It’s been a long wait for us at Sheffield Food Fest HQ since last year’s event and we are so excited to once again showcase the best of this city’s breweries, street food vendors and local produce suppliers, along with specialist traders from out of town. This is the ninth year of the event and in 2018, our weekend attendance records were smashed with over 53,000 people flocking to the city centre. For this reason, we’ve added a FOURTH day to the event, which is set to be even bigger and better than last year! The Theatre Kitchen chef demos and talks will be one of the highlights of the weekend for sure, the details of which you can find in this festival magazine, produced by ourselves and print partners Exposed Magazine. On the street food front, we have returning favourites, new kids on the block and several past heroes making a return. The range of traders is mindblowing and, due to the finite nature of paper and word counts, we couldn’t possibly list them all in this here intro! Take our word for it though, it will certainly challenge everyone’s belt sizes... Elsewhere, we have several new bars with drinks choices for everyone, a dedicated area for children at both Orchard Square and the Winter Garden. Over at Millennium Square, there’s the ShefFood Village hosting all things green and organic alongside talks from the Festival of Debate. Some food for thought there, we believe… 2019 also sees the return of host evening events with the Proove Supper Club and Riverford Organic Farmers, plus a brand new event in Tasty Toasts - a drinks masterclass event sure to help unleash your inner mixologist! The ever-popular Eats, Treats and Beats Village returns to the top of Fargate, with entertainment, street food, local breweries and mini-tipis and hammocks to hang out in ‘til the sun goes down. EVENINGS IN THE KITCHEN From an elegantly curated three-course dinner, to an Italian-inspired event, to an organic vegetarian pop-up feast, this year’s evening events in the Demo Theatre Kitchen are an absolute treat.

Last year’s Sheffield Food Festival saw the introduction of a brand new event: the host evening events in the Demo Theatre Kitchen. Proove hosted a sold-out, five course pizza Supper Club extravaganza, whilst Riverford put on a special wine tasting experience. Following on from the success of last year’s events, Proove and Riverford will both be back as key sponsors for the Theatre Kitchen, this time with the addition of a collaborative evening event between Butcher & Catch and Sir Robin of Locksley Gin. These evenings are a chance to get stuck in with some of the Food Festival’s key partners in a more intimate and personal environment.

Kicking off on the Friday will be an evening of Tasty Toasts hosted by Sir Robin of Locksley Gin and Butcher & Catch.

Kicking off on Friday 24th, there will be an evening of Tasty Toasts hosted by Sir Robin of Locksley Gin and Butcher & Catch. It’ll be a unique dining experience with a cultured menu of three courses, starting with a fish course of morocello and fennel-cured sea trout, then a course of Moss Valley belly pork, finishing with dessert from Our Cow Molly: ice cream and Yorkshire rhubarb. Delicious! Each course will be presented with a specialist drink, chosen by experts to compliment the incredible food on offer. Welcome drinks, talks and entertainments will follow, too!

The evening of Saturday 25th will see Proove return with its hugely popular Supper Club, bringing its authentic Neapolitan pizza to the lovely folk of Sheffield. It’s a great chance to see what Proove is about – the very best, authentic and fresh ingredients created by their expert Pizzaiolos and made fresh to order. The secret, we’re reliably informed, is in the dough.


It’s homemade every day with ’00’ flour and proved for a minimum of 20 hours. It’s then hand-stretched and topped with tomato sauce – homemade, of course, and always with San Marzano tomatoes which are grown in the rich volcanic soil around Mount Vesuvius. The cheese has to be Fior Di Latte mozzarella, which is made in Naples for Proove twice a week and flown in ready to be served within 72 hrs. This year’s menu will include carefully curated Italian cuisine, inspired by ‘Naples in the spring time’. They have partnered with LWC Drinks who will be imparting their expertise by pairing each of the five courses with drinks such as prosecco, Italian wines, and gin and rum cocktails. And once again, they will be supporting Ben’s Centre, through Foodinate which provides meals for the homeless. Since partnering with Foodinate in December 2017, Proove’s restaurants and kitchens in Sheffield, Manchester and Leeds have donated over 25,000 to those in need. The wonderful team at Riverford Organic Farmers, who’ve supported the Food Festival since its launch, will be a hosting a very special ‘pop-up feast’ event on Sunday 26th to round off the evening Theatre Kitchen programme. Riverford is celebrating 12 years of delivering organic produce to homes across the region this year. From its award-winning veg boxes and recipe boxes, to bread, dairy, deli items, drinks, meats and more, Riverford deliver its wide range of organic produce direct to doorsteps each week, teaching people how to ‘live life on the veg’ in the process. Riverford’s talented chef Sarah Raven will cook up an exciting flavour-packed menu of vegetarian dishes, bursting with the freshest seasonal veg from their organic fields. So, expect vibrant and creative dishes with vegetables as you’ve never tasted them before!

Promoting choice, independent businesses and bringing foodies closer together in social spaces, the rise of the food hall and communal dining is a trend that looks set to continue.

I remember attending my first Peddler Market in the summer of 2015, back when it was a far more understated affair taking place on Arundel Street with a handful of local food traders, some live music, and (rough estimate here) a couple of hundred punters milling around a cordoned section of the road. Despite the relatively small scale of these early events, it was clear that the organisers were onto something; there was a palatable sense of inclusivity and community lending to a good vibes feel as punters bonded on pavements and long dining tables over the food and drink on offer. Fast forward four years and Peddler is now nothing short of an institution in Sheffield – a monthly showcase of rotating traders, musicians, clothing, arts and crafts, and much else besides. A busy weekend might see a few thousand pass through the doors at 92 Burton Road, while their spin-off event Veg Out unites the city’s vegan community and shows that ecoconscious, plant-based eating can be just as exciting as a carnivorous diet. The rising popularity of street food traders – now something of a given at events ranging from festivals to weddings – and the desire for wider choice, casual forms of dining, and new cultural eating experiences has led to the rise of the food hall, naturally taking off first in the capital but quickly spreading its hype to major northern cities. This rise has of course been buoyed by endless social media opportunities to share a variety of exotic or gluttonous dishes on feeds, and if to confirm this, a quick search for the hashtag #foodhall on Instagram will return a total of 110,000 public posts; whereas #streetfood returns a cool six million. That’s a lot of #foodporn to scroll through. Last year, Sheffield saw the arrival of Cutlery Works, providing 14,000 sq ft of retail space split over two floors and hailed as the north’s largest independent food hall. Situated a stone’s throw from the home of Peddler, the venue has become a popular weekend destination that buzzes with activity right up until its 1am closing time on Fridays and Saturdays. During the week workers in the area can be seen taking a break from the drab surrounds of the office and hosting morning meetings there, showing such social food and drink hubs can help provide a spark of creativity or serve as the perfect networking venue.

The most recent addition to the local food hall scene, Kommune, has brought excitement to an area of the city centre that has been in need of renovation for some time now. The old Co-op department store in Castle House, closed for over a decade, underwent a £3m revamp and has united independent food traders, retailers, and creatives on the ground floor where you can enjoy a wide variety of world cuisine, purchase a book or zine from La Biblioteka, select a take-home craft beer from Hop Hideout, or browse The Viewing Room art gallery. Upstairs a tech hub will serve as a social working space and an incubator for startups, putting faith in the symbiotic relationship between communal dining spaces and local creatives. Food Hall, a relatively older kid on the block, was one of the first city centre spots to combine dining and local community support – with a firmly entrenched ethos centred on the belief that everyone should have access to fresh food and company. Since opening in 2015, the volunteer-run cafe operates a pay-as-you-feel policy, and as well as providing a welcoming space for social eating – not to mention superb coffee – the organisation actively involves itself in a range of initiatives to promote cohesion and tackle important issues such as homelessness, inequality and exclusion. Since coming under the charge of Events Collective three years ago, Sheffield Food Festival has strived to celebrate the inclusive, wide-ranging dining experience facilitated through the boom in street food events and community-focused food halls. Bringing thousands together through a mutual appreciation of food and drink and providing a vast platform for socialising between friends, family and strangers alike, the aim is ultimately one of using good food to create a closer sense of connectedness between people and the spaces they live in.

RIVERFORD’S VEGGIE PAELLA This vegetarian recipe is an adaptation of the traditional Spanish dish. As veg nerds, we love adding as much veg as possible to our recipes! Tip: Saffron threads give the dish its unique flavour. INGREDIENTS Sunflower or light olive oil, for frying 1 onion, finely diced 2 garlic cloves, finely chopped, grated or crushed 1 red pepper, deseeded and cut into 5mm thick slices 1 yellow pepper, deseeded and cut into 5mm thick slices 200g paella rice 100g mushrooms, finely sliced 3 tomatoes, diced ¼ tsp smoked paprika ¼ tsp paprika 2 pinches of saffron threads 1 litre of good veg stock Salt and pepper 100g green beans or sugar snaps, or a mixture of both (if using beans, top, tail and chop into thirds) Good handful of parsley, chopped 1 lemon, cut into wedges

METHOD Heat two tablespoons of oil in a heavy-bottomed paella pan or large frying pan or flameproof casserole. Add the onion and fry gently on a low heat for 10 minutes, stirring now and then. Add the garlic and peppers to the onion and stir for 2 minutes. Add the rice, mushrooms, tomatoes, both types of paprika and saffron. Pour in three quarters of the stock and season with salt and pepper. Bring to a gentle simmer and cook for 30 minutes, stirring occasionally. Keep an eye on the liquid and top up with a little more stock or water as needed (you might not need it all). The paella shouldn’t be sloppy at the end so add liquid sparingly during the last 10 minutes. While the paella is cooking, boil the green beans for three minutes, then refresh them in a bowl of very cold water. If you are using sugar snaps, you can simply throw them in raw towards the end of cooking (see below). After 30 minutes of cooking, check the rice is tender and cook a little longer if needed. If there is any excess liquid, turn up the heat and stir to boil it off. Then cook very gently without stirring, to create a crust on the bottom (it’s not very easy to achieve without a proper paella pan, though). Stir in the beans/sugar snaps and parsley. Turn off the heat and leave to stand for 2 minutes, then check the seasoning and serve with wedges of lemon. Cooking notes Variation: You can use any sort of green beans in this; try double-podded broad, sliced runners or flat green beans.

Most people love a gin, don’t they? Over the last 10 years, the British have well and truly got stuck into it. Rhubarb, raspberry or pink – distilleries across the UK have upped their game in terms of interesting and intriguing flavours. One Sheffield distillery, Sir Robin of Locksley Gin based in the Portland Works building close to the city centre, was launched in 2014 by John Cherry and wife Cynthia King. “When we launched back in 2014, there was nothing else like it on the market,” Cynthia tells us. “The people of Sheffield have been amazing – they won’t settle for mediocrity, but they absolutely want to support local companies too!” The ethos of working with local companies and producers extends to other business owners in the city too. Locksley Gin’s ingredients include dandelion hand-picked in Yorkshire and, if you haven’t spotted yet, is named after a certain locally-born folklore legend. Working with Locksley Gin at this year’s Food Festival is Butcher & Catch, a superb seafood and meat 18 WWW.SHEFFIELDFOODFESTIVAL.CO.UK

restaurant in Broomhill, whose main ethos is working passionately with local suppliers. “It’s not just important to the ethos; it is THE ethos behind Butcher & Catch,” says owner Liam Ridge. “The minute we’re not passionate about using local ingredients is the time we’ll hang up our aprons. We feel the produce on our doorstep in Sheffield and Yorkshire is some of the best in the world.” With both businesses sharing such a passion for working alongside local producers, it’s only natural that Sir Robin of Locksley Gin and Butcher & Catch have gravitated towards each other. Stocking Locksley Gin in the restaurant is one thing, but hosting events and combining the two elements is one step further, and something they will be showcasing at this year’s Sheffield Food Festival.

The owners of Sir Robin of Locksley Gin and Butcher & Catch talk us through their collaborative Food Fest event, the versatility of gin and how the worlds of gin, meat and seafood will collide at this year’s Sheffield Food Festival.


“We try to have a food and drink pairing event every month at Butcher & Catch,” says Liam. “We found that the appetite for food and gin pairings was growing and John and Cynthia at Locksley are very engaging and open to the challenge of the pairings – so it’s a naturally evolving relationship.” So how do you go about pairing gin with Butcher & Catch’s menu? Liam tells us: “The pairings are two fold really. Firstly we often look at how we can incorporate the gin itself into a dish, and that could be something natural such as macerating, curing or preserving ingredients with gin, to create something like a gin-cured sea trout. Secondly is to challenge the senses by picking out the component ingredients within the gin making process that work really well with different foods, which could come in the form of combining juniper with lamb, or grapefruit with hake. Gin is a very versatile ingredient to pair

with food, and the chefs get very excited about combining the two.” Pairing gin with food isn’t actually very difficult, explains Cynthia. “Seafood works particularly well with gin. Gincured salmon often be found in a traditional Swedish Christmas feast. I think gin is actually quite easy to pair with food. You can pick out key botanicals and find food with complimentary or contrasting flavours. Our newest product, Real Raspberry and Cardamom, is great with a curry as cardamom is quite a common ingredient in Indian cooking.” In terms of the event itself, it will be taking place at the Demo Theatre Kitchen on the Friday night of the Food Festival. “The event is essentially to showcase the very best of the locally-produced, world class ingredients that we have on our doorstep,” says Liam. “We’re very well known for using locally-produced food throughout our menus, but the fact that we have such an array of amazing beer and spirits produced in our city walls needs to be celebrated too. This event will pair the outstanding food of our region with the superb gin that Locksley produce.”

Cynthia says that attendees can expect to learn a little bit about the history of gin too. “Butcher & Catch will be offering four courses, whilst we’ll be presenting three different drinks. Throughout the evening we will talk about the history of gin, the distillation process, gin classifications, and obviously a bit about our company and products.” Of course, the community-feel of the Sheffield Food Festival, and Sheffield in general, means that this event won’t be the only one on the radar. “I love just walking around and seeing what stalls are there,” says Cynthia. For Liam, it’s a huge event. “The whole feel of the event is amazing, and in my opinion it’s one of, if not the best, food festivals in the country. The idea of a huge celebration of food and drink that sprawls Sheffield city centre itself, benefiting businesses and the public alike, rather than stuck away in a random field somewhere is amazing. I love the carnival feel, the smell of the food vendors and the sound of people having a fantastic time!” For Butcher & Catch, these events are a continuation of a successful first 18 months in the city. “Broomhill and the surrounding areas have a really nice community feel, and we’re very grateful for the support we’ve had since we’ve been open. I think the fact that we have regular evolving seasonal menus keeps

it interesting for our guests. The hospitality industry is challenging and everevolving, but we love being part of it and seeing new, independent local businesses thriving in this competitive market. It’s a very exciting and interesting time to be in the restaurant trade!”

And for Locksley Gin, it’s a case of building on a hugely loyal customer base. “The people of Sheffield won’t settle for mediocrity. I think being local sells the first bottle, but you have to back that up with quality. We always put time into the development of our products and we won’t put just anything into a Locksley bottle. I think we are a brand that people trust.” Having everyone’s appetite whetted for gin and food pairing events, this could be something that we see more of in the city post-Sheffield Food Festival. Liam tells us: “The Food Festival event will be our third event in direct partnership with Locksley, and our sixth gin event in 12 months, so I’d definitely say the appetite is there for more similar events!” Cynthia is convinced. “I’m sure you will see more of these events! You’ll also be seeing us launch our new Gin School soon! Learn from some of the city’s top chefs at the Food Festival’s Theatre Kitchen.

FRIDAY 24TH MAY

Hosted by Sweet Hospitality’s Justin Rowntree Kicking off the weekend’s Theatre Kitchen programme is Justin Rowntree who many of you will know as the former owner of the Runaway Girl/Silversmiths and recipient of the infamous Gordon Ramsey treatment on an episode of Kitchen Nightmares back in 2008. Following the episode, Justin’s Silversmiths rebrand helped the restaurant to win a number of awards and national acclaim, before ironically heading out on his own to become a hospitality consultant in 2017. Justin’s programme will represent a slice of the incredibly vibrant international food scene he has worked with in Sheffield, with each session showcasing a signature dish particular to a cuisine. The demos include south eastAsian, American BBQ, Nepalese, Romanian, Caribbean, Italian and British.

11AM – CHRIS HANSON - BLEND KITCHEN

South-east Asian fusion. Chris has travelled the world and fuses some of his biggest inspirations in a Scandinavian-style home-cured salmon dish with intense south-east Asian spices.

12PM – TOMMY HAGUE - FIREPIT ROCKS

FirePit Rocks has a reputation for the real deal when it comes to BBQ and the ‘pit king’ Tommy will show you how to make an authentic BBQ rub and share the secret of the perfect hot wing with a homemade peri-peri sauce.

12:50PM – THE BLEND KITCHEN TEAM

This unique social enterprise uses cooking to enhance lives. Some of the trainees will show you how to make authentic falafel with a hot or mild tahini sauce accompanied by Moroccan carrot salad and homemade flat bread.

Possibly the most famous Romanian dish is a ‘samale’, and you can learn the secret of these tasty cabbage rolls stuffed with ground pork, pickled cabbage and bacon. Served with home-baked cornbread and sour cream.

2:30PM – NATASHA FARRELL - TASTE THE FUSION LOVE Natasha will be on hand to prepare her famous jerk chicken bites. She’ll show you the Antiguan jerk recipe handed down through her family, served with tangy mango and tomato salsa.

3:20PM – SIMON CLARK AND LEE MANGLES

Both ex-head chefs of Silversmiths Restaurant, this pair are reunited with its founder Justin to showcase the best local, seasonal produce with some foraged delights to boot. So expect top class dishes with something fishy (mackerel/ plaice), veggie delights (asparagus, samphire, wild nettles) and a demonstration of baking fresh Yorkshire milk rolls too.

4:10PM – GLORIA CHIEN - SHUJU KITCHEN

Gloria creates traditional dishes from Taiwan every week at the Union Street ‘pop-up’ cafe. She will show how simple spaghetti can become tasty Taiwanese style chow-mein with all the authentic flavours and spices of her home country.

Saturday’s programme is hosted by Murray Chapman from A Passion to Inspire ‘A Passion to Inspire’, founded by Murray Chapman, is a nonprofit making, voluntary initiative, initially developed to bring education and industry closer together to help and support ‘the future of tomorrow today’. Through A Passion to Inspire and great support, Murray has raised over £220,000 for charities such as Teenage Cancer Trust - NSPCC whilst involving the country’s leading chefs and inspiring students and lecturers from across the UK.

Two Sheffield champions, executive head chef at Chesterfield FC Seymour Millington goes up against former owner of Peppercorn Charlie Curran who’ll battle it out using the freshest of ingredients from Whirlow Hall Farm Charity Trust. Support comes from two fantastic cooks in Sarah Kerrigan and John Gray.

11:45AM – SEYMOUR MILLINGTON - MASTER CHEF OF GREAT BRITAIN

Local lad Seymour Millington spent the beginning of his career in various five star hotels and rosette-awarded restaurants, including the luxury Park Lane Hotel in London. Trained at Sheffield College and now a Master Chef of Great Britain, Seymour currently uses the solid foundations of his work ethic in his role as executive head chef at Chesterfield F.C and will be bringing that ethos to his demo on Saturday, whilst cooking up a storm with a fried chicken and sriracha sauce.

12:40PM – TIINA AND LESLIE - BROCCO ON THE PARK

The owner of the award-winning Brocco on the Park Tiina Carr will be on hand with Michelin Plate head chef Leslie Buddington to present an aquavit-cured cod with pork-glazed rhubarb, asparagus, broad beans, rye dough and nasturtiums.

Co-owners of Rafters Tom Lawson and Alistair Myers showcase a dish which exemplifies how they took the iconic Rafters restaurant to the next level: agnolotti filled with fresh cheese and wild garlic

SUNDAY 26TH MAY Hosted by Tickled Trout owner Chris Mapp

The Tickled Trout is a proudly independent pub that sources the best Derbyshire produce that owner and head chef Chris Mapp can find and transforms it into modern British food to tickle your tastebuds. It’s light, airy dining area and relaxed lounge are the end result of a full renovation and Chris’ vision for the highend pub and restaurant. Having come from the kitchens of Marcus Wareing and Gordon Ramsay, Chris has poured plenty of knowledge and talent into The Tickled Trout. He also cites his good friend Paul Ainsworth, with whom he co-owned a restaurant in Padstow, Cornwall, as a big influence on his cooking and says that running a pub is “in the DNA” thanks to his mum and dad. Chris grew up just outside Barlow, and learnt a lot from his dad’s background in the industry.

Anwen Burrows has been the proprietor of Airy Fairy, a gift shop and vegetarian café on London Road, for almost 20 years. In recent years she has fed with her passion for working in performance in a variety of ways, too. Prior to opening Airy Fairy Anwen had extensive experience in the food and beverage industry, including working as a banqueting waitress whilst studying for her A Levels, a head waitress in a five-star hotel, festival catering and a pub landlady.

A cook off between two of the city’s local fresh and sustainable produce heroes, Regather’s Gareth Roberts and Food Works’ Emily will be showing just how much more life and taste is left in food that is wasted. The whole session will use ingredients sourced from Food Works and neither Emily or Gareth will know what they are getting to use till it is put in front of them on the day.

Chef Brez educates us with a cooking demo which uses mostly leftover bread to create some incredible dishes.

The history of gin and the distillation process as presented by the team from Sir Robin of Locksley Gin. A basic tutorial on how one could theoretically distil at home plus samples of their full range of gins throughout the talk.

1:30PM – MONICA SAWHNEY HALDAR - SPICE CLUB

In the Airy Fairy café, Anwen is keen on producing a menu which is organic and fair trade. With the local crafts she sells at the cafe, there is a strong emphasis on working with artists who upcycle or use recycled materials. These passions of her love of food, green principles and performance are being brought together to bring this new twist to the regular programme offered by the Sheffield Food Festival.

3:30PM –JAMES LAVIN OTTOMEN

James will be presenting a demonstration on an Otto classic and original take on the pastille, aka the ‘Otto sexy pie’. Encased in fresh, Armenian filo pastry, the amount of flavour bursting out of this pie is unmeasurable, packing all the superfoods that you can shake a stick at and fragranced with the original ‘Otto’ spices. It’s a roasted vegetable pie on steroids!

4:30PM - CHRISTIE MCINTOSH ABBEYDALE BREWERY

Christie, who has been a valued part of Abbeydale Brewery’s team since 2016, will talk you through the history of the brewery before exploring the wonders of beer. He will walk you through the different styles from ancient technologies through to modern day craft beer. Covering how differences in yeast, malt, hops and water can affect the nature and variety of the end product, with the opportunity to see, feel and sniff some of the varieties most commonly found in Abbeyale’s beers.

Hash Brownies isn’t what you think it might be. This awardwinning company is the brainchild of couple Andy and Wendy, the latter a Roux brothers-trained chef. They will be serving up sweet treats at this year’s Food Festival. And it’s not just brownies! They will be offering their signature ‘scoffingtons’… in flavours such as Black Forest, coffee and Oreo. Discussing the inspiration behind the unique company name, Andy said: “We wanted a brownie company that would stand out, and we wanted to utilise social media as a platform to advertise our products, hence the hashtag!” They already sell to well-established places in Sheffield and Leeds and have distributed to numerous events and businesses for nearly seven years. WHAT CAN WE EXPECT FROM #BROWNIES AT THE SHEFFIELD FOOD FESTIVAL? We have been to the Sheffield Food Festival every year since it started. This year we will be using the Festival to unveil a new product! It is a new style of cake we have created and trademarked, called a ‘scoffington’. We want people to recognise them as a brand. We want them to become the new ‘Yorkshire Parkin’ or ‘Bakewell tart’! We had two styles of cake and now, because of the success, we decided to go fully vegan! WHAT IS A ‘SCOFFINGTON’? It is a cube of vegan sponge cake dipped in chocolate ganache and coated in biscuit crumb and topped with frostings and toppings. Times are changing! Last year we promoted them as vegan on the first day and there was limited interest. On the second day we took away the branding that they were vegan and sold much more. The customer would think it was delicious and would be visibly shocked when I would tell them that it was vegan. People think vegan food is made out of sawdust!

KEEPING IT GREEN JOIN SHEFFIELD’S FOOD-FORPURPOSE ORGANISATIONS IN THE WINTER GARDEN AND MILLENNIUM SQUARE. In Sheffield, there are a huge range of organisations that promote growing vegetables, learning how to cook and how to deal with food waste. In this year’s ShefFood Village, we’ll be sharing food, drink and conversation together, getting stuck in with hands-on activities and chatting with people to learn how we can all work together to make the food system in Sheffield better for everyone. One of the co-hosts of the ShefFood Village this year is Regather, known locally as a community food hub in Sharrow. Regather was founded in 2010 with the mission of helping local communities eat better food. For Regather, ‘better’ means healthy, sustainable, affordable and - wherever possible - seasonal and locally-produced. Regather’s vision is to empower the city to become more resilient by encouraging co-operative involvement in the Sheffield food system. “We want money retained in the local economy, land to be more productive, food to be better quality, health improved and people to have better awareness of and involvement with how the food system, from local to global, can be changed for the better,” says cofounder Gareth Roberts. Regather currently operates a wide range of trading activities including a fruit and veg box scheme, a 15 acre market garden and agroforestry development, a microbrewery producing craft beer and seasonal cider and an events venue and bar called Regather Works.

KIDS SEED SOWING | MON | 2-4PM Once they’ve grown their own veg, kids are much more likely to eat them and they’ll have learned a little bit about where food comes from. Kids can decorate their own pot and plant some veggie seeds to take home. Even if you don’t have a garden you can grow your own delicious vegetables in a window box or on a balcony, it’s easy! Bob Worm, managing director of Events Collective, rounds up ten of his favourite food spots in the Steel City. When looking at new article features for this year’s Food Festival magazine, it struck me how the scene in Sheffield is constantly changing, but there are also numerous long-running businesses that have become almost institution-like. I have put together a list, in no particular order of preference, to share some of my prime choices with you. It covers ten local businesses. All hard-working, long-established independents that have received the nod for a variety of reasons. For some it’s simply the quality of the food, for others it’s the range and choice available on the menu, or it could be the added extras such as the atmosphere, styling, staff, and people who frequent them. This list is my choice based on selfish reasons, but as with all things food and drink in Sheffield, it’s a case of horses for courses and we will all have our favourites. If you haven’t tried any of the following, I’d highly recommend getting stuck in!

TWO STEPS CHIP SHOP

Arguably the best chippy in Sheffield. It may have changed hands, but it still looks exactly the same and does cracking fish and chips at a very fair price. The owners are nice chaps, too.

RAFTERS RESTAURANT

A top-of-the-tree establishment and fine-dining at its very finest. Rafters are market leaders in connecting the culture of great food and wine with a relaxing atmosphere and impressive layout. Their passion for engaging with their customers is a key aspect of what makes this place one of the best.

CHUBBYS

The longest-running kebab shop in Sheffield city centre, still working hard against the continuous redevelopment of more or less every building around them. If you’ve been going downtown in the city for a number of years, odds are you will have stumbled across Chubbys – famous for its sloppy cheese and late-night burgers.

AIRY FAIRY

It has moved around a few times now: first Attercliffe, then Chesterfield Road, Neepsend, and now back to Heeley. Amazingly tasty, rustic curries and numerous healthy menu dish options – and as you can imagine, their onion bhajis are simply stunning.

A true Sheffield institution running for nearly 20 years now. Originally a coffee shop with holistic leanings, selling a variety of incense, crystals, candles, etc; the food menu of the cafe was later added to provide a simple but adventurous range of healthy homemade dishes. Despite being located in the middle of London Road’s urban jungle, it’s also got an enchanting little garden to relax and enjoy a sunny lunch in.

The first American diner experience I had as a young boy, quickly enchanted by the cream cheese burger, walls covered with posters of US celebrities and the little train going around the track suspended from the ceiling. Still going strong for over 40 years – and long may that continue!

Situated on the edge of Ladybower, this traditional pub/ restaurant offers a vast range of good value meals on their menu. Specials are always an option, but get snapped up quickly. The staff are very friendly, helpful, and despite the hearty nature of the mains, you’ll always feel tempted to order a pudding.


STREET FOOD CHEF

The festival’s longest-running street food trader and the one that pretty much kickstarted the scene here in Sheffield. The burritos at their venues on Arundel Street and Sharrow Vale Road never fail to impress and are simply amazing value for money. Time and time again it’s the go-to choice for me in need of a quick bite to eat in town.

CAFE PIE

Based at the end of South Road in Walkley, for some years now this has been a go-to spot for pie that never lets you down. Putting a lot of pride in quality ingredients and generous portion sizes, it’s the finest slice in the city in my opinion. They also offer good combo deals and it all goes perfectly with Hendo’s of course!

ZEUGMA

Another great foodie spot on London Road. This amazing Turkish restaurant is so good they now have two venues on the same road, situated within just two minutes of each other. It’s another proud independent business, same as all of my choices on here, and the level of craft and care that goes into their menu is evident after a visit. PS: make sure you go hungry because they serve up a real plateful!

OTTOMEN’S WILD GARLIC, SPRING ONION AND FETA BÖREK The Ottomen has evolved from James and Nick’s (the Otto bros!) love of great food. Their constantly changing menu evokes memories of holidays and great adventure. Mezze inspired, the Otto-Men has many more offerings leaning towards the avant-garde. Learn how to make their wild garlic, spring onion and feta börek with this handy recipe. Remember, this serves 10 so it’s a perfect dish to serve up for a large group of people.

INGREDIENTS 10 sheets filo pastry 250g feta cheese 1 egg 1 small bunch dill 1 bunch wild garlic (washed) 5 spring onions, finely chopped 150g baby spinach (washed and wilted for 1 minute in pan) Rapeseed oil

METHOD Bind the feta, egg, wild garlic, dill, spinach and spring onions. Divide up into 10 large spoon size portions. Place 1 spoon into the middle of 1 filo pastry sheet and close like an envelope, then roll into the size of a large cigar. Pan fry a small amount of rapeseed oil. Turn regularly (every 1.5 minutes) until golden and crisp. Serve with za’atar and a fresh tomato and herb salad.

COME TOGETHER Together Women’s VIBE (Voice, Influence, Be Empowered) is a project for and led by young women and girls aged 12-19 to have a say on issues affecting them and make changes locally, regionally and nationally. The girls who attend VIBE (Together Women’s ‘Voice, Influence, Be Empowered’ project) are passionate about making a positive difference and taking social action in Sheffield. Two years ago, several young volunteers established GEMS Café - a social café for young women. The girls felt that young women needed a safe female-only space to socialise and help reduce isolation with free or low cost food on the menu. With a strong emphasis on supporting women with mental health issues, VIBE established a young woman’s mentoring service in 2017. More recently, the girls became more involved in co-producing workshops and activities for girls only, such as their CHANCES and WELL workshops and have gained leadership qualifications in the process. This year the team have produced a mini-zine, a self-help guide to go alongside their #endperiodpoverty campaign ‘PadAttack’, which aims to distribute free menstrual

products via outreach in schools, colleges and youth clubs. Thanks to women across Sheffield (including Sheffield Hallam University who make regular donation to Together Women), the girls are now in a position to distribute and attack the problem. VIBE raise funds for these campaigns at festivals selling home baked goods whilst raising awareness of their current campaigns and activities. Their VIBE ‘Girls Talk’ sessions and design team meetings runs every Monday 4-6pm at Together Women for girls up to 19 years of age. There’s a regular timetable of activities for 18+ women, too. Sheffield Food Festival is a time to not only enjoy a huge variety of food, but to reflect on how we can all work together to improve the food system in Sheffield and beyond. The food we rely upon every day is a product of a complex, interdependent and globalised supply chain dominated by relatively few multinational corporations. They maintain this unsustainable system by exploiting a monopoly of money and power to influence governments, damage the environment and maximise profits out of producers and consumers. The evidence shows this unsustainable system contributes to (and is vulnerable to) the impacts of climate change, depletion of resources such as oil, phosphorus, soil and water, pressures of population growth and geo-political instability such as austerity and post-Brexit uncertainty. As a consequence, the UK and Sheffield food system is impacted in a range of ways.

FOOD SOVEREIGNTY

The UK currently produces less than 60% of the food we consume and relies on the EU for nearly 30% of food imports. The UK currently holds only 3-5 days of food supplies in reserve.

FOOD WASTE

It is estimated that UK households waste seven million tonnes of food and drink each year, costing an annual average ÂŁ470 per household. Most of this waste could be avoided.

HEALTH INEQUALITY AND FOOD

Access to healthy food is a key factor determining the extent of health inequality across different parts of Sheffield, with life expectancy gaps and adult obesity rates amongst the highest in England.

POVERTY AND FOOD

Over the past five years, many food banks have opened in Sheffield, with benefit delays, low income and benefit changes being the most common reasons for accessing food bank services. Developing a sustainable food system for Sheffield is a huge challenge. But thankfully - true to their character – the people of Sheffield are still rising to this challenge. Since the mid-1980s there have been progressive food plans, strategies and policies developed on an understanding that local government, the NHS, universities, businesses and Sheffield communities must all work together in partnership to create the lasting change needed. This important work continues - today and into the future. A renewed energy and enthusiasm is present in Sheffield communities where decades of amazing local food work continues to blossom. A major challenge ahead is to turn post-Brexit price increases, farm labour shortages and market volatility into opportunities for the community economic development of urban and peri-urban horticultural enterprise – intensively grown organic fruit and vegetables, developing skills and community resources, creating local employment and promoting sustainable local economies. There is the shared vision and strategic commitment to develop the environmental and economic benefits of a more resilient and sustainable food system for the Sheffield City Region. So - could the next planned step be to demand the regional devolution of a post-Brexit agricultural policy? A policy which could be developed and resourced to support environmentally, socially and economically resilient mixed farming systems and land-based industries – creating a truly productive landscape for Sheffield.

FESTIVAL OF DEBATE

Returning for 2019 and taking place from 19 April and 5 June, the festival features over 70 events of all shapes and sizes in collaboration with over 40 partner organisations across the city. In an ever-changing society, with rents and property prices increasing, it’s getting harder for creative people to find and use spaces needed to facilitate the production of new music. After the legendary building that housed the infamous “Club 60” was sold amidst the current trend of gentrification, Sheffield lost an iconic venue and studio. The need to find a new home/location coerced the motive to move on. Established in 1996, Abbeydale Brewery is a true Sheffield institution. 22 years later and with founder Pat Morton and his wife Sue still very much at the helm, the business has grown steadily throughout its existence and now produces over 220 brewers’ barrels per week. True North Brew Co started brewing in 2012 using spare capacity at Welbeck Abbey Brewery, later opening their first plant on Eldon Street in 2016. BRADFIELD BREWERY

A family-run brewery based on a busy working farm in the quaint village of Bradfield. Founded in November 2018 when Mike Brook (managing director – an engineer who was meant to be having a “gap year”) and his son George (a beer enthusiast, recent graduate and now sales manager) bought a re-possessed brewing plant and recruited an experienced brewing team. Sky’s Edge Gold 4.0% Honeyed malts combine with cascade, amarillo and peachy Aurora hops for a quenching, balanced bitterness – a rewarding summer ale.

S.IPA 4.5% Supremely citrussy with orange, lemon, line and grapefruit from chinook and centennial. Dry-hopped with cascade and citra for a vibrant aroma.

KELHAM ISLAND BREWERY

A household name in Sheffield, Kelham Island Brewery was built in 1990 in the beer garden of the Fat Cat on Alma Street – the first new independent brewery in Sheffield in almost 100 years. Today it is the city’s oldest brewery still in production. Pale Rider 5.2% A local institution, award-winning pale ale and flagship beer. It’s forged from the finest Maris Otter malt and a special blend of American hops. Kelham Islander 4% Cool off with this refreshing blonde ale, letting the perfectly balanced malt and light hops relax your taste buds.

WELBECK BREWERY

SOMETHING’S BREWING…

Ben Duong introduces you to a returning local hero and a new brewery venture to the city’s brewing scene, Stancill Brewery and Loxley Brewery, who will be stocking up the bar at the Eats, Treats & Beats Village with an eclectic range of drinks offerings.

STANCILL BREWERY

One of the two main breweries we’ve teamed up with for 2019 is the award-winning Stancill, whose story started in 2013 when Oakwell Brewery in Barnsley closed its doors. Thomas Gill and Adam Hague saw this as a great opportunity to make their dream a reality. “We were devastated to hear that the Oakwell Brewery was going under, so we decided to resurrect it,” says Thomas. “We bought the kit, got everything out before the site was demolished, and that’s how Stancill was born.” Production started in January 2014 along with a move to Neepsend in Sheffield, enticed by the easy access to the north Sheffield water that’s perfect for brewing conditions. Fast forward to today, the brewery is one of South Yorkshire’s largest beer producers knocking out over 30,000 pints a week. It has an ever-changing range of beers on offer and 10-strong core beers, from the legendary Barnsley Bitter to Stancill Porter and Ginger Pale. The brewery also employs 50 members of staff across its pub division and own a seemingly ever-growing number of venues in Sheffield: The Horse & Jockey, Wadsley; The Albion, London Road; The Closed Shop, Commonside; and most recently The Old Grindstone, Crookes. Something that makes Stancill different to other breweries in the city is that it’s one of the only breweries to create a craft lager and pilsner – Stancill Lager (4%) and Sheffield Pilsner (5%). Both of which are the Stancill’s most popular brews. Stancill will be championing its famous lager at this year’s Eats, Treats & Beats Village - something the brewery itself has supported for three years in a row. LOXLEY BREWERY

A forward-thinking microbrewery with deep roots in the community, Loxley Brewery’s key aim is for people to enjoy their ales as much as they do making them. The adoption of a strict quality over quantity approach sees to it that all beers are handcrafted on-site with a strong focus on top quality real ales. Situated in the basement of the popular Wisewood Inn, the brewery opened in 2018 and hit the ground running with its first beer – a refreshing blonde ale called Wisewood One. It was a resounding success with regulars and has since led to five more excellent ales being brewed. This summer, the brewery will be hosting its first ever beer festival in the beer garden of the pub and is quickly building up a solid reputation across the city, with more and more venues stocking its beers around South Yorkshire. You’re spoilt for choice!” The food delivery market in Sheffield has grown enormously in recent years, with over two million orders brought to student flats, local’s apartments, and family living rooms over the last 12 months. Beyond driving more and more orders, Just Eat also help restaurants by offering valuable support and insights into their business. It helps identify its Restaurant Partner’s busiest delivery areas, most popular dishes, and offers advice and support in other areas such as food hygiene, sustainable packaging and menu optimisation, which all helps create a great experience for busy restaurants and hungry customers alike. One of Just Eat’s Restaurant Partners at the festival this year is the popular Greedy Greek Deli of Sharrow Vale Road. Since opening their doors in 2003, the Deli has provided fresh, homemade cuisine to the people of Sheffield and beyond. Word on the street is that their moussaka with a few drops of Hendo’s goes down a storm, so be sure to pay them a visit at this year’s festival! Bob Worm, director of Sheffield Food Festival, says: “The food festival is growing year on year, and it’s great that we can have the support of a big brand like Just Eat. For 2019 we’re now officially starting the festival on the Friday and will run till 6pm on the Bank Holiday Monday. We’ve also extended the event footprint to take on more of Fargate. Let’s hope for nice weather!”
