UPBEAT AMBASSADORS FOR AGRICULTURE

Heidi Zwinger is a natural ambassador for South Dakota’s farmers and ranchers. Her life experiences all seemed to be leading her to the role of outreach director at Ag United for South Dakota. She was raised on a dairy farm, employed for 18 years at Boadwine Dairy, has shown dairy cattle for nearly her whole life, participated in 4-H and FFA (and provided years of volunteer leadership) and graduated from the South Dakota Agriculture & Rural Leadership program.

But be sure to give a share of the credit to her gregarious parents, Royal and JoAnn Selken. They enthusiastically participated in the State Fair’s adult dairy showmanship contest which includes themed costumes, plus the couple dressed up on Halloween for many years. Parents like that are sure to hand down a good dose of their outgoing nature to their children.

In fact, they’ve still got a storage shed half full of Halloween costumes “just in case.”

Heidi’s genetically-inclined upbeat and no-fear attitude is put to use as an apostle telling the good news of American food and agriculture. At the same time, Ag United educates lawmakers and citizens that environmentally-sound farming practices, and livestock production specifically, are vital to the economic interests of all South Dakotans. The organization works to help producers navigate the paperwork trails which

need to be conquered in order to start or expand livestock facilities in a county.

“At Ag United, we’re passionate about promoting agriculture,” she said. The organization is a coalition of farm organizations who pool checkoff and non-checkoff dollars to fund consumer and regulatory outreach. “When we think about the modern farm, big doesn't mean it’s bad. In fact, sometimes when I look back at what we did when we milked cows here, compared to how the cows are cared for at a place like Boadwine Dairy now, it’s just so much nicer of a place to be. There is better temperature control and ventilation, and there’s just more people there to take better care of cows.”

Ag United Executive Director Steve Dick recruited Heidi to be the outreach director in fall 2020 because he valued what he’d seen in her as a volunteer giving tours of Boadwine Dairy and working with the Adopt-A-Farmer program.

“Consumers are now getting two or three generations away from the farm,” Heidi said. “People don’t understand the amount of work that’s entailed, the amount of risk farmers are at from the markets and weather; and the investment of time, capital and technology.”

Heidi’s ability to tell the story of farming and agriculture probably started at the Sioux Empire Fair and the State Fair 30-some years ago when she was tending cattle in the dairy barn and consumers would come by to see the cattle. Their questions provided the gateway for her to tell the story of

getting started in 4-H; followed by middle daughter, Heather, and, finally, Heidi. There were nearly 40 consecutive years of Selkens showing at the State Fair; and approximately 50 years out of the last 60 that the family was competing.

When her parents sold their dairy cows, about half of them went to Boadwine Dairy in Baltic. After working off the farm for a year, she followed the cows there and took a position feeding calves.

The Boadwine operation grew substantially in the 18 years she worked there. And, even though her parents shut down their dairy, Heidi didn’t quite let go, buying back a few cows which are milked at Boadwine and she keeps a few head of heifers on hand so that the

family can continue to have dairy calves to show. She can remember the birth date and names of dairy cows born 30 years ago even though she might forget what she ate for breakfast today.

Heidi’s father and his sister started showing dairy calves in 4-H in 1960. Royal grew up on a farm near Arlington where he and JoAnn farmed and milked until 1988.

About the time Royal’s younger brother was finishing his years of showing, then Royal and JoAnn’s oldest daughter, Jennifer, was just

Brody and his team from Tri-Valley High School recently won the state FFA ag sales LDE. Next October, they will compete at nationals in Indianapolis. “It’s exciting that a team of sophomore boys is enthusiastic enough to put the work into it and bring it to the goal line. Brody has good leadership skills just like his mother,” JoAnn said. In addition to the ag sales LDE, Brody also takes part in the FFA Natural Resources CDE, which involves identifying plants and animals plus knowing laws related to the environment, land preservation and hunting.

JoAnn does a lot of the feeding of the family’s small herd of dairy heifers and calves. She enjoys having physical chores to do outside (except in the really cold

weather). She retired from a job at Montrose Schools after the Covid shutdown in 2020. Last summer, Royal retired as a trucker hauling gravel. Royal, JoAnn, Heidi and her husband, Mark, volunteer to help with career development events for Tri-Valley. Heidi is also active in Farm Bureau, the League of Women Voters and the Sioux Falls Area Chamber of Commerce Ag Committee.

Mark has worked for John Deere dealers for more than 27 years, including 24 years at the parts desk of C&B Operations in Mitchell.

Heidi joked that he’s the most popular parts man in the area, with customers being known to circle the interior of the dealership until he is available to help them.

“When I go to the Mitchell area and I tell people I’m married to Mark Zwinger, then it’s like I’m married to this celebrity.”

The couple attended the NCBA convention in San Antonio several years ago where Heidi accepted a Beef Quality Assurance-Dairy award on behalf of Boadwine Dairy.

Mark attended one of the breakout sessions on advocacy at the urging of a customer who told him he was an “influencer.” The customer told him: “You know people and people know you – people trust you and they’ll believe what you tell them.” Heidi agreed: “You don’t realize how much outreach each of us can do. For Mark, that might be somebody buying mower parts or some random person he meets at the fair.”

Mark is an expert at grilling and smoking meat. He is frequently grilling for fundraisers and 4-H gatherings. His breakfast sandwiches are a favorite of families who stall near them in the dairy barn at the South Dakota State Fair. A 4-H’er from

services. Mark said, “You know you might be a redneck if you’re married by the veterinarian.”

Mark’s brisket is a far cry from the food Heidi experienced in 2020 while on a trip to Vietnam and Cambodia as part of the SDARL program. At a market in Cambodia, “there were scorpions and worms and bugs you couldn’t name for sale. Ag is on a much smaller scale there and more primitive. We think of corn and soybeans and cattle.

For them, it’s fruit, vegetables and fish; and some dairy. But we also saw a cricket farm – which was like a garage that raises millions of crickets (for human consumption).

It kind of gave me the heebiejeebies. They had silk worms in little shacks – that was a farm to them,” she said.

Andover even hired him to make the sandwiches for his high school graduation party.

Heidi joked, “I tell people that after I met Mark everybody in my family gained 20 pounds – not because we don’t have any self-control, but because Mark’s a really good cook.”

At a party in summer 2017, they decided to hold a surprise wedding for themselves. It was tricky getting

a few family and friends there without spilling the beans, but “as soon as my family knew Mark was going to be smoking brisket, that’s all it took to get the Selken family together,” she said.

While those East Asian farms were rudimentary by U.S. standards and aspects of the country were disturbing, she said, “If these people came to our country, they’d probably be appalled by how much food we waste. We buy, buy, buy; and if it’s outdated, we just toss it. In U.S. agriculture, we’re good at making a lot of food and – even though food prices have gone up recently – we still really have a safe, affordable food supply. And people take it for granted.”

KEEPING LOCAL HISTORY ALIVE

THE HUTCHINSON COUNTY CATTLE WAR

As a small child I remember hearing a fascinating story that took place only a short distance from the farm I still live on. It was about a shipment of dairy cattle that were gathered in the area to help with the need for milk in Germany after World War I.

County and neighboring counties decided to take part in the humanitarian effort. Lutheran Church Missouri Synod congregations, including Pastor Heinrich Friedrich Wilhelm Gerike of the Emmaus Lutheran Church congregation in Tripp, helped promote the effort. Oscar Brosz of the Tripp bank and Reinhold Dewald of the Freeman bank were among those who collected funds to help pay for the shipping of the cows.

The milk shortage materialized from the stipulations in the Treaty of Versailles. One of the stipulations mandated Germany to replace livestock destroyed in France and Belgium during the war. Consequently, in 1920, the treaty forced Germany to pay the allies 800,000 dairy cows as reparations. With a low supply of milk, death rates from tuberculosis and infant mortality had doubled since before the war. Many members of my family were victims of tuberculosis including my grandfather, an enlisted soldier in The Great War who would eventually die from the disease.

On Wednesday, March 23, 1921, approximately 700 cows were gathered near Tripp and another 300 cows were gathered in the area that is now the rodeo grounds in Scotland, S.D. The cows came from many communities, including Forestburg, Artesian, Woonsocket, Dimock, Parkston, Hillside, Corsica, Armour, Delmont, and Avon.

German-American populations in several parts of the United States sought to provide relief by donating dairy heifers and calves to people who were suffering in their ancestral nation. The large German population centered in Hutchinson 12

During the night, only four men were watching over the cows at Scotland when about 25 automobiles packed with ruffians and 30 men on horseback arrived and began shooting in the air to stampede the cows. Several cows were killed and some wounded, mostly when

they were hit by automobiles.

Reports said that American Legion members and other ex-servicemen from Bon Homme County were protesting the shipment and had caused the stampede. They were angered the cows were being shipped to the country’s recently defeated enemies, the Germans.

(The local American Legion chapter soon disclaimed any organizational responsibility and criticized the unlawful actions.)

Volunteers arrived to help herd the scattered cows. However, after the cows were corralled, authorities from the town of Scotland and Bon Homme County ordered the cattle out of the county. So the livestock was herded to a farm near Kaylor where the Gustav Freitag family lived (the current home of Kenneth Ochsner). The seriousness of the event was apparent when a call was placed to a Scotland undertaker who was told to "Send a hearse to Kaylor. There will soon be a number of dead here."

March 24, 1921, was Maundy Thursday. The cows were gathered in a perimeter protected by 200 or so area men.

They were led by Sheriff Karl Schmitt of Tripp and Lt. Ewald Gall of Menno. I recall the story of how Sheriff Schmidt came into Kaylor to get shells for the men and when the clerk was not being helpful, the sheriff took it upon himself to gather the needed shells.

Women in the neighborhood prepared coffee and sandwiches while children were sheltered as best they could. One woman I spoke with shared how she was sent upstairs a few miles from where the cattle were held – she watched out the window and saw a huge line of car lights. The Scotland Journal reported that, when the automobiles reached the Freitag farm, the Legionnaires found they were outnumbered four to one, both in men and guns. They were met by Sheriff Schmidt and Lieutenant Gall who warned them the first man crossing the fences would be fired on by the posse of at least 200 farmers.

The night ended peacefully and, on Good Friday, the cows were herded to Tripp and held at what is now the fairgrounds until being loaded onto a train for their shipment overseas.

American Legion members and chapters in Iowa protested the shipment of cattle as they were transported by rail to Sioux City. They also attempted legal maneuvers to prevent further shipment. However, the trainload of heifers and calves left Sioux City without incident and picked up more stock from Wisconsin when it stopped in Chicago. The final count

Two cities are quickly encroaching on their small farm, but Ned and Bobbi Jo Horsted have big dreams of feeding their future urban neighbors.

Horsteds’ farm – called Nom Nom Gardens – is situated in northern Lincoln County where rural land is quickly being gobbled up by the cities of Harrisburg and Sioux Falls. When the two cities meet on Southeastern Avenue, residents will be welcomed by an acreage rich with fresh produce all year long. Ned and Bobbi Jo expect their farm will succeed by combining a love of locally-grown food, sustainable production practices, application of technology, and good old-fashioned hard work.

Often, the term “sustainability” is equated with old, labor-intensive farm practices. But Horsted’s are flipping that on its head with the combination of two modern practices – a geothermal greenhouse and aquaponic agriculture.

Be advised that while they take their business seriously, they want to ensure visitors have a pleasant experience. That starts with the name. “The name is always funny for folks. I’m like a five-year-old and I call food ‘nom-noms.’ Ned didn’t

think I was serious when I suggested that as a name for the business,” she said. But Ned found the “Nom Nom” name fun. Bobbi Jo said, “We try to make it as fun as we can and make it accessible for people.”

Six years ago, the couple moved to the farm and began building a geothermal greenhouse four feet below grade.

“Geothermal” means “earth-heat.” The system they use was created by Russ Finch more than 35 years ago to heat his home in western Nebraska. Finch says his system is best defined as a “geo-air” system because it uses air, not water or anti-freeze, to collect, circulate and store the geothermal energy. Upfront costs are 50 percent less than other geothermal systems and maintenance costs are 90 percent less. Expenses per BTU are lower than solar cells or wind energy.(1) The air flowing through the system heats air in the greenhouse in the winter and cools the greenhouse in the summer.

About 20 years ago, Finch applied his geo-air concept to a greenhouse and he’s been successfully harvesting vegetables, flowers and citrus fruits all year round ever since. “The whole reason we moved out to the country was to build one of these greenhouses. You could put these up in a food desert anywhere and crank out the food,” said Ned. Prior to moving to the country, Horsted’s had started Nom Nom Gardens while they still lived in Sioux Falls.

they started in Sioux Falls. Aquaponics is a food production system that couples aquaculture (raising aquatic animals such as fish in tanks) with hydroponics (cultivating plants in water) whereby the nutrient-rich aquaculture water is fed to hydroponically-grown plants, where nitrifying bacteria convert ammonia into nitrates.(2) Ned said their aquaponic system starts at the fish tank which includes hybrid bluegills. Fish excrement moves from the tank as a nutrient-enriched fertilizer and is then gravity fed into the chamber below the plants, allowing the roots of the lettuce, tomatoes, strawberries, and celery to feed directly from the enriched water. The plants, in turn, clean the water before it is pumped back to the fish tank.

Unlike most small produce growers, winter is Horsted’s most productive season in the greenhouse.

When consumers are at their crankiest from the long winter months, Ned and Bobbi Jo offer a healthy and delicious selection of fresh, locally-raised fruit and vegetables.

Bobbi Jo said the tomatoes are growing as perennials in the greenhouse and re-planting is rarely needed.

“We just cut them back and they keep producing fruit. Sometimes we don’t do a lot of trimming and we just let things go wild.” She said lettuce, tomatoes, and strawberries are their winter-time staples from the geothermal greenhouse. They do come up short on strawberries regularly because their 5-year-old son, Dean, eats them faster than they can sell them.

Ned added, “We’re still experimenting to find the right crop mix for us and the system.”

pretty successful last spring and we’ll do that again this year. It worked great to have people order online and we held their purchases in the greenhouse until they were ready to plant.

“We learned a few lessons, of course. We planted too many of the super spicy peppers and had too many varieties of tomatoes. We planted 37 varieties of tomatoes last spring – now we’re narrowing it down to 10 varieties. We also had 42 varieties of peppers. It was pretty ridiculous – one of those farming mistakes you learn from. We’ll scale it down, but will do it again.

Seeing pictures of our plants growing in other people’s gardens is amazing for us. Plus it’s a good value-added sale. We make more money from a seedling than we do from a pound of tomatoes. It was rewarding, filling a need for folks I didn’t know was there,” she said.

They have had requests for many herbs, native plants and flowers.

If the weather and Covid cooperate in the spring, they’re also hoping to launch a farmers market on their property. “The farmers markets we have in the Sioux Falls area are amazing, but I feel like we always have room for more,” said Bobbi Jo. “We love sharing our space with others.” She wants to invite other produce growers plus local crafts people and people who make products such as jams and jellies.

Horsteds have a limited number of farm-fresh eggs available for sale. “We always have more demand for eggs than we have production. But we don’t make much money from eggs. Chickens are expensive to have. Ned dies a little inside when we have to fill our big feeder,” she said.

In their outdoor garden, the couple has perennial berries, elderberry, rhubarb, corn tomatoes, peppers, okra, beans, and wild flowers. In the past, they grew a few hops for some home brewing. “We have five acres that we’re going to slowly convert to wildflowers and native grasses,” she said.

They’ve had setbacks, such as the greenhouse power failing when they were away from home on a sunny day in July. With the outside temperature in the 90s, it was hot enough to kill almost everything. Ned estimated that, with the exhaust fan not running, the temperature in the greenhouse rose 30 or 40 degrees or more.

Bobbi Jo said, “Not everything in farming is cute and pretty and perfect. The operation comes with challenges, just like there is at any scale of farming.” Ned added: “But the plants always come back, so we’ll still have the privilege of doing this.”

Other things in the works or being discussed for the long-term include: •

“We’ve planted an orchard right next to the chicken barn – we’ve put in apples and peach trees the last couple of years. That will be a really cool regenerative system where the chickens can go in and fertilize the trees and have apples to eat,” Bobbi Jo said.

One of their best kept secrets is that Nom Nom Gardens has an affordable venue for weddings and other events. The couple has a clean, decorated machine shed which is set up to host such events. They have a license to serve beef and wine onsite.

Bobbi Jo grew up in north Sioux Falls and Ned grew up on an acreage near Harrisburg.

The couple met at the University of South Dakota’s D-Days celebration when Ned was enrolled at Augustana University and Bobbi Jo was enrolled at USD. They shared a passion for political activism. They have been together for 15 years and were married in 2013. They moved to the farm six years ago.

Ned also serves as the executive director of the Cannabis Industry Association of South Dakota and as a recruiter for R&P Group, a recruiting firm specializing in Fintech, a new technology in financial services and payments. Bobbi Jo performs much of the plant care on the farm, especially in the outdoor gardens. She gives regular tours of Nom Nom Gardens, and is involved in training and supporting others considering small-scale farming.

“Our greenhouse is more than produce,” Ned said. “It’s looking to the future and building a community where anyone can have access to good food every day, year round, no matter what time of year it is, regardless of location, weather or climate.”

John and Sara Wipf of Oak Lane Colony farm land in northwestern Hutchinson and southern Hanson counties. Oak Lane was started in 1986 after several families spun off Rockport Colony, where John was born. Sara is originally from a colony near Britton, S.D., close to the North Dakota border. This year, John and Sara celebrated their 43rd wedding anniversary along with their eight children and 17 grandchildren.

John has served as the business manager of the colony since 1986. He oversees the financial decisions for all the farming and business operations that support the 31 families and 138 individuals living at Oak Lane. John is part of the leadership board along with three others that make all the major decisions for the colony. “In order for a colony to work well, communication is the absolute key.

Without great communication, things can and will go wrong and do so quickly too,” he said.

When it’s your livelihood that counts … count on me.

John added that trust and honest communication is vital.

It was explained to him at an early age that if someone tells a lie, it takes seven more lies to cover for that one lie, and those seven lies have their own webs that need to be covered. So, it's best to be honest and always follow that rule, especially in a society where so many families are depending on each other.

These principles have served Oak Lane well as the colony has been successful and grown in spite of many challenges over the years. One of the more memorable instances was a storm in 1997 when straight-line winds damaged many homes and barns on the property. After the storm, over 200 people from neighboring colonies came to help rebuild and clean up the debris. “There was a silver-lining that came from that storm, however,” joked John. “At least five marriages and subsequent families blossomed from relationships formed cleaning up after that storm.”

John’s wife, Sara, also has a leadership role at Oak Lane as the head cook. She oversees the production of three meals a day for all the residents and any guests that can and often do stop by for a meal. Oak Lane is known for their baked goods and buns which Sara and the women produce for their needs. They often also bake for area events and gatherings.

The colony is also known for the smoked ribs they produce.

In 2021, they cooked over 2,200 pounds of ribs to fill orders from customers.

Feeding 31 families rarely stops when you’re part of a largely self-sufficient farming colony.

The lineage of Oak Lane traces through Rockport Colony, founded in 1934, and back to the first Hutterite Colony in Dakota Territory: Bon Homme Colony, founded in 1874. Over the last 150 years and many generations, the basic doctrine of Hutterite religious principles have remained the same. However, there are things on a colony like Oak Lane that have certainly evolved.

John said the long-term success of Oak Lane or any colony is dependent upon several factors.

The most important is to ensure young people are educated properly and that the colony is set up for long-term success. “When we build a new barn, we build it so that our grandchildren will one day use that same barn,” he said. “We try to use the best materials we can to make sure it's done right the first time.”

Oak Lane grows corn, soybeans, and alfalfa along with raising beef cattle, turkeys, and a farrow-tofinish hog operation. They also have 300 head of Jersey cows which will be transitioning to a robotic milking operation this year. Diversification is important in any business, and Oak Lane exemplifies that.

John believes it is important to be a good neighbor locally and within

the larger community as well. He served on the South Dakota Pork Producers Council Board for 16 years and has attended numerous state and national conferences representing South Dakota producers. Oak Lane also hosts annual visits from the USD Medical School. College students learn about the Hutterite way of life with the goal to educate the state’s future doctors on how to understand and better treat various populations of patients.

One of the biggest challenges that all Hutterites face is that many times people outside of the colonies don’t understand or are unfamiliar with who the Hutterites are. One common misconception is that Hutterites acquire more land than they need. “Our businesses are centered around agriculture.

In order to provide for the 31 families and 138 people in our colony, we need acres of land to do that,” John said. As agriculture has evolved, it is common for a non-Hutterite family to farm several thousand acres and sometimes in excess of 10,000 acres. At Oak Lane, approximately 300 acres are farmed per family.

The long-term goals for John and Oak Lane are pretty simple: They want to stay true to the Hutterite doctrine and live the Christian principles they value and pass them along to their children. If they are blessed with success and the colony continues to grow, then one day they too might spin off another colony as they did from Rockport 36 years ago.

DIRECTIONS: 1. Place steak between 2 pieces of plastic wrap and pound with a meat mallet until 1/4" thick.

2. Set up dredging station: In one shallow bowl, whisk together milk and egg. In another shallow bowl, whisk together flour, cornstarch, and spices, then season with salt and pepper.

3. Dredge each piece of steak in milk then in flour mixture.

Repeat until all steak is coated in breading. Place in fridge while you make gravy.

4. In a large skillet over medium heat, melt butter. Add flour and cook until golden and bubbling, 2 to 3 minutes. Whisk in milk and season with salt, pepper, and paprika. Bring mixture to a simmer and cook until slightly thickened, 3 to 4 minutes.

Remove from heat.

5. Cook steak: In a large skillet over medium heat, heat 1/2" to 1" oil until hot but not smoking. Fry each piece of steak until golden, about 4 minutes per side. Drain on a paper towel lined plate, and season with salt and pepper while hot.
