Welcome to The Windmill Celebrating 35 Years!

I

n 1987, volunteers envisioned one man’s dream and The Windmill Farm & Craft Market blossomed into life. Beginning with fewer than 30 members, it has grown to 175 shops on 44 acres. Every Saturday from April through November, we feature dozens of merchants and hosts thousands of visitors. Some of the founding members are here every weekend to greet you. Our goal is to offer you a relaxing fun-filled day and exciting things you won’t find anywhere else.

Each large building is filled with crafters, merchants, great food, and interesting shops. Stroll outside on the tree-lined Street of Shops to visit old favorites and discover newfound treasures. Offering entertainment, demonstrations and other special activities nearly every weekend, you’ll want to return again and again!

The American Fitness Index includes the number of farmers markets per capita as a factor contributing to healthier communities. They use it as an indicator for community members’ access to fresh fruits and vegetables. Farmers market vendors also educate their shoppers – three in five discuss nutrition and how to prepare food.

Sustainability is the overarching theme in this system. Farmers engage in sustainable farming practices to produce healthy food to sustain the local community, who in turn provide the money necessary to sustain the farmers. Each shares in the success of the other in a mutually beneficial relationship that has become a model for sustainability.

Looking Back at the Past 35 Years

I

n 1978, Bill and Ruth Gunderman, and their daughter Pat Gunderman and her husband Ron Nissen, took a trip to Ephrata, Pennsylvania, to visit a farm market. They loved it, and decided that one day they would attempt to create a similar market in New York’s Yates County.

In 1986, the four of them began discussing the concept of a farm and craft market with their English and Mennonite friends. After receiving encouragement from Susie Stotlzfus, a well-known quilt maker, they decided to hold a meeting to see if others were interested in the idea. Eighty people showed up. An initial plan was formulated and a steering committee was formed to search for a location. A 26-acre site between Penn Yan and Dundee located on route 14A was chosen.

Looking back continued from page 19 Nevertheless, on June 27, 1987, The Windmill opened its doors with 64 vendors in two enclosed buildings plus 25 outside vendors.

The following Saturday, July 4, was busier than opening day. Traffic was backed up for 5 miles in each direction as visitors waited to enter the market. It was a thrill to see that the dreams for a farm and craft market had become reality.

In 1988, a third enclosed building and an open produce shed were erected. The Windmill was awarded a New York State Grant to construct sidewalks, concrete floors and restroom facilities. In 1995 an additional 7.5 acres were purchased to provide additional parking.

From 1997 to 1999, more outside vendor buildings were erected.

In 2004, thanks to a New York State Matching Fund grant, the produce area and former hay-auction barn was enclosed to make morepermanent vending areas.

Bill Gunderman designed many of the buildings at The Windmill.

He was The Windmill’s resident architect, electrician, and its first treasurer – a position he held for many year on the Board of Directors.

Pat Gunderman was the first president. She served on the Board of

Directors, held the office of treasurer after her father’s retirement, and functioned as the market manager for six years until her retirement in 2001. She has been active as a market consultant ever since.

When Pat’s husband Ron was asked what he was going to do at the new market, he said, “I’m going to sell hot dogs. People are always hungry.” Ron later served as market manager for many years and helped set up several other markets.

Bill passed away in November 2001. He is still considered the “Father of the Market” and is greatly missed by his family and many friends.

Bill once said, “During all of the years of operation, there have been many devoted persons who have put countless hours of time in the operation of the organization. The dedication and patriotism to the market has been outstanding. Hundreds have given their talents unselfishly, and the credit for the success belongs to all of them. The Windmill crew did not invent marketing, nor did they reinvent it.

Intead, they took most of the good features of other markets and molded them into The Windmill concept.

ommunity Knife Grinding has been a fixture at The Windmill for 33 years. It stocks more than 700 culinary tools and kitchen products.

USA-made options range from silverhandled paring knives and baking pans to stainless steel whisks and spatulas.

At the core of the business is knife sharpening, a family tradition that dates back more than 100 years.

Robert D. Polli, the son of Italian immigrants in Brooklyn, learned the knife grinding trade from his father. Louis Polli’s truck was a familiar sight in

New York City wherever people were preparing food. In 1939, when Robert was 21, he and his bride Josephine moved to Rochester and started a grinding business that flourished. By 1974, people were lining up at their truck at the Rochester Public Market to have blades of all kinds sharpened.

Charlene and her husband Bob are proud to be running the retail store at both The Windmill and The Rochester Public Market. Any culinary tool you need for your food preparation you can be sure Bob and Char have it for you.

ative Americans, our nation’s first farmers, presented to us the successfully symbiotic farming method called Three Sisters. When consumed together, corn, beans, and squash complement each other nutritionally. In the garden, these companions help each other grow.

Corn provides tall stalks for the beans to climb so that they can thrive among low sprawling squash vines. In return, beans help stabilize the stalks during heavy winds, and their nitrogen fertilizes the soil. “Beans are actually nitrogen-fixers,” writes Melissa KrusePeeples, education coordinator at Native Seeds, a nonprofit conservation organization in Tucson, Arizona. “They host rhizobia on their roots that continued on page 42

The large leaves of squash plants shade the ground to help retain soil moisture and prevent weeds. Spiky squash plants help keep predators – like raccoons – away, protecting bean and corn plants, too.

A diet of corn, beans, and squash is complete and balanced, says nutritionist Katie Kriner in an article from Slow Foods USA. Corn provides carbohydrates and dried beans are rich in protein. They also have amino acids, which are absent from corn.

All parts of summer squashes, like zucchini, yellow and pattypan, are edible including the seeds, skin and even the blossoms – a delicacy when stuffed with soft cheese like ricotta and then pan friend, says Kriner. The skin is rich in carotenoids like lutein, which acts as an antioxidant and supports the health of your eyes.

Summer squash is also a good source of magnesium, copper and potassium and, to a lesser extent, iron and calcium. A small but significant amount of omega-3 fatty acids can be found in the seeds.

In the Oneida Nation, says Andi Murphy, they make burnt corn soup with roasted corn as a reminder of the burnt crops people salvaged during times of conflict and war. It’s served in the cafeteria of the Oneida Nation School System in Oneida, Wisconsin, along with other traditional foods.

Portions of the Navajo

Nation and some Hopi, in the dry farm areas of the Southwest, plant the Sisters in separate areas of fields, spaced wide apart to maximize limited water. There, posole and corn stews are everyone’s favorite dish made with chile and mutton, says Murphy.

For centuries, corn, beans and squash have sustained indigenous people across the country, who would dry their annual harvest so they had food all year long. Today, Native chefs use the Three Sisters as appetizers that top smoked salmon and as side dishes accompanying beautiful golden duck legs.

Summers Sunshine Sparkles with Repurposed Glassware

T

ina Nestrick creates bright, beautiful, handcrafted garden art, including hummingbird feeders, bird baths, and huge freestanding flowers that are 10 inches wide and 5 inches high!

Seneca Lake’s Shipwrecks from nystateparks.blog

I

n 2019, during a high-tech survey of the bottom of Seneca Lake, researchers from Vermont’s Middlebury College and the Lake Champlain Maritime Museum found wrecks of canal boats dating from the mid-1820s to the 1850s. “The vessels are intact ships, many with cargo, that have not been seen for more than 150 years,” reported Art Cohn, the museum’s cofounder and director emeritus.

Seneca Lake was commercially accessible from north, south and west via the Erie, Chemung, and Crooked Lake canals. Each year, hundreds of canal boats plied its waters carrying corn, coal, lumber, whiskey and other goods. Winds and storms, often a threat to lake traffic, sometimes sent vessels to the bottom.

The crew aboard the Research

W Vessel David Folger were able to see accurate three-dimensional images using a process called bathymetric mapping. It works by sending sound waves in a fan shape into the water beneath a ship’s hull. The amount of time it takes them to bounce off the bottom and return to a shipboard receiver determines depth.

After each sighting, an unmanned, remote-operated vessel (ROV) was sent down into the water to video, identify and document the scene. Pumpkin Pie Cake • 1 box yellow cake mix • 1 ½ sticks margarine • I large (1 lb. 13 oz.) can pumpkin • 4 eggs • ½ c. light brown sugar, firmly packed • ¾ c. granulated sugar • 2/3 c. milk • 1 ½ tsp. cinnamon • ½ c. chopped nuts Remove 1 cup of cake mix and set aside. To re­mainder, add 1 stick margarine (melted and cooled) and 1 beaten egg.

Beat with fork until all cake mix

is absorbed. Press into greased and floured 9x13 inch pan.

To make filling, in large bowl of electric mixer, place pumpkin, 3 eggs, brown sugar, and¼ cup granulated sugar. Add milk and cinnamon; beat well. Spread over the cake dough.

For the topping, use the cup of cake mix set aside. Add½ cup chopped nuts and½ stick margarine. Sprinkle over pumpkin mix.

Bake at 350 ° for 50 to 55 minutes.

Cool in pan. Cut into squares. Serve with whipped topping.

Walnut Bourbon Balls • 2½ c. finely crushed packaged vanilla wafers • 1 c. confectioners sugar • 2 Tbsp. cocoa • 1 c. finely chopped California walnuts • 3 Tbsp. corn syrup • ¼ c. bourbon • Granulated sugar (colored or white) Make several days ahead as follows: 1. Thoroughly mix vanilla wafer crumbs con­fectioners sugar, cocoa, and walnuts.

2. Add corn syrup and bourbon.

Mix well.

3. With hands, roll mixture into 1 inch balls then roll each into granulated sugar. If desired’ wrap each ball in Saran Wrap or colored foil’.

Store in tightly covered container.

Recipe makes about 3 ½ dozen.
