t always knocks me off guard how fast life goes by in the publishing industry – you live from issue to issue and the entire year is broken up into seasonal occasions and regional events. So, when it’s time to do the Ramadan editorial, I’m equally excited (for the spiritual and homely vibes) and anxious (because time is flying by), and because there are just TOO many amazing Iftar and Sohour set-ups to experience. In Abu Dhabi, we’re lucky that we get a genuine insight into Ramadan celebrations through so many beautiful offerings all around the city. Check out what’s in store for 2017 starting p27. The UAE’s Best Photograph

The judges of the 2017 Sony World Photography Awards announced the photograph Transportation by Mustafa Jindi as the winner of the UAE National Award as part of the renowned Sony World Photography Awards – the world’s largest photography competition. The National Awards is a global programme open to photographers of all abilities. It aims to find the best single photograph taken by a local photographer in 65 countries. A Syrian national based in Abu Dhabi, Jindi’s winning piece Transportation reflects the fast development and innovation that the UAE has experienced over the years whilst preserving its culture and identity. “I took this photo in Abu Dhabi in September last year when the painting on the wall grabbed my attention as it represents UAE’s culture,” Jindi said. “I brought my son and dressed him up in the local’s traditional outfit that he loves the most, and made him play around with his tiny car under the painting. 12

The photo showcased the great progress and innovation that the UAE witnessed while saving its own precious culture background,” he added. Jindi is a journalist who’s been into photography for almost 10 years. Due to his passion for photography, he attended several courses to develop his skills to learn different methods and techniques. He started competing in many photography competitions three years ago and has won various awards. The two runner up positions for the UAE National Award were given to: Riyas Muhammed for the image A New Day Begins (second place) and Don Ferdinand S. Tabbun for the image Hope (third place). The winning work is being shown alongside the awards’ other winning and shortlisted images at the Sony World Photography Awards & Martin Parr – 2017 Exhibition in London until May 7 and is also published in the annual winners’ book. Experience Chinese Cuisine Shang Place, the award-winning Chinese restaurant at Shangri-La Hotel, Qaryat Al Beri, Abu Dhabi has launched exciting new dining deals in the capital. Shangri-La Hotel, Qaryat Al Beri, Abu Dhabi allows its guests to experience Chinese cuisine in the most authentic way possible through four new offers. Two-Michelin-star Executive Chef Mansour Memarian is on a mission to educate guests at his restaurants about traditional dining styles and cooking methods. With this aim, he’s created the Quack Attack menu which is served every Tuesday from 7pm until 11pm. The set menu includes a duck-based roll, soup and main course all cooked in three different styles, and served with unlimited condiments. With the staff preparing the roll at the table and the aesthetic presentation of the main course, Quack Attack is as much a treat for the eyes as it is for the palate and each portion serves two people for a combined price of AED280+++. In his attempt to bring back the love for traditional Chinese 14

preparations, Chef Mansour introduces the Hot Pot concept to Shang Palace. Every Monday, guests can prepare their meal to their liking with a choice of meats, seafood and vegetables in the broth of their choice that will be stewing at the centre of the table. Priced at AED180+++ per pot, the package includes rice; noodles, sauces and dressings – and can serve up to two. Hot Pots will be available for lunch from noon until 3pm and for dinner from 7pm until 11pm. Reinforcing the Chinese dining style of dishes made to share, the Yu for You menu features a full fish which is served to the table in the same pan in which it is seared. Cooked in the Szechuan style, this dish can be shared between four people and is served with all yummy condiments on the side. The Yu for You menu is available for AED280+++ (per portion) every Sunday for lunch from noon until 3pm and for dinner from 7pm until 11pm. Following the success of its Yum Cha Lunch, Shang Palace now offers the menu during its dinner service as well. Served daily from 7pm until 11pm, the All You Can Eat Yum Cha Dinner menu is priced at AED138+++ for the meal, and AED158+++ including access to the large dessert station at Sofra bld. Shang Palace is open daily for lunch from noon until 3pm and for dinner from 7pm until 11pm. i Mr Vargas! Tell us about your day-to-day role as General Manager at Ferrari World Abu Dhabi – what are some of your major responsibilities? As General Manager of Ferrari World Abu Dhabi, I have many responsibilities that focus on different aspects and groups of people. First and foremost, I have a responsibility for the Park and its fans, in order to make sure that they have the best possible experience with us. I also focus my efforts on the role that the Park plays in the greater vision of Yas Island, and even that of the UAE. Since we are working with a globally recognized name like Ferrari, I am also acting as a guardian for the brand by respecting and honouring its legacy. My most important responsibility, however, is for my team at Ferrari World Abu Dhabi, where I direct my energy at keeping them constantly motivated and engaged. What are the most challenging and also the most rewarding aspects of being a General Manager of such an iconic entertainment destination? In my role, one of the most challenging aspects is anticipating future challenges and preparing accordingly for them. The two most rewarding aspects of my job are seeing the smiles on the guests’ faces as they are experiencing all that we have to offer with their friends and family and watching my colleagues grow into their full potential.

I am personally proud of the fact that Ferrari World Abu Dhabi is setting a standard that makes our guests happy, and perhaps others can emulate. You’ve worked all over the world and have gained extensive experience - what has been the most important lesson you have learned throughout your career? The most important lesson that I have learned throughout my career is definitely humility. When it comes to our guests, we remind ourselves that they are choosing to first and foremost, spend time with each other, and secondly, with us. We are honoured that they choose Ferrari World Abu Dhabi to enjoy their time with one another. A spectacular fireworks display brought the 10-day Mother of the Nation Festival to a dazzling close having welcomed 197,316 visitors to the capital’s Corniche Beach for more than 100 live performances, intellectual discussions and an extensive array of engaging activities. Organised by TCA Abu Dhabi, the Festival’s second edition was a successful tribute to the far-reaching inspirational values of H.H. Sheikha Fatima Bint Mubarak. Both men and women should dress modestly. Avoid going to public places in shorts, mini skirts, sleeveless tops and anything that displays too much skin - cover shoulders and upper arms, keep the neckline decent and make sure dresses are down to the knee. Loose-fitted garms are best to avoid offence (but also for the heat!).

The Holy Month is a period of humility, respect and restraint; therefore it’s best to avoid demonstrating any kind of affection (kissing and hugging your partner) in public, because it will be considered offensive.

GET INTO THE CAHRITABLE SPIRIT

Between sunrise and sunset, refrain from eating, drinking and smoking in malls, hotels, and outside in the open. Although fasting is only compulsory for Muslims, foreigners and non-Muslims should respect this rule, at least in public, as a sign of respect. Remember you could be penalised if caught!

An important element of the Holy Month is to be generous and give back to those less fortunate. Whether it’s by donating food, clothes or money to individuals or organisations, there’s plenty of ways for you to get involved.

Ramadan is a time for prayer, peace and spiritual reflection so make sure you’re not disrupting neighbours and/or other cars on the road, and people on the street by blasting loud music at home or in the car. As log as it’s not audible to others, it should be fine – but respect the peace.

GREET & ACCEPT INVITATIONS Wish your fellow colleagues, friends and Muslim community, who are celebrating the Holy Month with “Ramadan Kareem” and do go along to break fast when you’re invited – it shows a willingness to be a part of something important to them. Don’t go empty handed – flowers, Arabic desserts, dates or oud is a great gift for your host.

BE PATIENT & CONSIDERATE Going without food and water for 12 hours (or more) straight is a physically and mentally challenging task. Many people’s sleeping habits are also affected – so try to be sympathetic and understanding of those who are observing fast. 38

DRIVE AT SUNSET If you need to be out on the roads close to sunset then take extra caution. As the fast comes to a close, the roads fill with people heading to Iftar celebrations. They haven’t eaten, or had a drink for 12 or more hours and may get a little hasty behind the wheel. To be safe, wait an hour or so until after Iftar. ✤

RAMADAN: TOP HEALTH TIPS FOR THOSE OF YOU WHO WILL BE FASTING IN RAMADAN AND ANY ONE WHO WISHES TO JOIN IN AND EXPERIENCE THE HOLY MONTH, IT’S IMPORTANT TO MAINTAIN HEALTHY, NUTRITIOUS EATING HABITS ALONGSIDE FITNESS TO KEEP THE FATIGUE AWAY AND YOUR ENERGY LEVELS HIGH.

- NEVER SKIP SOHOUR Just as breakfast is the most important meal of the day, Suhour (the meal eaten before dawn) is equally important during Ramadan. The pre-dawn meal helps your body stay hydrated and fuelled up on energy and nutrients until your next meal at Iftar. It also helps you avoid overeating when you break your fast at sunset.

- CUT DOWN ON SUGAR AND PROCESSED FOODS Avoid heavily processed, fast-burning foods that contain refined carbohydrates such as sugar and white flour, as well as fatty foods like Ramadan desserts. They are high in fat and low in nutrients and will slow your energy levels whilst making you feel hungry quicker and more tired throughout the day.

- DON’T OVER INDULGE While it’s tempting to gorge at Iftar after a day of food deprivation, remember that you should slow things down. Start with a few dates and water and then wait before starting your main meal. Dates are a great source of energy, helping the body to produce digestive enzymes in preparation for the upcoming meal. Begin with warm soup and avoid heavy oils and fats in your meal. Make sure you consume plenty of vegetables and a good portion of protein and enough carbs, with a little fat. Remember to eat slowly and give time for your body to digest the food.

- STAY HYDRATED Probably the most important and simplest tip – yet one that many people forget to keep up in Ramadan. Drink at least eight to 12 cups of water between sunset and sunrise and add vitamin fluids for hydration from the period of Iftar to the time of Suhour.

Beware of consuming a lot of popular sugary Ramadan drinks such as Tamarind and Vimto. Juices, milk and soup are sources of fluids, but water is the best choice.

- AVOID CAFFEINE AND DEEP FRYING A big no go for Ramadan is caffeine which stimulates faster water loss, leading to dehydration. It is best to avoid caffeinated drinks such as strong tea, coffee and some fizzy drinks, or consume them in moderation. Try to avoid fried foods or those prepared with large quantities of oil – they make you bloated and thirsty. If frying cannot be avoided, one tip would be to reduce the quantity of oil used.

- WORK OUT AFTER IFTAR To avoid dehydration, it’s best to postpone working out until after fasting hours. Allow at least two to three hours after eating to begin your exercise routine, to give your body enough time to digest properly. Maintain hydration throughout your workout and don’t forget to drink plenty of water afterwards to replenish mineral losses due to sweating.

- GET INTO A ROUTINE One of the best ways to make fasting an enjoyable, cleansing and spiritual experience is to be disciplined in your routine – prep fruit and veg for smoothies and salads beforehand, get your required hours of sleep and recognise how much your body can handle when it comes to food and exercise. Most importantly – STICK WITH IT. ✤

WHAT TO EAT? At Suhour, go for protein-rich, high-fibre and complex carbs! Oats, wheat, lentils, grains and other complex carbohydrates (like fava beans) are slowreleasing carbs, helping keep your blood sugar steady and giving you a feeling of fullness for a longer part of the day. It’s likely that you’ll feel less of a need to binge when it comes to Iftar as well. Fibre-rich foods are digested slowly and include cereals, dates, figs, bran, whole wheat, grains, seeds, potatoes, vegetables and almost all fruit especially apricots and prunes. Bananas are a good source of potassium and other essential nutrients that help keep your body hydrated, so try and incorporate one into your morning smoothie or fresh juice with berries or almonds – get creative and enjoy! High protein foods like eggs, cheese, yoghurt or meat are also recommended as they can help replenish your energy throughout the day. Though, avoid things like sandwiches which have a higher proportion of bread, which makes you feel thirstier and sluggish throughout the day.

ONE OF THE BEST WAYS TO ENTERTAIN YOUR GUESTS THROUGHOUT THE HOLY MONTH IS TO CREATE A MAJLIS AT YOUR HOME. FACT HAS A FEW TIPS TO GET YOU STARTED...

WHAT IS A MAJLIS? A comfortable seating area in a local family’s home created especially for important occasions and frequent gatherings to receive visitors, mainly relatives and friends, but also colleagues and other respected members of the community. It’s not usually a permanent fixture in the house, but instead an area allocated for the purpose, and then furnished and decorated suitably. During the cooler months, a large tent or temporary atrium can be built for use, but in the summer heat, Majlis get-togethers are kept indoors. It is also, often, used as a recreation and relaxation area with male and female Majlis set-ups being kept separate.

And, from what we’ve heard, the drink Vimto plays a big part – if you’ve got Vimto on tap all evening, then you’re really celebrating Ramadan! Or how about setting up your own shisha at home? HOSPITALITY A very strong aspect of Arabian culture is hospitality, and this is especially relevant in a Majlis. You will be expected to serve traditional tea, coffee, and delicious desserts when you receive guests, and many families use this as an opportunity to demonstrate their hosting prowess! Of course, you can change it up and put your own personal spin on it – like organic sweet treats or beautiful 40

It’s important to set the mood and ambience with all the little touches expected at a Majlis. It can be as simple as having some candles with calligraphy, decorating your shelves with ceramic plates and cups, or even dotting the area with handcrafted ornaments like Arabian- style lamps and lanterns or mosaic- decorated show pieces. Incense is key to getting the aroma of the setting right. Oud is the most popular and can really help to create an oriental atmosphere.

FIND A SPACE A Majlis doesn’t have to take up a whole room. A corner of a large living room or the empty space in an entrance hall will do. You can either buy yourself some of the comfortable patterned Arabic couches or take existing furniture you already have and decorate it with accessories and cushions to give it that Arabian feel. Go old-school and get everyone involved for a game of Dawama (spinners!) or Kairam (wooden game board with four corner pockets), the options are plenty. A deck of cards to hand is always good to keep boredom at bay.

Tajines are Moroccan cooking implements that are already popular as household ornaments around the world. Colourful and pretty to look at, they make great decorations for tables and unused corner arrangements. However, they can be functional too – fill them with different sweets and arrange them artfully around your Majlis. Serve up a good variety of traditional desserts like basbousa, kunafa, baklava, maamool, halva, luqaimat, and dates with various fillings, and even a mix of nuts. Try your hand at makig Umm Ali, a favourite in Ramadan, and serve it in separate bowls or pots, like desserts at a buffet. This way, guests can pick and choose what they like. Savoury food options can also be served.

GET CREATIVE If you’ve got a big space and a group of friends with different talents – why not hold an Arabian pop-up market at your Majlis? Ask them to bring a few of their products and arrange an area to have these on display for others to discover and potentially buy. The beautiful pieces were displayed in the hotel lobby for a week, with six paintings being sold on the opening night. LOCAL ARTS

THE EXHIBITION Art enthusiasts and audiences are invited to explore a mixed-media exhibit featuring artworks created by 23 Emirati and UAE-based artists of different ages and backgrounds. The theme of this exhibition,mixed media arts,is a symbol of both inspiration and originality. From Picasso to Hannah Hoch, and from Pop Art to Photoshop, we are living in the age of mixed media and collage. In all walks of life, collage is used for communication, entertainment and more. Through this exhibition, and many other community engagement initiatives, TCA Abu Dhabi aims to support a community of cultural practitioners who are able to add to this long history of creativity using any and every medium available. Collage Exhibition presents the works of different elements and techniques which are used to create a final art piece conveying varying messages and meanings. This exhibition explores the dialogues that are embedded within the artwork itself through both the cohesive and contradictive media used to create it. Collage is a very persistent art form in the UAE both in digital and traditional mediums. Among the artists featured in the exhibition is Ali Al Abdan with his Spirits from the Past series that aims to document and archive historical figures through 70

an accessible mean of communication that can be appreciated by all visitors. In his work, Ali has used collage as a way of transforming everyday imagery and common words into an archival document. This has resulted in the development of a document that tells a story and immortalises important figures who have shaped the cultural scenes in the Gulf region today. Sumayya Al Suwaidi, Community Events Manager, said: “Collage exhibition continues TCA Abu Dhabi’s commitment to the nurturing and furthering of contemporary arts practice in the UAE. In the exhibition, the dialogues of the citizens of the UAE are explored, and it showcases the wealth of creative talent around us.” Participating artist, Hussain Sharif used collage to question, study and experiment with the concept of identity, as his work is part of the process and not the end – he works and reworks the images to reflect through a seemingly never-ending process of construction and destruction. ON COLLAGE Through layering, adding and deducting elements both the usual and the unusual, the stories told and the others that are waiting to be told can differ, and there will constantly be various methods to articulate these narratives, or merely experiment the artistic practice and be an aid to functionality in compositions and achieving balance. Earlier forms of collage date back to ancient Chinese papermaking techniques, Japanese works and Gothic cathedrals, amongst other types of regeneration. However, its modern use is coined by the practice of Pablo Picasso as well as Georges Braque in the early 20th century. The assembling of found objects, the works of Dadaists and the Surrealists’ endeavours are also intertwined to the sheer mode of adding the unconventional to the customary. Since then, many practitioners depended on this artistic form to create and recreate visual means of communication. Collage and mixed media in general can be defined as gluing pieces together, or 74

creating works using different materials and techniques to build an added appearance. It could include paintings, drawings and three-dimensional objects, along with cut-outs, words and photographs. It is a practice that combines the medium, the process and the works in one conformist yet eccentric artistic expression that is timeless as it continuously generates new meanings. Mixed media works are not an end by themselves, rather an integral element of the process that develops with the viewers’ perception of the possible connectivity between the various components and the connotations that they may raise. Artists tend to use neglected material to highlight important matters, and the matter here becomes a different and yet additional inclusion to the work itself to support the concept. In recent years, mixed media refers to diverse forms of creative practices, from paper and canvas to films and sound collages and montages. Digital collage is also another mean to use this technique beyond the physical and into the virtual.

The cartoon quartet are testing uncharted territory with Saturnz Barz, featuring trap-style beats and Popcaan’s sinister verses. The track is the furthest from their previous work- more proof of the virtual band’s genius! They’ve certainly evolved a great deal over time, with Humanz offering us a diverse and eclectic mix. The band’s socially relevant music truly speaks to our soul!

Strength of a Woman

While disease is certainly no funny business, Jennifer Wright manages to fuse humor and history together to understand various outbreaks and their impact. Reading a book on plagues may not sound ideal, but Wright’s humorous take on the gruesome subject matter certainly makes it intriguing and informative. Wright uses pithy comments and commentary to talk about the outbreaks, their cures and how they were handled at the time. The writing style is amusing, light-hearted and scathing and is presented as a fascinating monologue. Who knew reading about plagues could be fun?

Feel at Home in Spaccanapoli SPACCANAPOLI IS A CLASSIC BUT FIRM FAVOURITE AMONGST THE CAPTIAL’S FOOD CROWD, LOCATED AT CROWNE PLAZA ABU DHABI ON HAMDAN STREET IN THE HEART OF THE CITY. FACT’S ANGELA BEITZ SITS DOWN WITH HEAD CHEF LUCA PALTRINIERI TO TALK ABOUT THE SECRETS TO THE ITALIAN EATERY’S SUCCESS. WITH SO MUCH tough culinary competition in Abu Dhabi, long-term success for a restaurant isn’t only based on the food as Chef Luca explains: “The restaurant and the food are so well loved because it is simple and elegant, and rich in products of exceptional quality due to their nutritional value and taste.” As if on cue, the super-friendly staff bring us our first dish - Beef Carpaccio. This is an excellent start; fresh and beautifullypresented with perfectly thin slices of tasty beef atop rocket, drizzled in balsamic vinegar with shaved parmesan. We finish the entire thing within minutes! Our Margarita Pizza arrives and it looks like cheesy goodness. We opt for a gluten free base (Spaccanapoli was one of 106 fact magazine

the first restaurants in the capital to offer gluten free choices - winner!) which is crisp and beautifully cooked. Mozzarella cheese oozes out over the tomato base. SO YUMMY! When it comes to Chef Luca’s food philosophy, he likes to keep things interesting. “You are what you eat and live,” he says. “You must live to be interesting and also as healthy as possible. We are currently working on a new menu for Spaccanapoli which will be launched after the summer and will feature fresh items and traditional Italian food, which I am excited about.” We then move onto mains opting for the Veal Milanese, which comes as a huge portion served with salad and

potatoes. The veal is tenderly cooked with the most perfect bread crumb crust - a hearty dish that makes us feel all warm inside. Next, another favourite of ours, the Mushroom Risotto with Italian saffron, wild mushrooms and shaved Parmesan. It’s one of the best risotto dishes we’ve tried in the city - packed with lots of flavour and quality ingredients that you can taste in every mouthful. We didn’t want it to end. When speaking about the restaurant, Chef Luca’s face lights up. “I love to cook everything on the menu and it gives me great joy to personally present the dishes to my guests,” he smailes. “Spaccanapoli makes me feel at home, while far away, the typical romantic and jovial restaurant with good cuisine and a good mood.” Last but certainly not least, a homemade Tiramisu is presented in a simple and classic way, but easily one of the best we’ve had in a long time. Its rich layers are so moreish with just the right amount of coffee - heaven. We were thoroughly impressed by Spaccanapoli, and it’s not hard to see why it’s remained a strong contender in the city. Chef Luca aslo likes to cook while he’s off duty: “At home I cook with my wife and my three-year-old daughter,” he shares. “I’m always looking for quality and always give a fresh touch to the recipes to give the eye a nice dish to look at. t’s hard to take your eyes off the mesmerising décor in Mezzaluna; whimsical artworks greet you from every wall and white space with their colourful depictions of Italian cities and culture whilst gracious high ceilings and chic lighting fixtures hang above, creating both a welcoming and intimate mood. The restaurant has been designed to conjure the grand tradition of trattorias throughout Northern Italy with their tree-lined roads, undulating hills and sun-kissed fields. Lo and behold, it surely feels like stepping into the home of a spirited Italian family for a dining experience that will take any lunch or dinner to another level. Mezzaluna serves hand-crafted, regional Italian specialties. Whether you prefer paccheri pasta with lobster, langoustine and asparagus, or stuffed baked lamb loin with Cerignola olives, a simple Pizza Margherita or a special dish, such as Gluten Free Pasta, Mezzaluna’s friendly staff will guide you to the Italian dish perfectly suited to your palate. We are firm believers in treating yourself to good carbs and Mezzaluna helped with our food motto by bringing out a basket of

fresh bread and the most gorgeously-ripe, delicious olives – just these alone had us doing the happy dance. The menu at Mezzaluna is just as impressive as its setting. A good selection of antipasti, soups, pizza, pasta, risotto, fish and meat dishes as well as delectable desserts, wait to be explored. As HUGE fans of good cheese, we, naturally, gravitate towards one specific antipasti; the Panzanella E Burrata, a generous portion made up of soft and creamy Burrata cheese with cucumber, basil, “ramato” tomato salad and focaccia croutons. Word of advice: though it’s enough to share, once the first spoonful passes your lips – you’ll want it all for yourself – it is just THAT GOOD! Next up, we went for something exquisite from the homemade pasta selection. Out came the Ravioli Di Mozzarella Fatti In Casa in all its fresh, cheesy glory. The perfect vegetarian dish, the ravioli is neatly packed with lip-licking Mozzarella, swimming in fresh tomato and basil sauce. Not only is it presented nicely, we devour

the entire plate so quickly that we’re almost tempted to order another. Alas, there must be room for dessert! It’s going to be a tough choice between the classic Tiramisu and the saucy Chocolate Fondant – so, as any REAL selfproclaimed foodie should, we order both. The second we see the chocolate oozing out of the sponge, we immediately feel no regrets and polish off the plate with gusto. The tiramisu is equally mouthwatering and even something as simple as a sorbet pleases around the table. Mezzaluna is all about inspirational dishes, created using the finest ingredients sourced throughout Italy, from seafood and artichokes form Sardinia, blood orange and fine sea salt from Sicily and olives and olive oil from Liguria. ating out at Tori No Su is more than just a dining experience; from the moment you enter there’s a luxury yet laidback vibe with a beautiful lounge area – perfect for starting your evening off with a few drinks whilst indulging in good conversation – and then there’s an extensive dining area with lovely large tables set up to provide both lively and intimate seating options. Perch at the teppanyaki and robatayaki counters for an informal affair and watch the chefs dazzle you with skilled culinary techniques and an element of fire, or opt for a sit-down meal where friendly waiters will be happy to guide you through the delicious menu and serve your choices straight to the table. As much as we love the interactive counters, a dinner at Tori No Su is truly enjoyed over a number of courses in a comfy chair at the table. We’re pleased to see that the one and only kaiseki-trained Chef Ando Takashi is still front and centre of the open kitchen-style setting and greets all his guests with a warm smile and a traditional Japanese bow when they walk in, and on their way out. It feels like

we’ve been invited to dine at his home! Like every good Japanese dining experience should – we start off with Sushi from the list of yummy choices. Ebi Ten Maki made up of prawn fritters, avocado, cucumber, aonori, mayonnaise and Spicy Tuna Rolls packed with tuna, spicy mayo, avocado, cucumber, yuzu, and tempura flakes. Generous portions with beautifullyvibrant and utterly tasty ingredients, the ideal starters to our meal. Hot appetisers come out in the form of Edamame and Hotate Ebi Gyoza (prawn and scallop dim sum); flavourful, texturepacked and a nice warm beginning to the main show. We also opt for the Beef and Duck Mushroom Roll infused with sweet potato and teriyaki sauce – WHAT. A. WINNER! From the Tori No Su Special we get the Lobster Cream Croquette, liberally filled with lobster, corn, onion and miso cream sauce – little bites of food gold. YES! The meaty main arrived at the table and we couldn’t wait to tuck in. Wagyu Sirloin Teriyaki with Garlic Rice – a match made in culinary heaven. The meat was juicy and cooked medium-well as we’d requested,

whilst the rice added another pop of flavour to complement the teriyaki taste – bliss. For dessert, we went authentically Japanese with the Green Tea Cake and tangy Mochi Ice Cream – was it good? We change into a lovely robe and slippers and our therapist scrubs and cleanses our feet. stress management. This is more of a spa experience than a standard treatment. We lay on the unbelievably soft massage table and the treatment starts with a calming voice over the sound system guiding us through a series of deep breathing and meditation while our therapist starts the massage. Throughout this de-stressing treatment, the oil from the Neom Intensive Skin Treatment Candle is drizzled over the skin, and the massage targets key stress relieving points on the head, face, neck and back. This treatment is utterly blissful and so relaxing - it allows tension to drift away and for a calm new you to be uncovered. We also try the HydraFacial which there has been a lot of buzz about. This facial involves gentle but effective powers of HydraFacial MD, a patented facial treatment that promises instantly clear and evenly toned skin without the precursory redness or irritation. It carries the potential to make painful extractions a thing of the past which is great for those with sensitive skin. Our skin is double-cleansed, assessed and then the machine is used (it works as a vacuuming action to exfoliate dead skin cells and rid the skin of excess oil). A glycolic and salicylic acid is deposited onto the skin through the tip, the pore opening is widened, allowing the vacuum suction to dislodge and suck up nastiness from deep inside. Unlike with some manual extractions, strong pressure isn’t used, making the whole de-gunking process a lot more gentle and completely pain-free. Our face is then massaged with a serum and the final step was a heavy hydrating mask that was applied over the entire face including eyes and mouth. The mask plumped our skin beautifully and the whole experience left our complexion, bright, glowing and hydrated. i Fady! Tell us about your day-to-day role as Area Director of Sales and Marketing? Being the Area Director of Sales and Marketing for our Abu Dhabi hotels, I look after four brands with each of them targeting a different audience and having a completely different identity. Although it’s challenging at times, I have to admit that it’s also fun and very rewarding. My day starts off with reviewing the hotel’s numbers, what the competition is doing, who our guests are and who needs to be targeted next. Overlooking more than one hotel makes my role less of executor and more of a strategic thinker. You will see me, most of the time, with my direct team at Crowne Plaza Yas Island, discussing potential business opportunities and working on long term strategies. In your role, what are the most challenging and the most rewarding aspects? I am a very optimistic person in general and tend to see the cup half full. Challenges are always opportunities. This is the same mentality I try to make my team work with. Every challenge is taken on board and I try to analyse what could have or could be done to turn it into a winning opportunity. My current role and being part of the IHG family is rewarding in itself. The brand allows you to explore your full potential and helps you develop not just your career but your personality and character too. What keeps you excited about working in the hospitality industry and especially for a renowned company like IHG? IHG is one of the biggest hospitality companies and provides its employees great opportunity to grow and be themselves. It’s very important for an individual to feel that they can be who they really are; this helps them perform better and reach their personal and professional goals. The opportunities in the

company are endless and there is always room for talent and growth. IHG is known for its eye to focus on its man power. What keeps you excited about working in this industry? Its diversity, in any manager role within the hospitality industry you have to put many hats on: accountant, teacher, developer, food critic and many more. It is difficult to get bored or complacent in such an environment. What has been the most important lesson you have learned throughout your time in the hospitality industry? You can never stop learning. You learn on daily basis whether from your peers, colleagues, partners or even guests. It is an endless learning curve. Share with us some of your professional goals for the rest of 2017… Anyone who knows me knows that I either win or win.
