SPOTLIGHT ON Pajarito
New to 50th & France in 2020, this upscale taqueria is known for its refined approach to tacos and tequila. An intentional selection of ingredients and bold, vibrant flavors add a modern twist to Pajarito’s traditional Mexican fare.

The new location is a welcome and exciting addition to the neighborhood. “We’ve been looking for quite a while to open another Pajarito in this area,” says chef and owner, Steve Hesse. “50th & France is such a nice, quaint community. Opening a new location here feels like a really good second home for us.”
There’s a lot to be excited about with the Edina version of Pajarito: a larger open kitchen will enable restaurant-goers to watch while tortillas are made and meals are assembled. Two woodfire ovens will allow for expanded menu options. “You’ll be able to get 95% of your favorite St. Paul menu options at the Edina location, but we’re also looking to expand the taco and woodfire offerings here,” says Hesse. The new location also features a reservable event space in the basement: perfect for private parties, larger groups, and receptions.
Keep in mind that Pajarito’s contemporary and creative approach to Mexican cuisine isn’t limited to the food—their fabulous cocktail menu will still be available in all its glory at the Edina location too. Try the habanero cilantro margarita or the snozberry version with creme de cassis, dry curaçao, and strawberry-lemon shrub. If margaritas aren’t your thing, there’s a great selection of other cocktails to sip and savor. If you’re looking for a hip, new neighborhood hangout, this could be your spot.
