WHAT IS FAIRWAY? Fairway Market is New York’s original destination for deliciousness. What started out in 1933 as a corner fruit and vegetable stand has grown into 15 extraordinary stores throughout the tri- state, serving millions of loyal customers each year. As you explore our aisles, stop to take in the aromas of a real marketplace. Taste one of our samples. Gaze at our array of foods in every sumptuous color, texture and shape. It’s a feast for all of the senses. You’ll want to return time and time again. There’s a world of remarkable foods to discover within each of our departments. Let us show you why they make Fairway truly “like no other market”.
BAKERY Our breads, pastries and baked goods are made according to recipes that have stayed with us through generations. We wouldn’t have held onto them if they weren’t the BEST. Between our legendary baguettes, signature pies, custom-decorated cakes or world-famous bagels, you’d have to visit every bakery in town to come up with a comparable mix of quality and selection.
CHEESE best cheeses, then gathered them right here at our counters. Whether you’re seeking out something unique for your cheese plate or just want an everyday wedge at a great price, you’re bound to find exactly what you’re looking for within our vast collection. We promise you nothing short of cheese heaven.
COFFEE we make sure that each bean is treated with the respect it deserves. We source only from farms that we know and trust, then slowly roast the beans on premises to bring out the flavors that are special to each. Each blend’s recipe is tested again and again until it’s just right. The end result is perfection in a cup.

DELI The Fairway deli is true to this city’s great appetizing tradition: there, you’ll find hand-sliced smoked salmon that will stop you in your tracks, cold cuts and charcuterie with major personality, knishes and latkes to rival your bubbe’s, and many more only-in-New-York specialties. It’s a one-of-a-kind experience that can’t be replicated anywhere else.
FAIRWAY PRIVATE LABEL If Fairway Market is on the label, you are in for a treat. We nurture close relationships with our producers, from the families who make our incredible vinegars, to our olive growers who craft our world-renowned oils, to the family farmers who supply our organic milk and eggs. KOSHER from meat, poultry, cheese and bakery goods, and specialty products. Under the direction of KOF-K Kosher Supervision, we work to ensure that our kosher goods are not only of the BEST quality and integrity, but also prepared according to the highest standards of kosher law.
MEAT You’d be hard-pressed to find another market with a meat selection as extensive as ours. From the most incredible prime and dry aged beef to the best naturally-raised chicken, every piece of meat we sell is USDA-inspected and carefully packaged. The butchers at our full-service counters know their meat—they’ll cut it any way you like it.

ORGANIC & NATURAL You can make great choices for your body, your family, and the environment without having to spend a fortune. Our extensive organic and natural section includes all the organic groceries you could possibly want, along with health and beauty products and a large variety of gluten-free items. You could say sourcing organic products is part of the Fairway DNA.
PRODUCE We’ve come a long way from being a corner fruit and vegetable stand, but top-quality produce is still our priority. As you walk into any Fairway store, the produce section greets you with rows upon rows of the freshest and most beautiful fruits and veggies piled sky-high. We work closely with growers to bring you items at their peak—you’ll only find the season’s best at Fairway.
SEAFOOD We’re the first ones down at the docks every morning, picking out the best fish. And we’re down there every day because every fish whole and fillet it in-house, the way it should be. Plus, you can’t beat our variety: there are as many fish in our case as there are in the sea.
SPECIALTY Whether they’re imported from afar or made by experts and artisans locally, our incredible range of specialty foods includes only the best of the best. From esoteric spices to jams made with the most precious fruit, these goods are why the city’s most inventive chefs and passionate gourmands can be found roaming Fairway stores.
...AND EVERYTHING ELSE
As much as we pride ourselves on all of our out-of-the-ordinary finds, it’s our aisles filled with the brand names you know and trust that make Fairway an everyday destination. We’re one of the few places where you can get your corn flakes and the world’s finest caviar. Keep an eye out for Big $ale and Big Deal Basics signs, which will help you save money along the way, too.

Chorizo Paella INGREDIENTS
12-16 saffron threads
Many of these will vary depending on what size pan you're using. Always err on the high end; it's better to have too much broth than not enough. In general, your goal is to ensure that the pan is not too full, otherwise the dish won't cook evenly. Aim to fill between 1/2 and 2/3 up the walls of the pan by the time all of your ingredients are in.
Salt and pepper (to taste)
1 TBSP minced garlic
1-2 c red wine (use dry white wine for seafood or chicken, red for pork/beef) 8-10 c of chicken or vegetable broth 4-5 c of short grain rice (+/- 1 c based on how full the pan looks) 2 tsp paprika
12 | FLAVORS MAGAZINE
2 tsp turmeric 2 tsp thyme 3-4 bay leaves 1 yellow onion (chopped) 1 green bell pepper (strips) 1 red bell pepper (strips) 1 can (16 oz) tomatoes, whole peeled or crushed 1 fennel bulb (strips) 3 chorizo sausages (sliced thin) Cilantro (chopped) Lemon wedges
Cooking Instructions There are three steps to this recipe: preparing the broth, sautéing the vegetables in the paella pan, and then combining both and baking in the oven. To make things easier, chop vegetables and measure spices before you start. Prepare the broth first, then start on the vegetables while the broth heats up so that it's ready.
• Save 1-2 cups of broth to use as needed for dry spots, then pour broth into paella pan. Ingredients should be submerged but visible just below the surface of the liquid. Press down anything that's sticking out of the liquid.
Preheat oven to 350° F.
• Cook uncovered on low for 15 minutes or until rice absorbs most of the liquid. If needed, add broth to uncovered areas. Don't stir. Try to disturb the pan as little as possible during this step.
• Once rice is cooked, stir once to make sure nothing sticks to bottom.
• Combine in a saucepan or pot and simmer for 10 minutes, then keep hot:
Chicken or vegetable broth, wine, paprika, saffron threads, salt, pepper, turmeric, thyme and bay leaves.
• With larger pans, you may need to leave the oven door cracked. If so, take out the pan halfway through baking and rotate it 180 degrees.
• Bake 20-25 minutes, or until liquid is absorbed and rice is cooked. Check after 1213 minutes for dryness, adding saved broth if needed.
Coat the pan with a layer of olive oil. Add oil as needed if any area of the pan is low or the vegetables are burning. Sauté in this order, stirring in the new ingredients with each step: • Onions and garlic for 4-5 minutes, until softened. Stir as needed to keep from burning, especially the garlic. • Tomatoes, peppers, and fennel for 3 minutes. Be sure to get all of the liquid from the canned tomatoes into the pan. • Add rice, adjusting as you go to avoid overfilling the pan. Stir to cover the rice with onions/tomato sauce.
• Remove from oven and cover with foil for approximately 5 minutes.
Garnish • Sprinkle chopped cilantro evenly across paella. • Cut 2-3 lemons into wedges and serve alongside paella. • Don't forget to take out the bay leaves!
• Add sliced chorizo, distributing evenly around the pan.

KIDS’ COOKING CORNER
ooking for kids can definitely be challenging. One day something can be their favorite food, the next day they won’t touch it. A great way to get kids excited about cooking is to give them an apron of their own, roll up your sleeves and dig in. Cooking with kids can be fun! 1. Prep work is fun! No matter what age, prep work can be fun for kids. Pull a chair up to the sink and let them wash the fresh veggies, snap the beans and asparagus and shuck the corn. The hands on experience will have them invested in the process and gives them a great view as to where their food comes from!
2. Packing lunches isn’t just mom’s job. Each night, create a menu of lunch options for the next day with one catch: whatever they pick, they have to help make. PB&J? Great! Grab the bread, a dull butter knife and let them starting spreading the jelly. Hummus and veggies? Have them fill the Tupperware, clean the veggies and pack how much they want.
3. Bake up a mess. The fun of cooking sometimes is the mess it makes. If there is one thing that kids love too, it’s making a mess. Grab a large mixing bowl, dump ingredients together and let them stir until their hearts content. You’ll have an extra set of hands and they will be adorable for the inevitable photo you’ll want to take.
4. Cooking is learning. The key to making a recipe working is math. Adding measurements together and doubling recipes are critical skills. Test your kids by asking for different size measurements as you cook. They won’t realize they are actually learning!
5. Lights, camera, action! Have a star in the family? Capitalize on it with your very own cooking show. Whether playing just pretend or even creating your own livestream, your kid will feel like a star as they help you create their favorite recipes. Plus, they will be more apt to taste that newly famous recipe you just made!
6. Invent a recipe together. Sometimes the best recipes are happy accidents. Start with a basic cake recipe. Challenge your kid to take it up a notch with some pre-chosen additions. Maybe some chocolate chips would be a tasty addition. Perhaps fresh fruit would make it even more delicious. No matter what, you’ve made something together!
7. From farm to table. The best way to get your kids involved in cooking is to take them to its roots. Literally. Pick a recipe together. Visit your local store and shop the best ingredients together. Prepare everything. Get cookin’. Set the table and enjoy. From beginning to end, you experienced it together.
8. Clean up! The most important – and most dreaded – step of cooking is cleaning up! Make a game of it. Who can clear the table the fastest? Who can wash the most dishes? Who can unload the dishwasher the quickest? Clean up will be done in a snap!

WELCOME TO FAIRWAY,
his January, Fairway opened the doors to its 15th location in Georgetown, Brooklyn. Never heard of Georgetown? It is one of the best kept secrets in the Bergen Beach/ Mills Basin area. It boasts a tight-knit community where you can expect to find community leaders involved in several different groups. The passion for the community runs strong here, and Fairway couldn’t have received a better welcome. FAIRWAYMARKET.COM | 53
The Georgetown store features a new layout, new signage, and new features for the company. It is unlike any other Fairway location. Walking the aisles, you’ll notice you have a little more room. You’ll see a lot of blue signs indicating kosher products. Just like all Fairways, there are a lot of hidden treasures in the new Georgetown location. Want to see your coffee freshly roasted? There is a roaster on site! Ever seen fresh mozzarella being pulled? You can at this location! Had a lobster tail bigger than your head? The ones at Fairway Georgetown are enormous! Craving a slice of NY pizza? Look no further than the new pizza bar. Fresh dough is always being slung and you can request your pizza by the slice or the whole pie. Also, a new juice bar greets you as you enter. If it can be squeezed or pulped, there is probably a juice with it. There are several pre-made juices and smoothies for those on the go, or have one made for you. “It is my second home” exclaimed one customer to News 12. Just like the community it serves, this store is special.
54 | FLAVORS MAGAZINE
Opening week was a weeklong celebration complete with rooftop strobe lights. Live music echoed through the store daily from local elementary students and steel drum bands and guests were able to win one of thousands of prizes. The fun didn’t end there. In addition, guests could meet their favorite radio DJs or have their photos taken at a state-of-the-art photobooth. As the Canarsie Courier put it: “Residents were thrilled to say the least, and it’s been the buzz around town ever since.” If you are in Brooklyn, be sure to stop by this newest gem. Grab a slice and see why Fairway is the best grocery store in NY.

LUNCH on the
58 | FLAVORS MAGAZINE
uggling meetings, commutes and deadlines means lunch usually suffers. Not any longer! We’re on a mission to revive this often looked over meal. Tuck your “emergency granola bar” back in your office drawer, and treat yourself to affordable, delicious and, most importantly, quick lunch options.
Dial up that PB&J Though a tried and true favorite, you don’t have to sacrifice your adult tastes for efficiency. Sure, PB&J is easy to make, but so is a delicious croissant packed with all white meat chicken salad topped with a fresh tomato and leaf of crisp romaine. You have something awesome to look forward to without any added time! Pro tip: grab any one of the 30 Fairway Soups by Hale and Hearty to take your lunch to make-your-coworkersjealous town.
Don’t forget the chopsticks Sushi is a fresh, delicious way to give lunch the respect it deserves. Now, sushi is available in all of your favorite flavors to go. Have you tried a sushi burrito yet? Need we say more?
Get ready for layers of flavor The newest trend for lunches is jar meals. Easy to make and packed with flavor in every bite, jar meals can be used at breakfast, lunch, dinner and snacks! Late breakfast? Layer a mason jar with greek yogurt, your favorite granola and fresh in-season fruits. Instant parfait! For lunch, try a jar Greek salad. Dressing on the bottom, top with your favorite veggies and chickpeas, extra feta and top with crisp lettuce. Fresh, tasty and surprisingly portable!
Hot and ready Wanting something substantial around lunch time but crunched on time? Missing your mom’s delicious hot and tasty dinners? Stop by a local Fairway and visit the hot bar. The menu is different every day, so you have something tasty to look forward to each visit. Fried chicken one day and chicken tikka masala the next? Heaven!
Pad your wallet If you are looking to save some moolah with lunch, think two words: meal prep. With so many resources available online to help guide you, it’s easy to prepare and pack ahead for the week to ensure every lunch is nutritious, fresh and full of flavor. We love burrito bowls and the prep is minimal. Pick your menu on the weekend for the week ahead and spend a few hours cooking and packaging. Now the only thing to remember is to grab it out of the fridge on your way out the door!
Get freshy fresh Along with the hot bar, Fairways also have a huge selection on the salad bar. Dress up your boring old lettuce with the freshest, tastiest fruits and veggies of the season. No matter how you top it, it’s going to be delicious – and quick!
Cuteness in a box Lunchboxes aren’t just for kids these days. Think of bento boxes as the grown up, sophisticated cousin to your Spiderman lunch box. What makes it so awesome? The compartments. There is an area for veggies and dip. Pop your blueberries in a small section. Larger compartments for sandwiches or salads or entrees and the best part – you can organize however you want! With so many Pinterest fanatics making the ultimate bento boxes, your lunch just got upgraded.
Plan ahead The easiest way to prepare for the next day is a little secret called overnight oats. Grab a mason jar and combine milk, oats, yogurt, and your favorite flavor toppings. Cover, fasten and shake well. Refrigerate overnight – instant breakfast or lunch!

generated a lot of excitement, extra money for the winning schools and some genuinely terrific recipes to share with the readers of Fairway’s FLAVORS magazine. Jennifer Rozencwaig coordinates the Community Partners program at Eleanor Roosevelt High School and with its two winning recipes, she has reason to be proud. Jennifer credits the PTA’s commitment to promoting the program for their success. She says, “As soon as Fairway sends the monthly Community Partners eblast, I send it to the President, and then she gets it out to our supporters right away. We have a pretty good neighborhood network of people who shop at Fairway all the time.” The money they raise goes back to the school to support “everything from paper to technology, labs and musical instruments, to athletics and clubs.” Interested in learning more about Fairway Community Partners for your school? Eleanor Roosevelt High School Family and friends cannot get enough of Barbara Golman Carrel’s delicate and delicious South American dulce de leche cookie.
dUlCE dE lEChE COOKiE (alFaJOrEs dE MaizENa) INGREDIENTS 2½ c corn starch 1⅔ c flour 2 tsp baking powder ¾ c sugar 1 c softened butter 3 egg yolks ¼ tsp salt 1 TBSP vanilla extract 2 tsp lemon zest ¼ c milk (if needed) Splash of cognac, whiskey, rum or similar spirit (optional) 1 13-16 oz jar of dulce de leche (milk caramel) Grated coconut for garnish (optional) Powdered sugar for garnish (optional)
Cooking Instructions • Preheat oven to 350°. • Place softened butter in a medium bowl. Add sugar and beat gradually until mixture is light and fluffy. Add egg yolks, one at the time, beating after each addition. Add vanilla, lemon zest and, if desired, spirits. Continue beating until batter is smooth and creamy.
• In separate bowl, sift together cornstarch, flour, baking powder and salt. Gradually add the dry ingredients to the butter mixture, beating thoroughly and making a dough. • Separate dough into 3 or 4 portions, and refrigerate for an hour or so to make it easier to roll. • Flour your surface and roll out dough until approximately ½ inch thick. If dough is crumbly and difficult to roll, add a couple to a few tablespoons of milk, kneading into the dough to bring together. • Cut out cookies (most traditional are plain or scalloped circles, but hearts work just as well) and place on cookie sheet lined with parchment paper. Combine the scraps, repeat rolling and cutting with remaining dough, adding flour as needed. • Bake until cookies are set but still light, approximately 11-15 minutes. Cookies should not be browned. • After cookies have cooled completely, generously spread dulce de leche on one cookie. Add another cookie on top to make a sandwich. (It’s okay if the dulce de leche is oozing out of the cookie – it will help the grated coconut stick to the sides). • Leave your alfajores plain, roll in grated coconut or sprinkle the top with powdered sugar.
