home, where she reared her two children, and she still resides, was built on the family farm in 1975, and is now surrounded by a lush garden of daylilies and rustic garden focal points that honor the history of the farm She recalled of her children’s childhood, “Jason and Julie learned very young to drive a tractor, to work with their hands and to use their heads!”

Dixie’s first daylily bed started with her mom’s insistence that Dixie just needed to have a daylily garden! One day Dixie came home from work to discover her mother and a handy man with a tiller had started to build Dixie a garden While the garden was beautiful, it was not fenced, and the deer soon ate the daylily buds and kicked around the signage that identified each plant

With the help of Glenn, Dixie started over with a new, fenced garden Years later, when Dixie finally retired from her career in public education and as a traveling literacy consultant, she decided to build upon her already growing number of daylilies This time with her husband behind the tiller, with the help of her children and grandchildren, and with her mother in her ear, two hundred more daylilies went into the ground and Beyond the Gate Enterprises, LLC officially began At present, Dixie oversees five gardens of daylilies on five acres and maintains 1,200 registered cultivars, adding more all the time!

During the peak blooming season, from the end of May through the end of June, Dixie invites individuals, families and groups to come enjoy her garden, by making an appointment to visit Some people come each year just to wander around,enjoying the beauty, while others come to shop, hoping to begin or add to their own daylily collections. Attendees can purchase daylilies directly from Dixie’s garden Dixie provides a price list for the specific day lilies that are for sale, and she will later dig them up and deliver locally or ship them
