don’t know about you, but the first images that come to my mind when I hear someone say “Big Island of Hawaii” involve surfing, pineapples and hula dancing. Definitely not cattle ranching. But reading Melissa Hemken’s article in this issue entitled “Big Island Beef” has changed all that. Melissa’s story and stunning photographs depict the daily challenges of Sara Moore, the ranch manager of the Kealia Ranch in the Kona region, a cattle ranch of 10,000 acres which climbs from sea level to 7,000 feet in elevation. Here’s a quote describing one of the many considerations that come with ranching on the fertile surface of ancient lava beds: “We breed and raise our horses up here. They know the locations of lava tubes (truck-sized tunneled cavities) and tree molds (deep shafts). A lot of people use ATVs now to herd their cattle. We can’t, because we need two eyes on the ground and two eyes on the cattle. You’re always riding 20 feet in front of yourself, at least. We rely on our horses to carry us safely. “It’s a bushwhack to ride across most of Kealia’s pastures. The understory of ferns and shrubs rise to the level of a horse’s head. Stock dogs are essential to locate cattle. Moore’s five dogs form an eclectic pack: Catahoula, Border collie, Kelpie and Heeler. “‘I’ve had two dogs fall into tree molds,’” she says. “‘Luckily, I found them. To get them out, you drop the end of your lariat into the mold. Then you get the dog to walk through the loop to hoist her out.’” As you readers in the high country are “hoisted out” from snow drifts into the first welcome signs of spring, we’re moving into the same transition here in Central Texas. Soon the redbud trees will burst into bloom, followed by mountain laurels, (with their pungent fragrance of grape jelly), and then, suddenly, it will once again be spring. We here at Farm & Ranch have had our own transitions, as our magazine and website continue to grow. Registration is open for the Industrial Hemp–Impacts to Real Estate course being offered on Friday, April 17, 9:00am–1:00pm. The class will be held at the REALTORS® of South Central Kansas facility in Wichita. Class is approved for four hours of elective CE credit in Kansas. All the information can be found on the chapter website.

RLI Minnesota Chapter hosted a successful national course with the RLI Iowa Chapter in January! Great turnout and networking. The chapter’s first quarter 2020 conference call was held in January; consensus there is low inventory of all types of land to meet demand. Annual conference upcoming late July.

OKLAHOMA CHAPTER The chapter held a very successful Recreational Land Real Estate class in February. Thirty attendees learned the tools needed from instructor Justin Osborn, ALC, to work with buyers and sellers for the various types of recreational properties. COLORADO CHAPTER RLI Colorado Chapter will be meeting on May 7–8 at the Antlers Hotel in Colorado Springs. Kealia Ranch is all about lava, good cattle, grass and adapting— Hawai’ian-style

Beach trippers know Hawai’i for its surf and tropical flowers. The same mild island climate that attracts tourists is also conducive to cattle ranching; cattle rank as the state’s third largest commodity. Raising cattle on an island limits market access, but an advantage is year-round grazing. In 1915, the McCandless family established the Kealia Ranch—now owned by descendant Elizabeth Stack—near Captain Cook in the Kona region of the Big Island. Volcanoes raise the Big Island from the ocean. The ground consists of solid ‘A’ā and Pāhoehoe lava. Trees and plants tenuously grow from decayed organic matter caught in lava crevices. Most of the island’s plants are non-native. The African kikuyu grass grazed by Kealia cattle is a nonnative 18-percent protein tropical

forage planted for domestic cattle grazing. The 10,000-acre ranch gains 7,000 feet in elevation in its 10-mile stretch from ocean to mountain summit. The country is steep and lava rough. Horses must be shod at all times. “Everybody learns to shoe their own horses,” says Sara Moore, Kealia Ranch manager. “We carry nails and shoes on our saddles. Because if you lose a shoe out in the field, you’re pretty much stuck. “We breed and raise our horses up here,” Moore continues. “They know the locations of lava tubes [trucksized tunneled cavities] and tree molds [deep shafts]. A lot of people use ATVs now to herd their cattle. We can’t, because we need two eyes on the ground and two eyes on the cattle. You’re always riding 20 feet


in front of yourself, at least. We rely on our horses to carry us safely.” It’s a bushwhack to ride across most of Kealia’s pastures. The understory of ferns and shrubs rise to the level of a horse’s head. Stock dogs are essential to locate cattle. Moore’s five dogs form an eclectic pack—Catahoula, Border collie, Kelpie and Heeler. “I’ve had two dogs fall into tree molds,” she says. “Luckily, I found them. To get them out, you drop the end of your lariat into the mold. Then you get the dog to walk through the loop to hoist her out.” It’s difficult to gather cattle from the Moore checks in with Jordan Medeiros, the fencing contractor hired to replace acid rain-damaged fences. Fences are extremely expensive because posts must be jackhammered or drilled into the lava. Before woven and barbed wire fences, lava rocks were formed into stone walls.

She didn’t grow up on a ranch or farm, her parents were in the medical field. But her grandfathers both worked in the Hawai’ian sugar cane industry.

forest. To move the main herd, the ranch opens and closes its water traps. Kealia paniolos (cowboys) gather the strays on horseback. The dense forest growth also means cattle are vocally controlled. “We line up at the top of the pasture,” Moore explains, “and we yell to keep ourselves in line and to tell the cattle, ‘It’s time to move.’ The cows know to head down when they hear us.”

Hawai’i annually raises nearly 50,000 yearlings. In 2015, 72 percent were exported to the mainland for finishing and processing. Kealia ships yearlings to the mainland in “cowtainers” — 40-foot shipping containers modified with double decks, water troughs and feed bunks. Cooperative coordinates the shipping. It takes yearlings seven days by sea to reach Seattle, Washington. They arrive in mid-April, and then graze Oregon pastures through autumn. Shipping costs shrink the profits of Hawaiian ranchers. Because of this, Moore targets niche markets to increase sale price—naturally fed, nonGMO, non-hormone treated (NHTC), age-source verified, and Global Animal Partnership (GAP) certified. Kealia also retains ownership of 75 percent of its yearlings until retail through the Country Natural Beef Co-op. “There is risk,” Moore says of retained ownership. “We recently had a 1,200-pound steer die. I raised him, I shipped him, I fed him, I almost finished him, and he died. The death loss report marked it as an unknown cause.” Country Natural Beef’s meat processor formerly kept Hawaiian beef separate from its mainland beef. This allowed co-op members to bring Hawai’i beef back to the islands and market it as locally raised to restaurants and grocery stores. The processor no longer separates Hawaiian beef, but many island customers still purchase from Country Natural Beef, because 20 percent of its beef originates in Hawai’i. Similarly, the Hawai’i Cattle Producers Cooperative led a successful locally grass-fed veal program, Hawaiian Red Veal, for many years until the processing became too costly. “It was hard for the processors to be economical because of the small carcass size,” explains Moore. Moore diversifies income by not shipping about 80 of the largest yearlings each year. She started this because the headroom in cowtainers measures 48 inches, which forces uniformity. The taller-than-48-inch yearlings finish on Kealia’s prime pastures for the local grass-fed market. For processing and marketing, Kealia partners with a larger ranch that holds contracts for processing and selling directly to retailers. Moore reserves some of the meat to sell through the Kealia Ranch retail store and at farmers’ markets popular with tourists.

“Tourists want to support local industry,” Moore says. “The hotels do too, but they’re hesitant to buy grassfed. Everybody wants that tender juicy steak, and grass-fed does have its limits. Though when I eat a commodity corn-fed steak, I miss the flavor of grass-fed.” The basaltic lava minerals pulled into forage grasses uniquely flavor Hawaiian beef. Unfortunately, this

taste of Hawai’i is lost when cattle are finished on the mainland.

Limited Processing Capacity

In 2016, Hawaiian residents and tourists consumed over 89 million pounds of beef, or 198,194 market animals. Less than nine percent of this beef was finished and processed locally. Hawaiian ranchers could sell all FarmAndRanch.com

their beef (50,000 a year) for the local market, and increase profits, but there is no capacity to process the cattle. The Big Island hosts two meatprocessing plants. There is one plant on each of the other six main Hawaiian islands. They can handle 20 percent of Hawaiian cattle. This severely limits options for ranchers. “It took me three months of calling to book cattle at Hilo [on the Big Island],” Moore says, “and I only got a slot for ten head. The Big Island plants do not plan to expand due to limitations. The Hamakua plant did recently start butchering animals into quarters, and then shipping those quarters to Oahu for further processing.” Big Island ranchers can ship live animals to Oahu for processing too, but it is logistically difficult. To ease the bottleneck of processing and to help small producers, the Big Island Resource Conservation and Development Council purchased a mobile meat processing unit fullycontained inside a shipping container set on a gooseneck trailer frame. The Hawai’i Island Meat Cooperative now manages the unit. “It’s been six years

in the making and we’re still not at full operation,” says Moore, who serves on the co-op board. “The regulations are daunting.” The operating plan for the mobile unit would employ a head butcher and assistant butcher. A person at each ranch location would be required to help process its livestock. The mobile unit has operated, on a limited basis, for two years under a U.S. Department of Agriculture conditional grant of inspection. The Hawai’i Department of Health has yet to clear it for full operation because of solid waste management. “There is no rendering in Hawai’i,” Moore explains, “Offal must be hauled across the island to the Big Island’s two landfills. There’s dumping and tonnage fees; certain access times; and a solid waste permit is required. We propose four composting sites around the island. The health department is concerned about the waste water, because our lava doesn’t absorb moisture. Everything eventually runs to the ocean. I’m trying to design a composting system that prevents runoff and infiltration of the waste water by turn-

ing it into something beneficial to the land.” The mobile unit doesn’t solve the larger need for more processing capacity on the islands. Why Raise Beef?

The challenges of an island of finite resources cause some to question if raising beef should continue. Beef came to the Big Island in 1793 under King Kamehameha, who wanted his people to grow enough food for selfsufficiency. The Kealia Ranch is a section of the former McCandless Ranch that spread over 66,000 acres. Over the decades, the family split the ranch for each new generation. The U.S. Fish and Wildlife Service now owns a large section of McCandless Ranch’s former lands, because of the endangered Hawai’ian crow, the ‘Alalā. The Kealia’s conservation of natural resources provided the chosen habitat for the last nine ‘Alalā known alive in the wild. Now under refuge manage-

ment, no ‘Alalā live on former ranch lands. The bird is currently extinct in the wild, but 115 reside in captivity. The other side of former Kealia lands is now an exclusive hunting club. And beyond that, the doTERRA essential oil company cultivates sandalwood trees where cattle previously grazed. The Kealia Ranch runs cattle in the midst of land use change. “It used to all be cattle ranches from the south to the north,” Moore recalls, “and now we’re one of the last holdouts.” The limited in-state cattle market, high property value, and the cost of living (Hawai’i leads the nation as the most expensive, over D.C. and California) restricts ranching and farming to people who inherit land or negotiate low lease rates. Wages are low for employees, too. “My son, Kaeo, just started working for us [on Kealia],” Moore says. “He’s realized the pay-

I told him, ‘You might have to find a side job!’” Moore views ranching as an ecological service with a food by-product: beef. “We maintain healthy grasslands and forests while grazing cattle at the same time,” she explains. “The housing and resort development pressure from the tourism business is extremely high here. I think the Kealia is much better for wildlife versus all the houses down closer to the ocean. Yes, there are cows up here. But there aren’t vehicles or people constantly disturbing wildlife. The endangered Hawaiian hawk, the ‘io, and numerous native birds thrive on Kealia. Yet when you drive by down on the highway, you have no idea what’s up here. It’s an oasis of Hawaiian forest and historic paniolo lifestyle.”
