WITH DRIED DILL WEED AND TABASCO SAUCE INGREDIENTS: • 2 lbs. shrimp, cooked and deveined • ¾ c. olive oil • ¼ c. white wine vinegar • 1 clove of garlic, chopped • 1 Tbsp. dried dill weed • 1 tsp. salt • 1/8 tsp. tabasco

DIRECTIONS: • Combine all ingredients into bowl. • Cover bowl with plastic wrap and chill for several hours. Mix constantly to marinate. • Drain and arrange on serving platter atop bed of fresh greens.

FAKE GRILLED CHEESE WITH FROSTING AND POUND CAKE INGREDIENTS: • 2 slices of pound cake (store bought is great) • 1 c. white frosting (canned is fine) • Yellow food coloring • Red food coloring

DIRECTIONS: • Cut the pound cake into bread-like slices. • Toast slices in a toaster oven or carefully in the toaster, just until they turn golden brown. • Cool for a few minutes. • Stack 2 slices for each sandwich and cut the stack in half diagonally (slicing the sandwich before you fill it makes for fewer crumbs). • Tint the frosting by stirring in a few drops of yellow and red food coloring (more yellow than red) to get a shade of orange that resembles American cheese. • Carefully spread frosting between the slices of each half sandwich. • If you mound the frosting on one slice and then top it with the other slice, and gently press down, the frosting will ooze out a bit and look all the more like melted cheese.

CLAM DIP

WITH FRESH ITALIAN BREAD INGREDIENTS: • 3 10 oz. cans of minced clams (don’t drain) • 2 onions, chopped • 1 bunch of Italian flat parsley, chopped • Juice of one lemon • 2 Tbsp. oregano • Dash of tabasco • 3 cloves of garlic, minced • 2 sticks of sweet butter • 1 ½ c. bread crumbs • Grated Romano cheese and paprika for garnish • 1 loaf of fresh Italian bread, thinly sliced (only substitute with French bread)

DIRECTIONS: • Simmer clams in lemon juice for 15 min. • In separate pan, sauté onions and garlic in butter until translucent, about 10 min. Add parsley and oregano, then add tabasco. • Combine two mixtures. Fold in bread crumbs and incorporate them well. • Put mixture in oiled soufflé dish and sprinkle with Italian cheese and paprika. • Bake 15-20 min. at 350˚ F until top is golden and mixture is bubbling. • Serve hot with fresh, thin slices of untoasted bread. • Note: This can be made ahead and frozen: Freeze in oiled dish, but don’t garnish with cheese.

PORK ROAST FREDDY STYLE WITH BAKING POTATOES INGREDIENTS: • 1 6 lb. loin of pork • 4 lbs. of sauerkraut • 8 baking potatoes

DIRECTIONS: • Place pork roast with 6 baking potatoes, peeled and quartered, into a pan. Roast and baste for 1½-2 hrs., basting frequently. • In a pot, put sauerkraut and the 2 remained potatoes, peeled and quartered. Boil until potatoes are soft, but do not break up. • Drain sauerkraut and potato mixture and put in same pan as pork. Cook until the sauerkraut turns brown. • If pork and potatoes cook before the sauerkraut browns, remove them from the pan and continue cooking sauerkraut. • Notes: • Sometimes it takes 2 hours for the sauerkraut to brown. It’s important to keep turning the sauerkraut while it’s browning. • If you like sauerkraut, you can make this recipe with 6 lbs. of it. • The pork is done when a fork inserted into the meat comes out easily.

ROASTED POTATO SOUP

WITH CHOPPED ONION AND WAFFLE POTATO CHIPS Serves approximately 6-8 INGREDIENTS: • About 2 lbs. of 6 medium baking potatoes • 1 large onion, cut up and chopped roughly • 6 cloves of garlic, peeled • 2 Tbsp. butter, melted • ¼-½ tsp. cracked black pepper • 3 c. chicken broth • 2 c. water • 1 c. heavy cream • Waffle potato chips (optional) • Snipped fresh sorrel (optional)

DIRECTIONS: • Preheat oven to 425˚ F. • Scrub potatoes with a brush and pat dry with paper towels. Reserve ½ of one potato for waffle potato chips, if desired. Cut remaining potatoes into 1 inch chunks. • Toss with onion, garlic, butter, and pepper in a roasting pan. Spread mixture into an even layer and roast until potatoes are browned, about 50-60 min. Stir occasionally. • Transfer roasted potatoes and onion mixture to a large saucepan. Stir in chicken broth and water. Bring just to boiling, and then reduce heat to simmer. Cover and let simmer for 20-25 min. or until potatoes are very tender. Note: Do not clean the roasting pan; instead, add water and pour liquid into the saucepan for excellent flavor. • Using potato masher, mash potato mixture until nearly smooth. Simmer, uncovered, for 15 min. or until slightly thickened. If mixture seems too thick, add more chicken broth. • Garnish with potato ticks, waffle potato chips, sour cream, and chives.

ITALIAN RICE PUDDING WITH ARBORIO RICE INGREDIENTS: • ½ gal. whole milk • ¼ lb. butter, lightly salted • ¾ c. sugar • 1 c. Italian Arborio rice • 1 egg • ½ pt. heavy cream • 1 tsp. vanilla extract

DIRECTIONS: • Over medium fire, bring milk, butter, and sugar to a slow boil. • Add Arborio rice and lower heat to simmer. Cook for 45 minutes, stirring often. • Mix egg, heavy cream, and vanilla together. Add to rice. • Blend well and pour entire mixture into serving bowl. • Chill and serve. Notes: Do not double this recipe in the same pot. Follow recipe exactly for best results.

BEEF WELLINTON WITH PEPPERIDGE FARMS PATTY SHELLS Yields approximately 4-6 servings INGREDIENTS: • 2 Tbsp. cognac • Salt and Pepper • 6 slices of bacon • 8 oz. of pâte de foie d’oie (goose liver dough) • 1 egg, slightly beaten • Pepperidge Farm Pastry Shells, defrosted at room temperature •  Madeira sauce

DIRECTIONS: • Preheat oven to 450˚ F. • Rub meat all over with cognac & season with salt and pepper. Lay bacon over top, securing with string if necessary. • Place meat on a rack in roasting pan and roast, about 15 min. for rare or 20-25 min. for medium. • Remove bacon and cool to room temperature. • Spread the dough all over the top and sides. • Preheat oven to 425˚ F. • Roll out pastry into a rectangle, about 18”x12” with a ¼-in. thickness. Place the filet top down in the middle. Brush with egg to seal. • Trim ends of pastry and make an envelope fold, brushing with egg once again to seal the closure. Transfer the pastry wrapped meat to a baking sheet, seam-side down. Brush all over with egg. • Cut out shapes with leftover pastry and place them on top. Bake for about 30 min. or until pastry is cooked.

Use a 2½-in long bone-shaped cookie cutter to cut out bones. • Bake on ungreased baking sheet, about 30 min. • Remove from pan and cool on wire track.

NANA’S CHEESE WHISKEY CAKE WITH CHOCOLATE AND RICOTTA CHEESE INGREDIENTS: • 8 eggs • 2 lbs. Ricotta cheese • 1 lb. sugar • 1 c. whiskey • ½ bag of bittersweet chocolate • 2-3 Tbsp. of Crisco • 2 c. flour • 1 Tbsp. baking powder • Pinch of salt

DIRECTIONS: • Beat 6 eggs separately. • Mix together Ricotta cheese and sugar. • Fold together—no beating—whiskey, chocolate, and 1 tablespoon of Crisco • Combine mixtures and then add eggs. • Beat two eggs separately, and then mix with flour, baking powder, salt, and 1-2 tablespoons of Crisco. Roll out dough into baking dish. Note: If the dough doesn’t stick, add cold water. • Pour in cake mix and bake cheese cake at 425˚ F, about 1 hour. • Turn off gas and leave in oven to cool off.

DIRECTIONS: • Whip the cream till stiff peaks form. Then, gently fold in the ricotta, sugar, and vanilla (or liquor). • 1 package German sweet chocolate • ½ c. boiling water • 1 c. butter • 2 c. white sugar • 4 egg yolks unbeaten • ½ tsp. salt • 1c. buttermilk • 1 tsp. vanilla • 1 tsp. baking soda • 2 ½ c. flour – sifted • 4 egg whites stiffly beaten

• 1c. evaporated milk • 1c. sugar • 3 slightly beaten egg yolks • ½ c. butter • 1 tsp. vanilla • 1 1/3 c. angel coconut (shredded coconut) • 1 c. pecans

DIRECTIONS: For the cake: • Melt chocolate in double boiler. Cool. • Cream butter and sugar until fluffy. • Add egg yolks 1 at a time and beat after each. • Add melted chocolate and vanilla. • Sift together salt, soda, and flour. • Add alternately with buttermilk to chocolate mixture and beat well. Beat till smooth. • Fold in beaten egg whites. • Pour into 3 cake pans lined with parchment paper. • Bake at 350 degrees for 30-40 minutes.

For the icing: • Mix all ingredients in a sauce pan. • Cook over moderate heat until thickened stirring constantly for approximately 12 minutes. • Add angel coconut and pecans.

If still wet, add a touch more flour. Add raisins. • Line baking sheet with parchment paper. Scoop and place on sheet. Flatten slightly. Bake for 12-20 minutes depending on oven type.

WITH WATKINS VANILLA EXTRACT INGREDIENTS: • 1 c. water • 1 c. butter • 1 c. sugar • 4 large eggs • 2 c. dried fruit • 1 tsp. baking soda • 1 tsp. salt • 1 tsp. Watkins Vanilla Extract • 1 c. brown sugar • 2 c. flour • 1 tbsp. lemon juice • 1 c. chopped nuts • 1 gal. wine DIRECTIONS: • Sample the wine to check for quality.• Find a large bowl. • Check the wine again to make sure that it is of the highest quality. Pour one level cup and drink, repeating if you’re not sure. • Turn on the electric mixer and beat 1 cup of butter in a large fluffy bowl. • Add 1 teaspoon of sugar and beat again. • Make sure the wine is still okay. Cry another tup. • Turn off the mixer. • Break two legs and add to the bowl along with some Watkins Vanilla Extract, and chuck in the cup of dried fruit. • Mix on the turner. If the fried druit gets stuck in the beaterers, pry it loose with a drewscriver. • Sample the wine again to check for tonsisticity. • Next, sift for 2 c. of salt, or something. Who cares? • Check the wine. • Now, sift the lemon juice and strain your nuts. • Add 1 table. Spoon. Of sugar or flour, or something. Whatever you can find. • Grease the oven. • Turn the cake pan to 350˚ F. • Don’t forget to beat off the turner. • Throw one bowl out the window. • Check the wine again. • Go to bed.
