e’re at the back end of our trip to see our kids back in South Africa, and it’s only a handful of days till we jump on a plane and head back to Texas. The time doesn’t seem to want to slow down, and the two weeks left are flying past. As much as I’m excited about returning to Southlake, I’m also trying to cram as much quality time into the last few days to ‘fill my bucket’ before we head off, which makes for interesting times. I can say it’s been nothing less than amazing to be around them again. While we were in Southlake, we spoke often, but I missed just being able to hug the kids. Being with them now, I’ve found myself regularly reaching over to put my hand on my son’s shoulder at dinner or finding any excuse to hug my daughter goodbye two or three times at the end of a night together. Lorinda and I were also able to settle back into our early morning walks on the promenade. Roxy or Ceagan would pop down, knowing we’d finish at our regular coffee spot, and would sneak in time with us. Those times made for special moments and memories. Leaving will be tough, but it’s comforting to know we’re heading back to our new home, where people share the same love, commitment and dedication to their children, family and hometown. Reading through our latest edition, almost halfway around the world, I immersed myself in the stories and could genuinely feel the passion and love you all have for Southlake. The story of the Bailey family knowing that Southlake was the place they wanted to build their new home and raise their kids when they could choose anywhere else and Jennifer’s article on the Dragon Dads Breakfast were both inspirational. (As a side note, I don’t have children at Carroll Elementary, but I have definitely got to try to sneak an invite to the breakfast as soon as I can!). Almost every page highlights how much is going on in Southlake, and each story, be it about the Young Men’s Service League, our SROs or how Dawn and Joe from Earthwise have built their business, is positive and uplifting. I look forward to good times and making even more great memories with special friends in Southlake soon. I hope you enjoy our latest edition as it celebrates all that is so wonderful about life in our city.

What, in your opinion, is the best thing about Southlake? The fact that it’s a small town. Everybody knows each other and supports each other. I also love the friendly neighborhoods, home to people who are willing to offer a helping hand.

MY

76092

Meet Roy Rizwan. He has a passion for fashion and is the founder of Xar Clothier. Roy loved the welcoming atmosphere of Southlake so much that he knew our town had to be home for his clothing store! We chatted to him about all of his favorite places to see, have a meal, and drink a good cup of coffee in Southlake.

Your absolute favorite meal… It’s too difficult to decide! TruFire is my favourite restaurant for enjoying a delicious meal with family and again all the meals at Moxies are always amazing and reasonably priced.

@royrizwan

Your sweet indulgent is from? The perfect place for a date night is… I love Moxies – it’s my favorite restaurant! You also can’t go wrong with Perry’s Steakhouse and Grille. There are so many great options to choose from for date night, including the new movie theatre that has just opened!

The best cup of coffee or cocktail in Southlake? I’m very loyal to Starbucks. I know there are many great spots for a good cup of coffee in our town, but I always end up back at Starbucks!

The cupcakes from Nothing Bundt Cakes are my go-to sweet treat. The shop is always busy which shows you just how great they are!

A hidden gem? It’s not a hidden gem but I truly love Town Square. It’s the heart of Southlake and a beautiful place for residents to come together and enjoy all that this town has to offer.

LOCAL

MEANS RESPECTING AND FOLLOWING THE CONSTITUTION OF THE UNITED STATES

“As a foreign-born, naturalized citizen who lived in communism through the last and the worst days of Ceausescu’s regime in Communist Romania, to me, the Founding Fathers’ vision of what America needed to be and the subsequent detailing of their vision in the Constitution, as well as the Declaration of Independence, is a blueprint for patriotism. The Founding Fathers’ understanding that the bigger the government, the smaller the person led to the forming of a small “for the people, by the people” government, which was charged with making sure that every God-given, unalienable right of every man, woman, and child, as detailed in the Constitution of the United States, could never be taken away by anyone, especially the United States government. To me, patriotism is following this blueprint and never veering off the Constitutional path laid down by the Founding Fathers of the United States of America.” - Laura Laird, owner of Culinary Immersion Supper Club and naturalized citizen

“This past year, I’ve studied about the Founding Fathers of our country and the ideas and values our country is built on. We should always remember our country is founded on God and stands for our freedoms outlined in the Constitution. Patriotism is using our voice and empowering people of all ages to do the same.” - Tyler W. McCurry, homeschool (age 13)

“Patriotism means being a part of the solution. Getting out and voting, being the change, fighting for what you believe in. It means finding a common ground in order to reach a goal and make things better for future generations.” - Rachel Wade, co-founder of North Texas Dance Arts

“Patriotism to me is an unwavering hope in the promise of America, an abiding gratitude for the freedoms we have due to the men and women who sacrificed so much to make this nation great, and a deep desire to protect our families, faith and freedoms for future generations.” - Elizabeth Huffman, First Lady of Southlake

“My parents were anchors of our local church and pillars of the community. They were simple, hard-working, Christian folks who preached faith, family, education, hard work, thrift, and belief in our country as the vessels of uplift for me and my siblings. The affinity I have for Ol’ Glory emanates from knowing that ours is a country where even the most outlandish dreams can come true for those willing to look beyond their current station in life.” - Ronell Smith, Southlake City Councilman

The quality of being patriotic; devotion to and vigorous support for one’s country. “a highly decorated officer of unquestionable integrity and patriotism”

While social media and online comments are an excellent first step, face-to-face conversations are when the best ideas happen. Keep your eye on www.cityofsouthlake.com, the City’s Facebook page, and my Mayor’s Facebook page for opportunities to give your thoughts and ideas to the City. The recent feedback that we have received at the Library Task Force Open Houses and Town Hall meetings is a perfect example of what can happen when the community comes together. Mayor Armin Mizani of Keller and I always want to encourage our cities to be collaborative, competitive and spur each other on towards greatness (including in the area of fitness and health). So, we started the Fit City Challenge – the first of its kind! We launched it in April and it ran for 45 days with much success. Hundreds of people across the cities participated and tracked their hours of exercise every day. Tens of thousands of hours were logged through our system. Although Keller made it on top this time, we are already looking forward to the rematch. Hopefully we’ll loop in other cities to participate as well. We’ll always do what we can regionally to encourage each other towards health and fitness, and this is one way we can do just that. Don’t forget that Stars and Stripes Southlake kicks off this month with a bang with the best fireworks show in all of Texas! Sunday, July 3rd is the big day. Get all of the details at www.southlakestarsandstripes.com.

Meet the Mayor July is a special time in Southlake because it’s a time for family and friends. The hectic pace of September through to May is left behind for a minute so we can recharge and enjoy all that summer offers. Everywhere I go, I am privileged to speak to so many of you about your lives, dreams, and plans. When I reflect on the past year and Southlake’s accomplishments, I get excited about what’s to come. Well-planned cities like Southlake have an excellent quality of life, parks for outdoor fun, and events for people to enjoy. Southlake also has excellent services like safety and security, roads that help us get around, water that comes out of our faucets, and a solid financial footing. But here’s the essential ingredient: people who care enough about this City to get involved and make a difference.

In the spirit of the July 4th holiday, I want to leave you with one of my favorite quotes from Founding Father Thomas Jefferson. Inscribed on the beautiful marble walls of the Jefferson Memorial in Washington DC is this reminder of who truly is the Author of our freedoms: “God who gave us life gave us liberty. Can the liberties of a nation be secure when we have removed a conviction that these liberties are the gift of God? Indeed I tremble for my country when I reflect that God is just, that His justice cannot sleep forever.” Like Jefferson, I would implore Southlake to remember that God is the Author of our freedoms. He is the Giver of our lives and the Giver of our freedoms. We do well to remind ourselves of that truth often! Sincerely,

Mayor John Huffman

JOHN and his wife, Elizabeth, founded their small business, Black Door Renovation, in 2016 as a project to improve the lives and homes of those around them. Now, Black Door employs 12 people and has worked in hundreds of homes around Southlake and northeast Tarrant County. John and Elizabeth serve the community in a variety of ways. John loves spending time with family, coaching kids’ sports, spending time outdoors, and playing basketball with friends. He also serves as Mayor of Southlake.

F

or the fifth time in school history, the Southlake Carroll Dragons will be taking the state baseball title back to North Texas, forty years to the day after Southlake Carroll won its first UIL State Baseball Championship back in 1982. Senior pitcher and game MVP Owen Proksch (Duke signee) struck out nine and drove in the run as the Dragons rallied back from their largest deficit in over two

months to beat San Antonio Reagan (8-5), in the 6A State Championship game on Saturday at Dell Diamond field. Carroll (34-8) defeated Fort Bend Ridge Point (6-1) in Friday’s semifinal round where Senior Griffin Herring (LSU signee) struck out 13 batters to move onto the State Championship game. Senior catcher Clark Springs was the first player to have four hits in a single tournament game in almost 20 years, tying a UIL state record. This was the fourth state title in the past 5 seasons

for Carroll, having won in 2018, 2019, 2020, and 2022, making it Carroll’s 10th trip to the state tournament. Both teams were scoreless in the first inning, with the Dragons then scoring one run in the second and two in the third, having given up three runs in the second inning. Things really started to come together for pitcher Owen Proksch as he struck out two batters in the top of the third and the final two batters in the fifth.

Tyler White took the mound in the sixth with bases loaded, throwing a strike out in the ninth to capture the win. Following the game, Proksch (Sr.), Springs (Sr.), outfielder Max Reyes (Sr.), shortstop Ethan Mendoza (Jr.), and second base Ben Tryon (Jr.) were all named to the UIL 6A AllTournament Team. “Winning state is our goal every year, so it felt great to accomplish that for our coaches and school and the City of Southlake. There is a tradition here that started with players long before us, and I’m glad we could do our part to uphold that tradition. I’m just happy I was able to help the team get there and was honored to be named MVP,” Owen

Proksch shared. Pride and tradition are woven into the fabric of our community and sports teams, and this was proudly displayed in Round Rock Texas over the weekend. This was obvious in outfielder Max Reyes’s comments as well: “The goal in youth baseball is to play varsity baseball in high school. The ultimate goal is to win state. To accomplish both goals and represent the Carroll Dragons is the best and most satisfying end to high school. It is still sinking in for the boys. This is what we mean when we say: ‘Protect the Tradition’.” A win like this is truly a pinnacle moment for the Dragon players, but we also know there is a huge support system that helped them down the path they traveled, including everyone from coaches and trainers who prepared them physically and mentally to parents who selflessly attended every game, supported them, cheered them on, and kept them fed and hydrated at this final game with recordbreaking heat. Chad Bedwell, parent of third baseman Cole Bedwell, said it best: “Winning the baseball 6A Championship is a testament to our community, our players,

our families, the staff, and our tradition. This community is special, and this team will be recognized forever for this year’s accomplishment. A lot of these guys go back to playing together in T-ball and for them to all come together and have this type of success is a true sign that hard work wins and playing as a team is invaluable.” Coach Larry Vucan came to Carroll from El Paso where he was head coach for Franklin ISD’s program and spent a year as pitching coach at Northwest High School in Justin. He knew he wanted to coach for a Metroplex powerhouse team, initially taking a volunteer position as an assistant coach in his first year to make his way here and was the pitching coach during the 2010 to 2016 seasons. Vulcan was named head coach at Southlake Carroll leading up to the 2017 season, promptly guiding the team to the final four that year. The assistant coaches that support the team include Zach Sellers (he has coached under Vucan since 2016), Robert Mendoza and Phillip Oneal.

Even before the season started this year, our Dragons were named the best high school team in the state by MaxPreps.com. In addition, the team was also ranked number one in Texas High School Baseball’s preseason rankings. Our congratulations go out to our amazing Dragon baseball team for continuing to protect the tradition here in Southlake.

I had the great pleasure of talking with one of Southlake’s newer families, the Baileys. It’s always refreshing to hear the same excitement and feelings that we had upon moving to Southlake from other families who have recently settled here. The Baileys are a family of five including Yuriah (dad), Lori (mom), Braden (14 years old and a rising freshman at CHS), McKenzie (12 years old and moving up to CMS), and Kellan (eight years old and attending third grade at Carroll Elementary). Yuriah was promoted within his company to Vice President and Central Division Sales Manager at Goldman Sachs. “We could pretty much live anywhere, so we started looking at Houston and Austin and then moved our search to the Plano/ Frisco area. I honestly thought that was where we would end up because our boys are hockey players, and they have great leagues there. But I just wasn’t feeling it. I kept feeling anxious and uneasy,” shared Lori. “On the last day, we were scheduled to look in Southlake. I know this sounds crazy, but I immediately felt like I wanted to live in Southlake, build our home, and raise our kids here. We told our realtor that we only wanted to continue our search in Southlake, and eight months later we couldn’t be happier.” “Within the first 24 hours of unloading the moving truck, we had a knock at the door from boys asking our oldest to throw the football with them, and then the neighbors across the street invited our two youngest to play with their kids while we unpacked. The next knock was from the couple next door asking us to take a break and join them for a drink. So, all sweaty and dirty, we joined them. We seriously had to pinch ourselves. The next day, two more families brought over cookies. This just doesn’t happen in other places!” The schools in Southlake were a big draw for the family. “Even coming from great schools in NJ, we learned that Southlake’s schools were challenging, but the education and teachers are truly amazing. Learning about the tutorials that are offered was incredible – where else can you find this? The teachers are great and support the kids with everything and anything they need. We just can’t say enough about how impressed we are with the teachers and schools. Our son had a class that took him fishing every day – we didn’t even know classes like this existed!”

“We moved in October, two full months after school started, with no family, no friends, no nothing. The athletics programs really made a difference in settling everyone in and finding friends. The middle-school athletics were mind-blowing! All of our kids arrived as athletes. Our sons play hockey, and our daughter is a competitive gymnast. Kellan was playing hockey but when we got here, he decided to try Dragon Youth Baseball where Yuriah stepped in and became an assistant coach. He also joined “Under the Lights” playing flag football. Our daughter stepped outside of gymnastics and joined a volleyball team this year. All of the kids started recognizing other kids from school at their athletics and made friends. It was really great!”

Lori has also met friends through her kids’ athletics. She had a friend from home who had a college friend in the area, and they were an incredible help. One helped get their youngest into football, and another helped their daughter get onto a specific volleyball team and introduced Lori to other moms. “It’s truly one of our favorite things about Southlake: how incredibly kind and helpful the people are here. They sweep you into being a part of everything.” “We were out to dinner after school ended and asked the kids what they thought of it here. They said that they would never go back – this is where they want to be! Our youngest didn’t want school to end.

He says he likes being at school for seven hours. It makes such a difference when you know your kids are happy,” says Lori. This past year, Lori has also volunteered at class parties and field trips and looks forward to getting involved more next year. The Baileys’ favorite thing to do is “anything that involves Town Square”. Whether it’s just walking or eating dinner or ice cream at Milwaukee Joes, being there just makes them happy. “We were blown away by Christmas. Every tree in Town Square was lit, and we took carriage rides under blankets with hot chocolate. It was great! The art show was fun and had so many things for the kids. We all have our favorite restaurants: my husband and I love Perry’s (we just celebrated our anniversary there), Braden loves Moxies, McKenzie always chooses TruFire, and Kellan’s favorite is Delucca’s. We often drop Braden at the Square – it’s great to feel at peace and know it’s safe dropping him there as well as at the Champions Club.” Lori credits, as do many of us, the Moms of Southlake Facebook page for getting answers to questions about anything you need. “I’ve gotten everything from doctor recommendations to suggestions for home projects. It’s an incredible place to go to for your answers. It’s so great that many want to help and share their time and experiences.” When asked what they always do with visitors, Lori said: “We love that when everyone visits, they want to go somewhere they can wear a cowboy hat and boots. Of course, we always go to Fort Worth and to the Stockyards and rodeos. There is nothing more patriotic than the beginning of a rodeo where one of the barrel racers rides around the ring with an American flag to the song “Proud to Be an American”. It’s very moving and I get goosebumps and tear up every time. If our guests don’t show up with a cowboy hat, they have one when they leave.” The Baileys didn’t have any family in Southlake when they got here, but Lori’s mother-in-law just bought a condo here, so she’ll be just a few miles from them, which they are looking forward

to. The family lives off of Randol Mill Road. I asked her if she knew about the highly publicized speed limits there. She laughed, “We never exceed the speed limit! I’m pretty sure we are the only ones that go the speed limit. Our realtor seriously mentioned the speed limit three

or four times, so we heed her warnings.” Lori finished our chat by telling me how her family loved learning that everyone from pre-K to high school are Dragons. “We had heard it from so many people, but it never quite hit us how great it really is until we got here.” When she was

sharing pictures of end-of-year parties, she found herself saying things like “We are Dragons for life” and using green hearts. It sounds like the Baileys now feel like the rest of us! There’s definitely no place like home, especially when home is Southlake.

I

’m Aly Romero, a private chef here in Southlake. My culinary journey started soon after college and was inspired by my dad, who used to visit from New Zealand for a few months at a time. First thing every morning he would ask me: “What’s for dinner tonight, Aly?” I would look at him like he was crazy — it was only 8 a.m.! But at night, we would have a glass of wine and cook together. Pretty soon I found that I too woke up thinking about dinner. I lost my dad in 2013, but I still feel close to him when I cook. In the mornings, my oldest son asks, “Mom, what’s for dinner tonight?” and I can’t help but smile. In 2016, I started my food blog and, even after 20 years of culinary experience, I’m always looking for new ways to adapt and elevate everyday recipes with fresh takes and diverse influences. I love exploring different types of cuisine and incorporating different ingredients and techniques of various flavor profiles. Sharing my recipes and experiences through my blog has allowed me to discover and contribute to a larger community, which has led to some truly amazing opportunities. As a Chef Ambassador for Hestan Culinary, I’ve done culinary demonstrations at WilliamsSonoma stores and other retailers around the Bay area. I have also created culinary technique videos along with recipes for their brand. In 2018, I was featured by The Chew on their “You and The Chew Recipe

Showdown” and was thrilled when my recipe won! Watching Chef Michael Symon take a bite of my carnitas street tacos and gush over its flavor was a pretty exciting moment. Later that year, the same recipe was featured on GMA in a segment with Gordon Ramsay. Not long after, I was invited by GMA to cook with my husband in a live segment promoting Ayesha Curry’s new show, “Family Food Fight” (which we won!).

personal touch to their event. Whether it’s a girls’ night in or a celebratory dinner with friends, I work with my clients to create a unique, custom experience.

It’s all been such a fun and crazy ride, and I’m so grateful to be able to share these experiences with my husband and children. Most recently, I competed in the “Great Food Truck Race” in Alaska as a member of the “Meatball Mamas” on Food Network. I’m still pinching myself! I’m so excited to share that I’m now working on my first cookbook, coming in 2024.

My husband and I have been married for 21 years and we have three fantastic kids. Our daughter will be a sophomore at TCU and our boys will be at Carroll Senior High and Carroll Middle School in the fall. Between all of our busy schedules, life can definitely get pretty chaotic. But no matter how crazy life gets, we always make time to sit down and enjoy dinner together at the end of the day. Sharing fresh, incredible food with the people I love is one of the truest joys of my life.

About five years ago, my passion for cooking evolved into a career as a private chef. I specialize in elevated dinner parties for events and occasions like milestone birthdays, baby showers, bridal showers, and work functions. I love to cook with seasonal ingredients to compose the highest quality dishes. I’m always striving to improve. I love the challenge of creating new dishes and preparing old favorites in new ways. I enjoy working with my clients to choose menu options that will add a

What I love most about food is its power to build community and help connect us to each other. We are new to Southlake, but we have quickly learned that being part of this community is such a warm and welcoming experience. It feels like family!

Carroll Elementary School has something special going on: Dragon Dads Breakfast. How am I just hearing about this amazing program? Our Southlake community never ends in its greatness! If you’re like me and you haven’t heard, here’s the skinny…

M

s. Wagnon, the Principal of Carroll Elementary, has been fully supportive of the Dragon Dads Breakfast since day one, and word on the street is she makes it all happen! There’s also a special group of dads who organize guest speakers and coordinate food. Six to seven times a year, dads start showing up to the school at around 6:45 a.m. to join their

kids for breakfast while listening to an amazing speaker. One of the organizing dads, Greg Peel, reported that on average they have at least 200 attendees – last week it was 300. These numbers show the success of the program!

hear an inspiring message. At the end of each breakfast, we always do a raffle for the kids. EVO Entertainment donated gift cards for our last raffle and they went wild. They also sign a Carroll Dragon pennant that is given to each speaker,” Greg said.

“What’s cool about it is that dads get to the school early to be with their kids. It’s just 30 minutes! You get to eat with your child and

The Dragon Dads Breakfast has had speakers like Jason Garrett’s brother (who is a coach as well) and Jason Witten (a

retired Dallas Cowboy). At last month’s breakfast, Mayor Huffman spoke. He shared his role with the city and spoke about parks and recreation, town center, the police, and how they’ve worked to reduce taxes. “He has a way of engaging with the kids and translating his message into one that they can easily understand,” adds Greg. Mayor Huffman enjoyed being part of the Dragon Dads Breakfast event. “It's really cool to speak to the kids. They are so full of life and fun. There’s always lots of energy and smiles.” Mayor Huffman wants to make sure the kids understand taxes, that this money is not the government’s money but their parent’s money. His favorite question that comes up amongst the kids is if he gets to ride in the MRAP (Southlake’s giant SWAT vehicle). “The program is something I am happy to support. Any time I get to talk to Southlake’s youngest residents, I’ll do it!”

And unfortunately, no, he does not get to ride around in the MRAP! Other speakers have included Brent Jones, who had an 11-year career and played in three Superbowls as a tight end for the San Francisco 49’rs. Brent is a Southlake dad who spoke about what it means to be a great teammate, hard work, and overcoming adversity. He brought his Superbowl rings for the kids to look at and try on. Every November or December, they have someone from a non-profit speak. Shonda Schaefer, the CEO of Grace Grapevine, spoke to the kids about our responsibility to give back and what their non-profit does with donated money. Shonda’s talk inspired the dads and children so much that they decided to adopt 40 families for the holidays! Each year, Coach Dodge, the Dragons Football Coach, is the first speaker of the

year. He always shares what it means to be a Dragon, the values he expects from his players, and the part they play in the community. Other coaches and school leaders have also spoken in the past. Robert McMillan, European PGA player and PGA golf professional, spoke about growing up poor in Ireland and how learning how to play golf and finding God changed his life. He also shared the story of how his son, at age 25, offered one of his kidneys to a college friend who was dying of kidney failure. Mr. McMillian obviously did a great job raising his son! The dads that organize this amazing program include Greg Peel, Drew Schlosser, J.W. Butts and Eric Hacker. The kids are so appreciative of their time and effort. American Inventor Charles Kettering once said: “Every father should remember one day that his child will follow his example, not his advice.” If this is true, these kids are set up on a great path!

BBQ has always been a “Texas” thing, but now it’s a Carroll High School thing thanks to Coach Ken Goodman and his wife, Kim, the team sponsor. WORDS JENNIFER CASEY

W

e really can’t say it too many times – our students at Carroll ISD have some incredibly amazing and unique opportunities! I just recently learned about a new one: the Carroll Dragon BBQ Team led by team sponsors Ken and Kim Goodman, whose names are quite familiar around our town. Ken is a long-term substitute teacher at Carroll High School and the public address announcer (aka the voice of the Dragons) for Carroll Dragon Football games, Men's and Women's Basketball, Softball, Baseball and Volleyball games, and graduation. His wife, Kim, is the CHS department chair for CTE (Career and Technical Education), which houses the STEM program. Its mission focuses on student-centered learning and providing experiences that promote creative, critical, and analytical thinking. The BBQ team participates through the school's DECA program which helps to prepare emerging leaders and entrepreneurs for careers in marketing, finance, hospitality, and management by fostering the development of skills through academic conferences and competitions. Last summer, Ken founded the BBQ team and had a very successful first year of competition. I asked him how the team got

started, and here is what he said: “I always thought it would be neat to have a BBQ team at Carroll. My wife was attending a conference that was offering a session by a chef, called “How to Start a High School BBQ Team”, so I went with her to the conference and attended the session. I got P.J. Giamanco’s (the Carroll HS Principal at that time) approval, found some help and money, and put it on the announcements at school to see who was interested. I got 20 kids who were interested. We started learning how to cook in the parking lot.” “Carroll currently doesn’t have a culinary program, as most of the schools we compete against do, so it is just amazing how well we’ve done going up against our competitors,” Ken says. Carroll is working on more career pathway opportunities other than straight academics. The district

will be starting a new culinary program this next school year. It will take about three years to get up to full speed, but it's a start! Keller, at their center for advanced learning, has a full kitchen and restaurant, so the team is excited to be heading in the right direction. Current funding is through parents and some amazing relationships. Joe and Amy Torres, of Torres Cooking Concepts and Sucklebusters in Coppell, donate all of the rubs and sauces. They have been mentors to Ken and Kim, teaching them the ins and outs of competition BBQ. The team has also been learning from other guests, local chefs, and pit-masters throughout the year. “I quickly learned that you could make some great ribs and brisket that everyone will love, but you have to trim, season, cook and rest them

all in three to five hours – that’s the tricky part!” laughs Ken. The team started their training in September of 2021. They first learned how to cook fajitas which taught them chopping skills, and then they were onto ribs, chicken and desserts. Their first competition was on December 3, at Gilmer HS (which has a full culinary program). “We came away very dumbfounded. Here we were, new to the scene, but we just kept winning that day!” The team won Reserved Champion which qualified them for the National League’s State competition. The State competition was in Round Rock where they were up against 85 teams. They placed 35th overall with individual awards in chicken (10th

place) and ribs (15th place). In the Texas League, they competed in Muenster and Mansfield to earn their way to the State competition. In that State event, they were up against 30 plus teams. The “Cookfellas” (all teams have unique names and theirs is a play on “goodfellas”), had three top 10 finishes in Dutch Oven Dessert, Chicken and Burgers. On May 20, the team cooked breakfast at APE Fitness in Grapevine. Their goal is to eventually have a full menu of options and offer their catering services for events, which will help the kids learn more about running a business.

Southlake seemed like a strong regional anchor which had the Highway 114 corridor with DFW Airport at one end and Alliance Airport with Ross Perot Jr’s land and investment at the other. I asked Frank how the pin ultimately got stuck in Southlake, and he replied: “It was a combination of our research. We loved that Southlake already had traditions and everyone loved being Dragons even back then. People were willing to buy into something bigger than themselves and their homes. The community appreciated that we worked hard every day and didn’t rest on our laurels.” Brian always said: “It’s hard work every day. You don’t get to sit back, because if you do, you lose sight of how to make it better.”

housands of us have moved to Southlake from different states and countries and enjoy all that this fabulous town has to offer. Most of us take what we have in Southlake for granted and have never looked back to the history that got us where we are today Part of the land was a chicken farm and the other was open fields. How did the beautiful town that we’ve raised our Dragons in, the amazing restaurants we’ve had hundreds of meals at, the shops we’ve spent hours perusing, and the city that has given us years of festivals all come to be? The year was 1989 and Brian Stebbins was living in San Diego where he and Frank Bliss had just joined forces with Peter Cooper in Newport Beach, CA, at Cooper and Co. Peter had been drawn to a development, Southcoast Plaza, in Orange County created by the Segerstrom family from land that had been in the family since the 1930s. He loved the mood and feel of the place, so he sent Brian and Frank on a

search for land that was to be developed into something special – a place that would be enjoyed generationally. “This was the inspiration. If we could find land that was in its native state, we could develop it in a way that had mixed-use, was walkable and open-air, had an urban feel that gave a nod to street patterns, and had enough land to create a street grid that would create lifestyle and be the “center” of the community,” Frank Bliss said. Brian and Frank looked at land from New Jersey to Texas and at parcels with 1500 acres down to 75. They studied the economies and knew that the space had to have many different attributes in order for it to work. It had to be in a place that had an economy that could sustain it for more than a generation. The area had to have a business-friendly climate, no state income tax, and not a lot of tax levies like New York and California. They already knew that they liked TX as they had done projects with other partners here.

Brian grew up in Rockford, IL, and had very Midwest values. “Brian was incredibly curious and he wasn’t afraid to look at things differently,” said Frank. “We met when he hired me for a deal he was doing in Seattle and I was a real estate attorney. After the deal was over, Brian told me I was in the wrong business, and shortly thereafter we started working together. Brian could communicate his vision so well that you were immediately pulled in.” The first public meeting they had to discuss their proposed development was at Bicentennial park in February of 1996. “Brian told me that we weren’t taking any drawings or plans. He wanted to know what the people in town wanted. He had a vision but knew it had to include the town’s dreams as well,” Frank reminisces. So, they showed up with nothing. Frank laughed saying, “We drew quite a few comments from the crowd. It was just Brian, our architect and me. We didn’t expect more than 20 people to show up but there ended up being about 120. We learned that people wanted restaurants, shops, places to have parades to celebrate football wins, and it took off from there.” People were skeptical, but with each meeting everyone started to realize that Brian had a vision that included all of the town’s wants and needs. With each meeting they had, they gained more buy-in from the community and people started getting excited.

Brian didn’t want to build a project – he wanted to build a community. His Midwest values seemed ideal for the project and Brian had romantic notions about what a town should look and feel like. He grew up in a small town in Washington, Iowa, with his grandparents and wanted to bring that feel to Southlake. Frank said that most of their days started at 6 a.m. and ended at 2 a.m. “We talked every day about what we learned from people. Brian knew how to stay the course through a sea of noise. He believed in the path we were on and had very good management of the development process.”

Pattie and Brian met on a blind date through a college friend. She feels that the fact that they had both grown up in the Midwest (Brian in Illinois and Pattie in Wisconsin) was what made their relationship work. They married within a year, lived in California for eight years, and then made the move to Southlake in 1996. She laughed when she told me about the time Brian first brought her to town. There was only one restaurant in Southlake so they ended up going to a place called Judge Beans in Keller. On their way home, she said a tumbleweed literally rolled in front of their car and it made them laugh.

Sadly, Brian was diagnosed with a degenerative brain condition that took him way too soon at the age of 55, just seven years after being diagnosed, leaving behind not just his wife, Pattie, but their son and daughter who were 20 and 17 at the time. Pattie is blessed to be living in the community that Brian created, residing in the Brownstones, and had a stationery store in Town Square for 13 years. She says that she’s blessed every day to walk through Town Square and see her husband’s work being enjoyed.

“When we first moved to Southlake, we didn’t have anywhere to meet up with people. There wasn’t a real sense of community, and that was what Brian was really hoping to bring to their development – a community that would create a meeting place,” Pattie said. People were definitely skeptical about the development and the newspapers and editorials weren’t always supportive. It wasn’t always easy, but Brian held strong and would tell the community: “Look, I moved my family here. We aren’t going to build a development and leave. We’re all in this together.”

I asked what she would like people to know about Brian, and she replied: “Brian was very low-key and humble. He had great integrity, was honest, and did what he said he would do.”

Brian wanted a high-end, quality development. It was no small feat what Brian and Frank accomplished with such

a small staff. “They worked so hard, spending hours working with the city planning and zoning. It was hard on our families but we were proud of what they were doing,” Pattie said. “We lived in the newly developed Monticello Estates. We all became such good friends and are still tight to this day. What a great place it was to raise a family!” One of Pattie’s favorite things to do was to walk through Town Square with Brian after it was completed. She always wished she would have asked Brian what he felt walking through town, but she believes that he would have said he was proud. “He gave his heart and soul to this project and really wanted to make it a special place where people could gather. His face would light up when he saw kids playing in the park. He lived to see his dream come to fruition.” Most of you have seen the statue in the square on the corner across from Malouf’s and MiCocina – the one of a father tying his son’s shoe. Pattie had this statue and plaque dedicated to Brian for his contributions to our town of Southlake. After knowing more about our history, when I’m in Town Square I know I will take the time to look at this statue a little differently and give a nod of thanks and appreciation for the town that started as a vision to Brian Stebbins.

other’s Day was officially declared a national holiday in the US in 1914, and we can thank it for laying the groundwork for the birth of Father’s Day. The first known Father’s Day celebration emerged after a coal mine explosion in 1907 in Fairmont, West Virginia. Grace Golden Clayton, the daughter of a dedicated minister, proposed a church service to honor the fallen men on July 5, 1908. In 1909, Sonora Dodd of Spokane, Washington, was inspired by Anna Jarvis (credited with creating Mother’s Day) and the idea of Mother’s Day. Her father, William Jackson Smart, a farmer and Civil War veteran, was a single parent who raised Sonora and her five brothers after his wife, Ellen, died giving birth to their youngest child in 1898. She began to petition her community to establish a national Father’s Day and proposed June 5, her father’s birthday, but the ministers chose the third Sunday in June. After

she successfully got her home state of Washington to celebrate its first official Father’s Day on June 19, 1910, the celebration spread. However, the holiday did not catch on right away, perhaps due to its perceived parallels with Mother’s Day. In 1916, President Woodrow Wilson and his family personally observed the day and, eight years later, President Calvin Coolidge signed a resolution in favor of Father’s Day, believing that it would establish more intimate relations between fathers and their children and to impress upon fathers the full measure of their obligations. In 1966, President Lyndon Johnson signed an executive order that the holiday be celebrated on the third Sunday in June. Finally, in 1972, Congress passed an act officially making Father’s Day a national holiday. Six years later, Sonora died at age 96.

Dawn and Joe from Earthwise Nutrition Centre and Wellness Spa know every customer by name. When you become a customer, you become their friend. If you have never been to Earthwise, you are missing out! From the greeting you get from Lexi at the front door to the services offered by Dawn, Joe and their staff, you just cannot beat this experience. They are definitely one of Southlake’s best! f you were to walk around Southlake and ask people about Earthwise Pet, there probably wouldn’t be many that haven’t heard of it. You’d get responses like: “Oh, yes! Dawn and Joe are the best!”, “You mean Lexi’s (Joe and Dawn’s dog who is the store mascot) store?” or “We take our dogs to get groomed there all the time.” Whatever the response, we undoubtedly know that it would be positive! Earthwise offers a full range of products and services, and the store has something different for everyone. Many of us make our visits to Earthwise to replenish our pup's food and treat supplies, while others take their dogs there for grooming. Some stop by just to

give Lexi a rub and chat with owners Joe and Dawn Kahan. Joe and Dawn opened Earthwise in June of 2015. “The impetus was mostly Dawn,” Joe said. “We had lost our black lab, Bo, to cancer, and at the time Dawn had been a patient advocate in Houston for 10 to 15 years, working with retirement homes and healthcare facilities. She used her skills to dig in and find out if there was something we might have done wrong with Bo. We followed vet food diets and fed table scraps, not knowing how important the diet is for a dog.” Joe, having retired early from IBM, uses his skills to run the business. The pair

have gained so much knowledge and love the idea of letting others know what they have learned. The store itself answers a lot of pet owners’ questions. Dawn has spent the last seven years tweaking treatments – she knows what works! She has a strong passion for dogs. Of course, Joe does too, but his passion is the business side of things. He always

likes to say: “We don’t have customers, but we have a whole lot of friends.” Dawn and Joe are also an active part of the community. They have sponsored Oktoberfest for seven years, running the wiener dog races and costume contests. “We set aside a large percentage of earnings every year to give back. We make sure the money we donate doesn’t go through an agency but directly to the organization,” Joe said. They’ve also donated to athletic programs, band, cheer, and rescues. “We do as much as we can!” One of the big organizations they support is “Don’t Forget to Feed Me” in Dallas, which feeds dogs in need. Two or three years back, the City of Southlake was doing a dog food collection and Dawn and Joe organized one of their vendors to donate a ton and a half of kibble! Lexi’s Birthday Party is one of their biggest events of the year. “When we first moved in, everyone was so welcoming. We decided to

have a birthday party to say thanks and give back.” As a thank you to their loyal customers, Joe and Dawn ask their vendors to not only drop their prices for Lexi's birthday event, but vendors are encouraged to offer giveaways as well. They also invite small businesses (they can’t be corporate-owned) in the area to put up a tent to promote their business. This year they had their sixth annual birthday (always held on the first weekend of May). Joe likes to call it “Lexi de Mayo weekend”. Dawn’s favorite thing about owning Earthwise Pet is getting a tough issue and finding a solution that works. Both Joe and Dawn also have so much fun greeting people as they come into the store. “The store is like our living room. Friends come and visit us all day!” If Joe could tell the citizens of Southlake anything, without hesitation he would thank them for allowing Earthwise Pet to be part of their lives. “We’ve never had it so good. We live in Keller but always eat in Southlake because it’s where we know everyone from the store. It’s where our friends are. At least once a month, Dawn and I say that we should’ve done this sooner.”

PET NUTRITION

Dawn has spent so much time educating herself through classes, lectures, and conferences on animal nutrition. If your dog is having issues, many times it’s the food they’re eating that could be the problem. Dawn takes the time to listen to your issues and guide you through options. She has a plethora of products for everything from dog stress to itchy skin.

PET WELLNESS AND HEALTH ISSUES

Dawn will take the time and, most importantly, ask the right questions. She prides herself on using years of real-world knowledge obtained within the store to help find a solution that works. If she doesn’t know the answer off the top of her head, she’ll call you as soon as she finds it. Wellness includes more than just food, but food is always a good starting point. There are three main things to know about pet food: where it’s made, what is in it, and where the ingredients come from. Dawn and Joe know the answers to all of these questions about the products they carry.

GROOMING AND SELF-WASH

Those of us who are lucky enough to be current grooming clients are just that – very lucky. Because of the high demand and great groomers, they don’t even have room on their waiting list anymore. They currently have 400 to 500 regular customers and a waiting list of over 200! However, if your pet just needs a wash, they have two fabulous selfwash areas. The area includes petsafe, gentle shampoos, all-natural products, specialized options for health and skin concerns, soft towels, easy-to-use, waist-high tubs with ramps or steps, brushes, and air dryers.

he Young Men’s Service League (YMSL) is non-profit national organization comprised of moms and their teenage sons who volunteer together to serve their local communities during their four years of high school. YMSL offers moms service opportunities and time together with their sons to grow their relationship and instill in them a heart of service to last a lifetime. In addition to service, as part of its four-year comprehensive program, YMSL teaches leadership and life skills to develop our young men into the capable, confident, and compassionate leaders of tomorrow.

This past year was their first year back after the COVID restrictions, and YMSL Southlake wasted no time making an impact on the community. These ambitious young men and their moms recorded 6090 service hours during its 2021/2022 year – the most in chapter history! This record number of service hours was far beyond the 4075 service hours required by nationals for the YMSL Southlake chapter. “Each one of these service hours represents an impact on the community through one of our 20 plus amazing philanthropy partners. Our young men and their moms are always

eager to serve with excellence to meet the needs of our partners,” said Ughetta Miller, the VP of Philanthropy for YMSL Southlake. The hard work and dedication of Southlake young men and their moms earned YMSL Southlake top honors at the YMSL Regional Training in April 2022, as YMSL Southlake was named 1st out of 54 DFW area YMSL chapters for total hours served during 2021 and 2022. On May 1st, YMSL Southlake gathered for its annual awards banquet at the Westin. In addition to honoring 21 seniors from the class of 2022 and their moms for their four years of service, they also recognized over 40 young men with various awards.

HIGHLIGHTING OUR FABULOUS SRO’S

Officer Scott Teien WORDS JENNIFER CASEY

The School Resource Officer (SRO) is a resource for Carroll Elementary faculty and staff in crime prevention and the development of security measures to make campuses safer. Meet our profiled Officer, Scott Teien, from Carroll Elementary. CAN YOU SHARE THE PATH THAT BROUGHT YOU TO BEING AN SRO? I was getting ready to retire from the Irving Police Department after almost 32 years, and my old Criminal Investigations Division Burglary Detective partner, now the Chief of Police for the Red Oak ISD

Police Department, asked me to come work for him at an elementary school. I worked at Schupmann Elementary School for three years and then saw an opportunity to come to Carroll Elementary. This is my second year at Southlake Carroll and Carroll Elementary School. DO YOU HAVE A FAVORITE STORY YOU CAN SHARE? I love it when I get letters from the students saying that they feel safe! WHAT IS THE MOST COMMON OR FUNNY QUESTION ASKED BY A STUDENT? The most common question I get from teachers and students is: “Can you arrest

me?” I give them a little smile and tell them, “Nope! You can’t get out of school that easily.” WHAT IS YOUR FAVORITE PART OF BEING AN SRO? The kiddos! I love interacting with the students, letting them get to know me and me getting to know them. I am like a “papa bear”, kind and protective when it comes to my students, parents, and teachers. ANYTHING ELSE YOU WOULD LIKE TO MENTION/ADD? I used to coach traveling ice hockey goalies from the lowest level to the highest level. I was also the assistant coach to an AAA hockey team.

Our SROs in Southlake are true heroes, and we couldn’t be more grateful for the important work they do for our local schools. They put smiles on our children’s faces, make sure they feel safe, and are fierce protectors. Here are just a few words of

LET THE FIREWORKS BEGIN! Independence Day, also known as the Fourth of July, has been a federal holiday since 1941, but the tradition of Independence Day celebrations goes back to the 18th century and the American Revolution. On July 2nd, 1776, the Continental Congress, the government at the time for the 13 colonies, voted in favor of independence from England. Two days later, delegates from the 13 colonies adopted the Declaration of Independence, a historic document drafted by Thomas Jefferson. July 4th has been celebrated as the birth of American independence, with

festivities ranging from fireworks, parades and concerts to more casual family gatherings and barbecues. The tradition of setting off fireworks on the 4th of July began in Philadelphia on July 4, 1777, during the first organized celebration of Independence Day. Early settlers brought their love of fireworks with them to the New World as a tradition on the 4th of July. We now celebrate as John Adams would have hoped “with pomp and parade, bonfires and illuminations from one end of this continent to the other”.

Here in Southlake, we have one of our own traditions: Stars and Stripes on July 3. It’s one of Southlake’s most anticipated celebrations including food, music, fun and fireworks. The event is always held on the 3rd of July in Southlake Town Square so that families can spend the 4th celebrating their own traditions. There is always fun for the entire family! You’ll find plenty of activities and entertainment throughout Southlake Town Square, including balloon artists, jugglers, live entertainment and bands, stilt walkers, strolling characters, temporary tattoos, and so much food!

DAD BOD WORDS PJ TRACY Hope you had a Happy Father’s Day, gentlemen! I believe being a father has been one of the most rewarding but challenging things I’ve ever done in my life. Having the opportunity to watch your children grow and excel in life is huge. On the flip side, making stressful decisions and watching your child struggle is so difficult. The natural instinct is to step in and handle the situation, but a lot of the time we have to let go and let them learn those life lessons for themselves. Fathers have a huge leadership role to play when it comes to their family and also their children. I’ve spoken with many fathers that have put themselves aside, especially when it comes to their health, so that they can establish a career that can support their family. They end up exerting a lot of time and effort into managing everything from work to family members, household duties and many other responsibilities, while putting their personal care on hold. It’s also a common trend for males to feel like they can always bounce back quickly while neglecting their health for long periods of time. These actions and decisions eventually pile up and end with the man of the house in a much worse situation. The situation: the “dad bod” (including gaining excess weight, feeling fatigued, having high stress levels, and running into multiple health issues).

impossible, but once you honestly look at the time wasted throughout the day, you will realize you can do it. It will not only increase your energy levels and decrease stress, but it will help you to be more effective around the house – no coming home exhausted, stressed, and feeling like you have to force yourself to interact when all you really want to do is decompress. Setting healthy habits and routines to be healthier and more capable in the long run will also set an example for your child to be the best version of themselves.

Establishing simple routines for your health will be the best thing to keep yourself on track to be a healthy, available father. I know adding something to an already busy schedule seems

The concept of the “dad bod” is a funny one to me. The dad bod is the social acceptance of being out of shape or unhealthy. It’s tough to articulate why society puts things out there like this

when, ultimately, if you aren’t healthy, your body is being damaged, and money alone won’t be able to fix that. Think about this: you’ll spend money on your health no matter what, so why not invest it into your long-term natural health instead of into a pill that regulates your unhealthy lifestyle? As a father, making sure we take care of ourselves is huge because if we don’t, we won’t be able to take care of anyone else. Setting this example for your child is enormous. It will set a standard for what being healthy, capable, and able looks like. Those actions will linger and impact your kids and your grandkids to be just like you: a father with a strong work ethic, balance, and personal self-care. What a fantastic legacy!
