The fundamental ingredients of beer are barley, hops, yeast and water. You will find many variations – stout, porter, wheat with other ingredients added to give each beer its unique characteristics. Over the next two days you will have the opportunity to sample many kinds of beer from all over the world. Keep a record of how each sample tastes to you!

Start your experience knowing that there are two basic kinds of beer: lagers and ales. Lagers began in Germany. They have a lighter colour and taste and are the most common. Ales originated out of England. They are darker, more robust, with a stronger, fruitier taste. India Pale Ale is a distinct style of ale originally brewed with a slightly higher level of alcohol and extra hops to assure its freshness over the long voyages from England to India. The hops give it a distinct bitterness. A recent change in government policy spurred an explosion in Craft Beers. A craft brewery produces small amounts of beer, generally characterized by an emphasis on quality, flavour and brewing technique. Large American brewers can make their beer with unmalted grains like corn or rice. They say this is done to produce a lighter taste, but these ingredients are also cheaper and reduce costs.

The dynamics of your tasting Appearance: Colour (amber, red, brown). Swish it a little. Check the clarity of the beer. If the head leaves a trail on the edge of the cup, it usually indicates a higher quality beer.

Aroma: Try to pick out different smells. Just like wine, beer has a bouquet. It may be hoppy, malty, floral or fruity.

Taste: Our taste buds distinguish between sweet, sour, bitter and salty. While it may take a true beer connoisseur to fully appreciate the beer's colour and aroma.

Head: The density, colour and consistency. Heads can be rocky (especially dense w/ dips and peaks forming as some of the bubbles pop). The colour of the head is worth noting as it ranges from pure white in Pilsners to light to medium brown on stouts or porters.

When tasting a number of beers, taste from light to dark.

Tasting vocabulary: Bouquet – The smells and aroma perceived in a beer.

Balanced – A balanced beer is one that incorporates all of the main components such that no single component overpowers others.

Big – A big beer has lots of flavour or alcohol.

Chalky – Denotes powdery, dry, and/or dusty.

Finish – Flavours in your mouth after swallowing.

Head – Frothy foam on top of a beer produced by bubbles of gas (carbon dioxide?)

Light struck – Beer that has had too much exposure to light causing a 'skunky' flavour.

Mouthfeel – Just as it sounds.

Opulent – A rich, balanced beer with a nice texture and mouthfeel.

Round – A balanced beer.

Sessionable – Low alcohol by volume with a smooth flavour. The kind of beer you can drink slowly over several hours without getting drunk.

Thin – Lacking in body, complexity and/or flavour.
