Anatomy of a SAMURA knife
Spine
It is the blade's top, not sharp, but thickness indicates a knife's quality; thick spines are sturdy, thin ones are flexible.
Bolster
It connects the blade and handle, providing weight support. Good knives have thick, heavy bolsters for control and durability.
Handle
Knife handles come in various materials for comfort and grip. An ideal knife has an ergonomic handle for efficient cutting.
Tang
The tang is an extension of the blade that goes into the handle; it’s for blade stability.
Butt
The butt is the knife's end, often a tang or handle back. Metal tang pommels are preferred for pounding, but it's generally not recommended due to potential breakage.
Blade
Straight-edged blades are versatile, serrated blades cut steak, scalloped blades are for bread, and others have specific purposes.
Point
It is the furthest point from the handle. It’s sharp and can be used to pierce through objects.
Tip
It’s, located just below the point of the blade, aids in fine cutting, often mistaken for the point.
Edge
The knife's cutting portion, excluding the tip, is the edge, crucial for knife quality and functionality.
It is the broadest part of the blade near the handle, offering control and leverage for cutting tasks, unlike the tip. Heel
