Love. Not something we think about a lot this time of year.

We’re too worried about cooking and buying gifts and traffic (oh, that traffic on Ambassador Caffery) and parties and getting it all done. But, recently I’ve realized all those things on our to-do list that pile up this time of year are actually centered around love. Sometimes we just get a bit misguided.

For example, my sisters and I don’t want anything from each other for Christmas. Yet, we spend an exorbitant amount of time buying each other gifts we just know the other can’t live without. This year we really are cutting back – really. Because it’s not about finding the perfect gift for each other – it’s about spending time together.

And then there is the cooking. Oh, the cooking. As a child I simply enjoyed my mother and grandmothers’ cooking with little regard for the effort it must take to make a spread the way they always did. As I’ve gotten older and realized the planning and shopping and chopping and slicing and dicing and baking that go into it all I was frankly a bit mystified as to why they went to all the trouble. I know now it’s an act of love. The smell of sage and celery and onion means a lot more than dressing. I see now that those peanut butter balls my mother-in-law makes each year (she leaves a few for me sans chocolate) and the dressing my mom makes from homemade corn bread and bits of toast are an act of love. And one I appreciate more every year.

And this season it is all about love if we think about it – what else could have motivated God to send his only son to earth? It’s a message our cover girl is spreading right here in Lafayette. Stacy Pichoff didn’t wait for the holiday season to start. At an unlikely time in her life, Stacy realized she could make a difference. Without a throng of volunteers or any kind of financing, Stacy is simply showing love to the people in Lafayette who probably need it the most and get it the least – the homeless. Her mission is simple – listen and walk alongside them. She is but one person doing her part to make someone’s life a bit better. It’s a lesson we can all take to heart. Find a cause and act. There are amazing organizations in Lafayette making a difference every day. Join up with one of them. Or find your own way to show someone a bit of compassion. It requires but two things – time and heart.

Dawn A. Foreman, RD, LDN, CES of Personally Fit shows us a move that’s great for the hips and thighs. It also works on your balance and core strength as you extend your leg to the side with arms stretched overhead.

If you have a knee injury try the slight modification. (Not a move for those with any lower body, joint or back injuries.)

1 – Start with feet together with arms overhead and weighted medicine ball in hands. Stretch your arms overhead to the ceiling and keep belly button pulled into your back.

2 – The first set will be completed with your left leg as your balance leg. Pull the right leg around and behind your left leg and curtsy.

3 – Inhale as you curtsy and bring arms down.

4 - Keeping your head up bring the weighted ball to the floor and touch it down to your left foot.

5 – Exhale as you return to a standing position bringing the weighted ball back overhead and your right leg out to the side. * Without returning to the starting position (start with number 2) repeat the exercise 10 times then begin the next set using your right leg as your balance leg.

Cortisol has gotten a lot of press lately for being responsible for weight gain in women. And when stress hits, the cortisol production beings. (So, we end up stressed and fat?) Cortisol is a hormone we should release as a fight or flight response. But, when it’s released and there’s no fight and no flight, therein lies the problem. The good news is simply exercising helps to keep the cortisol from lingering.

“If it stays in the organs it literally ages you,” Jerry says.

Get the cortisol moving with yoga or Pilates and add eating right and drinking lots of water.

For a quick way to chill out in the midst of holiday stress try one of Jerry’s recommended breathing techniques. Don’t dismiss the power of changing the way you breathe – after all it actually changes the chemistry of your blood. Breathing better changes your heart rate and the chemistry of the blood because you’re oxygenating it.

It may be the most wonderful time of year. But, it can also be the most stressful. Between holiday parties, gift giving (and of course lots of gift buying), mounting traffic, final exams, a lot of family in a little amount of time and space and traveling – Christmas can quickly go from twinkling lights to road rage.

Acadiana Yoga owner Jerry Smith Guidry, an expert in all things relaxation thanks to her knowledge of massage and yoga, gives us a few tips for keeping the sanity this time of year and explains why the holidays stress is a serious problem.

Jerry’s quickest description for taking care of ourselves during the holiday season is a simple one we all know well. But, often fail to practice or realize the importance of it when we’re caught up in our never-ending to-do list.

“We have to remember if we don’t take care of ourselves we don’t do a good job of taking care of others,” she says.

It’s like putting your own mask on first in an emergency in a plane and then your child’s.

“It’s a great example of what a lot of us are forgetting. We won’t be in a good place physically and emotionally to be a nurturer to others,” she says.

Simple breathing  Breath deeply into the belly, then ribs and then up around the collarbone and then reverse in that order.  Do five (5) or 10 breaths and something will change. You release a bit of stress.

Alternate nostril breathing  Use your right hand with the palm facing you and close your right nostril.  Inhale through the left nostril for 4 counts.  Close both nostrils.  Exhale through the right nostril.  Do it several times on each side.

If you’re going for a brisk walk, aerobics or yoga, you can actually disperse and eliminate stress. It literally shakes it out of you.  Sing a little song. Do something like sing or hum. We believe you have more than one body – emotional body, physical body, different things to affect the bodies, singing lifts up the emotional body. If you have a hymn that means something spiritually, it will have double meaning.

Try humming in the car rather than listening to news on the radio when you’re stressed.  Massage matters. Massage helps on more than one level – mental and emotional. You’re flushing tissues in the process and you are literally wringing out the muscle tissue and getting rid of metabolic waste.

Certain acids in our bodies make us tighter and it makes us feel uptight and stiff.  Try a long soak. Soaking in a bath of Epsom salt and apple cider vinegar literally draw it out. Combine a cup of either or both in a warm bath – not super hot as it can cause more tension. It pulls out some of the trash and waste products our muscles produce. Otherwise, it’s like eating and eating and never going to the bathroom. It poisons our system.  Downsize. Who says your child has to have $500 worth of gifts? Rethink this. Are you cleaning out your stuff to buy more stuff?

. Stay Hydrated. Drink plenty of water all day long; aim for half your body weight in ounces. . Be a food snob. Choose to eat only what you REALLY enjoy! . Follow the three-bite rule. If there is a holiday food or treat you just can’t resist then take a bite – enjoy it and savor it.

Take two more (really enjoy them) then toss it. . Avoid office “gifts” and save the treats and special foods for the weekend. . Make your workout efficient and effective. If you only have 20 – 30 minutes to get something done, then make it effective by doing intervals and changing up the intensity. . If the food around the office is too tempting to resist and you have authority to do so, donate food gifts to nonprofit organizations. . Another office tip - place the gift basket in a very inconvenient place to get to. . Think about your holiday food budget the same as you would your wallet. Where do you really want to spend and enjoy your calories? . Avoid skipping meals. This will only set you up for disaster! . Increase your fruit and vegetable intake. Aim to get a serving with every meal and snack. . Eat something small every three to four hours. . Skip the sugary alcoholic beverages.

. Serve yourself off a mini sized plate. . Avoid going to a holiday party or meal starving, eat something before you go. . Keep a food journal. . Avoid sitting or socializing near buffet tables, candy dishes, and cookie platters. . Excuse yourself from the table when you are finished eating. . Be polite and avoid talking with a mouth full, but keep your mouth busy by talking with friends and family instead of chowing down! . Keep gum and sugarless breath mints on hand to help prevent mindless nibbling. . Enjoy club soda or sparking water before / instead of a cocktail to limit alcohol consumption. . Avoid fancy coffee drinks. . Holiday season can be stressful so plan out activities in advance to deal with your stress. . Keep hot tea packets readily available and visible at home and in the office. . Prepare lunches and snacks in advance and bring to the office with you. . Consider scheduling a walking or jogging date with an old friend instead of meeting for lunch.

Maybe, maybe not, especially if you’re a couple. Rather than feeling festive and more attached to your partner, you might find yourself fighting your way through the holidays. The hectic holiday season with its fast pace, financial burdens, and social and family commitments, can put a serious strain on your relationship. Extra activities, even fun ones, can create tension, frustration, and fatigue, all of which can take a toll on your relationship.

In order to protect your relationship from holiday stress, and enjoy the holidays (and beyond) as a couple, self-awareness and communication are critical.

First, be aware of your energy level. Talk to your partner about what is important to you as you go through the holidays. Tell your partner what activities you have the most/least energy and interest for and

negotiate the “must do” list if needed. You do not have to accept every invitation. You may decide to skip, add, or change a holiday event or family tradition to make for a more enjoyable time with each other. Learn to prioritize and to say ‘no.’

K Get emotional support. Communicate about what kind of support you need from each other to make it through the season. You and your partner may need more care from each other, such as spending time together looking at lighting, participating in a religious celebration, or going out to dinner or for a walk as a couple.

3 Lighten each other’s load. Work as a team, and play to each other’s strengths. Maybe he’s better at picking out gifts for the men in your family, while you’re better at shopping for his nieces. If you’re stressed about outdoing each other with extravagant gifts, agree on an amount to spend or put the money away for a vacation together. ! Have a plan. Map out with your partner a holiday calendar of what you both want to do. On your way to an event, have a basic game plan. How long will you stay? Who’s the designated driver?

I Stay connected. Just because you attend a weekend-full of parties together, doesn’t mean you have actually spent the quality time together that makes you feel connected as a couple. Being

in the same room isn’t enough to create intimacy.

Little check-ins, however, throughout an evening (e.g., “hey beautiful” or sharing a quick story) will keep you linked throughout the night, despite the crowds. Sometimes just touching each other affectionately while you’re socializing can serve as a love signal when you don’t have as much time for each other.

The holidays only last a short while, but you want your relationship to survive much longer. Couples can reduce holiday stress by being honest and letting each other know what support is needed and by negotiating holiday plans. Emotional support and open communication with your partner can help you both cope better with holiday stress.

DIRECTIONS 1. Preheat oven to 350 degrees farenheit. Place chicken breast halves between sheets of waxed paper. Lightly pound each breast until about 1/4 inch thick; set aside.

Chicken and Shrimp Pinwheels Ingredients 4 boneless, skinless chicken breast halves 1 cup diced cooked shrimp 3 ounces cream cheese, softened 1/4 cup sun dried tomatoes, minced 1 clove garlic, minced 1 tablespoon fresh basil, minced 2 teaspoons small capers 2 tablespoons Creole mustard 1 tablespoon olive oil 2 tablespoons all purpose Cajun seasoning

2. In a medium bowl, combine shrimp, cream cheese, sun dried tomatoes, garlic, basil, capers and 1 tablespoon of Cajun seasoning. Mix well.

3. Spread a generous tablespoon of mixture on each chicken breast. Beginning at the edge, roll up each piece of chicken similar to a jellyroll. Secure each breast with a wooden toothpick.

Lightly coat rolls with olive oil and then sprinkle with the rest of Cajun seasoning. Place chicken seam side down in a shallow baking dish.

4. Bake for 25 minutes. Remove from oven. Let them set for 8 minutes then using a sharp knife slice into 1/2 inch slices. Arrange on platter to serve. Serves 10 to 12 people.

Sweet Potato Bread pudding INGREDIENTS 8 loaves of po-boy bread, cut into cubes 5 sweet potatoes 1/2 cup butter, melted 1 teaspoon ground cinnamon 1/2 cup raisins 8 eggs, beaten 1 cup white sugar 1 cup brown sugar 2 teaspoons vanilla extract 1/2 teaspoon salt 3 cups scalded milk 1 pinch ground nutmeg DIRECTIONS • Preheat oven to 375 degrees Fo (190 degrees Co). Lightly butter one 2 quart baking dish.

• Peel sweet potatoes and cut into 1” pieces. Boil on stove till tender.

• Drain when tender and smash.

• Combine bread cubes, butter, cinnamon, sweet potatoes and raisins; mix well and place in greased baking dish.

• Beat together the eggs, sugar, vanilla and salt. Add milk, mix well and pour over bread cubes.

• Sprinkle with nutmeg and bake for 25 minutes.

Whiskey Sauce Ingredients 18 egg yolks 1 cup sugar 3 cups milk ½ pound butter 1 tablespoon vanilla 1 cup Jack daniels Directions • Warm milk, butter, sugar and vanilla to a simmer.

• Whisk yolks in separate bowl • Temper milk mixture to egg. yolks whisking constantly.

• Return mixture once combined to the to of double boil till desired thickness is aquired.

• Finish with Jack Daniels.

There’s so much to take for granted this time of year. We find ourselves complaining about crowded malls, how to make decisions about presents, extra pounds from holiday treats, those relatives that seem to stay around a little too long. Now, imagine a Christmas without any of those things.

It’s the kind of Christmas the very men and women who are serving our country will face this year.

A group of students at St. Thomas More Catholic High School are doing their part to bring some holiday joy to those troops this year and you can too.

The Fellowship of Christian Athletes at STM sent 140 boxes overseas with goodies from candy, cookies and magazines to books and sunflower seeds. And they all went to troops with a connection to the school.

The service project came about because a classmate’s brother is

stationed overseas – giving the students a real connection to the troops. Development director Kate Brady says they contacted local parishes and alumni to find troops with a connection to STM. In addition to the treats, the packages included letters and updates about what’s happening now at the school.

Thomas Gumpert, an STM senior and FCA member is from a military family and knows how important mail is to troops overseas. And how much it means to have people back home praying for them.

And while giving back to the troops is all about reaching out, senior FCA member Meredith Stokes says it also made her look at all she has.

“It makes you think how fortunate we are for the things we have, especially around Christmas. It must be really hard to not be with the people

BELLA FIGURA

Bella Figura roughly translates from Italian to “beautiful image”– always looking and being your best. The owner(s) of the local restaurant bearing the same name obviously had this concept in mind when creating its newest location at 2207 Kaliste Saloom Road.

I understand that Bella Figura has had a bit of a nomadic history and finds itself a few short months in its fourth location. Upon entering, I received a warm greeting and immediately noticed that the black recessed ceiling punctuated with sparkling lights gave the feel of dining under a starlit Tuscan sky. The atmosphere was enhanced by a guitar minstrel who serenaded, without creating any sense of awkward intrusion. With its robust columns, colorful Italian artwork and gentle lighting the first impression was truly “bella figura”.

While I studied the intriguing menu and savored my delicious martini, I was treated to a small loaf of warm, freshly baked bread with a garlic hummus. The hummus featured tasty whole garbanzos (or chickpeas) and whetted my appetite for what was in store.

My appetizer was the “Creole Scampi Al Forno”. This dish was an absolute treat and consisted of succulent jumbo shrimp, baked in a wonderfully spiced Creole butter sauce. It was served with toasty herbal crostinis, ideally sized for capturing the delectable nectar in which the shrimp was prepared and offering an awesome textural contrast to the buttery shrimp.

For my main course I chose the Veal Ossobucco Milanese. This hearty, thick cut of veal shank was superbly prepared, remarkably seasoned and literally “fork tender”. It was braised to perfection, served bone in, over a bed of pappardelle

pasta and topped with an exquisite braising reduction. It was nothing short of magnificent. The large styled fettuccine noodles provided a well-suited medium for capturing the essence of the flavor of the meat and the sauce. The bone in presentation also allowed me the pleasure of the scrumptious marrow within. C’est si bon!

There was no way I could resist the Tiramisu for dessert. This layered confection was almost large enough to share, but I wasn’t about to do so. The cake section was moist, without losing its fluffy character, while the whipped layer was rich and creamy. The chocolate topping was full, yet smooth. The combination (with a full bodied cup of coffee) provided an ideal ending to a highly recommended feast. The phrase tiramisu literally means "pick me up.” Some suggest that it is derivative of the effects of the sugar and the original links to an espresso base. Others subscribe to the thought that it is a "pick me up to heaven" due to the taste. The Tiramisu at Bella Figura is truly “heavenly.”

I would be remiss if I failed to mention the breadth and depth of the wine list at Bella Figura. The selection offers something for virtually every taste and everything on the much-diversified menu. The restaurant also offers a handsome bar where you might enjoy a wait or a sophisticated venue for relaxing with friends.

I

It’s easy to want more for others. Easy to think of all the ways we could reach out this time of year. What’s hard is actually doing it, and what’s even more difficult is doing it when it’s not the season of giving. When there are no Angel Trees or food drives or holiday meals to be served at the soup kitchen, it’s easier to go back to our everyday existence that includes pretending the less fortunate don’t exist. It’s easy to look straight ahead as we drive by, and never make eye contact. Easy to think ‘get a job.’ Easier than looking in their eyes and realizing they are not so different than you and I.

Stacy Pichoff once was one of those people who simply kept driving. Not now. She’s looking straight in their eyes. This stay-at-home mom is proving a simple idea, combined with a compassionate heart, and the courage to do more can change a life. And what she’s learning is that life may just be her own.

Stacy Pichoff is kind of a tough cookie. Sure, she’s sweet – something anyone can tell within minutes of meeting her.

She has a sincere smile that’s frequent and you can tell quickly she is a mom by her attitude that reads ‘it’s not about me.’

But underneath her easy laugh there is a kind of serious contemplation and a sense of resolve. It is that resolve that must have driven her from bed to help others within months of being diagnosed with a disease that can be both emotionally draining and physically devastating. Today Stacy is spearheading an effort to help the homeless in Lafayette called Second Chances.

So how did she do it? And more importantly, why now when it seemed the most logical to focus on herself?

More than 4 years ago, Stacy was a single mother of two – Brennan, now 13 and Kaitlyn, now 10 – who had been divorced for 5 years.

She wasn’t out looking for love and sent a simple prayer heavenward.

“I told God if you want me in a relationship send him to me. I’m not going to go out and look,” she says. “Two weeks later, Joe walked into a friend’s house.”

With a deep smile, Stacy recalls the night her husband asked her out.

“I knew it was right,” she says.

They met up on a Sunday afternoon. He cooked for her and they read the Bible.

“I knew this was the man,” she says.

Within 7 months they were married. She says they were both at a point in their lives where they wanted God to put them with who they needed to be with. It was a good thing they were right, because less than a year into their marriage they would face challenges that would be trying for any couple to weather.

The phone call came at 7:12 a.m., just 11 months after they were married. Joe had been in an accident. A car pulled out in front of him, causing an accident that left him broken from head to toe. His leg was wrapped backward.

The truck was on fire. He had to be cut out.

and pelvis, to name a few. When Stacy arrived at the hospital, he was bleeding internally and throwing up blood.

On the way to see him Stacy remembers her mom giving her one simple word of advice – ‘Now you need to be strong.’

“And I knew at that time – this was going to be all about Joe. I needed to be strong for him,” she says seriously.

Stacy was his nurse for more than a year.

They were together 24 hours a day.

“It was hard at times. But made you realize we could work it out no matter what,” she says.

It solidified their relationship in a way that can only come through a shared experience so unique – so painful.

“I realized you never find out who someone is until you go through a traumatic experience.

Your fears, anxieties – it all comes out,” she says.

Stacy’s tough personality was just what the doctor ordered as she pushed her husband – not just in his wheelchair.

“He was determined to do it. I stayed on him.

I was hard on him. I knew what he could do and I pushed him,” she says of the months of recovery time.

It was an eye opening experience and one that only strengthened their relationship with

each other and their faith in God. Today, Joe is a walking miracle.

“Looking back at the accident – we are so much closer to God than what we were before,” Stacy says. “You realize what you have and how it could be gone very quickly.”

As Joe recovered Stacy’s body started to send its own signals that something was amiss.

She put her pain off – sure it was related to picking up Joe’s wheelchair or some other task she had undertaken. Then a year ago, she was diagnosed with Fibromyalgia. Fibromyalgia is a chronic condition that includes widespread pain in muscles, ligaments and tendons, as well as fatigue and multiple tender points — places on your body where slight pressure causes pain.

There is no cure. It is only barely treatable.

Stacy remembers getting into the car crying after the doctor visit. She had always had the answers. Even as Joe was recovering, she had known how to administer her tough love, how to care for him, how to push him, how to fix it in some ways. For the first time she realized she couldn’t fix it. She didn’t have the answers for this.

She knew the condition would be with her for the rest of her life. It was hard to make plans.

How would she feel tomorrow? Or a week from now?

Each day would be different.

She says frankly that she was thankful to be a stay-at-homemom, which allowed her to lie down anytime she needed from the pain or the fatigue.

It was during that time she would rest and simply pray. She spent a lot of time praying. She says God told her it was time to get up and go. It was her time to help someone else.

“Even though you’re down and out and not feeling good, you can help people,” she says.

Stacy had always wanted to be a missionary and thought maybe when her kids were in college she would have the chance to travel afar and do just that. It hadn’t occurred to her there might be something a bit closer and sooner for her to do.

Stacy felt she should organize some type of ministry and soon was approached to be the outreach coordinator for the department she belongs to at First Baptist Lafayette. She prayed and it came quickly that the ministry should be to reach the homeless and it should be called Second Chances.

It seemed an unlikely time to start working toward it. But, Stacy knew it was the direction she should go.

“Three times I asked God if he really wanted me to do this. He could pick anybody. But me? Why me? I realized, why not me?”

Why couldn’t Stacy’s hope to do mission work be right here in Lafayette? Why couldn’t this one wife, mother be the first domino? Stacy and organizers with the church set about to find the best avenues for reaching the homeless. And Stacy soon realized it was simple – give them what they need and listen. Show them love.

More than 30 people gathered at Stacy’s home just months ago for one of the first efforts that included bagging necessities for women at halfway houses and taking time to visit them.

Whether it’s playing cards or just sitting around talking, Stacy soon realized her mission was not to fix anyone. Her mission was to simply be there. She also soon realized how very much she was like the women she was sitting across from.

“Anyone could be in that position,” she says ,with a clear resounding empathy in her voice.

Spending time with the homeless has been a reality check for Stacy.

“We never know that we would not be on the streets one day.

They’ve lost their jobs, their apartment, they have no family here,” she says.

There are two books that Stacy has drawn tremendous inspiration from in her continuing efforts – Same Kind of Different as Me and What Difference Do I Make? – written by two men, one of whom was homeless. It is a quote from the homeless man that echoes through Stacy.

“He says most people on the streets know Jesus loves them – but they figure nobody else does.

I took that to heart,” she says.

“It’s easy to say God Bless You to someone on the street or hand them a tract. Maybe we need to ask ‘What do you need?’”

Stacy is quickly learning some of the most valuable things she can provide have no price tag – time, compassion, a friendly ear.

“It does not cost anything to help someone,” she says.

All the materials for Second Chances are donated – from the goodie bags for women in halfway houses to clothing drives and, during the winter, a plan for hot chocolate and cookies and most importantly conversation.

“Just listening to them. You’re always worried about what you’re going to tell someone. You learn a lot if you just listen,” she says.

And while the efforts Stacy is making are about helping others, she is quickly learning that it’s not just a gift for them. It’s a gift for her as well.

“It has been the best thing for me. It’s so much easier to sit at home and dwell about a disease you have. If you just get out of bed and help someone – it is the best medicine for you,” Stacy says.

Stacy recently finished training for CASA, which provides advocates for children in the foster system and she’ll begin working on that after the New Year.

Stacy isn’t immune to the trappings of this world. She knows it’s easy to get caught up in what we have and what we want, especially this time of year.

But, working with the homeless is showing her how much she has and how much things and money are not a priority. It’s a lesson she’s hoping to impart on her children and is teaching them through a new Christmas tradition.

They have a tree with presents.

But, they are turning the focus away from the gifts to the true meaning.

“We started a new Christmas tradition that it’s not all about presents. It’s Jesus’ birthday. I want the kids to know that what we have already received is a gift. Christmas is not based on getting gifts. It’s about celebrating what Jesus has done for us and about giving.”

The kids choose a boy and a girl from Samaritan’s Purse and buy presents for them. They each get two presents and then talk about what they are thankful for. It’s quite a departure from the norm.

“It’s totally different,” Stacy says of the new tradition they began last year. “It’s not all about stress and not having money for gifts. It’s a very peaceful time for us. They don’t expect big extravagant gifts and they realize what a blessing it is to help other people.”

“I wanted the kids to learn to appreciate the little things. They didn’t need big, huge gifts to make them feel better.”

Stacy’s approach to Christmas is a mirror of her approach to life. And it’s an approach that will hopefully inspire others to do more, not just this holiday season, but every day.

Tackling a problem like fixing the homeless population may seem monumental – because it is. And that’s not really Stacy’s intention.

After all, there are organizations working hard to make headway with the homeless population.

What Stacy is doing is simple. She’s walking alongside people who need it most. She’s showing them the love no one else is. She is one person. But, that’s not stopping her. She knows every person matters.

“You can make a difference,” she says.
